separation. 

A mediator is not a counsellor, and 

will not give you marriage guidance 

or encourage you to look at your 

relationship; they will help you in moving 

forward with your decision that you are 

ready to separate. 

Will I come face-to-face with my former 

partner? 

Mediators normally meet with you 

individually first, to get an idea of each 

person’s objectives before organising a 

joint session, if you both feel comfortable 

doing this. 

If you do not wish to be in the same room 

together then ‘shuttle mediation’ may 

be an option. This is when you remain 

in separate rooms and the mediator 

shuttles between you to try and facilitate 

discussions over difficult issues. 

What to expect at your first session? 

Initially, you will attend a mediation 

information and assessment meeting 

(known as a MIAM) with your chosen 

mediator who will outline how mediation 

works. They will also explain 

payment arrangements, 

timings and what you should 

expect. You will attend this 

initial session without your 

partner and it usually lasts 

around 45 minutes. 

Where will it take place? 

The mediation often occurs 

at the mediator’s office, 

or at some other neutral 

venue, but most mediators 

also facilitate sessions via 

video call. 

Do I need to know my legal rights? 

Before you commence mediation, you 

need to understand your legal rights and 

responsibilities with regard to financial 

provision and arrangements for your 

children. 

It is good idea to have also engaged a 

solicitor, separately to a mediator, so 

that you can take advice based on what 

a court might do in cases like yours. It is 

helpful to speak to a solicitor who is fully 

supportive of the mediation process and 

will help you to keep and open mind in 

mediation discussions, rather than looking 

to litigate. 

Should I take anything with me? 

Try and enter each mediation session with 

a focus on what you wish to achieve. You 

might like to make a list to bring with you. 

If you are attending mediation in 

relation to your financial separation, it is 

important to have a good idea of all the 

assets you have jointly and in your sole 

name. 

You should make a note of any debts or 

other financial liabilities and list out what 

your usual monthly expenses are. If you 

jointly own property, it is best to have 

a valuation of this before mediation, 

especially if one of you intends to stay 

on in the home and buy the other person 

out. 

What if there’s too much to talk about? 

You may know in advance which issues 

are likely to be hardest to resolve with 

your former partner. Be realistic and split 

these ‘big’ issues into one or two per 

session. 

If you are entering mediation to sort 

arrangements for your children, try and 

think through each scenario where a 

difficult issue might arise. For example: 

• where your children spend time at 

birthdays, Christmas or other festivals, 

Mother’s and Father’s Days and school 

holidays; 

• where children will go to school and 

what will happen at plays and parents’ 

evenings; 

• do you need to discuss how and when 

any new partners may be introduced to 

your children; 

• do contact arrangements with 

extended family members need to be 

agreed, such as with grandparents; and 

• what happens if an emergency arises? 

Who should be the first point of contact. 

Review progress after each session 

During and after each session, we 

recommend you make notes of the issues 

you discussed and agreed, as well as 

any matters that come into your head 

following the mediation that you forgot to 

mention at the time or that you feel need 

clarifying. 

What if we cannot reach an agreement? 

If an agreement cannot be achieved, or 

the mediator feels that it is not beneficial 

to continue with the mediation, then you 

should contact your solicitor. At that 

stage it may be necessary to consider and 

alternate route to reaching a resolution. 

While mediation helps many people, it 

is not always successful. Despite your 

best efforts, it may be that you reach a 

stalemate over a certain issue or issues. 

What happens if agreement is reached? 

If you reach an agreement at mediation, 

the mediator will draft a document called 

A Memorandum of Understanding for you 

both to sign. This will outline the terms 

you have agreed although it will not be 

legally binding. In order to make your 

agreement legally binding you should 

contact your solicitor who will advise 

you further on obtaining a court order 

by consent to ensure the terms will be 

binding.

festive feels, great gifts and food and drinks galore 

My Midwinter Fair starts 

early and always at 

Oatopia with slow-cooked 

porridge, topped with honey plus a 

chai latte that magically transports 

me back to my travels around India. 

I start my Christmas shopping 

with the easiest. County Clothes 

always have something just right for 

my husband, plus they have stores 

across Kent and Surrey if he wants 

to swap my carefully chosen gift. 

For women’s fashion I begin with 

Birdie and something for my sporty 

daughter. I picture their quarter-zip 

jumpers in a glamourous apres-ski 

bar, but they look just as good worn 

post-Pilates or on a casual night out.

stand, so I head there next, then onto 

Bricks & Stitches, Deeba – where I get 

PJs for my sister – and Wardrobe No.9, 

where I buy a pretty tulle skirt that I’ll 

wear to our Christmas drinks party. 

I stop by brand new exhibitors, 

Wild Iris Spa, who won our Best Stand 

Award for their beautifully creative 

pop-up space and buy my hardworking 

friend a voucher for a gorgeous facial 

to pep her up after a long year! 

Coffee time. My shopping partnerin-crime 

loves Fine Grind, so off we 

pop for a little latte pick-me-up. My 

husband grinds his own, so as we pass 

Kin Coffee, I grab a bag of Colombia’s 

finest beans for his stocking. 

My bestie from our backpacking 

days is still a hippie at heart, so I buy 

her a gorgeous dress from Patchouli 

Fair. It’s perfect for any dinner party, as 

well as next year’s festivals. I then stop 

at Lottie’s Loft, Malthouse and Mabel 

Sheppard and come away with some 

stylish gloves and two scarves, one of 

which Mum will love. I’ll find homes 

for the others. Maybe in my wardrobe. 

Next is jewellery and the designers 

that I always visit – Flutterby, 

Charlotte Reid and Coco Jane, 

which my daughter loves. A friend 

told me I must check out Quo 

Vadis and Elizabeth Everett, who are 

new and have some exciting pieces. 

Spoiler alert: I love them both. 

After a delicious quiche and salad 

from Hush Hush, we decide to sample 

some drinks. We start with Downsview 

Vineyard and each buy a couple of 

bottles for Christmas Day. I love a 

Negroni, so I pick up some Vermouth 

from In The Loop, which I’ll wrap up 

for my husband. Our next stop is Kent’s 

award-winning Anno Distillers, where 

we sample slightly more of their range 

than we should. I get a Sloe Gin for 

Dad and an Orange & Honey Gin for 

my son. Buoyed by these Christmas 

spirits, I start gathering treats for Mum’s 

annual food hamper – this year I’ve 

included the Nonya Secrets cooking 

sauces that are already favourites, plus 

delicacies from Olive & Oak, and a 

McLaren Christmas Pudding too. 

It’s Mum & Dad’s big anniversary 

next year, most of which has been spent 

in the family home that holds so many 

memories, so we’ve decided to buy them 

a bespoke picture of the house, from

chocolate, before choosing some fun

If you want a sturdy heritage home with oodles 

of character, look no further than the turn of the 

nineteenth century, when Victorian engineering was at 

its peak and houses were built to a really high quality. Big 

windows, high ceilings and lots of period features thrown in. 

The house we are visiting today in Tunbridge Wells 

is one such imposing beauty, its coat of dark green 

exterior paint hinting at an exciting update to late 

Victorian style. It wasn’t quite love at first sight for 

owners Morgan and Jon, who moved here just over 

four years ago. This handsome property looked very 

different until recently. “We bought it from a lady 

who rented out rooms,” explains Morgan. “Each floor 

had a kitchen, and it had seven bedrooms in total. We 

changed it back to a five bedroom, three bathroom family 

home – it’s more in proportion now.” At first glance it’s 

hard to imagine that it had ever been anything else. 

Luckily the structure of the house had remained 

relatively intact – and prior to its life as a collection 

of bedsits (think Rising Damp without the damp) 

it had only ever belonged to two families, which

alone or just covered over. This is a big house though, and a 

daunting prospect for two newly weds in their first home. 

Despite discovering that she was pregnant with her first child, 

within four months of moving in, Morgan wasn’t daunted. 

“We had renovated Jon’s flat before this – turning it from a 

one-bedroom to a two-bedroom, two-bathroom place, but 

I guess it was a mini project compared to this,” she smiles, 

as we gaze around their huge new kitchen extension. 

In the same way that you might eat an elephant (in case 

you were thinking of it, it’s one bite at a time), the couple 

divided the renovation into chunks. “We worked from the 

top down,” Morgan explains, “and made ourselves a little 

apartment on the top floor.” She makes it sound quite cosy, 

but they had no heating in the house for that first winter. 

They removed all the original plaster, then re-wired and 

re-plumbed the whole house, “and put in some structural ties to 

prevent any movement. It was nothing drastic, but we thought we 

might as well future-proof the house and decided to put them

in just in case.” These are the sort of things that you might 

as well do while the house is stripped back to bare bones. 

Back in the fifties and sixties, at the peak of the midcentury 

style, people wanted their houses to look streamlined 

and futuristic. Many period houses were stripped of their 

original features – or, if you were lucky, they were covered 

up with hardboard and wood chip. Jon and Morgan were 

fortunate enough here and managed to uncover many of 

the original features – and have been able to restore those 

that had been removed or damaged. “We took down quite a 

few false polystyrene ceilings,” says Morgan, “but luckily the 

owners had left the original ceilings underneath. In some cases 

the plasterer was able to plaster over them and add in new 

ceiling roses, coving and cornicing to match the originals.” 

They had builders in until the shell stage. “We did the 

plaster-boarding then the plasterer came in to plaster on 

top. We’ve done all the decorating too.” Where the original 

corbels in the hall had been lost or damaged, they were 

able to take casts of one of the remaining ones and put 

them back to look as if they’d been there all along. They 

have also replaced all the windows, reinstated what must 

feel like acres of dado and picture rails and added in

A partition was put up behind the bed with mirrored wardrobe 

to make a dressing area with views over the back garden 

some panelling, preserving as much as they could – “because 

it’s important to be authentic, to keep with the spirit of the 

place,” says Morgan. But that doesn’t mean being stuck in the 

decorative Victorian era. It’s a modern take on the style, but 

relies on the interior of the house keeping its original integrity. 

The kitchen extension is a case in point. When planning out 

the space they were careful to mirror the shape of the bay window 

at the front of the house, bringing symmetry and balance to either 

end of the building. The French doors were modelled on the 

original doors at the back of the house. “We wanted to use the 

actual French doors but they weren’t up to it – we needed them 

to be energy efficient.” The kitchen was installed in the nick of 

time – “it went in four days before Loxley arrived,” she laughs. 

It has become the room where they spend most of their time, 

and no wonder, as it’s a wonderful space – light and bright 

thanks to the large windows and French doors and overhead 

lantern light. It has the feel of an orangery, occupying the 

width of the house, with a generous island unit, underfloor 

heating and a hardwearing La Rochelle limestone, a pale 

natural stone that enhances the bright airiness of the room. 

The extension has really become a multi-function space. “The 

girls just scoot around the island unit,” says Morgan – she’s already 

had to touch up the paintwork. “We do yoga in here, and it’s great 

to lie on the floor and look up into the sky – it’s almost as if

we’re on a boat.” That she is able to 

even think about making time for 

yoga with two small children, a full 

time job and an enormous house to 

renovate and look after is testament 

to her organisational skills and the 

ability to prioritise what’s important. 

“Luckily we did most of the messy 

stuff before they were born,” says 

Morgan, “working on the house 

hell for leather in the first few years. 

There were locks on the doors from 

the days when the rooms were let 

out – so we could go in a room 

for half an hour, then leave all the 

materials and tools, come out and 

lock the door and then go back in 

and pick up where we left off.” 

Morgan is so good at forward 

planning that she has occasionally 

bought things years in advance.

“We spent a lot of time looking in 

antique shops and second hand places. 

Lots of things were collected before the 

children came along, but also before we 

even had a use for them.” These were 

usually smaller items, like door handles, 

but occasionally things like the ‘Eels’ 

sign above the entrance to the extension, 

which was bought from a shop in Rye 

long before they knew where to hang it. 

It’s interesting to see what inspires 

colour schemes and furnishings, but 

Morgan confesses that there’s no 

particular theme to her choices. “It’s just 

what suits – I see posts and pics of lovely 

calming schemes and tasteful decor, which 

I strive to achieve but the colour finds me! 

She had firm ideas about the style 

of the kitchen, and the colour scheme. 

“It was always going to be a country 

kitchen with wood. I’ve gone with a 

colour scheme of British racing green 

with pink.” This is a combo that sounds 

like it shouldn’t work, but it looks 

great. The key is to use the colours 

carefully – and to choose the right 

shades. “I went for the wrong pink 

at first,” she says. “The cupboards are 

now painted in Constantinople by 

Andrew Martin and the island unit is 

Farrow and Ball’s Studio Green.” These 

are set against the soothing neutral of 

Slipper Satin, also by Farrow and Ball. 

Neutral colours have been chosen 

for most of the walls in the house and 

provide a calm backdrop that allows 

other elements to become focal points. 

Panelling throughout the ground floor 

with wallpaper above – or in the case of 

the front parlour, on the ceiling makes 

for a Victorian feel, but with a modern 

twist. The panelling in the hall, on 

the front door and on the walls of the 

parlour is Farrow and Ball’s Off Black, 

with Elephant’s Breath, also Farrow and 

Ball, above on one of the walls in the 

parlour. This is an opulent room, with 

an inlaid carpet instead of a rug and 

they have paid careful attention to detail, 

even down to the smoked brass light 

switches, from Dowsing and Reynolds. 

“I love the radiators,” says Morgan. 

“They’re more sympathetic to the 

building. I especially like this one in 

the parlour, and we’ve left it unpainted 

because the raw finish looks so good.” 

There are large fireplaces in these 

rooms too, restored to their original 

condition and fitted with log burners, 

so that they look authentic, but 

are also practical and efficient.

have been able to utilise the space under 

the bay window seat in the parlour 

for much of the clutter associated 

with transporting small children. And 

then there is the utility room, which is 

enormous and fills the space that was 

once the original kitchen. “It’s so useful to 

have the space,” she says, “to have a place 

to put everything, so that the kitchen 

is a working and living space and the 

pantry is where everything is stored.” 

We head upstairs, past the girls’ 

pretty bedroom, where the ceilings are 

so high that the wardrobes have been 

extended upwards and the children 

have a set of triple decker bunk beds. 

“Loxley’s not big enough for the very 

top one yet though,” laughs Morgan. 

On the next floor, in what would 

have been the servants’ quarters, so with 

fewer features and lower ceilings, the 

couple have made a master bedroom 

suite. “This was originally three rooms,” 

Morgan explains. “We took one wall out 

completely and punched a hole in the 

other to make the entrance to the en suite 

shower room. We chopped off the original 

plaster and left bricks untrimmed.” This, 

together with retro shower tiles (applied 

vertically to match in with the line of 

the chimney), the up-cycled basin unit, 

bespoke copper piping towel rail and 

simple brass fittings from Rockett St 

George, gives the space an industrial 

look, which when mixed with high 

Victorian is almost steam punk, set off 

with flair by a fabulous freestanding 

Copperfield bath, which is glamorously 

positioned in the bedroom area. 

The bedroom itself has been cleverly 

zoned. “We put the partition up 

behind the bed to give a dressing room 

and separate sleeping area.” This not 

only makes the most of the space, but 

hides the storage – and potentially 

cluttered, dressing area and keeps 

the sleeping space tidy and serene. 

Ingenuity, panache, a huge amount 

of hard work and attention to detail has 

ensured that Morgan and Jon have been 

able to do the almost impossible – to 

reimagine this handsome late Victorian 

house and bring it bang up to date 

without losing any of its period charm. 

They have cherished and enhanced 

the original features, and infused 

this big sturdy home with timeless 

elegance and a vibrant personality.

The shift to flexible working has 

significantly increased interest in 

creating garden offices. The most 

common queries are whether such a 

building requires planning permission. 

The answer is not always simple – in 

many cases Permitted Development 

(PD) applies, which allows greater 

flexibility to build an ancillary 

structure of a certain size without 

needing planning permission. 

If your property is Listed you will 

require planning permission regardless. 

If it’s within a conservation area, 

Article 4 area or AONB then the 

general rules of PD are more restricted, 

so if a larger office is required then 

applying for planning permission 

may be required over PD. To find

The Stables there’s 

a baby outside, 

lying happily in her pram. 

No crying she makes, but 

this is as far as the nativity 

scene can go. We are here to 

meet baby Margot’s father, 

Benjamin Stokes, interior 

designer and owner of Kagu 

Interiors in Tenterden, and 

this is no humble straw-filled 

stable, at least, not any more. 

Tucked behind a row of 

elegant period town houses, 

this modest and diminutive 

building was once part of 

a larger stable that housed 

the horses for the residents’ 

carriages – the equivalent 

of a garage with access at 

the back of a house. Most 

of the original stables have 

now gone, but this last 

remnant, changed out of all 

recognition over the years – 

and previously rented out as 

a one bedroom apartment 

– “to a person who must 

have smoked like a chimney,” 

laughs Ben, describing how 

hard it was to get the nicotine 

and tar stains from the walls. 

There were no structural 

changes to be made, but the 

old dated interior needed 

to be stripped back to bare 

bones and started again from 

scratch. Blank canvasses 

are daunting for some of 

us, but for Ben they are 

an opportunity to use his 

interior design skills, allowing 

him to showcase some of 

the bespoke handmade 

furniture he designs and 

other unique finds sourced 

for the shop at Kagu Interiors 

in Tenterden High Street.

a glass door in a panelled glass wall and walk into a lightfilled 

mini atrium. You would think this might be a waste 

of valuable space in such a small apartment, but the atrium 

makes the place – enhancing the rest of the interior and, 

along with the French doors in the living area – flooding it 

with daylight. The window frames throughout are painted 

a striking and sophisticated dark tone – Farrow & Ball 

Studio Green. This colour is used to unify and underpin the 

colour scheme both inside and out, ensuring a streamlined 

and cohesive appearance to the building as a whole. 

Another striking feature of this refurbishment is the floor 

– which, if I didn’t know better, looks as if it was part of the 

original stable floor, weathered and lime-washed into a thing 

of beauty. But this floor is actually a reproduction – a

high quality, handmade copy of an original floor from 

an ancient building somewhere. The tiles are light and 

actually really thin – around 5 or 6mm thick, so can be 

laid almost anywhere. Ben says that when he starts a new 

project he usually begins with the flooring. “Start off with 

a good base,” he explains, “as it sets the tone for the rest 

of the project.” Wise words from the sole agent of Castle 

Stones, the Netherlands flooring company that hand make 

these special replica stone tiles. Similar composite brick 

tiles, this time from Mandarin Stone, have been used 

to good effect on the shower walls in the bathroom. 

Ben chose soft, but hardwearing, sisal for the bedroom 

floor and opted for wooden floorboards stained an 

ebony colour for the living room. The floorboards came 

from Orlestone Oak in Shadoxhurst. Supporting local 

businesses when he can is an important factor when it 

comes to choosing services and materials. In the case of 

The Stables, budget was also a big part of the decision 

making process. It was important to get the right look 

without compromising on quality, but within a budget, 

because ultimately a holiday home needs to return a profit. 

Demonstrable ways of achieving the desired effect, without 

having to splash out, abound here at The Stables. “To keep 

costs down the kitchen was from Wickes,” explains Ben, 

“but the marble top was sourced elsewhere. Using places like 

Wickes and Howdens is cost effective. You can then source 

the handles and other details from different places and make 

the units look bespoke that way. To be honest, a cupboard 

carcass is much the same wherever you get it from.” 

Ben is not averse to shopping at budget friendly high 

street stores either, providing the items meet the brief. “The 

curtains in both the atrium and living room are from Ikea,” 

he says, “but they work well and have helped to keep the 

project to budget.” It’s a question of knowing how and 

when to use such things, and this is a skill he has gradually 

learned as his interior design experience has grown.

them their rich warm colour and contrasts 

beautifully with the central section of the 

door frames, painted in a smokey blue 

Ben quickly realised that it was the interiors side of things 

that interested him the most. “When I came back (to 

Tenterden) I realised that the more I did, the more I 

wanted to get into interiors. I started the shop five years 

ago and now here we are,” he says. Business, despite 

recent events, is going from strength to strength. Using 

the shop as a base, he spends most of his time out and 

about, sourcing and designing – and really enjoys designing 

bespoke furniture for projects. He points to the coffee table 

in the living room. “That was a butcher’s block that we 

found a base for and then screwed a glass top on to.” It has 

made a perfect low table and with its worn, curving surface 

visible under the glass top it becomes a sculptural piece. 

They made the hall table and the vanity unit in the 

bathroom too – repurposing an old cupboard and 

plumbing a basin into the top. “Upcycling is a great way to 

achieve a bespoke look that’s also cost effective.” He points 

at a wooden door. “All the doors are made from reclaimed 

Mississippi oak floorboards.” This gives them their rich 

warm colour and contrasts beautifully with the central 

section of the door frames, which have been painted in 

the same unifying smoky blue as the window frames.

the taupe of the headboard of the bed, another handmade 

piece designed by Ben. Green is used as a fresh pop of 

colour throughout the apartment, livening up the otherwise 

restrained beige bathroom and luxurious walk-in shower. 

Ben travels extensively, sourcing materials and objects for 

projects and for the shop from Europe and Scandinavia and 

has forged strong links in Germany. “I wanted to be able to 

sell things that can’t be sourced in England,” he says. “I need 

to be able to get things that are a bit unique and unusual.” 

He’s found it a challenge to negotiate some of the recent 

hurdles in the marketplace, many associated with Brexit. 

“Importing is a nightmare at the moment,” he admits. “Things 

that I ordered six months ago and had forgotten abut have 

only just appeared. There are huge delays, lots of paperwork 

and red tape.” It is worth putting up with these irritations 

though, and ensures that Kagu can maintain its reputation 

for supplying unusual and unique interior solutions. 

Ben is also trying to push the business online, and weighs 

up the balance between old and new – the things he can’t 

source easily, or in sufficient quantity go in the shop, or 

are used as part of a project, but those items in relatively 

easy supply, like the large basket in the hall – which makes 

an ideal container for a large plant – are in stock online 

and at the shop. ‘I’m in the shop one day a week.’ Says 

Ben, ‘Most of the time I’m out and about, working on 

projects, designing furniture, looking for architectural finds 

in places like Ardingly, or sourcing things for the shop.’ 

The interior of The Stables has been dressed with an eclectic 

mix of bespoke and off the shelf items. Ben points out some 

of the furnishings that are also available in the Kagu shop, 

including the dusky pink Soho sofa in the sitting area. Striking 

verdigris copper lamps that hang in the hall to such effect 

that they become artworks in themselves. These mix happily 

with high street purchases and interesting finds from all over 

the place. The chairs in the dining area were sourced from a 

shop that specialises in old church furniture, while the shelf 

on the wall above started life as a potter’s board – being used 

to move pottery into drying rooms and kilns. An old fire 

bucket has even been turned into a stylishly retro plant pot. 

Kagu interiors does also venture outside a little. There 

is a fabulous rusty red Onora planter just outside the 

building – home to a huge clump of agapanthus and 

making a statement of its own when these aren’t in flower. 

A miniature sliver of patio can be found adjacent to The 

Stables, accessed either from the front of the apartment or 

through the French doors of the living room. This outdoor 

space could easily have been overlooked, but Ben has cleverly 

made it seem bigger than it is by using pale stone chippings 

on the ground. Helped by the horizontal fence, he has turned 

the space into a bijou seating and dining area complete with 

bistro table and chairs, surrounded by scented plants. 

The transformation of this building from humble 

stable, through forlorn rental into a stylish holiday retreat 

is near to being a small miracle and shows off, to great 

effect, both Ben’s considerable design skills and some 

of the fabulous items on offer at Kagu Interiors.

Winter Living 

Stylist and interiors author Selina Lake shares her 

decorating tips for the coldest months of the year

The simple, elegant 

armchair in a mid-century 

modern-style is from IKEA 

(below). I added a Mabel and Bird 

handmade cushion/pillow and a knitted 

blanket for extra comfort. The pinecone 

garland is easy to make: simply spray some 

pinecones with artificial snow or white paint and 

tie them onto a length of cord or string decorated 

with ribbons – I used narrow black satin 

ribbon. The walls are painted in vintage 

grey from Valspar and I arranged a 

mix of waxflower and eucalyptus 

in the glass jar on the table to 

add scent to the room. 

During the winter most of us spend more time indoors, rather than 

braving the cold for a night out. We’ll stay in and invite friends 

over for dinner or drinks, and have the family over for afternoon 

tea and gatherings. So it’s a good time to think about styling your space. 

There are a few practicalities to consider when styling your home for winter: 

number one is keeping your rooms warm and welcoming. Dig out the blankets 

and throws you tucked away during the summer and freshen them up with a 

quick, cool spin in the washing machine. Once dry, drape them over the 

arm of your sofa or armchair, lay them on your bed and stack the rest in a 


pile on a shelf or in a basket, so they 

can be easily grabbed when needed. 

Next, think about your flooring. 

I have painted floorboards in most 

rooms of our house, so I use a large 

Moroccan-style rug in the living room 

from The Plantation Rug Company 

to add warmth and rich colours. In 

our bedroom I use faux-fur rugs from 

IKEA on both sides of our bed, and in 

the kitchen a woven plastic Moroccan 

mat works well to keep the draughts 

at bay, plus it’s easy to wipe clean. 

There’s no need to rush out and 

buy loads of new furnishings for 

your home – you can work with 

what you already have and dress it 

for the season, perhaps investing 

in a few new accessories. I like to 

use a mix of chair styles around 

our dining table and to make them 

more comfy I add cushions, faux-fur 

rugs and folded knitted blankets. 

Sometimes simply arranging a few 

candles along your dining table or 

sideboard will make your space feel 

even more wintery. Use a mix of 

tealight holders, candlesticks or large 

pillar candles placed in jars and vases. 

Rearranging or adding new 

artworks and prints is another way 

to make your space feel ready for 

winter. Perhaps you could invest 

in a wintery wallpaper panel from 

Deborah Bowness, or posters 

and prints by Fine Little Day. I 

also love vintage botanical wall 

charts on dark backgrounds. 

Depending on how you have already 

decorated your home, there are a few 

different natural elements which can 

be brought in. Galvanized pots of 

mini pine trees work well in rustic 

spaces, whereas dried hydrangeas and 

deep-pink heathers fit into a faded 

grandeur theme. Pots or vases of 

white Amaryllis on a white dining 

table will work well if you’re after a 

predominantly white theme. I love 

making arrangements with a mix of 

colours for crafty, homespun spaces. 

Textiles need to be considered 

at this time of year too. You could 

swap your summery-print cushions/ 

pillows for dark florals, perhaps 

in either velvet or knit. Bedding 

can also be changed from the 

light and cool covers used in the 

warmer months to thicker duvets/ 

comforters, eiderdowns and blankets. 

Winter 

Scents 

It’s too cold to keep our windows 

open for very long during the 

winter when our homes are in 

need of some fresh air, so it’s the ideal 

time to introduce some warming and 

fragrant winter scents. Burning incense 

sticks and sage smudge sticks (bundles 

of dried herbs, bound together) will 

certainly add some lovely aromas to 

your space. Another option is to bring 

in winter scents from outside – bunches 

of freshly picked pine sprigs, along 

with bouquets of rosemary, are a great 

addition. I also like to introduce bundles 

of cinnamon sticks and bunches of 

eucalyptus. For a stylish touch, collect 

some fallen pinecones and arrange 

them in an old wooden crate or basket, 

and spray them with your favourite 

room freshener. For me, the ultimate 

winter fragrance comes from scented 

candles – I can’t get enough of them. 

My favourites are Baies by Diptyque, 

Moroccan Rose by True Grace and 

Honey & Amber by Plum & Ashby.

love nothing better than heading 

out into the English countryside 

for a long walk with my family. 

In autumn, I take colour inspiration 

from the beautiful changing hues of 

the leaves, with rich tones of amber, 

bronze and auburn. When stepping 

outside in the winter months though, 

rustic texture and tones surround us. 

It’s these types of textures that are key 

to the homely look and can transform 

a space. Introducing a natural woodclad 

wall into your home will instantly 

give it a cosy log-cabin feel, while 

piles of freshly chopped logs, ready 

to heat up the house, are practical 

and evoke a feeling of rustic charm. 

Rustic winter tones are earthy 

and often head towards the dark 

end of the spectrum. Rich blacks, 

deep greens and dark wood hues 

make a good backdrop for natural 

elements, collections of stoneware and 

handmade ceramics. Rustic homes are 

honest and not overstyled – materials 

such as slate, sheepskin and metals 

all work well in these spaces. 

Dark wood has been out of favour 

for the last few years, with many 

people, including me, painting 

wooden furniture white or opting 

for lighter woods. But now that dark 

wood is making a return, why not 

make the most of by teaming dark 

architectural furniture and ceramics 

with a dark painted wall to create 

a striking combination. A moodier 

colour palette can add depth, tone and 

drama to a rustic space. Experiment 

with handsome shades of dark inky 

blues, darker shades of grey and dirty 

olive greens. Panelled walls definitely 

benefit from a dark covering, as 

the details tend to stand out.

Meat expectations 

The most important thing on any Christmas table, if you are choosing to 

have meat, is to ensure you buy from a farmer or butcher who rears their 

animals to the highest possible welfare standards. For me, that means a 

bird or animal which is raised outdoors, on pasture and has the space to 

display all its natural behaviours. The cook’s job is to make sure every last 

piece of the bird is used, removing all the meat from the carcass for more 

meals, using the bones for stock and saving the fat. Check out Paley Farm 

and Pure Meat Company for meat and poultry. 

Use your time wisely 

It’s been said before, but a traditional Christmas lunch is not much 

different to a Sunday roast. As long as the gravy is hot and the roast 

potatoes are served straight from the oven, most of the other elements 

can sit for a while, especially the turkey, which should rest for at least 

an hour. Get ahead by parboiling potatoes the night before and make 

a madeira and thyme gravy from chicken wings and giblets and 

keep it ready in the freezer. 

Treat yourself 

Indulgence is the order of the day, but a little creativity will bring 

freshness to the table. Simmer frozen cranberries with a spoonful of 

brown sugar, sprig of rosemary and a slosh of port for a thick fruity 

sauce; slice thick rounds of carrots into a heavy bottomed casserole with 

a lid, juice and zest of a clementine, butter, thyme leaves and a star anise 

and heat slowly until glazed and soft; add a handful of roughly chopped 

flat leaf parsley just before serving to brussels sprouts fried in butter with 

bacon and chestnuts. Make sure the Champagne is chilled and you 

have double the number of pigs in blankets you thought you needed, 

and a happy Christmas will be had by all!

Festive Spirits 

Treat yourself to a seasonal tipple 

Beginner: Hurtberry Bubbles 

Hurt Liqueur have harnessed the unique qualities of Surrey hurt berries to create a flavourful 

liqueur that blends especially well with sparkling wines. Simply add some Hurt Liqueur to 

your favourite glass of bubbly for a festive treat – how much is up to you but we find adding 

around 10ml to a sparkling wine or Prosecco is the perfect blend. hurtliqueur.co.uk 

Ingredients: 

• sparkling wine or Prosecco 

• 10ml Hurt Liqueur 

Method: 

1. Pour 10ml of Hurt Liqueur into your flute. 

2. Top with your favourite sparkling wine or Prosecco. 

Intermediate: Winter Spiced Cotton French 75 

A seasonal twist on the wartime classic that’s usually made with gin, 

Champagne, lemon juice and sugar. 

Ingredients: 

• 50ml Otterbeck Distillery 

Gently Spiced Cotton Gin 

• Champagne 

For the spiced syrup: 

• 1 cup water 

• 1 cup sugar 

• 1 sprig rosemary 

• 1 cinnamon stick 

• juice and rind of 

2 oranges 

Method: 

1. Simmer all syrup ingredients for 15 minutes, until reduced by half. 

2. Strain 50ml of the syrup into a glass jar and chill in the fridge until ready to use. 

3. Combine the gin with chilled syrup in a cocktail glass. 

4. Top with chilled Champagne and garnish with a sprig of rosemary and orange peel. 

Expert: Christmas Pudding Cocktail 

The Queen’s Inn has shared this simple but delicious Christmas cocktail.

• 50ml Berneroy Calvados 

VSOP 

• 25ml Grand Marnier 

• 1 dash of cherry brandy 

• 100ml ginger beer 

• ice cubes 

For the cinnamon & 

vanilla syrup: 

• 100ml of water 

• 100g sugar 


• 1 split 

vanilla pod 

To garnish: 

• 1 star anise 


• 1 handful of fresh cranberries 

• 1 slice of dehydrated orange 

• 1 vanilla pod, dried 

• a sprinkle of icing sugar 

Method: 

1. Reduce ingredients for cinnamon and vanilla syrup. Simmer for 3 minutes and leave to infuse. 

2. Half fill a shaker with ice cubes. Pour in the Calvados, Grand Marnier and cinnamon and 

vanilla syrup. Seal with a Boston glass and shake well for 30 seconds. 

3. Fill a rocks glass with ice cubes and strain in the contents of your shaker. 

4. Top up with ginger beer and a dash of cherry brandy. 

5. Add all your garnishes to serve.

three wonderfully moreish and special recipes for 

a festive celebration with family and friends

Hot Smoked Salmon 

Prep time: 10 mins Cooking time: 

Around 20 mins Serves 8 

This dish is a real crowd pleaser and 

centrepiece showstopper. The delicate smoky 

flavour combines perfectly with freshness 

of the dill and lime. It is extremely versatile 

– have it on Christmas morning with 

scrambled eggs and muffins, whip up with 

some chives and cream cheese for a delicious 

topping for bagels or flake and use in salads. 

• 1 side of salmon 

• zest of 2 limes 

• 2tbsp honey 

• 2tbsp chopped dill 

• salt 

1. Soak the apple wood smoking 

chips for at least 15 minutes. 

2. Either portion the salmon or leave 

it as a whole side and place skin side 

down on a piece of greaseproof paper. 

3. Season with salt and the grated lime 

zest, honey, and freshly chopped dill. 

On the BBQ: 

1. Prepare the BBQ for indirect heat, 

around 180˚C. Place the fish (still 

on the greaseproof paper) onto the 

cooking grate over indirect heat. 

2. Place the soaked wood chips over 

the coals and replace the lid 

3. Cook for around 20 minutes, or until 

you reach a core temperature of 56˚C. 

You will need: a BBQ and apple wood 

smoking chips (you can buy online at 

weber.com/GB), a cooking thermometer 

Pan Seared Scallops, 

Cauliflower & Crispy 

Chicken Skin 

Prep time: 1hr 

Cooking time: 15 mins Serves 4 

For the cauliflower: 

• 1 cauliflower 

• 100ml white wine vinegar 

• 60g caster sugar 

• 400ml milk 

• salt 

1. Cut the cauliflower into florets. 

2. Slice 2 large florets thinly on a mandolin 

and place in a separate container. Add 100ml 

white wine vinegar over the sliced florets 

and 60g caster sugar. Carefully stir, ensuring 

not to break the florets, and set aside. 

3. For the roast cauliflower, set aside 

a few of the smaller florets for pan 

roasting with the scallops later. 

For the purée: 

1. Cut all the remaining florets, including 

the root of the cauliflower, and place into a 

large thick-bottomed saucepan, cover with 

the milk and some water if needed. Season

with salt and bring up to 

a gentle simmer. Simmer 

until the cauliflower is 

tender, a little over cooked. 

2. Once cooked, carefully 

take the cauliflower out of 

the cooking liquor with a 

slotted spoon and place into 

a jug blender. Blitz until 

silky smooth. Add some of 

the cooking liquid until you 

reach the consistency you 

want. Season and set aside. 

For the chicken skin: 

• chicken skins (it doesn’t 

matter which part of the 

chicken it’s from – you can 

ask your butcher for them) 

• rapeseed oil & seasoning 

Lay the skin on a flat tray 

lined with parchment paper 

and lightly drizzle with some 

rapeseed oil. Season with 

sea salt. Lay on top a second 

piece of parchment paper and 

another flat tray to sandwich 

the skin between. Bake in a 

pre-heated oven at 180˚C for 

around 20 minutes or until 

crispy. Set aside till needed. 

For the chicken and tarragon 

jus – makes about 100ml: 

• 1l fresh chicken stock 

• 250ml white wine 

• 1 tbsp olive oil 

• 250g chicken wings, 

knuckles or bones 

• 2 large shallots, finely sliced 

• 1 clove garlic, peeled 

• 1 small carrot, 

peeled and sliced 

• 1 stick of celery, sliced 

• the green ends of 1 

small leek, sliced 

• 1 bay leaf 

• 4 peppercorns 

• 1tbsp fresh chopped 

tarragon 

• 1tsp tomato puree 

1. Place a large saucepan 

on a medium to high heat, 

melt the butter in the pan, 

then add the vegetables and 

fry for about 8 minutes 

until soft and brown. 

2. Now add the chicken 

wings, garlic, bay 

leaf, peppercorns and 

tomato purée and fry for 

another 2 minutes. 

3. Add the white wine, turn 

the heat up high and bring 

to the boil.Simmer on a 

high heat until the wine is 

almost all gone. Then add the 

chicken stock, bring to the 

boil, simmer on a medium 

heat until the stock has 

reduced by half, this should 

take about 20 minutes. 

4. After the stock has 

reduced, strain the sauce into 

a clean pan removing the 

vegetables and wings. Skim 

off any fat from the top of the 

sauce.Place the sauce back 

on a high heat to boil, once 

boiling reduce the sauce until 

it thickens. This should take 

about 20 minutes again. 

5. Once the sauce has 

thickened, season to taste 

with salt and pepper and add 

the fresh chopped tarragon. 

Chef’s Tip:. 

This sauce works well 

with all types of poultry 

including chicken, turkey, 

guinea fowl or pheasant. 

Also try adding a drop of 

cream for extra richness or 

some button mushrooms 

for a different flavour. 

For the tarragon oil: 

• 12g tarragon leaves 

• 12g flat-leaf parsley leaves 

• 180ml extra virgin olive oil 

• fine grain sea salt 

1. Bring a medium saucepan 

of water to the boil. Salt well, 

as you would pasta water, 

and blanch the tarragon 

and parsley leaves briefly, 

until bright green – just 10 

seconds or so. Work quickly 

to drain, and transfer to a 

bowl of ice water. Drain once 

more, and pat with a clean 

cloth to remove as much 

residual water as possible. 

2. Use a food processor or 

blender to purée the leaves 

and olive oil until smooth 

– at least a minute or so. 

Strain through the finest 

sieve you have, alternately, 

you can use triple-lined 


cheese cloth. I use a tea strainer. 

3. Discard the solids and transfer 

the oil to a sterilised jar. It keeps 

refrigerated for a couple of weeks, but 

bring to room temperature to use. 

For the pan roasted scallops: 

• scallops (you’ll need 3 per person) 

• butter 

• lemon juice 

• 1 Granny Smith apple, fine julienned 

• fresh chervil (to serve) 

1. Preheat a pan over a high heat and 

add a tbsp of oil. Pat dry scallops 

with kitchen paper and season well. 

2. Add the scallops to the pan flat side 

down and cook until golden brown, 

this will take 2-3 minutes. Don’t move 

the scallops around in the pan as this 

will prevent them from cooking. 

3. Add a ‘chef’s knob’ of butter and baste 

with foamy butter, add a good squeeze 

of lemon and baste a couple more times. 

Drain on fresh kitchen paper and serve. 

I presented the dish by arranging a little 

cauliflower purée on a plate, topping 

with the scallops and a few florets of 

roasted cauliflower, before drizzling 

over a little of the jus and tarragon 

oil then adding fresh apple, crispy 

chicken skin and some fresh chervil.

Nougat 

Prep time: 40 mins 

Cooking & cooling time: 

around 6 hours 

Serves 10 (makes around 1kg) 

• 125g shelled 

unsalted pistachios 


unblanched almonds 


unblanched pistachios 

• 420g caster sugar 

• 100g liquid glucose 

• 50g egg whites 

• 110g runny honey 

• 100g icing sugar 

Chef’s tip: 

The recipe can’t be 

halved, but the nougat 

does keep for weeks 

if stored in an air 

tight container 

1. Roast the nuts on three 

baking sheets at 160˚C 

for 15 minutes or until 

golden brown. Take out the 

oven and leave to cool. 

2. Put 400g of the sugar in 

a thick-bottomed saucepan 

with the glucose and 125ml 

water. Set over a high heat, 

stirring occasionally to 

dissolve the sugar. Once the 

syrup is boiling, turn the 

heat down to a medium heat. 

3. While the syrup is coming 

to a boil add the egg whites 

to a free-standing electric 

mixer and warm the honey 

in a second saucepan. 

Also warm a baking sheet 

in the oven, lined with 

baking parchment and 

dust with icing sugar. 

4. Once the temperature 

of the syrup reaches 

130˚C, turn on the electric 

whisk and whisk the egg 

whites on a high speed 

until they start to aerate. 

Whisking constantly, add 

the remaining sugar and 

let the whites rise further. 

Add the warmed honey. 

By this time your syrup 

should have reached 145˚C. 

Carefully remove it from 

the heat and gradually 

add to the meringue 

while it’s still whisking. 

5. Continue to whisk at full 

speed for 12 minutes. Then 

turn the mixer down to a 

slow speed, add the nuts and 

mix until evenly combined. 

6. Turn the nougat out 

onto the prepared tray, 

spread out into a flat 

even slab and heavily dust 

with more icing sugar.

Much as we might love 

watching Ru Paul’s Drag 

Race, it’s really not the 

look that most of us are dreaming of, 

as the festive season approaches and 

we head out – whether tentatively or 

with gusto – to parties, once again. 

But there’s always that risk, with 

so much of the ‘seasonal’ makeup 

out there: palettes that dazzle 

like the Regent Street Christmas 

lights, high wattage highlighters 

and lip glosses so lacquered they 

would look more at home on a 

Ferrari’s bonnet than our faces. 

On the other hand, if you stick 

with your regular daily makeup, 

you can feel as drab as Cinderella 

before her fairy godmother waved 

her magic (mascara) wand. And 

cosmetics really can work wonders 

on confidence, as I was reminded 

again recently. I’d spent the day 

running around London before a 

VIP dinner at which I was due to 

speak, and felt very much less-thanglam. 

However, I’d scheduled to 

meet a makeup artist brand owner – 

Rupert Kingston, of Delilah – for tea 

beforehand, in Fortnum & Mason. 

He whisked me upstairs to his 

cosmetics counter, expertly turbocharged 

the makeup I had on (most 

of Delilah’s textures, even including 

their mascara, can be layered over 

what you’re already wearing), 

and I honestly felt transformed, 

empowered and 1000% ready for 

my moment in the spotlight. 

So there’s always that option: take 

yourself off to a beauty counter and 

place yourself in their hands for a 

makeover – often free, sometimes for 

a fee redeemable against purchase, 

but always instructive, and the 

very best way of all to discover 

new products, tricks and shades. 

Could be just the fillip you need 

to give you the gas in your tank 

to walk into that gathering... 

Meanwhile? Before sharing some 

favourite party-worthy finds, I’ll 

leave you with this: if you’re over 25, 

think ‘candlelight’, not ‘fairy lights’. 

Grab yourself a great primer. 

If you have the luxury of starting 

your makeup from scratch, primer 

can help create a smoother canvas 

and ensure products stay put for 

longer. For long days and long 

evenings, I swear by Elemis Pro- 

Collagen Insta-Smooth Primer, 

£58 for 50ml (and worth every 

penny), which delivers an amazing 

‘glow’ (even though, unlike many 

primers, this doesn’t have any 

light-reflecting ‘radiant’ particles, 

simply leaving skin dewy, not 

gleaming), somehow dials up the 

power of your makeup, just a tad, 

and definitely makes it last longer. 

Compact foundation is a boon, 

for parties. Slip the compact in 

your bag and gently touch up, 

if skin starts to look red and 

patchy (and alcohol 

can certainly 

do that to a 

face). Compact 

foundation can be applied over 

what you’re already wearing, but 

remember: pat, don’t swipe – if 

you do need to blur the edges, a 

finger’s better than the puff for 

that. Favourite formulas of mine 

include Elizabeth Arden Flawless 

Finish Sponge-on Cream makeup, 

£27, and Armani Powder Fabric 

Compact Foundation, £42.75, 

with L’Oréal Paris Infallible 24H 

Fresh Wear Powder Foundation, 

£12.99, a perfectly commendable 

and long-lasting option for those 

on a budget; all (hoorah) are now 

available in a wide shade offering. 

Choose cream blusher for a gentle 

flush. I always prefer cream blusher 

over powder; it may not last on the 

skin but again, is so easy to touch 

up with another smoosh (and at a 

pinch, I do also use a dab of lipstick 

for that task), and creates a more 

natural, seamless effect. Maybe 

intensify the depth of your blusher 

a bit, for evening, both in terms of 

shade and the level of application. 

I am a long-term fan of Stila 

Convertible Colour, £18, which 

can double up as a lipcolour, while 

a great find (via a friend) has been 

Rituel de Fille Inner Glow Crème

you can see it on your own face, online. 

Find the perfect palette, for eyes. A 

palette makes things soooo much easier: 

someone else has done the hard work of 

matching the shades for you, creating a 

complementary combo. If you do want 

to gleam, though, be careful where you 

place the shimmery shadows: the centre 

of the top lid and the brow-bone – 

perhaps with a tiny touch around the tear 

duct – is flattering for one and all, but 

adding shimmer anywhere else simply

I am super-keen on the Tom Ford 

Mink Mirage palette, £68, which is 

also super-pricy but has the perfect 

combo of satin, shimmer and matte 

shades, including a dark brown-y black 

that’s perfect for smudging yourself a 

smokey eye. Right at the other end of 

the price spectrum is By Beauty Bay 

Nude 16 Colour Palette, which will set 

you back all of a tenner, is beautifully 

blendable and offers some great browns 

and shimmers (16 shades in all). 

Chanel Les 4 Ombres Multi-Effect 

Quadra Eyeshadow Palette, £47, is as 

classic a ‘quad’ of shadows as you could 

ever wish for (and of course, you can 

always just stare lovingly at the double-C 

palette when not in use…) The bottom 

line is that there are MANY great palettes 

out there, at every price-point, but they 

should tick the following box: a dark 

shade for smokiness and sockets, a pale 

ivory/cream shade (probably shimmery) 

for brows and a dot above the centre 

of the eye, and a taupe-y neutral for 

blending it all together seamlessly. 

Just add liner. I can sign my name 

perfectly well, but can I create a good 

cat-flick? No way. So for me, pencils 

are the way to go. My new-found 

favourite is Make Up By Mario 

Master Pigment Pro Pencil, £19 

(at cultbeauty.com), which is quite 

astonishingly, almost indelibly longlasting 

(so much so that you’d better 

have a great makeup remover on hand, 

before bedtime). Delilah Cosmetics

is also completely brilliant, staying put 

for as long as you manage to party. 

Touch up your mascara. Important: 

not every mascara will allow you to 

do this without caking, clumping 

or making your eyelashes look like 

tarantulas. Again, a find from Delilah, 

here (discovered via that makeover session

to ‘revive’ lashes later in the day. 

Just add lipstick. Honestly don’t think 

you can beat a classic red, for evening. 

There really IS a red for everyone and

should be on everyone’s must-visit list 

before Christmas, but her cosmetics are

handbag at all times, meanwhile, is one 

shade or other of Chanel Rouge Coco

of this sheer, highly pigmented lipstick 

which ensures you’re just two swipes away 

from glamour at all times; my somewhat 

extravagant but oft-used ‘collection’ 

includes 91 Bohème, 70 Attitude and 98 

Instinct, all stunning shades of red. But 

a super-affordable lip choice, meanwhile, 

is Collection Lip Gello, , £2.99 – again, 

highly pigmented, to dab onto lips for 

an instant, comfy, tinted and slightly 

glossy (but definitely party-worthy) pout.

exercise stress busters 

With Christmas around 

the corner, I’m focusing 

on the benefits of 

stretching, to keep you in tip top 

form – both mentally and physically 

– during this busy season. 

Although Christmas is billed as 

a relaxed and fun time of year, we 

all know the resulting stress that 

comes from being the main person 

handling the load! Creaking joints, 

stiff back and a general feeling of 

exhaustion is known to increase anxiety 

and sleep deprivation can cause us 

to run on empty very quickly. 

When you add these factors together 

over a prolonged period of time, it 

can have a dramatic impact on the 

effectiveness of our immune system, 

leaving us wide open to all manner of 

bugs and viruses over the holiday break. 

Stretching, combined with good 

breathing technique is proven to have a 

multitude of benefits and doesn’t have 

to take up much of your precious time. 

In fact, by doing a short daily routine it 

can actually create more productive time 

in your day by giving you more physical 

energy and a calmer state of mind. 

In my younger years, stretching 

was something I neglected. Time 

constraints abound and, coupled with 

my naturally stiff-as-a-board body, 

there was no way I was going to get 

into the positions I had seen people 30 

years older than me doing effortlessly! 

Thankfully, I have now embraced 

stretching and enjoy the huge benefits 

that derive from doing a very short and 

simple routine at the start of my day. 

Stretching regularly increases your 

range of movement (so important for 

healthy backs and joints), improves 

blood flow to essential organs and has a 

positive effect on our posture. Treating 

yourself to a good stretch is also great 

for your mental health, relieving 

tension and reducing stress. Steady 

breathing whilst stretching releases 

endorphins – the happiness chemicals 

that can also help to reduce pain and 

allow you to relax and recharge. 

So if you’re running on empty, 

with your brain spinning at 100mph, 

give these simple exercises a try 

for a few minutes a day over the 

festive season and I guarantee it’s 

the best ingredient I can share with 

you for a very Merry Christmas. 

Child’s Pose 

This is great stretch for those times 

you feel anxious and overwhelmed. 

Sit on your heels (wide apart) and tuck 

your legs underneath you. Reach your 

arms in front of you, resting them right 

beside your ears. Relax the head down 

towards the floor and breathe steadily. 

Legs against wall 

Find a space where you can lie down 

on your back and raise your legs, 

resting your heels on the wall. Let 

your arms rest beside you or place 

them on your belly. Relax yourself 

into the foot and breathe steadily. 

If you don’t feel comfortable in this 

position, shuffle your bottom a little 

away from the wall until it feels good.

Isn’t it wonderful to feel the excitement of Christmas 

bubbling again this year, surrounded by family and 

friends, cooking and eating together and enjoying shared 

experiences? But as many of us have experienced, the planning, 

shopping, cooking and the day itself can sometimes be 

overwhelming. As we are engulfed by delicious food, bucks 

fizz and TV Christmas specials the lure of cosying up in your 

slipper socks, and tucking into a tin of Quality Street is strong, 

leaving our usual routines by the wayside. Well, with some 

careful planning we can still enjoy the festive period without 

food comas, feelings of guilt or the desire to set yourself 

unrealistic New Year resolutions to counteract it, come January! 

Give it a go. Prioritise yourself. 

Christmas is often associated with a time for 

giving but be careful not to give too much. With 

Christmas parties, school nativities, present buying 

and wrapping, food shopping and negotiating family 

traditions, many of us can leave December feeling 

burnout. We then set ourselves unrealistic New 

Year’s resolutions to exercise and eat healthily, which 

often end with feelings of failure when we give them 

up after just two weeks. Why not start prioritising 

yourself now? Amongst the chaos of December allow 

yourself pockets of time to do things you enjoy; a 

frosty morning walk, a wreath-making class, baking 

mince pies with your children or watching your 

favourite Christmas film. You can’t pour from an 

empty cup so prioritise things that feed you internally.

Learn to… enjoy in moderation 

Surrounded by delicious food and drink and often eating more 

than we normally would over the Christmas period, it is no 

wonder that many of us start January thinking something has to 

change. Christmas is a time for celebration and with all the will 

power in the world it is neither realistic nor enjoyable to expect 

yourself to pass on all the delicious treats on offer! Allowing 

yourself to enjoy things in moderation is key. Pile your plate 

with turkey and vegetables and limit the amount of energy 

dense foods like roast potatoes or pigs in blankets. Enjoy your 

Christmas pudding after your meal but try not to let the sweet 

treats continue into the sitting room where it’s easy to lose count 

over what has passed your lips. Enjoy a glass of bubbles when 

you see in the New Year or toasting with family, but be mindful 

of the impact alcohol has on your health (and sleep quality) as 

well as the additional calories in many alcoholic drinks.

Step away from… stress. 

Planning in advance is key to a less stressful 

December. Whether that is writing meal plans and 

shopping lists, a present checklist or coordinating 

family get-togethers, planning ahead is so beneficial. 

The stress we feel during the lead up to Christmas or 

the day itself can actually slow down our digestion 

and often cause bloating. This is because the anxiety 

and worry we feel at times of stress can disturb our 

digestive system, which in turn can disturb our 

gut microbiome. Eating regular, smaller meals can 

be one way to combat this problem. Rather than 

skipping your breakfast to compensate for the festive 

dinners, make sure you are nourishing your body 

throughout the day. Stress can also impact our sleep 

time and quality, so if you find yourself lying awake 

worrying about whether you’ve bought enough 

wrapping paper or how long to cook the turkey for, 

try writing down your to-do list or worries before 

you get into bed. Regular practice of this throughout 

December may help tackle stress and promote calm 

before sleep, as this way you ‘download’ the thoughts 

out of your brain and on to paper.

Jo Arnell takes a closer look at houseplants for Christmas – and 

beyond – with help from The Glasshouse Project 

It’s been a tradition to bring 

evergreen foliage into the home at 

this time of year for thousands of 

years. Decorating our interiors with 

evergreens increases wellbeing and 

symbolised everlasting life and hope 

for the spring’s return. It can get rather 

bleak once the festive season is over, 

the foliage has died and everything 

has been taken down. This is where 

houseplants can shine. Their great joy 

(providing you remember to look after 

them) is that they keep on giving all 

year round, bringing all the benefits 

of traditional evergreens, but staying 

alive for a long time after that. 

We’ve asked Kali Hammerton

that could help them gain employment on release. 

The Glasshouse has teamed up with local East Sutton 

Park prison to encourage the women to grow houseplants 

at the prison and to sell through their shop. Working with 

plants, being surrounded by greenery and learning through 

growing increases both physical and mental wellbeing, but 

in this case it also provides opportunities – and practical 

career solutions once the prisoners have completed their 

sentences and are ready to rejoin the workforce. Many 

prisons throughout the country have greenhouses that 

are falling into disrepair due to funding cuts and The 

Glasshouse aims to grow their programmes into more of 

them and expand the project to become nationwide. 

Wellbeing 

Surrounding ourselves with nature and plants is beneficial 

to our health, but the plants themselves are also good for 

us and some are working hard in unexpected ways to make 

our environments healthier too. If you fill your house 

with living plants you will never need an air purifier. Not 

only are they taking in carbon dioxide and pumping out 

oxygen into the room, many are brilliant at also absorbing 

polluting fumes and filtering the air. Even the humble Spider 

plant (Chlorophytum comosum) will remove formaldehyde

synthetic fabrics. Pilea ‘Greysy’ is 

another toxin remover with antibacterial 

properties. It trails prettily, 

so is a great choice for a shelf or high 

window sill. Peace lilies (Spathiphyllum) 

are really easy to grow and these 

powerful houseplants are a master of 

air pollutant removal – working hard 

to absorb ammonia, benzene, xylene, 

formaldehyde and trichloroethylene 

throughout your home. 

Gifts 

Houseplants and Christmas don’t 

always go together well. Light levels 

are low, but it’s cold by the window 

and with the heating on full blast, it 

can be hot and dry everywhere else. 

Not always the most wonderful time 

of the year if you are sensitive and 

need to photosynthesise. Happily The 

Glasshouse specialises in plants that will 

cope with these conditions well. “All 

of our plants like warmth,” says Kali. 

“To keep them optimal, they should 

be kept between 16-21˚C, so warm 

houses are actually ideal. Depending on 

vicinity to heat and light, all plants may 

require more water if the atmosphere 

is dry. We have several plants that are 

very easy to maintain including our 

Ficus microcarpa ‘Ginseng’ (available in 

3 sizes) and any of our Sansevieria. All 

of these will do well in a very dry 

warm home, as long as they get a 

good soaking very occasionally.” 

They have some gorgeous plants 

in stock that will make fabulous 

gifts. “Large plants are a great special 

Christmas present and make an 

impact, bringing nature inside,” says 

Kali. “We are introducing a new 

plant called a Phlebodium davana or 

Blue Feather Fern, which we love as a 

present.” This beautiful fern has leaves 

that are a lovely glaucous blue that 

looks perfect in interior settings. “For 

corporate clients and in our Cranbrook 

shop, we will also have our white 

hellebores potted in our handmade grey 

Italian clay pots.” Helleborus niger is 

also known as the Christmas rose, but 

will probably appreciate being planted 

outside once the festivities are over. 

Some plants also have hidden 

benefits that could be very useful 

during the festive season. Kali suggests 

an aloe vera. Aloes contain skin 

soothing compounds and a natural 

pain reliever – you can simply cut off 

a little section to use directly on the 

skin as a cooling salve. “A great party 

present,” says Kali, “to help with those 

Christmas dinner cooking burns!” 

Winter Care 

Winter is hard on all of us and 

houseplants suffer in their own way – 

showing their displeasure by dropping 

leaves, browning and shrivelling – and 

sometimes giving up completely. Those 

that may have enjoyed being in an 

airy situation in the summer are now 

suffering in cold drafts, others may 

not be coping well with stifling central 

heating. It’s not necessarily the warmth, 

but the lack of moisture in the air. 

Plants that are originally from jungles 

or humid tropical environments usually 

have big floppy leaves – a large surface 

area for photosynthesis in dimly lit

forests and jungles and for getting rid of excess water. They 

will thrive in humid situations like bathrooms and kitchens, 

but will also appreciate regular misting with water. Placing 

them on trays of gravel will help to keep the air immediately 

around them moist as will grouping several plants together. 

At the other end of the scale succulents and cacti prefer 

life on the dry side, so need to be positioned on the sunniest 

of windowsills, especially in winter. Their stems and leaves 

have evolved into water storage organs – and in the case of 

cacti the leaves have thinned and sharpened into protective 

spines. The time to water them is in the spring, when 

you can give them a quick soak, to mimic the brief flash 

floods that happen in the desert at certain times of the 

year. If you get the watering regime right they may show 

their gratitude and burst into flower. Once you know the 

situation that your plant would enjoy in the wild you start 

to understand how to keep them in tip top condition. 

If you want to bring in some evergreens, improve your 

wellbeing and brighten up the place for Christmas, then 

living indoor plants, rather than the cut stems of outdoor 

plants, could offer a modern and festive alternative. They 

make great presents too, but remember – houseplants are for 

life, not just for Christmas…

horizon represents our pupils’ futures. 

Sea air benefits mental health and 

pupils can enjoy water sports – from 

sailing to paddle boarding. There 

aren’t many schools where you can 

sea-swim, run in a national park and 

be back in time for hot chocolate! 

What are the main challenges 

you see facing young people 

today? The economy, the future of 

exams, identity, climate debates – all 

these volatile factors create uncertainty. 

But I’m optimistic that the young are 

more nimble and can thrive despite 

the challenges. We oldies must not 

project our own anxieties onto them. 

How do you spend time outside 

school? Outside school, my family 

and boxer dog Roy provide plenty 

of stimulus to keep me occupied. I 

dabbled with keeping tropical fish, 

but sadly they have a frustrating habit 

of expiring for no apparent reason. 

What was your favourite subject 

at school? I loved history at school. 

Modern history, alongside politics and 

economics, was something I could 

continue with at university and into my 

teaching. I remember being fascinated 

by the character of Disraeli, and I 

can still name the plenipotentiaries 

of the Congress of Vienna. 

Tell us about how Eastbourne 

College integrates with your 

local community. We founded 

the Coastal Schools Partnership 

which now includes twelve local 

maintained schools – this is a leading 

example of how we’re making a 

positive impact in the community. 

We’re delighted to share in all we 

do in an ongoing arrangement 

that makes a real difference. 

What are you most looking 

forward to about 2022? 

I’m really excited about 2022. The 

College’s reputation has been growing 

over the past five years and with the 

Covid fog lifting, we look forward 

to even greater successes for all 

our pupils, thanks to our uniquely 

balanced philosophy of education that 

has captured everyone’s attention. 

What have you seen change in 

education during your career? 

While there has been change, perhaps 

too much has stayed the same. We 

need to rethink GCSEs, term dates 

that are still based on bringing in the 

harvest, and muddy thinking about 

IT. But house-based pastoral care 

remains a priority and will always have 

pride of place at Eastbourne College.

Banstead Prep School judged EXCELLENT in all areas by ISI 

This first full inspection for Banstead Prep is an important moment in the school’s 

history. Headteacher Jon Chesworth commented: “This fantastic result recognises 

the hard work and achievements of everyone involved with Banstead Prep and 

celebrates the inclusive, happy and supportive community we experience every day.” 

The report noted that children ‘achieve considerable success in entrance 

examinations to schools with high standards of entry’ and ‘benefit from highly 

supportive teaching, excellent resources and a carefully planned curriculum.’ 

Inspectors found the children’s ‘contributions to the wellbeing of others within 

the school are obvious, positive and highly effective’ and that ‘throughout the 

school, pupils of all backgrounds and cultures enjoy very constructive and 

inclusive relationships in a very diverse and well-integrated community.’

The Pre-prep Gardening Club at Marlborough 

House School have been growing vegetables for 

their school kitchen. The pumpkin patch was a 

particular success for the school’s green-fingered 

pupils. In the autumn they proudly delivered 

their glut to the school catering team who 

created pumpkin soup, pumpkin and cauliflower 

salad, and pumpkin cake – which made for 

a very popular option at morning break. 

Next term the Pre-prep Gardening Club, 

who are working towards their Level 4 

RHS School Gardening Award, are hoping 

to grow spring salads and aim to produce 

something for the school kitchen each term. 

The Pre-prep Garden itself is a magical 

mixture of wildlife and tranquillity; a 

peaceful space in which the school’s 

younger pupils can enjoy nature and 

experience growing their own food. 

As a school, Marlborough House 

launched ‘The Great Outdoors’ earlier this 

year to link outdoor learning, wellbeing 

and all things eco. Pupils across the 

school, from 2.5 to 13 years, can also 

now enjoy many more outdoor learning 

opportunities following the installation 

of the school’s outdoor classroom.

“We were honoured to be one of the winners in the recent Kent Mental 

Health & Wellbeing Awards, run by the charity ‘Mind’. We were amongst 

prestigious company with organisations which offer a vast array of mental 

health support activities across the county, which we could only applaud. 

Independent schools are inspected by ISI, ratified by Ofsted, and are 

measured on two headline inspection criteria: personal development and 

achievement. With some reluctance I draw your minds back to the first 

lockdown. At the outset we felt that the boys’ (a boys’ school!) personal 

development, in enforced isolation, was as important as their academic 

development. They have to go hand in hand: if we are not developing as 

people we are certainly not going to achieve. The ‘live’ contact with class 

teachers began each day with subsequent live lessons daily. The human 

interaction with friends and teachers was powerful in a remote world. 

The boys at The New Beacon are incredibly fortunate – and we tell them 

often. We encourage them to think of their place in the local, national 

and global community. During the lockdowns, while they may not have 

been physically involved themselves, they saw the school reaching out. 

Our minibuses, often with Gary or James at the wheel, were seen in the 

Sevenoaks and Hildenborough area delivering prescriptions. Staff helped 

to source and resource infrastructure for the testing centres at Sevenoaks 

and Tonbridge Schools. ‘Laptop Library’ based itself in our DT block, 

refurbishing nearly 100 donated laptops which were distributed to local 

families and primary schools. 

In receiving this prestigious award we are conscious of the excellent work 

done in our communities, by numerous charities – including Mind – 

providing experienced, trained, wise, advice and counsel. So often we 

hear of the world’s troubles and fail to celebrate the good which is quietly 

done to support those in need or trouble. The NHS has rightly been 

praised for its work over the pandemic. We can add to that all those who 

do invaluable work supporting mental health and wellbeing.”

Hairdresser-turned-shepherdess, Zoë Colville 

farms nearly 100 acres of land near Maidstone 

with her partner, Chris Woodhead. With 

prime focus on their animals’ wellbeing, 

together they rear cows, sheep, goats and pigs, 

eventually selling their meat through The Little 

Farm Fridge. This month, Zoe makes sure 

everyone’s included in the festive celebrations 

What does Christmas mean to you? Gingerbread 

scented candles, panicking over how we to fit 

everyone round the dinner table, setting the tea 

towel on fire while cooking the turkey and eating chocolate 

for breakfast? But the biggest for me is a month of saying 

“sod it it’s Christmas” – whether that be about eating a third 

French fancy on the trot or buying the goats sprout trees 

every day because it’s comical to watch them eat them. 

As with many professions, just because it’s Christmas, it 

doesn’t necessarily mean it’s a break. Instead of grieving days 

gone by when you finish up on the 23rd and stay in your 

pyjamas until the New Year, not knowing what day or time 

it is, we started new traditions. The lead up to the big day 

is spent changing electric fence batteries to make sure lambs 

don’t end up on the road and making sure everyone’s got full 

bellies. Not forgetting lots of late shifts wrapping chipolatas in 

bacon ready for the millions of Little Farm Fridge orders for 

pigs in blankets. I came close to ‘death by pigs in blankets’ last 

year as I completed a six hour stint, resulting in an upsetting 

dislike for Mariah Carey and meaning my plate on the 25th 

was very much lacking on the little-sausages-wrapped-inbacon 

front! We are hoping this year, since we’ve been running 

plenty of sausage making workshops on Zoom, that a few 

people will be making their own and lightening my load. 

Another thing we do on Christmas Day is we (I) make 

anyone on the farm a selection of treats, sprouts, carrots, 

parsnips etc. I prepare this on Christmas Eve whilst 

listening to Chris Rea rather loudly. Why? Not too sure, 

but it brings me joy seeing them tuck in, so why not. 

Sipping away on a hot chocolate with a shot of Baileys 

or Kahlua keeps us warm while doing the rounds and, 

before we know it, it’s time to make the human lunch, 

featuring meat we’ve reared that year, a true reward. 

The snacks don’t end there! For a few weeks after the big 

day we collect old (natural) Christmas trees from friends, 

family and neighbours for the goats to eat. They are like 

locusts and the trees’ needles have beneficial qualities for 

their health so it’s win-win. We hope you all have a month 

of beautiful festivities and remember the motto “sod it it’s 

Christmas,” see you a few pounds heavier in the New Year! 

The Little Farm Fridge Recipe of the month 

How to cook it... Zoe’s sausage plait 

• 500g Little Farm 

Fridge sausagemeat 

• puff pastry 

• 3 red onions 

• 2 tbsp brown 

sugar 

• 2 tbsp balsamic 

vinegar 

• 1 egg, for 

brushing 

1. Slice and fry your onions in a little oil for around 20/30 

mins until they are very soft. Add the sugar and vinegar 

and continue on a medium heat (don’t let them stick) 

until caramelised and the sugar has dissolved. Sometimes 

I’ll add a sprinkle of cinnamon or nutmeg at this stage. 

2. Lay your pastry out and place your sausagemeat down 

the centre. With a knife cut diagonally down either side 

so you have slices of pastry to wrap over to make the 

plait effect (may need to Google for a diagram!) 

3. Spoon your caramelised onions onto the top of your 

sausagemeat roll and plait your pastry on top, bringing 

one strip from each side over, taking it in turns. 

4. Brush the top with a beaten egg and pop in the oven 

180˚C for 40-45 minutes. I like to eat it with baked beans.
