caught up with Mark to find out more:

Hi Mark! You’re a bit of a panto legend

now, how many have you been in?

This will be my eighth one, but it's like

the first day of school! Just doing the

photo call and seeing all the fantastic

costumes, people have all been so

friendly and all the cast are wonderful.

Plus, you get to work with Theo the

Mouse as well, who was the star of the

show the other year!

Oh, that's true! I've heard a lot about

Theo the Mouse. But I'm not here to

take any of Theo’s thunder away –

Theo can be top billing!

Have you been to the Gatehouse

before?

No, but this is a bit of a homecoming

for me as I'm from Wolverhampton,

so very close to Stafford! So it's going

to be great to actually be home for

Christmas. All my mates are going to

be coming this year, which is so cool.

Have you performed in Beauty and the

Beast before?

This is the first time! My mates said to

me, ‘Surely, you're playing the Beast.’

And I was thinking, ‘You cheeky…!’ I've

watched the film, but the panto is a bit

different, so I’m going to be playing

French Frank. I'm really hoping that

the people of Stafford are not wanting

me to do a French accent, because

I can hardly speak English. So, I’ll be

French Frank with a Midlands accent!

KATHARINE HOUSE HOSPICE

CEO TAKES ON 5K RUN

The Chief Executive of a Stafford charity took on a 5k run

with family to help raise funds for their cause.

Professor Richard Soulsby has worked at Katharine House

Hospice for more than 20 years and saw the Tatton Park 5k as

an opportunity to help the charity.

He said: “Katharine House is, for obvious reasons, my number

one charity. I know from all the feedback we receive from

patients and families that every day our care teams make a

real difference to them at a really important time in their lives.

“I am always meeting amazing people who raise funds for

us and thought I should show at least some of the personal

commitment that they have shown to support our work.”

Richard completed the 5k on Saturday, 30 September, with

wife Alison, son Jack and his niece-in-law Georgi. Georgi’s

mother, Susan Osbourne, also helped by driving and

supplying the group with food and drink.

Richard had been training for the event for the last four

months: “It was my first time doing a 5k and it was definitely

more of a walk than a run but it was a really enjoyable event,

less so the actual 5k. It was slightly disheartening to be

overtaken in the last kilometer by a gentleman who had run

the 10k and must have been at least 75!

“Tatton Park is a lovely place and I would like to do another 5k

to see if I could improve my time.”

So far the group have

raised more than £1,200

with more coming in.

Richard said: “We’re so

pleased to have exceeded

our fundraising target. It’s just an

opportunity to raise something for the

hospice, so anything is welcomed.

“All funds raised, no matter how much is involved, are really

important to enable us to keep delivering all of our services

for free. What I know is that the money will be put to good use

for the benefit of the people of mid-Staffordshire.”

Katharine House Hospice aims to enable patients with life

limiting conditions to live life as fully as possible and make

the most of the time they have, as well as supporting their

loved ones.

It costs £3.7m a year to provide vital free palliative care

services and they rely heavily on the support from our

community.

Christmas as French Frank in the

fun-filled fairytale, BEAUTY AND THE

BEAST, from 8–31 December. We

caught up with Mark to find out more:

Hi Mark! You’re a bit of a panto legend

now, how many have you been in?

This will be my eighth one, but it's like

the first day of school! Just doing the

photo call and seeing all the fantastic

costumes, people have all been so

friendly and all the cast are wonderful.

Plus, you get to work with Theo the

Mouse as well, who was the star of the

show the other year!

Oh, that's true! I've heard a lot about

Theo the Mouse. But I'm not here to

take any of Theo’s thunder away –

Theo can be top billing!

Have you been to the Gatehouse

before?

No, but this is a bit of a homecoming

for me as I'm from Wolverhampton,

so very close to Stafford! So it's going

to be great to actually be home for

Christmas. All my mates are going to

be coming this year, which is so cool.

Have you performed in Beauty and the

Beast before?

This is the first time! My mates said to

me, ‘Surely, you're playing the Beast.’

And I was thinking, ‘You cheeky…!’ I've

watched the film, but the panto is a bit

different, so I’m going to be playing

French Frank. I'm really hoping that

the people of Stafford are not wanting

me to do a French accent, because

I can hardly speak English. So, I’ll be

French Frank with a Midlands accent!

What are you most looking forward to

about Beauty and the Beast this year?

The interaction with the audience –

that is why I love panto so much! It's

not like regular theatre where, let’s

be honest, you don't interact with the

audience. For panto, it's lovely to just

chat with them, or throw water over

them and stuff!

So, you’ve heard about the infamous

slosh scenes then?

Oh, yeah. I’m in serious trouble! I’ve realised

that in act two I'm going to have

some right soggy pants. Can’t wait!

All In One Chicken

Introduction

This is a great way to feed the family as the chicken

and veg are all cooked in one very large tray in the oven. It

takes only minutes to put everything together then it sits in the

oven for under an hour with no fussy finishing off to do and only

one pan to wash up.

The recipe allows one chicken thigh and one drumstick per

person, but use less if you are not such big eaters.

Method

1. Preheat the oven to

220°C/200°C fan/Gas mark 7.

2. Place the potatoes in a large

roasting tin with 2 tablespoons

of the oil. Toss well to coat

them. Add the onion, garlic,

bacon and chicken pieces and

toss together.

3. Add the lemons to the

roasting tin. Season everything

well and sprinkle with the

paprika. Roast for 40 minutes.

4. In a bowl toss the courgettes

in the remaining tablespoon of oil

and season with salt and pepper,

then poke them in among the

chicken and scatter the olives

over the top. Return to the oven

for a further 20 minutes, until

the chicken and vegetables are

golden brown and tender.

• Stuffed olives are great, but use plain green or black ones if

you prefer.

• The preserved lemons really give a lovely citrus tang to

the dish – they sit in salt water and are beautifully soft and

citrusy and are well worth using – but if you can’t find them

use one sliced lemon instead.

• Don’t overcrowd the roasting tin, you need everything to be in

a single layer or it will not cook evenly – divide between two

tins if necessary.

• 1kg main crop potatoes,

peeled and cut into 5cm

(2in) chunks

• 3 tbsp olive oil

• 1 large onion, cut into

wedges

• 2 garlic cloves, crushed

• 6 rashers of smoked

streaky bacon, snipped

into 1cm (½ in) pieces

• 6 chicken thighs

• 6 chicken drumsticks

• 5 preserved lemons, cut

into quarters

• 1 ½ tsp paprika

• 3 courgettes, thickly sliced

• 1 x 200g can of anchovystuffed

green olives,

drained

• salt and freshly ground

black pepper

COUNCILLORS GIVE GO AHEAD TO BUY

FORMER CO-OP IN STAFFORD

Senior councillors have given the green light for

the borough council to buy the former Co-op

department store in Stafford.

The large building on Gaolgate Street has been

derelict for a decade and proposals could see it

converted into a mix of retail, residential, market

provision, and a food court as part of a major

transformation of the area.

The council successfully secured more than £14

million from the government’s Future High Street

Fund (FHSF) and last night (Thursday) Stafford

Borough Council’s cabinet agreed to the purchase of

the empty store.

The FHSF has already supported the restoration of

the town’s Market Square which will be completed

this month (October) and work to improve the

approach and entrance to Stafford Railway Station -

expected to get underway soon.

The council announced recently that the latest phase

of their ambitious programme would be buying the

former Co-op building as the catalyst to regenerate

the town.

Councillor Rob Kenney, Deputy Leader, with a

mandate to drive town centre regeneration, told

the meeting last night: “The number one issue for

residents in Stafford is the town centre and that is

why we have put it at the top of our priority list.”

He said their aim was to deliver a town centre fit

for the County Town, that residents will be proud

of, businesses will want to invest in, and visitors will

come to shop, eat and drink, and socialise.

And he added: “We said we would listen to local

people and get things done and this is only the start.”

The meeting heard the Co-op project was only “one

part of the jigsaw, that the building would be a “mixed

use 21st century development” and alongside all the

other initiatives would put “Stafford on the map.”

Negotiations to buy some property in the town

centre were made difficult because the Government

announced how much money the local authority

received from the FHSF, a report to the committee

stated - and some ‘absentee’ owners of premises in

the town had been in contact with the council asking

‘unreasonable’ prices for their buildings following

that announcement.

Council leader, Aidan Godfrey, said: “Stafford town

centre is changing and it is very exciting. I am really

looking forward to sharing more information with

the people of Stafford when we have more details.”

There is already significant investment being made

in the county town with other projects underway or

recently delivered such as the Staffordshire History

Centre and the business hub at Shire Hall, which is

reaching full capacity, and plans taking shape around

the Stafford Station Gateway and Eastgate areas.

This is a plant that is a firm garden favourite but can be a little temperamental dependent on the weather and site. This

year doesn’t seem to have been a good year for Sweet Peas but it is hoped that Phillippa will put us on the right track

for a good display next year. Phillippa is a Local Specialist and hopefully will be bringing along with her some samples of

old-fashioned Sweet Pea seed.
