Pinking up your plate
It’s not just his flair for flavours that makes every feast dished up by
Dylan Millar – aka The Pink Chef – so memorable. It’s the way they’re
accompanied by a smile, a little sparkle, and plenty of pizazz!
Text: LISA WITEPSKI. • Photos: MEGAN BRETT
That sparkle is quite literal. When
you order breakfast or lunch at
Dylan’s recently established Pink Chef
Emporium – perhaps while you are
having your hair and nails done at the
on-site salon – it comes served with a
blazing sparkler. “I just think that every
moment should be special,” Dylan says.
This belief was passed on from his
beloved grandmother, Sheila – along
with a keen eye for detail and his love
of cooking. Many of Dylan’s happiest
moments took place in Sheila’s kitchen,
such as the very first time he got
behind a counter. “I was five years old,
and I asked her if I could help with
peeling potatoes. I peeled off a lot
of skin, but that didn’t stop me from
loving working with food!”
Sheila passed away
just one year after
The Pink Chef started
sizzling, and it’s one of
Dylan’s greatest joys to
know that she saw him
happily ensconced in
a role he was clearly
born for - a business
owner, doing what he loves. Even
now, she is remembered daily. Dylan’s
range of frozen meals is based on her
recipes, and it’s this, together with their
generous portions, that makes them a
real cooked-from-the-heart feast.
But back to that five-year-old chef and
his budding talent. Having become
Sheila’s sous chef, it was only natural
that Dylan studied hospitality as a
school subject. This set him up for the
magnificent opportunity that came his
way following matric ... Chef Michael
Holenstein – who at the time was
cooking up a storm at his hotel, De
Hoek Country Hotel in Magaliesburg,
picked the top three candidates
from a field of 50 to train with him. It
was an intensive three-year course,
and Dylan learned everything about
hospitality, “from top to bottom”.
It was a fantastic experience, but
Dylan knew that it was cooking,
rather than the ‘always-on’ hospitality
industry, that had his heart. And so,
when his event organiser mother
was looking for a caterer to help her
wow the crowds at a dinner for a high
profile corporate, he asked if he could
step in. “She asked if I was sure – it was
a plated dinner for 120 people, and
I’d never done anything like that. But
when I said yes, she told me to go for
it,” Dylan reminisces.
That’s how The Pink Chef (so named
because pink, “passionate, bold, fun
and creative”, is Dylan’s favourite colour)
exploded onto the culinary scene.
Dylan’s first guests were so impressed
‘For me, cooking is an act of love. I’m not just
dishing up a plate of food – I want every aspect
of the meal to be a complete experience’
with his fare that he was invited to cater
golf days and other corporate events.
“My biggest challenge came during the
Covid pandemic when FNB asked me
to prepare 800 meals a day. Luckily, I’m
always up for a challenge!” he smiles.
The decision to open up the Pink
Chef Emporium came about because
Dylan wanted people to be able to
experience his cooking every day. But
this oasis of taste is more than a shop
for his frozen foods and exquisite baked
goods. One of the highlights on offer
is a special date night package, where
Dylan prepares and personally serves a
six-course meal, all enjoyed under the
stars. Guests can stay on in the beautiful
garden accommodation after dinner.
It’s all about creating a sense of
occasion, Dylan explains. “For me,
cooking is an act of love. I’m not
just dishing up a plate of food – I
want every aspect of the meal to
be a complete experience,” he says,
adding that The Pink Chef Emporium
also welcomes guests for functions
in the form of picnics, high teas and
spit braais.
Dylan is constantly experimenting
with ingredients to make sure that
the experience is an unforgettable
one. While butter is his weakness, he
loves playing with spices like cumin,
cardamom, garam masala and paprika
to create complex and intriguing
flavours. Jamie Oliver remains a key
inspiration, along with Gordon Ramsay
(“although I would never treat my staff
like that, and even though I was glued
to cooking shows instead of cartoons
on the weekends, I was
never allowed to watch
his because of all the
swearing!”). Greek cuisine is
a favourite (“you can never
go wrong”), as is Mexican,
and because he chooses
salty over sweet every time,
he can never say no to a plate of oldfashioned
chips.
All of these influences come together
in food that has layers and layers of
flavour. Dylan is known for his bold
reinterpretation of classics, from
deconstructed lasagna accompanied
by dollops of crème fraiche to his own
take on Grandma Sheila’s comfort-in-abowl
mac ‘n cheese.
With the opening of The Pink Chef
Emporium ensuring that one of his
dreams has already come true, he’s now
looking forward to next year, when he’s
planning to release his own cookbook.
“Expect granny’s traditional recipes
prepared the old-school way. I love the
thought of these dishes being passed
on from one generation to the other,”
Dylan says.
Make a little magic
Dylan loves turning a meal into a moment to remember
– and the best way to make that happen, he says, is by
creating a ritual. For example, come Christmas, he and his
family take part in their annual Candle Ceremony, where
they stand in a circle with a lit candle in the middle. Every
person holds their own tealight and says their own blessing
– one wish for themselves, and one for someone they love.
Dermatologists say one
of the top five most
common skin problems in
South Africa is dark marks
particularly with people
with darker skin tones.
The Nivea Luminous 630
range (named after testing
630 was the most effective
at reducing dark marks,
and preventing their
skin inflammation due to
pimples or injury, includes
a day cream with a 50+
BEAUTY BASICS
Excellent, solid products to form the foundation of your skin wardrobe
Great basics.
We’re massive fans
of this Aveeno
emollient body
and itchy skin (good for those with
eczema-prone skin). Look out for the
range for babes, too. Well priced, you’ll
find at Clicks and Dis-Chem.
Those of you with dry, sensitive, and eczema-prone skin probably
already use E45 ... so you’ll be delighted to know there is an
new line-up of products just for face care. Think intense care for
sensitive skin. Skin repair and recovery. Skin that feels soothed,
What would Summer be without the juicy lushness of peaches, plums and nectarines?
Compiled by: KyM ArGo
For the Summer of 2024, fab recipe
developers and food stylists Emma Nkunzana
and Masego Mbonyana have teamed up
with Juicy Delicious to create a catalogue of
South African-inspired dishes. Whether you
are hosting beach picnics or swish parties,
braaiing in your backyard or cooking up a
three-course feast, stone fruit add a hit of
freshness that will wow your guests.
Tips for making the most of the season
Masego and Emma’s tips to make the most
of the South African stone fruit season
• For easy peeling of poached nectarines,
submerge cooked nectarines into an ice
bath for two to four minutes.
• Grill halved peaches or nectarines until
caramelised, then serve them as a side dish
for braaied meats. They are just as fantastic
as an easy dessert, drizzled with honey,
sprinkled with cinnamon and serve with a
dollop of vanilla ice cream.
• Make a glaze using pureed peaches or
nectarines, adding a touch of brown sugar,
balsamic vinegar, and mustard. Brush it over
your roast meats during the final stages
of cooking for a sweet, tangy finish that
balances savoury flavours.
• Create a festive stone fruit salsa by
combining diced plums, peaches, or
nectarines with chopped red onion, fresh
coriander, and a squeeze of lime. This fresh
and zesty salsa is perfect as a topping for
grilled chicken, braaied fish, or even over
nachos for a summer twist.
• If you want a tarter flavour from your
stone fruit, choose slightly under ripe
ones. They also hold their shape well for a
stunning presentation.
• Add thinly sliced nectarines or plums
into a summer salad with mixed greens,
toasted nuts, and crumbled blue cheese.
The combination of sweet, juicy fruit and
the salty richness of the cheese creates a
beautiful balance of flavours.
Curry marinated grilled peaches and blueberry salad
Masego’s Curry marinated grilled peaches and blueberry salad is an artful
blend of spices and citrus with the juiciness of peaches and blueberries
topped with the smooth saltiness of Danish feta cheese. Serves 4 to 6
You’ll need: 4 peaches, cored and cut in eighths, 60ml olive oil, 1 tsp curry
powder, ½ tsp orange zest, 125g blueberries, 80g wild rocket, 100g pecan
nuts, lightly roasted, 100g Danish feta
Honey dressing: 60ml honey, 60ml olive oil, 1 Tbsp balsamic vinegar,
1 lemon, zest and juice, 10g Italian parsley, finely chopped, salt and
pepper to taste
To make: In a mixing bowl, combine prepared peaches with curry powder,
olive oil, orange zest and a pinch of salt. Combine well and refrigerate for
20 minutes. Heat a griddle pan over high heat place, peaches on the pan
and grill on each side until you have charred marks and set aside to cool.
Reserve the curry marinade for the dressing.
For the honey dressing, combine the reserved curry marinade with honey,
olive oil, balsamic vinegar, lemon zest and juice, parsley and salt and
pepper to taste and set aside.
To assemble, on a salad platter plate, lay rocket, grilled peaches,
blueberries, pecan nuts and crumble feta cheese. Drizzle with dressing
and gently toss salad just before serving.
Four days of walking and exploring the beauty of the De Hoop Nature Reserve ...
enjoying the wealth of marine, bird and animal life and discovering rare plants.
And at the end of each day’s hike, tucking into gourmet meals and staying over in
a luxurious, comfortable villa. Ramblers’ dreams are made of this.
Slack-packing adventures are made for
those of us who love to walk through
magnificent reserves, connect with
nature, but aren’t that keen on the
whole camping-in-the-middle-ofnowhere
thing! After a strenuous day,
the last thing we want is to fiddle
around with tent poles and try to rustle
up something on an open fire.
So we’re mad about the newly
launched The De Hoop Trail: Vlei to
Whales ... a fully catered and guided
four day, three night experience
where you’ll cover about 38km
through the pristine De Hoop
Nature and Marine Reserve. One of
the largest natural areas managed
by CapeNature, it’s just a wonderful
four days of sea, deserted beaches,
exploring the Ramsar-listed vlei, wide
open spaces, coastal fynbos, and
diverse animal and bird life, including
the endangered Cape Vulture and the
very best whale watching.
Guests stay in the De Hoop Collection’s
De Mond Villa, a newly restored and
refurbished Villa right on the edge of
the Ramsar-listed vlei. An exclusive
blend of authenticity, luxury and
comfort, the five en-suite bedroomed
De Mond Villa offers awesome interior
decor, Wi-Fi, a private outside area
with barbeque and swimming pool
and the most incredible views. It is
completely off the grid (thanks to a
combination of solar and gas facilities)
and being right on the edge of the vlei
spectacular birdlife awaits you, plus the
possible sightings of wild bush pigs,
otters, rock dassies, herds of Eland and
even leopard tracks. Should the villa
already be booked, The Collection’s
historic Melkkamer Homestead on
the opposite side of the vlei is offered
as an alternative. And you won’t go
hungry ... guests tuck into breakfasts or
brunches, lunches and picnics, snacks
and dinners.
De Hoop is an easy three hour drive
from Cape Town or George.
A minimum of four guests are
required - and you should be
reasonably fit to enjoy the experience.
Not suitable for those under 12. The
rate of R14200 a person (valid until
Sept 2025) includes the three night/
four day experience, with a guide, all
meals and snacks, local house wines,
spirits, beers and soft drinks, and road
transfers to and from de Mond Villa
and within de Hoop.
