When my now-husband first professed those three words, we were listening to sappy songs while watching the sunset and enjoying vanilla cones from the Golden Arches. Of course, I echoed his sentiments, and the rest is history. I’ll forever associate Mickey D’s soft serve with our love story’s butterfly-filled beginnings. But just as our partnership has evolved over the years, so have our palates, particularly when it comes to cones. Speaking of the V-shaped vessels, you won’t want to miss contributor Caitlin McCulloch’s piece in The Hot List (page 88), highlighting six undeniably cool cones, including a hand-held, house-made waffle cone filled with candied brown sugar bacon, fried chicken tenders, avocado, lettuce, and cool ranch from Cluck N Cone; and an activated charcoal Oreo cookie cone swirled with black sesame and Hokkaido milk ice cream from Tokyo Cream. 'Tis the season for romance! We're ushering in

Valentine's Day with three love stories that'll warm

your heart despite the February chill.

in 2020, and they tied the knot in 2021.

Favorite date spot: Thursday is our

weekly date night. We typically stay in

Folsom and rotate between Land Ocean

and Scott’s Seafood Roundhouse.

Secrets to success: Since we both

come from failed marriages, we

feel strongly that it starts with good

communication. In our relationship,

we talk about everything—even when

it’s a difficult or sensitive topic. During

premarital counseling, our pastor

recommended we hold business

meetings to address business issues

such as finances, parenting, and home

responsibilities. This keeps the business

side of us separate from our dating/

fun side. We also love to travel and

make quarterly trips a priority. We think

it’s important to show our children that

relationships take quality time, nurturing,

Some love stories begin in the

unlikeliest of places. In 2014, Shannon

and Rico met at a divorce care group

through Hills Church. Both were

navigating their newly single lives and

not considering a relationship. So, they

became friends—working out and

traveling together, running into each

other at community events, and even

playing on the same softball team. “Still,

it never crossed either of our minds to

date one another,” says Shannon. Until

the 2019 Folsom Pro Rodeo, that is. After

inviting Rico to help at the event, where

Shannon was working, they spent a

magical evening dancing in the saloon,

and hard work.

What's your favorite thing about your

partner?

Shannon: Rico is kind, thoughtful, loving,

and an amazing listener. He’s always fun,

and I still get butterflies when he walks

into the room. He’s also an amazing

stepdad to my three kids.

Rico: Shannon is always positive and

makes me smile. She’s beautiful inside

and out.

MaryLisa and

Charley Cornell

It may sound “cheesy,” but MaryLisa and

Charley first connected because of their

mutual passion for great cheese. In 2015,

MaryLisa was content with a career she loved

(looking after her herd of goats and owning

Jollity Farm). “Life was good,” she says. But

then it got better! While volunteering with

the Gold Country Dairy Goat Association at a

show, Charley—a fantastic cheesemaker—

sent her a Facebook message. He wanted

to donate cheese to the Jollity Farm raffle

table. From there, they began chatting and

spending time together. A year later, they

got engaged while on a cheese trail journey

along the coast and eventually married

on MaryLisa’s farm surrounded by her

beloved goats.

Gonzales

Rose and Steven’s story is one

of triumph. Despite the odds of

young love (they met in eighth

grade) and teen pregnancy, their

relationship has stood the test

of time. Nearly three decades

later, they cherish the life

they’ve built—with four children,

a grandbaby, and a thriving

business—more than anything.

But getting here was no easy

task. The loss, near-death

experiences, and struggles that

face a young family threatened

to tear them apart. “We

[eventually] realized how much

our marriage meant and really

worked together to be better as

a team,” says Rose.

Favorite date spot: Waking up

early (before the kids), drinking

coffee, and reading in the

same room without talking is

a special connection we have.

Occasionally, we go on lunch

dates to Flame & Fire while the

kids are at school.

Secrets to success: Work as a

team and put pride away; learn

to listen; keep the passion alive;

and find things in common (ours

include going to the gym and

personal development).

What's your favorite thing

about your partner?

Rose: Steven is my biggest

supporter—always pushing

me to be better, encouraging

me, and reminding me of the

possibilities I’m capable of—

continues to “make moves” on

me, and is a great dad!

Steven: Rose always wants to

help other people, strives to be

the best person she can be, and

lives every day trying to make

the world a better place.

pointillism—a

technique using tiny dots of

color—Judy Lew Loose

produces stunning pieces

through the fluidity of

watercolor. When asked

how long a painting takes,

Loose shares that she

doesn’t think in terms of

time. “Every dot paints a

tear, and happy dots

heal the soul,” she says.

“There’s nothing like the

flow of water; it’s almost

life itself.”

When were you first

drawn to watercolor?

I was five years old and

in kindergarten when I

accidentally discovered

that yellow and red

paint create orange. I ran

home from school and

told my parents I wanted

to become an artist.

The feeling of mixing

those colors put me on

the path of trusting my

heart enough to endure

rejection in life.

Describe your

artistic process.

Passion and inspiration

for the subject, which

incubates inside my soul.

After preparing a drawing,

I’m ready to paint,

usually upside down and

sideways—developing

intuition, stepping

back, evaluating, and

painting the journey. It’s

challenging, because each

painting is intuitive and

there’s no road map to tell

me where to go.

What inspires you?

I find inspiration with

anything that heals

one’s soul: nature, dogs,

bikes, things that bloom,

buildings, light, and

shadow. When you open

your heart to feelings

and vision there’s a world

of opportunity waiting

for you.

oving to Roseville in 2000, Anna

Rolin first studied watercolor

under Pat Abraham, whom she

attributes as one of her biggest

influences. “Right now, I’m following my

own curiosity; the more I paint, the

more I learn,” she shares. “I try to start a

painting before I finish one, so that [I]

always [have something to] work on.”

Why did you choose watercolor?

I love the feeling of dipping my brush

into a well of water and pigment and

watching it spread across the paper

as I paint. Watercolor flows and is

transparent. It’s basically just water,

paint, brushes, and paper—beautifully

simple—but if you have to fix something,

you can only do so much, or your

painting could be ruined.

skills?

It all began

when I

took a

class and

became

intrigued with the beauty

watercolor can produce. I dedicated

myself to learning the craft and

took numerous classes. Lots of

practice later, and I learned to

master the water, control the

mistakes, and produce works I feel

good about.

What are your favorite aspects

of watercolor?

The flow of the paint, which can

create an ethereal feel; or being able

to switch techniques and produce

a painting of exacting details—the

choice is yours.

Describe your process.

After a light sketch and

beginning with the “wet on

wet” approach, I often mix

colors directly onto the

paper. As the paper dries,

I move from soft brush to

dry brush and work from

lighter to darker colors.

Because my subject matter is

representational of landmark

buildings, historic scenes,

or events, my paintings

usually have more detail than

traditional watercolors.

How do you avoid artist's

block?

Everywhere I go, I’m looking

for scenes and imagery for

future paintings. While driving

down the interstate this

morning, I began painting in

my head the beautiful cloud

formation that came to view.

Other times, I'll quickly sketch

or snap photos of antique

automobiles that I see.

Check with locals. Area

authorities should be

safety conditions.

Carry “ice claws” in an

accessible pocket. These

will help you pull yourself

out from freezing water

and onto the ice if you

take an unexpected

polar plunge.

Tread lightly and keep

your distance. Wear

skis or snowshoes and

walk with at least 15-25

meters between your

partners so you don’t all

fall in if the ice breaks.

Check ice thickness

frequently. Every 150

feet or so, use an ice

axe to break through

it and test thickness.

If cracking occurs,

return to shore. Blue

ice is safest; white

ice indicates melting

and more dangerous

conditions.

If you fall in, stay

calm, ditch the skis/

snowshoes, swim to

the edge, and use your

ice claws to help you

up while kicking hard.

Once enough of you is

on the ice, stay in a lying

position and roll yourself

away from the breakage.

Q: What should I take into

consideration when deciding to

do pet hospice?

A: When your pet is diagnosed with

a terminal condition, it’s important

to understand disease progression

and ways to maintain their quality

of life. A discussion with your

veterinarian can help make sure

your pet is kept comfortable with

pain medication or adaptations at

home. When pain can no longer

be managed, your pet is immobile,

they no longer enjoy their favorite

activities, the bad days outnumber

the good, or there is risk of

traumatic death, then timing of

euthanasia should be considered.

Lastly, it’s important to prepare

your family members, as not

everyone may agree, due to beliefs

surrounding euthanasia, guilt over

primary caretaker responsibility,

and inability or unwillingness to

accept declining quality of life. In

addition, children experience grief

differently depending on age and

sensitivity.

Before

El Dorado Hills resident Lisa P. has been

renovating her home, room by room,

for more than a decade—and she’s hired

local Granite Bay firm Designs With You

In Mind (designswithyouinmind.net) for

each and every project.

Before the refresh, her home

featured traditional brown finishes

and was starting to feel dated; not to

mention, it was no longer functioning

for her family’s daily routine. Cathy

Tonks of Designs With You In

Mind stepped in to complete the

transformation, which resulted in a

home that boasts a transitional style

with a calming feel.

“Our overarching goal was to make

sure everything we did flowed to allow

our clients to entertain guests in luxury,”

Tonks says. “Like all our projects, we

also used the finest materials and top

appliance brands.”

Tonks’ design needed to improve the

house’s overall function. Her solutions

included turning the rarely-used

formal dining room into an inspiring

home office; taking a section of the

downstairs area to create a “lady cave,”

which provides an escape for Lisa to

relax and unwind; installing new floors

throughout the home; creating an openconcept

layout to better connect the

kitchen, dining room, and living room;

and maximizing the available bright

natural light whenever possible.

For the kitchen renovation, Tonks

says the cabinet layout was working

well, and both the cabinets and

hardware were in excellent condition,

so they modified and painted the

cabinets for a refresh. Additionally, they added soft-close

hinges into the kitchen cabinets and drawers for an elevated

feeling while also protecting the cabinet finishes. They also

replaced the kitchen hood over the range—though when it

was removed, the intake was offset, so they built a soffit and

facade to make it work. Other kitchen upgrades included new

tile, countertops, crown molding, and baseboards. The cool

color palette added to it was then continued into the adjacent

living room, where the design team added new window

coverings, furnishings, artwork, and plants to create a cozy

and comfortable gathering space.

The home has bonus rooms downstairs, including a second

family room that contained a kitchenette and a bed. Lisa’s son

was staying in this room, which was inconvenient when the

family had guests over. “Her son needed his own space, so we

moved a major wall out, giving the homeowners’ better access

to the kitchenette and a space for their son with a full ensuite

bathroom, plus Lisa’s ‘lady cave,’ and a powder room,” Tonks

says. “We infused some of the client’s personality into the

powder bath through custom wallpaper and photos of her two

adorable pups.”

Moving outdoors, they created a space for Lisa to entertain

off the pool. “We gave the family an upscale coastal-style

kitchen, [and in the] back patio area off the pool, installed

herringbone porcelain tile with texture to prevent slipping,

painted existing railing, added new furniture, and painted the

home’s exterior.”

One of the more recent projects was the upstairs renovation,

which had a four-to-five-month timeline. “We redid both

daughters’ bedrooms and updated the jack-n-jill bathroom,”

Tonks says. “Specifically, we removed the bathtub and replaced

it with a tiled shower, painted the cabinets, and updated the

hardware with soft-close hinges.”

Lisa’s home is now a calming oasis perfect for entertaining

her friends and family. “I highly recommend working

with Designs With You In Mind!” Lisa says. “I have worked

with Cathy for over 10 years to slowly transform my entire

house into my dream space. She has an amazing gift of

understanding people’s personal styles but also stretching it

beyond anything you could ever imagine!”

twenty years of experience in joyfully navigating her own life’s journey with blindness.

For over 26 years, ATOU has been helping children understand, appreciate and

respect one another, despite differences. Our workshops help schoolchildren accept

and include their peers with disabilities and those who seem different for any reason.

These workshops improve the way students relate to themselves and others. One

student said it best, “I get it now! I can be a buddy, not a bully!”

“Filet all day”—that’s what the shabby chic sign in my living room says.

Folsom’s Sutter Street Steakhouse has you in good hands if

you’re a filet fan (who isn’t?). Their certified Black Angus Filet (six or

12-ounce) is specially prepared at temperatures more than 1,000 degrees,

which means two things when it’s cooked medium rare: juicy and

delicious. Your tender filet comes with garlic mashed potatoes and herb

compound butter, and you could do worse than add some tasty cheddar

potato cakes, sautéed spinach, or asparagus on the side. But let’s talk

appetizers: I wholeheartedly recommend starting with the warm brie

and bacon jam with arugula and grilled ciabatta. Oh mama. And maybe,

just maybe, finishing things off with a vanilla bean crème brulée. I’m not

going to tell you your life. You know in your heart it’s only right.

Flame & Fire offers the ultimate steak

experience, thanks to the Brazilian cuisine known

as churrascaria, where cowboys or “gauchos” slowroast

beef from their cattle herds over a flame pit

or “churrasco” and carve it at the table to show

skewers, what I really mean are swords. And I’m

you’ll gorge on a veritable feast of accompanying

cheese bread), aka, the definition of deliciousness.

And this bountiful feast is best accompanied with

Brazil’s national drink, the Caipirinha, a dangerously

delicious signature cocktail made with cachaça,

sugar, and lime. Que bonito!

Q1227 is a relative newcomer to Roseville, but this chef-driven restaurant has been

making big waves ever since opening four months into the pandemic. It says right

there on the wall “food is our language of love”—folks, this is a restaurant that gets

us. Elevated comfort food is what they’re about, and steak-wise, you’re in truly good

hands: there’s excellent a la carte Angus beef, like the three-ounce Japanese wagyu,

18-ounce cowboy ribeye, and 10-ounce filet tenderloin. But the secret steak star of

the menu is the Ribeye Cap: all the flavor of a ribeye with the delicateness of a

tenderloin, aka, the kind of steak your butcher keeps for themselves because it’s so

good. Chef Q cooks it to juicy perfection and serves it atop a mouthwatering mix

of fire-roasted tomatoes, garden fresh spinach, wild mushrooms, and Maldon Sea

Salt. If you’re feeling fancy, you can add fresh-shaved Velarde truffles (when available).

Speaking of appetizers, it’s my moral duty to inform you of the Q1227 Chicken Fried

Lobster Bites, served with creole remoulade and Chef Q’s season all. Don’t cry when

Good things come in small packages, like filet

mignon from Henry’s Steakhouse at

Red Hawk Casino. Try their hardwood grilled

pure perfection alongside mashed potatoes,

When it comes to sides, it’s hard to resist the

siren song of their house macaroni and cheese

(you’re only human!), but the Old Bay wedge

fries are comfort food at its finest and should

be mandatory—especially if you worship Old

Bay Seasoning like I do. And when it comes

to dessert names, let’s just say Henry’s has

a flair for understatement. “Chocolate and

Nuts”? I mean, I guess. Unless it’s house-made

chocolate malt ice cream, crème anglaise,

brownie, brown butter almond cake, candied

nuts, and whipped cream. Well, why didn’t you

say so? Sign me up!

The downstairs converted-cellar restaurant

at the Smith Flat House was once the

opening to the Blue Lead Mine dating back

to the 1800s. Fast forward to today, and the

selecting a steak, it’s about the marbling (the white specks that

add all the flavor and juiciness) and if the “right” fats are left

on the steak. When you cook your steak over high heat, those

specks of fat leave pockets in the meat that aid in its tenderness.

What lesser-known cuts of beef do you recommend?

Bistro filets (aka teres major)—small steaks that come from

the front shoulder clod; in my opinion, they’re one of the most

versatile and tender cuts at a price that’s right. They’re lean and

great grilled on the BBQ, sliced thin for stir fry, cut for stew meat,

or added to chili, stroganoff, or fajitas.

What cuts give people the most bang for their buck?

Cross-rib roasts come from the front shoulder of a steer and are

an under-utilized cut that’s surprisingly tender and incredibly

flavorful.

Top steak cooking tips?

Keep it simple. Lightly rub extra virgin olive oil on the steak and

season it with kosher salt and coarsely ground black pepper.

My favorite steak is a New York strip loin served at medium

temperature with a hard sear on the outside; the flavor and

tenderness are unmatched. The “chew” of the steak is also

important; you want something that offers flavor and tenderness

without feeling like you’re doing cardio! With that said, doneness

of steaks is widely subjective and is not “one size fits all.”

Fun fact: Cameron Park’s The Snooty Frog first opened in 1983. They took a break

in the middle but managed to reopen in their original Burke Junction location in 2008

and have been going strong ever since. With a menu comprised of only the freshest

ingredients and quality cuts of meat, “The Frog” is still a local favorite. The hit menu

item is their Sizzling Filet: tender prime-cut filet mignon with sautéed mushrooms

and red mashed potatoes, served directly from the grill to the table on a piping hot

sizzle platter. (It’s also the house specialty, and you can see why.) If you fancy walking on

the decadent side for starters, then the baked brie with crostini is calling your name.

Since 2011, Placerville’s The Independent Restaurant & Bar has been serving up

high-quality cuisine and libations. A local favorite is the Niman Ranch Ribeye, 14

ounces of hand-cut, marbled meat served with a demi-glace and flash-fried onion rings—a

mouthwatering “big ole steak” cooked to perfection that cuts like butter. I’m also in love with

the truffled mac and cheese, but don’t be fooled, their turnip fries are a head-turner (you

read that right). If you favor a cocktail to accompany your classic ribeye, might I recommend

kicking it old-school in a new-school way with the Smoked Molasses Old Fashioned: Four

Roses Single Barrel Bourbon, Angostura bitters, hickory smoked molasses syrup, and a

flamed orange peel. When it comes to dessert, I’m very much into the silky-smooth and

dangerously decadent chocolate pot de crème with mocha whipped cream. Divine!

El Dorado’s Poor Red's Bar-B-Q is

another historic locale, and these folks

serve up liquid gold in the form of their

signature cocktail the Golden Cadillac,

invented all the way back in 1952 when

the bar was in its infancy. Decades

later, they’re still pouring liquid gold

for locals and serving up delicious,

barbecued steak, chicken, and ribs (just

like the original sign says), with a menu

that favors locally sourced ingredients

and quality meat. The true mark of a

great barbecued steak is when it can

make the humbler cuts of beef sing,

and Poor Red’s Blackened Spiced

Flank Steak can more than carry

a tune. An eight-ounce flank steak

topped with chili lime compound

butter and cilantro, served with their

house salad, a baked potato, and

seasonal vegetables, your taste buds

will be singing along with it! Make sure

Charred Whole Fish Divorciados

The manifestations of our collective

human culture are rarely as

ubiquitously loved as food. The

culinary arts tap into eons-old (and

modern) traditions and deliver a primal

gratification that simultaneously satisfy

both the caveman and the aristocrat within us all.

Some cuisines, however, infuse a rich

history and cultural tradition into their flavors,

transporting you to different times and places. Few

cuisines do this more than Mexican.

Newly opened La Popular is a collaboration between

Grupo Carolo (one of Mexico City’s most recognized

restauranteurs) and the local Eureka! Group. Led by

Chef César de la Parra from Mexico City, the menu is an

upscale take on Mexican classics that evoke the origins

of the gastronomy as well as the country’s cultural

nuances—inspiring us to share and forget our worries

until mañana. Authentic staples are elevated by a chefdriven

evolution and served in lively, lush environs

alongside warm, welcoming service.

The drink menu is an impressive

modern craft cocktail experience that

brings the tastiest old-world spirits into

the contemporary era using up-to-theminute

bartending techniques—think

smoke bubbles that pop with a whisp on

lemongrass to infuse your Oaxacan rum,

like in the showstopping Oaxacan Jellyfish,

which also comes with pineapple, lime,

blue lemongrass, and coconut cream. With

over 80 labels of tequilas and mezcals, you

can bet they know how to mix up a stellar

margarita, too.

Appetizers include an innovative take

on familiar favorites, like chipotle bean

dip, nachos with hand-cut tortilla chips,

heirloom tomato & oyster mushroom

ceviche, and queso fundido with chorizo

alongside house-made tortillas.

The street tacos are also a must-try. I

was swayed from my normal go-to after

reading the description of the ribeye

offering: “ribeye and handmade corn

tortillas…that’s it, trust us.” So, I took the

leap of faith. The ribeye was delicious,

though the tortilla seemed slightly too

large for the dish. The house salsas were

flavorful, too, and I loved that the simple

tacos encouraged me to add the garnishes

in a traditional Mexican street taco way. A

huge thumbs-up for authenticity.

I also tried the charred whole fish

divorciados (the red adobo was much

tastier than the green, in my opinion), the

ribeye fajitas (a non-traditional staple—

charred jalapeños and potatoes topped

with melted manchego, bacon, guacamole,

sour cream, and pico de gallo—with

a most markedly upscale flavor), and

the habanero BBQ ribs (another nottraditional

take executed beautifully).

While the menu was overall fantastic, I

couldn’t do justice to the experience without

elaborating on the drinks. The agave-inspired

cocktails boast techniques I’ve only seen on

the recent Netflix series Drink Masters—from

“caviar” pearls to infused smoke bubbles.

Each boozy beverage expounds on an agave

spirit and adds a clever craft twist. Again, I was

tempted with a minimal description of the

Yucatán Toucan (“clarified mezcal punch…

trust the jungle bird”) and immediately

ordered one. It was amazing. I also tried the

Desert Rose—a balanced cocktail full of

warmth, freshness, tartness, and sweetness—

that included cinnamon-infused Licor 43,

hibiscus lime-infused tequila, mezcal, prickly

pear, pomegranate, and lemon.

For dessert, the tres leches cake and

churros tied a pretty, Mexican bow on the

entire experience. While they weren’t jawdropping,

they were simple and sweet.

Overall, La Popular surprised with

their ability to make the old new and

brought an experience worthy of any

modern foodie’s praise.

Say “aloha” to your new favorite Hawaiian BBQ spot: Big Island Hawaiian

BBQ, where everything is made to order using fresh ingredients. It’s like

being in Hawaii...without having to pack, catch a flight, and shake sand

out of your clothes. They offer so many different dishes, it’s hard to

choose. Fortunately, their family meals feed four and come inclusive of rice,

mac salad, shredded cabbage, and two proteins, like the popular kalua pork

and chicken katsu (both great choices!). My personal pick? The Kalua Island

Fries, because fries—especially with creamy sriracha mayo and a heaping

helping of shredded, pull-apart pork—are always a good idea. For the main

attraction, choose from katsu chicken curry, kalbi short ribs, spam & eggs, or

loco moco, to name a few. I went with the Teriyaki Chicken Plate, and their

sauce (all sauces are crafted in-house, btw!) was one of the best I’ve had.

Portions are generous, so if you’re looking for something a little smaller, go

for their “Make It Mini” plates; or, for littles, one of the kids’ meals. Oh, and

don’t forget the appetizers! Because crispy shrimp, pan-fried potstickers, and

lumpia are always a delicious idea.
