What life lessons did you learn from

your other projects that helped you

create NobleBlu vitamin supplements?

Throughout my life experiences to

A date, the lesson that resonates with me

the most is the importance of taking

care of yourself and finding that true

balance within. We are creatures of habit,

things will go right and wrong, but self-care

and self-love are absolutely paramount - it

has a ripple effect on all aspects of life.

That’s why I think the wellness space is so

beneficial, and this is what NobleBlu is all

about. When you start prioritising wellness

and taking care of yourself, I’ve found that

everything starts to fall into place. Another

life lesson I have learnt along the way is

to take each day as an opportunity to reset

- don’t worry about what you didn’t do.

life and acting from a place of love. One

of my favourites quotes is: “life is like a

banquet but most of us are starving today”.

This is from a book called Awareness by

Anthony de Mello and really resonates

Balance of Life – finding that everyday

You mention “Balance of Life”. What

S are the areas of your life that are the

most important to keep balanced and

how do you achieve that?

To me, balance doesn’t mean perfect.

meaningful, calm way. We know

life can sometimes be unpredictable but

practising self-love and prioritising your

wellbeing is what counts. It’s that Eat,

Pray, Love moment. Whether it is your

favourite box set, a glass of wine, following

a spiritual guru or communicating with a

loved one, it’s about letting go, facing your

fears and finding comfort in the discomfort.

And try not to give yourself a hard time,

every feeling is valid. Be kind to yourself!

What are your guilty procrastination

S go-to activities? How do catch yourself

from wasting time and motivate

yourself to do something more productive?

Being self-employed, I have a very

A long to-do list and a busy schedule,

so time flies! But I notice if I am

being sluggish it’s likely that I need to slow

down, rest, and focus on some self-care. I

find happiness in everyday life by either

cooking a delicious meal for my family

or taking the dog for a walk. A rest day

also counts as a productive day. Listen to

your body, go with the flow, every day is



What would you tell your younger self

about what to focus on to achieve true

happiness and contentment in life?

I would say to worry less as it is a waste of

Trust that everything will be ok and fall into

place. Focus on good intentions, take baby steps, and

you will get to where you need to be. I’d also tell my

I feel challenged a lot of the time, but I allow it

to happen and turn it into a positive. Challenges

can often propel me forward when I let go and see the

good things that come from them. Trust the process

and make peace with it.


What are your top tips for keeping your mental

health balanced during these turbulent times?

I always suggest prioritising health and

spending time with loved ones, and always being

kind to yourself and others.


What’s the most recent thing that happened to

you that made you give a huge belly laugh?

I recently went to see Stormzy live with a big

night laughing uncontrollably. It was so good for

the soul and was a reminder to go out and have fun,

be a kid again and enjoy those precious moments.


What causes or charities are most close to your

heart and why?

I am an ambassador for World Animal

The Lensbury

Located in leafy Teddington, just

40 minutes outside of London, The

We missed the wonderful people that

Got Talent last year?

It was really bizarre because it has

D been an annual event for us. Every

January, we’d come back from the

New Year and the first thing we’d do was

BGT auditions. Just to not have that in the

diary felt a bit empty and a bit weird. Like

Ant said, we missed being in the theatres

with the audiences, with the acts backstage

and with the judges. We just really missed

it, but it was impossible to do last year.

There was just no way we could do it with

the pandemic. So it made it extra special

being back this year with everybody. It

takes something like that to make you

really, really appreciate it. It was great to be



How easy was it for you all to slip

back into your working relationship

together having had a year off?

It was quite easy, actually. As soon as

and you’re asking questions, because

we’re genuinely interested to find out what

they’re doing. It always comes from a place

of curiosity. For us, it was easy. The judges

Do you think you’ve changed at all

over these 10 years, as a group?

Yeah, definitely. Everybody’s certainly

D more experienced in their fields.

We’ve all seen a lot more talent

and have a much clearer idea, I think, of

what works and what doesn’t work for an

audience. I think we’ve all learned a lot

and have gained a lot more experience. I

think we understand the show more and

appreciate how much hard work goes into

the rehearsals of the act and what really

has that bit of special magic fairy dust that

makes it an absolute golden audition. I

think we’ve all been doing it so long now,

there’s a realisation of what really works.


How would you describe the vibe of

the series this year?

I would say the vibe of the series is

A one of gratitude. Gratitude from us

that the acts are back and gratitude

from the acts to be able to perform on

stage again. Because people haven’t

worked for so long. In our industry, a lot of,

especially performers and singers, didn’t

have anywhere to perform, they couldn’t

work during the pandemic. We had acts

that would never have normally done the

show before, come down to audition, and

acts who would’ve done BGT, have had two

years to really work on their act, so that the

talent was really strong.

We had a lot of acts who’ve gone, ‘Oh

D gosh, I’ve never had the courage to, or

I didn’t think I would ever audition to

Britain’s Got Talent, but since everything

that’s happened over the last years, I’ve

just thought, do you know? Sod it. I’m

going to do it. I’m going to go for it, grab

my opportunity.’ I think there’s a renewed

sense of people going, “Just go for it.

You’ve got nothing to lose.”

You mentioned obviously the

S standard’s high. Do you think it’s

perhaps higher because you’ve

had that break so the professionals have

been honing their skills and the nonprofessionals

have had a year practicing at

home in lockdown?

I think that’s hit the nail on the head,

D absolutely. The professionals have

gone, ‘Right, I’m going to go for this

because life’s too short. Let’s just grab it.’

The non-professionals have gone, ‘Right,

while I can’t go anywhere I may as well put

some rehearsal time in and then really go

for it.’ The standard has been incredible to

as a vintage BGT year?

Absolutely. I think taking a year off, although

D wasn’t ideal, I think it’s really reinvigorated the

show and reinvigorated the talent. Hopefully,

that will come across and hopefully the audience sees




Were there any moments that were really


There were a few. We surprised somebody in the

A audience. He was surprised by his daughters and

was asked to come on stage and perform that

day. He thought he had just come to watch the show!

He went away for an hour or two, rehearsed, and then

at the end of that session came back and performed

the song. That was very emotional.

That was a tear-jerker! That’s what’s amazing

D about BGT is that you never quite know the next

act if it’s going to have you in tears, in hysterics,

floods of rage because it’s not as good as you’d

hoped. You just never know what emotions you’re

going to feel for the next act. That’s what’s so magic

about it.

Going into this series, did you have an idea of

what you wanted for your Golden Buzzer?

That’s the thing for us. We’re so far away from

D the Golden Buzzer. If there’s anything that’s

really good we know the judges are going to get

there first. So we always have to go for something

a little bit different, but something that the audience

gets behind and something that we feel. And also, it’s

got to have looked good from the side because that’s

all we get to see! It has to work watching it from the

side. That’s why every year it’s been something a

little bit different. We got the winner last year in Jon

Courtenay. He was our Golden Buzzer and he went

on to win it. This year, we think we’ve got as good a

chance to see our Golden Buzzer win again. We’ve

got a really good one!




One little boy challenged the judges to name

flags, but Simon wasn’t very good, was he?

I know! He’s a well travelled man but his

geography is shocking, very shocking!

The thing that I loved as well is that he

D challenged all the judges down the line. He

asked David, and then he asked Alesha, and then

Amanda. Simon tried to end the act before he got to

him, so it didn’t show how bad he is at geography. I

love it when little kids challenge the judges, because

there’s only ever going to be one winner.

Are there any acts that stick in your mind in this

year’s Britain’s Got Talent?

There are some really good choirs this year,

A really good singers. It tends to go through

stages, Britain’s Got Talent, where you have one

year, it’s the year of the singer, songwriter. One year,

it’s the year of the magician, like the last time we did

it, it seemed very magician heavy. This year, there

was a lot of everything. There’s a lot of just really

good acts. It’s the year of the good act, I think.

It’s great. I’m genuinely intrigued as to who

D the final 40 will be. I know how many acts the

judges put through, and they’ve got a real task

on their hands to get them down to 40, because the

quality is so high this year. There’ll be a lot of really

good acts that miss out this year as well. You can’t

put 40 singers through. You can’t put 40 choirs. You

can’t put 40 magicians through. You have to have a

mix of categories. There are going to be some really

good acts that miss out, just because there are too

many good comedians or too many good singers,

whatever. It’s going to be harsh on a few acts, but

hopefully, maybe we’ll see them again another year.

Barbecue Like A Boss

Dan Cooper, Head Grill Master for Weber Barbecues, shares 10

top tips and tricks to barbecue the Weber Way this spring



First off, you need to make sure your

barbecue is in good condition as,

like everything else, barbecues require a little

maintenance and by using the right products you

can extend the lifetime of your barbecue to keep it

looking like new year-round.




Always place your barbecue on a firm, flat,

heat-resistant and non-flammable surface, and never

place it in a tight space – I’d suggest positioning it

approximately three feet from any walls or fencing.




To protect your arms and hands when

handling a hot barbecue, you should always use heatresistant

barbecue mitts and good quality, long tools.

I’d also recommend wearing a barbecue apron, as it

will protect your clothing from heat and spattering




Special care should also be taken if you’re

using oil on the barbecue. Oil should only

be used if absolutely necessary and applied to the

cooking grate using kitchen roll. Alternatively, you

can spray the cooking grate with Weber’s specially

designed Non-Stick Spray.



The process for lighting a barbecue depends

on the type you have. If you’re lighting up a

charcoal barbecue, use specialist lighting aids, such

as Weber’s lighter cubes, to light your barbecue.

Gas barbecues are easier to light, but it’s important to

make sure that you reach the optimum temperature

for barbecuing.

Finally, lighting an electric barbecue is simple. Just

plug the barbecue into a socket, turn the controller to

‘high’ and just let it heat up for 25 minutes with the

lid on.



You should always pre-heat your barbecue

to the desired cooking temperature. If your

grill does not reach the optimal cooking temperature,

you could overcook your food by leaving it on the

barbecue too long.

It’s essential to use the right method to

ensure food is cooked to the optimal

temperature. The direct cooking method is when food

is placed directly over the heat and is ideal for dishes

that take less than 15 minutes to cook or that need a

nice sear, such as steaks and burgers.

The indirect cooking method is where food is not

placed directly over the heat. The food will cook

“indirectly” through the heat circulating inside the

barbecue. The indirect cooking method is perfect for

foods that take longer than 30 minutes to cook, such

as a roast.

The 50/50 cooking method uses a combination of

direct and indirect cooking; this method can be used

for food that takes between 15-30 minutes such as

thicker cuts of steak and sausages.




Rather than cooking for a specific amount of

time or cutting into your meat to check that it’s done,

use a meat thermometer. It’s the most accurate way to

tell if your food is cooked so you can serve perfectly

barbecued food every time.

SLOAN! chats to Peter Joseph, Head Chef at

Kahani, about his Michelin star success, passion for

cooking and life lessons on his culinary journey



How did your passion for cooking

start and who/what have been your

greatest influences?

The passion my mum had when

P cooking for my family really inspired

me, I loved watching her put dishes

together, from packed lunches for school

to special weekend meals, and the way she

used lots of fun, colourful ingredients and

spices was always something that intrigued

me. For school, she would always pack me

off with a tiffin box full of delights such as

appam (rice pancakes), sadam (flavoured

variety rice) and on occasion sweet treats

such as halwa & vermicelli pudding too.

From watching my mother cook, I learnt

her techniques and the way she uses

different ingredients. And so, as I grew up,

food started to become a bigger part of my


I used to borrow ingredients from my

mother’s kitchen and cook a dish with my

friends, for me, social gatherings often

centred around food.

I was also in awe of the chefs I had seen

on TV in their smart uniforms, creating

colourful and flavoursome food. As

such, once I finished school, I decided to

dedicate my life to the art of cooking, and

I enrolled at Hotel Management School on

a three-year course. After this, I entered

the hospitality industry and started getting

experience in professional kitchens. I

worked with Rakesh Upadhya, who was

talented and became my mentor, advisor,

and guru; he is the biggest influence of my

cooking after my mum.

At Kahani, you want to make Indian

S fine dining more communal and

informal. How have you done that and

what has the response been like from your


Back in India where I come from

P (Tamil Nadu), we celebrate various

festivals by getting together with

family and friends, sharing our stories

whilst also sharing our food. Since then,

we’ve found that people are so busy and

hardly get together and eat a meal at home,

so I wanted to create an atmosphere at

Kahani, where people get together and

socialise, and can enjoy sharing their

food and stories. In Indian, Kahani means

‘story’, and we really want our guests to be

able to share their stories over food like we

do in India. It has really worked out well,

our diners love the concept.

How would you define your signature

S style of cooking? What are your

favourite spices, seasonal ingredients

and flavour pairings?

My style of cooking is lighter modern

P Indian, I combine spices and flavours

to appeal to people from all over the

world. At Kahani we wanted to break the

stereotype of the typical Indian being saucy

and greasy, and so in my menus you’ll find

more grilled meats and fishes than curries.

My favourite spices have to be ginger,

fennel and star anise. In terms of seasonal

ingredients, asparagus, duck and peach

are the winners. And my favourite flavour

pairings are yoghurt, turmeric and mustard,

honey and saffron, and coconut and curry


What has your experience of holding a

S Michelin star for six years at Tamarind

taught you about running a successful

restaurant and getting the best out of your


The experience of holding a Michelin

P star is always a pressure, but the secret

behind upholding the star is none other

than maintaining consistency and ensuring

the quality of the food is impeccable all

around the year. At Kahani, we teach

all our kitchen team and wider staff this

philosophy to ensure that our guests get the

best experience, whenever they dine with



What perceptions exist about Indian

food and Indian restaurants that you

would like to change?

There is a perception that Indian

P cuisine can’t achieve more than one

Michelin star. This is always on my

mind, and I’d love to change this perception

by providing the highest quality dishes with

top class service that we offer at Kahani.


What skills have you learned as a chef

and running your own restaurant that

have impacted other areas of your life and changed

the way you approach situations or problems?

Over the years I have learned to manage my

P anxiety. Being a chef and running a restaurant is

quite a challenging task, but I have learned that

being relaxed in tricky situations is more important

than showing our emotions, which has helped me a

lot in my personal life as well.



What are some of the biggest challenges you’ve

faced in your life and how did you overcome


When I became a head chef of Tamarind

Restaurant, I was responsible for keeping

the Michelin star every year and had sleepless

nights when something went wrong on the service.

However, as the head chef you have to motivate the

team all year round, which in turn helped us keep the

Michelin star until I left.

The second challenge was when I started serving

food for premium boxes at Lords International

Cricket, which was difficult task. The food was

prepped at the restaurant, transferred by refrigerated

vans to Lords Cricket ground and served in the VIP

Boxes, which was challenging initially. However, I

have learned as Head Chef that planning is key and

75% of the preparation should be in your head.


What tips do you have for young chefs looking

to break through in the hospitality industry?

Dedication is key to success in the hospitality

P industry, and when you’re starting out it’s also

important to be humble, ready to learn and

patient. You have so much to learn from chefs that

have been in the industry for years, so you need to go

in with the right attitude to learn from them. I find

that challenging work makes you a better chef, but

this doesn’t mean you have to work more hours than

anyone else, you just have to get the most from the

hours you do work by taking everything in from the

kitchen around you.



What is the best way for home cooks to learn

traditional Indian cooking techniques?

I always say, if you can make a soup at home,

you can cook a curry at home, but there are a

few things you need to understand: essential

Indian spices, Indian cooking tools and cookware,

Indian cooking methods and cooking processes, and

the balancing of flavours for an authentic Indian taste.

You can achieve a lot of these from cookbooks that

include authentic, Indian recipes.

Cooking any cuisine that is outside your comfort zone

can be a challenge for some.

However, with the right type of ingredients and the

cooking techniques, the task of cooking gets much

easier and clearer.

Most likely, you will have eaten similar dishes before,

maybe at a restaurant or someone’s house, which can

help guide you to create the right flavours when you

follow a recipe at home yourself. Always marinate

your meat before making a curry, this is essential

to creating a delicious curry. Bhuno in Hindi means

roast or simmer, and the process of slow-frying or

slow-cooking certain ingredients like onion, ginger &

garlic creates that depth of flavour. Use fresh ginger

and garlic for curry rather using bottled pastes, and

always season your curry carefully with a balance of

lemon juice, salt, chilli or black pepper.



What five things could you not live without in

the kitchen and why?

1. Good knife kit – this is the key tool to prep a

delicious meal and having good knives makes all

the difference.

2. Chopping board – something very basic as you

can’t chop without having a chopping board.

3. A good team with right attitude – they are the

backbone of each service.

4. Measuring spoons and the right pots – if you don’t

measure and cook in the right pot it can be a total


5. Knowing your oven – a good oven makes all the

difference, especially for the grilled dishes but it is

important to know your oven.

blue curaçao and citrus which is poured

from a painting whose colour gradually

Nipa Thai

Nipa Thai is renowned for serving

the most authentic Thai cuisine

Spring Sips


Take 15ml Elderflower Aperitivo, 25ml Gin,

25ml Orange Liqueur, 1 dash of Lemon

Bitters & a pinch of sea salt and stir with

plenty of Ice. Strain into a chilled coupe.

Garnish with a twist of lime zest.


Stir 50ml Suncamino Floral Rum, 3 dashes

of Angostura Bitters and ½ shot Simple

Syrup or Agave Syrup in a rocks glass

with ice. Garnish with fresh Orange Peel.


Take 25ml Hernö London Dry Gin, 20ml Campari,

20ml sweet vermouth, 10ml white crème de cacao

and 2 dashes of cocoa bitters. Stir all ingredients

with ice and strain into and ice-filled rocks glass.

Garnish with a slice of orange.


Muddle fresh passionfruit and add

25ml Cazcabel Coconut Tequila,

30ml CUT SPICED RUM, 15ml

Passionfruit Juice, 25ml Lime Juice

and 1 dash Angostura Bitters. Shake

with ice and pour in to a glass.

Pour half can Stiegl

Grapefruit Radler over ice

in rocks glass. Add 30ml

Campari and garnish with a

twist of lemon rind


Add 50ml Dubonnet, 25ml Hernö gin & 1

tsp Lingonberry jam to a cocktail shaker.

Shake vigorously. Strain into a chilled coupe

glass and garnish with a wedge of lemon.


Shake 45ml El Recuerdo Mezcal, 10ml

Blue Curacao, 25ml lime juice, 10ml

Agave Syrup and 15ml Giffard Piment

D’Espellete, Ancho Reyes or Jalapeno Brine

in a shaker with ice. Pour into rocks glass

over fresh ice and garnish with Jalapeno.


Add 60ml Goslings Black Seal Rum,

juice of 1 orange, juice of 1 lemon,

100ml pineapple juice and 100ml ginger

ale to a cocktail shaker with ice and stir

for 30 seconds. Strain into glasses and

garnish with a wedge of fresh pineapple.
