And just like that, summer is over. In the blink of an 

eye, the days are getting shorter, the kids are back to 

school and we’re bunkering down in preparation for 

those chilly autumn days which are just around the 

corner. Now, autumn brings with it a fair share of 

festivities; there’s Halloween and Bonfire Night to 

look forward to, before the countdown to (dare we 

mention it?) Christmas. It is, in fact, a favourite time 

of year here at J’AIME HQ. 

Sometimes, a good chuckle is good for the soul so 

if you’re in need of a laugh, there are not one, but 

two, fantastic comedy festivals taking place around 

the Midlands this autumn - TamMirth Comedy 

Festival brings star names including Jack Dee 

and Ed Byrne to Tamworth, while Birmingham 

Comedy Festival offers up a whole host of leading 

comedy names from the Midlands and beyond. 

Elsewhere, Lichfield chef Jack Dubberley takes 

a look at some of the best produce to grow, cook 

and forage for right now as we enter a bountiful 

new season while, if you’re looking for an escape a 

little further afield, a winter getaway in search of 

the Northern Lights may tick all the boxes - and

STAND BY FOR SOME FIRST-CLASS STAND-UP AS SOME OF THE BIGGEST NAMES IN 

COMEDY COME TO A STAGE NEAR YOU FOR BOTH THE TAM-MIRTH COMEDY FESTIVAL 

AND BIRMINGHAM COMEDY FESTIVAL THIS AUTUMN 

If laughter is the best medicine, there are remedies 

aplenty in store as both the Tam-Mirth Comedy 

Festival and Birmingham Comedy Festival prepare to 

entertain and delight audiences across the Midlands 

over the next two months. 

There’s nothing like a belly laugh to lift the spirits, and 

with more than 150 acts to choose from, you’re sure 

to find something to tickle your fancy as two of the 

Midlands biggest comedy festivals prepare for a backto-back 

feast of fabulous funnies. 

There's big names off the telly rubbing shoulders with 

carefully curated up-and-comers and the cream of the 

region's comedy scene to create a month-long double 

bill of hilarity. 

While the Tam-Mirth Comedy Festival is already 

underway at Tamworth’s Assembly Rooms, there are 

still shows from some comedy heavyweights to enjoy. 

Ed Byrne returns with his hit show ‘Tragedy plus time’ 

on Thursday, September 26, which was sold out when 

he last appeared. 

If you’ve managed to grab tickets for the legend that is 

Jack Dee on Friday, September 27, then you’re in luck, 

as the stand-up maestro’s sold-out show is ready to set 

the scene ahead of his forthcoming UK tour. 

Councillor Lewis Smith, of Tamworth Borough 

Council, said: “We’re really excited to set up this event 

at the Assembly Rooms and once again leading on the 

Tam-mirth Comedy Festival. 

“Bigger than ever before, we have fantastic comedy

Featuring some of the biggest names in standup 

alongside the cream of the West Midlands 

comedy scene, Birmingham Comedy Festival 

returns from October 4 to 13. 

The award-winning annual arts festival is the 

UK’s second-longest running comedy festival, 

and welcomes star names including Sarah 

Millican (October 13, Symphony Hall), The 

Mash Report’s Rachel Parris (October 10, 

Town Hall), and Maisie Adam (October 8, 

Town Hall) to the second city. 

Joining them are Milton Jones (October 6, 

Town Hall); Jason Byrne (October 11, Town 

BIRMINGHAM NATIVE JO ENRIGHT 

Hall); ‘Instagram dad’ George Lewis (October 13, The 

Glee Club); Hollyoaks and EastEnders actor Richard 

Blackwood (October 13, The Glee Club) - marking 30 

years in comedy with pal Slim; the delightful Laura 

Lexx (October 10, Old Joint Stock); South African 

comedian Schalk Bezuidenhout (October 6, The Glee 

Club); and Frank Skinner’s radio co-host Pierre Novellie 

(October 9, The Glee Club). 

With an eye on comedy’s rich history, there’s also a 

triple-bill of Laurel and Hardy films (October 11, West 

Midlands Police Museum), while play Howerd’s End 

(October 3 to 5, Old Joint Stock) explores the troubled 

life of comedian Frankie Howerd, and Hancock’s Half 

Hour: The Lost TV Episodes (October 4, The Crescent 

Theatre) recreates three long-lost episodes from the 

1950s BBC sitcom. 

As always, the region’s vibrant comedy scene is well 

represented with appearances from Jo Enright (October 

7, Hockley Social), Black Country star Jonny Cole 

(October 10, Sutton Coldfield Town Hall), and Shazia 

Mirza (October 11, Birmingham Hippodrome), plus 

Richard Dadd, Rachel Baker, Damon Conlan, Hasan 

Al-Habib (winner of the festival’s Breaking Talent 

Award 2024), Joe Bingham, Sachin Kumarendran and 

Harry Jenkins. Meanwhile, the prestigious Birmingham 

Comedy Festival Breaking Talent Award 2024 (October 

10, The Glee Club) continues to celebrate the next wave 

of West Midlands comedy talent. 

The always-popular Birmingham Comedy Festival Free 

Half-Dayers also return on October 6 and 13. With 

back-to-back shows at two venues on John Bright Street, 

acts lined up include Channel 4 Sean Lock Comedy 

Award winner Eric Rushton, A&E doctor/comedian 

Kwame Asante, James Cook with his cult Edinburgh 

Fringe hit Board Game Smackdown, Breaking Talent 

2022 winner Hannah Weetman, and Funny Women 

Award finalist Tal Davies. 

Elsewhere, The Comedy Junction

In search of the Northern Lights 

PHIL MEPHAM ENJOYED A MEMORABLE CRUISE AROUND THE FJORDS 

OF NORWAY ON A JOURNEY TO DISCOVER THE NORTHERN LIGHTS AND MORE 

THE GLORIOUS NORTHERN LIGHTS 

The brief we set ourselves seemed reasonably 

simple, but the planning clearly required input from 

experts. The plan included the Northern Lights, a 

cruise and an itinerary that didn’t see us spending 

too much of our time sailing up the east coast of 

England. We wanted to be plunged straight into 

arctic brilliance instead of being offered it in stages 

by lapping through murky English waters and easing 

past Ipswich, Hull and Sunderland. The result was - 

quite simply - the most memorable holiday we’ve ever 

experienced. 

We’d wanted to see the Northern Lights for ourselves 

ever since my late parents enthused about their 

beauty after their own arctic cruise. Neither Mum 

or Dad were ever renowned for over-egging any 

particular pudding, so their almost child-like awe of 

Aurora Borealis was a significant endorsement. 

And so a plan was hatched. With the significant help 

of Oliver and Clare at RB Collection, we decided 

on a week-long cruise around Norway’s beautiful 

coastline and fjords. From Kirkenes in the arctic 

north-east to Bergen in the watery south-west. It 

proved to be a 1,500-mile journey of relentlessly 

stunning, breathtaking scenery. 

At this point, I can’t possibly let you wait until the 

end to answer two fundamental questions: Would we 

do it again? YES! Would we recommend it to others? 

DEFINITELY! Here’s why…. 

As we arrived at Oslo there, in clear sight, was our 

chauffeur. The chance to see Oslo and it’s warmlighted 

beauty was a lovely bonus before our cruise. 

Six days and 32 ports lay ahead. It sounds a tough 

schedule but sailing into narrow fjords to make 

service stops for locals who use the ship’s journey like 

a bus service, does mean you’re seeing some of the 

most wonderful scenery that, in many instances, is out 

of reach of the larger, more traditional cruise ships. 

Don’t be fooled that this must have been a holiday 

on nothing more than a glorified ferry. The Havila 

Capella was comfortably appointed and perfectly 

suited to a journey of holiday mild exploration. The 

Havila fleet is modern and the Capella was certainly 

clean and fresh. With a capacity for 640 passengers, 

it isn’t large by cruise standards, but with narrow 

fjords to navigate and eager ice-hunting tourists to 

accommodate, it’s perfectly suited to its purpose. 

Our cabin, a ‘Seaview Superior Double’ was a 

comfortable size and neatly appointed. For the 

trip south we were pleased to be port side which 

ensured a permanent view of the coastline through 

our reasonably-sized porthole. My personal view of 

accommodation requirements for such a trip would

be that a ‘better’ cabin with a balcony is unnecessary. 

It’s easy to nip up to an observation deck when you 

feel the urge and even with a balcony on hand, you 

wouldn’t be out there for too long anyway! 

The Havila line prides itself on vessels that are 

ecologically sound. Breaking through crystal clear and 

seemingly unpolluted waters in a ship that boasts the 

world’s largest battery pack, that can sail for four hours 

at time with zero emissions and uses liquid natural 

gas to cut its overall Co2 emissions by 25% is a proud 

boast. 

Apart from a short, informal and extremely useful 

daily briefing for what lay ahead, there was no evening 

entertainment on board but with majestic scenery and 

regular ‘chocolate box’ port stops to admire, dancers, 

sequins and someone pretending to be Jane McDonald 

would have been wholly out of place. 

Each of the port stops were majestic in their own way. 

Some, such as Hammerfest, Skjervøy and Bønnøysund 

were picture-postcard arrivals, others such as Tromsø, 

were a wonderfully impressive glide into a glittering 

nighttime metropolis. Passing under Tromsø’s road 

bridge, enveloped on either side by a 

wonderful twinkling streetlight show 

with the ship proudly announcing its 

arrival, (two long blasts, one short, 

then a final long one) was one of 

those simple life experiences you just 

want to soak in. 

The weather throughout was 

a reminder of nature’s brutal 

magnificence. Making half the 

journey within the Arctic Circle 

means that a mix of snow, wind, 

brilliant sunshine and ice cold 

yet beautifully fresh untainted air 

shouldn’t come as a surprise. Even so, 

I suppose you do have to be a certain 

type of person to rush out on deck 

and video an arrival into port during 

a howling snowstorm. Yes, I was that 

madman - but I can assure you I 

wasn’t alone. 

Cruising inside the Arctic Circle in 

January means daylight is scarce. You 

might think that’s a disadvantage 

when you’re effectively sightseeing 

but in our experience it really isn’t. 

There is certainly a long period of 

darkness through each day but there 

are also extended phases of the 

most wonderfully eerie twilight that 

supports the sun’s brief appearance 

and adds something special to the 

spectacle. 

Summer in Norway provides 

almost total daylight and, from the images we saw in 

brochures and around the streets, it presents a very 

different type of beauty. But the winter months are 

the most dramatic and awe inspiring. They’re also the 

months when the Northern Lights are at their peak. 

For those who don’t know, I can confirm that the 

Northern Lights don’t just ‘appear’ (as I thought) they 

build. In simple terms, the light show is created by 

solar particles entering the earth’s atmosphere and 

what we saw was a brownish cloud emerging in the 

night sky. Slowly, this cloud began to glow and take on 

a luminescent lime hue which can then develop into 

a stark electric green or even purple. In our case, it 

didn’t. 

Before we travelled, we booked three excursions, but 

the vagaries of the weather meant two of them were 

cancelled. It’s the downside I suppose, of a winter 

break. There was an upside because the nice lady in 

the Excursion Office on board recommended another 

as ‘one not to miss’ and it proved a single trip that 

more than compensated for the two cancellations.

just any coach journey. Before the ship continued 

its journey from Harstad to the next port of call, we 

disembarked and journeyed south by road. First, came 

a visit to a quaint, yet modern church with a gentle 

local tale to tell and then a museum that revealed 

the realities of life through the ages in Norway’s 

sometimes brutal weather conditions. 

The main event was the most wonderful journey 

around a fjord, complete with picture stops and a 

ferry crossing. It was a comfortable two-hour journey 

that afforded the sight of sea eagles, elk and an aweinspiring 

vista at every turn. The final touch was a 

neatly co-ordinated arrival into the town of Sortland 

to rejoin the ship and to see the Capella’s graceful 

arrival into port amidst more stunning scenery. 

And so to the food. One word; exceptional. 

We were on a full-board package but on any night we 

wished, we had the option to upgrade dinner to a fine 

dining experience. The somewhat hefty price tag of 

£30 per head was irrelevant to our decision-making 

because we quickly decided we didn’t need it. 

Everything within the package was table service 

and the choice at every meal was excellent. As in all 

areas, drinks were extra and although we could have 

included them in the package for an extra cost, we 

decided to drink, be merry and settle up at the end. 

The food menu offered two elements. Permanent 

options were available throughout the voyage but 

these were supported by an array of temporary 

choices that changed as we sailed through the 

regions. On the all-round voyage this menu changes 

four times. For us it was twice. Havila serve meals 

in a manner they say reduces waste. Breakfast and 

lunch are presented in a ‘tapas’ style. 

The same applies at dinner, although the portions 

are naturally a little larger and, as you can imagine, 

the seafood is as fresh as you can get. As a seafood 

lover, I was in heaven. Halibut, salt cod, mussels, 

prawns, all of them wonderfully prepared. The 

scallops were so good, I think I had them every 

night! 

For non-seafood lovers, the choice remains excellent, 

with steak, and local cuts of reindeer and lamb 

always available. On a ship, you’re clearly not able 

to leave and find another venue further down the 

street but on this cruise you simply didn’t need an 

alternative option. The food was undoubtedly a 

highlight amongst so many highlights. 

Incidentals (the bar bill in our case) are settled on 

departure and our disembarkation on arrival in 

Bergen was undertaken with an unusually heavy 

heart. In the past, the check out from a beachside 

hotel has always been the dull, yet singular moment 

which signifies a holiday is over. Departing our 

first-ever cruise felt like leaving a whole community 

behind. 

THE SPECTACULAR GEIRANGERFJORD 

The atmosphere aboard a ship is most definitely 

different and as passengers, it felt that we became 

villagers and neighbours. As a first experience of 

cruising, we liked the principle and the lifestyle. The 

scenery simply took it to another level.

TAKES A LOOK AT WHAT’S GOOD TO COOK, EAT AND FORAGE FOR RIGHT NOW 

It’s been an unpredictable summer, which 

has meant home-grown produce has been 

somewhat confused. Early rain left some 

crops a bit of a washout, while late bursts 

of sunshine have seen some harvests pushed 

further into the autumnal months. 

Happily, it’s not all been doom and gloom 

on the produce front, with some crops which 

were a struggle last year making a resurgence. 

“Peas and broad beans have been a bit easier 

to get hold of this year; last year we really 

struggled but thankfully things have been 

better this year,” says Lichfield chef Jack 

Dubberley. 

And to celebrate the humble English pea, 

the new season brings a new dish which will 

feature across Dubberley Delicious menus 

throughout September. 

“We’ve got English peas, just podded and kept raw,

because that’s where all the flavour is, dressed in a 

little bit of yuzu juice and rapeseed oil, and a little bit 

of sea salt, a pea veloute, a good chunk of burrata, 

homemade sourdough croutons and dressed with 

viola flowers and nasturtiums from our garden. 

“It’s all about using ingredients which are as local 

as possible, including home-grown ingredients. We 

managed to grow some peas ourselves at home; they 

were easy to do and took really well.” 

While the season for growing many crops is coming 

to an end, there are still jewels to be had, thanks to 

Mother Nature. 

“There’ll be a lot of elderberries around at this time 

of year; in Lichfield they grow in abundance around 

Stowe Pool,” says Jack. 

“They’ll be ripening around now; you’ll see them 

green and then they ripen to a lovely dark purple. You 

can use them green, but it’s an acquired taste and a 

bit of effort because they need to be salted and broken 

down quite a bit, so best to wait and pick them when 

they go purple. 

Pick the clusters by breaking off the large stem – they 

should snap off of the branches easily. The easiest way 

to remove the berries from the stalks is to strip them 

using the prongs of a fork. If you can’t use the berries

straight away, they can be frozen and used later. 

“The problem with elderberries is, similarly to garlic 

capers, that if you don’t catch them at the right time 

they’ll be eaten by the birds or go rotten on the tree,” 

says Jack. “Wind also affects them, so if we have 

strong winds they’ll get blown off the trees. 

“And again, the weather plays a huge role in when 

they’re ready - elderberries can ripen anywhere 

between July and October depending on where you 

are in the UK. But they’re a good one to look out for 

when you’re out and about.” 

Elderberries also have antiviral properties and are 

great for making cordials or syrups to use throughout 

autumn and winter for a health boost - just remember, 

the berries need to be cooked before eating. 

Blackberries are another one which are great to forage 

for now - and Jack has a favourite recipe which makes 

use of any fruits people are foraging right now. 

“Fruit schnapps is a great way to use up all of the fruit 

you’re growing and foraging now,” says Jack. “It’s so 

simple to do, it just takes a little patience to wait for 

the finished product. Over the summer we made some 

incredible rhubarb schnapps - if you use a fruit with 

colour you’re going to get a beautiful, vibrant coloured 

drink. 

“Homemade schnapps could make a great little 

Christmas gift too - if you start now, you should have 

a batch or two ready in time for the festive season!”

Wash your fruit and slice or roughly 

chop, mix with the sugar and leave for 

an hour to infuse. Transfer to an airtight 

container or Kilner jar and cover your 

fruit and sugar mixture with the vodka of 

your choice - remember to use a plain 

vodka, not flavoured - then seal and 

leave to mature in a cool, dark lace for 

a minimum of three weeks, but ideally 

two months for best results. Taste your 

schnapps once a week to see how the 

flavour is developing. Once you’re happy 

with the flavour, strain your schnapps, 

bottle and keep chilled, ready to serve.

This month we focus on the importance of using 

Cash Flow Modelling. 

WHAT IS IT? 

Cash Flow Modelling is a way of using computer 

simulations factoring in ‘where you are’ and what 

your current trajectory is to project where you might 

be in the future, targeting opportunities to achieve 

your aims, whether that is covering education fees, 

providing for children’s/grandchildren’s’ life events or 

retirement, by way of examples. 

It also allows you to use ‘what if ’ scenarios, which 

helps to see what changes in planning may mean in 

terms of the potential end result. Often this will be in 

a simple format such as a graph. 

WHY WOULD YOU USE THIS? 

Like setting off on a journey and programming your 

sat nav, it simply reassures you that you will get to 

your destination, albeit with the external influential 

factors that you cannot control - traffic, the car letting 

you down etc. 

The same is true for financial planning, you can map 

it out BUT external influences can affect the ability 

to arrive at your destination. 

Consider a sailing analogy here; winds and currents 

replaced by investment/economic and interest rate 

conditions to name a few. 

The value in having a plan and regularly reappraising 

where you are ‘on the map’ allows you to 

re-evaluate how to ensure you land at your desired 

destination rather than just drift off course. 

ASSUMPTIONS 

Naturally, this is NOT an exact science as so 

many things can change over time - interest rates, 

investment returns, economic climate, personal 

circumstances etc. 

It is essential to have initial assumptions to provide 

a base starting point on which future reviews can be 

appraised. 

WHAT DOES CASH FLOW MODELLING 

ACTUALLY TELL YOU? 

Arguably nothing! Obviously we don’t know what 

could change between now and your destination, 

however, it provides certain clarity that you are on a 

determined path and then you can, where necessary, 

adjust your planning to achieve your goals. 

The ONE thing it does highlight are the numerous 

RISKS your planning goals face. Shortfalls, if you 

aren’t saving enough, mitigating tax where possible 

and, most importantly, the potential effects of a 

financial contributor suffering illness or, sadly, death. 

Finally, the ability to protect your estate (what you 

have worked hard to build up) from numerous risks 

including costs of care or inheritance tax are huge 

benefits of cash flow modelling.

Queen Ethelburga’s Collegiate’s (QE) senior schools 

are celebrating a wave of excellent A Level, BTEC and 

GCSE results. Across the two schools, the combined 

percentage of A*/A grades at A Level are 78%, with 

the percentage of BTEC Distinction* and Distinction 

grades in QE Faculty reaching 73%. In addition, the 

Year 11 students across QE achieved 62% grades 7-9 in
