Hippos, a Mongoose and Me, sequel to the popular A Hippo Love<br />

Quintessentially African trees native<br />

across <strong>South</strong> America, from Ecuador<br />

to Paraguay. How could this be? This<br />

question nagged Nick Norman, an<br />

exploration geologist by profession<br />

and keen birder by hobby. He’d been<br />

surprised to see a woodpecker in<br />

Brazil, where he was working at the<br />

Mall celebrates<br />

grand reopening<br />

Alberton Mall officially reopened its doors with a ribbon-cutting<br />

ceremony, after undergoing an extensive rejuvenation. The centre’s<br />

remarkable improvements and structural modifications will amaze<br />

visitors. A redesigned logo was also presented as part of the rejuvenation<br />

during the first phase of the upgrade, which cost an estimated R15<br />

million. New stores were also introduced, and more are set to be part of<br />

the mall.<br />

Down-to-earth<br />

gal full of surprises<br />

The famous quote from the movie Forest Gump, ‘My mama always said life is like a<br />

box of chocolates. You never know what you’re gonna get,’ is probably the best way to<br />

describe Ella Bella Leite, director of Miss Earth <strong>South</strong> Africa. She sure is like a<br />

box of chocolates, full of pleasant surprises.<br />

We recently caught up with Ella-Bella<br />

and she shared her interesting story<br />

which is filled with a number of<br />

wonderful surprises. Ella-Bella lives in<br />

Bedfordview where she and her family<br />

lead colourful and busy lives. She is<br />

married to Dr Mark Leite and they have<br />

two children - Luke, who is six years old<br />

(his African name is Neo, which means<br />

gift) and Anastasia, who is four years old<br />

(her African name is Mbalenhle, which<br />

means beautiful flower).<br />

And yes, right here is the first surprise<br />

she brings up in the interview, the<br />

fact that her children also carry<br />

African names.<br />

But let’s start at the beginning, her<br />

childhood years, to get a better understanding<br />

of what makes her tick,<br />

what drives her and find out about the<br />

biggest loves in her life.<br />

Ella Bella grew up in Mondeor where<br />

she attended Mondeor Primary and<br />

Mondeor High schools. She was a<br />

learner who thrived and ‘loved every<br />

minute of school. These where the best<br />

years filled with wonderful teachers,<br />

friends and memories.’ For her it was<br />

about sport, fashion shows, friends and<br />

home economics.<br />

At home, she was allowed to explore<br />

in many ways and her creative father<br />

had her and her siblings, Catherine and<br />

‘laat-lammetjie’ brother, Mixali, searching<br />

for Thumbelina and Tom Thumb in<br />

the garden.<br />

‘I loved my childhood. Weekends<br />

consisted of my mum creating many<br />

delicious things in the kitchen for the<br />

many people that always came to our<br />

house on a weekend. I loved playing<br />

ball, with my sister and brother.<br />

‘My dad was out in the garden, cutting,<br />

pruning, fixing or cleaning something<br />

in the garage, and my siblings and I<br />

would learn something new, either<br />

in the kitchen with mom, or with our<br />

aunty Anna Stella (or as we call her Annoula).<br />

Alternatively we would play in<br />

the house and while waiting for our ‘big<br />

fat Greek’ family to descend on us.’<br />

It was during all these moments with<br />

these amazing people, who were<br />

integral in her childhood, that her<br />

passion for food, people and the planet<br />

came about.<br />

‘My aunt taught me about people and<br />

education. My mom taught and shared<br />

her passion for our faith, our family, life<br />

and food, and my dad taught us about<br />

loving others, loving the garden, and<br />

being true to ourselves. We walked in<br />

nature with him, and did charity drives<br />

together; my father was our very own<br />

gentle and strong giant.’<br />

And today, as a mother and wife, she<br />

brings the values of kindness, big family<br />

lunches, nature, charity, laughter and a<br />

deep love and respect for God, home<br />

to her children.<br />

The loves of her life<br />

Ella Bella met her husband in a<br />

rather unusual turn of events at Bedford<br />

Centre.<br />

‘Mark was singing in a band at Bedford<br />

Centre and I asked the lady next to me<br />

the name of the band and proceeded<br />

to tell her that I thought that the tall,<br />

dark singer was very handsome.<br />

‘She proceeded to tell me that it was<br />

her son.<br />

‘I then attempted to change the conversation<br />

into a professional discussion<br />

and asked for the band’s details. That<br />

was 21 years ago and he’s been singing<br />

to me ever since.’<br />

Already mentioned, they have two<br />

children and her favourite leisure time<br />

with her family is sharing cappuccinos<br />

and babyccinos.<br />

‘I love teaching my little people Zulu,<br />

and the best part of the weekend is<br />

getting to go to church and sharing<br />

bible stories with my children.<br />

‘Must-go spots in Bedfordview include<br />

the monthly Bedford Night Market,<br />

Papachinos and Adventure Golf in<br />

Greenstone. We also love going to the<br />

Landing in Dunvegan and visiting the<br />

community park.’<br />

About motherhood<br />

She describes motherhood as the most significant role she’s ever had to be<br />

responsible for. ‘It comes with great sacrifice, great joy and happiness. My children<br />

are the centre of my universe. I believe that I continue to grow with my children.<br />

They are God’s blessing to me and I embrace this with everything that I am.’<br />

There are also no specific special moments she can recall being a mum. It simply<br />

comprises everything which includes her children.<br />

‘LOL. I also honestly never realised that two children could be so different and<br />

this calls on individual parenting skills for each. From pregnancy to breastfeeding,<br />

to late night wakes up, to early morning chaos. Whether its bath time, garden<br />

time, play time, TV time, eating time - my time with my children is precious.<br />

‘The moments are too many to count. Their special little words and actions go<br />

straight to my heart. My sister was on an international trip. On her return, we<br />

collected her from the airport and Luke said, “Hi Catherine, welcome back to<br />

the family.” Anastasia said, “Hello Catherine, I used your make-up while you<br />

were away.’’<br />

‘My greatest achievements are my two little people, who eagerly learn Zulu and<br />

love to surprise people daily.<br />

‘I’ve loved watching my husband be an amazing father and I’m privileged to<br />

have watched him step into that role so effortlessly and so wholeheartedly. I am<br />

grateful for the love and emotion that these youngsters have brought into our<br />

extended family.’<br />

Ella Bella the professional<br />

When asked about her background from her very first job to where she is today,<br />

she said: ‘Over time, some things remain the same and some things change<br />

completely. It is very important that you remain true to yourself.<br />

‘My first job was at a small school in Soweto, called DD Dliwayo Primary School.<br />

One pencil was shared by all the learners in the class. This led to me starting up<br />

a stationery drive which today is 20 years old and very impactful.<br />

‘I was also able to hone my isiZulu speaking skills as my learners needed my<br />

assistance in their home language and my fellow teachers and I would prepare<br />

lessons, in Zulu, after school.<br />

‘I have 20 years of experience of working and uplifting communities. I am also<br />

able to communicate competently in Zulu and I am a director of the Miss Earth<br />

<strong>South</strong> Africa, of which I am super proud.’<br />

For her, the most significant and most important part of what she does is the<br />

fact that she wants to bring hope for a better future.<br />

‘I believe and pray that the work I do, in the communities that I work in, changes<br />

and impacts the lives of people and children around me, I believe that when<br />

you change a moment in a child’s life, you provide them with hope, love and<br />

something to live for.’<br />

Overcoming her worst challenges<br />

‘I believe that challenges are a natural part of life. My hardest period had to be<br />

watching my father’s health deteriorate. We lost him a little more each day and<br />

that was soul destroying. At a point we had to realise that we had to take on an<br />

adult role of caring for him. It was mind-bending to know the strength of this<br />

man and to see him getting more ill over the years. I am grateful for the time<br />

we had together, but this pain is something that will always be with me.’<br />

Future prospects and words of inspiration<br />

Asking her where she sees herself in her career, she smiled and said, ‘I will be a<br />

mother of tweens in 10 years and that’s a scary thought. I would like to write a<br />

book on sustainable living that includes motherhood, cooking, wellness and<br />

looking at the world through green lenses.’<br />

With so much to look forward to, we had to ask if there is something new and<br />

exciting on the horizon she would like to share.<br />

‘I will be filming for TV, so watch this space, as I take the silver screen by storm ...’<br />

And if she could, what words of inspiration would she love to give to other<br />

women out there?<br />

‘Believe in yourself and stand for what you believe is right. Don’t sweat the<br />

small stuff and don’t make your problem bigger than you are. Always keep<br />

your perspective.’<br />

Motherhood: A roller-coaster of emotions<br />

For Jenna, motherhood is a profound experience. It means putting her children’s<br />

needs before her own, being a constant source of guidance and support, and<br />

navigating the highs and lows of parenthood with grace and resilience.<br />

From laughter-filled moments to challenges, Jenna embraces every aspect of<br />

the journey, knowing that the love and bond she shares with her children<br />

are unparalleled.<br />

While motherhood comes with its share of sacrifices, she cherishes the privilege<br />

of witnessing her children’s “firsts” and being there for every milestone. As she<br />

puts it, being a mom means being the last to do many things, but also being the<br />

‘I never know what to say when people ask me what my hobbies are, I mean I<br />

Beetroot-cured gravadlax with horseradish<br />

sauce with Spier Frans K Smit white blend<br />

Gravadlax is a decadent snack perfect for a<br />

celebration. After you’ve cured them at home<br />

overnight, these silky pink fish slices will last<br />

for at least five days in the fridge, so you can<br />

prepare in advance of your party. Serve with<br />

crackers or seed loaf, creamy horseradish sauce<br />

or even some baby gem lettuce. Serves six as a<br />

light meal or starter. Prep and cooking time: 20<br />

minutes plus overnight curing.<br />

You’ll need: For the gravadlax ... 400-600g fresh<br />

trout fillets, skin on; 2 small beetroots, peeled and<br />

quartered; 1 cup muscavado sugar; 1 cup salt,<br />

medium grain<br />

For the creamy horseradish sauce ... 250ml sour<br />

cream; 2 Tbsp hot horseradish sauce (or 1<br />

Tbsp fresh grated horseradish); 5ml Dijon<br />

mustard (optional)<br />

To serve ... crackers of your choice or seed loaf;<br />

baby gem lettuce (optional)<br />

To make: Use a tweezer to pin-bone the fillets, if<br />

they are not already pin-boned.<br />

Place the beetroot in a food processor along<br />

with the sugar and salt. Process to create a<br />

course paste.<br />

Place a sheet of cling-wrap on a clean surface,<br />

then sprinkle 1/3 of the mixture onto it. Place half<br />

of the fillets on the paste, skin side down. Top<br />

with another 1/3 of the mixture and spread it out<br />

to cover the surface of the fillets. Now place the<br />

remaining half of the fillets on top of the covered<br />

fillets, skin side up (so they are lying meat-side<br />

together). Top with the final mixture, then with<br />

another layer of plastic wrap. Wrap up tightly and<br />

place inside a large-enough plastic container with<br />

a lid. Refrigerate overnight or for 12 hours, turning<br />

it over after 6 hours. The sugar/salt/beetroot<br />

curing mix will create a sticky syrup, so be careful<br />

not to mess it on your clothes.<br />

When the curing time is up, open up the fillets<br />

and rinse them under cold running water. Pat<br />

dry. Use a sharp knife to cut thin slivers on an<br />

angle from the tail side to the top, creating<br />

as much surface area as you can. Arrange on<br />

a platter and serve with the sauce and the<br />

crackers/bread/leaves.<br />

For the sauce, mix the sour cream, horseradish<br />

and mustard together in a small bowl.<br />

Serve with a glass of Spier Frans K Smit white<br />

blend - a Bordeaux-style white blend of 80 per<br />

cent Sauvignon Blanc and 20 per cent Sémillon,<br />

with a citrus and lime palate more tropical than<br />

herbaceous, and surprising hints of elder flower.<br />

Avo bagels<br />

Up your avo game. Switch the toast for a bagel<br />

and ... voilà ... the posh version. Perfect for a breakfast<br />

party. This makes four ... we serve with a glass of bubbles!<br />

You’ll need: 2 bagels, cut in half horizontally; 2 avocados;<br />

salt and pepper; plus ½ cup spreads, a small handful<br />

herbs, a sprinkling spices and about 3 Tbsp extra<br />

toppings - see suggestions below.<br />

To make: Toast the bagel halves in a toaster.<br />

Loadshedding tip ... toast them on a griddle or frying<br />

pan on gas. Or alternatively skip the toasting and serve<br />

fresh. Spread with your choice of spread.<br />

Mash, slice, dice or cut the avocados into shapes with<br />

cookie cutters and place on top. Season with salt and<br />

pepper. Sprinkle over herbs, spices and toppings.<br />

cheese with dukkah, honey and sliced avo • Hummus,<br />

feta, red peppercorns, avo stars and baby herbs •<br />

Greek salad platter with cheats poached eggs<br />

Guests coming over for lunch or an early dinner. This<br />

Mediterranean-style platter is affordable, quick to put<br />

together, and perfect to nibble on while sipping a cocktail.<br />

We’re also keen on the Mediterranean diet, so this works<br />

well for us.<br />

You’ll need: 4 eggs; salt and pepper; 2 handfuls cherry<br />

tomatoes; 1 small red onion, thinly sliced into rings; half<br />

a cucumber, cut into sticks; 100g packet Kalamata olives,<br />

drained; 2 rings Feta, broken into pieces; Greek salad dressing.<br />

To make: Make cheats poached eggs by pressing the middle of<br />

a perforated plastic wrap square into a small ramekin or bowl,<br />

leaving the rest of the plastic to hang over the outside edge.<br />

Spray the centre with cooking spray and crack in an egg.<br />

Bring the sides of the plastic overhang up and tie up tightly<br />

with kitchen string, ensuring there are no air bubbles around<br />

the egg. Take the plastic parcel out of the ramekin and<br />

repeat with the rest of the eggs.<br />

Bring a medium saucepan half full of water to a simmer on<br />

medium heat. Carefully add all the egg parcels and cook for<br />

4 minutes for runny yolks or until cooked to your liking.<br />

Carefully cut the parcels open under the knots and unwrap.<br />

Season with salt and pepper.<br />

Arrange the tomatoes, onion, cucumber, olives and Feta on a<br />

platter with the eggs. Serve with a Greek style dressing.<br />

You’ll need: 250ml of Almost Zero Radiant Red, 250ml of<br />

To make: Combine wine with water and fruit juice. Freeze<br />

Modern pot carnations are compact and bushy, producing<br />

masses of bicoloured double flowers above grey-green<br />

stems and leaves. They can be planted as a showy border,<br />

are ideal for gravel gardens, and are hardy plants for patio<br />

containers and hanging baskets. They are perfect gift<br />

plants and can be grown indoors. Unlike the older, taller<br />

carnation varieties that need staking and pinching,<br />

pot carnations don’t have to be fussed over.<br />

Pink Kisses produces long-lasting tiny,<br />

bicolour flowers in sugar pink with<br />

a darker pink centre and a delicious<br />

fragrance. Plants grow up to 35cm high<br />

and wide, and the pickable blooms<br />

are long lasting.<br />

I Love You is a living bouquet in shades of deep pink, soft<br />

pink and rose through to white, as the flowers change<br />

colour as they mature. Butterflies, bees and other<br />

pollinators love this fragrant carnation. It’s a frost tolerant<br />

carnation and works well both indoors and out.<br />

Purple Wedding has single flowers in shades of pink and purple, with<br />

a frilly white edging. The flowers cover this compact plant so that it<br />

looks like a bouquet but lasts a lot longer. When grown indoors or on<br />

the patio it needs plenty of bright light. As a garden plant it stands out<br />

as an edging for a bed, in full sun to semi-shade.<br />

Easy to grow<br />

• Pot carnations need four to five hours of full sun.<br />

Plant in well composted soil that drains well. • Space<br />

plants 30cm apart and plant the crown of the plant<br />

level with the surface of the soil. No need to mulch -<br />

the stems like to be free of lingering moisture. • Once<br />

established, plants are drought tolerant and should not<br />

be over-watered. Let the soil dry out moderately before<br />

watering. The roots tend to rot in soggy soil. • Fertilise<br />

once a month and cut back after flowering for a repeat<br />

flush of flowers. • Container grown plants do best with<br />

morning sun and afternoon shade. Use a good quality<br />

potting soil that drains well and feed with Margaret<br />

Roberts Organic Supercharger after planting. Plants in<br />

containers need more water than those in the garden.<br />

Roses remain the wedding flower of choice, but unlike previous years, this year’s<br />

brides (and wedding planners) are favouring bouquets, arrangements and<br />

installations that pop with colour, yet are natural and organic.<br />

According to wedding planners, bold and vibrant colours resonate with<br />

couples who want a wedding that celebrates their story and their individuality.<br />

Bright colours are energising and joyful, what better way to celebrate the most<br />

memorable day of their lives, says rose grower Ludwig Taschner.<br />

Bouquets that seem freshly gathered from the garden evoke a sense of simplicity<br />

and spontaneity.<br />

Unlike traditional rose bouquets that usually feature a single colour, the latest<br />

trend offers space to play with different coloured roses. Combine them with<br />

other much loved garden flowers like baby’s breath, daisies, grasses and other<br />

foliage that also add texture. What could be more personal than incorporating a<br />

bride’s favourite roses, or those that she grew up with in her parent’s garden?<br />

The more colours the better, so feel free to break with convention when<br />

composing your bouquet. The secret is to get the balance right with rose blooms<br />

in complementary colours, offset with organic textures and hints of opulence.<br />

The effect? Both trendy and timeless.<br />
