WITH WINE 

Wine lovers often joke that they enjoy 

cooking with wine—sometimes so much 

that the wine ends up in both the dish 

and the cook! Many passionate home 

chefs I know, who turn their kitchens 

into culinary theatres, stock up with 

two bottles for a cooking day—one 

for the dish and one for the chef’s own 

enjoyment. The second bottle, of course, 

is for sipping alongside the finished meal. 

While a glass of good wine with food 

seems totally normal to us, it’s actually 

surprising how often wine is used in 

cooking, both at home and in restaurants. 

Why is alcohol used in cooking? 

Alcohol in food serves three main roles: marinating, flavoring, 

or as a cooking liquid. Sometimes, multiple methods come 

into play, but flavoring happens almost always—alcohol 

packs quite a punch! Interestingly, alcohol itself doesn’t give 

flavor, but it helps unlock flavors in food, dissolving fats and 

enhancing the unique taste of each ingredient in ways that 

broth or fat (like butter and oil) just can’t match. 

Wine is the go-to choice for cooking, a tradition that’s rooted 

in countries with a strong food and wine culture. Back in the 

day, water wasn’t always sterile, so people often mixed it 

with wine (or beer) to avoid bacteria. Plus, those drinks were 

tastier, more nutritious, and had antiseptic properties. It’s no 

surprise they started making their way into food prep too! 

Wine’s acidity is perfect for marinating meat, softening the 

fibers, adding aroma, and boosting flavor. Red wine’s berry 

notes or white wine’s fruitiness bring much more complexity 

than just water or broth. Red wine is especially great for 

marinating game or lamb, helping to mellow out that strong, 

wild flavor. 

Cider and beer are traditional cooking ingredients in regions 

where they’re more commonly produced and consumed. 

From France’s Normandy comes the famous cider-braised 

rabbit, while in beer-loving Germany, sauerkraut often gets 

a dose of light or dark beer, and bratwurst is boiled in beer 

broth. My mom adds dark beer to her Christmas sauerkraut, 

giving it extra aroma and complexity. 

Which dishes use wine? 

Valencia, Spain—a region known for its abundant wine 

production—is home to paella. Paella, whether made with 

chicken, rabbit, or the more familiar version with chorizo, 

shrimp, and mussels, always includes a splash of local white 

wine, which the rice simmers in with the other ingredients. 

When it comes to cooking rice in wine, no one does it better 

than the Italians with their risotto, which is even more famous 

than paella. Risotto hails from northern Italy, where rice is 

grown in abundance. The classic recipe calls for sautéing 

onions and garlic, simmering the rice in chicken broth and 

white wine, and finishing it off with a generous sprinkle of 

Parmesan.

The Mediterranean coast is ideal for a laid-back holiday, 

complete with long lunches and refreshing glasses of wine in 

street cafés. My favorite lunch or dinner there is fresh mussels in 

white wine sauce. Mussels are a simple (and naturally genius) 

dish: sauté chili, garlic, and onions in olive oil, then add a splash 

of dry, acidic white wine. Let it simmer briefly before adding 

the mussels to cook in this flavorful broth. Serve with a glass 

of Chablis, Picpoul de Pinet, Sancerre, or a Provence rosé for a 

divine taste experience! 

France, famed for both its wine and cuisine, is where the 

average French person drinks almost a full bottle of wine with 

their meals each day—and just as much goes into the food! It’s 

no wonder France is home to countless wine-infused recipes. 

French onion soup gets its elegant touch from a good splash 

of dry white wine, balancing out the soup’s richness. The worldfamous 

Coq au Vin (literally “chicken in wine”) is a rich, hearty 

stew starring chicken and wine, with generous amounts of 

mushrooms, butter, bacon, onions, garlic, and even a hint of 

cognac. Traditionally, red Burgundy wine is used, but there’s 

now a white wine version—Coq au Vin Blanc—with chicken in 

white wine and a creamy mushroom sauce. Beef Bourguignon 

is the beefy counterpart to this dish, with red Burgundy wine 

adding richness and depth. 

The French love to throw multiple types of alcohol into sauces 

too! Take the somewhat cliché but still delicious Duck l’Orange, 

a dish that was wildly popular in the ‘80s. It’s a whole roast 

duck in an orange-flavored sauce, spiked with white wine and 

French orange liqueurs like Cointreau or Grand Marnier. 

Dessert wines and fortified wines (like port, madeira, and 

marsala) are fantastic flavor boosters in sauces. Just a little 

bit can make a dish taste festive and perfectly balanced. For 

example, the well-known Chicken Marsala from southern Italy 

is cooked in a sauce made from rich marsala wine. 

One of the most luxurious appetizers in the world, Foie 

Gras (duck or goose liver), absolutely must include a dash 

of top-notch cognac, Armagnac, or sweet dessert wine like 

Sauternes. 

When it comes to sauce-making, choose wine based on the 

sauce’s character. Herb-heavy sauces pair well with aromatic, 

fresh white wines with herbal notes (like Sauvignon Blanc, 

Pinot Grigio, or Riesling). For tomato-based pasta sauces, go 

for an acidic red wine like Chianti. For hearty red wine sauces, 

remember that tannic reds (like Cabernet Sauvignon or 

Syrah) require plenty of fat or protein in the sauce to balance 

them out, or they’ll make the sauce taste bitter. 

What wines are best for cooking? 

The golden rule is never to use a wine in cooking that you 

wouldn’t drink. If the wine is spoiled (corked or left open too 

long), it will only make the dish worse, as heat intensifies bad 

flavors. That said, it doesn’t have to be a fancy wine. A simple, 

affordable bottle works just fine—especially if you need a lot 

of it. If you only need a glassful, you can easily “borrow” from 

the bottle you planned to drink with dinner, saving you from 

opening an extra bottle. 

In general, opt for more aromatic, fruity white wines and 

berry-flavored, low-tannin reds. If you don’t cook the wine for 

long, tannins can become overpowering. Higher fat or protein 

content in the dish can help soften the tannins, but it’s usually 

best to avoid very tannic reds. Some good low-tannin choices 

include Valpolicella, Merlot, Zinfandel, or New World Pinot 

Noir. 

Does alcohol evaporate during cooking? 

There’s a common belief that if you cook food long enough, 

all the alcohol evaporates. While much of it does, experiments 

have shown that a tiny amount still remains. So, keep that in 

mind if you’re serving the dish to children or guests who, for 

religious reasons, avoid alcohol.

and the maltster Viking Malt 

have assessed the barley as

beer made from it can thus be

The tradition of bringing out the beer has been ongoing since 1990. 

This dark pilsner has, over the years, become a clear sign that Christmas is upon us. The annual 

launch in Denmark, known as ‘J-day’, takes place the first Friday in November and is a day of 

celebration across Denmark. Carlsberg employees drive around in truck to visit bars and cafés 

while singing the traditional Tuborg Christmas Brew song and handing out free beer to the guests 

to mark the start of the festive season. 

The beer itself is a bottom-fermented wiener beer brewed on lager, münchener and caramel 

malt, and added English liquorice. The beer is dark-golden with a fresh aroma of caramel, cereal, 

liquorice and blackcurrant. 

Excellent with traditional Christmas recipes. You can also enjoy it with smoked fish, grilled/fried 

herring, smoked ham with kale, pork roast and duck.
