A warm welcome to our November & 

December edition of Cooper's Choice! 

We can't quite believe Christmas has 

rolled around again already, but here we 

are and we are well stocked with all your 

winter drinks needs! 

Before we get stuck into the good stuff, 

there is an important announcement 

to make. As of the end of 2022, we will 

no longer have an answerphone system 

available for leaving orders but good 

news is, we have something even better. 

Just incase you haven't heard, we now 

have an online ordering app. It's so 

simple to use and means you can place 

your orders with ease at any time of 

day. Have a look on page 4 for details. 

You're gonna love it! 

Amongst all the joy and festivity, we 

unfortunately have an energy crisis 

looming and many of you would have 

seen your bills soar already. We've 

gathered some information on the best 

ways you can cut these costs and save 

throughout the cold months, so please 

have a look from page 52 for some 

great tips. 

Our James Pettit wine experts have 

pulled together the most incredible

Well what a year it has been, and as equally challenging as both 

2020 and 2021. Whilst we have all been able to get back to some 

degree of normality the outside pressures and events beyond our 

control have really been sent to try us. Nevertheless with all our 

good intentions we have manged to keep supplies going to all our 

customers despite the supplier issues that have seemed to hit us 

each and every day. 

On behalf of the wider Dayla Family I want to express our sincere 

thanks for all your support over these difficult months and assure 

you that we look forward to continuing to improve our service 

levels as the supply chain allows. We are as passionate about our 

business as you all are of your own, and throughout 2023 we shall 

be introducing a number of new developments to make all our 

lives easier and more efficient. One thing for sure is that we shall 

continue to bring you an unrivaled range that is constantly changing 

to keep abreast of the moving drinks world.

the 1st lockdown. After a successful first launch 

they went a bit rogue and made about 9 beers in 

3 months, people kept wanting more so, they kept 

making them. They didn't quite intend to start a 

company and carry on after lockdown ended, but 

here we are. Craft beer was exploding and the time 

(and continues to do so) In their eyes it was getting

MERCATO · Named Mercato after the market 

where the distillery is based, this gin combines an array of

of which are grown on the distillery's hydroponic wall in the

HEJLO · A tremendous coffee liqueur from London's 

Jim and Tonic distillery! Produced in collaboration with the 

HEJ roastery in South London, who rustled up a bold cold 

brew coffee for the base, the clever addition of just a hint 

of fresh raspberries accentuates the fruity, rich coffee, and

CRAFT 

The UK beer scene is riding on the crest of a wave 

of a category that a decade ago we would never 

have thought would be so predominant: low and no 

alcohol. Even though low and no bevvies have not 

quite infiltrated every bar, club and pub and down this 

country it is now only a matter of time until these low 

alcohol, low calorie but full favour drinks become an 

absolute staple for us all. Here we’re going to look at 

the theory, benefits and range behind one of the fastest 

growing categories in our industry. We supply an array 

of low alcohol spirits and wines, but we’re going to 

focus on the beers real quick. 

HOW IS IT MADE? 

Manufacturers have two ways of 

reducing the alcohol content of their 

beer. They can remove alcohol from the 

finished product or make sure alcohol 

doesn't form during the brewing process. 

One of the most common methods is 

to heat the beer to boil away alcohol, 

which is quite a traditional method and 

removes any alcohol from a ‘fully leaded’ 

beer. As alcohol has a lower boiling point 

than water you are still left with some 

liquid as the base for a low alcohol or 

alcohol free beverage. Another technique 

to interfere with the brewing process to 

prevent the formation of alcohol during 

fermentation. 

The former method relies on an alcohol 

removal process that can include heat 

and membrane-based processes such as 

vacuum distillation, membrane filtration 

and reverse osmosis. Without getting 

into it too much, it can either involve 

boiling the beer to remove alcohol, 

filtering the beer or removing alcohol 

by using pressure to separate alcoholic 

components from the final liquid. 

Newer techniques focus on not adding 

anything that will cause alcohol to 

occur, rather than filtering or stripping. 

No Fermentation methods essentially 

do no add yeast to the wort (base of a 

beer, a sweet substance liquid that has 

created sugars after heating). Without 

the yeast eating away at the sugars the 

wort will not ferment. Simple, right? 

Well, yes, but it can also result in quite 

a sweet end product which isn’t always 

desirable. Limited fermentation works 

by altering the brewing process to limit 

or prevent any fermentation in the beer. 

Generally brewers create the wort to 

contain less fermentable sugars than in a 

normal recipe. By lowering the level of 

fermentable sugars the yeast can’t form 

high amounts of alcohol. 

Some brewers use a technique called 

Arrested Fermentation. During this, 

yeasts are restricted or removed before 

they can start producing alcohol in high 

amounts. This can be done by rapidly 

cooling down the fermenting beer to 

almost freezing temperatures. 

Finally, yeast suppliers have been 

working on bespoke and hybrid strains 

that cannot ferment certain sugars but 

still provide delicious aroma and taste to 

the final beer!

Well, after a very, very brief science lesson it’s probably best to dive 

into the benefits of alcohol free beer, right? Firstly, it’s (somewhat) 

healthy! It’s been argued that drinking now and low beers can 

reduce your risk of heart disease, help you sleep, aid bone growth 

and reduce your risk of getting illnesses like the common cold due to 

them being stuffed full of vitamins and minerals including folic acid, 

potassium, iron and zinc. In addition, for those of us who are watching 

the calories, then low alcohol is a perfect substitute for fully loaded 

beers. Alcohol contains 56 calories a unit. These are “empty” calories, 

because they provide no nutritional value. Swap a pint of 4.5% ABV 

beer for an equivalent 0% or 0.5% beer and you’ll be saving yourself 

up to 145 calories from alcohol alone. That’s about the same amount 

of calories as what you get in six teaspoons of sugar! 

Finally, the biggest benefit for me in my mind is that with all of the 

above being considered; it still allows us to go to the pub and not feel 

left out. Look, I love a lime and soda as much as the next guy, but it’s 

always nice to have a beer, right? Anything that keeps people going to 

the pub, even in a time when we are watching what we eat and drink 

and enjoying one of our greatest institutions is a win for me. 

Well, I guess the last thing for me to highlight is arguably the most 

important bit; now and low beers now taste bloody marvellous! With 

so many methods available to the brewers to create delicious low 

alcohol drinks they no longer have to trade off flavour for an alcohol 

free beer. Here are some of my favourites that are currently stocked all 

year round:

Saving On Your 

Energy Costs 

This Winter 

It's no secret that as the energy crisis looms, we need to start 

thinking about ways we can reduce our output to ensure a 

profitable winter. We've got some top tips from the energy experts 

on how we can go about this. 

A typical pub, bar or restaurant should be able to save between 

30-70% of its energy consumption costs depending upon the 

extent of energy saving measures already installed. 

This is equivalent to a £300-£700 yearly saving per £1000 of 

energy bills and, right now, every penny counts so now is the 

time to act. 

Whether it starts with simple measures you get your staff 

onboard with, or the way your cellar is setup, we've got all the 

information you will need on these next few pages... 

CELLAR INSULATION 

FACT: Only 40% of pub cellars have adequate insulation to prevent heat entering 

the cellar. 

DID YOU KNOW: A poorly insulated cellar can cost £200 – £300 more a year 

in electricity to cool. 

HOW DOES THIS APPLY TO ME: A simple survey of your cellar will show 

how well insulated it is. Look for holes to outside or other parts of the property, 

poorly fitting doors or beer drops, doors ajar or open for prolonged periods, thin or 

poorly insulated ceilings or walls, poorly insulated hot water or heating pipes. 

HOW DO I MAKE THE SAVING: Much of this can be done cheaply by a 

handyman. Sources of draughts or holes should be filled, draught exclusion and 

self- closing mechanisms fitted to doors, and insulation improved where possible. 

Depending on work, payback can be as little as 1 year. 

REMOVAL/SEGREGATION OF HEAT 

GENERATING EQUIPMENT 

FACT: Ice machines, fridges and freezers all produce heat. Locating these in the 

cellar causes the main cellar chiller to work harder costing you more in electricity 

costs. 38% of pub cellars have some form of heat producing equipment within them 

other than remote coolers. 

DID YOU KNOW: A freezer located in the cellar will cost around £110 more in 

cellar cooling costs per year. 

HOW DOES THIS APPLY TO ME: Check your cellar – does it contain the 

items listed above? Does the equipment in the cellar need to be there? 

HOW DO I MAKE THE SAVING: If space is available the best option is to move 

these items to another area. Alternatively investigate if it is possible to divide the 

cellar to have a warm and a chilled area. This can be done cheaply using plastic strip 

curtain but is best achieved by installing an insulated partition. If possible ventilation 

should be provided to the warm zone. 

EQUIPMENT MAINTENANCE 

FACT: 40% of pub landlords either do not maintain their cellar equipment or are 

unaware of the maintenance arrangements. 

DID YOU KNOW: Poorly maintained or broken cellar equipment not only results 

in inconsistent beer quality but also uses more energy. A poorly maintained or failing 

cellar chiller can use 25% more energy or cost £250 more per year to run. 

HOW DOES THIS APPLY TO ME: Do you know if your cellar equipment is 

maintained or how often it is checked? Does someone check or maintain your remote 

coolers? 

HOW DO I MAKE THE SAVING: Cellar equipment such as the chiller and 

remote coolers should be monitored or checked according to a regular planned preventative 

maintenance schedule.

CONSIDER LED LIGHTING 

LEDs now include LED candle, tube, strip, floodlights. Choose LED lights of a 

suitable light output colour for your surroundings, for example, day white 6000K 

LED lighting can be considered as quite harsh for indoors and best for toilets or 

circulation areas if used, so look at using 4000K natural white or 3000K warm white 

which gives a similar glow to halogen lighting for inside the venue. For exterior 

lighting, it would be prudent to use 60-90% energy saving LED flood lights and also 

consider installing movement occupancy sensor light switches for any store rooms 

and cellars. This way, lights can automatically switch off after approximately five 

minutes and only automatically switch on when they detect movement within five to 

eight metres of the sensors. 

THINK ABOUT HOW YOU 

HEAT YOUR WATER 

For kitchen porters, reschooling them on how they use hot water for washing 

up would make sense. In heating your water, try to avoid large cylinders with 

electric immersion heaters if you are unlikely to use that much water in one 

washing session and instead consider changing to a more efficient hot water 

heater which is small well insulated and may only heat 20 litres of water, 

which is often enough for washing, especially if you use glass washers. If there 

is a large hot water cylinder in use at the venue, ensure it is well insulated 

with around 150mm insulation jacket, or two standard 80mm insulation 

jackets. 

IDENTIFY YOUR ENERGY VAMPIRES 

Firstly, identify primary energy users, use plug appliance monitors for fridges, glass 

washers, ovens, dishwashers and beer coolers. The best way to reduce costs is to keep 

a record of your energy consumption, so it is helpful to conduct your own energy 

audit by taking a look at your previous energy bills or by using an online energy 

tracking tool. Once you have identified how much you spend, you can set goals and 

figure out which aspects of your venue you need to target to make savings. 

REMOVE OR SWITCH OFF 

UNNECESSARY CEILING FANS 

Don’t use extractor ventilation in the venue (unless it is required in a kitchen setting). 

Many pubs, bars and restaurants still have extractor fans fitted from the pre-smoking 

ban days and yet they are no longer needed. If you do have fans, consider how 

some of these could be removed to reduce unnecessary draughts and to avoid extra 

electricity costs. 

ADAPT YOUR HEATING AND 

INDOOR TEMPERATURE 

Where a central heating or air conditioning system is used, it makes sense to look 

at ways you might be able to control how long the heating is allowed to run prior to 

opening time. Once your venue begins filling up with guests, you are likely to need to 

use less heat to maintain a comfortable temperature indoors. A way to control this is 

to make sure you have a thermostat control behind the bar and all staff know how to 

monitor it and use it. For most places, 7-day programmed timers can be used on the 

heating to create different heating on/off times as you might use at home, but more 

heating will naturally be needed during winter weekdays or times when there is less 

human body heat. Some pubs use the method of making sure weekday heating can 

be turned off at around 8pm, while weekend heating may be able to turn off at 6pm, 

but having a play and adjusting the timer to suit your own venue and its busiest times 

to maintain a comfortable temperature for any visitors. 

LOOK FORWARDS TO LONG TERM 

SAVING METHODS TO MAKE 

LASTING CHANGES 

Your venue would also likely benefit from long term energy saving projects 

if you have any time to close to make these adaptations. This could mean 

anything from adding double glazing, solid wall insulation, floor insulation, 

replacement energy efficiency refrigeration or upgrading to energy-efficient 

glass washers. 

LOOK BEHIND YOU AS YOU LEAVE 

SPACES AND DON’T FORGET TO 

TURN THINGS OFF 

It may not seem possible, but there are lots of appliances that can be turned 

off that are often not and it might be worth your time to tally up which machines 

and pieces of kit these are so you can be a bit more savvy about which 

ones are draining energy sources without you realising. This means items such 

as blenders and microwaves that often remain on standby could be eating up 

your energy. 

INVOLVE YOUR TEAM AND MAKE 

IT A GROUP PROJECT 

Make this your mission or battle-cry for the industry that you love and soon 

everyone who works there will be on board with reducing the bill. In this 

case, too many cooks may not spoil the broth so much as make it more energy 

efficient and it all helps after all.

Champagne 

Gosset is the oldest wine house in Champagne. It was founded in Aÿ in 1584 by Pierre Gosset an alderman and 

wine-grower who made mostly red wines. At that time the region’s still wines competed for pride of place on the 

best tables of France with the wines of Beaune which were made from the same grape varieties as they are today. 

In the 18th century Gosset joined their neighbours and began to make the sparkling wines for the first time. It 

was at this time that the house adopted the unique antique flask-shaped bottle that is still used today. 

Gosset’s wines are characterised by their purity and expressiveness. Grapes come mainly from premier and 

grand cru vineyards surrounding Epernay and their winemaking style is characterised by minimal intervention, 

extended ageing and no malolactic fermentation. Pinot Noir and Chardonnay are the house’s focus. 

Since 1993 Gosset has been owned by the Renaud Cointreau family who have sought to protect the quality and

Tindall Vineyard are family owned and crafted in 

Marlborough, New Zealand. The region was put on the map 

in the late 1980s early 1990s with quality Sauvignon Blanc 

production. They are located on the Northern tip on the South 

Island with Blenheim as its capital. The 18-year-old vineyards 

are situated in Hammerichs Road, Rapaura. With the vineyard 

roots digging into alluvial deposits from the Wairau River. 

The region itself, almost single-handedly created this bone dry 

hugely aromatic tropical beast that is poured in most venues 

across the world. Tindall have a commitment to remain small 

producers using only grapes from their certified organic 

vineyard. This essentially means they rely a lot on nature to 

work its magic. There are no second labels, contract growers or

Despite its colour, gold tequila is rarely aged. In fact, you might call gold tequila an impostor, a marketing gimmick 

even. In many cases, gold tequila is the result of caramel colouring added to agave juices before fermentation to 

give the spirit a more “refined” look. 

Gold tequila is often used for shots. The smoother, slightly sweet taste (a result of additives or brief aging) is less 

harsh than fresh tequila. Because of the hint of sweetness, many bartenders will use gold tequila in margaritas to 

complement the mixed drinks fruity flavours.

El Sueño is made with 70% Blue Weber Agave and 30% Piloncillo, a locally sourced 

Mexican cane sugar. Categorised as a Premium Mixto Tequila, it’s a label we embrace 

and see as integral in the future of Tequila. More kind on Agave crop levels, El Sueño 

presents a great tasting quality Tequila using only natural, fresh ingredients. El Sueño 

Tequila Gold is rested for 2 months in bourbon barrels to give it a beautiful golden 

colour with a hint of sweet caramel and vanilla notes. 

SUSTAINABILITY FOCUS 

Produced in partnership with Casa Maestri Distillery in Jalisco, Mexico, using traditional 

methods to deliver exceptional quality and taste. Agave plants are harvested at 9 years, 

which allows them to fully mature, maintain crop levels and support the local wildlife 

ecosystem. Our Agave is then cooked in traditional hornos (clay ovens) and autoclaves, 

delivering a vibrant taste profile with a clean, freshness on the finish. Water is sourced 

from a natural volcanic spring at the distillery and all spent materials are composted, 

donated to local farmers for agriculture and used to cultivate new Agave plants.

Reposado means “rested” in Spanish, and reposados rest anywhere from two months to a year before they 

are bottled. Reposados take on the gold hue from the barrels in which they are aged. They are typically 

aged in oak or white oak barrels, and the type of barrel changes the flavour of each distillery’s tequila.

TEQUILA FLAVOURED 

Some things are better with age, and añejo fans would add tequila to that list: The expression, which translates 

to “old,” must be aged in an oak barrel for between one and three years. The barrel size is limited to 600 litres, 

maximizing interaction between the wood and the tequila and yielding a dark amber colour, a smooth mouthfeel, 

and a complex flavour with oak-forward notes of vanilla, caramel, baking spices, and dried fruit. Thanks to its richer 

flavours, añejo is typically consumed as a sipping tequila, but it also makes a good stand-in for whiskey in cocktails 

such as the Añejo Old Fashioned. 

The majority of these bottles can be described as tequila based liqueurs. They are fantastic to drink neat but also 

make a great base for cocktails. We love using the El Sueno range as a twist on your classic Margarita! 

Fun Fact: Cazcabel Honey is made with the finest tequila blessed by the mythical Mexican curador, Don Cazcabel, the 

'Snakeman' of the Jalisco mountains. With the fresh, earthy and dry Blanco at its heart, Cazcabel Honey adds a dose of sweet 

nectar to the blend. The honey is taken from sacred bees, blessed by Don Cazcabel who has never once been stung!

MEZCAL 

Mezcal is commonly referred to as tequila's smoky cousin. Not all mezcals are tequilas, but all tequilas are mezcals. 

Tequila is created from a unique kind of agave called blue weber agave. Mezcal, however, may be manufactured from a 

variety of agave plants, several of which are native to Oaxaca. Because of the piña's (heart of the plant) cooking method, 

mezcal has a stronger taste than tequila. Some tequilas are so silky and delicate that they can stand in for vodka in any 

drink. But mezcal is more distinct and is used in cocktails or as a substitute for a powerful spirit like whiskey.
