AN EXCURSION TO THE
JOCHALMEN
Text: Kathrina Denk
It is a warm Saturday, and after a leisurely
breakfast, we head to the Jochalmen.
We first ride into Bluntautal
on our new gravel bikes, then continue
on foot. This idyllic valley is pure bliss.
The Torrenerbach meanders through
the nature reserve like a snake, and
the sound of its rushing water accompanies
you constantly. The crystal-clear
Bluntau lakes usually require us to take
a detour, but today we have the Jochalmen
squarely in our sights. From the
Bärenwirt, we continue our journey on
foot.
PATH OF THE SEASONS ON EGELSEE
Located on idyllic Egelsee, the pleasant Golling Path of the Seasons
also features interesting information boards along the way.
Here, the whole family can explore a maze, balance on trees, or
learn about the surrounding mountain peaks with the help of a
newly installed panorama board. Enjoy the particularly beautiful
view from the romantic park chapel while your children explore
a natural pathway.

We cross the bridge over the Torrenerbach
heading west. After a short stretch
along a forestry lane, we turn onto the
steep forest path. After a while, we are
very relieved to encounter flatter terrain.
Having cut through a flower-covered
alpine meadow, we enter the forest
one last time, and just a few bends
later, we can already see our destination
for today: the Lower Jochalm. As
we enjoy a refreshing, well-deserved
Radler and a hearty Brettljause, we
gaze in awe at the gigantic, towering
rock massifs that were forged by primordial
forces.
For our hike back down, the wide forestry
lane is a welcome change of pace.
At the Bärenwirt again, we cool our feet
in the Torrenerbach before hopping on
our bikes and pedaling back. Whether
or not we make a detour to the Göllhof
will be a last-second decision. Though
the Blattlkrapfen would definitely make
it worthwhile!

LONG-DISTANCE HIKING
THE SALZALPENSTEIG HIKING ROUTE RUNS FROM BAVARIA
THROUGH SALZBURG TO UPPER AUSTRIA.
11
Five holiday regions: Chiemsee-Alpenland, Chiemsee-Chiemgau,
Berchtesgadener Land, Tennengau/Dachstein-
West, and Dachstein Salzkammergut, have united their most
beautiful, centuries-old hiking areas by creating the SalzAlpen-
Steig:
• 230 km long-distance hiking trail
• 18 day-stages - 2 countries - 6 tourism regions
• Start/end point in Bavaria: Prien am Chiemsee
• Start/end point in Austria: Obertraun
• 39 entry points
• Hiking routes: moderate low-elevation mountain trails, lake
routes alongside Chiemsee, Königssee, and Hallstättersee
• Many historical sites along the way
• Elevations: 466 meters (in Kuchl) to 1,663 meters (Hochfelln)
• Best time of year to hike: May-October
Hikers who take on the SalzAlpenSteig not only get to explore
the wonderful nature of Chiemgau, Berchtesgaden, Tennengau,
and the Salzkammergut but also follow the trail of „white
gold.“ The hiking network consists of the SalzAlpenSteig itself
spanning 230 km, along with 25 hiking loops, and clearly
marked pathways. Numerous hikers have already experienced
and been thrilled by the new SalzAlpenSteig trail.
THE JOURNEY IS ITS OWN REWARD
The SalzAlpenSteig comprises a total of 18 daily stages. On
stage 11, hikers cross the Dürrnberg and make their way via
Kuchl to Golling. On the next stage, your hike continues to
Scheffau. Directly along the route, an array of highlights greet
industrious hikers. Attractions such as the Salzwelten salt
mines and Salzachöfen Gorge are definite must-sees! Use the
stamp pass to collect achievement stamps for each stage. Once
the passbook is full, there is a small surprise in store for you!
Stage 12
GOLLING - SCHEFFAU
This stage takes us through the beautiful riparian forests
along the Rivers Salzach and Lammer to the imposing
Salzachklamm and the Salzachöfen, as well as to the romantic
pilgrimage church of Maria Brunneck. Despite
the relatively short length of the route (only 13 kilometers),
this stage between the Hagen- and Tennengebirge
mountains, with its high peaks and deep gorges, is particularly
awe-inspiring.
The stage begins at the foot of impressive Golling Castle,
in the town center of Golling. Following the River
Salzach, we hike upstream through the wild and romantic
Salzachauen, able to admire the high peaks of the Tennengebirge
to the southwest, and the Hagengebirge and
Berchtesgaden Alps to the southeast and east of Golling.
We are treated to an impressive panoramic view of the
countless 2000-meter peaks in these mountain ranges,
such as the Hoher Göll (2522m), Schneibstein (2276m),
Tristkopf (2110m), and Tiroler Kogel (2322m).
A unique natural spectacle awaits us in the next section of
this stage, the Salzachklamm, a dramatic gorge between
the Tennen- and Hagengebirge ranges, where the Salzach
has carved as much as 80 meters deep into the Dachstein
limestone. The eroding effects of the eddying water have
created large erosion basins in the cliff walls of the gorge.
i
More info available at Golling Tourist Office
Salzachklamm Gorge
is considered a hidden
gem amongst Austria’s
gorges. Up to 80 meters
deep, this gorge is barely
a few meters wide at its
narrowest point.
The SalzAlpenSteig stamp pass.
Shortly afterwards, we reach the pilgrimage church of
Maria Brunneck, built in 1763, and Gasthaus Pass Lueg,
an inn which is also an official partner of the SalzAlpen-
Steig. Then we continue towards the Lammeregg (894m),
which we circumnavigate via forestry roads. This variety-rich
stage of the SalzAlpenSteig ends in Unterscheffau
at impressive St. Ulrich’s Church, or at the Tourist Information
Center in Scheffau.

During this tour, you will get to experience the impressive
natural spectacle of this untamed gorge! Follow your tour

glimpses into the gorge that would otherwise remain hidden
from view.
KINGSWING
Leap! ...if you dare. High above the roaring waters of the
Salzach, hooked up to a steel cable, someone shouts out:

ART & CULTURE
AT GOLLING CASTLE
A DIVERSE ART & CULTURAL
PROGRAM THAT LEAVES NOTHING
TO BE DESIRED
Movement creates change. The first solo concerts by members
of the Vienna Philharmonic took place at Döllerer’s in 1998/99.
By 2000, the idea was born to organize a series of five concerts
at Golling Castle. These chamber music concerts, also involving
board members Clemens Hellsberg, Peter Pecha, and Martin
Kubik, drew 40 guests per performance. The harmonious
music accompanied by the atmospheric ambiance of the castle
courtyard and the delectable culinary highlights of Döllerer
cuisine inspired the fascination of concert guests even further.
They demanded more.
The „Small Festivals“ grew, became more diverse, and found
increasing popularity amongst festival audiences. Renowned
musicians and legends of the stage, both actors and singers, stir
the hearts of festival attendees with their performances year
after year. Today, up to 300 people attend a single performance,
and the number of events has increased to 20 during each
summer festival season. The culinary backdrop provided by
Döllerer‘s Genusswelten always delights a significant number
of festival guests, and those „Small Festivals“ have now melded
into the „Art & Culinary Festival.“
A DIVERSE OFFERING
Golling Castle offers numerous events, concerts, and activities
throughout the year in addition to those of the Golling Festival.
These include traditional evenings of folk music, the legendary
Star Cinema, and concerts such as a Rockin’ Evening with
Rusty. Its prime location in the heart of Salzburger Land makes
Golling Castle a unique cultural and event hub in Tennengau.

HOLIDAYS TOTALLY
TO YOUR TASTES
GOURMETS AND FOODIES ARE SURE TO RELISH THEIR
VACATION IN THE TENNENGAU REGION.
No matter where you go here, you will encounter one culinary
highlight after another. Hardly surprising, since Tennengau
was designated by GENUSSREGION ÖSTERREICH as a
distinctive culinary region for its fabulous Tennengauer Alm-
Käse cheeses and outstanding Tennengauer BergLamm lamb.
That said, AlmKäse and BergLamm both enjoy a special status
in the Tennengau region. Tennengau’s rich culinary traditions
are further enhanced by an array of fresh produce, most of
which is organically farmed.
CULINARY PARTNERS
The „Tennengauer AlmKäse & Berglamm“ culinary region
includes 40 partner businesses, all of whom stand for unsurpassed
quality. These Genussregion partners include hill dairies
and cheeseries, promotional partners, locals inns, as well as
Tennengauer BergLamm producers.
ENJOYMENT AT EVERY TURN
How about a foodie hike to one of the Tennengau cheese dairies?
In fact, a total of five different foodie tours lead up to these
mountain cheeseries, where your hosts serve cheese products
made from the milk of organic, hay-fed cattle. If you prefer to
explore the region by bike, you can join a selection of culinary
bike tours from one producer or inn to the next. 21 kilometers
of bike routes lead along the Cheese Tour from Kuchl
to Bad Vigaun, or on the Marble Tour from Adnet via Puch
and Oberalm. Those who wish to stay in the saddle longer
can explore, not only culinary, but also the cultural highlights
and sights of the region along the Salt Tour from Hallein to
Golling.
VIA CULINARIA
CULINARY PATHWAYS IN SALZBURGER LAND
The Via Culinaria takes aim at places that are renowned for
their epicurean pleasures. These culinary pathways lead past
hotspots for gourmets, sweet tooths, schnapps lovers, herb
enthusiasts, cheese fans, and avowed carnivores. For the last
two especially, Tennengau is also an ideal place for tastings.
Needless to say, Tennengauer AlmKäse and Tennengauer BergLamm
taste even better on location than anywhere else.
19
KNOW WHERE IT COMES FROM:
FARMERS‘ MARKETS & FARM SHOPS
Numerous holidaymakers simply cannot resist them: the regional
specialties that Salzburger Land is proud to offer. No

GASTRONOMY WITH
A LONG TRADITION
THE COLORFUL WORLD OF GOLLING GASTRONOMY
LEAVES (ALMOST) NOTHING TO BE DESIRED.
Text: Erich Urbanek
Postcard ca. 1930
The market town of Golling features one of the most beautiful
extended street squares in the province of Salzburg. Under the
protection of the medieval castle perched atop a rocky spur, a
double row of houses has evolved over the centuries along an
important north-south axis, shaping the town‘s appearance.
Travelers, artists, merchants, carriages, the military, and all
others who frequented this place sought a stopping point that
was one-day’s travel from Salzburg and where food and lodging
would be plentiful.
Until the advent of motorized vehicles, pedestrians, horseback
riders, and carriage drivers with their horses and wagons
needed to be safely accommodated and provided for. Thus it
was that numerous inns were established in the town, through
whose massive arched gates the carriages could trundle into a
courtyard.
Shortly after 1800, an early form of tourism began to unfold in
the town. Romantic souls wanted to experience the untouched
21
nature here, and traveling artists came to paint the quiet village,
the waterfall, and the Salzachöfen gorge. In European travel literature
of the 19th century, Golling already held a prominent
position, with numerous vedutas being printed.
In 1875, Golling became connected to the rail network of the
Empress Elisabeth Railway, which led in turn to a significant
boost in tourism. Golling became a “summer retreat” for guests
from Vienna with their families and servants for several weeks.
Hoteliers and innkeepers sought to improve the food and
drink they offered, and invested in a higher standard of guest
rooms. Cultural events provided for entertainment. An overall
development which is ongoing to this very day.
„In our establishment, we have been
offering quality accommodations and
excellent dining for over 50 years.“
Elisabeth and Manfred Moser, Gasthof Abfalter
The food scene in Golling is extraordinarily diverse. The range
extends from haute cuisine for true gourmets to traditional
home-style cooking, and international cuisine. Regional products,
increasingly of organic quality, are used. Beverages, meanwhile,
include a selection of refined meal accompaniments.
Coffeehouse culture in Golling looks back on a long tradition,
highlighted by exquisite confectionery and equally exquisite
ice cream. Making a stop in Golling is always worthwhile, especially
to enjoy its centuries-old tradition of hospitality.

ALPINE CUISINE
IN GOLLING
THE SALZBURG ALPS AND THEIR TRADITIONAL RECIPES
SERVE AS THE STARTING POINTS FOR TOP CHEF
ANDREAS DÖLLERER‘S ALPINE CUISINE.
Andreas Döllerer was practically born with a passion for good
food and enthusiasm for traditional Alpine dishes. Since 2004,
his „Alpine Cuisine“ has created a culinary bridge between
high-quality regional ingredients and traditional, often cleverly
reinterpreted dishes from the Salzburg Alps,. The virtuosic
and utterly unique cooking skills of this award-winning chef
delight guests and the professional press alike, as evidenced
by numerous national and international awards. The Döllerer
Restaurant has been at the culinary forefront of Austria for
many years. Andreas Döllerer‘s culinary line reflects tradition,
a connection to his homeland, and a distinctive modern interpretation,
as well as his genuine appreciation for regional
products.
Culinary enjoyment has always held special significance for the
Döllerer family. It goes far beyond sophisticated cuisine and
fine wines, defining epicurean experiences as a comprehensive,
all-encompassing philosophy that guides and accompanies the
family in their daily work and creativity – and with immense
success. What began in 1909 with an inn and butcher’s shop
in Golling near Salzburg has, with much love and the joy that
comes from heartfelt hospitality, grown into the diversified
family business we know today.
Andreas Döllerer‘s Inn-Style Cuisine
Andreas Döllerer brings authentic Salzburg home
cooking to your stove top and to the plate. Delicious,
down-to-earth recipes and stories connected
to his homeland await you.
His cookbook „Das Wirtshaus“ is available at

DÖLLERER‘S
BLUEBERRY DUMPLINGS
Recipe from „Das Wirtshaus“ by Andreas Döllerer
The tart freshness of wild-picked blueberries combined
with the caramel of milk and sugar, served with sour
cream or vanilla ice cream.
Ingredients for 4 people:
400 g fresh blueberries
100 g coarse flour
50 ml milk
2 tablespoons butter
Granulated sugar
Powdered sugar
Sweetened sour cream
Located in the heart of Golling, Döllerer’s has always been a
place to meet and gather. At his inn, Andreas Döllerer highlights
the culinary diversity of this region combined with traditional
Austrian cooking.
INN OR RESTAURANT
No matter which you choose, whether Döllerer Wirtshaus,
Restaurant, or Delicatessen, they all reflect a true understanding
of „home“. The Döllerer Wirtshaus embraces tradition.
Here, you can dine à la carte or enjoy a 3 or 6-course menu. In
the restaurant, it is all about the Alpine region, its nature, and
the people who shape it. Andreas Döllerer‘s „Alpine Cuisine“
takes his guests on a journey. This innovative culinary line has
been awarded 5 toques and 19 points by Gault&Millau.
Preparation:
Stir the blueberries vigorously with the flour and milk,
crushing about half of the berries to release the juice.
Melt 1 tablespoon of butter in a pan and fry small dumplings
made from the blueberry mixture. After about 3
minutes, sprinkle with granulated sugar, add another
tablespoon of butter, and turn. Sprinkle again with granulated
sugar and fry for another 3 minutes. Dust with
powdered sugar.
Some tastes stay lodged in the brain like good music,
remaining there forever. Blueberry dumplings made
from small berries gathered in the forest combined with
flour, milk, and sugar were a summer treat at our grandparents‘
farm in Pinzgau. The tart sweetness of the berries,
the caramel from the milk and sugar. The berries
turned the teeth blue, but since it was just family, no
one cared. A small tip: freshly cut lemon helps avoid the
blueness. Serve with sweetened sour cream, vanilla ice
cream, or just a glass of cold milk.
THE BEST PLACE FOR WINE LOVERS
Döllerer‘s Enoteca at the gates of Golling, in Kuchl, is the perfect
mix of wine shop and wine bar. In the surrounding wine
library, you can choose from an extensive selection of wines,
sparkling wines, spirits, and non-alcoholic beverages from
producers around the world, and in all price ranges. Get expert
advice, book guided tastings, and enjoy a tasty snack to
go with your wine! Delicious foodstuffs, beautiful accessories,
and great gift ideas add the finishing touches, inviting you to
browse and buy.
TIP: At numerous events, you can personally experience
Döllerer‘s world of wine and culinary delights throughout the
year.

SILENT NIGHT MUSEUM IN HALLEIN
The most famous Christmas carol in the world. Yet few people
know that the composer of this song, Franz Xaver Gruber,
once lived in Hallein, across from the parish church. Today, the
Silent Night Museum is located there, documenting the creation
and spread of this beloved song. In addition to the original
manuscript, Joseph Mohr‘s guitar, with which he first performed
the song on Christmas Eve in 1818, is also exhibited.
ADVENT IN SALZBURG
Christmas markets, Advent concerts, and traditional events enchant
visitors to the city of Mozart. When Advent gets underway
in Salzburg at the end of November, a particularly beautiful
time of year begins. The festively decorated city shines even
brighter than usual, and the scents of hot chestnuts, spiced
mulled wine, and delicious cookies waft through the lanes of
the Old Town. A visit to the Salzburg Christkindlmarkt, located
on Cathedral and Residence Squares, is a must. This historic
Christmas market is one of the most beautiful anywhere. Especially
popular with families: Hellbrunn Advent Magic. A more
serene Advent market on Mirabell Square, near Mirabell Gardens,
is also well worth a visit, as is the aptly named Fortress
Advent up at Hohensalzburg Fortress.
CHRISTMAS IDYLL IN
FILZMOOS
When the days are shortest and dark
winter nights invite storytelling, the Filzmoos
Christmas Idyll at the Hofalmen
promises a contemplative Advent experience:
a mystical staging of a breathtakingly
beautiful winter landscape.
Filzmoos is a 40-minute drive from
Golling. A short walk via the cleared
winter hiking path will then lead you to
the Christmas Idyll, or strap on a pair of
snowshoes or ride the taxi bus (order
your taxi transfer in advance, phone +43
(0)664 1806453), or, more festive still,
take a horse-drawn sleigh.

INSIDER TIP ON WOLFGANGSEE
Drive over the beautiful Postalmstrasse (toll 10 euros)
to the Postalm – a wonderful expanse of alpine pastures
with a stunning panorama – to Strobl.
From Strobl, continue by car or ferry to St. Wolfgang.
There, ride the traditional cog railway up the 1,783-meters-high
Schafberg. The steepest steam cog railway in
Austria has been running from St. Wolfgang to the top
of the Schafberg since 1893. The Schafberg is rightfully
considered the most beautiful viewpoint in the Salzkammergut.
In clear weather, you are treated to a 360°
panoramic view across the glistening lakes of the Salzkammergut
and the Alpine foothills. Back in St. Wolfgang,
be sure to visit the church with the winged altar,
then enjoy a good coffee at the famous „Weisses Rössl“.
For a refreshing dip, go to the Wasswiese natural swimming
beach, Wassbad, 5350 Strobl.
And when it’s time for lunch or dinner: Try the „Fischergartl“
– reservations required, table numbers 4, 5,
6 or the regulars‘ table are the best! Or „Restaurant am
See,“ table numbers 64 & 65, but all the other tables are
great too!
Would you like to rent an electric boat and experience
the lake from out on the water or try a spot of waterskiing?
In that case, rentals are available right in the center
of St. Gilgen!
Your journey home after an eventful day will take you
from St. Wolfgang via Fuschl and Wiestal, which is a
very scenic drive.
INSIDER TIPS FOR RAINY DAYS
Of course, it does also rain in SalzburgerLand from time to time. But
with an array of thermal spas, museums, and many other indoor activities,
there‘s always plenty to do even on days that are a little damp.
• A visit to the Haus der Natur in Salzburg – a great experience for
young and old!
• Eisriesenwelt: Unique, enormous, and rightly one of Salzburg‘s
most popular attractions for decades.
• Salzwelten Hallein: Here, everything revolves around salt and its
significance as the „essence of life.“
• Hangar 7: A unique building, housing a fleet of historic aircraft
flown by the Flying Bulls as well as Formula 1 race cars. Followed
by a visit to the Outdoor Lounge or Restaurant Ikarus.
A unique sightseeing tour with a special motto: Culinary, Mozart,
Italianità, the Trapp family...
„You say that you love the rain, but you open your umbrella when it rains...
You say that you love the sun, but you find a shady spot when the sun shines...
You say that you love the wind, but you close your windows when wind
blows...
This is why I am afraid; You also say that you love me!“
