KEEP AN eye out for a new<br />

author called Jessi Dee, who has<br />

just released her first book.<br />

Not bad for a 7-year-old whose<br />

real name is Jessica Dippenaar.<br />

Jessica’s book Coco’s Adventure<br />

is described as a superhero saga<br />

that follows main character Coco<br />

as he “takes his first steps towards<br />

greatness”.<br />

The pupil at Knights Stream<br />

School in Halswell went to mum<br />

Anneri Dippenaar with a request<br />

to write a book just after her<br />

seventh birthday.<br />

Dippenaar said her daughter<br />

had always been a good storyteller,<br />

but the ability to write it all down<br />

has only just caught up to her.<br />

“Now that she has the ability to<br />

put things to paper, she’s started<br />

using that method more.<br />

“I would see her in her bedroom<br />

writing in the book and<br />

then when I’m making dinner<br />

she would come sit at the table<br />

just writing. I definitely did not<br />

prompt her.<br />

“It was just amazing to see her<br />

blossom into doing this herself.”<br />

Once Jessica finished writing, a<br />

professional editor was enlisted to<br />

review the grammar and spelling,<br />

while still encapsulating Jessica’s<br />

original vision.<br />

Illustrations were created<br />

through Chatgpt, and then the<br />

book was ready for publishing.<br />

They made copies to send to<br />

family in South Africa, and also<br />

donated a copy to her school.<br />

Now, they’ve set up a website<br />

where the book is available to<br />

download or purchase.<br />

“She doesn’t know how<br />

incredibly awesome she is.<br />

“Like to her it’s just, ‘mama,<br />

why are you making such a big<br />

deal out of this?’ And I’m like,<br />

people don’t do this, Jessie baby.<br />

Seven-year-olds don’t do this.”<br />

Dippenaar said.<br />

“Mama’s pride took over and<br />

now I just want to tell the world<br />

how awesome my daughter is.”<br />

New patrol<br />

SCHOOL classrooms being left<br />

unlocked is the most common<br />

issue Halswell’s new community<br />

patrol has faced since its launch.<br />

Halswell Community Patrol<br />

secretary Lynley Capon said<br />

school security has been the<br />

biggest problem to date.<br />

“(The patrol has) found doors<br />

unlocked and windows not<br />

closed.<br />

“It’s probably because of afterschool<br />

activities, and people<br />

haven’t been vigilant at the end of<br />

their activities.”<br />

Capon said they haven’t<br />

received any reports of stolen<br />

goods.<br />

The patrol began its service at<br />

the end of July, and a launch was<br />

held in August to welcome its<br />

patrol car.<br />

The organisation is seeking<br />

more members, having only 19 of<br />

the desired 30.<br />

“The more members we have,<br />

the more patrols we can actually<br />

do,” said Capon.<br />

“At this stage we’re only on<br />

Friday and Saturday nights and<br />

our patrol is only four hours.<br />

So the more members who are<br />

trained, the more patrols can be<br />

done.”<br />

Capon said the patrol car was<br />

paid for by a city council grant,<br />

community donations and a quiz<br />

night fundraiser.<br />

Paralympian shares celebration with Ryman<br />

ALISON SMITH’S sharp<br />

shooting instincts memorably<br />

took her to the Big Apple to<br />

compete successfully for an air<br />

rifle bronze model in the 1984<br />

Paralympic Games.<br />

Four decades on, in the same<br />

year Ryman is celebrating its<br />

40th anniversary, Alison, a<br />

bronze medallist, has been<br />

keeping a close eye on the Paris<br />

<strong>2024</strong> Paralympic Games along<br />

with fellow residents at Ryman’s<br />

Diana Isaac Retirement Village in<br />

Mairehau.<br />

For Alison, it was a memorable<br />

games, not least for seeing<br />

President Ronald Reagan<br />

officially opening the New<br />

York event supported by heavy<br />

security, she remembers. More<br />

than three years earlier, in March<br />

1981, Reagan was the target<br />

of an assassination attempt<br />

by John Hinckley Jr outside<br />

the Washington Hilton.<br />

Alison remembers that at the<br />

games, Reagan remained within<br />

a very tight protective cordon.<br />

“The big excitement was the<br />

President of the United States was<br />

arriving via helicopter to open<br />

the games.<br />

“I had never seen so many<br />

policemen, and snipers on top of<br />

the buildings. Four helicopters<br />

arrived, hovering over the<br />

stadium. Eventually one landed<br />

and out hopped Ronald Reagan<br />

along with his entourage,” she<br />

says.<br />

“A lot of us had never seen<br />

anything like that . . . looking<br />

around and seeing all these guys<br />

in dark clothing with their rifles<br />

at the ready.”<br />

While Alison was competing in<br />

New York, back in Christchurch,<br />

Ryman co-founders Kevin<br />

Hickman and John Ryder were<br />

laying the foundations for what<br />

would become a network of 40<br />

villages across New Zealand and<br />

eight in Victoria, Australia.<br />

On <strong>September</strong> 19, Alison,<br />

along with fellow residents, will<br />

be celebrating Ryman’s 40th<br />

anniversary at special events<br />

being held at each village.<br />

Alison is now enjoying life in a<br />

townhouse and watching events<br />

in Paris on TV. Other residents<br />

are well aware of her Paralympic<br />

efforts, especially with the <strong>2024</strong><br />

games taking place.<br />

There were lots of other<br />

highlights from the 1984 trip to<br />

the USA.<br />

She and other Kiwi competitors<br />

were provided accommodation<br />

at Hofstra University campus in<br />

Hempstead, New York.<br />

Grid - The life and times of First World War fighter ace<br />

Keith Caldwell by Adam Claasen<br />

This gripping biography of Air Commodore Keith ‘Grid’ Caldwell CBE, MC, DFC & bar,<br />

Croix de Guerre, tells the story of his remarkable exploits during the First World War.<br />

Flying single-seat fighters against best of the German air force, including the Red<br />

Baron’s Flying Circus and airmen such as Werner Voss, Caldwell accumulated 26<br />

victories in aerial combat. Over his illustrious career he flew with numerous ‘stars’ of<br />

the British air service, including Albert Ball, Billy Bishop and Mick Mannock. In the last<br />

year of the war, aged only 22, he was given command of the new 74 Squadron. Under<br />

his leadership the ‘Tigers’ become one of the war’s most feared and revered units.<br />

Caldwell was a hero, a leader, and a man of great courage by any measure.<br />

The accommodation was by<br />

no means up to the standard of<br />

paralympics today, but Alison has<br />

no regrets about travelling such<br />

distances and making the most of<br />

the facilities available at the time.<br />

“When I went it was pretty<br />

basic,” she laughs.<br />

“For transport they took the<br />

seats out of one of the yellow<br />

school buses and of course you<br />

weren’t wearing seat belts or that<br />

sort of thing, so you sort of held<br />

on for grim death.”<br />

Alison is the first and only<br />

female shooting para athlete to<br />

date to have represented New<br />

Zealand at a Paralympic Games.<br />

She won bronze in the women’s<br />

air rifle integrated category.<br />

Alison said every four years<br />

the Paralympics are a reminder<br />

of her mid-80s adventure,<br />

particularly the accommodation<br />

and transport to the venue,<br />

though obviously times have<br />

changed.<br />

She remembers travelling<br />

alongside two other Kiwi<br />

paralympians, athlete Michael<br />

O’Callaghan and field eventer<br />

Denise Cook, to and from the<br />

events. She remains in regular<br />

contact with both.<br />

Alison got into air rifle<br />

shooting via the Canterbury<br />

SEPTEMBER<br />

Paraplegic Association, starting<br />

first in archery, training with<br />

disabled athlete Neroli Fairhall.<br />

Then in the late 1970s she joined<br />

in with a memorable ‘games<br />

night’.<br />

One of the air rifle tutors that<br />

night at the Ollivers Rd rugby<br />

league hall, Len Smith, later<br />

became her husband.<br />

Winning the bronze medal of<br />

course meant a phone call home<br />

to New Zealand, to share her<br />

incredible news with her parents,<br />

brother and three sisters.<br />

In those days the games were<br />

only set up for paraplegic and<br />

quadriplegic competitors rather<br />

than those with a much wider<br />

range of disabilities.<br />

“I competed in a threepositional<br />

shoot competition:<br />

prone, kneeling, and standing,<br />

all from the wheelchair. It was<br />

60 shots in each position …<br />

I proudly came home with a<br />

bronze medal,” Alison says.<br />

In 1984, another competitor<br />

was Graham Condon who<br />

helped source a wheelchair from<br />

Healing Industries at a discount<br />

for Alison, to make her sporting<br />

achievements easier.<br />

Alison is upfront about her life.<br />

She was born on <strong>September</strong> 13,<br />

1950, minus her right leg, from<br />

the hip, and the left, from the<br />

upper third of the thigh, starting<br />

life with artificial limbs.<br />

Recently, Alison was proud to<br />

be recognised as New Zealand’s<br />

No. 53 Paralympian.<br />

Bellringers group seeks recruits<br />

to keep ancient melodies alive<br />

A GROUP of musicians are on a<br />

mission to keep the dying art of<br />

bell-ringing alive.<br />

The Christ Church Cathedral<br />

Handbell Ringers is looking for<br />

new members to pass on their<br />

skills and knowledge to, and<br />

ensure the next generation can<br />

still enjoy the art.<br />

Handbell ringers captain<br />

Andrew Cox said the hobby<br />

combines music, exercise, and<br />

teamwork.<br />

“We all like music and it’s<br />

something that’s unique – so<br />

unique – and we just enjoy<br />

playing.”<br />

The playing of modern handbells<br />

can be traced back to the<br />

17th century.<br />

“It originated from tower<br />

bellringers, when they used to<br />

practice in the winter and the<br />

evenings,” Cox said.<br />

“The church would be cold, so<br />

they worked on handbells and<br />

they could sit in the pub with a jug<br />

of beer in one hand and a bell in<br />

the other, and away they go.”<br />

He said the group used to<br />

have 11 members but it has now<br />

dwindled to five.<br />

“We shut down during Covid-19<br />

for about <strong>12</strong> months, and we’ve<br />

never been able to pick up the full<br />

number since.”<br />

Before the 2010 and 2011<br />

earthquakes, the bellringers<br />

regularly practiced at Christ<br />

Church Cathedral. They restarted<br />

again after their bells were<br />

recovered from the rubble.<br />

“It’s looking a bit bleak at the<br />

moment,” Cox said.<br />

“If only we could get another<br />

three or four more players, that<br />

would make all the difference.”<br />

He said there is no religious<br />

element to the group, all you need<br />

to be a potential member is a basic<br />

knowledge of music and the will<br />

to keep the art alive.<br />

Concert helps schoolhouse restoration<br />

TWO VISITING choristers from<br />

England performed as part of a<br />

classical concert at Rapaki Marae,<br />

to raise money for the restoration<br />

of the old Rapaki schoolhouse.<br />

The afternoon included a powhiri,<br />

high tea and a performance<br />

by The Canterbury Association<br />

Oxfords Project.<br />

The vocal quartet consisted<br />

of James Parmeter and George<br />

Blundell (from Christ Church,<br />

Oxford) and Adrian Lowe<br />

and Kimberley Wood (from<br />

Christchurch).<br />

More than 70 people attended<br />

the concert, raising $2658 for the<br />

old school restoration.<br />

The schoolhouse is a rare example<br />

of a 19th-century building<br />

within a Ngāi Tahu settlement.<br />

Built in the 1870s, it was part<br />

of a network of village primary<br />

schools established by the Native<br />

School Department to provide<br />

education for children in Ngāi<br />

Tahu communities.<br />

The restoration has involved significant<br />

repairs, seismic strengthening,<br />

and moving the building<br />

to a less erosion-prone site on the<br />

same section.<br />

THERE ARE PLUMP, crumb-coated<br />

croquettes of peas and tarragon waiting<br />

to pop into sizzling oil and slices of<br />

potato, partly cooked and ready to toast<br />

under the grill. The pea croquettes will<br />

sit on a tangle of pea shoots and herbs.<br />

The potatoes will get a sauce of sweet,<br />

golden onion, curry paste and yoghurt.<br />

Both are the sort of recipes you can<br />

prepare in advance, leaving only the<br />

cooking to the last minute.<br />

Grilled potatoes with curry<br />

yoghurt sauce<br />

Serves 4. Ready in 45 minutes<br />

Ingredients<br />

400g potatoes, medium-sized<br />

30 curry leaves<br />

1 large onion<br />

3 Tbsp ground nut vegetable oil, plus a<br />

little extra<br />

1-2 Tbsp mild curry paste<br />

250ml yoghurt<br />

Method<br />

• Bring a deep pan of water to the boil,<br />

then salt it generously. Peel the potatoes,<br />

then add them, whole, to the water.<br />

Let them cook for about 15 minutes or<br />

until they are tender enough to pierce<br />

easily with a metal skewer. Remove the<br />

potatoes from the water and set aside to<br />

cool a little.<br />

• Warm the oil in a shallow pan,<br />

scatter in half the curry leaves, fry for a<br />

minute or two until almost crisp, then<br />

remove from the pan with a draining<br />

spoon and set aside.<br />

• Peel the onion, slice it thinly, then<br />

stir it into the remaining oil in the<br />

shallow pan. Let it cook over a low to<br />

moderate heat for 15 minutes or so,<br />

stirring from time to time, until soft and<br />

pale gold.<br />

• Line a baking sheet with kitchen foil<br />

and preheat an overhead (oven) grill. Cut<br />

the potatoes into slices, each roughly the<br />

thickness of a couple of $1 coins. Place<br />

them flat on the baking sheet. Brush<br />

each slice with a little groundnut or<br />

vegetable oil, then season lightly with<br />

salt and cook under the preheated grill<br />

until they start to colour.<br />

• Scatter the remaining curry leaves<br />

into the onion and let them cook for a<br />

minute or two. When they darken, stir<br />

in the curry paste. Continue cooking for<br />

a couple of minutes until the onion is<br />

coated with the paste and very fragrant,<br />

then stir in the yoghurt and remove<br />

from the heat.<br />

• When the potatoes are golden and<br />

sizzling, serve with the curry sauce and<br />

scatter with the reserved curry leaves.<br />

Pea and wasabi croquettes<br />

with pea shoots<br />

Makes 8, serves 2. Ready in 30 minutes,<br />

plus chilling time<br />

Ingredients<br />

500g shelled peas, fresh or frozen<br />

15g tarragon<br />

2-3 tsp wasabi paste<br />

40g butter<br />

2 egg yolks<br />

40g breadcrumbs, dry, white such as<br />

panko<br />

To coat and fry:<br />

2 eggs<br />

4 large handfuls of breadcrumbs<br />

vegetable or groundnut oil to shallow fry<br />

To serve:<br />

a handful of pea shoots, mint and<br />

coriander<br />

a little olive oil<br />

a little lemon juice<br />

Method<br />

• Put a deep pan of water on to boil<br />

and salt it lightly. When it is boiling, tip<br />

in the peas and let them cook for about<br />

4 minutes, a little longer for fresh peas,<br />

then drain them. Strip the tarragon leaves<br />

from their stems. You will end up with<br />

about 10g.<br />

• Tip the cooked peas into the bowl of<br />

a food processor and reduce to a thick<br />

purée, then add the tarragon leaves and<br />

the butter. Beat the egg yolks, then stir<br />

them into the puréed peas together with<br />

the wasabi, breadcrumbs and a generous<br />

seasoning of salt. Transfer to a mixing<br />

bowl, cover and leave to chill.<br />

• Gently shape the pea mixture into 8<br />

barrel-shaped croquettes. (A little flour<br />

on your hands will make this easier.)<br />

• Break the eggs into a shallow dish<br />

and beat lightly with a fork. Put the<br />

breadcrumbs into a second shallow dish<br />

or deep plate. Lower the croquettes, one<br />

by one, into the beaten egg, then into<br />

the breadcrumbs. Pat firmly to help the<br />

crumbs stick to the croquettes, then lift<br />

them out on to a baking sheet.<br />

• Warm a 1cm deep layer of vegetable<br />

or groundnut oil in a shallow pan.<br />

Keeping at a moderate heat, lower the<br />

croquettes into the oil and fry for a few<br />

minutes until the underside is golden<br />

and crisp. Gently turn them and cook the<br />

other sides, then remove and drain on<br />

kitchen paper.<br />

• Toss together the pea shoots, mint<br />

and coriander leaves, dress with a little<br />

olive oil and lemon, then nestle the<br />

croquettes among them.

new potatoes in a salad<br />

or big floury spuds best<br />

for baking, you can<br />

always turn to spuds for<br />

satisfaction, writes Nigel<br />

Slater<br />

Jacket potatoes with<br />

cauliflower and parmesan<br />

The cauliflower needs to be<br />

quite soft for this, so I cook it for<br />

longer than usual, until a skewer<br />

or the point of a knife slides<br />

easily through it. The stalks, cut<br />

into thick coins, are good here,<br />

too. I mash the potato with the<br />

flat paddle attachment of a food<br />

mixer, but a potato masher or<br />

ricer will also work.<br />

Ingredients<br />

Serves 3<br />

6 medium baking potatoes<br />

1 cauliflower, about 500g<br />

750ml milk<br />

2 bay leaves<br />

50g butter<br />

75g parmesan cheese, grated,<br />

plus a little more<br />

4 heaped Tbsp parsley leaves<br />

Method<br />

• Preheat the oven to 180°C.<br />

Bake the potatoes for about an<br />

hour, depending on their size.<br />

• Break the cauliflower into<br />

florets, cut the stalks into small<br />

pieces, then put them into a<br />

saucepan with the milk and bay<br />

leaves. Season with ground black<br />

pepper and a little salt then<br />

bring almost to the boil. As the<br />

milk starts to bubble, lower the<br />

heat so the cauliflower simmers<br />

gently.<br />

• When the cauliflower is<br />

tender – it should take about 25<br />

minutes but test it with the point<br />

of a knife (if it slides through<br />

easily then it is done) – remove<br />

with a draining spoon, saving<br />

the milk and set aside.<br />

• Remove a “lid” from each<br />

of the potatoes – a slice large<br />

enough for you to scoop out the<br />

inside with a spoon.<br />

• Put the potato flesh into the<br />

bowl of a food mixer with the<br />

butter and mash till smooth,<br />

adding enough of the warm<br />

reserved milk to make a soft<br />

but not sloppy purée (anything<br />

from 100-250ml). Mix in the<br />

parmesan cheese and the cooked<br />

cauliflower and chopped parsley.<br />

Check the seasoning, adding salt<br />

and pepper as you wish.<br />

• Heat an overhead grill. Place<br />

the empty potato shells and<br />

their tops on a baking sheet or<br />

grill pan, fill the potatoes and<br />

their lids with the potato and<br />

cauliflower cheese mixture then<br />

dust lightly with a little more<br />

parmesan. Place under the<br />

heated grill until the surface is<br />

lightly golden and the sauce is<br />

bubbling.<br />

Potatoes, mussels, dill<br />

Use any potatoes for this,<br />

but the waxy, yellow-fleshed<br />

varieties are particularly<br />

pleasing with the mussels. Dress<br />

them while they are still warm<br />

so they soak up more of the<br />

dressing. If you don’t want to<br />

add the cream to the dressing<br />

then double up on the olive oil,<br />

vinegar and honey.<br />

Ingredients<br />

Serves 3-4<br />

750g small, waxy-fleshed<br />

potatoes<br />

500g mussels<br />

2 heaped tsp Dijon mustard<br />

1 Tbsp cider vinegar<br />

2 tsp honey<br />

50ml double cream<br />

50ml olive oil<br />

2 Tbsp dill fronds chopped, plus<br />

a little more to finish<br />

Method<br />

• Bring a deep pan of water to<br />

the boil, then salt it generously.<br />

Scrub the potatoes, there is no<br />

need to peel them (though you<br />

can if you wish), then cook in<br />

the boiling water until tender<br />

to the point of a knife – about<br />

15-20 minutes depending on<br />

their size.<br />

• Wash the mussels, tugging<br />

out any beards and discarding<br />

any with broken shells. Tap<br />

each one on the side of the sink;<br />

it should close immediately.<br />

Discard any that don’t.<br />

• Put them into a deep<br />

saucepan with a splash of water,<br />

cover tightly with a lid, place<br />

over a high heat then cook for<br />

3-5 minutes or so, shaking the<br />

pan from time to time, until<br />

the shells open. As soon as the<br />

mussels are open, remove from<br />

the heat and set aside for a few<br />

minutes to cool.<br />

• Remove each mussel from its<br />

shell and set aside.<br />

• Make the dressing: using<br />

a fork or small whisk, beat<br />

together the mustard, cider<br />

vinegar, honey, cream and olive<br />

oil then stir in a good grinding<br />

of black pepper and the dill<br />

fronds.<br />

• Slice the potatoes thickly<br />

into coins, then toss, while<br />

they are still warm, with the<br />

dressing. Transfer to a serving<br />

dish and scatter the mussels<br />

over. Finish with a little<br />

chopped dill.<br />
