a battle with

agonising

sciatica…but

I’m pain-free and

enjoying life again

after IDD Therapy

Sarah Gower from Marden had suffered

with back pain ‘niggles’ for a few years,

but last summer she was suddenly

struck with unbearable sciatica in her

leg which stopped her in her tracks.

Sarah explains: “For as long as I can

remember, I’ve always experienced a

degree of discomfort in my back, which

my osteopath at the time had put down to

muscular issues, but one day I woke with

the most excruciating sciatic pain which

literally floored me; I could hardly move.”

Over the following weeks Sarah’s pain and

lack of movement completely disrupted

her routine: “I couldn’t find a comfortable

sleeping position for my back and the

shooting pains in my leg woke me several

times every night; I actually ended up

sleeping on the floor out of desperation. I

couldn’t go to work, driving was impossible,

and everyday chores – even bathing and

dressing – became incredibly difficult.”

Sarah’s GP prescribed strong painkillers

but after a short while, she discovered she

was allergic to them. She was also put on

a waiting list to see a spinal surgeon: “I

knew it would be a few months before I

saw a consultant, but honestly, I really

wasn’t comfortable with the idea of

spinal injections or surgery; I’d read

about the risks and recovery periods

involved and it was a big worry for me.”

More than that, Sarah didn’t think

she’d be able to manage waiting for an

operation; she needed to get the pain sorted

as soon as possible. “I’d seen some local

magazine articles about patients who had

recovered well at Wealden Osteopaths &

Spine Centre, so I went for some handson

osteopathy to begin with, but when

I wasn’t responding, the Clinic Director

James Pickering stepped in and arranged

for me to have an MRI scan straight away;

he suspected I had some disc damage - a

possible reason for my relentless sciatica.”

James’s thoughts were confirmed; the

scan showed a herniated disc in Sarah’s

lower back. He recommended a course of

IDD Therapy, a targeted disc treatment

for persistent back pain, neck pain and

sciatica. The non-invasive treatment

uses gentle pulling forces to draw

apart spinal segments where discs are

bulging or damaged, removing pressure

and irritation from trapped nerves.

James Pickering’s team is changing the lives of

slipped disc and sciatica sufferers with IDD Therapy

James’s expert team uses the programme

to help patients who find themselves

on a merry-go-round of painkillers,

physiotherapy and GP visits.

Sarah was keen to start her treatment

immediately: “James was confident

that IDD Therapy could help me; he

reassured me that it would treat the

root of my problem so that my sciatica

wouldn’t return. I knew my progress

may take some time, but I felt hopeful

at last, and I went into the treatment

programme feeling very positive.”

on the island of Jersey

Sarah made steady progress with

IDD Therapy; halfway through the

programme, she felt a real improvement

in her pain and movement.

through the night at last.”

When her course finished, she was

completely pain-free and back to her usual

routine: “Actually, I still can’t quite believe

I’m back swimming, going to the gym and

Therapy has been a godsend, and James’s

team has been wonderful throughout.”

James is delighted with Sarah’s progress:

renovation of an incredibly positioned seaside property,

transforming it from tired care home to design spectacular

Not all period properties pass gently from

owner to owner, sympathetically updated

and treated with love and understanding. A

sad minority are left to fall quietly into disrepair, but

the unlucky few that are hijacked and repurposed into

twisted versions of themselves possibly suffer a worse

fate, because incarnations of institutions or offices

seldom have the integrity of the building at heart. In

short, it can be a hard-knock life for an old property.

This stunning seaside house is one such, having spent

many years stifled and sub-divided as a care home. When

it came onto the market a few years ago, it may well have

been praying to be rescued and turned back into a family

home. Built in 1926, the property is Art Deco in style,

when houses like this were at the height of fashion, with

their emphasis on clean lines and modern family living.

The opposite of the Art Deco ethos seems to have been

employed during the care home years. Altered to suit the

needs of elderly residents, aesthetics and the finer details of

interior design were not high on a cost-conscious priority

list. As Ed from developers Fred & Ginger explains: “The

place had been really chopped around and the new owners

couldn’t make sense of it. We came on board at a very

early stage when they were initially viewing.” This meant

that even before the property had been bought, Fred &

Ginger were able to advise and then act as guides through

the complicated process of planning; first the change of

use and then the meticulous renovation and restoration.

Part of the Fred & Ginger ethos is the belief that

‘a home can create a whole new way of life and stateof-mind

for its occupants.’ This is why it’s important

throughout the house, from the impressive lighting to a huge

golden apple which rests on a circular table in the hall

dream stage, so that the vision the clients have for

their home can be translated into a reality – in an

experience that is both ‘joyful and stress-free’.

Working closely with the architect and the owners,

the team at Fred & Ginger opened up the partitioned

spaces, added another bedroom over the garage, took

down and replaced the whole back of the house –

while propping up another part – adding en suite

bathrooms, and installing state-of-the-art heating,

plumbing, electrics and home technology. The whole

project – from the start to almost finished (because you

never really finish) – took eighteen months, managed

all the way through by the team at Fred and Ginger.

Much of the work is done in-house, and they are very

careful when sub-contracting. “We like to use local guys

wherever possible,” says Ed. “There are some talented

craftspeople nearby and it makes all the difference. It

helps to make the process seamless, and painless.”

Once the major structural work had been done, they

could set about re-imagining the interior. “The aim was

to retain as much of the original Art Deco grandeur

as possible, while incorporating up-to-date elegance.”

Potentially disparate styles including Art Deco and Midcentury

Modern have been blended with contemporary

design elements to create a unique and dramatic look.

threshold into an artwork in itself. The entrance hall hints

at timelessness, but any nostalgic thoughts are blown away

with a sea breeze by the restrained opulence of the decor

– the exquisite plasterwork on arches, cornices and picture

rails, the hand crafted parquet flooring and painstaking

attention to the finished look. Inspired by the original, the

remodelling isn’t a slavish copy, and breathes freshness into

both the details and the overall impression. Epitomising

this is a huge golden apple resting on a circular table, placed

on a fabulously geometric handmade rug – a bold and

gleamingly symbolic presence in the centre of the hall.

Warm tones of the parquet flooring sweep through

the ground floor, the contrasting colour scheme on

the walls throughout the house is a deep grey-blue

that sings of the sea and provides a calm backdrop to

set off the more dramatic elements of the interior.

Upstairs a large drawing room occupies the front part

of the first floor. And somehow it feels more civilised to

have a first floor living room – the advantage here is that

the sea can be seen from every window. Sea views naturally

dominate rooms fortunate enough to look out towards the

horizon. The interior in this room complements the vista;

accessories and soft furnishings are picked out in yellow and

green against warm grey walls. It remains sophisticated and

elegant however, above falling for tired seaside themes. The

only hint at the setting is a huge blue ceramic crab nestled

into a small bay window, wistfully watching the tides.

On the day we visit the builders have just finished

installing a dramatically decorated downstairs cloakroom

(making it a six bathroom, four bedroom house). The

smallest rooms can make the biggest splash, so to speak,

and the bathrooms in this house reflect the opulence

and dignity of a bygone age, but are bang up-to-date in

every other way, incorporating the best that technology

can offer in terms of heating, lighting and plumbing.

The shower head in the family bathroom is the size of a

dinner plate for that ultimate ‘rainfall’ shower experience.

The tiles in this room beautifully echo the geometry of

the carefully designed and crafted leaded windows.

Fred & Ginger have extended the refurbishment into the

– and this can be hard to achieve in coastal gardens, as it’s

notoriously difficult to get plants to withstand an exposed

situation and to cope with sea air and salt-laden wind.

The garden is sheltered by mature shrubs and small trees

and zoned into areas using different materials, accessed by

transverse paths, which has the effect of making it feel bigger.

An outdoor kitchen is discreetly tucked away next to the

house and adjacent to the patio, so that the garden functions

perfectly as an outdoor room for alfresco entertaining.

Creating a dream home, especially from the wreck of a

building, can be an overwhelmingly tall order. This house

has been carefully re-imagined, reconstructed, opened

The great charm of Hastings Old Town, ever more

popular with day trippers, Airbnbers and people

leaving London for good, is in its jumble of lovely

old houses, nestled in a valley between two green hills.

The oldest dwellings, on All Saints Street, date back

to the mid-15th century and in the grid of streets

and ‘twittens’ – ancient pedestrian laneways – around

them, there are homes from every century since,

creating a delightful potpourri of a streetscape.

What makes it particularly special, though, is that unlike

in some overprotected conservation areas, new buildings

of a high enough standard are still being approved in the

Old Town, so there is no risk of that dead ‘theme park’

atmosphere that grips some postcard pretty places.

With this approach, Hastings Old Town is still very

much alive, with new layers of architectural styles being

added in among the older buildings, increasing the

richness of the whole. This house is one of them.

Tucked away on one of the more hidden foot passages

on the west side of the town, in the lee of the West Hill

was there – and it was only by pure chance that the owners

Sue Dawson and Paul Gammon found out the plot existed.

They first came to the town because Sue was involved

with the charity Seaview, which found philanthropists to buy

properties to house homeless people who needed assistance.

In those days, flats were very cheap in Hastings and

Sue – now a writer, but then an actress, appearing on

EastEnders, among other programmes – was delighted to

get involved. “We came down to see someone who had

been housed in one of the properties,” says Sue. “We were

sitting in the sun and I just said, ‘Let’s move here’…”

Paul, an architect formerly based in Brighton, who already

knew Hastings from teaching theatre design at the old art

college, immediately agreed. They rented for 18 months

while looking for the perfect place, putting notes through the

doors of houses they liked – which didn’t lead to a purchase

“but we are now friends with three of them,” laughs Sue.

Then they found exactly the house they wanted, but

were pipped in sealed bids – which was very disappointing

at the time, but turned out to be one of those twists of

fate which so often seem to lead to people finding the

houses we cover in these articles. “In desperation we were

looking at a Victorian terrace on the High Street,” says

Sue, “although we’d said we were never going to live in

one of those again. Then we looked out of a window on

the top floor and saw a tumbledown bungalow on a plot

behind it. The next week it came on the market…”

And what could be better for a couple which includes an

architect, than the opportunity to build their own house, in

exactly the spot where they want to live? Especially when, as

Sue says, “We’ve always wanted to live in a modern house.”

Not that it didn’t take some commitment to

make it happen, even with Paul as architect, project

manager and builder, because the site is only

accessible on foot. As he explains (with professional

accuracy), “It is 45 metres to the nearest curb.”

“It took three and a half years

to do,” says Sue, “and we lived

in it throughout. For 6 months

we lived in the kitchen extension

with a tarpaulin overhead.”

brought in on foot, to and from a van parked at the end

of the nearest vehicular road. Although being of a very

practical mind, Paul used the rubble from the demolition

of the old house as hard core for the new one, to even

out the sloping site. But even with such logistic smarts,

it’s not surprising that the project took a while.

“It took three and a half years to do,” says Sue, “and

we lived in it throughout. For 6 months we lived in

the kitchen extension with a tarpaulin overhead.”

But once you are in that kitchen – a big white open

space, with glass on two sides – there’s no doubt that

the effort and endurance was worth it. The view across

the Old Town to the green of the country park, with a

panoramic sweep of sea to the side, is truly breathtaking.

What makes it even more special is that you come to this

prospect after walking along that narrow laneway and

entering by an industrial-style gate, which gives no clue to

what lies behind. Then there are quite narrow steps down

the side of the house, until you come to the acid yellow

(remember that detail…) ‘front’ door, about halfway along.

If you continue down the steps you walk past the footprint

of the original bungalow and onto the side wall of the new

extension, where a rill of water starts to run next to you,

until you come out in the paved and planted front garden.

Here the stream pours into a small, square pond and

on through an underground pipe into a much bigger

one, both rich with aquatic plants. But by that point

it’s hard to take your eyes off the spectacular view.

So no wonder, as Paul says, that was the focus of the

whole remodelling scheme. “The view was the big thing,

so we opened the house up to make the most of it. We

built on top of the original house – which was a 90

sqm bungalow with cramped rooms – and made it three

times bigger. Because it is in a conservation area, we had

to keep the original roofline, so we built the kitchen on

as a ground-level extension, which didn’t alter it.”

On my first visit to the house, I entered from this side –

the back, where the original entrance was, via the sliding glass

door in the wall of windows, straight into the kitchen – but

for the formal tour, I chose to start at the yellow front door.

It opens onto a striking staircase, with oak treads

between a plywood wall and bannister, but the first

thing you notice is the full-height sliding door, to the

back of the house, which is covered in gold leaf.

Then you start to take in the sense of space, with

the ceiling above you following the upwards trajectory

of the staircase, at a parallel angle. Overhead to your

left is the straight back line of a supporting RSJ – the

bones of the house – and then the lofty space continues

into an area with a wall of iconic Vitsoe shelving,

Taking just a couple of steps into that library space,

which houses Paul’s collections of architecture books

and magazines, you see through into the sitting room –

which also has a full-length sliding door (remember the

other one?). Among the furnishings are side tables and

a throw in acid yellow (remember the front door?).

Looking to the right from the library space there

are more stairs – oak and plywood – going down and

next to that, a void with a picture window facing the

sea-direction view, looking over a sedum roof.

In the best possible way, it’s a lot to take in – and

what you are experiencing is the kind of manipulated,

flowing space you only find in architect-designed houses.

Changes in ceiling height, vistas and unexpected voids

create interest that makes an area feel bigger, because the

eye keeps travelling from one feature to another, rather

than a blink-and-you’ve-seen-it-all big empty box.

Another thing that creates these attention-grabbing

little bursts of interest are all the visual themes running

through the house. We’re back to that yellow front door –

little flashes of acid yellow appear throughout the house.

All the doors are full-height, birch plywood is used in

every room and on a lot of the floors. “For the budget…”

says Paul, but its pale neutral colour looks great too.

In the bedrooms on this floor plywood is also used to

great effect in floor-to-ceiling (sound familiar?) wardrobe

doors and bookcases and the windows in both rooms are

curtained with soft-blue linen curtains, with concealed

tracks, made by Canterbury-based company Ada & Ina.

This is possible because of the great thickness of the

exterior walls, which keep the building super insulated.

But while I began to play an enjoyable game of spotthe-theme

that’s not to say the rooms are samey in any

way. The ceiling in one bedroom is the same rising slope

as in the entrance area and the floor in there is made from

OSB – Oriented Strand Board – which is like plywood’s

fancy-looking cousin. It is also home to a Charles Eames

fibreglass rocking chair from 1952, a thing of great beauty.

From this end of the building, which houses two

bedrooms and their bathrooms, and the study with its

goldleaf door, we head back towards the front door and

up the oak stairs, which Paul had made from the old

oak worktops in the kitchen of the original bungalow.

The top floor is given over entirely to the master bedroom,

with two large windows which slope with the slanting

roof to the sea view side of the house. To the East Hill

side there is another picture window and a door leading

to a terrace where you can see the four sedum roofs over

the kitchen. They planted them with moss and other

suitable things, but now wildflowers have self seeded in

them creating an ever-changing unexpected display.

A standout feature in the bedroom is the stainless steel

chimney of the woodburner, housed on the bottom floor,

which creates a radiator right through the house. Oh, and

I forget to mention – the bathroom at the back of the

space is finished with acid yellow mosaic and the wardrobes

in the adjacent dressing room have plywood doors.

From here we head back down both sets of stairs coming

to probably my favourite spot in the whole house – a doubleheight

nook of the greatest cosiness, with a built-in daybed,

on a poured concrete plinth, the woodburner and the TV.

Just to remind you where you are, there is an acid-yellow

pendant light and a window with a yellow Perspex sill.

Then, it’s on through into the amazing kitchen,

with its white supporting columns – and one acidyellow

one – plus a sleek stainless steel tube extractor

fan, all echoing the stainless steel woodburner chimney,

with the two walls of glass and endless views.

With such an extraordinary outlook, it makes sense that

the kitchen itself is very simple, with one wall of white,

knobless cupboards – made by Boffi and an amazing

eBay find – and a big white island with a stainless-steel

top. With one little bit of acid yellow Perspex dropped

into it for growing herbs and more design classics in the

Louis Poulsen PH5 lamp over the long dining table,

Beef Carpaccio

Prep time: 15 mins Cooking time: Around 10mins,

plus at least 3 hours resting time Serves 4 approx.

This is a wonderful way to enjoy fillet of beef. The perfect

entertaining dish, as it can all be cooked in advance,

makes the beef go a long way and is gorgeous with big

salads, or hearty potato dishes such as dauphinoise.

If you would like to cook for more people, order a

larger piece of fillet and cook in the same way.

• 500g approx middle piece fillet steak (make

sure you ask your butcher for a middle piece)

• extra virgin olive oil

• dried mixed herbs (I use herbs de Provence)

• rocket, Parmesan shavings, black olives,

Maldon sea salt and balsamic glaze to serve

1. Pat the beef dry with kitchen roll, and rub with

olive oil. Put the herbs and freshly ground black

pepper on plate, then roll the steak in the mixture,

patting down firmly so the meat is all coated.

2. Heat a sturdy frying pan to very hot. Place the steak in

the pan and seal on all four sides and each end, turning

with tongs. This takes about 10-12 minutes. Leave the

ends to last so you can see progress and colour of meat.

3. Meanwhile prepare a bowl of iced water and

when meat is done plunge in the iced water, then

pat dry and leave to cool. Wrap very tightly in foil

and refrigerate for at least 3 hours or overnight.

4. When ready to serve, pile the rocket on a serving

dish and a light drizzle of good olive oil.

Carve the beef thinly (this can be done an hour or so

in advance) and arrange on top of leaves. Sprinkle a

little Maldon sea salt, black pepper and, using a potato

peeler, shave Parmesan cheese in curls over the top.

5. Finally drizzle thick Balsamic glaze in stripes

over the top and serve immediately.

Dauphinoise Potatoes

Prep time: 15 mins Cooking time:

Around 45 mins Serves 4-6

This is a glorious creamy potato

dish, flavoured with Gruyère cheese

and garlic. It can be cooked the day

before and simply reheated when

ready to serve. It’s super quick to

make if you use a food processor.

The slicer attachment will cut

the potatoes perfectly, while the

grater function will make quick

work of preparing the gruyere.

• 900g floury potatoes

(I use Maris Piper)

• 200ml double cream

• 500ml milk

• 180g Gruyère

• nutmeg, grated

• 1 garlic clove, peeled and cut in half

1. Preheat the oven to 180˚C. Rub

the garlic clove over the inner edges

and bottom of a large gratin dish.

2. Peel and slice the potatoes very

thinly, using either a mandolin, knife or

the slicing function on a food processor.

3. Bring the cream and milk to a

simmer in a large saucepan. Add

the potatoes, salt and pepper, and a

generous portion of grated nutmeg. Stir

to ensure all the potatoes are covered

with the cream mixture. Lower the heat

and cook for 10 minutes. Stir every 2

minutes to ensure they are not sticking.

4. Add the Gruyère, stir and cook

for a couple of minutes more. Pour

the potatoes into the prepared gratin

dish, make sure they are evenly

spread and cook for 30 mins until

golden and bubbling. You can now

serve, or the dish can be chilled

and reheated by putting back in

a hot oven for 15-20 mins.

Warm Crab & Horseradish Dip with Homemade Tostaditas

This utterly sublime crab dip takes 3 mins to put together, perfect for having with drinks. I’ve paired it with homemade tostaditas,

which can be made a few days in advance and stored in an airtight container (or simply serve with some good quality crisps!)

For the dip:

• 1 tin of shredded crab meat

• 1 pack of cream cheese

• 1tbsp creamed horseradish

• 2tsp English mustard

• cayenne pepper, to sprinkle

For the Tostaditas:

• 2 flour tortillas

• olive oil

• dried thyme

• sea salt

To make the dip:

Preheat the oven to 180˚C.

Drain the crab meat and mix

with all the other ingredients.

Put in an oven proof bowl

and sprinkle cayenne pepper

over the top. Cook in the

hot oven for 15 mins. Serve

immediately, but be warned

it is hot liquid – so you may

want to wait a few moments

for it to cool if you can.

To make the Tostaditas:

Pre-heat the oven to 180˚C.

Oil two baking sheets with

extra virgin olive oil. Using

scissors, cut the tortillas into

triangles and place on the tray.

Brush the top side with a little

oil and sprinkle over a little sea

salt and some thyme. Cook

for approximately 7 minutes

until crisp and golden.

Cool on a wire rack.

Prep time: 5-10 mins

Cooking time: 30 mins Serves 6

The speediest but most delicious

pudding you can imagine. The

topping is made in the time it takes

to melt the butter. It can be made

in advance and happily kept in the

fridge. Using frozen raspberries means

there is no messy fruit prepping.

• 100g butter, melted

• 100g plain flour

• 100g jumbo oats

• 75g caster sugar

• 40g chopped pecans

• 20g flaked almonds (optional)

• generous teaspoon cinnamon

• 200-300g frozen raspberries

1. While the butter is melting,

weigh and mix all the dry

ingredients in a bowl.

2. Pour in the melted butter

and stir until the mixture

resembles large breadcrumbs.

3. Distribute the fruit between 6

ramekins and sprinkle over the

topping. Any left over topping can

be frozen or kept in the fridge for

a few days. Put in the pre heated

oven for 30 mins until the topping is

golden and crispy. Serve with cream,

mascarpone or vanilla ice cream.

4. If making in advance just

put in fridge until needed.

In last month’s issue, I explained

that you really don’t have to

break the bank to build a

wardrobe of wonderful fragrances.

But sometimes, we want to break

the bank. There are special occasions:

big birthdays, weddings, holidays, when we long

for a scented something that will forever remind

us – thanks to perfume’s power to Tardis us

through time and space – of a person, a place,

an event. And sometimes, we might be lucky

enough to have a little windfall. What better

to splash some of that on than a treat for the

senses that can be enjoyed, spritz after spritz…?

In the past 20 years, many fragrance houses

have emerged at the truly luxurious end of

the market. Here’s the back story. It all started

in 1992 when Serge Lutens – better known

then as a make-up artist – opened his ‘palace

of perfumes’ in Paris’ Palais-Royal, which

became a place of pilgrimage for all those of

us who love scent. It introduced to the world

the concept of ‘niche’ fragrance, which was

then taken to another level by a man called

Frédéric Malle, who 21 years ago launched his

Éditions de Parfums collection. What he did

differently was to put the name of the perfumers

on the front of the bottle, making stars of

these gifted ‘noses’. Before then, outside famed

fragrance houses like Chanel and Dior, those

of us who wrote about perfume struggled to

find out who’d created a fragrance (and trust

me: it wasn’t Thierry Mugler in a white lab

coat, mixing up the ingredients for Angel…)

Monsieur Malle changed all that, kickstarting

the trend for ‘niche’ perfumery which has

exploded in recent years. And the big names

responded. Chanel launched their pricy

Les Exclusifs collection, while Dior offer

La Maison Christian Dior La Collection

Privée. Even Lancôme, better known for

blockbusters like Trésor, have an upmarket

collection, Maison Lancôme (and divine

it is, too), while Giorgio Armani’s chicest

portfolio goes under the banner of Armani

Privé. At Guerlain, meanwhile, you can lose

yourself in the utterly divine (and recently

relaunched) L’Art et La Matière collection.

The ‘ouch’ part, though, is that these

fragrances generally start at £100+ for a smallish

size, and go up – and up and up. Buying a

luxe-priced scent therefore, is not something

to be taken casually or lightly. Regrets? I’ve had

a few… and probably more than I’d like to

mention. So, here’s what I know. First, never

buy before trying – not just on a blotter, but

on your skin. Make a real-life expedition

to buy one of these fragrances; being able

to take your time is part of the pleasure.

Talk to the sales consultant; the individuals

who stand behind (or beside) the counters,

selling these upmarket scents, are the best

in their organisations, with a huge well

of knowledge to be dived into. Based on

what you wear already, they can steer

you in the direction of new discoveries

that are likely to push your buttons.

Explain what you want the fragrance

for: everyday, holiday, getting dressed

up, to mend a broken heart, whatever.

Allow them to spritz blotters for you –

up to six, being sure to label them with

a pen so you know which is which. Let

the alcohol dissipate before smelling,

and of the six, whittle it down to three

to try on your skin: two wrists and the

crook of an elbow; no more than that.

Go away and have a coffee. (This

is an order, though it can be tea

or even Champagne, if you

prefer!) Smell and explore

how the fragrance

develops. Decide on

your favourite,

then go back

and spray

for a few hours, before living with it on

your skin. (I also like to spray my scarf,

as these carry fragrance very well.) Yes, it

all takes time, but when you’re sinking a

couple of hundred quid on a scent, you

want to be 100% sure it’s you. And these

consultants truly won’t mind; they want

you to be happy. And then – and only

then – do you reach for your credit card.

Personally, I love this whole process

– the anticipation adding to the

excitement of the new acquisition.

But where to start, I hear you chorus?

So here are some divine finds from

some fabulous collections. I really

hope you enjoy seeking them – or

their scented siblings – out…

Chanel Les Exclusifs Sycomore, from

£169 for 75ml eau de parfum. I have

several scents within Chanel’s upmarket

Les Exclusifs collection, but I return

time and time again to this woody

wonder, powered by lashings of vetiver.

I find it almost aromatherapeutically

grounding, never making a visit to

London without spritzing myself with

this, to dispel metropolitan stresses.

La Maison Dior La Collection

Privée Vanilla Diorama, from £99

for 40ml eau de parfum. You may

think you don’t like vanilla scents,

but trust me, you do, do, DO, when

this material’s in the hands of Dior

perfumer François Demachy. It’s

smoky, smouldering, a little sweet

(thanks to a jigger of rum, a sprinkling

of chocolate) – and very, very sexy.

Armani Privé Sable Nuit, £230 for

100ml eau de parfum. Allow yourself

to be whisked on a magic carpet

ride of frankincense, pink pepper,

swirling into vanilla, labdanum,

patchouli and cedarwood. This is

truly exotic, created to evoke ‘the

mystery of clear Arabian nights and

the warmth of fine desert sand’ – and

heaven, bottled, if you ask me.

Guerlain L’Art et la Matière Santal

Pao Rosa, from £280 for 100ml eau de

parfum. Guerlain just dressed up this

highly respected collection with a chic

new bottle, cap and thread-adorned

(which you can have personalised,

in their Harrods boutique). This

is my favourite: a new creation,

which pairs delicate rosiness with

smooth sandalwood, a touch of spice

and a mysterious finale, with skinlingering

notes of myrrh and oudh.

Editions de Parfums Frédéric Malle

Synthetic Jungle, from £30 for 10ml

eau de parfum. Cleverly, this fragrance

is available in a 10ml size (50ml will set

you back £128), so you can try-beforeyou-splurge

on stellar perfumer Ann

Flipo’s humid, green, intriguing Chypreleather

creation, with its bed of damp,

earthy patchouli on which green flashes

of hyacinth, lily and the valley settle. I

have quite a collection of Frédéric Malle

scents, acquired over the years from this

pioneer of niche perfumery; you might

also try Lipstick Rose – a scent so utterly

Parisian, it makes me stand a little taller,

put a bit of a swing in my step – and

Musc Ravageur, which is so seductive

that my otherwise-liberal husband won’t

let me leave the house wearing it.

Moresque Amber Arabesque, £310

for 100ml. As well as swooning for

Moresque’s fragrances – which are

inspired by the Middle East, the original

‘cradle of perfumery’ – I’ve a hunch

you’ll be seduced by the many different

designs on the gilded bottles. Sashay

along to Harrods to try this on your skin:

a delectable dance of amber, vanilla and

flower notes, lightly dusted with sugar.

Salvatore Ferragamo Tuscan Creations,

£195 for 100ml. There’s a positive

rainbow of fragrances within Ferragamo’s

Having time to yourself is

something precious that

evades many of us. So,

when it comes to looking after our

health and fitness, it’s always a good

idea to have some hacks to maximise

results in the shortest time possible

– particularly since it is consistency

that is the magic key to unlock weight

loss, fitness, and general health goals.

In truth, if I didn’t hack many

things in my life – like ironing and

cleaning the bathroom – I wouldn’t

manage to cross more than a few

things off my huge daily to-do list.

I’m sure that, like most of my clients

who have limited time to devote to

their health and fitness, you also want

long lasting results. So the idea with the

workouts that I’m sharing on this page is

that you do what you can, when you can.

They are designed to be as long or as short

as you like. One round of 3 minutes is

better than nothing. If you have more time,

then aim for 30-60 minutes as regularly

as you can. Every second counts but

remember you’re aiming for consistency

and although it is scientifically proven

that regular exercise reduces stress, feeling

guilty that you have no time to fit in a

good hour at the gym actually increases it!

Here are a few examples of my

favourite fitness hacks that can be easily

slotted into your busy day and that

give you the results you want in the

most efficient way possible, so as not to

add to your general daily stress level.

These workouts can be adapted

to suit most fitness levels so give

what you have, when you have it!

Burpees - 20 seconds

Rest 10 Seconds

Squats - 20 seconds

Rest 10 seconds

Mountain Climbers - 20 seconds

Rest 10 seconds

Crossovers - 20 seconds

Rest 10 seconds

Press Ups - 20 seconds

Rest 10 seconds

High Knees - 20 seconds

Rest 10 seconds

Power Jumps - 20

Rest 10 seconds

Complete 1 round minimum up to

a maximum of 8 rounds. Good form

should be the priority over duration.

When you have completed your

session, make sure you have time to

stretch yourself out and recover.

Take it outside

Shake up your usual run/jog/walk

to maximise your fitness in half the

time. Do a steady walk/jog/run then:

Tricep dips on bench/log

Jumping Jacks

Walking lunges

Side gallops

Press ups on bench/log

Repeat as long as your usual run

takes you. You may not cover as

much ground but you will have

hacked into maximum benefits and

it’s also a great opportunity to fit in

some mindfulness and yoga practice

in the great outdoors to really make

a difference in minimum time.

Lastly, these are my top tips to

keep up momentum in order to

reach and maintain your goals.

Rest days – As important as

your actual workout (not enough

rest between sessions will delay

and reduce your progress).

Variety – Essential for the

very best results.

Enjoyment – I’ve always stressed that

the most important thing is to do

something you enjoy, which fills you

with energy and makes you feel great.

If you don’t enjoy what you’re

doing, you’re in pain for days

and dread the next session, it

won’t work in the long term!

Step away from... fake connections

Social media platforms like Facebook, Instagram

and Twitter bring many positives like reconnecting

depending on the use, they can also impact us

feel connected, yet studies have shown that passive

use of social media, just watching or scrolling without

actively posting, is actually associated with greater social

comparison, lower self-esteem and greater depression.

Try using social media as an addition to your existing

Think carefully about who you follow and surround

yourself online with positive role models, family and

real friends and unfollow those that undermine your

self esteem. Think of it as a condiment, rather than

the main meal. Nurture face-to-face relationships,

swap likes for hugs and comments for conversations.

Make Your Winter Garden a Wildlife Haven

Follow Jo Arnell’s expert tips for a thriving outside space all year round

Imagine sleeping in the garden

all through the winter months.

Where would you sleep? In the

shed? Under a hedge? I could possibly

eke it out for a night or two, but not

much longer, even with food and a

sleeping bag. Unless something goes

terribly wrong in the next few weeks

I’ll be sleeping inside, but there are

a surprising number of creatures

snuggling down in our gardens right

now. Many will manage on their own,

going into hibernation, or something

close to it – slowing their metabolisms

down, not moving much and needing

less food. Some will have to keep busy,

whatever the weather, scratching a living

on whatever they can find – fairly easy

when there are fruits, berries, worms

and insects around, but once we plunge

into the depths of winter the berries

will have gone and the ground may

be completely frozen. What will the

robins, and hedgehogs, voles, squirrels

do then, poor things? Well, thankfully

there are lots of simple things we can

do to help them survive the winter.

Don’t be too tidy

Once upon a time we used to put

the garden to bed for the winter.

This involved cutting back, sweeping

up – and generally removing most

of the stuff that wildlife depends on

for shelter – and in the case of the

detritivores, food. It comes as a huge

relief to this messy gardener to know

that it’s much better to leave it all in

a state of graceful decline until the

spring – and with any luck nature

might have done some of the clearing

up by then too. Insects like ladybirds

and lacewings (when they’re not

cramming themselves into cracks in the

window frames) will find overwintering

places among old stems and the top

growth of herbaceous perennials.

If you do want to be tidy, satisfy

the neatness urge by sweeping the

fallen leaves into piles (once rotted

down a pile of leaf mould makes a

great soil conditioner) and make a

log pile. Invertebrates like beetles,

woodlice, spiders and even bigger

creatures like lizards and toads will

squeeze themselves into the gaps

between the logs and hunker down.

Stop weeding

Native plants and wildflowers (some

people might call them weeds…)

stealthily creep into our gardens, and

at certain times and in some places I

turn a blind eye and let them get on

with it. If you have a patch of nettles

in a corner of the garden, or a rash

of annual weeds running through

the borders, then pat yourself on the

back – you are doing a great job for

wildlife. The fact is that our native

fauna have co-evolved with these plants

and they provide perfect food and

ideal shelter – a thicket of brambles,

an ivy hedge, or self-sown holly tree

will provide a safe hideaway for lots of

creatures and these plants are also highly

nutritious – packed with nectar when

in flower and then energy-rich berries

in the autumn and into the winter.

Grow your own bird food

Try to leave the seed heads on plants

that have finished flowering. They will

look beautiful in slanting autumn and

winter sunlight, especially when dusted

with frost and will be providing food

for birds and small rodents. I grow a

lot of Verbena bonariensis – most of

it unintentionally (it’s a prolific selfseeder

if it likes you) and in late autumn

flocks of blue tits and goldfinches flit

among the wiry stems, eating, and

(no doubt spreading) the seeds.

I have started to look for plants that

have beautiful and nutritious seed

heads, as I now rely on the birds for

Small children will enjoy making fat balls and filling

coconut shells by mixing melted suet and bird seed

together, pressing it into shape and then hanging up

somewhere where they can watch the birds feed

much of my garden pest control. The

blue tits hang around all year and are

brilliant at eating aphids too. In fact

most birds, even if they are seed-eaters

will be feeding insects to their young

in spring. Sunflowers are a great bird

food plant, as are things like Echinops,

Coreopsis, Cosmos, and Echinacea.

Putting out bird food is a life-saving

thing to do, but if you can grow some

of it yourself, so much the better.

Provide fresh water

If you are lucky enough to have a pond

in your garden, then you will have

achieved the single best thing you can

do for wildlife. From the creatures

that inhabit it to those that visit in

order to drink and bathe, ponds are

a great resource all round. Ponds do

need some maintenance – keep them

topped up and clear of algae and duck

weed in the spring and summer and

then in autumn and winter prevent

them from becoming clogged with

leaves and from freezing over. If you

are building – or improving – a pond,

make sure that there’s a shallow ‘beach’

at one edge that will allow access and

marginal plants to help creatures to

climb up and out of the water.

Fresh water is vital throughout

the winter months, but if you don’t

have a pond, providing a bird bath,

or shallow bowl is very useful (it

needs to be shallow and with sloping

sides to prevent animals and birds

accidentally falling in and drowning).

Change the water regularly to

prevent disease and keep it ice-free.

Get the whole family involved

Children can join in with a range of

projects, depending on their ages. Small

children will enjoy making fat balls and

somewhere where they can watch the

birds feed. Older children and teenagers

can develop carpentry skills by making

insect hotels. These don’t have to be

complicated – the best ones are simple

wooden boxes with dividers, filled with

sections of cut bamboo, pine cones,

sticks and straw. They can be attached

on walls and fences in sheltered places

in the garden. Surprisingly, bug hotels

make great presents for people too.

They could also help to make a

hedgehog house. Making a cosy home

for these once common, but now

endangered, creatures will help to keep

them safe while they hibernate. Kits

are available (see rspb.org.uk) or make

one from scratch using scrap pieces

of wood – old pallets are good for

waterproof. Many will have already found a hibernation site

by now – and they are partial to bonfire sites, so if you are

building a bonfire, do check it thoroughly before you light it.

One of the best things about encouraging children to

appreciate wildlife is that they are lured outside into the

fresh air at a time of year when they might not otherwise be

wanting to go out. It also encourages them to concentrate

and to keep still – both vital if you want to actually

see any wildlife. When my son was little he insisted on

dressing up as (and impersonating) an owl to do the Great

Garden Birdwatch – to make the birds feel at ease.

From simple things like not tidying up too much

in the garden and hanging a bird feeder, to building a

hedgehog house or installing a pond, there are lots of

small projects that will keep the family outside – and

what better way than watching and caring for wildlife.

A Taste of the Mediterranean

It is possible to bring a little holiday magic into your own garden, as Sue Whigham explains

As the nights draw in, the

thought of a Mediterranean

holiday becomes more and

more appealing. The image in one’s

mind of being in Greece in the spring

is almost a painful experience after

the couple of years we have had and

fifteen minutes with the autumn sun

on my back in a Waitrose car park

today just didn’t hit that spot.

I’ve always felt incredibly lucky

to have lived near St George’s Bay

in Malta when I was at an age to

enjoy the wild flowers of the island

and think that wading through

fields of freesias and all manner of

fragrant herbs triggered a love of

all plants let alone Mediterranean

species, so it is particularly

exciting to see the new garden at

Sissinghurst has now been realised.

Back in 2018 Dan Pearson was

approached by Troy Scott Smith

who was, and now is again, Head

Gardener of Sissinghurst Castle

Gardens and the National Trust, to

re-envisage Vita Sackville West and

Harold Nicolson’s original dream to

have their own Delos at Sissinghurst.

In 1935 Vita and Harold had visited

Delos, a windy and rocky island

approximately six nautical miles off

Mykonos in the Cyclades which is

thought to have been the birthplace

of Apollo, the Sun God and son of

Zeus. The island is only approachable

by sea and is sacred in ancient Greek

culture. Vita and Harold were inspired

by the island, its history and the sight

of the remains of streets and buildings

enveloped by the native phrygana (a

type of local low scrubland). Delos is

incredibly hot for much of the year

and pretty tree-less. The air is clear and

the sense of history on the island is

intense. No wonder Vita and Harold

were captivated by the place and felt

that they wanted to build a garden at

home to remind them of their visit.

Their dream of building their ‘Delos’

was virtually complete by 1937 but

the combination of the imminent

threat of war and the fact that the site

was north facing and on the wrong

side of a high wall combined with

soil which was poorly drained, heavy

Wealden clay, meant that the garden

was not a success. It seems that Vita

wrote of her Delos in 1953 “this has

not been a success so far, but perhaps

it will come right some day”.

However, archival evidence kept at

Sissinghurst, combined with notes and

photographs taken by a then assistant

gardener, Josh Sparkes, on a field trip

to Delos, enabled Dan Pearson and

the Sissinghurst team to realise the

original plan conceived in the 1930s.

were so incredibly far from the conditions on Delos,

terraces were built to tilt southwards, increasing light

levels, and the entire garden was given a new soil mix of

which half includes 5-10mm grit and crushed bricks to

enable free draining. The walls and terraces were built

to emulate the ruins at Delos. The soil varies in that in

areas which echo goat tracks leading off the main paths,

self seeding of Greek annuals will be encouraged with

a thinner layer of grit. A combination of shrubs and

perennials emulates the phrygana and native bulbs including

Anemone pavonina and Crocus sativus have been planted.

Once the landscaping of the site was complete, expert

advice was taken from Olivier Filippi of Pepiniere in the

South of France as to which Greek natives would replicate

those growing amongst the ruins of Delos; planting

commenced and now, in the autumn of 2021, the garden

is looking good and is quite inspirational. We visited earlier

in the year when Euphorbia rigida was in full regalia and

a little silver leaved, white flowered treasure, Tanacetum

densum subsp. amani had us reaching for our notebooks.

exciting as the light had changed

and there were some marvellous seed

heads and grasses were very much in

evidence. We particularly liked Melica

ciliata, the silky spike melic, which is

so perfect for a gravel garden. Other

treasures include the perennial form of

honesty, Lunaria annua ‘Corfu Blue’

whose violet blue flowers are followed

by purple tinged seed heads as well as a

particularly pretty pink, late flowering

oregano, Origanum laevigatum, whose

flowers held on wiry stems and are

particularly attractive to pollinators.

But what plants would do best in

your piece of Mediterranean heaven?

I think that the first thing is to

remember: right plant, right place.

Mediterranean plants will thrive in our

part of the country given good drainage

and light. And of course climate change

means that we have more chance of

success with our own gravel gardens in

which we can grow plants that we might

have seen on holiday and which weave

happy memories in our minds. Reading

garden magazines and seeing the show

gardens at RHS Chelsea Flower Show

this year (albeit on television), it is

obvious that plant trends are adapting

to the changing temperatures we are

experiencing. It is all exciting stuff

and a different way of thinking about

gardening. Beth Chatto up in Essex,

one of the driest parts of the country,

led the way with her garden hewn out

of a working farm. Her influence in

dry gardening has been huge and a

visit to her garden is worth the trip.

I remember trying to grow Euphorbia

rigida on heavy clay when we lived

near Headcorn and wondering why it

didn’t survive through the first winter.

It is all about emulating where the

plant grows naturally and then giving

it the appropriate conditions. It’s the

same with things like oleanders which

are so happy in the Mediterranean

countries. It is tempting enough to

take a cutting whilst away and bring

it back secreted in your washbag

but somehow they don’t really

look quite the same or flower as

well as they do in, say, Majorca.

Whatever floral delights your

Mediterranean holidays hold, it is

definitely worth the effort to experiment

with different varieties of plants and

bulbs in your own garden. It’s all

worth a try and if the plant doesn’t

take you, you still have the memories.

Meet the Head

Nicky Whittaker, Head of Pre-prep at Vinehall, talks

to us about what inspires her

What are you most looking

forward to in the coming year?

I am most looking forward to running

a school year which is as normal

as possible! We recognise the vital

importance that social interaction

plays in the development of all our

children, and it is our youngest pupils

who have missed out the most.

How have these unsettled

times affected the children?

I believe there has been an increase

in anxiety. However, I am greatly

encouraged by the resilience I

have observed in the children and

I am looking forward to working

together with my fantastic team of

teachers and teaching assistants to

mitigate against damage caused by

the difficulties of the pandemic.

What or who inspired you

to go into education?

Every child has the right to a

nurturing and holistic start to their

school life and the desire to achieve

this was my inspiration. At Vinehall

this aim is realised by providing all

our children with the space to grow

and mature in their own time.

Can you share a favourite memory

from your own school days?

Music provides many of my happiest

memories from school and I enjoyed

spending my lunchtimes playing

various instruments in chamber

groups and singing in choirs.

What do enjoy outside work?

I love walking with my miniature

dachshund, Lola, in the beautiful

countryside of the Sussex High

Weald. I also enjoy going to the

opera at Glyndebourne, a passion

which grew from a time working

backstage there in my twenties.

‘The Magic Flute’ and ‘Tristan und

Isolde’ are still my favourites!

What do you enjoy most

about your role?

I love the diversity of my role;

no two days are ever the same!

Alongside managing the everyday

running of Pre-prep, I really enjoy

teaching music to all the children.

I particularly relish playing a

nurturing role for those children in

need of extra support or guidance.

What has changed in education since

you first went into this career?

The biggest changes have been

around technology, but the most

refreshing is that education has

become so much more inclusive.

There is absolutely no excuse for

any child to feel marginalised or

ostracised. Additionally, neuroscience

has transformed our understanding

of the brain and helped us to

develop a growth mind-set.

Did you always want to

be a headteacher?

I have always loved being a teacher

but, after winning the Sussex Teacher

of the Year Award in 2020, I gained

the confidence to aim for a Headship

where I could work with more children

on a wider scale. I was delighted to

find my beliefs aligned so closely with

the nurturing ethos of Vinehall.

Tonbridge’s Barton Science Centre wins RIBA Regional Award

Tonbridge School has received a highly prestigious RIBA

(Royal Institute of British Architects) Award, with judges

commending its “brilliant” Barton Science Centre.

The state-of-the-art building was among the winners in the

RIBA South East Awards, an annual competition which

celebrates the very best of UK architecture. The winning regional

projects will now go on to compete for national awards.

RIBA judges found that the purpose of the new space, “To

inspire a new generation of young scientists,” had been achieved,

and that the centre “delivered the very best teaching spaces on

every level. Overall, this is a brilliant new science building.”

The centre’s features include an interactive periodic table, a

roof garden and greenhouse, a giant TV wall, three libraries

and an observation hive for studying bees. James Priory,

headmaster, added: “RIBA Awards are renowned across

the world and we are delighted to be among the winners.

The Barton Science Centre plays a huge role at Tonbridge,

placing us at the forefront of teaching and learning in

modern science, and also has an important role as a hub in

the community, hosting primary school visits, international

student conferences, school competitions and talks.”

Eastbourne’s Eden: Last week, Sir Tim

Smit, co-founder of the Eden Project, was

in town to discuss a new environmental

initiative he is keen to bring to Eastbourne

as part of the Queen’s Green Canopy

Project to mark her Platinum Jubilee.

Working closely with Eastbourne College

and the other schools of the Coastal Schools

Partnership, Sir Tim has ambitious plans

to make Eastbourne a world famous centre

where young and old can re-connect with

their natural environment, taking advantage of

the unique combination of downland, coast,

woodland and marshes around the town.

In this workshop you’ll be taught how

to create a table centre piece using

dried flowers and seedheads, led by

floral stylist Gee from Bloom and

Burn. The workshop will start with

a short talk on collecting flowers

and seedheads for drying from your

garden and how to dry them. By the

end of the class you’ll have created

your own design, wrapped-up ready

for you to take home. All tools and

materials will be supplied as well

as a hot or cold drink and cake to

keep you refreshed. Participants are

invited to stay on for lunch at Water

Lane’s restaurant and enjoy a two

Hairdresser-turned-shepherdess, Zoë Colville

farms nearly 100 acres of land near Maidstone

with her partner, Chris Woodhead. With prime

focus on their animals’ wellbeing, together they

rear cows, sheep, goats and pigs, eventually selling

their meat through The Little Farm Fridge. This

month, Zoe preps for the year ahead on the farm

As much as the nights pulling in and the weather

getting bleaker is a bit of a downer, for us it’s

also the beginning of a new breeding season full

of apprehension but most importantly excitement. It

includes a fair amount of shopping, which is usually my

forte but this type of shopping we tend to do together.

Any ewes who had a bad lambing, are too old or weren’t

very good mothers are sold on and we buy new ewes as

replacements. The breeding ewe price is the highest we have

ever seen in our short-lived farming careers so far but it’s all

relative as so are lambs. Once you’ve secured your new girls

you want to get them on lush grass so they are in tip top

condition for when the boys are let loose. When we let the

tups (male sheep) in the fields with the females we paint their

chests with a different colour paint so when they mount the

girls it gives them a coloured rump. This means we can see if

any tups are being lazy and also we can work out our dates to

expect the lambs. It also means many months of having fields

full of sheep that look like they’ve been to a Holi festival.

It’s such a vital time in our calendar as it near enough

secures our success during the spring and therefore

our income (lambs). What’s funny is considering how

much we have riding on it all going swimmingly we

are still taking a gamble: we have bought a new tup

breed this year, one that’s very popular in Australia…

such similar climates, hey? Will keep you posted!

As we get closer to the end of the year the apples

fall off the trees (much to the cows’ delight), we spend

evenings watching little Sheldon the newborn Hereford

X Highland calf skipping about and we don’t leave the

house without a million layers. Changes of season lend

us new challenges but are also the start of a new cycle

on the farm and sow the seeds for new beginnings.

The Little Farm Fridge Recipe of the month

• 500g Little

Farm Fridge

diced venison,

seasoned well

• puff pastry

How to cook it... Venison Pie

• 2 tbsp olive oil

• knob of butter

• 2 large red onions

• 3 garlic cloves,

crushed

• 4 fresh thyme

sprigs

• 2 tbsp plain flour

• 250ml red wine

• 500ml beef stock

1 Heat up a casserole dish with a lid, using olive oil fry off the

venison until caramelised on all sides, remove from the pan.

2 Reduce the heat and add the butter, followed by the

onions, garlic and thyme. Season, then cook for 10-12

minutes or until the onions begin to soften. Turn down

the heat, put the lid on and cook for half an hour more.

3 Heat the oven to 170°C. When the onions are caramelising

return the venison and any resting juices to the pan. Sprinkle

over the flour and cook for a couple of minutes, stirring lots.

4 Add the red wine and simmer. Add the stock to just

cover the meat. Pop the lid on – leaving a tiny gap –

and cook in the oven for 2½ hours. When the meat is

tender, check your seasoning and that the meat is soft.

5 Turn up the oven to 200°C. Cut the pastry into two pieces,

one slightly larger to fill a greased pie dish. (You can blind bake

if you wish!) Spoon in the filling, checking for thyme twigs.

6 Put your pastry lid on and use a fork to seal the edges.

Make a small hole in the lid for the steam and paint the

top with beaten egg. Bake for 45-50 minutes in the oven

and serve with seasonal veg and mashed potatoes.
