This Jamaican inspired jerk pork recipe has so much<br />
flavour, mixing the hot chilli sauce into the pineapple<br />
salsa adds a litt le extra fire.<br />
Ingredients<br />
4 pork shoulder steaks<br />
1 tbsp vegetable oil<br />
2 tbsp jerk seasoning<br />
½ pineapple, cored, peeled<br />
and diced<br />
1 red onion, peeled and<br />
diced<br />
15g fresh coriander, chopped<br />
1 tsp hot chilli sauce<br />
300g basmati rice<br />
2 pinches salt and pepper,<br />
to taste<br />
Total time required 55 mins<br />
Preparation time: 10 mins<br />
Cooking time: 45 mins<br />
Serves 4<br />
Instructions<br />
1. Heat the oven to 190°C/170°C fan/Gas 5.<br />
2. Mix the vegetable oil, jerk seasoning, salt and pepper<br />
together and rub all over the pork shoulder steaks.<br />
3. Roast in a tin for 45 mins until cooked through.<br />
4. Meanwhile, mix together the pineapple, red onion,<br />
fresh coriander, and 1 tsp hot chilli sauce and season.<br />
Leave this salsa to the side until ready to serve.<br />
5. Cook 300g basmati rice according to the pack<br />
instructions until al dente, then drain.<br />
6. Serve the chops with the rice and salsa poured over.<br />
This recipe can make two meals for the family -<br />
serve once with the red cabbage slaw and sweet potato<br />
wedges and use the leftovers to make cott age pie.<br />

1.8 kg beef brisket<br />
2 bay leaves<br />
600ml ginger beer<br />
500ml beef stock, made from<br />
stock cubes<br />
5 drops Tabasco sauce<br />
½ red cabbage, thinly shredded<br />
1 apple, red, grated<br />
1 carrot, peeled and grated<br />
2 gherkins, diced<br />
1 tbsp wholegrain mustard<br />
1 tbsp honey, runny<br />
4 tbsp crème fraîche<br />
Total time required 3h 30 mins<br />
Preparation time: 30 mins<br />
Cooking time: 3 hours<br />

Instructions<br />
1. Put the beef, bay leaves, ginger beer, stock<br />
and Tabasco in a pan, cover and simmer for<br />
2½ hours.<br />
2. Combine the cabbage, apple, carrot and<br />
gherkin. Mix the mustard, honey and crème<br />
fraîche and add to the cabbage mixture, cover<br />
and chill.<br />
3. Skim the fat off the beef’s cooking liquid then<br />
boil to reduce by half. Shred the beef and mix<br />
half of it with 5 tbsp of the reduction.<br />
Serve with the slaw and perhaps some sweet<br />
potato wedges.<br />

Eton Mess Cupcakes<br />
These cupcakes are great if you have a sweet tooth,<br />
combining two of our favourite snacks. For a less<br />
sweet but still delicious topping, replace the<br />
buttercream with fresh whipped cream.<br />
Instructions<br />
1. Heat the oven to 190°C/170°C/Gas 5. Line<br />
a12-holemuffintraywithpapermuffin<br />
cases.<br />
2. Beat together 175g of the butter and<br />
caster sugar until light and fluffy then<br />
add the eggs and vanilla extract. Mix<br />
well then fold in the flour and ground<br />
almonds evenly.<br />
3. Half-fill each muffin case with the<br />
mixture then dollop a spoonful of jam<br />
in the centre of each and top with the<br />
remaining mix. Bake for 20 minutes until<br />

5. Pipe the buttercream on top of each<br />
cooled cupcake then decorate with a<br />
slice of strawberry, a drizzle of strawberry<br />
syrup and a sprinkling of crushed<br />
meringue.<br />

Ingredients:<br />
2clovesgarlic,peeledandchopped<br />
2tbspextravirginoliveoil<br />
2cansplumtomatoes,400g<br />
½tspdriedchilliflakes<br />
10 sheets lasagne<br />
200g kale, sliced<br />
140g pancetta slices<br />
1redonion,peeled,halvedandsliced<br />
200g mozzarella, cubed<br />
200ml crème fraîche<br />
50g parmesan, grated<br />
4clovesgarlic,peeledandcrushed<br />
Total time required 1 hr<br />
Instructions:<br />
Heat the oven to 200°C/180°C fan/Gas 6. To<br />
make the sauce, sauté the garlic in the oil for<br />
2minutes,untilgolden.Addthetomatoes,<br />
breaking them up with a spoon, and the<br />
Kale and Pancetta Cannelloni<br />
Kale cooks down a lot so don't be afraid to use what initially looks like a large amount.<br />

chillies, season and cook for 10 minutes.<br />
Meanwhile, cook the lasagne in boiling water<br />
with the oil for 2 minutes, or until soft enough<br />
to roll. The oil should stop it sticking. Scoop<br />
the sheets out and dry on kitchen roll.<br />
Add the kale to the same water and cook until<br />
tender. Drain, rinse in cold water, drain again<br />
and set aside.<br />
Fry the pancetta until crispy then remove<br />
from the pan. Discard most of the oil then<br />
add the onions and 2 of the garlic cloves and<br />
fry for 2 minutes. Add the kale with some<br />
salt and mix well. Tip everything into a bowl.<br />
Crumble up the pancetta and add, with the<br />
mozzarella.<br />
Spoon the tomato sauce into a large baking<br />
dish. Divide the kale mixture evenly on to the<br />
lasagne sheets then roll each one up into a<br />
tube and place on the sauce.<br />
In a small bowl, mix the remaining 2 crushed<br />
garlic cloves with the crème fraîche and half<br />
the Parmesan. Spoon over the lasagne rolls<br />
then sprinkle with the remaining Parmesan.<br />
Bake for 30 minutes until golden.<br />
