Skinny the ‘Super<br />

Senior Seal’ continues<br />

defying record<br />

books at Oregon<br />

Coast Aquarium<br />

Skinny was just a harbor seal pup when she<br />

was found stranded on a Washington beach,<br />

orphaned, dehydrated and starving. Though she<br />

received immediate care, Skinny was eventually<br />

deemed non-releasable and given a temporary<br />

home in Tacoma, Wash., at the Point Defiance<br />

Zoo & Aquarium.<br />

Defiance proved to be a fitting description<br />

for Skinny because, since that day in 1975, she<br />

has gone on to defy more than just the odds of<br />

survival. In nature, harbor seals can live into their<br />

late teens, with those in human care generally<br />

living into their 20s. Now, at age 48, Skinny has<br />

defied the record books as well by becoming the<br />

oldest-living seal on record — a Super Senior in<br />

seal terms.<br />

“Skinny has been alive longer than her<br />

caretakers,” said Brittany Blades, Oregon Coast<br />

Aquarium’s Curator of Marine Mammals. “She’s<br />

seen it all. There have been major changes in<br />

animal husbandry practices over the last 50 years,<br />

and she’s adapted amazingly.”<br />

The aquarium became Skinny’s permanent<br />

home just before its grand opening in 1992, with<br />

Skinny becoming — and remaining — a fan favorite<br />

through the decades. Blades began working<br />

with Skinny 12 years ago, building a foundation<br />

of trust that has been mutually beneficial. As it<br />

turns out, you can teach an old seal new skills.<br />

Through patience, positive reinforcement, and the<br />

dedication of aquarium mammalogists, Skinny<br />

has surpassed expectation after expectation, and is<br />

now the most self-assured seal at the Oregon Coast<br />

Aquarium.<br />

In fact, Skinny continues to learn and practice<br />

new behaviors. For example, during training,<br />

marine mammals learn to lie down on cue, follow<br />

a target, hold a pose, and more. These skills<br />

aren’t for entertaining crowds; they are important<br />

abilities needed during medical exams, allowing<br />

the animals to participate in their own care. Much<br />

like humans, harbor seals are prone to arthritis,<br />

cataracts and other age-related ailments. Because<br />

of this, aquarium mammalogists are well-versed<br />

in looking after geriatric animals like Skinny,<br />

providing specialized treatment — including<br />

acupuncture, laser therapy and even chiropractic<br />

adjustments — to ensure she stays healthy and<br />

comfortable through her golden years.<br />

“Earning Skinny’s trust, watching her progress,<br />

and growing with her has been a highlight of my<br />

career,” said Blades. “It’s truly been an honor.”<br />

During a recent electrocardiogram to check up<br />

on her heart health, Skinny knew exactly what to<br />

do. On her cue, she followed, rolled, and held still<br />

as veterinary staff examined her. Twenty minutes<br />

later, the results were in: Skinny remains as healthy<br />

as ever.<br />

She’ll continue to live out her retirement at the<br />

aquarium, charming visitors, volunteers, and staff<br />

alike. As anyone who’s seen Skinny can tell you,<br />

she’s easy to pick out from a crowd thanks to her<br />

distinctive sleek silver fur and wide, engaging eyes<br />

— which caretakers joke don’t blink because, if she<br />

did, another 48 years might just fly by.<br />

LIGHT<br />

They often don’t get a second look, but the<br />

seaweed off local beaches are a world unto<br />

themselves. Now they are the subject of a new<br />

exhibit at the Pacific Maritime Heritage Center<br />

on the Newport Bayfront, with June 2-4 set aside<br />

for Seaweed Weekend and a special look at marine<br />

flora.<br />

The Lincoln County Historical Society presents<br />

“The Curious World of Seaweed” exhibit, with<br />

color “portraits” of seaweed, merging history, art<br />

and science — all highlighting seaweed’s vital role<br />

as the base of the food chain.<br />

Also featured are stories of indigenous peoples’<br />

and pioneer women’s connections to seaweed,<br />

and a glimpse into their importance to local<br />

commercial and sport fisheries.<br />

The exhibit is a traveling show of the work of<br />

artist and author Josie Iselin of San Francisco, in<br />

partnership with Exhibit Envoy, and is based on<br />

her book, “The Curious World of Seaweed.”<br />

The exhibit arrived in Newport in crates, ready<br />

to be installed. ”We pulled some glass floats<br />

from our collection to add to it,” said Susan<br />

Tissot, executive director of the Lincoln County<br />

Historical Society, which maintains the Heritage<br />

Center.<br />

The traveling exhibit is sponsored by Englund<br />

Marine & Industrial Supply, with support from<br />

Discover Newport, Best Western Agate Beach and<br />

Local Ocean.<br />

Tissot said her husband, a marine biologist,<br />

suggested she contact Iselin and showed her<br />

Iselin’s book. Tissot called Iselin, learned about<br />

the traveling exhibit and arranged for its showing<br />

in Newport, its first appearance in the Northwest.<br />

“We’re across the street from the commercial<br />

fishing fleet, and without seaweed, that industry<br />

doesn’t exist,” Tissot said. “There’s definitely a<br />

concern about the future of kelp and seaweed,<br />

which we can’t take for granted. And seaweed<br />

has become an important industry.” She noted<br />

that Oregon Seaweed in Garibaldi produces dried<br />

dulse seaweed as a seasoning and as a snack.,<br />

In addition to learning about the historical role<br />

seaweed has played in coastal living, Tissot said<br />

exhibit-goers can view Iselin’s art, both in prints<br />

and on 8-foot banners hanging from the ceiling.<br />

Iselin collects and dries seaweed, including<br />

kelp, puts it on a flatbed scanner and adds color to<br />

the digital copies to generate the imagery for her<br />

painting-like prints, notecards and scarves, some<br />

of which are available at the Heritage Center’s gift<br />

shop.<br />

content,” Tissot said. “With its combination of art,<br />

history and science, it has everything you need to<br />

know about seaweed. And it’s a great opportunity<br />

for people to see Josie’s amazing work, and a great<br />

way to learn why seaweed is so important in the<br />

ecosystem.”<br />

Iselin has a bachelor’s degree from Harvard and<br />

a Master of Fine Arts degree from San Francisco<br />

State University. She is co-director of the Above/<br />

Below collaborative, working for recognition of<br />

the oceans’ kelp forests.<br />

A special feature of the exhibit is a newly set<br />

up children’s area, with a kelp forest created by<br />

Newport resident Carol Shenk.<br />

“Carol has gone above and beyond,” Tissot said.<br />

“She is an incredibly talented artist and author of<br />

children’s books. We’re very lucky to have her as a<br />

volunteer in our archives.”<br />

Shenk, who moved to Newport in 2019, retired<br />

from a career as an archivist for King County<br />

in Washington state. Since moving to the coast,<br />

she has volunteered with the historical society<br />

archives as well as with the Guin Library at the<br />

OSU Hatfield Marine Science Center, but she is<br />

now focusing on her art. She has taught beginning<br />

drawing at the Newport Visual Arts Center and<br />

works primarily in mixed media and assemblage.<br />

“It’s been exciting to create something that<br />

could support the exhibit,” she said of her kelp<br />

forest.<br />

Shenk used unbleached wax paper to create<br />

the kelp, along with paper, string, beeswax and<br />

paint. “I tried to keep it non-toxic because it’s in<br />

an area for kids,” she said. “And I wanted to make<br />

it compostable.<br />

“My goal for the installation was to create the<br />

feeling of an underwater kelp forest, and to have<br />

the feeling of the kelp floating,” Shenk noted.<br />

The seaweed exhibit, which is in the mezzanine<br />

gallery, runs through Oct. 21. The museum, at 333<br />

SE Bay Blvd., is open Tuesdays through Sundays<br />

from 11 a.m. to 4 p.m., with parking available on site.<br />

OPEN FARM DAY<br />

AT CAMANNA’S<br />

PETITE<br />

PARADISE<br />

Anna Brown of Siletz is happy to share the love,<br />

peace and joy she gets from her family’s farm,<br />

Camanna’s Petite Paradise — and she has 230<br />

animals to help her along that path.<br />

Anna and her husband, Cameron — namesakes<br />

of the farm — settled in 2000 on 30 acres on<br />

Old River Road outside of Siletz. Cameron is an<br />

engineer at the Georgia-Pacific mill in Toledo, but<br />

still finds time to shear the farm’s sheep and act<br />

as handyman, while Anna takes care of the farm<br />

and its animals.<br />

“Although I have a master’s degree in animal<br />

science from Oregon State University and have<br />

worked in the livestock industry, I feel very blessed<br />

to be able to stay home and take care of my family<br />

and animals,” Anna said. She also grows flowers<br />

and vegetables, and enjoys photography, baking<br />

and cooking. But her animals are a priority, and<br />

they are a wondrous collection — one she is eager<br />

to share at Camanna’s Open Farm Day.<br />

Farming has been an integral part of Anna’s<br />

whole life. She grew up on 10 acres in Brookings<br />

and got her first goat more than 50 years ago,<br />

eventually getting involved with breeding goats.<br />

She has had Nigerian goats for 23 years and helped<br />

develop the Nigerian dwarf dairy goat breed, a<br />

miniature milker that she said is now the most<br />

popular breed in the U.S.<br />

The farm is now home to 12 species of animals<br />

— 13 if you include the Canada geese that land<br />

at the farm pond. The animals include 11 llamas;<br />

eight alpacas; five Kunekune pigs (with litters<br />

expected in July); shetland sheep; horses; lots of<br />

goats; the rare Valais Blacknose sheep; six livestock<br />

guardian dogs that live in the pasture and barn<br />

with the animals they guard; rabbits; chickens;<br />

small dogs and barn cats.<br />

While none of the animals live in the house,<br />

“they have a pretty posh farm life,” Anna said.<br />

“It’s really peaceful here, and we have a pond<br />

with a bridge out to an island. The goats live on<br />

the island and have a hut there. People can walk<br />

around the pond and can get to experience farm<br />

life in the pastures with the animals.”<br />

Open Farm Day<br />

“We try to share the beauty and peace of all<br />

these animals,” Anna explained, noting that one<br />

way she can do that is to host a monthly Open<br />

Farm Day. Visitors have come from as far away as<br />

Hillsboro, and some return every month for Open<br />

Farm Day activities. Anna said about 700 people<br />

visited last year.<br />

From 2017-19, the Browns took some of their<br />

animals to the Oregon State Fair in Salem for a<br />

mixed species display. Since COVID, however,<br />

she has shifted to the open farm concept, inviting<br />

people to come to their Siletz home and meet the<br />

animals where they live.<br />

“We feel very blessed and want to share that<br />

with the public,” Anna said.<br />

This year marks the third that the farm is<br />

hosting Open Farm Days from May through<br />

October, set for the second Saturday of the month.<br />

No admission is charged, but donations are<br />

welcome. Visitors are asked to sanitize their shoes<br />

before going into the barn and pasture, as a way to<br />

protect the herds from disease.<br />

And there’s always something special added<br />

to Open Farm Day — last month featured bottle<br />

feeding baby goats and sampling fresh goat milk<br />

and homemade cookies, and this month’s event<br />

will include live music from one of the farm’s<br />

oldest child, Shantelle, 28, will be selling dahlia<br />

tubers. Also helping out will be the Browns’ two<br />

sons, both students at OSU, who return home on<br />

weekends to help with the farm.<br />

There’s also an opportunity to buy handcrafted<br />

items such as canvas bags featuring Anna’s photo<br />

art, as well as fleeces.<br />

And this is a great time of year to stop by<br />

Open Farm Day for the pure joy of it, with many<br />

newborns present to delight visitors.<br />

The farm has a small flock of rare Valais<br />

Blacknose Sheep, including four ewe lambs with<br />

the rare spotted “Spitti” color pattern. Anna said<br />

there’s only a 2 or 3 percent chance to have that<br />

pattern, a 1 in 50,000 to 1 in 100,000 chance to<br />

have four, and probably an even more rare chance<br />

to have them born in a row.<br />

The spitti pattern in females is considered to be<br />

good luck, and with four spitti ewes born in a row,<br />

“we should have lots of good luck,” Anna said.<br />

And if that’s not enough cute babies, the farm<br />

has about 40 miniature goat kids for visitors to<br />

admire.<br />

The family has been a host for the Workaway<br />

program since January 2022, and has had<br />

participants from 15 countries. “It’s like bringing<br />

the world to us,” Anna said. “We share our lives<br />

with them.”<br />

The Workaway program brings volunteers<br />

together with families across the globe. The<br />

Browns are a host for the program, in which<br />

volunteers put in about 20 hours a week of work<br />

at the host site in exchange for food and lodging.<br />

‘CELEBRATING<br />

CREATIVITY’ AT<br />

THE VAC<br />

The Coastal Arts Guild and American Easel are excited to announce the<br />

opening of their second annual exhibit featuring 45 new works on wood<br />

panels. “45 x 45: Celebrating Creativity” will be on display in the Upstairs<br />

Gallery at Newport Visual Arts Center from today (Friday) through July 29.<br />

This unique show features new, multidisciplinary works of art from 45<br />

community artists. Each begins with identical 10 x 10-inch wood panels as<br />

their base, but what they do from that point is entirely up to them. The<br />

show will feature a variety of mediums, from acrylics to mixed media, fabric<br />

collage, linoleum print and more.<br />

Not only visually beautiful, the exhibition also does something beautiful —<br />

it provides funding for VAC needs. Artists purchased their base panels, and<br />

that money will fund building improvements. The sale of completed pieces,<br />

however, will benefit artists directly and fully. When a visitor purchases a<br />

completed panel from the exhibition, 100 percent of the price will go directly<br />

to its creator.<br />

“The 45 x 45 show gives artists an opportunity to share the vast variety of<br />

their mediums and styles with the public while simultaneously supporting<br />

improvements at VAC,” said Chasse Davidson, VAC director. “We’re grateful to<br />

the Coastal Arts Guild and feel fortunate to have their support. Their volunteer<br />

contributions help keep our galleries accessible to the public, and their monthly<br />

Tea & Talk provides a platform of introduction for visiting artists.”<br />

ceremony will reveal which pieces were selected by official judges. Wine and<br />

light refreshments will be served, and admission is free.<br />

While residents and others are noticing a small sailboat around near the Port of Newport International<br />

Terminal, U.S. Coast Guard personnel say they are aware of it. A Coast Guard spokesperson said<br />

Tuesday that they received a call a couple weeks ago that the boat had run aground on the sandbar.<br />

Personnel pulled one subject from the vessel and later attempted to contact its owner. According<br />

to personnel, the rescued subject was not the owner, but no further information was disclosed.<br />

Let’s face it: while fishing from a charter boat<br />

is the safest, surest way to bring home the bacon,<br />

sure-footed anglers can put together a limit of hardfighting<br />

rockfish right from the stony headlands<br />

and jetties of Depoe Bay and Newport. All you<br />

need is a cooperative ocean and the right setup for<br />

“extreme fishing.”<br />

The popularity of “extreme fishing” has<br />

exploded with websites and YouTube video<br />

channels devoted to hazardous locations and the<br />

gear to stay comfortable and safe. We live in an<br />

outdoors utopia where the game can kill and eat<br />

you and you can go fishing and never be seen<br />

again. It is impossible to overstate the dangers of<br />

bank fishing on the Pacific Ocean — at some dicey<br />

spots I fish with a tether and a crash helmet where<br />

a slip on the knife-sharp, algae-covered rocks<br />

would deliver me to Davey Jones.<br />

Among the inexpensive items needed for safe<br />

bank fishing are:<br />

• About 50 ft. of polypropylene rope and a<br />

couple of D-rings for your safety-rope setup. Tie<br />

the rope to your waist and secure it to a suitable<br />

rock;<br />

• A floatation-style fishing vest with plenty of<br />

pockets for gear and the buoyancy to keep you<br />

afloat if you fall from the rocks;<br />

• A bike helmet to avoid serious injury from<br />

falls on the wet, moss-covered rocks.<br />

The predominant bite along the rocky shorelines<br />

of the Central Oregon Coast is black rockfish,<br />

but don’t rule-out other hard-fighting species<br />

including perch, sea bass, ling cod and greenling.<br />

To target rockfish, use as light a rig as conditions<br />

allow — a catfish rod and a spinning reel wound<br />

with 25 to 50 lb. test will do the trick. A lead-head<br />

jig with a plastic tail that mimics a swimming baitfish<br />

is practically irresistible to rapacious snappers<br />

that measure up to 17 inches or more.<br />

Bring along an assortment of sizes and colors,<br />

and pack a colorful climbing rope, a helmet and<br />

flotation gear as though your life depends on it!<br />

As a child of the ’80s, I grew up eating a lot of<br />

things no one should consume on a regular basis.<br />

I lived on microwave TV dinners, Totino’s pizzas,<br />

potato chips, and lots of instant ramen noodles —<br />

and my health suffered because of it. My weight<br />

was a constant struggle, I had chronic headaches,<br />

acne and more fatigue than a teenager should, and<br />

I never understood why. I honestly thought my<br />

body was just different than other people — having<br />

absolutely no clue that it was the processed foods<br />

I was consuming that were causing such a negative<br />

effect on my body.<br />

It wasn’t until I was in my late teens when<br />

my weight really became a huge struggle that I<br />

decided to try a new “diet,” where I only ate foods<br />

that I picked from my mother’s garden. I vividly<br />

remember that first week of only consuming<br />

cucumbers, tomatoes, radishes, leaf lettuce and<br />

adding grilled chicken breasts for protein. I began<br />

shedding weight immediately, but aside from<br />

the obvious physical change, I felt amazing. My<br />

headaches were gone, my fatigue was gone, my skin<br />

looked better, my overall mood improved, and I<br />

truly felt better than I had ever felt in my life. It<br />

was at this moment when I made it my mission to<br />

learn about real foods and what effect they have<br />

on our bodies.<br />

The term “real food” is defined as “all foods<br />

that have not been industrially processed or foods<br />

that have not had their natural qualities interfered<br />

with or the quality of their composition reduced.”<br />

But to put it simply, if it grows naturally (whether<br />

plant or animal) it’s real, if it’s made in a factory it’s<br />

not. It was at that moment that I tossed all process<br />

“foods” and replaced them with fresh fruits and<br />

vegetables, whole grains, and lean proteins like<br />

chicken breasts, fish and seafood and embarked on<br />

a whole new lifestyle, not just for my weight but for<br />

my overall health.<br />

It’s been well over 20 years now since I<br />

implemented this lifestyle change, and I can’t say<br />

that I’ve had a single TV dinner or Totino’s pizza<br />

since, but some habits are harder to break than<br />

others — those instant ramen noodles are still my<br />

guilty pleasure. However, these days it’s all about<br />

balance; cooking and eating real foods most of the<br />

time but occasionally treating myself to those foods<br />

I still love from my childhood, like the occasional<br />

bowl of ramen noodles.<br />

So this week I decided to play around with some<br />

instant ramen. Although chicken is my usual goto<br />

flavor, I thought the Lime Chili Shrimp flavor<br />

might go well with clams, and boy was I right! That<br />

classic ramen flavor with a hint of heat and lime<br />

on those sweet and crispy clams were a home run.<br />

Plus, incorporating those noodles with some other<br />

fresh ingredients like cabbage, carrots and green<br />

onions made it somehow feel a bit healthier.<br />

At the end of the day, life is short so we certainly<br />

want to enjoy the foods we eat, but we also want to<br />

feel our very best doing so. As a bonus, getting out<br />

there and digging these clams burns calories and<br />

builds muscle helping us feel our very best.<br />

Lime Chili Fried Clams<br />

Ingredients:<br />

• 1 limit of cockle clams, sliced in half<br />

lengthwise (slicing them lengthwise through the<br />

foot keeps them tender)<br />

• 2 cups flour<br />

• 1/2 tsp baking powder<br />

• 1/2 tsp baking soda<br />

• 4 Lime Chili Shrimp Maruchan seasoning<br />

packets<br />

• 1/2 tsp salt<br />

• 1/2 tsp garlic powder<br />

• Zest from one lime plus lime wedges for<br />

serving<br />

• 1 egg<br />

• 1 cup milk<br />

• Sweet chili dipping sauce for serving<br />

Directions:<br />

Heat oil to 375 degrees. In one large bowl,<br />

combine flour, baking powder, baking soda, Lime<br />

Chili seasoning packets, salt and garlic powder.<br />

Whisk to fully combine the ingredients.<br />

In separate bowl whisk together milk and egg.<br />

Dredge clams on both sides with the flour<br />

mixture, then to the egg mixture on both sides,<br />

and again into the flour mixture. For this step I<br />

press the flour mixture down onto the clams to<br />

ensure they’re dredged fully. Gently shake off<br />

excess flour.<br />

Fry to a golden brown, remove from oil and set<br />

on rack or paper towel.<br />

For serving add a generous amount of lime<br />

zest on top on clams, serve with additional lime<br />

wedges and sweet chili sauce for dipping<br />

Ramen Noodle Salad<br />

• 2 (3 oz) pkgs. dry Lime Chili Shrimp flavor<br />

ramen, broken into small pieces, (seasoning packet<br />

set aside for Lime Chili Fried Clams)<br />

• 6 cups thinly sliced green cabbage<br />

• 2 cups thinly sliced red cabbage<br />

• 2/3 cup shredded carrot (approximately one<br />

medium carrot)<br />

• 1/3 cup chopped green onions<br />

• Sliced almonds and sesame seeds optional<br />

Dressing<br />

• 1/2 cup olive oil<br />

• 1/4 cup rice vinegar<br />

• 1/4 cup honey<br />

• 1 Tbsp peeled and minced fresh ginger<br />

• 1 tsp minced garlic<br />

• 1/2 tsp toasted sesame oil<br />

• Salt and freshly ground black pepper to taste<br />

SOUTHERN FRIED<br />

ROCKFISH PO BOY<br />

For Southern Fried Rockfish<br />

Ingredients:<br />

• rockfish filets (or any whitefish filets would<br />

Directions:<br />

In a large bowl, whisk together milk and hot sauce. Add rockfish, tossing to<br />

coat. Cover and refrigerate for at least 1 hour.<br />

Heat oil in Dutch oven or deep fryer to 375 degrees.<br />

In a separate bowl, whisk together cornmeal, Johnny’s, garlic powder, and<br />

paprika. Remove rockfish from bowl, discarding milk mixture. Dredge rockfish<br />

in cornmeal mixture, shaking off excess. Fry rockfish until golden brown, 3 to 4<br />

minutes.<br />

Serve on baguette or rolls with lettuce tomato and spicy mayo.<br />

Spicy Mayo<br />

Ingredients:<br />

• 1/2 cup mayonnaise<br />

• 2 tsp. Franks Red Hot Buffalo Wings Sauce<br />

• 1/2 paprika<br />

• 1/2 red cayenne<br />

Mix well.<br />

Spicy Dungeness Crab Dip<br />

Ingredients:<br />

• 2 cups lump crab meat, plus 1/4 cup for topping dip after baking<br />

• 8 oz. cream cheese, softened<br />

• 1/2 cup mayonnaise<br />

• 1/2 cup Parmesan cheese<br />

• 1 Tbs. fresh chives<br />

• 2 garlic cloves, minced<br />

• 1 tsp. Worcestershire sauce<br />

• crushed red pepper flakes<br />

• sourdough bread bowl for serving dip in plus<br />

• 1 Tbs. butter and 1 garlic clove for frying sourdough bread crumbs.<br />

Directions:<br />

Preheat oven to 350 degrees.<br />

Add softened cream cheese, mayonnaise, parmesan cheese, garlic,<br />

Worcestershire, crushed red pepper flakes and chives in a mixing bowl and mix<br />

until combined. Gently fold in 2 cups crab meat.<br />

Cut off top of sourdough bread and gently hollow out loaf leaving enough<br />

bread around the edges for structure. Fill bread bowl with crab mixture. Bake for<br />

30 minutes or until top is golden and bubbly.<br />

While crab dip is in the oven, break up leftover sourdough bread into small<br />

pieces. Melt one tablespoon butter in skillet and add one smashed whole garlic<br />

clove, add bread and sauté until golden and crisp. Remove garlic clove.<br />

Top hot crab dip with bread crumbs, chives and crab meat, serve with sliced<br />

bread, crackers, vegetables or maybe just a spoon because this dip is delicious on<br />

just about anything!<br />

Fried Clams with Spicy Cocktail Sauce<br />

Ingredients:<br />

•1 limit cockles (20 clams), cut in half lengthwise - this recipe would be great<br />

with any local clams.<br />

•2 cups flour<br />

•1/2 tsp. baking powder<br />

•1/2 tsp. baking soda<br />

•1 Tbs. Johnny’s Seasoning salt<br />

•1 egg<br />

•1 cup milk<br />

Directions:<br />

Heat oil to 375 degrees. In one large bowl, combine flour, baking powder,<br />

baking soda, Johnny’s seasoning salt. Whisk to fully combine the ingredients. In<br />

separate bowl whisk together milk and egg.<br />

Dredge clams on both sides with the flour mixture, shake off excess flour then<br />

transfer to egg mixture, then back and into the flour mixture. For this step I press<br />

the flour mixture down onto the clams to ensure they’re dredged fully. Gently<br />

shake off excess flour.<br />

Fry to a golden brown and serve with spicy cocktail sauce. Enjoy!<br />

Ingredients:<br />

1 cup ketchup<br />

2 1/2 Tbs. prepared horseradish<br />

1 Tb. Worcestershire sauce<br />

Directions:<br />

Mix all ingredients in a small bowl. Enjoy!<br />

HALIBUT FISH<br />

TACOS<br />

I finally checked catching a halibut off my<br />

bucket list!<br />

My husband Jed and I recently went fishing<br />

out of Newport with our very good friends<br />

Tony Thiessen and Eugene Calkins, owners of<br />

Crack’n Crab Cleaner, and thanks to the skill and<br />

knowledge those guys have acquired from fishing<br />

their entire lives, my husband and I both caught<br />

our very first halibut ever.<br />

We left the docks at 6 a.m. sharp, heading 32<br />

miles out from the jetty tips to our destination.<br />

Almost immediately after dropping our tackle in<br />

300 feet of water, we had a bite, and I was ready to<br />

reel in my very first halibut ever. That sucker was<br />

big, and it was heavy. But sadly, due to a tackle<br />

malfunction or perhaps it just wasn’t its time to be<br />

dinner yet, it got away.<br />

But just then, another bite. This one my husband<br />

grabbed and reeled in. Watching him catch his<br />

first halibut was incredible. I knew how much this<br />

fish meant to him, and there’s something about<br />

watching your handsome husband reel in a giant<br />

fish that adds an extra level of excitement to it!<br />

When he got that fish to the boat it was big, 49<br />

inches of good eating to be exact, and being there<br />

to witness that moment and see that huge smile on<br />

his face meant everything to me.<br />

After a bit of time passed we had another bite,<br />

and the guys were so generous to let me have<br />

another shot at reeling one in — and I wasn’t about<br />

to let this one get away! With the help of Tony,<br />

keeping a tight grip on me and the fishing rod<br />

so we both didn’t go overboard into the ocean, I<br />

reeled that 43-inch halibut in. Tagging that halibut<br />

was such an awesome moment, definitely one I’ll<br />

never forget.<br />

Before the day was over, we landed another<br />

41-inch halibut on the boat caught by Eugene<br />

and picked up the crab pots we dropped on the<br />

way out. You know the pros from Crack’n Crab<br />

Cleaner are dropping crab pots any chance they<br />

get so we were double blessed that day with halibut<br />

and Dungeness crab.<br />

Another huge thank you to Tony and Eugene<br />

from Crack’n Crab Cleaner for taking my husband<br />

Jed and I out halibut fishing. I am always so<br />

thankful for the opportunity to spend time with<br />

three of my favorite guys out there on the water<br />

and now so thankful for a freezer full of fish on<br />

top of it.<br />

If I’m being honest, even with all the help from<br />

the guys on the boat, a long day of fishing can be<br />

exhausting, so the last thing I want to do when I<br />

get home is cook an elaborate meal. But thankfully<br />

these fish tacos are super quick and easy and so<br />

incredibly delicious. They’re a perfect way to enjoy<br />

the day’s catch!<br />

Halibut Fish Tacos<br />

Ingredients:<br />

• In a mixing bowl, mix Pride of the West<br />

Batter Mix with your favorite beer to a pancake<br />

• Dredge halibut in batter then fry until golden<br />

brown.<br />

• Top with crunchy red cabbage, sweet cherry<br />

tomatoes, ripe avocados and everyone’s favorite,<br />

that Spicy Sriracha Mayo all tucked inside of a<br />

warmed corn tortilla. OH SO GOOD!!!<br />

Ingredients:<br />

• 1/2 cup sour cream<br />

• 1/3 cup Mayo<br />

• 1/2 tsp garlic<br />

• 1/2 tsp cumin<br />

• 1/4 tsp salt<br />

• 3-4 tsp. Sriracha<br />

If you’re missing the pure nostalgia of an oldfashioned<br />

community celebration, step back into a<br />

better era at the the Toledo Summer Festival, July<br />

13-16.<br />

The annual jubilee is a time machine that brings<br />

people together like Gorilla Glue, cementing<br />

Toledo’s status as the tight-knit embodiment of<br />

Oregon hometown charm. Parades, fireworks,<br />

a carnival and feats of logging verve practically<br />

unheard of in the lowlands give the event an<br />

exciting, cinematic quality — so bring your camera!<br />

The event begins Thursday, July 13, with a<br />

sidewalk chalk contest, 10-noon, and coronation<br />

of the festival court at 7 p.m. A Main Street kiddie<br />

parade launches festivities Friday, July 14, at 6<br />

p.m. when gates to the Rainier Carnival open<br />

at sprawling Memorial Field. New rides and eyepopping<br />

midway events are scheduled, including a<br />

stilt walker and fire dancers.<br />

On Saturday, July 15, the Festival Grand Parade<br />

begins its winding march from the bowling alley to<br />

Main St. at 11 a.m., led by Grand Marshal Scott<br />

Warfield, an iconic Toledo logger. Carnival gates<br />

swing wide open at noon to the sounds of DJ<br />

music and the alluring aromas of midway treats.<br />

A respite from the summer heat can be found in<br />

the Bingo Tent.<br />

Chain saws will cough and roar to life at 1 p.m.<br />

when treat an awestruck audience to a display<br />

of deep-woods skills such as the axe throw, the<br />

obstacle pole, the double buck and the block<br />

toss; kids will display their own logging skills at<br />

3 p.m. Line-dancing and amazing displays of<br />

sword-swallowing and other astounding feats by<br />

American Mayhem are set for 7 p.m. Following<br />

the dusk events, fireworks will illuminate the<br />

picturesque mill town nestled in the foothills of<br />

the Coast Range on Highway 20, just five miles<br />

east of Newport.<br />

The Toledo Summer Festival concludes Sunday,<br />

July 16, with a magic show, 10 a.m. to noon,<br />

followed by a community tug-o-war. Chances are,<br />

you may already feel the pull of this celebrated<br />

homage to community ties, now in its 38th year.<br />
