Rest home serves up a
fruitcake fit for the king
• By Claire Reid
A REST home has created a
special fruitcake to celebrate the
royal birthday on Monday.
For King Charles III’s birthday,
Arvida Rhodes on Cashmere’s
cook Margaret Hogan enlisted
resident Thea Artz to help create
a fruitcake fit for a king – and all
for a very good cause.
The king is a well-known fan
of fruitcake – he chose one for
his 1981 wedding to the late
Princess Diana, and then again
when he married Queen Camilla
in 2005, as well as at his coronation
celebration last year – and
Margaret reckons this cake is a
real winner.
She used a recipe belonging to
a resident that had been passed
down for generations and had
always been a success with her
family.
The cake, which is a simple
‘melt and mix’ recipe, is packed
with fruit and has a generous
dash of vanilla.
“You should always be using
real vanilla extract,” Margaret
explained.
“The cake goes very well with
custard and ice cream.”
Margaret was helped in the
kitchen by keen royalist Thea,
who has a passion for baking and
keeps up-to-date with royal news
– something she’s done for years.
“I’m a royalist – I always have
been,” Thea said.
“I think King Charles has
his coronation celebration.
been a brave man, going out and
working after his recent cancer
diagnosis.
“I wish (him) the happiest of
birthdays and very good health
for the year ahead.”
In a sweet move, the kindhearted
staff and residents at the
rest home resisted the urge to
tuck into the cake and have instead
decided to deliver it to the
local Cancer Society office for
the hard-working team to enjoy.
“It’s a cause that’s close to
our hearts and something that
is important to our residents,”
Margaret said.
Rose winner honouring her heritage
• By Nina Tapu
A FATHER’S love for his Irish
homeland motivated the national
winner of the Rose of Tralee to
enter the event.
Keely O’Grady, 21, was awarded
the 2024 title in Invercargill on
Saturday night after years of
encouragement from her father
“to stay connected to her Irish
culture”.
Surprised by her win, the Canterbury
representative credited her
father’s persistence for exploring
her Irish identity.
The Rose of Tralee celebrates
young women of Irish heritage in
New Zealand.
“As soon as I turned 18, I was
messaged by my dad every year to
enter but the timing’s never been
quite right because of my university
studies,” O’Grady said.
“I finally entered and was inspired
by my dad and just wanted
to make him proud of me.”
O’Grady will complete her
bachelor of speech and language
pathology degree from Canterbury
University while undertaking
her Rose of Tralee duties.
She was chosen from 10 other
hopefuls to represent New Zealand
at the International Rose
of Tralee festival held in Tralee,
Ireland in August.
The festival was formed in 1959
and is held annually in Ireland. It
celebrates women and appoints
a female ambassador for Irish
culture and heritage.
ROSY GLOW: Keely O’Grady, of Canterbury, was awarded the national Rose of Tralee title in
Invercargill on Saturday.
“Over there you will have every
country’s Rose represented and
it’s a massive celebration of Irish
culture and Irish heritage.
“This is an amazing opportunity,”
she said.
Her father’s family hailed from
County Wicklow and she attributed
a childhood “growing up
OFF ABROAD: Keely
O’Grady will now head to
Ireland in August to take
part in the Rose of Tralee
festival with other winners
from around the world.
around Irish sport, Irish music,
and especially Irish dance” to
them.
Irish dance had been a huge part
of her life since she was six.
“One day my dad showed me a
video of Riverdance and from then
on my heart was hooked and I’m
still Irish dancing at 21.”
Being chosen to represent New
Zealand was an honour, and gaining
“10 new friends that were some
of the smartest and most talented,
kind girls that I’ve met in my life”
made the competition a “meaningful
experience”, she said.
O’Grady was thankful for
being selected and vowed to use
the opportunity to promote “selfdevelopment
and confidence” to
young girls.
We turned to Cameron as we wanted the high profile that we knew would come
from listing with him. What we didn’t realise prior to dealing with him and his
amazing team is how geniune he is. Everything happened when it was meant to
and he held us together when we needed it. I also felt listened to and at no time
ever did I feel spoken down to, something I know a lot of agents can do.
Sam, who works as part of his team, was truely amazing and if she ever changes
her career should consider politics.
All in all I cannot encourage you enough to consider Cameron when you sell
Fruitcake for all
• From page 1
Ingredients
500g sultanas and raisins
(2 1/2 cups)
250 ml water (1 cup)
250 g butter cut into cubes
385 g sugar (1 3/4 cups)
260 g plain flour (1 3/4
cups) sifted
1 tsp baking powder sifted
1 tsp vanilla extract
3 eggs lightly beaten
Instructions
1. Preheat oven to 160°C.
Grease and line a 20 or
22cm square cake tin.
2. Place sultanas and
water in a large saucepan
and bring to the boil
over high heat. Boil for 8
minutes until sultanas are
plump and most of the
liquid has been absorbed.
3. Remove from the
heat and add the cubes of
butter. Stir through until all
the butter is melted. Add
the sugar and stir in well.
Set mixture aside to cool
for 20-30 minutes. If you
want the mixture to cool
quickly, place the base of
the saucepan into a sink
filled with some iced water.
4. While the mixture is
cooling, sift the flour and
baking powder together in
a bowl. Once the mixture
has cooled down, add the
sifted flour and baking
powder and stir together
with a large spoon. Add
the lightly beaten eggs and
vanilla extract and continue
to stir until everything is
combined and there are
no flour pockets left in the
batter.
5. Pour the batter into the
prepared baking tin. Bake
for 1 hour 10 minutes to 1
hour 25 minutes, or until
the middle is cooked and
a skewer inserted into the
centre of the cake comes
out clean. You will need
to cover the top of the
cake loosely with foil halfway
through the baking
time once the top is nice
and golden (at the 35-45
minute mark), otherwise
it will darken too much.
Once cooked, remove from
the oven and allow to cool
in the tin for 15-20 minutes.
Invert onto a wire cooling
rack to continue to cool
completely.
6. Once cooled, cover
the cake with cling wrap
and place in an airtight
container. Cake will keep
for five days. This cake can
also be frozen for up to one
month – wrap well in cling
film, then wrap again in
aluminium foil and place
in an airtight container or
sealed glad bag and place
in the freezer.
Gateway plan off to
council for approval
FIXING earthquake damage and
improving emergency resilience
for the key route in and out of
New Brighton is a step closer.
The Gateway to New Brighton
project has now been approved
by a hearings panel and will see
major upgrades to Pages Rd, a new
bridge and improvements to surrounding
streets.
Other key upgrades include:
• A new T-intersection and
traffic lights to replace the
roundabout at Pages Rd, Hawke St
and Seaview Rd
• No vehicle access to the
T-intersection from Owles Tce and
New Brighton Rd
• A lane change on Pages Rd
westbound from one to two lanes
• Intersection modifications,
kerb buildouts, pedestrian
crossings and parking changes on
surrounding streets
“This bridge is the most significant
transport project in our city
and is a lifeline to the east,” panel
chair and Coastal Ward councillor
Celeste Donovan said.
“It will significantly improve
traffic flow after events such as the
fireworks and allow for a quicker
emergency evacuation.
“The new bridge and road will
be more resilient to future earthquakes
and the effects of climate
MOVING FORWARD: The plan to replace the Pages Rd
bridge and improve surrounding streets has been approved
by a hearings panel and will now go to the full council for
approval.
change, replacing the nearly 100
year old bridge damaged in the
earthquakes.
“It’s been a huge concern for the
community, so we need to deliver
it without further delays.”
The current roundabout area
will become a pocket park featuring
the existing palm tree, and the
traffic lights will be moved slightly
north.
The new bridge will be built
further north from its current
position, so the existing bridge can
be used during the construction
period.
A number of changes to the
project’s original design plan were
also proposed by the panel, such
Thursday May 30 2024
as including space for additional
parking on Hawke and Rawson
Sts and on Seaview Rd.
The panel requested staff report
back on safety and cost implications
for the removal of the kerb
build-out outside the police station
and recommended changing the
shared path on Seaview Rd to a
footpath and separated cycle lane.
The panel also requested staff
report back to the council on a
location for a pedestrian refuge
island and wider footpaths on
Hardy St to make the streets safer
for surrounding schools.
The panel’s recommendations
will be presented to the full
council for final approval.
Neighbouring homes up
for auction on same day
THE OWNERS of three
neighbouring properties are
selling their houses at exactly the
same time and it’s no coincidence.
The new builds located in
Prestons Park were deliberately
launched for sale on the same day
last week and will be sold at the
same auction by the same real
estate agent, One Roof reported.
Harcourts Grenadier listing
agent Andrew Steel said he hoped
marketing numbers 35, 41 and
43 Timara Cres at the same time
would attract more buyers. They
will be auctioned on June 13.
Steel, who has already sold
about 20 properties in the Prestons
Park subdivision, including
five houses on Timara Cres, said
he pitched his idea to the different
owners and they were all on
board.
“It’s not often you get three
houses for sale in the same street.
Yes, they are new builds, but
they are smaller-type builders or
developers,” he told One Roof.
“What I’ve said to them individually
is ‘look, each of your
houses are different and I see the
pulling power of you all having a
campaign together’.”
While it was a calculated risk,
he did not think the houses
would be competing against each
other because they were unique
and at different price points.
ON THE BLOCK: Three new builds on Timara Cres, Prestons,
have different owners who have all decided to list their
properties together. Pictured is the house at No 41.
The two three-bedroom
properties at 41 and 43 are sideby-side
on 442sq m sections with
a view out to the lake, while the
third property at number 35 is
a four-bedroom, two-bathroom
home on a slightly smaller plot of
land.
Prestons Park was launched six
years ago and Timara Cres is one
of the latest areas to be developed.
Said Steel: “A lot of the ones
in this subdivision are three and
four-bedroom homes so you
tend to attract that family style of
ownership.
“I think new builds are a real
attraction because it’s all built to
the latest codes.”
FOR SALE: The property at
35 Timara Cres is several
doors down from the other
two and does not have a
water outlook.
Recent sales in the street
include two four-bedroom, twobathroom
homes that sold at the
end of last year for $955,000, and
$1.02m.
retiring, CTW is running a membership
aimed at helping children learn
the importance of staying safe
around road works.
Beca project manager Jodi
Johnson said a lot of people
work to make our roads safer.
“We are encouraging them
to be road safety heroes and
understand who the heroes are
out on that road, keeping them
safe and looking after our communities.”
Riccarton School was one of
16 schools across New Zealand
to get a visit from the road
safety team.
Teacher Haley Forrester said
with all the road works around
Christchurch at the moment,
the team’s visit was timely.
TRAINING HEROES: Beca project manager Jodi Johnson talking to pupils at Riccarton
School about being a ‘road safety hero’. Pupils, including year 2 Anastasia Wilson, above
road works.
“We need our kids to know
what they’re supposed to do
when they’re around them –
that they don’t just go and get
really close to things because
there will obviously be lots of
hazards and things that aren’t
safe.”
Enjoying scents and sensibilities
Nigel Slater finds
hearty, herby butter
beans and a frangipane
tart add fragrance to a
chilly day
Butter beans, cannellini
and cavolo nero
Serves 2
Beans in jars are more plump
and juicy than those in tins,
but either works well here. It is
essential to include some of the
aquafaba – the bottling liquor.
It adds a creamy quality without
the need for any dairy products.
Ingredients
150g cavolo nero
200g hispi (pointed) cabbage
2 plump cloves garlic
2 Tbsp olive oil
2 Tbsp dill
400g butter beans
250g cannellini beans
1 lemon
Method
• Trim the tough ends of the
cavolo nero stalks, then place
the leaves on top of one another,
roll tightly, then slice them into
wide shreds, like pappardelle.
Repeat with the pointed
cabbage. Have a bowl of iced
water to hand.
• Put a pan of water on to
boil and, when boiling, dunk
the cavolo nero in, leave for 2
minutes, then lift it out and
transfer to the iced water. When
the water returns to the boil,
repeat with the cabbage.
• Peel the garlic, then crush
to a paste with a good pinch of
salt – use a pestle and mortar,
but the flat side of a knife and a
chopping board works too.
• In a wide sauté or frying
pan, warm the oil and garlic
paste. You don’t want the garlic
to colour, so stir as it warms and
softens. Finely chop the dill and
stir into the garlic.
• Tip the butter beans and
cannellini together with their
liquor into the pan and stir
to coat them with the oil and
garlic. Leave over a moderate
heat, covered by a lid, for a few
minutes until the beans are hot.
Finely grate the lemon zest and
squeeze the juice.
• Season the beans generously
with salt and black pepper, then
stir in the lemon zest and, if you
wish, a little of the juice. Drain
the greens thoroughly, stir them
into the beans and heat through
briefly before spooning on to
deep plates.
Prune, chocolate and
orange frangipane
Serves 8
I have been tweaking the old
frangipane fillings since I
made my first in the late 1970s.
This latest version has barely a
sprinkling of flour in it and I feel
is better for it.
Ingredients
For the pastry:
200g plain flour
90g butter
1 egg yolk
1-2 tbsp iced water
For the filling:
150g butter
100g caster sugar
Finely grated zest of 1 orange
75g dark chocolate
2 eggs
150g ground almonds
2 Tbsp self-raising flour
150g, stoned soft prunes
2-3 Tbsp flaked almonds
Method
• You will need a 20cm tart tin
with a removable base. Make
the pastry: put the flour and
butter into a food processor
and process to fine crumbs.
(Alternatively, do it by hand, rub
the butter into the flour with
your fingertips until it resembles
breadcrumbs.) Mix in the egg
yolk, then a little iced water (a
tablespoon or two will do) and
mix to a thick, rollable dough.
• Tip the dough on to a lightly
floured board and pat into a
thick disc, wrap it in baking
parchment, then rest it in the
fridge for 30 minutes.
• Set the oven at 190°C and
place a baking sheet in the oven.
You will bake the tart on this.
• Remove the pastry from the
fridge and place on a floured
board. Roll it out to roughly
3mm thick, then lower into the
tart tin, pushing it gently into
the corners and up the sides.
• Trim any overhanging
pastry, then rest the pastry a
second time, in the fridge or
freezer, for 20 minutes.
• Fill the case with baking
parchment and baking beans,
then place on top of a hot baking
sheet already in the oven.
• Bake for about 20 minutes,
then carefully lift out the paper
and beans. If the pastry isn’t
dry to the touch, return it to the
oven for a few minutes, then
remove and set aside. Turn the
oven down to 160°C.
• While the pastry is baking,
make the filling: put the butter,
caster sugar and the orange zest
into the bowl of a food mixer.
Beat until pale and fluffy.
• Chop the chocolate into
small nuggets, no bigger than a
hazelnut.
• Beat the eggs in a small bowl,
then add to the sugar and butter,
a little at a time (if it shows
any sign of curdling, drop in a
couple of tablespoons of flour).
Introduce the flour and then,
lastly, the chocolate and the
ground almonds.
• Transfer the mixture to
the tart case. Add the prunes
without pressing them too
deeply into the batter.
• Scatter the flaked almonds
over the top and bake for an
hour, maybe a little longer, until
the filling is golden and lightly
set.
We need your help to fill our beds.
Cholmondeley Children’s Centre has
23 beds for tamariki to stay during
times of whānau stress or crisis. On
average just 17 of these beds are filled
due to resourcing constraints.
Every empty bed is a missed
opportunity to support a child in need.
Donate today to give Canterbury
tamariki a safe place to sleep.
Cholmondeley Children’s Centre provides
short term emergency or planned respite care
for tamariki when they need extra support due
to complications at home.
Cholmondeley is an independent charity
and costs just under $3,000,000 per year to
run. 20% of this figure is met by Government
funding, and the remaining 80% comes from
the generous support of the Canterbury
community.
