funds for rescue helicopters again this year.<br />

back out in the community<br />

fundraising for Canterbury<br />

rescue helicopters.<br />

But he will not be walking<br />

90km like he did in 2022.<br />

Instead, he will be collecting<br />

funds outside Halswell and<br />

Wigram New Worlds for the<br />

Westpac and Roa Mining<br />

rescue helicopters.<br />

Ron Towner gained the<br />

nickname ‘Airman Ron’ two<br />

years ago when he raised<br />

$91,000 while walking 90km<br />

in the area around his home<br />

before his 90th birthday. He<br />

received national recognition<br />

for his efforts and appeared on<br />

TV show Seven Sharp.<br />

Ron was inspired to take up<br />

the challenge after one of his<br />

friends noticed him going on<br />

daily walks. She said he looked<br />

like Captain Tom Moore, a<br />

retired British Army officer<br />

who, in 2020, raised more<br />

than £32.79 million (NZD$60<br />

million) for the National Health<br />

Service while walking 100<br />

lengths of his garden before his<br />

100th birthday.<br />

The Canterbury rescue choppers’<br />

latest campaign, which<br />

will be held in August, is called<br />

Back to Base.<br />

The now 91-year-old encourages<br />

retirees to take part.<br />

“I think you need to be doing<br />

something when you’re old,<br />

rather than just sitting around,”<br />

Ron said.<br />

Participants can choose from<br />

four distances – 9km, 49km,<br />

97km, and 155km – and can<br />

complete their chosen distance<br />

through walking, running, riding<br />

or skiing, all while gaining<br />

sponsors.<br />

The distances reflect the regular<br />

routes the air rescue service<br />

takes around Canterbury.<br />

Knight said the challenge is<br />

about getting fit and boosting<br />

mental well-being, while<br />

directly supporting the critical<br />

training and equipment the<br />

rescue helicopters depend on.<br />

“Whether it’s hitting the gym,<br />

the golf course, or the great<br />

outdoors, this challenge is a<br />

chance to push limits and show<br />

creativity.<br />

“Our message is to sign up,<br />

start training, seek sponsorship,<br />

and support the crew to<br />

get Back to Base in August,”<br />

Knight said.<br />

Participants who fundraise<br />

more than $100 will receive<br />

a free medal to mark their<br />

achievement.<br />

Knitting on the tram<br />

KNITTERS AND crocheters<br />

took a ride on one of the city’s<br />

historic trams to celebrate<br />

World Wide Knit in Public Day.<br />

The global event takes place<br />

every year on the second<br />

Saturday of <strong>June</strong>.<br />

It encourages people with<br />

a love for the craft to come<br />

together in a public place to knit<br />

and crochet items as they meet<br />

new people.<br />

Ninja knitter Sally Brown<br />

organised the ‘Knit on the tram’<br />

event, which she believes offers a<br />

range of benefits.<br />

“It’s about, you know, making<br />

beautiful things – the gloves,<br />

the scarf and things like that but<br />

it’s about getting together with<br />

other people.<br />

“You don’t have to knit, I<br />

mean, you don’t have to chat,<br />

you can just knit, you can chat<br />

and knit. It’s about well-being<br />

really and that’s why it’s so<br />

popular now.”<br />

The knitting crew enjoyed a<br />

free loop on the tram, before<br />

continuing onto Turanga library<br />

for a cup of a tea and a scone.<br />

Community organisation<br />

Volunteering Canterbury<br />

also joined the fun as part of<br />

its ‘Knit for purpose’ initiative,<br />

which saw volunteers create<br />

blankets by knitting small<br />

squares together.<br />

A free bus ride home on the<br />

Route 5 or Route 60 bus will also<br />

be offered this year, with additional<br />

connecting services.<br />

KidsFest begins the same<br />

day as the fireworks. Now in its<br />

33rd year, it offers more than<br />

200 activities for kids aged<br />

0-17 during the winter school<br />

Olympian brings bounce<br />

trampolinist to represent New Zealand when she competed<br />

at the Tokyo Olympics in 2021.<br />

She is now getting ready<br />

for the Paris Olympics which<br />

start on July 26 – and wowed<br />

residents at Kevin Hickman<br />

Village by talking them through<br />

her preparation for the games.<br />

In about two months she will<br />

jump onto the trampoline in<br />

Paris.<br />

Davidson spoke to a room full<br />

of residents, showing off photos<br />

and videos from when she was<br />

a 6-year-old through to her<br />

competition at the Tokyo games.<br />

“It’s absolutely my pleasure to<br />

be here on a crisp Christchurch<br />

morning, especially when I’ve<br />

rocked up in my T-shirt,” she<br />

said.<br />

Davidson was able to share<br />

some of the intense skills<br />

involved in her 30-second<br />

routines. She says gaining<br />

height, with athletes regularly<br />

bouncing more than 8m in the<br />

air, and staying centred on the<br />

mat are just two of the measures<br />

used to rank the competitors.<br />

“In a voluntary routine you<br />

can do anything that you like.<br />

And these tend to be bigger<br />

flips, so you’ll see triple flips and<br />

double flips, lots of twists and<br />

all those good things that we get<br />

to do.<br />

STAR: Maddie Davidson spoke to residents at Kevin<br />

Hickman Village about trampolining and her preparation<br />

for the Olympics in Paris.<br />

“It’s quite difficult on the<br />

body, so when we land on the<br />

trampoline they say it’s about<br />

10-12 times your bodyweight<br />

every time you land,” she said.<br />

The 25-year-old has been<br />

training for six hours a day in<br />

the lead-up to the Paris games,<br />

where 16 trampolinists from<br />

around the world will gather to<br />

compete.<br />

Her parents Craig and Gaylene<br />

and older brother Lewis will<br />

travel to Paris to cheer her on.<br />

“I’m really, really pumped to<br />

be going to a second Olympic<br />

Games with the New Zealand<br />

team,” she said.<br />

be watching when she competes<br />

in the French capital on August<br />

Davidson has appeared before a variety<br />

of audiences, including at primary schools<br />

and retirement villages, and said there are<br />

always good connections to be made.<br />

Both Davidson’s parents were influential<br />

in developing her athleticism, with her<br />

father remaining a keen footballer, having<br />

previously represented Otago, and her<br />

mother being a former dancer.<br />

Trampolining outscored Davidson’s<br />

attempts to play other sports like netball<br />

where her lack of height did not do her<br />

any favours.<br />

“I loved learning, I loved flipping, and I<br />

loved bouncing.”<br />

“And mum and dad loved it because I<br />

was tired at the end of the day. So, it was<br />

win, win for everyone, I think,” Davidson<br />

said.<br />

“We’re all very excited. We’ll be<br />

Residents were thrilled to get some<br />

forward to the live action from Paris. They<br />

promised her they too will be bouncing<br />

with joy when she competes.<br />

HAROLD THE singing, dancing puppet<br />

has been hanging out in the central city<br />

– and he’s just one marionette putting a<br />

smile on people’s faces.<br />

Puppeteer Jacim Thompson has been<br />

performing lunchtime shows at Cashel<br />

Mall, to the delight of young and old<br />

passers-by.<br />

“The children – their reaction is<br />

amazing. I actually let kids have a go as<br />

long as they’re gentle with (the puppet).<br />

Thompson became interested in the<br />

craft earlier this year after finding<br />

puppets at a relative’s house. The<br />

puppeteer now makes his own<br />

marionettes on a 3D printer.<br />

“I’m constantly thinking about what<br />

puppet I could make and how can I bring<br />

a smile to people’s faces, and what other<br />

functions I could add, and what music can<br />

I learn,” he said.<br />

Thompson posts videos of his<br />

performances on social media.<br />

He has given the puppets their own<br />

names and personalities, including<br />

‘Psymon the mushroom’ and ‘Boney the<br />

skeleton’.<br />

“So now I’m working on a teddy bear.<br />

I’ve got my little alien there who I’m<br />

hoping to get to blow bubbles,<br />

but I’m having trouble with that at the<br />

moment. I’ve got quite a few more in the<br />

works that I haven’t thought of names for<br />

yet,” he said.<br />

Thompson has been encouraged by the<br />

popularity of his performances and<br />

hopes to take his show to other locations<br />

around the city.<br />

As the weather gets cooler,<br />

the season for citrus fruits is<br />

fast approaching, offering a<br />

fantastic and fresh respite from<br />

the often heavier and more<br />

bland winter seasonal foods.<br />

I’ve made the most of these<br />

zesty fruits in this citrus treat<br />

that can bring some much<br />

needed sunshine to the darker<br />

months.<br />

Orange, lime and<br />

raspberry cake with<br />

zesty cream cheese icing<br />

and orange-lime curd<br />

(gf)<br />

Ingredients<br />

2 oranges (or 5x mandarins)<br />

2 limes<br />

1 ¼ cups caster sugar (250g)<br />

2 ½ cups ground almonds<br />

(250g)<br />

1 tsp baking powder<br />

6 eggs, lightly beaten<br />

1 cup frozen raspberries<br />

Instructions<br />

1. First, wash and dry your<br />

oranges and limes then place<br />

in a saucepan filed with water<br />

over a medium heat. Bring to<br />

a gentle simmer and cook for<br />

about 40 minutes, until the<br />

skin of both fruits is soft. Drain<br />

and allow to cool.<br />

2. Heat the oven to 160°C<br />

and butter and line a 20cm<br />

spring form cake tin.<br />

3. In a blender or food<br />

processor, blend the citrus<br />

until smooth then add the<br />

remaining ingredients (except<br />

raspberries), blending until<br />

fully combined. You may need<br />

to scrape down several times.<br />

4. Pour the batter into<br />

your prepared cake tin then<br />

dot with the frozen berries,<br />

pushing them into the batter<br />

if necessary. Bake for about 50<br />

minutes until set in the middle.<br />

Allow to cool fully in the tin<br />

before turning out.<br />

5. Once fully cooled, top<br />

with zesty cream-cheese icing,<br />

orange and lime curd, freeze<br />

dried raspberries and decorate<br />

with edible flowers.<br />

Orange and lime curd<br />

Ingredients<br />

Zest and juice of 3 oranges<br />

Zest and juice of 3 limes<br />

1 cup of white sugar<br />

4 large eggs<br />

115g cold butter, cut into small<br />

pieces<br />

Instructions<br />

1. Zest the oranges and limes<br />

first, then juice them using<br />

a citrus juicer or squeeze by<br />

hand.<br />

2. In a medium-sized<br />

heatproof bowl, combine the<br />

orange juice, lime juice, orange<br />

zest, lime zest, and sugar.<br />

Mix until the sugar is mostly<br />

dissolved.<br />

3. In a separate bowl, lightly<br />

beat the eggs. Then, add the<br />

beaten eggs to the juice and<br />

sugar mixture, whisking<br />

continuously until well<br />

combined.<br />

4. Place the bowl over a pot<br />

of simmering water, making<br />

sure the bottom of the bowl<br />

does not touch the water.<br />

Cook the mixture, stirring<br />

constantly, until it thickens<br />

enough to coat the back of a<br />

spoon. This should take about<br />

10-15 minutes. The curd will<br />

continue to thicken as it cools.<br />

5. Once the curd has<br />

thickened, remove it from the<br />

heat. Stir in the butter pieces<br />

a few at a time, ensuring<br />

each piece is fully melted and<br />

incorporated before adding the<br />

next.<br />

6. For an extra smooth curd,<br />

you can strain it through a<br />

fine-mesh sieve to remove the<br />

zest and any pieces of cooked<br />

egg.<br />

7. Pour the curd into clean<br />

jars or containers. Allow it<br />

to cool to room temperature<br />

before covering and store in the<br />

fridge for up to 2 weeks.<br />

Zesty cream-cheese<br />

icing Ingredients<br />

250g cream cheese, softened<br />

100g softened butter<br />

3 cups (375g) sifted icing sugar<br />

Zest of 2 limes<br />

1 tsp vanilla extract<br />

Instructions<br />

1. Ensure the cream cheese<br />

and butter are both softened to<br />

room temperature.<br />

2. In an electric mixer using<br />

the whisk attachment, beat the<br />

cream cheese and butter until<br />

smooth and creamy.<br />

3. Gradually add the sifted<br />

icing sugar, beating on low<br />

speed until well combined.<br />

Increase speed and whip for<br />

3-5 minutes until light and airy.<br />

4. Fold in the lime zest and<br />

vanilla extract until evenly<br />

distributed then ice your cake.<br />

A sweet, salty, savoury slice of winter<br />

Beetroot and feta filo<br />

pie is a good idea for<br />

today and tomorrow,<br />

writes Nigel Slater. As<br />

Beetroot and feta filo pie<br />

Serves 6<br />

Ingredients<br />

6 sheets filo pastry<br />

2 medium onions<br />

2 Tbsp olive oil<br />

3 cloves garlic<br />

1 red chilli<br />

1 lemon<br />

600g spinach and/or beetroot<br />

leaves and stems<br />

400g beetroot<br />

200g feta cheese<br />

75g parmesan<br />

100g butter<br />

Instructions<br />

• You will need a metal baking<br />

tin with shallow sides, about<br />

30x20cm.<br />

• Defrost the pastry, keeping<br />

it covered to prevent the leaves<br />

drying out. Preheat the oven<br />

to 200°C. Peel the onions and<br />

slice finely. Warm the oil in a<br />

saucepan, add the onions and<br />

cook until soft and pale gold – a<br />

good 20-25 minutes. Peel and<br />

crush the garlic and stir into the<br />

onions once they have started to<br />

colour. An occasional stir stops<br />

them burning.<br />

• Finely chop the chilli,<br />

removing the seeds if you want<br />

a milder heat, and add to the<br />

onion. Finely grate the zest from<br />

the lemon. Wash the spinach<br />

or beetroot leaves and, while<br />

they still hold a little water, put<br />

them in a pan over a moderate<br />

heat. Cover tightly with a lid<br />

and let them cook in their own<br />

steam for a couple of minutes<br />

until wilted. Drain, then squeeze<br />

the water from them with your<br />

hands.<br />

• Peel and coarsely grate the<br />

beetroot and stir into the cooked<br />

onions. Don’t be too thorough,<br />

unless you want pink onions.<br />

Crumble the feta into the onions,<br />

keeping the pieces large. Add the<br />

lemon zest, then finely grate and<br />

add the parmesan.<br />

• Melt the butter in a small<br />

pan and remove from the heat.<br />

Brush the base of the baking tin<br />

with a little butter, lay a sheet of<br />

filo over it, slightly overhanging<br />

the tin, then brush with butter<br />

and add a second one. Brush<br />

this, too, then spoon the beetroot<br />

filling over it. Place a sheet of<br />

pastry over that, brush with<br />

butter, then add a second and<br />

butter that. Take 2 more sheets,<br />

dip them in the butter, then put<br />

them loosely on top of the pie.<br />

•Bake for about 30 minutes<br />

until the pastry is crisp, golden<br />

and translucent.<br />

• Remove from the oven and<br />

leave for 10 minutes to settle<br />

before slicing.<br />

Chocolate and lemon<br />

truffles<br />

Makes 30<br />

Ingredients<br />

350g white chocolate<br />

75g unsalted butter, diced<br />

150ml double cream<br />

Salt, a pinch<br />

4 tsp lemon zest<br />

2 tsp lemon juice<br />

To coat<br />

200g dark chocolate<br />

Crystallised orange pieces to<br />

decorate<br />

Instructions<br />

Chop the chocolate into small<br />

pieces and put them in a<br />

heatproof bowl. Find a saucepan<br />

in which the bowl will sit neatly.<br />

Half fill the pan with water,<br />

put the chocolate, butter and<br />

cream and a pinch of salt into the<br />

bowl and set it on the pan over<br />

a moderate heat. Make sure the<br />

base of the bowl doesn’t sit in the<br />

water.<br />

• Let the water simmer until<br />

the chocolate has started to melt.<br />

Avoid the temptation to stir the<br />

chocolate — it will seize on you<br />

— and make certain it doesn’t get<br />

too hot.<br />

• As soon as the chocolate has<br />

melted remove it from the heat<br />

and stir very gently, just enough<br />

to bring the cream and chocolate<br />

together.<br />

•Stir in the lemon zest and<br />

juice, then set aside, covered<br />

with a plate in the fridge. Test<br />

the mixture regularly to check its<br />

texture. It should be firm enough<br />

to roll.<br />

• Remove small scoops of the<br />

truffle mixture (I make them<br />

about 2 tsp each) and place on<br />

to kitchen parchment. Let them<br />

firm up again in the fridge for a<br />

few minutes. Meanwhile, roughly<br />

chop and melt the dark chocolate<br />

over a pan of hot water, removing<br />

it from the heat as soon as it is<br />

melted. Using kitchen tongs or<br />

a skewer dip the truffles into the<br />

melted chocolate then return to<br />

the parchment.<br />

• Add a piece of crystallised<br />

orange or lemon to each one, then<br />

chill them in the fridge until the<br />

chocolate has set crisp.<br />
