Race day<br />

success<br />

The streets of Jozi were awash with a<br />

sea of peach as women from all corners<br />

of the city and surrounding areas came<br />

together to celebrate their strength,<br />

resilience, and determination. SPAR<br />

Women’s Challenge Jozi delivered a<br />

sold-out event with 12 000 runners.<br />

Glenrose Xaba took the top spot in the<br />

race, crossing the finish line in a time of<br />

32:48. Xaba’s victory also solidified her<br />

position as the winner of the Grand Prix<br />

Series, making her the first South African<br />

to claim this title since the inclusion of<br />

international athletes. Local charities<br />

Headstart Kids, Smile Foundation and<br />

Reach for Recovery each benefited<br />

from this event receiving a generous<br />

donation of R50 000. Keeping the<br />

crowd energised was MCs Elana Afrika-<br />

Bredenkamp and Arnold Geerdts as<br />

Pinking up your plate<br />

It’s not just his flair for flavours that makes every feast dished up by<br />

Dylan Millar – aka The Pink Chef – so memorable. It’s the way they’re<br />

accompanied by a smile, a little sparkle, and plenty of pizazz!<br />

That sparkle is quite literal. When<br />

you order breakfast or lunch at<br />

Dylan’s recently established Pink Chef<br />

Emporium – perhaps while you are<br />

having your hair and nails done at the<br />

on-site salon – it comes served with a<br />

blazing sparkler. “I just think that every<br />

moment should be special,” Dylan says.<br />

This belief was passed on from his<br />

beloved grandmother, Sheila – along<br />

with a keen eye for detail and his love<br />

of cooking. Many of Dylan’s happiest<br />

moments took place in Sheila’s kitchen,<br />

such as the very first time he got<br />

behind a counter. “I was five years old,<br />

and I asked her if I could help with<br />

peeling potatoes. I peeled off a lot<br />

of skin, but that didn’t stop me from<br />

loving working with food!”<br />

sizzling, and it’s one of<br />

Dylan’s greatest joys to<br />

know that she saw him<br />

happily ensconced in<br />

a role he was clearly<br />

born for - a business<br />

owner, doing what he loves. Even<br />

now, she is remembered daily. Dylan’s<br />

range of frozen meals is based on her<br />

recipes, and it’s this, together with their<br />

generous portions, that makes them a<br />

real cooked-from-the-heart feast.<br />

But back to that five-year-old chef and<br />

his budding talent. Having become<br />

Sheila’s sous chef, it was only natural<br />

that Dylan studied hospitality as a<br />

school subject. This set him up for the<br />

magnificent opportunity that came his<br />

way following matric ... Chef Michael<br />

Holenstein – who at the time was<br />

cooking up a storm at his hotel, De<br />

Hoek Country Hotel in Magaliesburg,<br />

picked the top three candidates<br />

from a field of 50 to train with him. It<br />

was an intensive three-year course,<br />

and Dylan learned everything about<br />

hospitality, “from top to bottom”.<br />

It was a fantastic experience, but<br />

Dylan knew that it was cooking,<br />

rather than the ‘always-on’ hospitality<br />

industry, that had his heart. And so,<br />

when his event organiser mother<br />

was looking for a caterer to help her<br />

wow the crowds at a dinner for a high<br />

profile corporate, he asked if he could<br />

step in. “She asked if I was sure – it was<br />

a plated dinner for 120 people, and<br />

I’d never done anything like that. But<br />

when I said yes, she told me to go for<br />

it,” Dylan reminisces.<br />

That’s how The Pink Chef (so named<br />

because pink, “passionate, bold, fun<br />

and creative”, is Dylan’s favourite colour)<br />

exploded onto the culinary scene.<br />

Dylan’s first guests were so impressed<br />

‘For me, cooking is an act of love. I’m not just<br />

dishing up a plate of food – I want every aspect<br />

of the meal to be a complete experience’<br />

with his fare that he was invited to cater<br />

golf days and other corporate events.<br />

“My biggest challenge came during the<br />

Covid pandemic when FNB asked me<br />

to prepare 800 meals a day. Luckily, I’m<br />

always up for a challenge!” he smiles.<br />

The decision to open up the Pink<br />

Chef Emporium came about because<br />

Dylan wanted people to be able to<br />

experience his cooking every day. But<br />

this oasis of taste is more than a shop<br />

for his frozen foods and exquisite baked<br />

goods. One of the highlights on offer<br />

is a special date night package, where<br />

Dylan prepares and personally serves a<br />

six-course meal, all enjoyed under the<br />

stars. Guests can stay on in the beautiful<br />

garden accommodation after dinner.<br />

It’s all about creating a sense of<br />

occasion, Dylan explains. “For me,<br />

cooking is an act of love. I’m not<br />

just dishing up a plate of food – I<br />

want every aspect of the meal to<br />

be a complete experience,” he says,<br />

adding that The Pink Chef Emporium<br />

also welcomes guests for functions<br />

in the form of picnics, high teas and<br />

spit braais.<br />

Dylan is constantly experimenting<br />

with ingredients to make sure that<br />

the experience is an unforgettable<br />

one. While butter is his weakness, he<br />

loves playing with spices like cumin,<br />

cardamom, garam masala and paprika<br />

to create complex and intriguing<br />

flavours. Jamie Oliver remains a key<br />

inspiration, along with Gordon Ramsay<br />

(“although I would never treat my staff<br />

like that, and even though I was glued<br />

to cooking shows instead of cartoons<br />

on the weekends, I was<br />

never allowed to watch<br />

his because of all the<br />

swearing!”). Greek cuisine is<br />

a favourite (“you can never<br />

go wrong”), as is Mexican,<br />

and because he chooses<br />

salty over sweet every time,<br />

he can never say no to a plate of oldfashioned<br />

chips.<br />

All of these influences come together<br />

in food that has layers and layers of<br />

flavour. Dylan is known for his bold<br />

reinterpretation of classics, from<br />

deconstructed lasagna accompanied<br />

by dollops of crème fraiche to his own<br />

take on Grandma Sheila’s comfort-in-abowl<br />

mac ‘n cheese.<br />

With the opening of The Pink Chef<br />

Emporium ensuring that one of his<br />

dreams has already come true, he’s now<br />

looking forward to next year, when he’s<br />

planning to release his own cookbook.<br />

“Expect granny’s traditional recipes<br />

prepared the old-school way. I love the<br />

thought of these dishes being passed<br />

on from one generation to the other,”<br />

Make a little magic<br />

Dylan loves turning a meal into a moment to remember<br />

– and the best way to make that happen, he says, is by<br />

creating a ritual. For example, come Christmas, he and his<br />

family take part in their annual Candle Ceremony, where<br />

they stand in a circle with a lit candle in the middle. Every<br />

person holds their own tealight and says their own blessing<br />

– one wish for themselves, and one for someone they love.<br />

with Juicy Delicious to create a catalogue of<br />

South African-inspired dishes. Whether you<br />

are hosting beach picnics or swish parties,<br />

braaiing in your backyard or cooking up a<br />

three-course feast, stone fruit add a hit of<br />

freshness that will wow your guests.<br />

Tips for making the most of the season<br />

Masego and Emma’s tips to make the most<br />

of the South African stone fruit season<br />

• For easy peeling of poached nectarines,<br />

submerge cooked nectarines into an ice<br />

bath for two to four minutes.<br />

• Grill halved peaches or nectarines until<br />

caramelised, then serve them as a side dish<br />

for braaied meats. They are just as fantastic<br />

as an easy dessert, drizzled with honey,<br />

sprinkled with cinnamon and serve with a<br />

dollop of vanilla ice cream.<br />

• Make a glaze using pureed peaches or<br />

nectarines, adding a touch of brown sugar,<br />

balsamic vinegar, and mustard. Brush it over<br />

your roast meats during the final stages<br />

of cooking for a sweet, tangy finish that<br />

balances savoury flavours.<br />

• Create a festive stone fruit salsa by<br />

combining diced plums, peaches, or<br />

nectarines with chopped red onion, fresh<br />

coriander, and a squeeze of lime. This fresh<br />

and zesty salsa is perfect as a topping for<br />

grilled chicken, braaied fish, or even over<br />

nachos for a summer twist.<br />

• If you want a tarter flavour from your<br />

stone fruit, choose slightly under ripe<br />

ones. They also hold their shape well for a<br />

stunning presentation.<br />

• Add thinly sliced nectarines or plums<br />

into a summer salad with mixed greens,<br />

toasted nuts, and crumbled blue cheese.<br />

The combination of sweet, juicy fruit and<br />

the salty richness of the cheese creates a<br />

beautiful balance of flavours.<br />

Curry marinated grilled peaches and blueberry salad<br />

Masego’s Curry marinated grilled peaches and blueberry salad is an artful<br />

blend of spices and citrus with the juiciness of peaches and blueberries<br />

topped with the smooth saltiness of Danish feta cheese. Serves 4 to 6<br />

You’ll need: 4 peaches, cored and cut in eighths, 60ml olive oil, 1 tsp curry<br />

powder, ½ tsp orange zest, 125g blueberries, 80g wild rocket, 100g pecan<br />

nuts, lightly roasted, 100g Danish feta<br />

Honey dressing: 60ml honey, 60ml olive oil, 1 Tbsp balsamic vinegar,<br />

1 lemon, zest and juice, 10g Italian parsley, finely chopped, salt and<br />

pepper to taste<br />

To make: In a mixing bowl, combine prepared peaches with curry powder,<br />

olive oil, orange zest and a pinch of salt. Combine well and refrigerate for<br />

20 minutes. Heat a griddle pan over high heat place, peaches on the pan<br />

and grill on each side until you have charred marks and set aside to cool.<br />

Reserve the curry marinade for the dressing.<br />

For the honey dressing, combine the reserved curry marinade with honey,<br />

olive oil, balsamic vinegar, lemon zest and juice, parsley and salt and<br />

pepper to taste and set aside.<br />

To assemble, on a salad platter plate, lay rocket, grilled peaches,<br />

blueberries, pecan nuts and crumble feta cheese. Drizzle with dressing<br />

and gently toss salad just before serving.<br />

Slack-packing through the<br />

Four days of walking and exploring the beauty of the De Hoop Nature Reserve ...<br />

enjoying the wealth of marine, bird and animal life and discovering rare plants.<br />

And at the end of each day’s hike, tucking into gourmet meals and staying over in<br />

a luxurious, comfortable villa. Ramblers’ dreams are made of this.<br />

Slack-packing adventures are made for<br />

those of us who love to walk through<br />

magnificent reserves, connect with<br />

nature, but aren’t that keen on the<br />

whole camping-in-the-middle-ofnowhere<br />

thing! After a strenuous day,<br />

the last thing we want is to fiddle<br />

around with tent poles and try to rustle<br />

up something on an open fire.<br />

launched The De Hoop Trail: Vlei to<br />

Whales ... a fully catered and guided<br />

four day, three night experience<br />

where you’ll cover about 38km<br />

through the pristine De Hoop<br />

Nature and Marine Reserve. One of<br />

the largest natural areas managed<br />

by CapeNature, it’s just a wonderful<br />

four days of sea, deserted beaches,<br />

exploring the Ramsar-listed vlei, wide<br />

open spaces, coastal fynbos, and<br />

diverse animal and bird life, including<br />

the endangered Cape Vulture and the<br />

very best whale watching.<br />

Guests stay in the De Hoop Collection’s<br />

De Mond Villa, a newly restored and<br />

refurbished Villa right on the edge of<br />

the Ramsar-listed vlei. An exclusive<br />

blend of authenticity, luxury and<br />

comfort, the five en-suite bedroomed<br />

De Mond Villa offers awesome interior<br />

decor, Wi-Fi, a private outside area<br />

with barbeque and swimming pool<br />

and the most incredible views. It is<br />

completely off the grid (thanks to a<br />

combination of solar and gas facilities)<br />

and being right on the edge of the vlei<br />

spectacular birdlife awaits you, plus the<br />

possible sightings of wild bush pigs,<br />

otters, rock dassies, herds of Eland and<br />

even leopard tracks. Should the villa<br />

already be booked, The Collection’s<br />

historic Melkkamer Homestead on<br />

the opposite side of the vlei is offered<br />

as an alternative. And you won’t go<br />

hungry ... guests tuck into breakfasts or<br />

brunches, lunches and picnics, snacks<br />

and dinners.<br />

De Hoop is an easy three hour drive<br />

from Cape Town or George.<br />

A minimum of four guests are<br />

required - and you should be<br />

reasonably fit to enjoy the experience.<br />

Not suitable for those under 12. The<br />

rate of R14200 a person (valid until<br />

Sept 2025) includes the three night/<br />

four day experience, with a guide, all<br />

meals and snacks, local house wines,<br />

spirits, beers and soft drinks, and road<br />

transfers to and from de Mond Villa<br />
