Start with large greenery and shrubbery as your

florals. Use baby’s breath and light-coloured

shrubbery to keep the space light and airy.

For your accessories, use mirrors, clear glass and

acrylics to create a sense of space and openness.

Reflective surfaces always make a space appear

larger and your florals more abundant.

Get your entertainers to go

along with your theme. Have

them wear long flowing light

coloured outifts and even get

them to grab a piece of your

Let your entertainers and entertainment

be part of the styling and venue, it would

help with the mood and cohesiveness of

your event. If you are having a wedding at a

comtemporary and chic venue, like Montage,

consider a modern jazz band; if you’re having

a garden ceremony at one of our gardens,

consider a string quartet and have the ladies

wear a flowers from your styling arrangments

to match the event.

Lastly, entertainment is important because it’s

your day to celebrate your love told through

the physical. Whilst all love is intangible, a

wedding is a physical showcase of this. Set the

scene of your love through the choice of music

and entertainer, so others can gain a deeper

understanding of your love through the physical.

“Has it got nuts in it?”, “Oh, I don’t eat

meat.”, are you sick of hearing these

at a dinner with friends or family and

feeling bad for the wait staff having to

return plates to the kitchen? Well guess

what? You’re the host now. Stop this

from happening on your watch by discussing

with your caterer what dietary

options they have, and also by asking all

your guests what they can or can’t have

on their plates. Create a list for your

organiser - if you are using one - or for

your own reference.

OUR CHEF CHRIS’ FAMOUS

SPAGHETTI

ALLA CARBONARA

They say that all roads lead to Rome,

when in reality, they lead to Chef Chris’ Famous

Spaghetti alla Carbonara. “This is the best

pasta in the world!” says Chris Reali.

INGREDIENTS

1 tbsp Black Peppercorns

5 cups Pecorino Romano

320g

Guanciale

500g

Spaghetti

METHOD

1. Dry-roast the black peppercorns in a frying pan over

low heat. Keep swirling for 5 minutes, or until fragrant.

Cool, then grind with a mortar and pestle. Combine with

Pecorino Romano.

2. Cook guanciale in a saucepan over medium heat,

stirring occasionally, for 7 minutes or until fat renders and

guanciale is crisp. Leave guanciale in the pan with 2 tbsp

of fat and reserve 1 tbsp of fat separately.

3. Cook pasta in a large saucepan of salted boiling water

until just short of al dente (2 minutes less than the time on

packet instructions). Drain, reserving 1 litre pasta water.

4. Return pan with fat and guanciale to medium heat.

Add pasta and a ladleful of pasta water, then increase heat

to high and stir constantly, adding pasta water as needed

until pasta is al dente (2 minutes). Remove pan from heat

and gradually stir in pecorino mixture, reserving a little

extra to serve. Add reserved fat, and stir constantly until

emulsified, adding a little more pasta water if needed.

RECIPE

5. Serve immediately and top with remaining

Pecorino mixture.

Only but a few years ago, some

cultures would celebrate the lead

up to their big day with a massive

‘pre-wedding’ celebration. These

parties would consist of hundreds

of people. Yes, it was a wedding

before the wedding.

With the shift of events as we know,

one change we have noticed is that

people are choosing to stick with

hosting more private and exclusive

pre-wedding celebrations.

Couples are opting to put their budget

toward styling a special dinner hosted

by the families, as they keep this affair

different to that of the wedding.

Now, that seems logical.

What are Run Sheets?

Most venues have something called a ‘Run Sheet’. This is

an all inclusive document that details the event from start

until finish. Should you want to feature something special,

make sure your co-ordinator has it on the Run Sheet, so your

Banquet Manager can make it happen.
