The cheapest new constructions currently listed by

NewHomeSource and Realtor.com in the Coeur d’Alene

region are $400,000, while most single-family homes are

going for as much as $700,000 or more.

Not only is the up-front cost going to be higher for new

builds compared to fixer-uppers, but homebuyers must

also remember that construction projects take time, and

delays can be expected. A project that might have been

scheduled to be completed in four to six months could

take nine to 12, adding additional expenses for the waiting

family and pushing back move-in dates.

Another factor is the cost of purchasing land, and the

consideration of where it is located. Most new builds are

in newer neighborhoods that often provide sidewalks

or trails for local walking and leisure activities, but they

are generally further from business hubs, causing longer

commutes to work, school and the grocery store.

A final consideration is the landscaping and outdoor

features that will likely be lacking with a new build. If

having mature trees in the neighborhood is something

you desire, then a new build might disappoint those

expectations.

Growing up, Jackie Suarez’s family lived in various places

uch like the human body, which is made up of

many parts working together for the health and

sustainability of the whole being, each room inside

a home has a unique purpose that adds to the

overall ambiance and livability of the space.

With the careful consideration of an interior

designer, the tasteful eye of a home decorator or even just some

simple DIY spirit, a house can be transformed into a home. A

living room can become a restful sanctuary, a kitchen can morph

into a studio for culinary creativity, and an entryway can engage

guests with an eye-catching color display.

One recent study from the University of Nebraska even suggests

that interior designers can positively impact the value of a home

when they are involved in the planning and construction process.

Whether you are preparing to build your dream home or looking

to add some flair to your current décor, here are a few new interior

design trends that experts believe will impress in 2023.

I. Nature-inspired spaces. The biophilic design trends that have

grown in popularity in recent years are here to stay. At least, that

is what interior designer Sarah Barnard says. “For many, nature

brings a sense of comfort and a feeling of connection to the world

beyond their homes,” Barnard told The Spruce. “After the stressors

of the last few years, comfort and connection are a priority for

many, and nature seems like a logical place to turn.”

Consider bringing the outdoors into your home this year by adding

some warm wood tones, like bamboo or rattan, and using fresh-cut

flowers and branches to add color.

II. Dark and textured countertops. If you are tired of those little

fingerprints and water spots constantly showing up on your shiny

countertops or just want to make a statement with your kitchen

décor, 2023 might be the year to jump on the textured countertop

bandwagon. Especially when paired with light-colored cabinets,

dark and textured countertops will make a kitchen pop and provide

an earthy and approachable look.

Also, switching to textured countertops is another great way to give

your kitchen a more natural look that will add a deeper sense of

serenity to your home.

III. Well-organized spaces. Possibly nothing in a home can be

more relaxing and satisfying than a space that is organized well.

That is why interior designers believe that there will be a greater

appreciation for home organization this year.

“What people have, they want to be well-organized,” design expert

Gena Kirk said in an article for The Spruce. “We’re seeing a lot less

desire for open shelving—that was a very big trend for a really long

time—and glass front doors. We’re seeing customers who want to

close things up and organize them well.”

Using popular TV shows like Netflix’s “Get Organized with The

Home Edit” as a foundation, homeowners should look for creative

ways to organize their spaces and reduce stress levels.

IV. Well-lit spaces. One of the most influential elements that can

completely change the way a room is perceived is lighting. In fact,

according to one roofing expert, the benefits of a well-lit home

include improved sleep, less eye strain, and enhanced mood.

During

the cold

winter

days,

when we’re not shoveling, of course, and

awaiting the warmer season, there is a lot of time

to think about spring—and our spring projects.

As the seasons change from winter to spring, the

ground begins to give way to early blooms, the

days get longer, and gradually it becomes warmer

and warmer. We unwrap ourselves from our cozy

winter corners, put away the winter coats, do a

little spring cleaning, and revamp our outdoor

spaces. It goes without saying that we also have

a bit of work to do to bring our yards back to

working order. Here are a few ideas you may

want to consider to make your home shine for all

your warm-weather activities (barbecue time!).

Spring is the time to think about those things

that need doing that you won’t have time for once

the weather really gets nice. You might use this

time to clean out the gutters, clean the inside of

your boat out, sweep your porch of debris, and

turn the dirt in your gardens. It’s also a good

time to revamp your outdoor seating, bring out

the umbrellas, scrub down the barbecue, and

clear the concrete of any excess leaves and dirt. It

wouldn’t hurt to pressure wash a bit to get off that

winter mud. This season calls for off with the old

and on with the new (to you)!

This early time just before true spring is also a

great time to dream of projects that you and your

family will enjoy in the summer, such as laying

gravel to serve as a foundation for an outdoor

fireplace. There’s so much to do and enjoy in

the sun, that most projects need some early

preparation if they’re going to get done in time

for you to enjoy them. It’s a perfect time to put

in that outdoor sauna you’ve been wanting to

get! Saunas are a great addition to the home as

it will serve your health all year long; the steam

off with the old and on with the new

is beneficial any time of the year. But if steam isn’t your thing, it may

be time to start clearing a space for that pool you’ve been dreaming

of. Other ideas for projects include a greenhouse, additional living

space, a porch roof, the addition of a smoker, an outdoor oven, a

simple drink bar, an outdoor eating space, or a really nice set of

hammocks. If you have kids, easy outdoor additions to the yard like

slack lines and rope swings make for hours of pure fun.

If you are an avid gardener, just before spring is the time to feed

your garden soil. Especially if you have raised garden beds, as these

soil plots tend to miss out on the nutrients that naturally regenerate

in the soil. Your yard and decorative flowers will benefit from the

spreading of fertilizer, and the grass (which often gets trampled

under the snow) will need additional grass seed. Your vegetable

garden will probably need a lot of leaves and debris cleaned out and

would benefit from a thin spread of rich compost and worms. For

healthy plants of all types, consider aerating the yard and turning

the garden dirt for air flow.



Bask in the

Sun.

Early spring, as we all know, is also a perfect time to plant.

One of the best things for the garden is planting a wide

array of plants. Insects such as dragonflies, ladybugs and

spiders (without webs) are attracted by the variety. They eat

caterpillars and aphids, while leaving your veggies alone. You

can encourage biodiversity by planting early seeds that thrive

in times of year where the sun is just shy of true warmth.

Examples include peas, hardy greens such as kale, spring

greens and spinach. Some delicious fruits and veggies will

have to overwinter a few seasons before you have a bountiful

harvest, such as strawberries or asparagus, but are worth

consideration for early spring planting. Later in the season,

when the peas are near the end of their cycle, you can plant

your green beans, squash, tomatoes, etc.; all the plants that

are harvested summer through fall. Planting early in the

garden allows for a longer growing season—as long as you

know what to plant!

Once the barbecue is cleaned out, the yard is prepped for a

bountiful planting season, and the early foundations are set

for this year’s summer adventure, it’s time to grab yourself

a mug of tea and sit out on the porch to bask in the early

sun (perhaps with a light sweater). After all that work, you

deserve it.

I

write, perhaps, from a lofty idealism in bringing two quite diverse examples of internationally

recognized artists to my writer’s desk. Both of these artists live in the Coeur

d’Alene/Spokane Valley corridor, but their mediums, though seemingly opposite by

intent and method, have achieved notoriety for both on an international scale. For this

reason, they’ve both gained my attention.

Hayden resident Alan Golub is a digital artist, using a collection of apps on his Android

phones (yes he has more than one) to manipulate sometimes extraordinary concepts into

pictorial storytelling.

Spokane resident Stan Miller, on the other hand, is a master watercolorist whose plein air

scenes and character portraits exceed the rendition capacities of most artists. Stan lives

on the eastern edge of the South Hill. Both men are known internationally, and both have

traveled with their art as the premise of the trip.

Very unalike in technique and artistic portrayal, their common ground is the creative verve

and accuracy in reporting what they see and bring out in their works.

Miller has been an artist and arts instructor throughout the entirety of his career. Golub,

however, did not realize the reality of his enormous gift until a little more than six years

ago following a massive stroke. By some divine hand, perhaps, he experienced the sudden

near-death episode just down the hallway of one of Washington state’s only full-time EMT

offices, meaning help was there within moments of his collapse. Recognizing his symptoms,

the EMT on duty immediately gave him the proper injection to stabilize his blood pressure.

Had it taken longer to get help, he would likely have died or been severely debilitated from

the stroke.

Stan Miller made his life-long career out of his insights and passion gained as a child. Alan

Golub, on the other hand, found his surprising career from the dregs of physical attack that

could have ended his life. Both artists have amplified and now enjoy the elevated audiences

of international attention.

As for Golub, he could do little with his left hand but cradle his Android cell phone, while discovering and plying the abundant

offerings of apps on his phone. This was a man who, until that curiously blessed but unfortunate day, had been a performing

mandolin player, and well known for it through the greater Coeur d’Alene/Spokane area. With his crippled left arm and hand,

playing with the apps and photographs available to him on his phone, this exercise at least took his mind off the circumstance,

then soon turned to an ambition, thanks to social media, that replaced his love of musical performance. He became a digital

story teller. Couple that with a genuine heart of appreciation for the truth and for the successes of less fortunate people, even

those who challenged corruption and crime, he quickly gained a place in the world of commentary.

Stan Miller found his passion as a child, and once a certain teacher in grade school taught him how to create a realistic curve in a

road (perspective), he was off and running enthusiastically into learning art. That love followed him like a faithful pet all the way

through high school, into college and then beyond. He became a teacher and tutor for his own classes and took that enterprise

out into the greater realm of the world at large. Today, Miller is one of the finest living watercolorists on the planet. He is certainly

recognized and very complete in his service of approach in that he willingly and patiently teaches others the secrets of some of his

best techniques.

Here’s my point in comparing these two excellent artists: The

urge to manifest creativity is a sometimes hidden imprint

found in the very soul of humanity. The true manifestation

of any artist, which requires both discipline and

perseverance, is proof of this assumption. Those who

do not choose, for one reason or another, to brave the

early stages become appreciators and collectors. They

are the people who admire the finer expressions of

imagination and enjoy the studies of experiential

knowledge in those that manifest it. The medium

is irrelevant. It doesn’t matter. It’s the result of

expression that counts in all realms of human

understanding of creative expression.

In the digital medium, the secret of Golub’s

creations and consequent, driving mastery

are the outcropping of his love for people,

especially those bound to truth and those

who have suffered in one way or another. He

is a compassionate reporter of soldiers, police

officers and firemen who have given their

lives for the call of duty. He has an uncommon

appreciation for those who are little or seldom

recognized, but he also knows instinctively how

to portray great achievements in the fortunate.

These two primary characteristics of Golub have

placed him in a realm of recognition all his own.

He’s not a self-promoter. His artwork speaks for

itself. His subjects are the best advertisers he could

possibly find.

Miller doesn’t need to promote either. His classic

attention to detail and the subtleties of expression in

human character, blended with his incredibly learned

and applied understandings of the color spectrum

and how to apply it, has placed him strongly into a

category of master. His work speaks for itself as well,

on all counts.

In both cases, the internet of today is partly

responsible for the spread of awareness both have

enjoyed. Because their works are carried from one

person to another through the eyes and minds of

fondness and appreciation of their talents. This is so

because great works of art, in any medium, surpass

the human tendency to brag about it. The bragging

takes place in the hearts and minds of others who love

what they are giving.

Golub’s talent for composition, reinforced by his innate

compassion for truth, have given him a keen sense of

observation. He is now recognized throughout the

North American continent, as in the more populated

areas of South America, Japan and Europe, where

famous personalities in the news caught his attention

only to manifest into poster-like representations that

quickly gained a place for Golub in the demanding

world of news commentary. It’s been said by some, “A

Golub poster is worth 10,000 words.”

For Miller, the story of global recognition is another

book, a different story. His rise into fame and

credibility stems from his learned studies and devoted

application to the task over time. Endowed as well with

a natural urge to teach, he has gained considerable

recognition. He never lost his childhood enthusiasm

for painting, which he applies productively through

the mediums of watercolor and tempera. His scenic

paintings are nothing less than true masterpieces,

there can be no doubt about that. But his character

studies are empathic interpretations that go way

beyond what you normally see. He nails character by

bringing out the inner thoughts and emotions hidden

in the subtleties of human expression. In my opinion,

I think he is much better than the at-large world has

yet discovered. Miller is a true master.

But then, there is an old adage in the literature of art:

The teacher grows beyond their students. I think this

truth is because the teacher develops a keen appetite

for analyzing what actually makes an exceptional end

result. Think about that: A great teacher has to excel

in knowledge and understanding in order to teach the

best of the students to rise to high standards. In the

process, the real growth takes place in the instructor.

They learn by teaching. The act of teaching produces

a finer eye and a more certain application of hand,

because the quest for true understanding has never

left them.

Stan Miller is a prime example of this. His excellent

paintings, both plein air and characterizations, are

already lasting evidence of his achievements.

should start at once and pursue with discipline. Because

the nature of art manifests most truly to those who

undertake it, in any form, with a devotion that never

well be resident in your desire to understand and manifest

it. How will you ever know if you don’t pursue it?

If you care to venture into the world of art as an artist, then do this: Open the windows to your heart, let your inner imagination fly out into the open

air of reality like a bird, a beautiful bird, for others to see. Soon you will find an audience, and that audience will grow so long as you pursue it, because

the appreciation of art exists in all of humanity. People who cannot quite do what you learned to achieve will follow you. They will become your fans

because you are manifesting concepts and images and sounds (for musicians) that they wish they could produce.

PRESENTS A FEAST FOR THE EARS

The opening of Music Conservatory of Sandpoint’s Little Carnegie Concert

Hall is already making a significant impact on the conservatory’s many music

ensembles, as well as providing ample space for early childhood programming

and the first dedicated rehearsal space for the Youth Orchestra and Musical Theater in

the school’s history.

Established in 2009, the conservatory has fulfilled its mission by expanding opportunities

for performing arts. MCS classes follow semester-based enrollment and a rich and

vibrant Summer Academy, which attracts students from the Inland Northwest and

beyond. MCS has two goals and aspirations: first, working to become a leading school

in the performing arts with international connections; second, to become a prototype

of creative placemaking and create awareness of the wonderful things the conservatory

and its students are capable of doing.

In 2019, after leasing the space at 110 Main Street on the corner of 2nd Avenue in

downtown Sandpoint since 2010, MCS acquired the building, making this historic

building has undergone a historic renovation, made possible by many generous

supporters. Little Carnegie is one such improvement.

Little Carnegie officially opened June 3 of 2022 with a grand gala opening and

concerts. The concert hall features excellent music and elevates student performance

opportunities, as its stage allows students, staff and invited musicians from across the

world the opportunity to share their music with the outside world. Here, performers are

up close to their audience in this unique, intimate setting.

For Karin Wedemeyer, director and co-founder of the Music Conservatory of Sandpoint,

Little Carnegie Concert Hall is the realization of a long-held vision of nurturing a vibrant

culture in Sandpoint. “We invite the community to participate, so that our students can

dream up their musical future in Little Carnegie,” she says. “The stage honors that we

are not just consumers. We are poets and painters, mathematicians and musicians, and

so much more.”

This past fall, MCS launched its Conservatory Concert Series. The series is comprised

of six to eight performances annually, showcasing the highest caliber in classical

performance by MCS faculty and guest artists. The inaugural Conservatory Concert

Series event kicked off on September 23 with 20th Century French Bijoux for Flute and

Piano, followed by an Evening in the Gardens of Spain on November 4. 2023 brings more

incredible performances for you to enjoy. MCS’s next event is scheduled for February 17,

with the classical-folk-modern Michel Palzewicz Trio. Their cello and violin’s classical

heritage collide with the folk elements of banjo and guitar while an

accompaniment of mixed hand percussion and contemporary steel pan

spark the embers of composition.

2022 will conclude with the annual Music Matters! Christmas Concert,

featuring MCS’s Youth Orchestra, Youth Choir, Percussion and Bell Choir

groups, on December 13; Amahl and the Night Visitors, a children’s

opera, December 17; and Stabat Mater, a Bel Canto opera program,

December 22.

There’s the Northern Idaho Flute Festival March 25 and March 26, 2023;

Fiddler on the Roof Jr. May 18 through 20; with many more concerts

and specialty shows including Spring Serenade (faculty scholarship

fundraiser), Student Recitals (including Honors Student Recital) and

Beauty is commonly described as a feature of

objects that makes these objects pleasurable

to perceive. We often do not associate

science with beauty; however, science is the

basis of aesthetic lasers, which have revolutionized

the aesthetic industry by providing the ability to treat

a vast variety of skin conditions. Laser treatments

use the power of high-intensity light in different

wavelengths that are tailored for treating specific

types of blemishes or skin conditions. Aesthetic

lasers are either ablative or non-ablative. Ablative

work on the surface of the skin, impacting the outer

layer of the skin only; non-ablative penetrates the

tissues beneath the skin without affecting the surface.

Each type of laser treats a specific condition. Below

we break down the most common aesthetic lasers,

their indications, and what to expect from treatment.

IPL

IPL lasers, or intense-pulsed light lasers, are designed

to create an intense pulse of light that is perfectly

suited for penetrating red and brown pigments

within the skin. They are a non-ablative laser, and

their primary use in aesthetics is for treating brown

patches such as liver spots, sun damage, and relieving

inflamed blood vessels beneath the skin’s surface.

The pigment rises to the surface, often referred to as

pilling, and exfoliates off in approximately a week.

Vascular lesions or inflamed blood vessels will fade

in intensity and appearance. IPL can be performed

on most areas of the body, including the face, arms,

neck, décolleté, and backs of hands. Sunscreen is required

post treatment, and best results are generally achieved in

three to five treatments. Pricing can vary depending upon

the size of the area you are treating and your geographical

location. On average, treatment for a full face varies between

$350 and $500 per treatment.

CO2

CO2 lasers, or carbon dioxide lasers, use very short-pulsed

light energy (ultra-pulsed) or continuous light beams

that are delivered in a scanning pattern for skin

resurfacing. The heat from the light energy

causes tissue damage that stimulates

collagen production. They are in

the ablative category of lasers

and are used for the treatment

of wrinkles, scars, acne,

melasma and sun damage.

Treatments are performed

with general anesthesia

in order to make the

client comfortable and

better able to tolerate

the procedure. The

skin will initially be

quite raw and may have

drainage immediately after laser treatment. It may also

look and feel as if it is severely sunburned. Health-care

professionals will cover the skin with a mask bandage for

a few days. The skin will typically heal completely in two

to four weeks, so it is important that you plan ahead before

scheduling this procedure and avoid treatment before a big

event or vacation. Pricing for CO2 laser ranges from $1,500

to $3,500 per treatment.

Diode

Diode lasers use semiconductor technology that produces

coherent projection of light in the visible to infrared range,

and are widely used for hair removal, which is one of the

most popular non-surgical aesthetic procedures worldwide.

The lasers damage the chromophores of the hair follicle

by selectively heating them while leaving surrounding

tissue unharmed. Laser hair removal targets the melanin

in the hair follicles, which results in the disruption of hair

growth and regeneration. You may experience some mild

discomfort during the treatment that quickly subsides.

There is no downtime associated with the treatment. Due

to the laser targeting melanin, it is necessary for the skin to

not have a tan, as it is unable to differentiate between the

melanin from the tan and the hair follicle. Six treatments are

needed on average to achieve complete removal of the hair.

YAG lasers use a neodymium-doped yttrium

veins, varicose veins, birthmarks, facial veins,

and hemangioma tumors. They can also be used

for hair removal and tattoo removal. Downtime

after treatment can be as long as a week for skin

to return to normal. Cost of YAG laser treatments

range from $250 to $1,200, with an average of

$675 per treatment. Cost is dependent upon the

area and what you are attempting to accomplish.

For tattoo removal, a series of treatments are

needed to have complete removal.

throughout the changes, they’ve

“In the last five years, the level of

professionalism with the barkeeps

and their skill has grown, while

Mark Terry, general manager.

when you step foot in the bar,

whether it’s for a drink during

friends to celebrate and listen to

live music.”

At 219, they pride themselves in

going out of their way to know

their guests as people, not just

customers. “Our staff members

are the best! They are dedicated to

our customers and to being true

professionals,” affirms Mel Dick,

owner. “You can’t be in business

since 1937 without great staff and

great customers.”

The customers of 219 represent

everything the Sandpoint

community is about: old-timers,

newcomers, visitors, and from all

walks of life, according to Mel.

“They are looking for a place to

chill, spend time with friends,

listen and dance to great music,

watch a game, or just sanctuary

from the daily grind of life.”

While the bar is stocked with all

the familiar whiskeys, vodkas,

gins and tequilas, “you never

know when we will have that

special, seemingly impossible to

find, bottle of great aged whiskey

on hand,” smiles Mel, who also

mentions that they have recently

started to focus on special,

intimate off-site events and parties

like whiskey tastings and oldschool

cocktails from the 1800s to

the 1970s.

“The feel of community,

connection and comfort is

important,” affirms Mark. “I hope

customers—new and old—feel

that. Every person is important

to us.”

Withstanding the Challenges

of the Restaurant Industry

Viljo and Autumn Basso continue to impress diners at

Syringa and Bluebird

S

yringa Japanese Café + Sushi Bar has been a

favorite among locals since opening in 2006.

Owners Viljo and Autumn Basso couldn’t be

prouder of what they’ve built, and accomplished, since

first opening their doors in that small, intimate space on

Fourth Street.

With a flair for originality and excellence, Syringa,

located in Coeur d’Alene’s midtown, has established

itself as a destination for both locals and visitors. Always

delivering the best in sushi and modern American

cuisine, they’ve set the bar high and continue to deliver.

A decade later, the couple was ready for their next

endeavor—The Bluebird - A Midtown Eatery. Inspired

by the couple’s culinary travels and world adventures,

the menu is seasonal as much as possible, with weekly

specials, allowing diners to try something new each time

they visit. The menu includes an array of items including

a rotating scallop special. In addition, weekends always

offer dinner specials. They have an excellent wine list

(you’ll want to join their monthly wine club), and a

great selection of beer, ciders and sours.

After the opportunity presented itself to relocate Syringa

to a much larger location just north on Fourth Street

in 2019, the Bassos seized it and have continued to

flourish. And with Syringa’s original space now empty,

the couple decided to add a third restaurant—Monarch

Ramen + Noodle House. After three successful years, in

June of 2022, they were forced to close their doors, as

they were unable to renew their lease once new owners

took over the building.

But the Bassos remain optimistic. “We’ve evolved and

have seen so many changes in the 16 years we’ve been in

business. We are just so grateful that our community has

continued to support our restaurants,” shares Autumn.

“Being in business this long, we’ve seen families grow

up, we have created so many friendships with our


customers. None of this could have been done without our

employees. We are incredibly grateful to our employees who

have stuck with us.”

As all restaurants in the Inland Northwest have experienced

over the past two-plus years, not only as a result of the

pandemic but the rising costs of living in this beautiful place,

they have found it difficult to maintain a full staff.

“For Syringa, it’s business as usual,” says Autumn, “though we

have had a really hard time finding kitchen help. As soon as

we can get more staff, we have plans to expand a little. In the

meantime, we are just trying to keep up with being busy.”

Bluebird has experienced the same issues as its sister restaurant.

Due to lack of staff, they have closed for lunch for the time

being. On the bright side, they have revamped their menu

and have some delicious new dinner options they’re excited

for diners to try. “We are also slowly rolling out Saturday

brunches, which kicked off in November. “We won’t have them

every Saturday to start, but we’ll be announcing dates on our

Instagram and Facebook pages, so be sure to follow those.”

Over the years, the Bassos have been dedicated to serving

their guests the best in cuisine. They are proud to have been

given the opportunity to provide each guest a unique—and

delicious—meal, no matter where they choose to take a seat.

It was 1999 when Joe Hamilton, with just one employee, opened

Pilgrim’s Market in Coeur d’Alene. The goal was to invest in the

local community, with a focus on providing healthy foods and

supplements. Today, Pilgrim’s Market has flourished to now occupy an

entire city block, with 120 staff members.

In addition to the plethora of fresh produce and grocery items,

Pilgrim’s produces its own line of fermented foods—The Cultured

Mama. “Fermented foods are the traditional way to get probiotics; a

very healthy tradition that’s been lost in the modern American diet,”

shares Joe. What started with just sauerkraut and a fermented cashew

vegetable dip has grown to offer more than 60 different items. They

recently added Fermented Cashew Cheesecake to the list, with seasonal

offerings utilizing raspberries and strawberries grown in Pilgrim’s

organic garden, and huckleberries later in the summer and fall months.

Joe recently acquired the vacuum store next door to Pilgrim’s and plans

on moving their Cultured Mama fermented foods production space

into that building, which sits at approximately 1,300 square feet.

Making hundreds of healthy and tasty food items from scratch every

day, Pilgrim’s provides an experience and product selection not found

anywhere else. They are currently expanding the bakery and bringing

in new equipment, with a focus to improve the quality of their breads

and expand products, making laminated dough for more fresh-baked

options like croissants, pastries and danishes.

The one-of-a-kind deli is filled with the healthiest foods available in

town. “The reality is it is prepared food that is fresh, fast and healthy,

and very affordable for the quality of food we’re producing,” Joe affirms.

With a hot bar and organic salad bar, and pre-made grab-and-go meals,

enjoy items like the Keto Steak Salad, Salmon Rice Bowl, and Tarragon

Chicken Salad. And there’s more, with a grill where items are made

fresh to order. If you’re in the mood for a Yak Burger, Veggie Bean

Burger or Chicken Chipotle Sandwich, this is the place to go.

Behind the store you’ll find Pilgrim’s organic urban farm, which

produces thousands of pounds of farm-fresh foods each year. “Anytime

a customer sees the GRH (Grown Right Here) logo, they will know that

it was grown, or made with items grown, in our organic farm,” says Joe.

Don’t miss demos with Lorri five days a week, allowing customers to

try Pilgrim’s house-made items and hand-picked products. “We try to

demo foods that customers may not have purchased yet to expose them

to new flavors, new brands,” smiles Joe.

For the past 23 years, Pilgrim’s Market has continually expanded its

space and offerings to keep up with the needs of the community. A

new website recently launched as an additional resource, with research

tools for finding recipes, natural support for various conditions, and so

Laura and Seth Carey have much to be thankful for. The

husband-and-wife duo have continued to do what they love

for more than two decades—creating community around

food through Versalia Pizza.

What started as a mobile oven in 2009 turned into a brick-and

mortar in Spokane’s Kendall Yards in 2014. Maintaining a strong,

loyal following as a place for the community to not just grab a bite

to eat but to gather and enjoy one another’s company, the Careys

were eager to move forward on a second location when the right

opportunity presented itself. And in January of 2022, they expanded

into Liberty Lake, opening their second Versalia Pizza location in

the River District next to Orchard Park.

“We’ve been blessed to be able to bring what we’ve established and

fostered in Kendall Yards to Liberty Lake,” shares Laura. “And since

we opened our doors, the neighborhood has been exceptionally

welcoming of us.”

A little history for those who don’t know: Liberty Lake is where

their mobile oven originally got its start at the farmers market.


On the menu, of course, are their flavorful thin-crust pizzas (with

vegetarian and gluten-free options available). Guests can also choose

from a selection of creative salads, appetizers and desserts, and beer

and wine, as well as a variety of seasonal cocktails perfect to enjoy in

the cozy dining room.

Shortly after opening, they introduced their Mug Club, which quickly

gained in popularity. The purpose of the Mug Club was the hope it

too would foster community building within the space. To Laura and

Seth’s surprise, it has been a huge success, selling out of mugs within

the first few days of introducing it! They recently held their first Mug

Club Members Party.

They currently have 50 members participating in their Mug Club!

Members pay an annual fee to get in, and membership includes:

24-ounce beers for the price of a 16-ounce, 25 percent off Versalia

merchandise, an invite to the annual Mug Club party, and for every 10

Options abundant across Spokane

Flashback 15 to 20 years, and those looking to visit a craft brewery

in the greater Spokane/Coeur d’Alene area could easily count

their options on a single hand. The same rang true with regards

to wineries, where less than a dozen were open for tastings. Today, it’s

an entirely different story. Thanks to the adventurous spirit of some

savvy entrepreneurs, consumer demand, and our proximity to some of

the best barley-, hop- and grape-growing regions in the country, the

Inland Northwest is ripe with choices in which to please your palate.

The increase in options has also challenged brewers and winemakers to

continually innovate and improve, something we all benefit from with

better vintages and complex ales.

One of the original breweries in the area, Northern Lights underwent

an overhaul when it rebranded to No-Li, and is now a dominant brand

across the entire Northwest. Flagship beers like the Wrecking Ball Stout

and Born & Raised IPA have won awards on an international level. No-

Li recently took over the former Dry Fly Distilling space and created a

massive Bier Hall featuring long tables and a huge screen. It’s the perfect

place to watch a football game, and its proximity to the Gonzaga campus

means it’s always packed when a Bulldog game is on.

Perry Street Brewing is a cornerstone in the revitalized South Perry

neighborhood. Their flagship IPA won a gold medal at the Great

American Beer Festival, and brewers continue to experiment with new

hop strains. They also have a tasty stout and Scotch ale for those cold

winter days and cool spring nights.

Moving into downtown, Iron Goat Brewing has also seen its presence

grow. From an original tiny location few can remember to its beautiful

repurposed brick building on the west end of town, it’s another Spokane

staple. Traditional ales are found here, but you can also get unique sours

and saisons.

Even if you think you’ve found your favorite brewery or

wine club, don’t be afraid to step out and visit a few more

of the wonderful options so close to home.

Just a stone’s throw from Iron Goat is a newer brewhouse that’s

already commanded a loyal following. Brickwest occupies a large

indoor/outdoor space that includes a grass lawn where kids can run

off some steam. If it’s too cold, there is plenty of seating inside as well

as a huge projector screen. Fan favorites include the Brick by Brick

IPA, Lucky Penny Marzen, and the Sweet Success Brown Ale.

Moving across the state line, beer fans will find plenty more tasty

options in both Coeur d’Alene and Sandpoint. A local favorite in

Coeur d’Alene is Daft Badger, which is tucked in a neighborhood

just a few blocks from the Fourth Street corridor. While the beer

alone is worth the visit, the food might be its equal with a new special

rolled out every Wednesday. Further north in Hayden you’ll come

across Mad Bomber, created by a pair of veterans whose specialty

was disarming bombs and bonding over beers.

In Sandpoint, 219 Lounge is a must stop for their fantastic cocktails

and just shy of two dozen beers on tap. Featuring beers from No-Li of

Spokane, Paragon Brewing out of Coeur d'Alene, Radio Brewing out

of Kellogg, and many more, it’s a great place to sample and possibly

find your new favorite local, or maybe not so local, brew.

When it comes to wine, there are also some great options in

North Idaho. Pend d’Oreille Winery is a favorite both for its tasty

offerings and intimate space—which features live music every

week. The Sandpoint winery features both reds and white as well

as the occasional sweets and dessert wines. Coeur d’Alene Cellars

is also home to some wonderful vintages and several experienced

winemakers. In downtown Coeur d’Alene you’ll find Castaway

Cellars, a boutique winery that offers small plates with three to six

wine tastings.

Back in Washington you’ll find a pair of wonderful Spokane

wineries not long after crossing the border. Latah Creek Wine

Cellars has been family owned and operated since day one. Most

bottles are in the $15 to $30 range, and you’ll find one of the

larger selections of whites in the region. Sitting high upon a bluff

overlooking the valley, it’s hard not to notice Arbor Crest Wine

Cellars. The grounds are especially spectacular in summertime,

but the large tasting room can be just as comfortable during the

colder months. Arbor Crest offers several collections as well as

premium labels. Be sure to stop in for their Fireside Dinner and Music

Series that continues through spring.

To the South of town, you’ll find Winescape, opened by a pair of

retired WSU professors with a love of wine. Situated in Glenrose, the

winery has wonderful views and a relaxed environment. Red wines

are the star here with several Cabernet Sauvignon offerings, as well

as Bordeaux-style blends. In downtown, you will now find almost

too many to mention. Maryhill operates a tasting room in Kendall

Yards, and Barrister, Helix, Cougar Crest and Tempus are all within

walking distance of each other.

We’d be remiss not to mention Walla Walla, the Mecca when it comes

to Washington wine. More than 120 wineries are found here, and if

you haven’t spent a weekend here yet, go for it!

The craft beer and wine scene should continue to grow and evolve as

more and more people come to call our region home. It’s wonderful

knowing that the fruit and grains utilized by the bulk of the industry

come from regional farmers just a short drive away. Even if you think

you’ve found your favorite brewery or wine club, don’t be afraid to step

out and visit a few more of the wonderful options so close to home.

Mike Conway has been in the business of wine since 1972 (that’s half

a century!). After a short stint in the Air Force, he would go on

to work for some big wineries in California in their microbiology

department. One thing led to another, and he found his way to Washington

state in 1980, alongside his wife Ellena, and became the first winemaker in

Spokane and went on to establish the 35th winery in the state in 1982.

On the day Mike and Ellena made the decision to start Latah Creek Wine

Cellars, they found out they were pregnant with their daughter Natalie. “So

really, the winery and I are both their babies,” smiles Natalie Barnes.

Fast forward 22 years to 2004, when Natalie decided to change her focus

in college from physical therapy to winemaking. When the harvest rolled

around that year, Mike showed Natalie a behind-the-scenes look at

winemaking. “I had helped in the past with pumping wine from one tank to

the next, or bottling, but I didn’t partake in the nitty gritty of it. For the 2004

vintage, he showed me the differences in the yeast we use for fermentation,

tasting the juice as it ferments and the subtle flavors you can pick up on, and

so much more. Just a few months later, I was hooked. I had fallen in love with

the art of winemaking.”


Natalie graduated college the following spring and has been working

full time winemaking with her dad ever since, making them the

first father/daughter winemaking team in the state; the 2022 harvest

marked her 18th year as a winemaker.

“I didn’t realize, until recently, the special bond you get when working

so closely with your parents,” shares Natalie. “There is a nearness

you experience when working alongside them. The lovingness they

raised you with becomes integrated into your workday. The thought

of working alone amongst the tanks and not having my buddy there

to talk with is sad, so I cherish every moment I’ve got with him! And

my mom too!”

When it comes to the future of Latah Creek Wine Cellars, it

holds much the same, according to Natalie: “We will continue to

make delicious award-winning wines at affordable prices. We will

continue to make small lots of Reserve Reds, striving to educate

fellow wine lovers on different varietals they may not have heard of.

We will continue to treat all of our customers like family, because

that’s what they are. And my dad and I will continue to make wine

together until he chooses to step away—which I don’t think he’ll

ever do. He started this winery, nurtured it, and watched it grow to

40 years old!”

As she looks back on the years working side by side with her father,

Natalie reflects on the important lessons he has taught her that she

will always carry with her. “To let the fruit speak for itself. Don’t

cover up the natural flavors of the grapes, as that is what makes the

wine spectacular. Don’t be suckered into trends, as they come and

go—but you need to remain. And lastly, whether you get recognition

or not, know that you make incredible wines that people love—use

that to fuel your passion.”

In the meantime, Natalie’s younger daughter Paige has grown more

interested in the family business—especially after a recent trip to

Italy, exploring generations-old family wineries. “It really stuck with

her, as she listened intently to each family’s story, what a family

business means and the legacy that’s passed on from generation to

generation,” shares Natalie. “I spent this summer with her by my

side watching me filter, bottle, clean, and much more. It made my

heart soar.”

WHERE TO EAT

Carlsbad has an eclectic dining scene, and some of the best

restaurants can be found in Carlsbad Village. Take a food

tour with Carlsbad Food Tours for a detailed overview of

the history of the village and try a variety of tasty treats on

this walking tour. The company’s website is also a wealth

of information about where to dine outside of the village.

Campfire is a unique restaurant situated in an old Quonset

Hut that serves up food cooked over a fire. The concept is

fun, and the dining room is boisterous. Chef Eric Bost’s

menu utilizes the best of local California ingredients and

is seasonal based on what is fresh. The service is fantastic,

and the servers are well versed on the menu and concept

of each dish. The menu has a whole section highlighting

just vegetables. Make sure to try the broccoli. This dish has

remained on the menu exactly as it first appeared due to its

popularity. The broccoli is roasted to a nice crispy outside

with chermoula, lime and peanut. It lives up to the hype.

Eating at a butcher shop may seem a little strange, but this

local favorite will change your mind. “Big John” Haedrich,

the founder of Tip Top Meats, defected from East Germany

and eventually made his way to California. Well versed in

German meats and sausages, he eventually added a market

and restaurant to his butcher shop. Order at the counter,

then enjoy fresh cooked German specialties such as

Sauerbraten, Rouladen, deli meats and German sausages.

The lunch menu has such a large variety of sandwiches

and entrees that it is hard to decide. You can order takeout

meals, which are perfect to reheat at your hotel. Well

worth a stop.

Guests will find 13 independent local food vendors inside

the Windmill Food Hall. Most small vendors can’t afford

a liquor license, and what makes this food hall unique

is a full-service bar with craft bar and creative cocktails.

So, order your favorite meal from your table with the

unique ordering system, which allows you to order from

multiple restaurants on one ticket. Once it is ready, pick

it up from the vendor. This place has a cool vibe with live

entertainment and events monthly. There are also board

games available to play at your table.

Make the Leo Carrillo Ranch Historical Park top on your list of things to

do while in Carlsbad. Leo Carrillo was a famous actor who appeared in

over 90 movies. His greatest fame came later in life on television when he

played Pancho on the “Cisco Kid” in 156 episodes. Living and working

in Hollywood, he wanted a retreat with the added goal of helping to

preserve the ranch lifestyle from the early days of California. His ranch

is now a historical site and a wonderful place to visit. Make sure to bring

a picnic lunch to enjoy the property. There is a self-guided tour of the

property and trails that connect to other trails in the area if you would

like a longer hike. The best place to start is at Stop 12 on the walking

tour at the Old Hay Barn. This serves as the visitors’ center, and guests

can request to see the movie about Leo Carrillo’s life. The movie is truly

fascinating and makes a better start to the tour. Bring water and sturdy

shoes. The property is open to visit, and the historic buildings are open

when docents are available, so call before heading there.

Mission San Luis Rey is known as “King of the Missions.” It was founded

in 1798 and was named after St. Louis IX, King of France in the 13th

century. Prior to the Spanish occupation, the Luiseño people inhabited

the region. The mission now sits on 56 acres and is a great destination

to explore some of the early history of California. Start your tour at the

Museum with a self-guided map that will take you through the historic

INGREDIENTS:

FOR THE SALAD

(measure with your heart):

butternut squash or sweet potato

chopped apple

mixed greens or kale

craisins

pumpkin seeds

chickpeas

FOR THE APPLE CIDER VINEGAR SALAD

DRESSING:

1 small shallot - peeled and quartered

1/3 cup extra virgin olive oil

1/4 cup apple cider vinegar

2 tsp. dijon mustard

2 tsp. honey

1/2 tsp. salt

1/4 tsp. pepper

METHOD:

1. Preheat oven to 425°F and line a baking sheet with parchment paper.

2. Peel butternut squash. Cut in half. Discard the seeds by by scooping them out.

Cut squash into cubes. Place on half of the baking sheet.

3. Dry and rinse your chickpeas. Spread them on a kitchen towel and pat dry.

(They must be dry before drizzling with olive oil or they won’t crisp up in the

oven.) Place on other half of the baking sheet. Toss squash and chickpeans with

olive oil and a generous amount of salt and pepper. Bake for 35 minutes, until

squash is tender and chickpeas are crisp.

4. While that is cooking, it’s time to prepare your dressing. Throw all the

ingredients into a blender, or blend with an immersion blender in a small bowl,

until smooth. You can store the dressing up to one week if you have leftovers.

5. Once your squash and chickpeas are done roasting, throw all your ingredients

into a large salad bowl, top with your homemade dressing, and enjoy!

1 bunch kale, roughly chopped

1 large lemon, peeled and quartered

METHOD:

1. Wash and prep veggies.

2. Juice in order listed.

3. Strain through a sieve if you don’t like pulp

(optional).

INGREDIENTS:

1 chocolate cake mix

1 package chocolate instant pudding

3/4 cup sour cream

3/4 cup mayo

1/3 cup chocolate chips

1/2 cup water

1/2 cup oil

3 tbsp. maraschino cherry juice

1 tsp. almond extract

4 eggs

FOR THE FROSTING:

1/2 cup of butter, room temperature

3 cups of powdered sugar

1/4 cup of whole milk

1 tsp. vanilla extract

1/3 cup semi-sweet chocolate chips

METHOD:

1. Preheat the oven to 350°F.

2. Grease your bundt pan with whatever method you choose.

3. Bake for 50 to 55 minutes. Check for readiness with a tooth pick; if it comes

out clean it’s done.

4. While cake is baking, prepare your icing.

5. In a medium bowl, and using an electric hand mixer, beat the butter until

light and smooth. Beat in the powdered sugar, milk and vanilla until smooth and

creamy.

6. Place the chocolate chips in a small bowl and place over a small pan of barely

simmering water. Heat, stirring occasionally, until the chocolate is melted and

smooth, about 2 minutes. Remove the pan from the heat. Add the melted

chocolate to the vanilla frosting and stir until smooth.

7. Once your cake is done, let cool to room temperature.

8. Aftering cooling, flip your bundt onto your platter. Pour icing over, and enjoy!

Shakshuka

Wow your Sunday brunch guests with this fun and easy dish, though Shakshuka can work

for any meal of the day. This warm and satisfying dish is perfect for the whole family.

INGREDIENTS:

2 tbsp. olive oil

1 medium onion, diced

1 red bell pepper, seeded and

diced

4 garlic cloves, finely chopped

2 tsp. paprika

1 tsp. cumin

¼ tsp. chili powder

1 28-ounce can whole peeled

tomatoes

6 large eggs

salt and pepper, to taste

1 small bunch fresh cilantro,

chopped

1 small bunch fresh parsley,

chopped

METHOD:

1. Heat olive oil in a large sauté pan on medium heat. Add the chopped bell

pepper and onion. Cook for 5 minutes or until the onion becomes translucent.

2. Add garlic and spices, and cook an additional minute.

3. Pour the can of tomatoes (including the juice) into the pan, breaking down

the tomatoes using a large spoon. Season with salt and pepper, and bring the

sauce to a simmer.

4. Using your large spoon, make small wells in the sauce and crack an egg into

each well. Cover the pan and cook for 5 to 8 minutes, or until the eggs are done

to your liking.

5. Garnish with chopped cilantro and parsley.

Tip: Crumbled feta or goat cheese on top is a

delicious addition. Traditionally it's served with pita,

but you can also serve it with slices of avocado.
