GET CREATIVE THIS FESTIVE<br />

SEASON AND AVOID A FINANCIAL<br />

‘HANGOVER’ IN JANUARY.<br />

This festive season may be less about what you want and more<br />

about what you have to be grateful for. Yet the economic realities<br />

of COVID-19 don’t have to mean cutting out festive spending<br />

altogether. You can get creative about saving money. Here are some<br />

suggestions on how you can create a memorable festive season for<br />

you and your family.<br />

A critical step in the process is to do some basic financial planning<br />

before the festive season to ensure you set aside sufficient funds for<br />

<strong>Jan</strong>uary’s expenses.<br />

1. Be creative with your festive season meals for the family<br />

Remember, the festive season means shops will have festive season<br />

prices, too. But just because something is on special doesn’t mean<br />

you have to buy it! Draw up a list before you go shopping, don’t shop<br />

for food when you’re hungry, and stick to the list in your hand. Also,<br />

make sure no food goes to waste – be creative with leftovers.<br />

2. Don’t break the bank on the perfect gift<br />

Let’s say your aunt enjoyed your mom’s banana bread last year, so<br />

write down the recipe for her on special paper, decorate it and gift it<br />

to her. If you have attractive glass jars, fill them with jam or peaches<br />

and give a family member something home-made as a gift. It’s all<br />

about creativity and thoughtfulness.<br />

3. Entertaining is expensive, so co-host<br />

Entertaining friends and family is an expensive affair. Co-hosting<br />

festive parties, lunches or braais with others might be the way to go.<br />

Organise a bring-and-share at this year’s family gatherings by suggesting<br />

everyone contributes a dish.<br />

4. Reconsider this year’s festive trip with the family<br />

Apart from the imperative to stay safe, a COVID-19 festive season<br />

presents you with an ideal opportunity to make the most of your<br />

area. You really don’t have to spend money to travel in order to have<br />

a good time. Find the nearest park or beach to go and relax. Remember<br />

to comply with the current COVID-19 regulations by practicing<br />

social distancing and wearing a mask when outside near others. Alternatively,<br />

hit a hiking trail in your area – a good way to save money<br />

and work off the festive pudding while you’re at it.<br />

5. Use cash for unavoidable essential items<br />

For those essential items, pack your credit card away. Buy with cash,<br />

and even then only take the cash that’s in your budget with you. In<br />

this way you can avoid the budget hangover in <strong>Jan</strong>uary.<br />

It has been a tough and long year in which many people have suffered<br />

job losses and salary cuts. You deserve to relax and spend time with<br />

your loved ones, but remember that it will only be a good memory if<br />

you go about it in a responsible way. So continue to budget carefully<br />

and count your blessings rather than your gifts.<br />

passion of hers –<br />

Nishana Wilson<br />

Nishana embodies the maxim that the strongest steel is forged in the hottest fire.<br />

She knew loss early in life when her single mother, who raised her, succumbed<br />

to cancer. “My mother emphasized the importance of education and respecting<br />

others” – values that have since inspired her to excel. “Emulating my big brother’s<br />

example, I’ve always pushed myself to be academically excellent. My results<br />

earned me scholarships and bursary opportunities – from high school until<br />

postgraduate level.”<br />

Nishana’s grandmother is the other strong woman in her life. “She made me into<br />

who I am today. She taught me the power of prayer and persistence even in the<br />

hardest of times. She also taught me to be kind to others and to always be the<br />

bigger person.” Another woman who played a crucial role in Nishana’s life is her<br />

former Science teacher and “self-adopted mother”, Michelle van den Nieuwenhof,<br />

who ignited her passion for Science and teaching. “Michelle’s heart for her<br />

community and how she puts everyone’s needs before her own inspires me to do<br />

the same.”<br />

Her love for Science prompted Nishana to study to earn a BSc in Biochemistry<br />

and Genetics, and a Post Graduate Certificate in Education. She explains, “While<br />

I was tutoring high schoolers during my BSc degree, I realised that I don’t only<br />

enjoy Science, but also interacting with young people. I had to find a way to<br />

intertwine these two passions, and teaching made the most sense. Most kids ‘hate’<br />

Science because they view it as difficult. I really wanted to play a role in changing<br />

this perspective by showing them that it’s actually not that hard.” Today Nishana<br />

teaches Science at Tsosoletso High School. When she speaks about “the kids” she<br />

beams. “Waking up every day knowing there’s at least one youngster whose life<br />

I’m going to touch, through a smile, an encouraging word, a joke, or sometimes<br />

even a little reprimanding keeps the passion for my profession burning.”<br />

Nishana firmly believes that “teaching is a work of the heart. The profession in itself<br />

is a form of community service as you give so much of yourself and your time to<br />

the kids, even outside of the classroom.” Many of her learners come from difficult<br />

backgrounds where poverty is rife.<br />

“Some of these young girls often cannot afford sanitary products and toiletries.<br />

I’m involved in sanitary product drives for our school to ensure that girls do not<br />

miss school because they can’t afford sanitary towels.” Nishana’s grandmother was<br />

the one who taught her, “You can’t receive blessings if your hands are closed”. She<br />

grew up seeing her grandmother feed the poor and elderly in the community of<br />

Brentpark in Kroonstad. “On Christmas Day, she would make chicken curry and<br />

rice for the less fortunate and elderly people who lived in our street. In winter, she<br />

would make them soup on Saturdays. She may not ever have told me that it’s<br />

important to help others, but she has always shown me.”<br />

Apart from Nishana’s firm belief in helping where you are, with what you have, she<br />

is also a natural hair enthusiast. In her disarming way, Nishana declares, “My Afro<br />

belongs on the cover of a magazine, on a runaway, and even in the boardroom”.<br />

For her, “It’s liberating to love yourself exactly as God intended you to be and not<br />

try to fit into someone else’s standards of beauty”. This has also led her to be a<br />

brand ambassador for a local natural hair care brand, Glolooks, as well as Crown<br />

Me Naturally SA, a platform that educates people about natural hair care and<br />

encourages people to accept beauty in all its diverse forms.<br />

And, plans for the future? Her smile broadens, “I hope to be an academic in<br />

the not too distant future… Professor N.C.R. Wilson, heading a STEM Education<br />

Department or doing some<br />

revamping of the South African<br />

curriculum to be more inclusive of<br />

these disciplines”. She says women<br />

are still underrepresented in the<br />

science, technology, engineering and<br />

mathematics disciplines. “I’m currently<br />

pursuing an Honours degree in STEM<br />

Education, with specialisation in<br />

Science Education. Women should<br />

stop limiting themselves and insert<br />

themselves in spaces where they<br />

weren’t allowed before.”<br />

Before she goes, I must ask how she<br />

felt on hearing that she was Get It’s<br />

Cover Search Winner. “I’m honestly a<br />

liker of things, so I’ve always wanted<br />

to be on the cover of a magazine.<br />

The Cover Search was one with a<br />

beautiful twist! It was focused more on<br />

finding a woman who influences her<br />

community positively, rather than just<br />

a pretty face. This was a special cause<br />

and I decided to give it a go.” She adds,<br />

“There are so many women whose<br />

good works go unrecognised, and<br />

although I know that’s not the motive<br />

behind charity work, it‘s necessary<br />

to celebrate the unsung heroes of<br />

our communities”. Nishana admits to<br />

still pinching herself about the win<br />

“considering the calibre of the other<br />

women who were finalists. To say I<br />

felt inspired when I met all the other<br />

finalists would be putting it lightly.”<br />

- Nishana enjoys experimenting<br />

in the kitchen, especially baking.<br />

She is always handing out<br />

food and drinks, and she’s the<br />

chatterbox telling stories and<br />

cracking jokes.<br />

- Nishana suffers from an eye<br />

condition called Keratoconus<br />

(Google it, please), which led to<br />

her having a corneal transplant.<br />

- She’s actually a tomboy – don’t<br />

- Nishana would like to be<br />

remembered as the girl who<br />

always believed that her dreams<br />

were valid.<br />

FROM BLOEM TO<br />

BABYLONSTOREN<br />

I grew up in a small town, Viljoenskroon,<br />

in the Free State, then moved to<br />

<strong>Bloem</strong>fontein and attended Eunice<br />

Girls High School.<br />

After school, I went to Stellenbosch<br />

University to study BSc Viticulture and<br />

Oenology, which roughly translated<br />

means studying wine. I wasn’t sure<br />

what I wanted to study but I knew I<br />

like a challenge. I’m very privileged<br />

that I found something I love and that<br />

I’m stimulated every day with new<br />

knowledge and new tasks to master.<br />

I’ve always known that wine brings<br />

friends and family together with a<br />

good meal and to appreciate the<br />

wonderful memories that it brings. I<br />

only realised while I was studying and<br />

especially when I started harvesting<br />

what it really entails. It’s a combination<br />

of science, being creative, being in<br />

touch with nature, and working with<br />

people.<br />

I consider myself a lucky girl to have<br />

ended up working on one of the<br />

Cape’s most beautiful wine farms,<br />

Babylonstoren.<br />

Despite much being said about women<br />

winemakers working in a man’s world,<br />

South Africa has been very welcoming<br />

to female winemakers. For some, it’s<br />

still surprising that female winemakers<br />

could and are doing the work that only<br />

men used to take an interest in. These<br />

days, female winemakers are setting<br />

the bar high. They’re elevating women<br />

in wine globally.<br />

I don’t necessarily think women make<br />

wine differently, or make different<br />

wine from men. I think it depends more<br />

on the person, the type of wine, and<br />

the winemaker you are. The female<br />

winemakers I have worked with often<br />

focused on detail. This has proven time<br />

and again to make a difference in the<br />

quality of the wine.<br />

I have had the privilege to work with<br />

inspirational winemakers – male and<br />

female. Each and every encounter has<br />

taught me skills and motivated me to<br />

be where I am today.<br />

My winemaking style is based on<br />

keeping it simple, as true to the earth<br />

as possible, and to make the best wine I<br />

can. It takes years and many late nights<br />

to perfect it.<br />

My first harvest in 2018 proved to me<br />

that I really love what I’m doing.<br />

I prefer working with red grapes, but<br />

in <strong>Bloem</strong>fontein, makes rose farming look<br />

glamorous. Read how this astute businesswoman<br />

is determined to make the city reclaim its title as<br />

The City of Roses…<br />

ell us about De Plante.<br />

We are a family farm situated in Roodewal, which<br />

produces high quality luxury roses. In 2020, we<br />

ventured into growing cut roses commercially. We<br />

also create partnerships and networks everywhere we<br />

operate. These include Welfare Committees on our<br />

farm, and partnerships with local institutions, including<br />

schools, youth groups and local government, to build a<br />

stronger company, community and country.<br />

Will your rose project contribute to tourism in the city?<br />

Yes, more than anything we wish to contribute to the vibrant, dynamic and<br />

energetic character of tourism and help the city to live up to its name as The City<br />

of Roses. But, just having a commercial farm that supplies quality roses to the local<br />

market already adds value to the city.<br />

What planted the seed in your mind to start a rose farm?<br />

In March 2018, I attended a seven-day training course at the SA School of<br />

Weddings in Flower Arranging and Function <strong>Dec</strong>o. On the fourth day, we learnt<br />

about sourcing flowers and we took a trip to flower markets. I remember seeing all<br />

the shops with different kinds of flowers, and the trollies and trollies of flowers, and<br />

thinking I would love to know where all the flowers came from. When I returned<br />

home, I found out that roses are not grown commercially in our city, and most, if<br />

not all our florists, retailers and wholesalers source their roses from Johannesburg<br />

and Cape Town. Then, I started pondering the idea of growing roses. I pitched the<br />

idea to my husband and we saw an opportunity. We researched different ways<br />

of growing roses, taking in consideration our weather, and we came upon the<br />

technology we are using in our greenhouse now.<br />

What makes De Plante Roses unique in <strong>Bloem</strong>fontein?<br />

We offer a collection of premium Hybrid Tea and Garden Shaped/Classic Roses,<br />

which have been carefully selected from an international rose breeding company<br />

in the Netherlands. We grow our roses using hydroponics and a fully automated<br />

irrigation system to ensure the best quality possible. We also have an automated<br />

climate system, which enables us to create our own climate in the greenhouse so<br />

that we have a consistent supply of roses, even in winter.<br />

How many roses do you cultivate each month?<br />

We stated harvesting our roses in late July this year. On average we cut about<br />

23 000 stems of roses a month. In five years, we hope to have doubled our<br />

production capacity.<br />

What challenges did you face in starting De Plante?<br />

The obvious challenge with every emerging business is capital. We needed capital<br />

of R13 million to start this project. We knocked on many doors, without success.<br />

But because we were determined,<br />

we managed to get financing, and<br />

put our house up as collateral for the<br />

banks. I’m mentioning this because we<br />

were blessed to have a property that<br />

we could put up as security in order<br />

to get capital. This makes one ask how<br />

many great business ideas of young<br />

people go unrealised because they<br />

can’t raise capital, nor have the assets<br />

to help secure financing.<br />

What did you do before you ventured<br />

into floriculture?<br />

I was in ministry full time – one of<br />

my responsibilities was coordinating<br />

programmes and events for the<br />

ministry, and that’s where my love of<br />

event planning came from.<br />

Who taught you what you needed to<br />

know about producing roses?<br />

Honestly, I’m still learning. I have a<br />

production manager from Kenya with<br />

vast experience in growing roses.<br />

Where are De Plante roses sold?<br />

People can buy roses directly from<br />

our farm. Alternatively, find us<br />

every Saturday at the Boeremark in<br />

Langenhoven Park. We also supply Pick<br />

n Pay in Preller Walk.<br />

Lastly, how has the <strong>Bloem</strong>fontein<br />

community received your roses?<br />

I’m humbled and overwhelmed by<br />

the support of our local florists, events<br />

industry, and the community. The<br />

appreciation of our roses makes all the<br />

sacrifices and challenges worth it!<br />

Readers’ Choice Awards have always been about<br />

celebrating local businesses in general, but the<br />

last few years the campaign has seen a strong<br />

and forceful emergence from woman-led<br />

businesses in the City of Roses.<br />

Among the cream of this year’s category winners<br />

an impressive amount of businesses have either<br />

been founded or are owned by women! This<br />

speaks volumes about the importance of women<br />

empowerment in a modern South Africa.<br />

In the nine years of the campaign’s existence, winning<br />

an award in the competition has really become the<br />

acknowledgement business people are striving for.<br />

And it has become evident that more and more<br />

female-owned businesses are dominating when it<br />

comes to rendering the kind of service that turns<br />

customers and clients into regulars.<br />

This year awards were once again sponsored by FNB,<br />

and the campaign was one for the books as close<br />

to 30 female-owned businesses were announced<br />

winners across the eight sections of the campaign.<br />

This is in harmony with FNB’s strategy of assisting<br />

women in business as it remain committed to<br />

growing women-owned and -led businesses in<br />

South Africa. Part of this entails entering into strategic<br />

partnerships to help female entrepreneurs from all<br />

backgrounds and cultures to start, run and grow<br />

sustainable businesses.<br />

Stephen Gooch, FNB Free State Regional Head, said<br />

the idea behind the awards is to recognise and<br />

celebrate those local businesses that really embrace<br />

innovation in their business. “Well done on excelling<br />

in your respective fields and industries and being<br />

recognised by your customers as The Best. We applaud<br />

and we celebrate you,” he said.<br />

Reduce sun damage while enjoying the summer vibes<br />

With the weather warming up and the holidays on the way, the thought of relaxing while<br />

soaking up the sun after a year behind closed doors is something many are looking<br />

forward to. “Spending time soaking in the sun is a reward we deserve after what has come<br />

our way, but since we have been indoors a lot more than usual this year, we have to be<br />

wary about getting too much sun exposure too soon. Also, when it comes to the sun and<br />

the damage it can cause our skin, too much unprotected sun exposure should be avoided<br />

daily,” explains Alexa Wilding, Everysun senior brand manager.<br />

Over-exposure to the sun can result in the skin showing symptoms of sun damage, and if<br />

not taken care of immediately can cause lasting effects. It doesn’t matter whether your skin<br />

is dry or oily, or if you have fair or dark skin, sun damage is a concern for everyone, and<br />

can show up in the following ways:<br />

•Dry skin can occur when your skin has been over-exposed to the sun. It can<br />

appear dry, flaky, and slightly more wrinkled than areas without sun damage. Dry<br />

skin can also cause itching.<br />

•When spending too much time in the sun, especially without applying sunscreen<br />

sunburn can occur. Mild sunburn causes pain and redness, while more severe cases<br />

of sunburn can produce painful blisters, and even nausea and dizziness.<br />

•Small bumps that feel like sandpaper or a patch of scaly (peeling) skin with a pink,<br />

yellow or brown tint is known as actinic keratosis can occur due to sun damage.<br />

•Long term changes in the skin’s collagen can also be a symptom of sun damage,<br />

and can result in fine lines, deeper wrinkles, a thickened skin texture and easy<br />

bruising. This happens mostly on the back of the hands and forearms.<br />

“Continuous sun damage over time can cause skin cancer, while everyday exposure<br />

can damage the skin through the lack of sun protection especially when out during the<br />

hottest times of the day,” comments Wilding. “However, it is not all doom and gloom<br />

and a few small changes to way in which we interact with the sun can make a<br />

difference to our skin.”<br />

1.The most important point when it comes to sun protection is to wear a high SPF<br />

sunscreen. Making the application of sunscreen part of your morning routine to your<br />

body and face, while topping up during the day, gives you the protection you need<br />

from the sun and therefore from sun damage. Also be sure to choose a sunscreen<br />

that protects against both UVA and UVB radiation. Everysun’s range of SPF50<br />

on a hot summer’s day might not be the look you are going for this summer, it can<br />

block out more of the sun.<br />

4.Surfaces such as sand and water can reflect the sun’s rays causing sunburn and<br />

extra precaution should be taken when around these elements.<br />

5.Babies younger than six months old should be kept out of the sun completely and<br />

should be kept in the shade and covered up.<br />

Keeping your skin safe and protected from the sun is simple, and although there<br />

were many doubts during the year, summer is definitely on!

Ingredients<br />

500ml water<br />

2ea good-quality mixed berry tea<br />

bags OR 2x Hibiscus tea bags<br />

150g strawberries, hulled,<br />

cut into ¼ pieces<br />

Juice of 1 lemon<br />

Juice of 1 orange<br />

50g castor sugar<br />

Directions<br />

Place the tea bags into a glass jug or teapot. Bring the water to the boil and<br />

pour over the tea bags. Leave to infuse for 3 minutes. Allow to cool.<br />

Place the strawberries, lemon juice, orange juice and castor sugar in a saucepan<br />

and bring to the boil. Simmer until the sugar crystals have dissolved, then set<br />

aside to cool. Make a strawberry purée by using a stick blender.<br />

Once the liquids are cool, mix them together.<br />

Leave in the refrigerator overnight, pour through a sieve.<br />

Serve with ice cubes and fresh mixed berries.<br />

Butternut Flapjacks<br />

Packing in all the good and none of the junk is easier than ever with Checkers.<br />

Ingredients<br />

1 banana; peeled and mashed<br />

1 cup (250 ml) steamed and mashed<br />

butternut (can also use pumpkin)<br />

½ cup (125 ml) flour<br />

½ tsp. (2.5 ml) cinnamon<br />

1 tsp. (5 ml) baking powder<br />

2 eggs<br />

1 tbsp. (15 ml) milk<br />

Coconut oil, for frying<br />

For decorating:<br />

• Few slices mozzarella cheese<br />

• Strawberries<br />

Directions<br />

Place banana, butternut and eggs into a bowl and mix together well.<br />

Sift the flour, cinnamon and baking powder together and fold into the mashed<br />

butternut mix. If it’s still too thick, add the milk to loosen a little, but batter needs<br />

to be of dropping consistency.<br />

Heat a little coconut oil in a frying pan and drop spoonfuls of batter into the pan<br />

and fry gently for about 1-2 minutes on each side or until golden brown and<br />

cooked through.<br />

Remove from pan and cool completely.<br />

Mince Nachos<br />

Spicy is the only way to go for this Vegan Mince Nacho treat.<br />

Go ahead and enjoy to make the most out of your Simple Truth Plant-based Mince.<br />

Ingredients<br />

For the Plant-based mince filling:<br />

Olive oil, for frying<br />

1 onion, peeled and finely chopped<br />

3 garlic cloves, finely chopped<br />

1 tbsp. (15 ml) chilli, finely chopped<br />

1 tbsp. (15 ml) ground cumin<br />

1 tbsp. (15 ml) smoked paprika<br />

1 tbsp. (15 ml) oregano<br />

400 g Simple Truth Plant-based Mince<br />

2 tsp. (10 ml) tomato paste<br />

Salt and pepper<br />

For the fresh tomato salsa:<br />

1 tomato, diced<br />

1 small cucumber, diced<br />

1 corn on the cob, boiled and<br />

kernels removed from cob<br />

Salt and pepper<br />

1 lime, juice and zest<br />

To serve:<br />

100 g corn chips<br />

½ cup (125 ml) grated<br />

vegan cheese, Guacamole<br />

Pickled onions (optional)<br />

Directions<br />

Preheat oven to 180 C.<br />

Heat a little olive oil in a frying pan and sauté onion for a couple of<br />

minutes or until lightly golden. Add garlic and all the spices and continue<br />

to fry for a couple more minutes or until golden and caramelised.<br />

Add the frozen plant-based mince with tomato paste and fry for a further<br />

5 – 10 minutes.<br />

In an oven dish, layer the nacho chips with the plant-based mince.<br />

Sprinkle with the grated cheese and place in the oven for about 10<br />

minutes or until the cheese has melted.<br />

To make the tomato salsa, mix all salsa ingredients together and season<br />

with salt, pepper and lime juice.<br />

Serve the nachos with a fresh tomato salsa, some pickled onions and<br />

guacamole.<br />

½ cup (125 ml) carrots, finely<br />

½ cup (125 ml) leeks, finely<br />

2 tbsp. (30 ml) white wine<br />

1.5 litre water<br />

For the Bouquet Garni:<br />

1 bay leave<br />

3 sprigs parsley<br />

A delicious vegetable-based alternative noodle to enjoy.<br />

Directions<br />

In a large pot, heat up a<br />

little olive oil and sauté the<br />

vegetables lightly until just<br />

golden brown.<br />

Deglaze with the white wine<br />

and then add the water.<br />

Add the whole chicken and<br />

bouquet garni and allow to<br />

simmer gently for about an<br />

hour or until the chicken is<br />

cooked through.<br />

Once chicken is cooked,<br />

remove from the stock and<br />

shred or slice the meat. Set the<br />

sliced chicken aside and return<br />

the carcass to the stock.<br />

Continue to simmer for a<br />

further hour and a half to really<br />

intensify the flavour of the<br />

stock. Once stock is finished,<br />

strain and pour the broth into a<br />

clean pot.<br />

To make the ramen: flavour the<br />

stock with the soy sauce, chilli,<br />

garlic and ginger.<br />

Heat up the cauliflower noodles<br />

in the stock and divide both<br />

noodles and broth equally<br />

between four bowls.<br />

Add some sautéed mushrooms,<br />

blanched broccoli and thinly<br />

sliced radishes to each bowl.<br />

Top with some finely sliced<br />

spring onion and serve with<br />

some extra sliced chilli if you<br />

like it extra spicy.<br />

Listen Up, braai fans! Try this recipe, it’s perfect for a<br />

light summer lunch.<br />

Ingredients for salad<br />

2 fennel bulbs, cut into wedges<br />

75 ml olive oil<br />

1x mango<br />

15 ml sherry vinegar<br />

60 g bag of rocket<br />

1ea radicchio, shredded<br />

3ea fresh figs, quartered<br />

200g Beef Plankie steak, season with salt and pepper<br />

Braai like your favourite steak and cut into slivers<br />

Directions<br />

Heat a griddle pan to medium hot. Brush the fennel<br />

wedges with oil and cook for 4 – 5min on each side. Set<br />

aside and keep warm.<br />

To make mango dressing: Peel the mango and cut into<br />

slices, mix with sherry vinegar and remaining olive oil.<br />

Season to taste.<br />

Arrange rocket and radicchio on a platter. Top with slivers of<br />

Plankie steak, fennel and figs and mango dressing. Serve.<br />

Rib-Eye<br />

with Mustard Mushrooms<br />

Master Zola Nene’s recipe for Pork Rib-Eye with<br />

Mustard Mushrooms and you’ll enjoy unbelievable<br />

Ingredients<br />

2 Farmstead Pork Rib-Eye Steaks<br />

Salt and pepper to taste<br />

1 tsp. paprika<br />

Olive oil<br />

1 garlic clove; minced<br />

1 punnet exotic mushrooms; sliced<br />

1 tbsp. wholegrain mustard<br />

125 ml cream<br />

2 tbsp. chives/parsley; finely chopped<br />

For the Sautéed Greens:<br />

1 bag tenderstem broccoli/fine beans<br />

1 tbsp. olive oil<br />

1 thumb size piece of ginger; cut into matchsticks<br />

1 garlic clove; sliced<br />

Pinch of chilli flakes<br />

Salt and pepper to taste<br />

Directions<br />

Season the pork with salt, pepper and a sprinkle of<br />

paprika. Drizzle with olive oil then sear in a hot pan until<br />

browned on all sides.<br />

Place into a preheated 200 °C oven for 15 – 20 minutes.<br />

Remove from the oven and set aside to rest.<br />

Into the same pan, add garlic and mushrooms and<br />

sauté until mushrooms are browned.<br />

Add grain mustard and cream, season with salt and<br />

pepper then simmer for a few minutes and stir in the<br />

chopped herbs.<br />

For the sautéed greens, pour boiling water over the<br />

broccoli to cover then set aside for five minutes.<br />

In a pan heat olive oil then add ginger, garlic and chilli<br />

flakes, now sauté for a few seconds. Drain the broccoli<br />

then toss into the pan, sauté for a few minutes.<br />

Slice pork and serve topped with mushrooms and<br />

greens on the side.<br />

Ingredients<br />

2,5kg pork belly or gammon<br />

Mix together in a small saucepan and<br />

just bring to the boil. Remove from<br />

the heat and use as required.<br />

125ml water (apple juice or orange<br />

juice)<br />

125g butter<br />

100g brown sugar<br />

125ml honey<br />

15ml Dijon mustard<br />

Balsamic onion marmalade with<br />

blueberries<br />

60ml olive oil<br />

1kg red onions cut into wedges<br />

75ml brown sugar (or 80ml honey)<br />

350ml balsamic vinegar<br />

125ml brown sugar, extra<br />

1ea orange, zest only, or 10ml whole<br />

grain mustard (optional)<br />

1x360g punnet blueberries<br />

Method:<br />

Heat the oil in a large saucepan.<br />

Add the onion and sugar, and cook<br />

covered for 20min or until the onion<br />

is soft.<br />

Add the vinegar and extra sugar.<br />

Simmer, stirring occasionally, until<br />

golden and caramelised (add the<br />

orange zest/mustard). Add the<br />

blueberries and simmer for another<br />

3-5 minutes. Place in hot sterilized<br />

jars and seal. Serve with pork belly or<br />

gammon. The flavours also go well<br />

with strong cheese.<br />

Cooking/simmering gammon in water in a pot:<br />

30 minutes for every 500g<br />

Cooking gammon in aluminium foil @ 160°C:<br />

20 minutes for every 500g<br />

To prepare the lamb chops, generously rub each side with<br />

the sweet & spicy BBQ rub. Add salt and pepper to taste.<br />

In a medium-size pan, heat a little olive oil and fry the<br />

chops on both sides until golden brown and medium<br />

(approximately 3 – 4 minutes on each side).<br />

For the tzatziki, combine all the ingredients together and<br />

season with salt, pepper and lemon juice.<br />

For the fresh salad, combine all the ingredients together and<br />

dress lightly with a little olive oil and lemon juice.<br />

Serve the lamb on a bed of tzatziki and a side of the herb<br />

and pomegranate salad.<br />

Chicken Terrine<br />

Serving suggestion:<br />

Slice up and serve with toasted bread of your choice, mustard dressing and a side salad.<br />

Ingredients<br />

600g chicken breast fillets (OR<br />

uncooked, boneless gammon x 1kg)<br />

350g chicken thighs, trimmed (skin<br />

removed)<br />

300g minced chicken (OR minced<br />

pork)<br />

5ml salt<br />

Black pepper from the mill<br />

Pinch of ground nutmeg<br />

15ml finely chopped fresh oregano<br />

Olive oil<br />

7ea rashers middle cut bacon, rind<br />

removed<br />

Directions<br />

Cut breasts and thighs into 5mm<br />

pieces, then, in a large bowl, combine<br />

with minced chicken, salt, pepper,<br />

nutmeg and chopped oregano. Mix until well combined. Stretch the<br />

bacon and place slices across and up long sides of an oiled 1-litre<br />

capacity triangular tin, making sure there are no<br />

gaps and alternating wide pieces with narrow<br />

pieces so that coverage is even.<br />

Pack chicken mixture into bacon-lined tin and<br />

smooth the top. Bring overhanging pieces<br />

of bacon over top of terrine. Cover terrine<br />

tightly with lightly oiled foil and bake at<br />

160°C for 45 min. or until juices run clear<br />

when testing with a skewer.<br />

Cool the terrine to room temperature,<br />

then refrigerate for three hours or<br />

overnight. Slice and serve.<br />

Feta Cheese<br />

Mousse<br />

with roasted asparagus, cherry<br />

tomatoes, black olives and basil<br />

Ingredients:<br />

200g feta cheese, crumbled<br />

250ml plain yoghurt<br />

75ml cold water<br />

25ml gelatine powder<br />

125ml smooth cottage cheese<br />

125ml cream cheese with chives or herbs<br />

Method:<br />

Line the chosen mould with cling wrap.<br />

Mix all the ingredients - except the gelatine and cold<br />

water - in a food processor, then scoop into a mixing<br />

bowl.<br />

Sponge the gelatine in the cold water, melt over<br />

medium heat, temper with some of the feta cheese<br />

mixture and then mix into the rest of the cheese<br />

mixture. Pour into the prepared mould and let it set<br />

overnight. Un-mould onto a suitable plate just before<br />

serving and top with the roasted asparagus mixture.<br />

Your Veggies for Feta Cheese Mousse:<br />

Roasted asparagus, cherry tomatoes, black olives and basil<br />

Ingredients:<br />

500g fresh, green asparagus, trimmed, lightly<br />

blanched and refreshed<br />

250ml black olives, pitted<br />

20ea cherry tomatoes, cut in half<br />

50ml olive oil<br />

1ea garlic clove, crushed<br />

25ml pesto<br />

Method:<br />

Toss all the ingredients together on a baking tray.<br />

Bake at 160°C for 10-12 minutes, turning 2 to 3 times.<br />

Cool and use with the feta mousse.<br />

Pour into the prepared mould and let it set<br />

overnight. Un-mould on to a suitable plate just<br />

before serving and top with the roasted asparagus<br />

mixture.<br />

BASIL PESTO FOR THE:<br />

Roasted asparagus, cherry tomatoes, black olives and basil<br />

Ingredients:<br />

80g Pine nuts<br />

120g Parmesan, finely grated<br />

1 clove garlic, crushed<br />

2 x 80g bunches basil leaves<br />

185 ml olive oil<br />

5 ml sea salt<br />

Method:<br />

Toast the pine nuts on a baking tray until golden brown, at<br />

160°C for about 3-5 minutes.<br />

Allow the pine nuts to cool. Transfer to a food processor. Add<br />

the cheese, oil, salt and garlic and pulse for about 1 minute.<br />

Add the basil. Pulse to make a paste.<br />

Keep refrigerated in a jar with a screw top.<br />

Renal Care and Dialysis Services with a difference<br />

With the growing pandemic of Obesity,<br />

Hypertension and Diabetes Mellitus,<br />

the prevalence of renal disease has also<br />

shown a rapid upward trend.<br />

The latest figures released by the<br />

International Diabetes Federation<br />

(IDF), has revealed that 537 Million<br />

adults around the world are living with<br />

diabetes.<br />

One in ten adults around the world<br />

are currently living with diabetes. The<br />

total number of people with diabetes is<br />

predicted to rise to 643 million by 2030<br />

and 783 million by 2045. 81%of people<br />

living with diabetes, lives in low-and<br />

middle-income countries. An estimated<br />

44.7% of adults living with diabetes<br />

(240 million) are undiagnosed. Diabetes<br />

was responsible for an estimated<br />

USD 966 billion in global health<br />

expenditure in 20<strong>21</strong>. This represented<br />

a 316% increase over the last 15<br />

years. 6.7 million adults are estimated<br />

to have died due to diabetes or its<br />

complications in 20<strong>21</strong> – 1 death every 5<br />

seconds.<br />

Diabetes Mellitus has become the<br />

leading cause of chronic kidney disease<br />

worldwide, as well as the numbers one<br />

underlying disease, resulting in the<br />

initiation of renal replacement therapy.<br />

It can develop in the course of both<br />

Type 1 and Type 2 diabetes; and, as a<br />

consequence of other forms of diabetes<br />

as well.<br />

Renal involvement is usually heralded<br />

by the presence or worsening of<br />

protein excretion, in a patient with<br />

chronic hyperglycemia. As well as the<br />

development of an elevated blood<br />

pressure.<br />

The unit is managed by, Dr Riaan Flooks<br />

(Nephrologist) - Medical Director<br />

and Unit Manager, Ms Cleo Griekwa.<br />

This unit renders renal replacement<br />

therapy to in-hospital patients, in the<br />

form of acute hemodialysis; as well as<br />

to out-patients, in the form of chronic<br />

hemodialysis and peritoneal dialysis.<br />

The in-hospital dialysis is usually for<br />

patients who had an acute/abrupt<br />

disease process that impaired the<br />

functioning of the kidneys. The outpatient<br />

dialysis centre caters for patients<br />

who are requiring permanent dialysis.<br />

How can we prevent renal disease<br />

from occurring?<br />

• Regular blood pressure checks, and<br />

manage your hypertension, if already<br />

diagnosed<br />

• Diet should be low in cholesterol and<br />

sugar, and high in fiber, whole-grains,<br />

vegetables and fruits<br />

• Regular urine dipstick testing<br />

• Regular blood glucose checks, and<br />

manage your diabetes, if already<br />

diagnosed<br />

• Regular exercise<br />

• Limit salt intake<br />

• Limit pain medication use<br />

• Limit anxiety and stress<br />

• Limit alcohol intake<br />

• Drink enough water<br />

• Don’t smoke, since smoking reduces<br />

blood flow to the kidneys<br />

Celebrating<br />

All records surpassed!<br />

With a little more than 200 000 votes received across the<br />

different sections and categories, the ninth edition of the Best<br />

of <strong>Bloem</strong>fontein Readers’ Choice Awards surpassed all previous<br />

records!<br />

<strong>Bloem</strong>fontein Courant readers were encouraged to vote in<br />

numbers, and they came to the party in a big way. The number<br />

of votes received made a huge jump from 130 000 votes in<br />

2020 to just over 200 000 this year!<br />

This once again underpinned the popularity of the Readers’<br />

Choice Awards, as well as the good service rendered by<br />

businesses in the City of Roses to the readers of <strong>Bloem</strong>fontein<br />

Courant. The campaign was again <strong>Bloem</strong>fontein Courant’s<br />

single most important contribution to the local economy and<br />

the community as a whole.<br />

By bolstering the local economy and encouraging social<br />

cohesion among the residents of the City of Roses, the Awards<br />

not only encouraged businesses to raise the bar in terms<br />

of service, but also offered the public a platform to reward<br />

businesses by voting for them.<br />

Although pleasantly surprised by the numbers reached this<br />

year, the success of the Best of <strong>Bloem</strong>fontein Readers’ Choice<br />

Awards was to be expected after nine years of constant<br />

improvement. Like a cat with nine lives, it reinvented itself year<br />

after year to become a force to be reckoned with.<br />

These great results were also testimony to the massive<br />

influence of the hyper-local annual campaign on the market.<br />

Apart from the proven popularity of the Readers’ Choice<br />

Awards, <strong>Bloem</strong>fontein Courant made some significant<br />

changes to it this year, which definitely contributed to the large<br />

voting numbers.<br />

As of this year, readers did not have to leave their favourite<br />

news website, www.bloemfonteincourant.co.za, to cast their<br />

votes. In the publication’s constant endeavour to make voting<br />

less cumbersome for its readers, the voting platform was<br />

moved from www.bestofbloemfontein.co.za to <strong>Bloem</strong>fontein<br />

Courant’s own news site, www.bloemfonteincourant.co.za.<br />

As if that was not enough, readers also stood a chance to<br />

win their share of R20 000, by simply voting as many times as<br />

possible!<br />

Another driver of success for the competition was its<br />

partnership with FNB. Being a loyal sponsor of the competition<br />

for the last few years, FNB not only provided financial muscle,<br />

but invested expertise and knowledge to the benefit of<br />

contestants.<br />
