GROUND CONTROL: Airman Ron will be collecting 

funds for rescue helicopters again this year.

AIRMAN RON will be 

back out in the community 

fundraising for Canterbury 

rescue helicopters. 

But he will not be walking 

90km like he did in 2022. 

Instead, he will be collecting 

funds outside Halswell and 

Wigram New Worlds for the 

Westpac and Roa Mining 

rescue helicopters. 

Ron Towner gained the 

nickname ‘Airman Ron’ two 

years ago when he raised 

$91,000 while walking 90km 

in the area around his home 

before his 90th birthday. He 

received national recognition 

for his efforts and appeared on 

TV show Seven Sharp. 

Ron was inspired to take up 

the challenge after one of his 

friends noticed him going on 

daily walks. She said he looked 

like Captain Tom Moore, a 

retired British Army officer 

who, in 2020, raised more 

than £32.79 million (NZD$60 

million) for the National Health 

Service while walking 100 

lengths of his garden before his 

100th birthday. 

The Canterbury rescue choppers’ 

latest campaign, which 

will be held in August, is called 

Back to Base. 

The now 91-year-old encourages 

retirees to take part.

“I think you need to be doing 

something when you’re old, 

rather than just sitting around,” 

Ron said. 

Participants can choose from 

four distances – 9km, 49km, 

97km, and 155km – and can 

complete their chosen distance 

through walking, running, riding 

or skiing, all while gaining 

sponsors. 

The distances reflect the regular 

routes the air rescue service 

takes around Canterbury. 

Back to Base Crew chief Rick 

Knight said the challenge is 

about getting fit and boosting 

mental well-being, while 

directly supporting the critical 

training and equipment the 

rescue helicopters depend on. 

“Whether it’s hitting the gym, 

the golf course, or the great 

outdoors, this challenge is a 

chance to push limits and show 

creativity. 

“Our message is to sign up, 

start training, seek sponsorship, 

and support the crew to 

get Back to Base in August,” 

Knight said. 

Participants who fundraise 

more than $100 will receive 

a free medal to mark their 

achievement. 

Ron served for the Royal Air 

Force in England from 1948 to 

1951.

Knitting on the tram

KNITTERS AND crocheters 

took a ride on one of the city’s 

historic trams to celebrate 

World Wide Knit in Public Day. 

The global event takes place 

every year on the second 

Saturday of June. 

It encourages people with 

a love for the craft to come 

together in a public place to knit 

and crochet items as they meet 

new people. 

Ninja knitter Sally Brown 

organised the ‘Knit on the tram’ 

event, which she believes offers a 

range of benefits. 

“It’s about, you know, making 

beautiful things – the gloves, 

the scarf and things like that but 

it’s about getting together with 

other people. 

“You don’t have to knit, I 

mean, you don’t have to chat, 

you can just knit, you can chat 

and knit. It’s about well-being 

really and that’s why it’s so 

popular now.” 

The knitting crew enjoyed a 

free loop on the tram, before 

continuing onto Turanga library 

for a cup of a tea and a scone. 

Community organisation 

Volunteering Canterbury 

also joined the fun as part of 

its ‘Knit for purpose’ initiative, 

which saw volunteers create 

blankets by knitting small 

squares together.

Route 5 or Route 60 bus will also 

be offered this year, with additional 

connecting services. 

KidsFest begins the same 

day as the fireworks. Now in its

Olympian brings bounce 

AIRBORNE: Maddie Davidson was the first female 

trampolinist to represent New Zealand when she competed 

at the Tokyo Olympics in 2021.

trampolinist to represent New 

Zealand at the Tokyo Olympics 

in 2021. 

She is now getting ready 

for the Paris Olympics which 

start on July 26 – and wowed 

residents at Kevin Hickman 

Village by talking them through 

her preparation for the games. 

In about two months she will 

jump onto the trampoline in 

Paris. 

Davidson spoke to a room full 

of residents, showing off photos 

and videos from when she was 

a 6-year-old through to her 

competition at the Tokyo games. 

“It’s absolutely my pleasure to 

be here on a crisp Christchurch 

morning, especially when I’ve 

rocked up in my T-shirt,” she 

said. 

Davidson was able to share 

some of the intense skills 

involved in her 30-second 

routines. She says gaining 

height, with athletes regularly 

bouncing more than 8m in the 

air, and staying centred on the 

mat are just two of the measures 

used to rank the competitors. 

“In a voluntary routine you 

can do anything that you like. 

And these tend to be bigger 

flips, so you’ll see triple flips and 

double flips, lots of twists and 

all those good things that we get 

to do. 

STAR: Maddie Davidson spoke to residents at Kevin 

Hickman Village about trampolining and her preparation 

for the Olympics in Paris. 

“It’s quite difficult on the 

body, so when we land on the 

trampoline they say it’s about 

10-12 times your bodyweight 

every time you land,” she said. 

The 25-year-old has been 

training for six hours a day in 

the lead-up to the Paris games, 

where 16 trampolinists from 

around the world will gather to 

compete. 

Her parents Craig and Gaylene 

and older brother Lewis will 

travel to Paris to cheer her on. 

“I’m really, really pumped to 

be going to a second Olympic 

Games with the New Zealand 

team,” she said. 

The residents at Kevin

be watching when she competes 

in the French capital on August 

2. Trampolining made its first 

appearance at the Sydney 2000 

Olympics. Davidson said she 

started trampolining in 2006 

after being encouraged by a 

family friend.

Davidson has appeared before a variety 

of audiences, including at primary schools 

and retirement villages, and said there are 

always good connections to be made. 

Both Davidson’s parents were influential 

in developing her athleticism, with her 

father remaining a keen footballer, having 

previously represented Otago, and her 

mother being a former dancer. 

Trampolining outscored Davidson’s 

attempts to play other sports like netball 

where her lack of height did not do her 

any favours. 

“I loved learning, I loved flipping, and I 

loved bouncing.” 

“And mum and dad loved it because I 

was tired at the end of the day. So, it was 

win, win for everyone, I think,” Davidson 

said.

are looking forward to seeing Davidson 

compete with real anticipation. 

“We’re all very excited. We’ll be 

following with interest.” 

Residents were thrilled to get some 

selfies with Davidson and are now looking 

forward to the live action from Paris. They 

promised her they too will be bouncing 

with joy when she competes.

a hit with crowd

HAROLD THE singing, dancing puppet 

has been hanging out in the central city 

– and he’s just one marionette putting a 

smile on people’s faces. 

Puppeteer Jacim Thompson has been 

performing lunchtime shows at Cashel 

Mall, to the delight of young and old 

passers-by. 

“The children – their reaction is 

amazing. I actually let kids have a go as 

long as they’re gentle with (the puppet). 

If I can see they’re not going to mash it 

about. 

“And you can see the look on their face 

of how much natural movement it can get 

and, wow, this is not a PlayStation game 

but it feels so much fun,” he said. 

Thompson became interested in the 

craft earlier this year after finding 

puppets at a relative’s house. The 

puppeteer now makes his own 

marionettes on a 3D printer. 

“I’m constantly thinking about what 

puppet I could make and how can I bring 

a smile to people’s faces, and what other 

functions I could add, and what music can 

I learn,” he said. 

Thompson posts videos of his 

performances on social media. 

He has given the puppets their own 

names and personalities, including 

‘Psymon the mushroom’ and ‘Boney the 

skeleton’. 

“So now I’m working on a teddy bear. 

I’ve got my little alien there who I’m 

hoping to get to blow bubbles, 

but I’m having trouble with that at the 

moment. I’ve got quite a few more in the 

works that I haven’t thought of names for 

yet,” he said. 

Thompson has been encouraged by the 

popularity of his performances and 

hopes to take his show to other locations 

around the city.

As the weather gets cooler, 

the season for citrus fruits is 

fast approaching, offering a 

fantastic and fresh respite from 

the often heavier and more 

bland winter seasonal foods. 

I’ve made the most of these 

zesty fruits in this citrus treat 

that can bring some much 

needed sunshine to the darker 

months. 

Orange, lime and 

raspberry cake with 

zesty cream cheese icing 

and orange-lime curd 

(gf) 

Ingredients 

2 oranges (or 5x mandarins) 

2 limes 

1 ¼ cups caster sugar (250g) 

2 ½ cups ground almonds 

(250g) 

1 tsp baking powder 

6 eggs, lightly beaten 

1 cup frozen raspberries 

Instructions 

1. First, wash and dry your 

oranges and limes then place 

in a saucepan filed with water 

over a medium heat. Bring to 

a gentle simmer and cook for 

about 40 minutes, until the 

skin of both fruits is soft. Drain 

and allow to cool. 

2. Heat the oven to 160°C 

and butter and line a 20cm 

spring form cake tin. 

3. In a blender or food 

processor, blend the citrus 

until smooth then add the 

remaining ingredients (except 

raspberries), blending until 

fully combined. You may need 

to scrape down several times. 

4. Pour the batter into 

your prepared cake tin then 

dot with the frozen berries, 

pushing them into the batter 

if necessary. Bake for about 50 

minutes until set in the middle. 

Allow to cool fully in the tin 

before turning out. 

5. Once fully cooled, top 

with zesty cream-cheese icing, 

orange and lime curd, freeze 

dried raspberries and decorate 

with edible flowers. 

Orange and lime curd 

Ingredients 

Zest and juice of 3 oranges 

Zest and juice of 3 limes 

1 cup of white sugar 

4 large eggs 

115g cold butter, cut into small 

pieces 

Instructions 

1. Zest the oranges and limes 

first, then juice them using 

a citrus juicer or squeeze by 

hand. 

2. In a medium-sized 

heatproof bowl, combine the 

orange juice, lime juice, orange 

zest, lime zest, and sugar. 

Mix until the sugar is mostly 

dissolved. 

3. In a separate bowl, lightly 

beat the eggs. Then, add the 

beaten eggs to the juice and 

sugar mixture, whisking 

continuously until well 

combined. 

4. Place the bowl over a pot 

of simmering water, making 

sure the bottom of the bowl 

does not touch the water. 

Cook the mixture, stirring 

constantly, until it thickens 

enough to coat the back of a 

spoon. This should take about 

10-15 minutes. The curd will 

continue to thicken as it cools. 

5. Once the curd has 

thickened, remove it from the 

heat. Stir in the butter pieces 

a few at a time, ensuring 

each piece is fully melted and 

incorporated before adding the 

next. 

6. For an extra smooth curd, 

you can strain it through a 

fine-mesh sieve to remove the 

zest and any pieces of cooked 

egg. 

7. Pour the curd into clean 

jars or containers. Allow it 

to cool to room temperature 

before covering and store in the 

fridge for up to 2 weeks. 

Zesty cream-cheese 

icing Ingredients 

250g cream cheese, softened 

100g softened butter 

3 cups (375g) sifted icing sugar 

Zest of 2 limes 

1 tsp vanilla extract 

Instructions 

1. Ensure the cream cheese 

and butter are both softened to 

room temperature. 

2. In an electric mixer using 

the whisk attachment, beat the 

cream cheese and butter until 

smooth and creamy. 

3. Gradually add the sifted 

icing sugar, beating on low 

speed until well combined. 

Increase speed and whip for 

3-5 minutes until light and airy. 

4. Fold in the lime zest and 

vanilla extract until evenly 

distributed then ice your cake.

A sweet, salty, savoury slice of winter 

Beetroot and feta filo 

pie is a good idea for 

today and tomorrow, 

writes Nigel Slater. As

Beetroot and feta filo pie 

Serves 6 

Ingredients 

6 sheets filo pastry 

2 medium onions 

2 Tbsp olive oil 

3 cloves garlic 

1 red chilli 

1 lemon 

600g spinach and/or beetroot 

leaves and stems 

400g beetroot 

200g feta cheese 

75g parmesan 

100g butter 

Instructions 

• You will need a metal baking 

tin with shallow sides, about 

30x20cm. 

• Defrost the pastry, keeping 

it covered to prevent the leaves 

drying out. Preheat the oven 

to 200°C. Peel the onions and 

slice finely. Warm the oil in a 

saucepan, add the onions and 

cook until soft and pale gold – a 

good 20-25 minutes. Peel and 

crush the garlic and stir into the 

onions once they have started to 

colour. An occasional stir stops 

them burning. 

• Finely chop the chilli, 

removing the seeds if you want 

a milder heat, and add to the 

onion. Finely grate the zest from 

the lemon. Wash the spinach 

or beetroot leaves and, while 

they still hold a little water, put 

them in a pan over a moderate 

heat. Cover tightly with a lid 

and let them cook in their own 

steam for a couple of minutes 

until wilted. Drain, then squeeze 

the water from them with your 

hands. 

• Peel and coarsely grate the 

beetroot and stir into the cooked 

onions. Don’t be too thorough, 

unless you want pink onions. 

Crumble the feta into the onions, 

keeping the pieces large. Add the 

lemon zest, then finely grate and 

add the parmesan. 

• Melt the butter in a small 

pan and remove from the heat. 

Brush the base of the baking tin 

with a little butter, lay a sheet of 

filo over it, slightly overhanging 

the tin, then brush with butter 

and add a second one. Brush 

this, too, then spoon the beetroot 

filling over it. Place a sheet of 

pastry over that, brush with 

butter, then add a second and 

butter that. Take 2 more sheets, 

dip them in the butter, then put 

them loosely on top of the pie. 

•Bake for about 30 minutes 

until the pastry is crisp, golden 

and translucent. 

• Remove from the oven and 

leave for 10 minutes to settle 

before slicing. 

Chocolate and lemon 

truffles 

Makes 30 

Ingredients 

350g white chocolate 

75g unsalted butter, diced 

150ml double cream 

Salt, a pinch 

4 tsp lemon zest 

2 tsp lemon juice 

To coat 

200g dark chocolate 

Crystallised orange pieces to 

decorate 

Instructions 

Chop the chocolate into small 

pieces and put them in a 

heatproof bowl. Find a saucepan 

in which the bowl will sit neatly. 

Half fill the pan with water, 

put the chocolate, butter and 

cream and a pinch of salt into the 

bowl and set it on the pan over 

a moderate heat. Make sure the 

base of the bowl doesn’t sit in the 

water. 

• Let the water simmer until 

the chocolate has started to melt. 

Avoid the temptation to stir the 

chocolate — it will seize on you 

— and make certain it doesn’t get 

too hot. 

• As soon as the chocolate has 

melted remove it from the heat 

and stir very gently, just enough 

to bring the cream and chocolate 

together. 

•Stir in the lemon zest and 

juice, then set aside, covered 

with a plate in the fridge. Test 

the mixture regularly to check its 

texture. It should be firm enough 

to roll. 

• Remove small scoops of the 

truffle mixture (I make them 

about 2 tsp each) and place on 

to kitchen parchment. Let them 

firm up again in the fridge for a 

few minutes. Meanwhile, roughly 

chop and melt the dark chocolate 

over a pan of hot water, removing 

it from the heat as soon as it is 

melted. Using kitchen tongs or 

a skewer dip the truffles into the 

melted chocolate then return to 

the parchment. 

• Add a piece of crystallised 

orange or lemon to each one, then 

chill them in the fridge until the 

chocolate has set crisp.

For those wondering what a 

performance-oriented Lexus 

hybrid would go like, the short

The crisp shifting auto is hard 

to fault, largely because it rarely 

deviates from the high standard 

it sets. 

Flat-folding rear seats create 

a generously proportioned 

rear cargo compartment with 

passenger space both front and

luxury class SUV norm. Some 

will lament the loss of a third row 

of seats, a popular feature in the
