CHASE ARTS FOR PUBLIC SPACES
AND LESLEY SMITH AS PEGGY KNIGHT
100 people were honoured to witness the incredible
portrayal of Peggy Knight, Special Operations Executive in
WW2, by Lesley Smith, Historian and curator of Tutbury
Castle. This was at an event organised by Chase Arts for
Public Spaces to raise funds to further enhance the site
where the National Miners’ Memorial stands at the NMA,
a project Lesley continues to generously support. Lesley
‘was’ Peggy – telling the story of her early childhood in
Paris, daughter of a Polish woman and an English soldier
who stayed in France after WW1, her move to the East
End of London, her training as a short hand typist and
work for the Electricity Board – before being asked “Do
you want to serve your country?” – all because she spoke
fluent French! Peggy’s answer was “Yes!”; she was sworn to
secrecy regarding what she might do, was trained – passing
every element with great skill – and after just one month
and at the age of 24 was parachuted behind enemy lines in
France where she was to work with the French Resistance.
Like many of her generation, at the end of the war, back in
Britain, she married, had children and rarely spoke about
her wartime exploits. She died in 2004; on her gravestone
are the words ‘Love Conquers All’.
Lesley portrayed Peggy’s bravery and vulnerability,
demonstrating the incredible research she had undertaken as
she knew intimately, it seemed, every minute detail of Peggy’s
life. So much of the story was emotional, perhaps none more
so than the time Lesley met Peggy’s son David who asked
her “Are you my Mom?” If there had been any dry eyes in
the house, there weren’t
then! Peggy was ultimately
decorated for her bravery
by the UK, USA and France –
an incredible achievement!
Thanks to the generosity of
everyone who attended and to those
who gave their time and talent to ensure the success of
the event, almost £1,300 was raised for which CHAPS is so
grateful.
There was added excitement when Lesley Smith invited
everyone to a fun day at Tutbury Castle on Saturday
10th September – her gift to all who have supported the
National Miners’ Memorial and in recognition of all who
worked in the UK coal industry. During the afternoon Lesley
will give presentations, accompanied by pictures, based
on her research into the lives of coal miners – particularly
women and children. CHAPS will be arranging market stalls
and entertainment – including Lea Hall Brass Band and
Ellise Locke Dance Group. Entrance is free but numbers are
required – please email info@chaseartsforpublicspaces.

Rainer Becker’s Seared
Tuna on a bed of spicy red
onions, with a chilli ponzu
sauce and fried garlic
Introduction
Germany-born Rainer Becker honed his craft in
Tokyo before making his name in London with the
celebrated Japanese restaurant Zuma.
I didn’t have the inspiration of a famous chef to become
one myself. I think when I first helped my mum, I probably
was six or seven years old. I didn’t know anything about cooking,
so the inspiration came really from the products.
I liked going in the garden, picking strawberries and cherries, and that
fascination went up another level when I discovered the incredible flavours and
tastes of Asia.
That’s why this spicy seared tuna recipe means so much to me – it combines so many intense yet
complementary flavours, and every time I cook this it transports me off to a different culture and
different place.
Ingredients
(serves 4)
For the tuna
• 800g tuna loin
• 500ml ponzu sauce
• 100g chilli daikon
• 80g spring onions – thinly
sliced
• 20g deep fried garlic
For the chilli braised red
onions
• 5 red onions
• 100ml soy sauce
• 100ml rice vinegar
• 100ml sake
• 60g caster sugar
• 12g ginger – finely
chopped
• 2 garlic cloves – thinly
chopped
• 1½ dried red chillies –
large (seeds removed)
Method
1. Cut the tuna into blocks,
season and sear in a very
hot pan with a little oil until
coloured. The tuna should be
raw apart from the outside
2-3mm. Place on a lined tray
and refrigerate.
For the onions, sweat off the
finely chopped garlic, ginger
and dried chillies for a few
moments, then add the sliced
red onions and cook till semitransparent.
2. Add the soy, sake, rice
vinegar and sugar and bring to
the boil, remove from the heat
and strain, then allow to cool
on trays. The onions should still
be al dente, spicy and a little
sweet.
3. Thinly slice the spring onions.
Fry off the sliced garlic till crisp
and golden brown and grate
the chilli daikon.
4. Place a pile of the spicy
onions in the centre of a salad
bowl, cut the tuna into slices
and roll up, then place six
rolled-up slices of tuna on the
onions in a pyramid shape.
Add a little chilli daikon to some
of the ponzu sauce and pour
over the tuna, garnish with the
fried garlic and sliced spring
onions. Finally, finish with a
small pile of extra chilli daikon.

THE REGENERATION OF CANNOCK TOWN CENTRE
Cannock Soroptimists are enjoying sharing
the Presidency and organisation of their year
with the theme “We’re all in it together”. This
month’s speaker meeting was organised by
and presided over by member Adrienne Hewitt,
who introduced Olivia Lyons, Leader of Cannock
Chase Council and herself a Soroptimist, who
gave a presentation about the Regeneration of
Cannock town centre.
Soroptimists were delighted by all that they saw and
heard; one of the things Olivia talked about was the
demolition of the multi-storey car park, which has
become an eyesore over the last few years. This area
will become central to the regeneration plans.

allows the Council the
opportunity to transform it
and reverse its decline.
Plans include a new cultural hub, cinema,
enhanced theatre, office space, cafe and restaurants
and improved connectivity to the town centre.
Olivia also talked about the former Rugeley power
station – there are exciting plans for that space - and
the wonderful success of the designer outlet. And
of course, she was also delighted to mention the
Commonwealth Games Mountain Bike event being
held in Cannock Chase, and how proud we all are to
have this in our area.

HEATH HAYES COMMUNITY FOOD
Heath Hayes Community Food was established
in May 2022 with the idea to help with everyday
shopping along with the rising cost of living.
HOW DOES IT WORK?
Heath Hayes Community Food works on a membership
basis, which costs £2 per year. Once a member, you are
able to visit the shop once a week.
Upon entry you will be asked for your membership card
and then given a basket, you will also be asked how
many bags you wish to purchase (1 bag per household
member). Bags are priced at £5 each. You will then be
able to choose the items that you’d like.
Some restrictions are in place on certain shelves and
what you can take from that shelf, for example, if you
take a tin of ham you can’t then take a tin of tuna (this
is to make it as fair as possible). If you are visiting with
other members of your household and have more than
one bag, this is discretionary depending on the items
you have taken. For example, if you have 4 bags you
can’t take 4 shampoo items.
The large boxes of cereal are also allocated to larger
families but if you wish to take one as a single person
then it must be part of your bag of shopping. Again this
is to keep it fair.
When you get to the till your items will be packed into
our bags, these bags are the same for everyone, if
there is more than can fit in one bag you can pay for a
second bag or put items back. We have done it this way
as when we were leaving shoppers to fill their own bag
unfortunately the minority were overfilling the bags and
taking all the higher valued products in one go.
WHO IS IT FOR?
Heath Hayes Community Food welcomes everyone to
join and become a member. With over 500 members
already, we are here to help you with the increasing cost
of living. The idea of the shop is to help with everyday
shopping, not to completely substitute the whole shop.
All we ask is to only take what you NEED not what you
WANT.

We have a lovely selection of fruit and vegetables which
are sometimes being overlooked due to people wanting

TIM SAUNDERS & FAMILY VISIT
Uppark in West Sussex
Dreams take time to achieve. It certainly did at Uppark,
the magnificent stately home on the Hampshire/West
Sussex borders. The idea came to mind back in 1590
but it did not actually become a reality for another
hundred years. Those of us thinking of adapting and
improving our homes can sympathise with this. After
all it does take a huge amount of thought to get a
design right. There is ornate architecture and as we
walk around the house we savour the atmosphere,
the high ceilings and wonderful furniture including
a grand piano. “Look at this,” says my wife Caroline,
pointing at the extravagant wood panelling that
surrounds a door leading from one room into
another. Of course each room has a grand fireplace,
a selection of sofas, massive paintings and large
windows looking out onto the gardens. Then there
are the ruffelled curtains, the bare floorboards and
large rugs. Look up and the ceilings have cornices
and mouldings unlike many of our homes today.
This is something totally different. This grand home
is crammed full of wonderful furniture. We’re sure
that we spy some that is Chinese. “Ah, no it isn’t,”
says volunteer guide Richard Jones. “Chinese design
was fashionable at the time and so it is highly likely
that the furniture was made in Europe to look like it
was Chinese.” Interesting. In fact Richard is a mine of
information. “Sir Harry Fetherstone went on a grand
tour of the world and brought back various pieces
that appealed to him. He had paintings produced,
too.” Richard talks about the house and how it was
a challenge to get water to the property saying that
it had to be mechanically harnessed from nearby
South Harting village. In 1954 Uppark was handed
to the National Trust by the Meade-Fetherstonhaugh
family, who still reside at Uppark today. In 1989 there
was a devastating fire, which resulted in a pioneering
conservation project to rework the damaged
interiors.
We visit the wine and beer cellars and a volunteer
talks to Henry (6) about the bell system. If a bell rang
a job had to be done. There must have been an army
of servants and we visit their quarters where their
clothes are hanging up. A regimented and orderly
routine would have been necessary to run such a
house. Very Downton Abbey.
