AND HOW MUCH YOU LOVE THIS 

TIME OF YEAR. 

I do love it and Jersey royals are a 

favourite of mine in the first salad. 

I love all that sort of stuff and as a 

seasoned chef, which I’ve always been, 

we were always taught fresh is best. 

SO YOU WERE ALWAYS INTERESTED 

IN REGIONAL, LOCAL PRODUCE? 

Yes, I’ve always cooked that way 

my whole life. There is something 

absurd about eating a raspberry from 

Guatemala in February. I like to cook 

seasonal. 

YES, I FEEL EXACTLY THE SAME AS 

THAT. I LIKE TO TRY AND GROW MY 

OWN PRODUCE AS WELL. I’VE GOT 

RASPBERRY CANES IN THE GARDEN 

WHICH I ENJOY. 

I have a beautiful new kitchen garden 

at home, I am enjoying the new crops I 

am growing this year. 

SO DO YOU LIVE OUT IN THE WILDS? 

Yes, I live in the country. 

WELL, WE’RE VERY LUCKY. WE’VE 

GOT LOADS OF PHEASANTS IN 

OUR GARDEN BUT I COULDN’T DO 

ANYTHING WITH THEM. I JUST LET 

THEM WANDER AROUND. 

Oh, I like to eat them. It’s nice to look 

forward to the first game in season: 

the first pheasant, or the first roe buck. 

Bear in mind, when I was a young chef, 

there were so many pheasants around 

that they were bred as game birds. 

But it’s always been very important to 

me that we cook in season. And that 

will never change. I was born up in 

Folkestone in Kent. I’ve always had 

sort of an outdoorsy life. I’ve done a 

variety of things and I’m largely selftaught. 

YOU SPENT QUITE A LOT OF TIME 

IN TAUNTON, DIDN’T YOU, AT THE 

CASTLE HOTEL? 

I did. Yeah, that’s really where I made 

my name. I was told “Oh, you’re a 

good lad, but you probably won’t 

get the job at the Castle.” I was like, 

“Okay, fair enough, but I’ll help you.” 

Meanwhile I had nine very happy years 

there (at The Castle), and I was very 

lucky. 

SO WOULD YOU EVER LIKE TO HAVE

OR A SLOT? 

I’m happy working on This Morning. 

I’ve been all around the world on This 

Morning. I’ve cooked on the Great 

Barrier Reef. I’ve cooked outside the 

Sydney Opera House. I’ve been all over 

India, Namibia, Norway, Alaska and I’ve 

been to Peru. I’ve been very lucky. 

SO WHAT’S GOING TO BE YOUR GO- 

TO DISH FOR THIS EVENING? WHAT 

ARE YOU GOING TO COOK FOR 

YOURSELF? 

This evening, I might have some Arctic 

char. It’s like an oily fish, a bit like 

salmon. It’s lovely, a beautiful fish, they 

do have a very mild salmon flavour. 

Perhaps with some Jersey Royals and 

some roasted English asparagus.

SMOKED 

CHICKEN, 

TOMATO & 

PEA PAN PIE 

SERVES 4 

PREP 15 mins 

COOKING 40–45 mins 

No faffing about: just line an ovenproof 

frying pan with filo, bake, fill, top and 

bake again. The base is nice and crisp, 

and the filling is hearty and tasty. Pretty 

much any filling can be used, but the 

drier the fillings, the better the pie. 

INGREDIENTS 

10 sheets frozen filo pastry, roughly 

defrosted 

1 egg, beaten 

25–30g butter, melted 

4 tablespoons olive oil, plus extra for 

drizzling 

1 onion, finely chopped 

1 courgette, finely chopped 

1 garlic clove, crushed 

400g can chopped tomatoes in juice 

200g frozen peas 

10g beef stock cube, crumbled 

400g smoked chicken breast, roughly 

chopped 

1 teaspoon smoked paprika 

4 tablespoons chopped fresh parsley 

(about a small bunch) 

salt and freshly ground black pepper 

green salad, to serve (optional) 

METHOD 

Preheat the oven to 200°C/gas mark 

6. Place a few sheets of filo pastry 

in a 20cm × 3cm-deep, ovenproof, 

non-stick frying pan, brushing each 

layer with a little beaten egg and then 

melted butter. Keep any trimmings for 

the top later. 

Bake in the oven for 10 minutes to set 

the egg and pastry, then remove. 

Meanwhile, heat the oil in a saucepan 

over a high heat. Add the onion, 

courgette and garlic and cook for 10 

minutes to soften. 

Add the tomatoes, peas and stock 

cube and simmer for 12–15 minutes 

until nice and thick. Stir in the chicken 

and season well with salt and pepper. 

Spoon into the cooked filo. 

Very finely slice the rest of the filo 

pastry and place into a bowl. Drizzle 

with olive oil, sprinkle over the smoked 

paprika and chopped parsley, then 

season well.

Arrange the filo on top of the filled 

pie. Pop into the oven and bake 

for a further 15 minutes until nicely 

browned. Serve with green salad, if 

you like.

• 100g (3 ½ oz) button mushrooms 

• 50g (1 ¾ oz) oyster mushrooms 

• 1 garlic clove, crushed 

• 60g (2oz) butter 

• ½ bunch thyme 

• 4 tsp extra-virgin olive oil 

• Salt QB 

• Pepper QB 

Let’s start by all agreeing that porcini are 

the best mushrooms in the world. But 

it is also important to take advantage 

of Mother Nature’s bounty and try more 

flavours, whilst being easy on the wallet. 

So we have no qualms with mixing it up 

with different types of shrooms. Variety is 

the spice of life. 

Roll out the pasta dough to obtain a sheet 

3mm (1/ 10 in) thick (this thickness is vital 

for texture and soaking up all the sauce). 

Fold it over 5 times (always in the same 

direction) then slice it horizontally with a 

knife in 1cm ( 1/3 in) strips to 

obtain tagliatelle. Set aside. 

Wipe off any dirt from the mushrooms with 

a damp cloth (don’t wash them under a tap 

– they hate that!). Cut them into uniform 

slices. Heat the butter, thyme and garlic 

clove in a saucepan. Add the mushrooms 

and brown them over a high heat. Once 

they are cooked, remove the garlic. 

Cook the tagliatelle in salted boiling water 

for 2–3 minutes (no more). Drain and 

add straight to the saucepan with the 

mushrooms and mix in the olive oil. Serve 

in pretty pasta bowls. 


CROCCHETTE AL 

TARTUFO 

Incredible croquettes with capocollo and black 

truffle. Serves 4 (12 CROCCHETTE) 

• 200g (7oz) capocollo (which can be replaced 

by any dryish cooked meat such as Prosciutto di 

Parma, spianata or salame piccante) 

• 1 large white onion 

• 1 medium-size black truffle in season (around 

25g/1oz) 

• 60g (2oz) butter 

For the béchamel sauce 

• 70g (2 ½ oz) butter 

• 70g ( ½ cup) plain flour 

• 450ml (scant 2 cups) whole milk 

• Salt QB 

• Pepper QB 

For the breading 

• 1 egg 

• 300g (2 cups) breadcrumbs 

• Sunflower oil QB 

Prepare the béchamel - Melt the 70g (2.oz) of 

butter in a saucepan. Add the flour then stir with 

a wooden spoon until you get a smooth paste. 

Simmer for 1 minute, pour in the cold milk while it 

is still on the heat and whisk the paste to eliminate 

any lumps. Cook for 3–4 minutes until thickened. 

The sauce should be neither too thick nor too 

runny. Add salt and pepper, then set the béchamel 

aside at room temperature. We’ll use it later. 

Thinly slice the onion and soften in a saucepan 

with60g (2oz) of butter. Chop the capocollo into 

small cubes and transfer these (lovingly) to the 

pan with the butter and onion. Cook for a further 

2 minutes. The secret? Do not overcook the 

cured meat otherwise it’ll be too salty. Pour in 

the bechamel and sprinkle with the grated truffle. 

Don’t worry, you’re allowed to use a grater for 

this – it’s not a sin. 

Transfer the mixture to the flattest tray you have 

and allow it to cool. A whole night in a cool place 

will only improve its consistency (In Italy, we leave 

it to cool on the balcony), but if you’re preparing 

it to be eaten on the same day, 25 minutes in the 

freezer will do the trick. After this rest of a few 

minutes (or a night, depending on your schedule), 

apply oil to your lovely hands (to stop the mixture 

sticking to your fingers) and form oblongs of 

about 5–6cm (2–2.in) long. 

Dip each in the egg and then in the breadcrumbs, 

and repeat. Put all the oblongs in the fridge for 

around 20 minutes before deep-frying them 

in a heavy saucepan half-filled with piping hot 

sunflower oil until golden brown. Finally, scatter 

over a little freshly grated truffle (yes, again! We 

are obsessed) on top before serving. As much as 

you want; it’s your home after all.

JACQUEMOUSSE 

Chocolate mousse with fior di sale 

and olive oil topping - Serves 6 

• 200ml (generous 3⁄4 cup) double/ 

whipping cream 

• 75ml (1⁄3cup) whole milk 

• 5 egg whites 

• 3 egg yolks 

• 85g (4 tbsp) honey 

• 180g (6 1⁄2oz) dark chocolate 

• 125g (4 1⁄2oz) milk chocolate 

• Chocolate flakes QB 

• 1 tsp extra-virgin olive oil (ideally, 

infused with a spicy or fruity flavour, 

according to taste – you will notice 

the difference) 

• 1 pinch of salt 

• Fior di sale QB 

Heat the milk, cream and honey in a 

saucepan. 

Meanwhile, melt the 2 types of 

chocolate in a bain-marie. 

When they have completely melted, 

add the egg yolks (make sure that 

they are at room temperature, 

not cold) and whisk in. Pour the 

chocolate mixture into a stainlesssteel 

bowl and then add the cream, 

milk and honey mixture. 

Whip the egg whites with a pinch of 

salt. Once the egg whites are stiff, 

add them to the other ingredients in 

the bowl in 2 stages (it is important 

not to beat the air out of the egg 

whites), using a spatula to gently 

fold in then leave to rest: 

• All night, if you’re sufficiently 

organized to prepare a meal the 

day before you serve it. 

• For 4 hours, if you’re sufficiently 

organized to prepare a meal a 

few hours before you serve it. 

• For as long as you can, if you’re 

pushed for time and have 

only just started to prepare 

the dessert when your guests 

arrive. In this case, be creative 

and drag out the aperitivo, 

serve 3 helpings of the main 

course and show your holiday 

photos. A good mousse must 

be allowed to rest. 

Just before serving, add a few 

drops of your wonderful infused 

oil, a few pinches of fior di sale and 

a scattering of chocolate flakes. 

Grazie e basta, you are perfect, and 

so is your mousse.

PANNA 

WINTOUR 

Panna cotta with verbena and 

citrus fruits - Serves 6 

• 1 litre (1qt) double/whipping 

cream 

• 50g ( ½ cup) granulated sugar 

• 10g (2 tsp) pectin 

• Zest of 1 orange and 1 lemon 

• A few fresh verbena leaves 

• Some citrus fruits (of your 

choice) 

Halve the citrus fruits and 

remove the flesh. Keep the skins 

intact and put them in the freezer. 

(Let’s upcycle here: make a juice 

from the flesh and get your daily 

dose of Vitamin C). 

Heat the cream in a saucepan 

with the verbena leaves and 

orange and lemon zest. Once 

the liquid is hot, discard the 

leaves and zest. If you have 

enough time, leave to rest 

with the leaves and zest for 30 

minutes in a covered bowl to 

allow the flavours to infuse a 

little more. 

Meanwhile, mix the sugar and 

the pectin in a bowl. Then 

add your citrus cream. NB: it 

mustn’t be too hot. The ideal 

temperature is 40°C (104°F) 

– but how can you check 

that? Well, if you don’t have a 

thermometer in your home, you 

can always ask the neighbour 

for one. 

Combine all the ingredients with 

a hand mixer or whisk, removing 

any lumps. Bring the cream to 

the boil in a saucepan. As soon 

as you see small bubbles starting 

to appear, remove from the heat 

then gently pour the cream into 

the citrus skins you’ve been 

keeping in the freezer. 

Keep in the fridge for as long as 

possible. Ideally… 4 hours! More 

realistically: for the length of 

your dinner – and here’s hoping 

this evening’s guests are tardy. 

For a final flourish, sprinkle 

some sugar on top and flambé 

with the grill or a blowtorch.

E:NY1 FAMILY SUV 

There is a week of school holidays 

in February this year. The older 

members of our family live a good 

3.5 hours travel distance, so our plan 

is to visit at half term. One thing I 

absolutely hate is trying to pack the 

car. I have packed for car boot sales, 

so I consider myself fairly competent, 

but the plan doesn’t take into 

account the teenage daughter who 

takes everything, just in case. 

The Honda e:Ny1 which was 

delivered to new owners in January, 

has a boot capacity of up to 1176 

litres, so the B segment car has 

plenty of space for a family. There is 

also a power tailgate which meant 

my daughter could access the boot 

for a forgotten item, without me 

having to get out. It’s a cold time of 

year, but luckily this Honda also has 

a heated steering wheel and heated 

front seats. 

Starting at £44,995otr, the Elegance 

grade comes with a comprehensive 

specification that includes an eightway 

electrically adjustable driver’s 

seat finished in synthetic leather, 

auto dimming mirrors, dual zone air 

conditioning, a wireless charging 

pad and multiple USB ports, 

power heated mirrors, sequential 

indicators, and privacy glass. 

The Advanced grade has a 

panoramic glass roof which fills 

the cabin with light and makes it 

feel spacious, giving a relaxing 

comfortable journey in a very quiet 

interior. With past experience, I 

was prepared for the moans and 

groans and had downloaded the 

My Honda+ app to my phone, so 

passengers could schedule their 

own climate control. 

This Core Connectivity package is 

complementary for the first eight 

years of ownership. The Digital Key 

package, which enables the driver 

and up to five others to lock, unlock 

and start the vehicle via the app, is 

free of charge for the first year of 

ownership. The Safety and Journey

a breakdown, while Geo Fence 

technology immediately notifies the 

owner if their vehicle is moved or

system helps to top up the battery 

and extend the electric range. 

Charging from 10 to 80% takes 

approximately 45 minutes using a 

rapid charger. 

With the family on board, safety 

is always a top consideration and 

depending on the grade chosen, 

this SUV has an intelligent suite of 

advanced safety features which 

include Lane Keeping Assist 

System, Adaptive Cruise Control, 

Collision Mitigation Braking, Blind

All change? 

for the independent school sector... 

These are interesting times for the independent school sector. 

They are contending with ongoing 

financial challenges, such as rising 

energy bills and teacher pension 

costs. They’re also navigating topical 

education issues, including reforms 

to the relationships, sex and health 

education (RHSE) curriculum and 

calls to ban mobile phones in the 

classroom. Perhaps most importantly, 

they are preparing for Labour’s policy 

to scrap business rates and add VAT 

to fees – something that creeps ever 

closer following the recent change in 

government. 

Independent schools are a vital part 

of the education system, and they 

contribute significantly to their local 

communities. They widen access 

through life-transforming bursary 

schemes; last year, schools provided 

over £1bn in fee assistance, of which 

over £500m was means-tested. They 

also collaborate with neighbouring 

state schools and local organisations 

to provide educational opportunities 

for children and young people. These 

mutually beneficial partnerships take 

many forms, ranging from academic 

programmes to those specialising in 

music, sports, and careers advice. By 

creating these links, schools address 

gaps in provision and discover new 

ways of doing things in their own 

schools. 

Labour’s election victory has 

considerable implications for 

independent schools, which lie at the 

heart of the party’s education policy. 

Both Bridget Phillipson and Sir Keir 

Starmer have reiterated Labour’s 

intention to add VAT to school fees 

– which would affect all independent 

schools – and take away business 

rates relief for those with charitable 

status. The former would hit some 

harder than others; small schools, 

faith schools, military families and 

children with special educational needs 

and disabilities (SEND) are among 

those most vulnerable to its effects. 

Many families would be priced out of 

independent schools, forcing those 

already operating on tight margins 

into deficit or even closure. Most 

independent schools do not have big 

surpluses and what they do have they 

reinvest back into education for their 

students and the local community. 

The policy would also have unintended 

consequences for the state sector, as 

children displaced from independent 

schools would seek places in already 

stretched state schools. Recent reports 

suggest there are a number of local 

authorities across the country that 

simply do not have the capacity within 

their state schools to admit an influx of 

pupils from the independent sector. 

While the business rates relief element 

of Labour’s plans would not apply 

to all independent schools, it does 

have implications for the charity 

sector as a whole. It would create 

a two-tier charity system, setting a 

worrying precedent that any charity 

seen as ideologically opposed to 

the government of the day could be 

subject to extra tax. 

It is still unclear when exactly these 

policies would come into effect, or 

whether those most at risk would be 

exempted from VAT on fees (pupils 

with an Education, Health and Care 

Plan are currently the only group to be 

protected from the rise). In the face of 

this uncertainty, independent schools 

will continue to do what they do best; 

provide a well-rounded education 

for their children, as well as valuable 

support for their local communities.

in that endeavour, using our collective 

voice to raise awareness of the crucial 

role independent schools play in the 

wider education system.

thriving state sector. We welcome

MEET THE HEAD 

Mrs Samantha Price is Head of Cranleigh School in Surrey, having joined in September 

after a successful decade as Head of Benenden School in Kent, and a career spent in 

education in a range of co-educational and single-sex schools. She shares with us her 

philosophy for education, nurturing teenagers and preparing young people for the 

world beyond the school gates... 

I have been hugely privileged to work 

with teenagers for over twenty years 

and boarding education is my passion. 

Teaching is one of the most rewarding 

careers because the culture of schools 

underpins the whole of society, providing 

a springboard for children that affects the 

rest of their lives. Although it was very 

different to the modern environment, I 

boarded myself at Malvern Girls’ College 

and absolutely loved it. I still have firm 

friends from my time there because 

the depth of friendship at boarding 

school is second to none. Malvern was 

a school where every child is known, 

similar to Cranleigh, and it’s one of the 

things that drew me to my new role 

because being seen and understood is 

so incredibly important to young people. 

It’s the building block of confidence 

and resilience. So my philosophy for 

education is to ensure that my school 

does exactly that, draws out the talents 

in each pupil but also helps them to 

recognise what they’re not so good at 

and understand that it doesn’t 

matter. 

Teenagers are facing a crisis in mental 

health which fundamentally stems from 

a lack of confidence in themselves 

and the world around them. Those 

adolescent years are challenging to 

navigate in the modern world, so schools 

have a vital role to play in nurturing and 

strengthening their pupils by ensuring 

that they truly know themselves and have 

the confidence and self-esteem they will 

need to thrive. 

Naturally, as educators, we also want to 

ensure that they get the best results for

THE CREATIVE ARTS AND 

THE IMPORTANCE OF MAKING 

MISTAKES

Creativity is a natural instinct we are 

all born with. Unfortunately, in an 

environment that does not properly 

appreciate or nurture this instinct it 

will all but die. As the Head of Art at 

St Catherine’s School, Bramley, I am 

fortunate to be in a School where such 

instincts are encouraged to thrive. 

The importance of the Creative Arts 

on a student’s development cannot 

be underestimated, helping as they do 

to develop self-expression, emotional 

intelligence, resilience and an overall 

broadening of the mind. We only need 

to look at the world beyond education to 

find evidence of this. Those graduating 

in the Creative Arts subjects are highly 

sought after by many employers including 

Apple and Dyson, to mention only two. As 

Steve Jobs himself once said, “Creativity 

is just connecting things. When you ask 

creative people how they did something, 

they feel a little guilty because they didn’t 

really do it, they just saw something. It 

seemed obvious to them after a while. 

That’s because they were able to connect 

experiences they’ve had and synthesise 

new things.” 

This should draw us all to the logical 

conclusion that a truly all-rounded 

education should give students a way 

of working across multiple areas and 

disciplines, from the analytical to the 

expressive. We can look at the world 

around us to see the creative endeavours 

of others everywhere. From the minimalist 

design of the phone in your pocket, to the 

clothes you wear, even the door handle 

of your car. These are all the result of 

creative decisions that have been made 

by people who were given the opportunity 

to think creatively and expressively. 

Everybody can draw. It is just a matter of 

being shown how to look at something. 

Think of it as you would your own 

signature. Everyone is different and 

distinctive; it is a matter of personal style. 

The crucial element is to embrace your 

own way of being creative, rather than 

trying to emulate the style of someone 

who you think is better than you. Once 

you get past the notion that you must 

create like other people, a world of selfexpression 

opens up. Picasso did not try 

to paint like Leonardo. Dali did not try to 

paint like Van Gogh. 

The greatest hurdle in creative freedom 

is the fear of failure. This fear fails to 

recognise that mistakes are a vital part of 

the learning process. It is only by taking 

risks and making mistakes that we make 

discoveries and learn how to resolve 

challenges. Let us talk about ‘creative 

exploration’ rather than a fear of failure 

and enjoy the pleasure of the creative 

journey, rather than focusing on the 

ultimate outcome. 

I find myself constantly encouraging my 

students to take risks and try something 

outside their comfort zone. In an attempt 

to lead by example, I took my own 

advice when I recently appeared on 

Sky’s Portrait Artist of the Year. This 

experience could not have been further 

from my comfort zone. I do not like being 

watched whilst painting, I prefer to work 

at my own pace, and I certainly had no 

urge to be on television. I also risked 

the idea of damaging my reputation by 

creating something awful for the world 

to see. There are no hiding mistakes on 

television, exposed as you are, but how 

can I tell my students to take risks if I am 

not prepared to do the same? In taking 


part in this programme, I learnt many 

things about my own creative process, 

perhaps most importantly that I could 

adapt my style and technique of working. 

These are things I would not otherwise 

have learnt. I believe that learning within 

the safe environment of a creative space 

helps us to take such risks. Unless, of 

course, that creative space happens to 

be on national television! 

Creativity enriches all our lives and is a 

form of communication that transcends 

words. The very process of creating can 

be incredibly calming, allowing us time 

to think and just be. Self-esteem can be 

enhanced by finding a creative voice and 

creative works can stretch and challenge 

our understanding. The key is not to 

allow the fear of failure to dominate our 

actions. If left unchecked, it can become 

debilitating in all areas of life. 

We are now faced with a world in which 

Artificial Intelligence (AI) is playing an 

ever-greater role and students face a 

changing employment landscape as a 

result. Is this something that we should 

be concerned about? In my opinion no. 

I believe that those in the Arts have a 

bright future ahead. We only need to look 

to the past to see that change can be 

positive. The camera was heralded as the 

end of painting, yet artists continued to 

express themselves in a way the camera 

could never achieve. Photography is 

now used as a tool by artists to support 

and enhance their work; it is not their 

enemy. Creative people are never afraid 

of change; they embrace it and adapt. 

One of the exercises I ask my students 

to carry out is to explore their ideas 

using image generating AI. In doing 

so it is crucial that they first consider 

the language they use to express their 

visual thoughts. Only then will AI suggest 

possible images that may inspire and 

reinforce their work or encourage them to 

change artistic direction. 

My challenge to you, should you choose 

to accept, is to grab some paper, a pencil 

or pen, and start drawing. Look around 

you and try to find a way to express what 

you can see on paper. Let this be the start 

of your creative journey. Do not be afraid 

of the mistakes you might make. Embrace 

them and become stronger for it.

GARDEN WAS BEFORE AND 

HOW YOU APPROACHED 

THIS PROJECT? 

The garden was just not fit for 

purpose. The access steps 

were treacherous and made 

arriving home awkward and a bit 

anticlimactic. The hard landscaping 

left very little space for garden 

furniture, and the finishes were 

either bare concrete or hardcore. 

The sloped site was challenging. 

The biggest job was the removal 

of earth and the creation of larger 

retaining walls - this allowed the 

usable space to double. 

We then wanted to zone the space 

as lounging and dining, with the 

dining on decking coming off 

the kitchen, and the lounging on 

porcelain slabs, meeting in the 

middle on the walkway. 

HOW DOES IT WORK WITH 

THE EXISTING HOUSE? 

The extension was designed with 

the garden in mind, with the Origin 

bi-fold doors opening from the 

kitchen onto the raised decking 

area. The black ‘Granite’ finish 

of the decking complements the 

doors, and also provides contrast 

against the buff-coloured stone of 

the house. 


There’s a nice circularity now 

between the inside and out, and 

the two different seating zones 

are connected by a path which is 

bordered by the same repeating 

plant drifts to create a flow. 

WHY CHOOSE COMPOSITE 

DECKING? 

Composite was a no-brainer for 

us - it’s long-lasting and very low 

maintenance compared with its 

timber equivalent. It’s easy to clean 

with a jet washer and there’s no 

sanding and re-oiling involved. 

This is the Explorer range from 

Envirobuild*, which is made from 

recycled plastic. The company 

also donates 10% of profits to 

sustainability charities - it’s nice 

to see a company with social 

responsibility.

selection is Earth Porcelain Paving* in the colour Anthracite and 

it just looks superb. The large format tiles make sure the space 

looks contemporary and the colour hides a multitude of sins! We 

used it on both the patio and the new steps, so its functionality 

was as important as the aesthetics. 

The porcelain is also a practical choice, it’s immensely strong and 

durable, scratch and stain resistant. Important when we wanted 

this area to house our fire pit. 

IS THAT THE FRONT DOOR? 

Sort of! The parking in this house is at the back, so we wanted 

there to still be a sense of arrival when coming home. This is 

made possible by the beautiful Origin Aluminium Door with the full 

height casement windows either side for added impact. The wide 

steps leading down to the door are paved with the same porcelain 

as the other patio.

CAN YOU TELL US MORE ABOUT THE PLANTING? 

We were really inspired by Prairie-style planting, so lots of drifts of 

ornamental grasses and herbaceous perennials - most of the ones 

in this style are really great for pollinators too, which was perfect 

for us. For the grasses, we chose the ornamental grass experts 

at Knoll Gardens - their selection is completely unmatched! Then 

for lots of the perennials, we selected from a mixture of a local 

plant nursery and then some stars from the Piet Oudolf curation 

at Farmer Gracy. Oudolf is an authority on this style of planting, so 

this curation was hugely helpful in terms of planning. 

Lots of the plants came from local nurseries. The best deals can 

usually be found at nurseries and the teams there always have lots 

of advice to offer. 

WHAT HAVE YOU LEARNED DURING THE 

PROJECT? 

That a budget only applies until you discover what’s lying 

underneath! The digging out and muck away of the retaining wall 

was a longer and more costly job than we could have anticipated. 

But ultimately, we’ve doubled the usable space in that area and 

it’s fabulous to use. We’d definitely stress the importance of 

having a contingency fund though. 

The other lesson was to make sure you know your garden before 

you start work - look at where gets sun - it will dictate not only 

where you sit but your planting schemes too.

MIND & BODY WELLBEING 

New Age UK research uncovers deeply troubling levels of 

mental ill-health among people in their fifties and over 

in later life 

A new report from the charity Age 

UK, ‘I just feel like no one cares’, 

paints a really worrying picture 

of the mental health challenges 

facing many members of our older 

population (people aged 50 plus). 

For the first time in this series of 

regular reports, Age UK’s data 

collection included people aged over 

50, rather than focusing solely on 

those aged 60 plus. The report helps 

to identify a wide range of factors 

that are impacting the wellbeing of 

older people and highlights how 

mental health challenges for specific 

sub-groups such as women, people 

with long term health conditions, 

carers and those living in deprived 

areas, are a lot more pronounced 

than for others. 

Another report published last week 

by the Centre for Mental Health - 

commissioned by Age UK – showed 

how older people are being left 

behind by inadequate mental health 

services, ageism and the absence 

of any national strategic approach 

for supporting them. This new Age 

UK report, ‘I Just Feel Like No One 

Cares’, reinforces the urgent need 

to take this issue seriously as our 

population ages and, as the report 

highlights, due to the significant, 

often disregarded needs of those in 

their fifties who are still very much of 

working age but approaching their 

later lives. Nationally representative 

polling[i] carried out for Age UK in 

September 2023 found: 

The entire 50 plus population: 

• Almost a third (31%) said that 

their physical health had got 

worse over the previous 12 

months, with (16%) finding it 

harder to look after themselves. 

• More than two in five (45%) said 

they had less energy; more than 

one in three (35%) said they 

couldn’t walk so far; and almost 

one in three (32%) said they 

were in more physical pain. 

• Almost two in five (39%) people 

aged 50 and over reported not 

sleeping well, and more than a 

third (34% - 8.7 million) told us 

that they felt less motivated to 

do things that they enjoy. 

• Almost half (48%) of unpaid 

carers aged 50 and over had 

felt anxious, more than a third 

(34%) had felt overwhelmed, 

and more than a fifth (21%) had 

felt lonely because of the care 

or support they provide. 

• One in eight (13%) people 

aged 50 and over were rarely 

or never having social contact 

with others in person, over the 

phone, or online.

HOW TO HELP 

The report from Age UK makes 

stark reading - but there are lots 

of ways to support feelings of 

wellbeing - we have just a few 

suggestions: 

EXERCISE It’s well 

understood that activity, particularly 

resistance training, can be hugely 

beneficial for retaining muscle 

mass, helping us age better. You 

could start at a gym under the 

instruction of a PT, or even start at 

home, using household items like 

water bottles or cans as weights. 

If nothing else, aim for 5 minutes 

- more than likely you’ll feel like 

doing more once you start. 

SOCIAL We are social 

creatures by nature, but as we 

age, those circles can get smaller. 

Forming new, regular connections 

is essential. Age UK’s website has 

a directory for social activities - 

also check local bulletin boards. 

Workshops or short courses in a 

hobby you enjoy is also a great 

way to meet people. 

MINDSET It’s hard 

to heal the body without the 

mind - mindfulness helps 

hugely. Yoga classes provide a 

helpful framework - and a group 

environment is helpful.
