Seventy books later and
Bishop is still creating
Award-winning
children’s book author
and illustrator Gavin
Bishop tells New
Zealand’s stories for
children. He talks
to reporter Emily
Moorhouse about
his lifelong passion
for art, his first time
seeing his books on
sale and using his
grandchildren’s ideas
for new books
GAVIN BISHOP knew he
wanted to be an artist when he
was four.
Seventy-two years on, more
than 70 published books and
countless national awards later,
he is continuing to do just that.
Bishop was born in
Invercargill, but moved to
Christchurch to study at the
Canterbury University School
of Fine Arts and graduated with
an honours degree in painting
in 1976.
He then became an art
teacher at Te Aratai College,
formerly Linwood College,
before moving to Christ’s
College, when another art
teacher suggested he write a
book for children.
“It was kind of weird because
it was just out of the blue that
this person said this and it
struck a chord with me,” Bishop
said.
“I suddenly realised that was
something I’d been thinking
about doing for a really long
time, but I had never got around
to doing it.”
English publishing company
Oxford University Press (OUP)
expressed it was looking for
material that had a “strong
New Zealand flavour” and had
representatives visit Wellington
at the time.
Bishop liked the idea of this,
as he hadn’t grown up reading
New Zealand books.
“When I was a child all of
the books I read came from
England, Australia, America
mainly. It was a very exciting
proposal.”
Sparks performance
a night to remember
• By Emily Moorhouse
VIOLINIST ARNA Morton
has grown up with the Sparks
concert – only this time
around things looked a little
different.
Morton traded the view of
the stage for the view of the
audience as she performed
with the Christchurch
Symphony Orchestra at
Saturday night’s Sparks in
North Hagley Park.
Although performing
at Sparks was a firs time
experience for Morton,
she said the concert went
rea ly we l and had a great
atmosphere.
“I was just so excited to be
back performing together
with the band,” she said.
“Obviously last year we had
a lot of disruptions so it was
nice to have everyone get back
into it.”
Even after playing the
violin since she was five, the
coastal area resident said
it was normal to sti l get
nervous before a performance,
especia ly for a large crowd.
“There’s this heightened
sense of adrenaline before
you go on stage. I definitely
still get nervous, which is
important,” she said. “It’s
about channe ling the energy
required for a performance.”
about
Bromley
‘stench’
• By Emily Moorhouse
RESIDENTS LIVING near the
Bromley wastewater treatment
plant have been “coping with the
stench” for weeks now and want
something done to fix it.
The wastewater treatment plant
caught fire in November and has
been emitting an unpleasant smell
ever since, causing frustration
among residents.
Katinka Visser has lived in
Bromley for 35 years, and said
while the stench hasn’t been as
bad during the new year for her,
she sometimes felt as though she
couldn’t breathe.
“I’ve had three nights that I
virtually couldn’t breathe, it was
that bad, there’s like a fog and it’s
just sitting.’’
She said even after putting her
head under the blankets, she
could sti l smell the stench.
Visser said because the wind
has been coming from a southerly
direction lately, she hasn’t been
experiencing the sme l as strongly,
but knows that residents close by
do.
“I’m so thankful that I’m not
affected as much as most people,”
she said.
“There are people way, way
worse off than me.”
Money
puts hand
up for local
elections
• By Emily Moorhouse
FORMER Coastal-Burwood
chairwoman Kim Money has
made a bid to return to local body
politics, with plans to stand for
council as an independent for the
Coastal Ward.
Celeste Donovan
is the current
Coastal Ward
councillor and
said it was always
great for democracy
when you
had a choice.
“It’s
encouraging to hear another
woman is standing and there will
be others putting up a hand closer
to the election date,” Donovan
said.
Money was the board’s
chairwoman in 2016, but didn’t
stand for re-election in 2019 due
to personal circumstances.
Now she says those
circumstances have changed
and the timing is right for her to
throw her hat back in the arena.
“I’m keen to get back again and
represen this community that I
love so much,” she said. “We rea ly
do need that experience from the
coast sitting a the council table
and I would love to do that for my
community.”
Money said it had been
unfortunate she couldn’t stand
again in 2019 as there were a few
unfinished things she needed to
do. • Turn to page 4
Coastal Pathway needs city council funds
THE CITY council will need
to dip into its pockets to pay for
the final section of the Coastal
Pathway.
The Government gave the city
council $15.8 million in Shovel
Ready funding to build the
missing section of the pathway
between the eastern end of
Redcliffs Village and Shag Rock.
But the final cost is expected to
be $17.3 million.
City council
general
manager
infrastructure,
planning and
regulatory
services
Jane Davis
Jane Davis
said funds
were held in
contingency
for the project to cover any
increased cost.
Staff will seek approval next
week from city councillors to
draw down the funds.
Said Davis: “The marine
environment and the narrow
road posed all sorts of unknown
challenges, but the team now
fully understands what’s
required, how long it will take,
and what it will cost.
“Our focus has always been
on delivering a quality, futureproof
pathway while keeping the
impact on the environment and
the community to a minimum,
and we always knew this section
of pathway was going to be
complicated,” Davis said.
“However, we’ve faced
some additional challenges,
including Covid-19 related
delays in obtaining construction
materials, that have added to the
costs of the project.
“Fulton Hogan developed a
different way of delivering the
works that addressed many of
the challenges associated with
the marine environment and
ground conditions.
“Because this area of
Moncks Bay is known as an
early settlement area for both
Māori and Europeans, the cost
also includes archaeological
and cultural monitoring of
all excavation works, and
monitoring of white flippered
penguins that breed in the area.”
Davis said amending some
of the resource consents to
accommodate these changes
resulted in additional design
and consenting costs, but has
reduced the risks and provided
greater certainty over the final
cost.
“Despite the challenges of
COST
INCREASE:
Unknown
challenges
faced the city
council as work
progressed
along the
Coastal
Pathway.
building this section of the
pathway, Fulton Hogan has
been making excellent progress
and we are still on track to
finish the pathway by the end of
2023.”
The current traffic
management around the area,
with traffic reduced to one lane
between 9am–7pm, will stay in
place until August 22.
NEW RELEASES
A Fish In the Swim of the World
by local lyttelton author/poet Ben Brown
Affecting and evocative, this classic memoir by one of Aotearoa’s finest Maori writers
is now updated with new material.
‘This is a book of memories. Some of them are my own. Some of them belong to
others. They are as true and as fallible as any memories—distorted by time and
distance and a writer’s choice of words…’ In the debut memoir that kickstarted a
writing career that has spawned more than 20 books, including many award-winners,
Ben Brown writes of a quintessentially New Zealand way of living that may not change
the world or even ripple its waters, but is replete with meaning.
Gathered from the tobacco-green valleys of the Motueka River where he grew up
during the 1960s and 1970s, Brown’s memoir is rich with a sense of place, of family.
Each story, each portrait, resonates with the dignity, warmth and understated humour
of one of our finest poetic voices.
Sevens Sisters
How a People-First Culture turned silver into Gold
by rikki swannell
When Tyla Nathan-Wong popped over the conversion in what was the final act of the
Rio Olympic gold medal match, her distraught face said it all. It was a look that was
mirrored across the faces of the entire New Zealand team, slumped around the ground
at the Deodoro Stadium as Australia celebrated their history making Olympic gold
medal at the 2016 Games. It’s all well and good to have the best athletes, but if there
was one thing everyone involved in the Black Ferns Rio Olympic campaign had learned
it’s that what happens off the field can make or break what happens on it. A reset was
needed and “people first” would be at the heart of that change. Led by new coach
Allan Bunting and a large, diverse leadership group, the Black Ferns Sevens set course
on what would turn out to be a five-year path to not only win gold at the Tokyo Olympics
and be world dominant but to enhance the mana of the jersey and inspire people.
The Widows of Champagne
by renee ryan
In this captivating story of resilience, three generations of women battle to save their
family’s vineyard from the ravages of WWII. Champagne, 1939
Gabrielle Leblanc Dupree is taking her family’s future into her hands. While she should be
preparing for a lavish party to celebrate two centuries of champagne making, she secretly
hides Chateau Fouché-Leblanc’s most precious vintages behind a fake wall in the cellar in
preparation for the looming war. But when she joins the resistance, the coveted
champagne isn’t the most dangerous secret her cellar must conceal…
There’s even more at stake than Hélène dares admit. She has kept her heritage a
secret…and no one is safe in Nazi-occupied France.
Across years and continents, the Leblanc women will draw on their courage and wits,
determined against all odds to preserve their lives, their freedom and their legacy…
No Excuses: My Story
From crime to community and fat to fit
by dave letele
The amazing true story of Dave “the Brown Buttabean” Letele and how he turned his
life around. Dave Letele’s incredible life has taken him from footy to failure, crime to
community, fat to fit and riches to rags -- and back again.
Today, he is an award-winning community leader and life coach who, as the face of
Buttabean Motivation, helps literally thousands of ordinary people achieve their goals.
He provides targeted health and fitness programmes, helps young people find jobs,
and runs a foodshare for those in need. But it wasn’t always like that. He has overcome
poverty, obesity, intergenerational trauma, depression, the lure of a life of crime and
his own demons. Like Dave says, “I’ve been at the bottom and I’ve been at the top,
and everywhere in between … If I can do it, you can. No excuses.” This is his story.
Eddy, Eddy is a coming of age story, a love story, an earthquake story and a story of
finding your way back from grief. Eddy Smallbone (orphan) is grappling with identity,
love, loss, and religion. It’s two years since he blew up his school life and the
earthquakes felled his city. Home life is maddening. His pet-minding job is expanding in
peculiar directions. And now the past and the future have come calling - in unexpected
form. As Eddy navigates his way through the Christchurch suburbs to Christmas,
juggling competing responsibilities and an increasingly noisy interior world, he moves
closer and closer to an overdue personal reckoning. Eddy, Eddy is a richly layered novel,
deftly written with humour and pathos: a love story, peopled with flawed and comical
characters, both human and animal; and a story of grief, the way its punch may leave
you floundering - and how others can help you find your way back.
4000 daffodils a blooming lovely effort
IT’S BEEN a big fortnight at
the Youth Alive Trust with 100
intermediate-aged children and
teenagers participating in the
trust’s breakaway programmes.
One of the projects included
planting about 4000 daffodil
bulbs in Rawhiti Domain, with
Cathy Baker from Guardians of
Rawhiti Domain.
The daffodils, which will
be ready by spring, are part
of the Woodland Playground
development. It includes swings, a
fort and a flying fox.
Trust manager James Ridpath
said the trust loves getting
involved in community service
projects with youth.
“It builds community pride,
creates ownership and also
shows the public and the young
people that they can be valuable
contributors to the community,”
he said.
Other activities the trust has
undertaken with the youth
include ten pin bowling, laser tag
and a trip to Hamner Springs.
‘Writing books for our children with
stories about us is really important’
• From page 1
So Bishop got in contact with
OUP and made a start on his
first book about a sheep, as sheep
farming was a major industry in
the 1980s. He called it Bidibidi.
However, the book took a few
years to publish as Bishop had to
learn how to write and illustrate
for children, something an OUP
editor helped him with.
The second book Bishop wrote
he set in Linwood, where he was
still teaching, and even used the
old Edmonds baking powder
factory on Ferry Rd as one of the
major buildings in the book. He
called it Mrs McGinty and the
Bizarre Plant.
Bishop said writing this book
was “much more straightforward”
as he began to get the
hang of creating stories for children,
and it was even published
before Bidibidi.
Bishop continued to teach
art, while working on his books
at the same time, often in the
school holidays and at night after
dinner.
In 1998, he decided to pursue
writing and illustrating books
full-time. He remembers handing
in his letter of resignation
to the headmaster at Christ’s
College.
“He rung me up and said ‘are
you sure you want to do this’ and
I said ‘yup’ and he said ‘would
you like me to tear the letter up’
and I said ‘no, I’m really going to
go ahead with this’.”
That year Bishop wrote a book
called The House that Jack Built,
which looked at the impacts of
colonialism on New Zealand.
“It was very successful and
in fact it’s being used still, in
schools. That’s a book that’s been
around for quite some time and
looks as if it’s going to be still.”
Bishop recalls the moment he
knew he wanted to be an artist at
the age of four when a signwriter
came to the small town of
Kingston, south of Queenstown,
where he lived.
The signwriter came to paint
some signs outside the Kingston
pub – which has since burnt
down – and while he was there,
he was asked to paint a big mural
on the wall above the bar.
Bishop hadn’t seen a real
painting before and was allowed
to go and watch the signwriter at
work.
“I used to stand watching him
paint this big scene of the lake
up on the wall and I found that
absolutely magical,” he said.
“That’s when I think I thought,
that’s what I want to do.”
Because Bishop was taller than
most kids his age, lots of adults
would tell him he should become
a policeman.
“That’s all you had to be, you
didn’t have to be fit or smart
or clever or anything like that,
you just had to be tall and I
would say ‘I don’t want to be
a policeman, I want to be an
artist’.”
DREAM JOB: Gavin Bishop knew he wanted to be an artist when he was four-years-old,
after watching a signwriter paint a mural at the local pub in Kingston.
PHOTO: KAREN CASEY
Bishop remembers the first
time he saw his book on sale at
the old Whitcoulls on Cashel St,
which was demolished after the
earthquakes.
“I can remember walking
through there and seeing my
first book for sale and they had
a mountain of it, they had like
a hundred or more copies all
stacked up and stacked on the
floor I think.”
He can’t remember if it was
Bidibidi or Mrs McGinty and the
Bizarre Plant, but he asked the
shop assistant if they wanted
him to sign the books.
“I sat down and spent ages
signing these books, and what
was wonderful was they all sold
quite quickly and they had to get
some more in,” he said.
Bishop works from his studio
at his Cashmere home with
his wife Vivien, who he met at
art school. She was also an art
teacher, for Avonside Girls’ High
School.
When asked what she thought
about his achievements he
laughed and said he didn’t know.
“We don’t talk about it much,
it’s just part of our lives.
“Sometimes I’ll grab her to
look at my work and get her to
tell me what she thinks is wrong
with it,” he said.
Bishop and Vivien have
three daughters and three
grandchildren, who have all
grown up reading his books.
On a couple of occasions
his grandchildren have made
suggestions for books they would
like to read, which Bishop has
carried out.
When his grandson George
was four he asked Bishop why
he hadn’t written a story about a
digger.
“He said ‘well I think you
FAMILY: Gavin Bishop with
his daughter Alexandra and
his book Chicken Licken
in 1984. PHOTO: CCL
should write a book about a
digger because I’d like to read it’
and I thought ‘oh okay’,” Bishop
said.
Soon after Bruiser was
published, a book about an
angry digger that becomes
caring and sensitive towards the
end of the story.
Bishop said when he first started
authoring children’s books, he
was keen to write his own stories
about things he wanted to write
about.
He has stories based off his
Māori whakapapa and has rewritten
old fairy tales. However,
in recent years, he has been
commissioned to write books by
his publishers, which he said has
been a new challenge.
His latest book is called E Hoa,
with te reo Māori and English
versions available. It is part of a
series for very young children,
which will be released on
Wednesday.
The book aims at showing
children how to talk about
feelings through a friendship
between a child and their dog.
Bishop tends to work on one
book at a time, preferring to
finish one concept before moving
onto the next.
He said his work can become
quite consuming and often has
a hard time switching off from
thinking about his books.
“I’m always working on it, it’s
hard to let it go.”
Of the 70-plus books Bishop
has created, several have
been translated into different
languages, mostly to other
European languages, but recently
he has had some translated into
Asian languages.
Bruiser has been translated
and sold in China, Taiwan
and Korea and another book
called Teddy One Eye, which is
a disguised biography about his
life seen through the eyes of his
teddy bear, has been translated
and sold in China.
“I don’t hear from anyone in
China who has read it but the
fact that it’s been reprinted a
couple of times means that it’s
obviously selling well enough,”
he said.
Bishop believes a country is
made up partly by its literature
and arts, something he thinks
New Zealanders tend to forget
– instead, getting carried away
with devotion to sport.
“I think in a hundred years
time people will still know who
Kiri Te Kanawa is and who Janet
Frame was and who Joy Cowley
was. They’ll still know those
people because their work will
still be speaking to the people in
the future.”
When asked if he thought he
would ever have more than 70
books published he admitted
he just started and “sort of kept
going”.
It never occurred to him how
successful he would be, although
it was “nice to be recognised”
through various awards, he said.
He has recently been named
a finalist in the Publishers
Association of New Zealand
2022 awards for best children’s
book, which will be announced
in September. He has previously
won two PANZ awards for
the best use of illustration in
a children’s book in 2000 and
2009.
When asked if retirement was
approaching at the ripe old age
of 76, he laughed and said he
wouldn’t know what to do with
himself if he stopped creating
books.
“At the moment I’m managing
to produce work that’s okay and
I’ll keep going while I’m doing
that. I mean it keeps me alive, it’s
challenging and it’s interesting
and I get to meet interesting
people,” he said.
“Writing books for our
children with stories about us is
really important.”

Pacific greetings. Tēnā koutou, tēnā
Haere Mai!
We have faced many wero this year
and find ourselves beginning Term 3
2022 with a sense of hope that the
weeks ahead will provide us with a
new and positive focus as we return
to kura.
The key focus for us all in Term 3
will be on attendance and reengaging
ākonga who have had time away from
kura due to COVID-19. Many whānau
are concerned that their ākonga have
missed a lot of school and are too far
behind to catch up. This is not so. Our
learning design focuses on personalised
learning and is adaptable as a result.
If ākonga are feeling anxious the best
starting place is a conversation with
their puna ako kaiako/teacher. Getting
started is the most important thing!
With the onset of winter the weather
is challenging and we ask that ākonga
pay attention to wearing their uniform
correctly, including the school jacket
for warmth. Uniforms can be ordered
online through the kura’s uniform
supplier and if required options for
payment can be arranged. Please
support us to be the kura of first
choice in Aranui and support our
ākonga to look their best at all times.
With the high levels of flu in our
community we encourage all ākonga
to wear a mask while at kura and will
supply these if needed. A reminder
that lunch is provided to ākonga each
day free of charge and ākonga are
encouraged to eat together to create
positive whānaungatanga and to build
our sense of belonging.
You may be aware that we are
currently calling for nominations for
the kura’s Board. If you, or someone
you know is keen to serve in this role
we would be very pleased to hear
from you. Please contact the kura
office if you would like to discuss how
you progress with a nomination. Did
I mention that we would love to hear
from you!
I wanted to take this opportunity
to assure whānau that our kura is a
very safe place for all ākonga to be.
It is cleaned daily and all kaimahi/
staff follow COVID-19 protocols for
keeping us all safe. It is important that
we acknowledge the anxiety in our
community due to the challenges
we currently face as a result of the
pandemic. Please reach out if you or
your whānau need support - we are
here to help. Please encourage ākonga
to be at kura, on time and ready to
learn. There is nothing more important
for them than mātauranga and an
understanding of their place in the
world.
Kōmanawa Update:
Matariki hunga, Matariki āhunga nui
In term 2 Kōmanawa years 1-6 looked at
the nine stars of Matariki and what each
star represents. We were very fortunate
to have Anne-Marie, a trained NASA
kaiako, come in to teach our students of
Takirau and Mutuwhenua.
We’ve also had the amazing crew of
Tūranga library members Toitu come in
and retell the pūrākau of Matariki to our
students.
Our Kōmanawa teina years 1-3 have
really focused on each star each week
through mahi toi (The arts), pūrakau
and waiata. Kātahi rā te kaupapa
whakahirahira ko tēnei!
We have started our He Reo Tūpu, He
Reo Ora classes, these are classes held
weekly for our whānau to have a safe
space to grow and use their reo. Last
week we
• started with karakia and our mihi
to Matariki who will shine above us
shortly.
• shared kai asking each other Kei te
pēhea koe?
• practised our flash pepeha and started
to learn about how to introduce our
kaumātua, mātua and siblings.
• Whaea Segia taught us a new game, a
bit of a tongue twister with actions.
• finished off the night learning all of our
school haka.
Ko tōku nui, tōku wehi, tōku
whakatiketike, tōku reo - My language is
my greatness, my inspiration, that which I
hold precious.
He Ahuru Mōwai has also started. This
is an afternoon wānanga run once a
week for our Kōmanawa ākonga and
whānau with, the aim is to support
ākonga and whānau wellbeing as they
come back into their school community
after a time of challenge. We provide
a programme that can support our
whānau with matauranga Māori,
promote physical health, and provide a
safe and supportive environment for our
tamariki outside of school hours.
Student Leadership GRIP Conference &
Y12 Emerging Leaders’ Conference
Our current Student Leadership
group had the opportunity to attend
the annual GRIP Student Leadership
Conference held at the Celebrations
Centre in Aranui. The GRIP Student
Leadership Conference is unique in that
it concentrates specifically on training
student leaders for their role as school
leaders. The style, topics, and content
of this conference all focus on what
the students can do right now. Our
student leaders left the conference with
a clear vision, a solid understanding and
dozens of ideas for their time as leaders
in our kura. They did an amazing job at
representing not only Haeata, but also
our community.
12 of our Y12 ākonga also had the
opportunity to attend the Y12 Emerging
Leaders’ Conference at Christs’ College.
This conference is hosted annually
& Y12’s from 30 kura from across
Canterbury & the South Island were
in attendance. During the day they
engaged in several workshops and had
the privilege of listening to the inspiring
stories of the Keynote speakers. The
purpose of this conference is to connect
ākonga with their peers, to build on
current leadership skills and instil self
belief in the next cohort of leaders.
Ko Haeata Tātou!
We are so proud of you.

8 Thursday July 28 2022
Linwood College to Te Aratai College
2022 has been a momentous year for our kura. At the start of Term 2
we returned to Aldwins Rd, our original school site of 68 years, and into
our completely rebuilt school and our new name, Te Aratai College.
We were off-site for just under three years
at the former Avonside GHS site, itself a
physically beautiful environment. Therefore,
we did not have to live in the middle of a major
building site with what would have been the
shifting temporary classrooms, the dust, mud
and noise. It also meant that a year came off
the building timeline.
Sustainable development along Ōtākaro.
We have responded to the clear community
voice for our rebuild, community consultation
which we deliberately gathered by gathered
by visiting local markets, supermarkets and
in our ongoing dialogue with whānau. Te
Aratai College has purpose-built general and
specialist facilities for classroom learning,
sports, and cultural pursuits. Our kura has both
the best of existing teaching practices, and
the positive practices that arise through the
personalisation of learning. We remain rigorous
about the difference between a positive change
for student success and what is a fad.
Festival of Nations held at Ōtākaro site.
Our architects, Architectus, also designed
Tūranga, the central library, so our rebuilt
school is of the same exceptional quality.
Likewise, Southbase, our construction
company, and RDT, our project managers, are
very experienced in significant projects which
centre on the moral imperative.
Of course, it is true that buildings alone do
not necessarily improve education. The
relationship with the teacher - he tāngata, he
tāngata, he tāngata - and the personalisation
of learning are the two key factors for this,
but there is also no doubt that new, purposebuilt
buildings and spaces that arise from
community values and priorities can contribute
hugely to these two factors.
Students learning in library of
Te Whare Matauranga.
Te Aratai College believes in a strengthsbased,
pathwayed curriculum starting with
each student’s strengths. Therefore, education
at our school is about seeing the whole person
– classroom learning, sport, music, drama
– and how these developmentally positive
experiences enrich students’ understanding
and nurture students’ focus by contextualising
their learning. In this way learning is
meaningful to the individual and strengthsbased.
PM visits for Te Aratai opening
Students learn best when who they are in
terms of language, culture and identity is
affirmed. Enhancing the mana and dignity
of the individual is at the heart of Te Aratai
College. We are pleased that our community
is valuing our school’s direction resulting in
significant roll-growth, over 60% in the last few
years. This has meant that Stage 2 of building
programme is beginning immediately to be
completed for the start of the 2024 school year
for a roll of 1200 students. Stage 3 follows:
1800 students, the size of the school in the
1980s.
Our school’s Year 7-13 curriculum centred
in our Te Aratai College campus creates
aspiration and community. We are very
fortunate to be home at Aldwins Rd.
With the spiralling
cost of food,
chicken wings are
an economical
and affordable
way to make a
meal
Pot-roast chicken wings
with tarragon gravy
Serves 4-6
Ingredients
1 tbsp butter
2kg chicken wings
1 garlic bulb
2 leeks
20 button mushrooms
2 carrots
2 tbsp olive oil
375ml dry white wine
500ml chicken stock
1 bunch tarragon
Directions
dish. Place chicken on top of
vegetables, drizzle with olive oil
and then pour the wine around
the chicken (not over the top).
Roast for 30min, then pour
the hot chicken stock around the
chicken. Reduce the oven to 180
deg C, roast for another 30 to
45min.
Lift out the chicken and
vegetables (keep covered and
warm) and strain the pan juices
into a saucepan. Simmer over
medium heat until reduced and
thickened to make a glossy
gravy.
Add the tarragon leaves and
check the seasoning just before
serving with the chicken and
vegetables.
Roasted cherry tomato
quiche with chickpea
crust
Serves 4-6
Ingredients
Chickpea crust:
¾ cup (135gm) dried chickpeas,
soaked in cold water overnight,
or 400gm tin cooked chickpeas,
rinsed, or 1 ½ cups cooked
chickpeas
¼ cup (35gm) fine brown rice
flour
2 tbsp tapioca flour or glutenfree
organic cornflour
½ tsp gluten-free baking powder
1 and ½ tbsp olive oil
Preheat the oven to 220 deg
C. Turn the wings under the
chicken and truss for roasting.
Rub the chicken with the butter
and whole garlic bulb, halved,
then season.
Place leeks (chopped into
3cm
263
pieces), carrots (chopped
x 180
into 3cm pieces), mushrooms
and more garlic in a roasting
½ tsp fine sea salt
Filling:
500gm cherry tomatoes, cut in
half
2 garlic cloves, finely chopped
1 tbsp finely chopped thyme
3 tbsp extra virgin olive oil
4 large free-range eggs
¾ cup (185ml) coconut, almond
or rice milk
½ cup firmly packed basil
leaves, finely shredded plus
extra, to serve
2 tsp dijon mustard
2 tbsp finely chopped chives
2 tbsp finely chopped flat-leaf
parsley
½ tsp fine sea salt
¼ tsp ground black pepper
Directions
Drain and rinse chickpeas.
Place in a saucepan and cover
with plenty of fresh cold water.
Bring to the boil, skimming off
any foam that rises to the surface.
Reduce to a simmer and cook for
25-35 minutes or until tender but
not falling apart. Drain well and
set aside to cool slightly. Preheat
oven to 180 deg C. Grease a 32 x
12 cm loose-bottom fluted tart tin
or a 23cm round loose-bottom
tart tin.
Arrange tomatoes cut-side-up
on an oven tray, scatter with garlic
and thyme, drizzle with olive
oil and season well with sea salt
and freshly ground black pepper.
Roast for 30min or until tender
and slightly dried.
To make the crust, pulse chickpeas
in a food processor until
finely ground (a few lumps are
okay). Transfer to a bowl and add
brown rice flour, tapioca flour
and baking powder. Mix thoroughly
with your hands, add oil
and salt and mix to a stiff dough.
Press evenly into the tin, lining
the base and sides and using the
back of a spoon to firmly press
down. Bake for 6-8 minutes to
lightly set. Scatter two-thirds of
the roast tomatoes and herbs over
the pastry base.
Whisk eggs, milk, basil, mustard,
herbs and seasoning and
pour into the pastry case. Bake
for 45-55min or until brown.
Empowering
girls to learn,
live and lead
Bridget Compton-Moen is head of St
Margaret’s College Junior School, which
caters for girls in Years 0-6.
Having joined SMC in January of
this year, and with more than 25 years’
teaching experience in New Zealand and
internationally, Bridget has been struck by
the warm, supportive and family focused
environment on campus.
Bridget says: “The girls flourish as
a result of the small class sizes and
individual classrooms, which enable our
specialist Junior School teachers to form
deep relationships with their students.
Our teachers really understand the girls’
specific learning needs, and are committed
to their wellbeing.
“This year we have implemented a
structured literacy approach for our
Year 4-6 students, having seen incredible
success with our Year 1-3 girls. This is
an approach based on years of scientific
research that really enables girls to crack
the code of reading from the get-go.”
“We are intent on getting the
core curriculum right, ensuring the
girls are engaged in their learning,
with a strong grasp on literacy and
numeracy and the skills they need to
succeed through Junior School and
into our Middle School.”
Another recent addition to the
Junior School is Friendology,
an award-winning wellbeing
programme focused on healthy
friendships. SMC is the only school
in New Zealand currently to offer
this programme, which has been
embedded throughout the Junior
School.
An extensive programme of
co-curricular activities, including
sports, performing arts, kapa haka, and
computational thinking, supports the girls
in making connections, while enabling
them to discover their passions. SMC
has a strong focus on holistic education,
designed to strengthen character, service
and leadership. As part of this a Junior
School Council, made up of Year 12-13
students, has responsibility for building
connections with their ‘little sisters’ and
acting as mentors.
“I’m thrilled to be working alongside our
incredible students and staff, and I look
forward to working with families who are
at the beginning of their Junior School
journey.” Bridget adds.
