When our team brainstormed cover ideas for this month’s issue, we debated between an actual dog, a hot dog, or the possibility of both (a dog eating a hot dog?!). It is the dog days of summer, after all. Each option had its advantages. Canines are cute, likable, and would make the featured pup’s owner pretty proud. Hot dogs, however, scream “summer in America!”—a timely choice for July. Plus, as my publisher likes to regularly remind me: “Food sells.” Clearly, you can see who came out as the top dog. We hope you agree it’s a fun, nostalgic nod to memories of backyard barbecues, ballgames, and (if your family is anything like mine) the Costco food court. Read all about the fiery frank (dressed to impress with homemade and seriously spicy condiments), plus nine more gourmet, grown-up dogs in The Hot List (page 88). Pet lovers won’t want to miss our adorable and informative article, “Incredible Pets!” (page 64), featuring a pictorial of furry friends who live locally (and some amusing anecdotes about them), plus a roundup of pooch-friendly patios, public “pet”iquette, area dog parks, and wonderful ways to honor a pet who has passed. While my family doesn’t currently have a pet at home (unless you count my two young kids, who—just like puppies—love snuggling, making messes, outdoor adventures, and constantly trying to get treats), I’m guessing it won’t be long until a fluffy (preferably potty-trained) friend joins our household. Animals aside, there are plenty more page-turning pieces ahead. In The 10 Spot (page 20), we talk about the region’s coolest consignment shops—where you can buy (or sell) everything from brand-name furniture and barely worn baby clothes to high-end handbags—and why this type of shopping isn’t only good for your wallet, but the environment too. Finally, check out “Get a Room” (page 76) to read about some of Nor Cal’s hautest hotels—from a four-star French-style château to an intimate, highly exclusive Edwardian-era inn. Stay cool out there, and don’t forget to “relish” the good times with your best friends…and man’s best friend. Cheers!

as toys and gifts. Its namesake<br />
is Ruby, an eight-year-old<br />
golden retriever. “We’ve had<br />
Ruby since she was eight<br />
weeks old,” says Stacy Gould,<br />

I was planning the bookstore,<br />
I was worried about leaving<br />
[her] home alone all day.<br />
When I realized she could just<br />
come to the store with me, it<br />
quickly evolved into being all<br />

“At best, she’ll bring<br />
it 10 feet in front<br />
of you and drop<br />
it expectantly,”<br />
says Stacy. “This is<br />
problematic when we<br />
throw the ball in the<br />
lake [and] the water is<br />
too cold for us; she’ll drop<br />
the ball several feet from<br />
shore and get frustrated with<br />
us for not going in to get the<br />
ball and throw it again.”<br />
On any given day, Ruby can<br />
be found hanging out waiting<br />
for snuggles and attention<br />
from customers. “One of<br />
her best qualities is how<br />
much she truly loves making<br />
people happy, which makes her a<br />
great bookstore dog!”<br />

When Earl and Adriana Stephens<br />
began developing their familyrun<br />
Lincoln brewery, Dueling Dogs<br />

knew their pups would play a<br />
major part. “Our dogs are behind<br />

name, logo, and apparel to the<br />

cozy up with adoptable felines<br />
from the nonprofit cat shelter,<br />

The Catfe is located inside<br />
FieldHaven’s thrift store, which<br />
benefits the nonprofit and is<br />
where you can find Champy,<br />
the shelter mascot, and other<br />
adoptable felines.<br />
In 2014, Champy, along with 60<br />
other cats, were rescued from<br />
a hoarding situation. Sadly,<br />
Champy lost both eyes due to<br />
an infection and is now blind.<br />
“It’s hard to tell he’s even blind,<br />
as he plays like any other cat,”<br />
says Joy Smith, FieldHaven’s<br />
executive director.<br />
“Everyone became so endeared<br />
to him that we couldn't adopt<br />
him out, so he became our<br />
shelter mascot,” says Smith.<br />
“When we opened our thrift<br />
store, we decided it would be a<br />
really great place for Champy to<br />
live full-time.” Champy lived in<br />
the thrift store for several years<br />
but came home with Joy prior<br />
to Covid and now lives with her<br />
family, along with their dog and<br />
four other cats.<br />
“If you fall in love with one<br />
of our adoptable kitties over<br />
coffee, we’ll help with the<br />
process to make it part of<br />

cheese, I wanted to merge<br />
the two ideas,” says Cathy<br />
Johnson, who owns the<br />
brewery with her husband<br />
Michael. “Our original<br />
business plan included<br />
opening a small goat dairy<br />
to pair cheeses with the<br />
[farm-made] beer using<br />
all natural and sustainable<br />
processes.” The dairy never<br />
came to fruition, but having<br />
the goats as an integral part<br />
of the brewery did.<br />
“We wanted everything to be<br />
craft made, a la ‘House,’ so<br />
‘GoatHouse’ was the name<br />
we came up with—and the<br />
goats stayed!” says Cathy.<br />
“It’s a total farm-to-tap<br />
experience.” Currently, there<br />
are around 17 goats and a<br />
mini donkey protecting the<br />
herd. According to Cathy,<br />
they all have individual<br />
personalities and know<br />
their names. Besides eating<br />
and resting, the goats love<br />
mingling with guests and are<br />
extremely social. “They’re all<br />
so sweet and love nothing<br />
more than having their<br />
cheeks scratched by our<br />
amazing customers.”<br />

Tips for Taking Perfect Pics<br />

Not so long ago, an amateur<br />
photographer with a compact<br />
camera could only point, shoot,<br />
and hope for the best. But these days,<br />
digital cameras and cell phones can make<br />
anyone feel like Ansel Adams or Annie<br />
Leibovitz. And while there’s decidedly<br />
more to taking great photos than pointing<br />
and shooting, shutterbugs can up their<br />
game by following some tips from the pros.<br />
First, let's address what is often the<br />
most common mistake. “Don’t make<br />
your subjects say ‘cheese,’” cautions<br />
Placerville-based photographer Karen<br />
Schmautz of Sierra Springs Photography<br />
(sierraspringsphotography.com). It<br />
stretches your mouth into an unnatural,<br />
frozen smile. The best way to get organic<br />
expressions is to put your subjects at<br />
ease, she says. Approach them rather<br />
than shouting instructions, joke around<br />
with them, have them shrug their<br />
shoulders to loosen up—and take lots<br />
of pictures, because the first few will<br />
probably be throwaways.<br />
Whether you’re photographing<br />
people or pets, get at eye level and try<br />
to capture natural behaviors, such as<br />
people laughing or animals at play.<br />
And don’t rule out a bribe. “I’ll hold<br />
a treat in my hand or use a squeaky<br />
toy to get my dog’s attention,” says<br />
Folsom-based photographer Terrie Gray<br />
(terriegrayphotography.com). “Make a<br />
noise to get their cute head to tilt and<br />
you’ll win every time!”<br />
START WITH A CLEAN LENS<br />
It sounds simple, but before you start<br />
snapping, make sure your camera lens is<br />
clean. Use a microfiber cloth or lenscleaning<br />
kit—never Windex or other<br />
harsh cleaners—to wipe off smudges or<br />
dirt. “I once had a student ask me why all<br />
her photos came out ‘soft focus,’” recalls<br />
Pollock Pines-based photographer Steph<br />
Gabler (stephanie-gabler.pixels.com), who<br />
taught photography classes for nearly a<br />
decade. “I looked at her lens and there<br />
was a thick film on it, preventing her from<br />
getting crisp, clear images.”<br />
GET TO KNOW YOUR CAMERA<br />
Even the best camera won’t produce great<br />
results if you don’t know how to use it.<br />
“Don’t go out and buy the most expensive<br />
camera,” says Folsom-based photographer<br />
Amber Shoop Felts of Shoop’s Photography<br />
(shoopsphotography.com). “Master the one<br />
you have now before upgrading. The best<br />
camera is the one you have with you when<br />
you need it.” When taking photos on your<br />
phone, experiment with different modes.<br />
For example, portrait mode, which blurs<br />
the background, is a great way to establish<br />
a depth of field.<br />
LOOK FOR GOOD LIGHTING<br />
Whether you’re taking a photo of your<br />
kids, a beautiful landscape, or a decadent<br />
meal, proper lighting makes a huge<br />
difference. “Try to avoid [intense], direct<br />
sunlight or overhead lighting, as it can<br />
create harsh shadows and blown-out<br />
highlights,” explains El Dorado Hills-based<br />
photographer Audrey Perez (audreyperez.<br />
com). “Instead, look for soft, diffused light<br />
sources, such as natural light coming in<br />
through a window. If you’re taking photos<br />
outdoors, consider shooting during golden<br />
hour—the hour after sunrise or before<br />
sunset—when the light is soft and warm.”<br />
“Doorways are great spots for selfies<br />
and portraits,” adds Felts. “Stand in<br />
a doorway facing out. The lighting is<br />
always nice there.”<br />

When taking landscape photos, don’t<br />
be afraid of the weather, says Gabler. “Fog,<br />
clouds, rain, and snow can add incredible<br />
drama to photos,” she says. Just make sure<br />
to protect your camera from the elements.<br />
And if you’re a budding food<br />
photographer, find a window. “Light can<br />
make or break a photo,” says Rosevillebased<br />
food photographer Taylor Gillespie<br />
of Food in Focus (foodinfocus.net), who<br />
describes photography as the art of<br />
painting with light. “Put your subject<br />
close to a window with natural light and<br />
turn off all artificial light in the area. The<br />
food will look a hundred times better!”<br />
DON’T RELY ON THE FLASH<br />
The pros agree that natural light produces<br />
the best results. The built-in flash on your<br />
phone or digital camera is harsh and can<br />
make subjects look washed out. Instead,<br />
when taking photos outdoors, have the<br />
sun behind you and have your subjects<br />
stand in the shade so they aren’t squinting<br />
into the bright light, suggests Gray. Just<br />
make sure there isn’t half shade and<br />
half sun on their faces, she adds. When<br />
indoors, try holding a small LED light to<br />
the side of your subject if the natural light<br />
is insufficient, suggests Schmautz.<br />
Like most rules, there are occasional<br />
exceptions. “If your subject is in a<br />
dark area and the background is very<br />
bright—for example, someone standing<br />
under a tree with a bright landscape<br />
behind them—pop your flash to even-out<br />
exposure,” says Schmautz. “The light is not<br />
very attractive, but it’s OK to use under<br />
that circumstance.” Adds Felts, “If your<br />
photos are coming out grainy or blurry,<br />
try your flash.”<br />
And when in doubt, take a photo<br />
both with and without the flash. “As the<br />
photographer, it’s up to you to decide<br />
which image you prefer,” Gabler says.<br />
SET THE EXPOSURE<br />
Exposure is the amount of light that<br />
reaches a camera’s sensor, resulting<br />
in how bright or dark a photo is. On<br />
a camera, this is determined in part<br />
by the shutter speed. On a phone, you<br />
can adjust the exposure manually<br />
by tapping the screen on the object<br />
you want to focus on and then sliding<br />
the sun icon up or down with your<br />
finger. “If your subject is darker or<br />
lighter than the surrounding area and<br />
you let your phone or camera decide<br />
the exposure, you’ll probably end up<br />
with a dark or overexposed subject,”<br />
Schmautz says.<br />
CONSIDER THE COMPOSITION<br />
Every amateur photographer has, at<br />
some point, taken what they thought<br />
was a great shot only to realize later<br />
that a tree or telephone pole was<br />
growing out of their subject’s head.<br />
Take a moment to survey the area to<br />
ensure it’s free of unsightly intrusions.<br />
Also, consider the composition of<br />
your photo—the arrangement of the<br />
various elements within the frame—<br />
and avoid dead-center shots. “Try<br />
using the ‘rule of thirds’—dividing the<br />
frame into thirds horizontally and<br />
vertically, and placing the subject at the<br />
intersection point,” suggests Perez. You<br />
can turn these gridlines on through the<br />
settings app on your phone.<br />
“Use unique angles!” adds Folsombased<br />
food photographer Jacob Cantu,<br />
founder of Voyage Creative Agency<br />
(voyagecreativeagency.com) and Folsom<br />
Eats (folsom-eats.com). “Don’t always<br />
photograph food from your normal<br />
perspective. Find new and creative<br />
ways to showcase what you’re eating.”<br />
Also remember the “rule of odds,”<br />
which states that a composition will<br />
be more interesting and pleasing to<br />
the eye if it contains an odd number<br />
of subjects.<br />
“Study composition,” Gillespie<br />
says. “The camera, the lens…none of<br />
it matters if a basic understanding of<br />
composition is not utilized.”<br />
EDIT YOUR PHOTOS<br />
Have you ever noticed that your<br />
pictures don’t accurately capture<br />
what you saw? Perhaps the stunning<br />
landscape before you appears flat<br />
or washed out in your photo. “That’s<br />
because you need to edit your picture,<br />
bring up the sharpness, color, etc., to<br />
what drew you to take the picture in<br />
the first place,” Gabler explains. There<br />
are numerous free, easy-to-use photo<br />
editing apps available, including<br />
Snapseed and Lightroom.<br />
PRACTICE MAKES PERFECT<br />
While all these tips will improve your<br />
photos, ultimately, the best way to take<br />
better pictures is to practice. “The<br />
more you practice, the more you’ll<br />
learn about lighting, composition, and<br />
editing, and the better your photos<br />
will become over time,” Perez says.<br />
“Experiment! Try different angles and<br />
different light,” adds Gabler. “Most<br />
importantly, have fun!”<br />

The Tahoe Rim Trail—with<br />
its 165 miles of pristine<br />
alpine wilderness—is<br />
arguably one of the best<br />
trails in the U.S.<br />
The entire route takes<br />
most people between<br />
10-15 days. <strong>July</strong> through<br />
September is the time to<br />
go, and most people tend<br />
to hike it clockwise (but<br />
your total elevation gain will<br />
be the same either way).<br />
Planning is key, and here<br />

Summer Y. and her husband had a<br />
very clear vision for their El Dorado Hills<br />
remodel: create a beautiful, updated<br />
mid-century modern-style home that<br />
provides them with functionality and<br />
a harmonious design. To help them<br />
achieve their lofty goal, they enlisted the<br />
services of Jenny Levitsky of Ultimate<br />
Designs (ultimatedesignkitchens.com), a<br />
Placerville-based business that specializes<br />
in interior architecture, overall home<br />
remodeling, kitchen and bath design, new<br />
home design/build projects, as well as<br />
commercial and hospitality design.<br />
For Levitsky, it’s all about the client<br />
and designer collaborating as creative<br />
partners, designing a space that’s truly<br />
personalized and unique. “We allow<br />
clients to dream about the big picture<br />
while we stay focused on detailed issues,<br />
such as scale, proportion, style, longevity,<br />

color, balance, and functionality.”<br />
The architecture of this home<br />
was true to the mid-century style<br />
that Summer and her husband love,<br />
but the finishes were more 1980s<br />
in design. “We were looking for a<br />
home with good bones [that needed]<br />
some help so I could try my hand at<br />
supervising a remodel, and this house<br />
fit that bill. We weren't looking for an<br />
updated home with someone else's<br />
style built in,” says Summer.<br />
The 1969, two-story, mid-century<br />
house with four bedrooms and<br />
three baths underwent an extreme<br />
transformation of bathroom<br />
and kitchen remodels, structural<br />
changes, new flooring, and interior<br />
design upgrades.<br />
The house was entirely gutted,<br />
and everything but the framing was<br />
completely changed. To bring the<br />
kitchen and dining room back to their<br />
original mid-century roots, a wall was<br />
removed to open up the area, and the<br />
previous eight-foot kitchen ceiling<br />
was re-vaulted to create a light, airy<br />
space. With the complete overhaul of<br />
the kitchen layout, space was created<br />
for an indoor laundry room.<br />
With a mid-century modern<br />
vision at the forefront of this<br />
project, Levitsky sourced tile,<br />
flooring, hardware, and interiors<br />
that were sympathetic to this<br />
much-loved era of design. Striking<br />
a delicate equilibrium between<br />
functionality and aesthetics, she<br />
created a kitchen island with a sleek<br />
stainless steel island range hood<br />
and incorporated luxury appliances<br />
to complement the modern design.<br />
The island is a masterpiece in<br />
functionality with alcove seating for<br />
three as well as discretely housing<br />
the microwave, oven, and cooktop.<br />
The kitchen is now a chef's dream,<br />
with modern appliances, ample<br />
counter space, and a large island<br />
that doubles as a gathering spot for<br />
family and friends.<br />
The open living concepts of<br />
the remodel create a casual feel,<br />
while the blend of color palettes,<br />
furniture, lighting fixtures, and<br />
decor infuse character and<br />
personality into every room.<br />
Levitsky chose a bold geometric<br />
tile for the entryway, creating an<br />
inviting atmosphere; and with the<br />
large expanse of walls, Summer and<br />
her husband can hang their curated<br />
collection of artwork.<br />
What advice does Summer<br />
have for anyone considering a full<br />
remodel? “Find a designer and a<br />
builder with whom you communicate<br />
well. It's important that everyone is<br />
available to answer questions as they<br />
come up, and it's always best when<br />
making design decisions to try to<br />
think things through to the end—<br />
changing your mind halfway through<br />
is sometimes just fine, but more often<br />
it's a huge problem!”<br />
“We try to minimize the ‘struggle’<br />
of a remodel; however, remodels<br />
do have more surprises than new<br />
builds, because you never know<br />
how well the home was built to<br />
begin with and sometimes you<br />
find the unknown surprise of bad<br />
construction, wiring, or plumbing<br />
that must be fixed,” says Levitsky.<br />
On this particular project, the<br />
discovery of a leaky foundation<br />
increased the time frame slightly,<br />
as new joists and stem wall work<br />
needed to be repaired. “Our goal<br />
was to make the process as easy as<br />
possible for our clients; despite the<br />
‘surprises’ we found along the way, we<br />
kept the project on track. Once it was<br />
time for finishes, it took about three<br />
months to finalize,” says Levitsky.<br />
“Jenny was key in designing a<br />
kitchen that functions perfectly for<br />
the way we live. She helped with<br />
aesthetic choices all over the house,<br />
too—from tile and grout to the<br />
color on the walls,” says Summer.<br />
“She was great at giving me space to<br />
make design decisions but gently<br />
stepping in when I was running off in<br />
the wrong direction. She helped us<br />
create a warm, beautiful home and<br />
was also just really fun to work with!”<br />
From the initial spark of<br />
inspiration to the final reveal,<br />
Levitsky and her team at Ultimate<br />
Designs turned a dated house<br />
into the functional and beautiful<br />
mid-century modern home of<br />
Summer’s dreams.<br />

Upon our arrival, we were promptly<br />
taken care of, and our server struck the<br />
perfect balance between being attentive<br />
and giving us space to chill.<br />
Once seated, we enjoyed<br />
complimentary chips and two types<br />
of salsas while perusing the menu. If<br />
you're a fan of margaritas, you won't be<br />
disappointed by the generous size and<br />
delightful taste of the house (“classic”)<br />
margarita. Thirsty for something more?<br />
You’re in luck; they offer “build-yourown”<br />
margaritas with a choice of fun,<br />
fruity add-ins, like watermelon, spicy<br />
peach, prickly pear, or pineapple; plus a<br />
lengthy list of craft cocktails, mocktails,<br />
and cervezas.<br />
For appetizers, we opted for the<br />
ceviche, a refreshing choice on a hot<br />
day (or any day, for that matter) that met<br />
our expectations. It was a solid start.<br />
Moving onto the mains, we ordered<br />
the vampiro asada taco plate, whose<br />
description (marinated steak topped<br />
with avocado salsa, cabbage, radish,<br />
Oaxacan cheese, and lime) was<br />
mouthwatering, along with the combo<br />
steak-and-shrimp fajitas. Even though<br />
the tacos didn't quite live up to the<br />
hype, they were still an enjoyable<br />
entrée, especially if you appreciate fresh<br />
ingredients and pops of color on your<br />
plate; the side of house-made beans and<br />
rice were a nice touch, too.<br />
Ceviche<br />
The fajitas were quite tasty, thanks to<br />
flavorful steak, shrimp that was cooked<br />
to perfection, fresh vegetables, and ample<br />
accoutrements (rice, beans, guacamole,<br />
sour cream, pico de gallo, tortillas).<br />
For diners worried about putting<br />
a dent in their wallets (some recent<br />
reviews have criticized prices), the<br />
eatery offers a weekly happy hour—<br />
Wednesday-Friday from 3-6 p.m. or<br />
all day on Tuesdays—where drinks<br />
(margaritas and beers) and appetizers<br />
(like the Carnitas Street Tacos and<br />
Nachos Supreme) are generously<br />
discounted.<br />
If you're seeking a lively dining<br />
destination with an impressive patio,<br />
Hacienda Real won't disappoint. It boasts<br />
a remarkable staff, friendly<br />
service, delightful drinks,<br />
and a diverse range<br />
of Mexican and Tex-<br />
Mex dishes.<br />

8675 Auburn Folsom Road, I found the best dim sum. Literally. It’s tucked inside a shopping center<br />
Granite Bay, 916-791-7990 along Auburn Folsom Road near Douglas Boulevard, and it’s called<br />
bestdimsum.net Best Dim Sum. I took my mom for lunch (she’s a self-proclaimed<br />
dim sum expert), and we ended up ordering more than we could<br />
eat in one sitting, which just meant one thing: leftovers! We had BBQ Pork Buns,<br />
Siu Mai, Fried Shrimp Balls, Shrimp Dumplings, and Honey Walnut Shrimp.<br />
(They offer more than just dim sum!) The BBQ pork buns were soft and fluffy<br />
and steamed to perfection. The siu mai, a dumpling filled with ground pork and<br />
shrimp, also had a wonderful texture and flavor. We saw an interesting-looking dish<br />
heading to another table and asked what it was, then ordered what turned out<br />

to be fried shrimp balls. The shrimp was formed into a ball then rolled over<br />
spring roll strips and deep-fried. They arrived with the strips sticking up<br />
haphazardly and somehow tasted crispy and soft at the same time.<br />
Oh, and the honey walnut shrimp? It was one of the best renditions<br />
I’ve had. I highly recommend it. Finish your meal with an order of Egg<br />
Tarts—a yummy, sweet custard inside a flaky pastry that was seriously<br />
scrumptious. My mom and I are already planning our next visit!<br />

CASA El Dorado provides<br />
support, empowerment, and<br />
a voice for abused, neglected,<br />
and at-risk community youth and<br />
families. The heart of their program is<br />
the Court Appointed Special Advocate<br />
(CASA), a specially trained and<br />
supervised community volunteer who’s<br />
appointed by a juvenile court judge.<br />
CASA advocates make a difference<br />
in the lives of children by researching<br />
and monitoring cases involving<br />
children in foster care and the juvenile<br />
justice system. The advocates build<br />
caring, consistent relationships with<br />
their “CASA kids” by spending time<br />
with them and gathering information<br />
about their life so they can report back<br />
to the judge.<br />
By elevating the child’s voice in<br />
court, the judge can make more<br />
informed decisions<br />
as to what services and support are in the<br />
child’s best interest—decisions that can<br />
have life-altering ramifications.<br />

community that unites over like-minded<br />
goals. Working with our local partners,<br />
we can more effectively help break the<br />
intergenerational cycle of child abuse<br />
and neglect, help stabilize families and<br />
homes, and improve the lives of our most<br />

1992, the organization has served over<br />
