Once the venerable wine and spirits division of the Aylesbury<br />
Brewery Company, <strong>James</strong> <strong>Pettit</strong> stands as a stalwart Wine<br />
Merchants establishment, its roots stretching back to 1737.<br />
Our unwavering commitment to service, quality, and, above<br />
all, empowering the wine category, sets us apart.<br />
Gone are the days of patrons effortlessly streaming through<br />
your venue's doors. Today, their time and wallets are pulled<br />
in countless directions, making the art of offering the perfect<br />

Having assumed the helm of <strong>James</strong> <strong>Pettit</strong> & Co in 2010<br />
under the Dayla banner, I've witnessed the wine industry's<br />
ceaseless evolution. We've adapted in tandem, embracing<br />
ecological responsibility with a focus on organic, biodynamic,<br />
and natural wines. Our vegan wine selection burgeons as we<br />
respond to the choices of a conscientious clientele.<br />
But, our most significant investment has been in our people.<br />

Argentina’s appearance and rise on the international<br />
wine map is a very recent story with little or no exports<br />
on the run up to the 1990’s and now sitting 6th in the<br />
world’s wine production. After many years of economic<br />
chaos and stagnation we have seen massive investment<br />
coming into the region, rejuvenating their old cellars,<br />
building modern wineries.<br />
Located in the South American continent in a territory<br />
that is four times larger than France, Argentina is one of<br />
the world’s nature reserves. Privileged with outstanding<br />
natural richness and extraordinarily diverse landscapes,<br />
Argentina boasts high mountains and plains, lush<br />
vegetation and extreme deserts, forests and steppes,<br />
glaciers and waterfalls.<br />
The wealth of natural ecosystems includes vast, highly<br />
productive grape growing regions stretching at the<br />
foot of the Andean strip to the West of the country,<br />
from latitude 22˚ south to latitude 42˚ south. It is in<br />
this context with five centuries of development, that<br />
Argentina has crafted such an extraordinary wine<br />
industry. The altitude, the wide range of temperatures<br />

Today, Argentina leads production of the grape with over 75% of all the acres of Malbec in the world.<br />
In a way, Argentina reinvigorated Malbec as one of the top 18 noble grapes. Now it grows<br />
in several countries and continues to grow in popularity.<br />
Malbec’s Blind Tasting Tell<br />
Look for a magenta-tinged rim. Malbec wine is a deep purple-red that is nearly opaque,<br />
similar to Syrah and Mourvedre. However, Malbec wines will often have a bright magenta rim.<br />
A tell! Why not host a blind tasting party of your own.<br />
Umami Lover<br />
Unlike Cabernet Sauvignon, Malbec doesn’t have a super long finish. Because of this, Malbec<br />
is great with leaner red meats (ostrich anyone?). The wine does extremely well with funky flavours<br />

one of the largest wine producing countries in<br />

fields to the South and the Pacific Ocean to the west – all of<br />
which make Chile a veritable agricultural island.<br />
Chile made its reputation as a producer of relatively low<br />
cost Cabernet and Merlot grown with enviable ease in the<br />
Central Valley, now the viticultural limits are being tested in<br />
all directions. Their wines becoming more refined and more<br />
regionally distinct. No longer do we find Chilean wines just<br />
along the narrow corridor bounded by the Pacific cool winds<br />
or the Soaring Andes. If Argentina is about altitude then<br />
perhaps with Chile it is about latitude.<br />
Chile is exceptionally well suited to vine growing. Its barriers<br />
protecting it from the Phylloxera louse which devastated<br />
Europe in the 19th century.<br />
The UK is still the 2nd largest export market for Chilean wine<br />
but volume and as we have seen in the general market-place,<br />
is in general decline. It is also interesting to note that although<br />
we are drinking less we are spending a more on our wines.<br />

English sparkling market has seen brands develop<br />

When we see volume decline in the On-Trade<br />
industry, thinking how we can premiumise to<br />
grow margin should be sitting in the back of<br />
our minds and English wines all sit at a premium<br />
especially with the high cost of production.<br />
We are not only seeing lots of attention and<br />
recognition rising for the sparkling wines but<br />
also for the still wines of Bacchus, Pinot Gris &<br />
Pinot Blanc. The classic Champagne varieties<br />
continue delivering great quality but suffer<br />

It is not commonly known that the use of fining agents in the<br />
wine-making process can determine if a wine is suitable for<br />
vegans or not.<br />
Fining is a process where a substance is added to the wine<br />
which helps to stabilize and clarify the liquid. The idea is<br />
that it is all then removed, along with particulates that would<br />
otherwise leave the wine hazy. Some of the fining agents used<br />
are also there to target bitter phenolics that are undesirable<br />
in their final wine.<br />

VINEYARD AND WINERY SUSTAINABILITY<br />
It is no secret that the world of winemaking can have<br />
a detrimental effect on the environment. There are<br />
countless opportunities to lower your wine’s carbon<br />
footprint, improve efficiency, and increase your profits<br />
through sustainable practices and make environmentally<br />
conscious decisions.<br />
Every piece of land is different from the next, so what<br />
works on some vineyards may not be appropriate in<br />
others. This is alright! Generally, one third of the wine<br />
industry’s carbon footprint is made during the growth<br />
and development of the wine itself. The other two<br />
thirds of its footprint develop during the packaging,<br />
distribution, and storage of the wine.<br />
A sustainable winery can be defined as a winery that<br />
acts through consideration of the economic, social, and<br />

ORGANIC, BIODYNAMIC & NATURAL<br />
Organic wine is produced from grapes that have<br />
been grown without the use of chemicals, artificial or<br />
synthetic, such as pesticides and herbicides. Instead,<br />
to prevent pests, bugs and weeds interfering with the<br />
grapevines, organic farmers will work in harmony with<br />
nature, not against it.<br />
Biodynamic: Like organic wine, biodynamic wine<br />
starts with grapes farmed without synthetic pesticides<br />
or fertilizers and is turned into wine using few if any<br />
additives. These practices are based on the philosophy<br />
of Rudolf Steiner. The idea is that humans don’t run<br />
the show; instead, they see themselves as guides,<br />
encouraging maximum harmony among all life forms<br />
on the farm. As a result, biodynamic wines tend to be<br />
unique—full of the individual character of the places<br />
that produced them.<br />
Natural wine is ancient, and on trend. Natural wine is<br />
more of a concept than a well-defined category with<br />
agreed-upon characteristics. In its purest form, it is<br />
wine made from unadulterated fermented grape juice<br />
and nothing else. You may see other terms bandied<br />
about; “low-intervention” wine, “naked” wine, or even<br />
“raw” wine. Natural wine is made from grapes not<br />
sprayed with pesticides or herbicides. The grapes tend<br />
to be hand harvested and the resulting must is then<br />
fermented with natural yeasts.<br />

CLASSIC GRAPE VARIETIES<br />
CABERNET SAUVIGNON:<br />
A “noble” grape famous with its spiritual home in<br />
Bordeaux but widely grown around the world and helps<br />
make wines of classic breed, intensity and complexity<br />
that often need to bottle-age for at least 5-10 years<br />
in order to reach peak flavour condition. Aromas and<br />
flavours include: blackcurrant, blackberry, mint.<br />
CARMENERE:<br />
Very limited plantings of this red wine grape are now<br />
found in the Medoc region of Bordeaux, France where it<br />
is used to produce deep red wines occasionally used for<br />
blending purposes in the same manner as Petit Verdot<br />
but was re-discovered in Chile where is was thoughts to<br />
be Merlot and produce stunning straight varietal wines.<br />
CHARDONNAY:<br />
Highly popular, versatile and widely planted<br />
international white variety equally capable of extreme<br />
mediocrity and regal splendour. Chardonnay‘s spiritual<br />
home is Burgundy and very important in Champagne.<br />
There, as in the cooler regions New Zealand and around<br />
the world, the wine made from it is often aged in small<br />
oak barrels to produce strong flavours and aromas, but<br />
of late we see a great rise in the un-oaked styles<br />
becoming more prevalent.<br />
CHENIN BLANC:<br />
A widely grown white-wine grape variety, known as<br />
Steen in South Africa, but its home has to be that of the<br />
Loire Valley. Often made in a variety of styles with or<br />
without some residual sugar. It is the favoured grape<br />
of the Anjou region of France.<br />
GAMAY:<br />
The Gamay grape is a widely grown in Beaujolais and is<br />
an early-ripening clone of Pinot Noir that can do well in<br />
the temperate climates. If picked promptly will produce<br />
a good soft fruity style of red wine.<br />
MALBEC:<br />
Semi-classic grape grown in Bordeaux and Southern<br />
France: Cahors, and in other areas under the name<br />
Cot and in the Alsace has the local name Auxerrois.<br />
Consumers have begun a love affair with this variety<br />
from Argentina – being one of the few varietals that<br />
grew its RSP last year and the year before. With<br />
characteristics of intense summer fruits.<br />
MERLOT:<br />
Classic grape widely grown but with its heart in<br />
Bordeaux. The red wine bears a resemblance to<br />
Cabernet Sauvignon wine, with which it is sometimes<br />
blended, but is usually not so intense, with softer<br />
tannins and notes of chocolate. Matures earlier than<br />
Cabernet Sauvignon. Other countries such as Chile,<br />
Argentina and New Zealand also seem to have the right<br />
climate for this variety and with great success.<br />
MONTEPULCIANO:<br />
Minor grape mostly found growing in central and<br />
southern Italy. Generally made into a blend with<br />
Sangiovese in order to produce a fruity, round,<br />
yet balanced red wine with attractive aroma.<br />
MOURVEDRE:<br />
Robust mediterranean grape variety widely grown in<br />
the southern Rhone region of France and mainly used<br />
to introduce colour and body to the red wine blends.<br />
Select limited plantings in California and Australia,<br />
where the grape is often called Mataro.<br />
MUSCAT:<br />
Traditionally found in Alsace and Southern Rhone<br />
(used for dessert wines) as well as in Australia now<br />
where some exceptionally crafted liqueur wines are<br />
made (Victoria, Rutherglen). Its classic characteristics<br />
are that of musk, grapey notes, orange and can be<br />
floral and aromatic in nature too.<br />
GEWURZTRAMINER:<br />
Widely grown, and one of the mainstay grapes<br />
for which the Alsace is famous, the popular<br />
Gewurztraminer produces white wines with a strong<br />
floral aroma and lychee nut like flavour. Occasionally it<br />
is made into a “botrytized” late harvest dessert style<br />
wine. Does well in the cooler coastal regions of Western<br />
U.S., Australia and New Zealand.<br />
GRENACHE:<br />
A grape variety found widely grown in Spain, (where<br />
it is known under the name Garnacha), the southern<br />
Rhone. It is the main grape used in the red wine blend<br />
known as Chateauneuf-du-Pape, and, along with the<br />
Mourvedre, Cinsaut and some others, makes good wine<br />
blends under the appellation “Cotes du Rhone Villages”<br />
with characteristics of raspberries and white pepper.<br />
NEBBIOLO:<br />
Grape responsible for the long-lived, fine red wines<br />
of the Piedmont region of Italy. The role of honour<br />
includes “Barolo” and “Barbaresco”; all huge, tannic<br />
wines that at their best can take decades to mature<br />
when vinified in the traditional manner.<br />
PAIS:<br />
Chile’s commonplace grape probably imported by the<br />
Spanish conquistadores. Identical to the Criolla Chica<br />
of Argentina and Mission of California and Mexico.<br />
Dry grown in southern regions and increasingly<br />
transformed into interesting wine.<br />

PETIT SYRAH:<br />
Widely grown grape variety in California. Produces a<br />
dark red, tannic wine in the warm regions of California,<br />
used mainly as backbone for Central Valley “jug” wines.<br />
In the cooler northern regions can be made into a<br />
robust, balanced red wine of some popularity.<br />
PINOT BLANC:<br />
Mutation of the Pinot Gris vine. Grape is generally used<br />
to make dry, crisp, rather intense white wines in the<br />
Alsace, parts of Burgundy and in Austria. Used in many<br />
of the better method traditional style sparkling wines of<br />
California because of its acid content and clean flavour.<br />
PINOT GRIS: (A.K.A PINOT GRIGIO)<br />
Clone of Pinot Noir, and also called Tokay Pinot Gris<br />
are one of the best grapes varieties found in the Alsace<br />
where the variety is used to make a golden-yellow<br />
wine with aromatic, fruity flavours that improves with<br />
a couple of years in the bottle, but look out for some<br />
wonderful wines from New Zealand and Australia too.<br />
PINOT NOIR:<br />
The premier grape of the Burgundy and Champagne.<br />
It produces a red wine that is lighter in colour than<br />
the Bordeaux reds (such as Cabernet and Merlot) and<br />
stunning sparkling wines. In the attempt to produce<br />
the best wines from cooler regions, it has proved to be<br />
a capriciously acting and difficult grape variety being<br />
thin skinned and needing great care. Cherished aromas<br />
and flavours often detected are cherry, mint, raspberry<br />
and truffles.<br />
RIESLING:<br />
Germany is the home of Riesling but it is widely planted<br />
in the Alsace as well as Australia and some stunning<br />
styles coming from New Zealand and is renowned<br />
for producing some of the finest white wines in the<br />
world when grown on steep slate vineyards like those<br />
found on the banks of the Mosel. Classic new world<br />
characteristics include apples, limes and other citrus<br />
and tropical fruits and old world styles with petrol and<br />
slate minerals.<br />
SANGIOVESE:<br />
Semi-classic grape grown in the Tuscany region of<br />
Italy. Used to produce the Chianti and other Tuscan red<br />
wines, producing medium-bodied reds with rich black<br />
cherry or plum like flavours and aromas.<br />
SAUVIGNON BLANC:<br />
Classic white-wine variety commonly planted in the<br />
Bordeaux and the Loire and to huge acclaim in<br />
New Zealand. It is also, together with Semillon, has an<br />
important role to play in the production of Sauternes,<br />
the fine botrytis influenced dessert wine of the region.<br />
Sauvignon shows a tendency towards a grassy,<br />
herbaceous flavours (Sancerre), gunflint and cordite<br />
(Pouilly-Fumé) , gooseberries, tropical fruits (NZ).<br />
SEMILLON:<br />
Semi-classic grape widely grown in the Bordeaux and<br />
with some stunning success in Australia. This grape<br />
variety has a distinct fig-like character. In France,<br />
Australia and increasingly in California it is often<br />
blended with Sauvignon Blanc to create better balance.<br />
Wineries in many countries also use the grape to create<br />
dry single-varietal white wines as well as dessert wines<br />
as Semillon is susceptible to infection of the “noble<br />
rot” fungi” it can be used to produce first-class sweet<br />
white wines such as those of the French Sauternes. It is<br />
slow to mature but when it opens up it is sublime.<br />
SYRAH / SHIRAZ:<br />
A grape variety associated with the Rhone Valley,<br />
famous for creating “Hermitage” red wine and Australia<br />
(known as Shiraz). In the state of California, depending<br />
on location, vintage or fermentation technique, it is<br />
used to either produce a spicy, complex wine or a<br />
simple richly fruity style wine.<br />
TEMPRANILLO:<br />
The grape of Rioja. Many of the characteristics of Rioja arise<br />
from the long oak ageing although when vinified without<br />
oak you could find notes of strawberries and soft spices.<br />
VIOGNIER:<br />
A grape varietal grown in the northern Rhone. Has full,<br />
spicy flavours somewhat reminiscent of the Muscat<br />
grape and violets. New plantings in California and<br />
Argentina have created much anticipation among<br />
the wine community. Viognier can vary from almost<br />
Riesling-like character to almost Chardonnay character,<br />
depending on production method.<br />
ZINFANDEL / PRIMITIVO:<br />
The USA has made this grape its own with extensive<br />
plantings throughout California. It is used to produce<br />
robust red wine as well as very popular “blush wines”<br />
called “White Zinfandel”. Zinfandel is noted for its<br />
peppery, fruit-laden, berry-like aromas. ITALY though<br />
has shed its past as an obscure blending grape in<br />
inexpensive wines, and it is now being made into<br />
distinctive, high-quality, varietal wines.<br />

BUILDING YOUR WINE CATEGORY<br />
We are in an age where consumers are increasingly wine-savvy. It pays to get it right, but what makes<br />
a good-looking wine list?<br />
(by the glass or the bottle). We need to recognise how<br />
many wines we offer by the glass and the price points<br />
that these need to sit at as well as the glass size that<br />
we should be trying to focus on to drive the notion of<br />
quality and value.<br />
If your wine list is confusing to read, with no hint to<br />
the style of the wines, people will go for the cheaper,<br />
safer options every time. Almost using your menu at<br />
a battleship game, heading down the price point and<br />
traversing across to see what sits there.<br />
Ultimately the aim of a menu is to support the bar and<br />
your staff to showcase your offering. To try to enthuse<br />
the customer with options and styles that will intrigue<br />
or at least reassure them of quality and encourage<br />
them to spend. I have seen so many food-led venues<br />
with the wine offering so poor that I have opted for a<br />
beer instead, or perhaps we are driving and the wine<br />
available by the glass is the cheapest, so the poorest<br />
quality to pair with the chefs special dish.<br />
The new era of consumer has seen a sizable shift away<br />
from volume, towards quality, trading up to better. In<br />
part, this is because the cost of wine has been increasing<br />
– year after year – along with the various lock-down<br />
periods, where customers were searching out better<br />
wines to sit and drink at home.<br />
There has also been the growing drive towards healthier<br />
living. This idea does not just sit in the wine category,<br />
but extends across the board to beers and spirits.<br />
I have never seen the costs of wine rise the way it has,<br />
Burgundy perhaps being the only exception. These<br />
increases have been bound up with the rises on dry<br />
goods, higher energy costs that our wineries are having<br />
to cope with, as well as haulage cost increases.<br />
Now, add to this the Governments proposed new duty<br />
scheme that landed at the start of August 2023. This<br />
effectively means that we are all going to be slapped<br />
with another increase on our wines in 2023. It does feel<br />
relentless does it not?<br />
It is lucky then that consumers are willing to pay more<br />
for their wines, but they are now more aware of grape<br />
variety and wine regions and will actively search for a<br />
wine that delivers quality.<br />
Our offering needs to be thinking about the range<br />
we want to offer and the styles that are in vogue<br />
alongside a serving that is appropriate for the needs of<br />
the business. What kind of venue are you, restaurant,<br />
wine and cocktail Bar… etc. and to consider how to<br />
encourage further sales. We also need to recognise<br />
how our customers are choosing to consume their wine<br />
The list should be designed to make choosing wine;<br />
an easier, quicker, less stressful and hopefully more<br />
enjoyable experience for our customers - my job is to<br />
make sure that what’s on the list in terms of content<br />
deliver.<br />
