SLIVER OF BEAUTY<br />
With paradisiacal beaches, a new breed of chic accommodations,<br />
and a liberating sense of solitude, Eleuthera, in the Out Islands,<br />
Bahamas, offers style and space in spades. By Alexander Lobrano<br />
ASIDE FROM ITS almost<br />
shocking beauty, the best<br />
thing about Eleuthera,<br />
the slender, 110-mile-long<br />
Bahamian Out Island in easy<br />
reach of Nassau, or Miami,<br />
is its lack of popularity. This<br />
means that it’s the perfect<br />
place to go wild, since the<br />
island, population 11,000,<br />
doesn’t even have a single<br />
traffic light but does offer<br />
mile after mile of empty white<br />
sand beaches bordered by<br />
turquoise ocean waters.<br />
Rather miraculously for a<br />
country that’s such a major<br />
tourist destination as the<br />
Bahamas, Eleuthera remains<br />
pretty much the way it was<br />
when it was first settled in<br />
1648 by a group of English<br />
Puritans seeking religious<br />
freedom. Originally called<br />
Segatoo by the Lucayan<br />
Indians, the island’s original<br />
inhabitants, it was renamed<br />
Eleutheria, which is Greek<br />
for freedom, and eventually<br />
changed to Eleuthera,<br />
meaning free.<br />
For several centuries, the<br />
island was one of the world’s<br />
largest pineapple producers<br />
(a few pineapple farms survive<br />
today, and the fruit they<br />
produce is exceptionally sweet<br />
and juicy). When agriculture<br />
dwindled, a few attempts<br />
were made to develop the<br />
island for tourists, notably by<br />
Juan Trippe, the founder of<br />
Pan American World Airways.<br />
Trippe, who had a house here,<br />
developed a resort, Cotton<br />
Bay, that never caught on<br />
during the 1950s.<br />
Unlike tiny Harbour Island,<br />
a celebrity magnet and<br />
hedge-fund-baron hideaway<br />
a few miles off its northern<br />
coast, there’s no “scene” on<br />
Eleuthera—the only celebrity<br />
who might be spotted is local<br />
resident Lenny Kravitz.<br />
Most visitors find a favorite<br />
beach, maybe French Leave<br />
Beach with its pink sand;<br />
Receiver’s Beach, north<br />
of Governor’s Harbour,<br />
Eleuthera’s main town; or<br />
Surfer’s Beach near Gregory<br />
Town in the north for those<br />
who want to catch some<br />
waves, and idle their days<br />
away beachcombing. There<br />
are also walking trails, with<br />
boating and horseback riding<br />
also available.<br />
There is some change<br />
afoot in this decidedly lowkey<br />
destination, however. To<br />
start with there’s the opening<br />
of the charming Potlatch<br />
Club (thepotlatchclub.com),<br />
Eleuthera’s first luxury<br />
boutique hotel. This intimate<br />

MY FIRST EXPOSURE TO FLYING WAS …<br />
an experience I had in college when I was<br />
flying back from Daytona Beach to Chicago.<br />
We were on a late-night flight with very few<br />
passengers on board. I remember seeing the<br />
two flight attendants in the galley laughing<br />
and talking and having a great time. In that<br />
moment I thought, wow, they just really love<br />
what they’re doing. So, I decided to become<br />
a flight attendant.<br />

The man in the Ray-Ban sunglasses, Eric Church,<br />
aka “Chief”, is the country artist who is hitting<br />
all the right notes—and not just with his music.<br />

ERIC CHURCH IS pure country. You can tell from the 47-year-old<br />
star’s almost tribal devotion to his influences, his mentors, and the<br />
traditions of this most American of musical genres. Of course, there’s<br />
Hank Williams, Johnny Cash, and Waylon Jennings, but most of all for<br />
Church there’s Kris Kristofferson, the Rhodes Scholar poet laureate of<br />
country music who died in September at the age of 88.<br />
Right now, Church stands as one of the most successful country<br />
singer-songwriters of the moment. He is a seven-time ACM (Academy<br />
of Country Music) Award winner, four-time CMA (Country Music<br />
Association) Award winner, and 10-time Grammy nominee. Five of his<br />
albums have gone platinum and multi-platinum, and his live concert<br />
tours sell out as they are announced. In 2021, he sang the national<br />
anthem at the Super Bowl, an honor reserved for a select few.<br />
But there was a time, not too long ago, when Church was just one<br />
of hundreds of aspiring, desperately hopeful, musicians fetching up in<br />
Nashville trying to get a break. That was when Kristofferson came into<br />
the picture. Church had arrived in Music City in 2005 from his rural<br />
North Carolina home, where he had grown up as son of the president of<br />
a furniture upholstery company. He was looking for a publishing deal,<br />
for live exposure at the city’s famous performance venues, and for<br />
recognition as a bona fide country artist.<br />
“I’d been in town for some while and had had a rough time,” he<br />
recalls. “Like so many of the others, I got told ‘No’ a lot. Then I had<br />
this big meeting with a music publishing company. I said to myself, if<br />
this doesn’t work out, I’m going back to North Carolina in the morning.<br />
Well, the meeting didn’t go well, and I ended up sitting in my car in<br />
the parking lot, figuring out how to leave Nashville, and listening to<br />
Kristofferson’s ‘To Beat The Devil,’ a song about rejection. That song<br />
talked about the very thing I was going through. I decided to stay<br />
another 24 hours. And the next day I got a publishing deal. That song<br />
was my last line of defense. So, thank you, Kris.”<br />
The two subsequently became close friends—an example, says<br />
Church, of how deep country music friendships are formed and how<br />
collaborative the genre is. “Don’t get me wrong, it’s not just one big<br />
happy family,” he says. “It’s competitive, but there’s a lot of camaraderie<br />
and a respect for the format and the history of the format. I think this<br />
is so with country music more than any other musical genre.”<br />
Church’s career took off in 2006 with the release of his debut<br />
album “Sinners Like Me,” followed a few years later by “Carolina,”<br />
and then “Chief,” which refers to his lifelong nickname—a nod to his<br />
beloved grandfather.<br />

Church’s success has coincided with, and been a beneficiary<br />
of, the globalization of country music, which has seen the<br />
rise of stars such as Luke Combs, Jason Isbell, and, most of<br />
all, Taylor Swift, whose recent Eras tour saw her performing<br />
eight sell-out concerts at London’s Wembley Stadium, beating<br />
a record previously held by Michael Jackson at his superstar<br />
peak in 1988. After years of existing as a specialist genre<br />
most popular, if not mainstream, south of the Mason-Dixon<br />
line, country has now established itself as a massively popular<br />
international brand of contemporary music.<br />
Ironically, it was Eric Church who had a small, somewhat<br />
inadvertent, role in the rise of Swift. In 2006, just as his career<br />
was beginning to take off, he was invited to open for Rascal<br />
Flatts, the hot band of the time, on their major U.S. tour. “It<br />
was a big moment for me. I was a new act and I wanted to give<br />
those big audiences a real show,” he says. The tour management<br />
continually complained that Church was playing too loud and<br />
for too long. The final straw was the Madison Square Garden<br />
concert, after which Church was fired and replaced by a young<br />
up-and-comer, 16-year-old Taylor Swift. “The next call I got<br />
was from Taylor who told me she loved my music and she hoped<br />
there were no bad feelings. She was as sweet as she could be<br />
and I told her it was a great opportunity and I had one request.<br />
I said, ‘Your first gold record—I want it.’”<br />
The tour launched Swift’s career and within months she had<br />
her first gold record. Six months later, she and Church found<br />
themselves on the same festival bill. “She walked up and she<br />
was carrying her gold album, which she handed to me. On it<br />
she had written, ‘To Eric, thanks for playing too long and too<br />
loud on the Flatts tour.’” That gold record is now hanging in<br />
Nashville’s Country Music Hall of Fame.<br />
Just as Johnny Cash will forever be remembered as The<br />
Man in Black due to his sartorial color choices, so Eric Church<br />
will always be the Man in Shades. However, his shades are not<br />

physical condition. “I wear contact lenses and my eyes don’t do<br />
well with lubrication,” he explains. “Also, I’m 6’3” tall, and the<br />
heat from stage lights would bake my contacts; they’d fall off.”<br />

Church is a well-liked and respected figure around Nashville,<br />
not least because he paid his dues and therefore has empathy<br />
for the next generation coming through the country music<br />
machine. “In my case, it was a number of years before I had any<br />
success at all,” he says. “A lot of hours, a lot of empty bars, and<br />
clubs and dance halls. I challenge a lot of the new artists now<br />
when they ask my advice about career paths. I tell them you<br />
can’t skip the line. If you’re not putting in the work, not playing<br />
those smaller places, not working every day on your craft, it<br />
will catch up with you. If you earn it, put in the work, play those<br />
small places, then, when the spotlight comes, you’ll be ready.”<br />
In an age when so many big stars lend their name to brands<br />
for seven- and even eight-figure sums, Church’s involvement<br />
in business ventures beyond country music is more to do with<br />
passion than financial gain. He really doesn’t need the money.<br />
“I’ve turned down a lot of things because if I can’t be uniquely<br />
involved, I won’t be interested,” he admits.<br />
His three major off-piste business interests involve bourbon,<br />
an historic American magazine, and a Nashville music venue,<br />
plus he is a minority owner of the NBA’s Charlotte Hornets and<br />
has his own “Outsiders Radio” channel on SiriusXM. Whiskey<br />
JYPSI Legacy Batch 002 is his newest blended whiskey (made<br />
up of Tennessee corn whiskey, Canadian rye, and Indian malt);<br />
the 129-year-old “Field & Stream” hunting, fishing and outdoors<br />
title takes him back to his rural North Carolina roots; and his<br />
new Nashville music venue, Chief’s, which opened this year in<br />
a building he opted to purchase rather than signing a licensing<br />
deal, is a place that he insists “shines a light back on young<br />
songwriters and original music instead of audiences having to<br />
listen to ‘Folsom Prison Blues’ for the hundredth time.”<br />
With “Field & Stream,” Church has, with three partners,<br />
thrown himself into saving an eminent rural pursuits<br />
publication that was founded in 1895 but has been struggling<br />
in recent years. “It was like my King James bible,” he says, of<br />
his long-time passion for the brand. “I loved the writing, the<br />
outdoor adventure, the stories. It means a lot to me to be<br />
involved.”<br />
To facilitate this ceaselessly active lifestyle, Church has, for<br />
the past eight years, been an avid and active <strong>NetJets</strong> member.<br />
“My schedule is such that I can’t afford to be with an air travel<br />
provider that is less than 100% reliable,” he says. “I’m usually<br />
heading directly to a show and if anything goes wrong there’s<br />
no show. I’ve never had an issue with <strong>NetJets</strong> in all those years.<br />

and immediately came down with a bug upon returning home.<br />
Perhaps you’ve even been that person! While it may sound<br />
like an urban legend, people do become unwell more often<br />

We can point to a few reasons for this, according to<br />

When we travel, we’re exposed to new people and places, giving<br />
us more contact with others who may be sick. We may get lax on<br />
our regular good hygiene, sleep, and hydration habits, leading<br />
our immune systems to function suboptimally. And travel itself<br />

traveling is a fact of life!” says Donna Springer, APRN, CNS,<br />
M.S., who cares for patients within the Travel Medicine team<br />
at Mayo Clinic in Rochester, Minnesota. “But it doesn’t have<br />
to be the case. We can help you stay healthy no matter where<br />
you travel.”<br />
For starters, Springer says, some of the things we should<br />
do every day for our health also keep us well when traveling.<br />
Eating nutritious food, getting enough sleep, and staying<br />
hydrated are good habits that build the health of our immune<br />
system, giving us more of a runway in case we do encounter<br />
a nasty bug along our travels. Minimizing stress and staying<br />
active are also two other priorities that lead to better overall<br />
health and can keep us healthier when we travel.<br />
“By doing these things on a consistent basis, we improve<br />
our overall health, and that, in turn, helps us stay healthy<br />
when we travel,” Springer shares.<br />
When we travel, it’s easy to get out of routines due to an<br />
unfamiliar schedule or lack of availability of healthy food<br />
choices and exercise options. But don’t let hand hygiene and<br />
disinfecting surfaces be overlooked.<br />
“Germs are everywhere, even when we do everything right,”<br />
Springer says. “Be sure to wash or sanitize your hands often.<br />
When you finish your travels, you can use a sanitizing spray on<br />
your luggage and personal belongings, and wash your clothes<br />
as soon as you return home.”<br />
For those who are looking for an immunity boost, some<br />
supplements have shown promise. Vitamin D3, vitamin C, and<br />
zinc all may be useful for strengthening immune systems.<br />
While these tips can help with both domestic and<br />
international travel, some destinations may require more<br />
forethought when it comes to staying healthy while traveling.<br />
“The world is a big place,” Springer says. “Many countries<br />
have different risks for diseases and illnesses that are not<br />
common where you may live. It’s a great idea to talk with a<br />
travel medicine program at least six weeks before traveling<br />
internationally, and come ready to talk about your destination,<br />
your travel dates, and any health history or concerns that<br />
could impact your travel or your health while you are in a new<br />
place.<br />

ADD YET ANOTHER swinging-for-the-fences-project-cometo-fruition<br />
for Wisconsin-born businessman and real estate<br />
entrepreneur Mike Meldman. The founder of Discovery Land<br />
Company is, of course, no stranger to turning the seemingly<br />
impossible into a reality (think Yellowstone Club in Montana).<br />
He’s been stringing together a glittering roster of superlative<br />
residential communities for the past 30 years—communities<br />
that are feted by boldfaced celebrities and titans of business<br />
as utopian second (or third) home enclaves.<br />
The latest is CostaTerra Golf & Ocean Club, a 720-acre<br />
redoubt along Portugal’s Atlantic Coast in Alentejo—<br />
sometimes described as the “Hamptons of Western Europe”<br />
for its stunning natural setting that has been devoid of<br />
development and is instead interspersed by sleepy yet stylish<br />
villages, such as Comporta and Melides, which recall Mexico’s<br />
Tulum way back when.<br />
Located an hour south of the capital, Lisbon, CostaTerra is<br />
nestled in the dunes of this vast, little-populated yet culturally<br />

Fazio, including this one. His lone mainland-Europe layout is a<br />
beauty that winds through dunes, heathland, and forest across<br />
a sandy milieu, leading to large green complexes that are welldefended<br />
with false fronts and runoffs, offering an exciting<br />
challenge that keeps players coming back for more.<br />
In all, the course, which meanders through the picturesque<br />
Zimbral forest on the front and boasts sweeping ocean views on<br />
the back, stretches to 7,462 yards from the tips (long enough to<br />
challenge any major winner) but is eminently walkable, thanks<br />
in no small part to an unending number of comfort stations,<br />
concierge members, and caddies that enliven the already<br />
elevated experience with joy and surprise.<br />
Indeed, there are a handful of tour players always in the<br />
midst and milling around on-site, often casually working on<br />
their wedge game in sandals and swimsuits in the unrivaled<br />
adjacent practice facilities, which, owing to thorough turfgrass<br />
management, are fashioned from a combination of Zeon Zoysia<br />
or Bentgrass 007 (get your agronomy books out) on greens and<br />
surrounds, and can withstand the hot Portuguese sun.<br />
“The unique charm of Discovery Golf is that it’s really good<br />
fun,” says Meldman of the offering and ethos. “We’ve taken out<br />
the traditional elements for a relaxed game—for example, you<br />
can golf barefoot, we have no tee times or dress codes and all<br />
ages are encouraged to enjoy the game. This has improved the<br />
game for so many of our members, creating an environment for<br />
families that fosters connections, memories, and fun.”<br />
But it’s not all about the golf at CostaTerra. As with all<br />
Discovery Land properties, there is a focus on fun, fitness, and<br />
the family-forward ethos that is one of its principal hallmarks.<br />
As such, members and their guests are encouraged to explore<br />
and enjoy all aspects of this multi-hyphenate property. To<br />

easy, as Meldman himself has previously conceded: “We had<br />
been looking in Comporta for almost 20 years, but the zoning<br />
is strict, and the entitlements can be challenging. When this<br />
property became available, we knew it was perfect.”<br />
And so it is. With the stupendous granite-and-whitewash<br />
city of Évora—a Unesco World Heritage site whose gloriously<br />
gloomy gothic cathedral and Roman Temple of Diana are only<br />
the most obvious of a slew of historic gems—just an hour’s<br />
drive away, and the rest of Alentejo ripe for discovery, this<br />
culturally rich bucolic region, offering authentic charm and<br />
untouched appeal, is quickly becoming the must-go, must-visit<br />

more popular in the summertime.<br />
Lake Louise is the largest ski resort, and<br />
one of the most scenic on Earth, overlooking<br />
its namesake body of water. It recently<br />
underwent one of the biggest terrain<br />
expansions in North America with the opening<br />
of the 480-acre West Bowl, full of glades,<br />
steep tree runs, and wide-open powder,<br />
served by a new high-speed quad chair. This<br />
winter, they are keeping the momentum going<br />
with another new chair to the West Bowl, a<br />
six-passenger heated bubble, making access<br />
faster and easier. Banff Sunshine is nearly<br />
as big, and known for its challenging doubleblack<br />
expert terrain while offering something<br />
for every ability. It, too, is adding a new highspeed<br />
six-skier heated bubble chair, replacing<br />
the oldest main lift and greatly increasing<br />
uphill capacity. Mount Norquay is the smallest<br />
of the trio but sits right next to the town of<br />
Banff, making it perfect for an easy half day on<br />
arrival or departure, and it is never crowded.<br />
(If you hate waiting in lift lines, Banff is the<br />
place for you, whichever resort you choose.)<br />
Beyond the piste, there are plenty of<br />
other reasons to visit in winter. Ice skating is<br />
practically a Canadian religion, and stunning<br />
Lake Louise is one of the best places to enjoy<br />
it. There are horse-drawn sled rides, dog<br />
sledding, ice-climbing classes, and the park’s<br />
famous glacier tours on the Columbia icefield.<br />

and the gastronomic restaurant in the<br />
Post Hotel—both of which should be on<br />
every foodie’s wish list.<br />

can walk across with expert guides while<br />
wearing spiked crampons over their boots. In<br />
a similar vein is the Johnston Canyon Icewalk,<br />
a network of steel Canyonsteel catwalks and<br />
staircases built into the canyon walls so<br />
visitors can easily hike into the gorge and<br />
through this glacial cathedral, past frozen<br />
and flowing waterfalls and gigantic frozen ice<br />
pillars soaring 10 stories high.<br />
Cross-country skiing is huge here, supported<br />
by rental shops and guided outfitters, and<br />
trails that can also be enjoyed on snowshoes.<br />
The large full-service Canmore Nordic Centre<br />
has a vast groomed trail network for classic<br />
and skate skiing and sits just outside the<br />
entrance to the national park. Outdoor winter<br />
bathing at Banff Upper Hot Springs is hugely<br />
popular, and this natural spring anchors a<br />
full-service public bath facility right in town.<br />
The great hotels and restaurants (see<br />
page 54), and charming town of Banff are<br />
key reasons to visit anytime, but in summer<br />
the main event is the natural beauty of the<br />
park, especially the gorgeous Lake Louise<br />
and Moraine Lake, Cave and Basin National<br />
Historic Site, and the classic scenic drive on<br />
the Icefields Parkway, which runs the length<br />
of the Park north to south. Wildlife is much<br />
more active in summer, and includes bighorn<br />
sheep, moose, and the most coveted sighting<br />
of all: grizzly bears—lots of them.<br />
Hiking is the most popular outdoor activity,<br />
with hundreds of miles of trails suited to all<br />
abilities and stunning views at every turn. But<br />
there is an endless litany of opportunities for<br />
outdoor recreation, including road cycling,<br />
world-class mountain biking, horseback tours,<br />
canoeing, rafting, scenic gondola rides, and<br />

lake cruises. The Park is also famous for its<br />
climbing, and instruction is available for those<br />
wishing to give it a try. A more accessible<br />
way to experience the thrills of alpinism is<br />
the high-altitude Via Ferrata, or “iron way,”<br />
a course of metal ladders and cables affixed<br />
to cliff faces. Those with no mountaineering<br />
experience, but a head for heights, can clip<br />
into this with a harness and safely see what<br />
exposure on the high peaks feels like.<br />
After a full day of action, it’s easy to<br />
unwind, thanks to the in-town hot springs<br />

Banff Springs just added a new outdoor sauna<br />
facility on its aquatic center deck with great<br />
views, and also has the park’s only guided<br />
forest bathing program. Fairmont Château<br />
Lake Louise, meanwhile, has a state-of-theart,<br />
eco-friendly comprehensive thermal<br />
wellness facility opening in spring 2025.<br />
For golfers, Banff has long been a<br />
pilgrimage destination, and here again, the<br />
historic Fairmont Banff Springs hotel is the<br />
draw, home to its eponymous layout—one of<br />
the most famous courses in Canada and the<br />
seminal work of acclaimed designer Stanley<br />
Thompson’s career. Banff Springs is in Golf<br />
Magazine’s Top 20 You Can Play in North<br />
America and has one of the most recognizable<br />
par-3s in all of golf: the fourth, The Devil’s<br />
Cauldron, with a downhill tee shot from a<br />
hugely elevated tee to a green tucked behind<br />
a lake and in front of a massive vertical<br />
cliff face. Marilyn Monroe and Joe DiMaggio<br />
famously played the course while she filmed<br />
“River of No Return” in Banff, and everyone<br />
from Gene Sarazen to Jack Nicklaus to Greg<br />
Norman and Sergio García has teed it up here.<br />
The hotel also has a second nine-hole course,<br />
the Tunnel Mountain 9 , and there are several<br />
notable options close to the Park, most<br />
notably the two Robert Trent Jones, Sr. 18s at<br />
Kananaskis, 27-hole Canmore, and Silvertip.<br />

Catalina Island is being rediscovered by L.A.’s<br />

STANDING ATOP THE steep hills overlooking the little<br />
fishing boats bobbing in the idyllic harbor below, you could<br />
be forgiven for thinking this was the Côte d’Azur or the Italian<br />
Riviera. The truth is some 6,000 miles away, in the shape of<br />
Santa Catalina—the ruggedly beautiful island off the coast of<br />
southern California.<br />
Just 22 miles from Los Angeles, Catalina is visible from the<br />
Hollywood Hills on a clear day and, in the 1930s and ’40s, was<br />
the place for Tinseltown’s elite to see, and be seen. Back then,<br />
stars like Humphrey Bogart, Betty Grable, Joan Crawford, and<br />
Charlie Chaplin would sail across the Santa Barbara Channel<br />
for sun- and champagne-drenched weekends, attending public<br />
galas at the 12-story Catalina Casino, with its duomo-style<br />
rooftop, and private parties at lavish hilltop mansions, before<br />
(sometimes) retreating to their anchored yachts for the night.<br />
Now Catalina is having a moment again, with a fresh<br />
generation of A-listers discovering the pretty islet adrift in<br />
L.A.’s backyard. Taylor Swift, Katy Perry, and Demi Lovato are<br />
among a number of big names to have holidayed here recently—<br />
creating a fresh tide of interest in this corner of the Pacific.<br />
In Avalon, the picturesque hamlet above the harbor and<br />
the closest thing Catalina has to a town, the hospitality<br />
industry has been working overtime to keep up. Hotels like<br />
the legendary Catalina Canyon Inn (catalinacanyoninn.com),<br />
with its spectacular hilltop views, and the sleek Hotel Atwater<br />
(visitcatalinaisland.com), in the thick of the harborfront<br />
hubbub, have both enjoyed luxurious recent renovations,<br />
making a mockery of their outdated three-star classifications<br />
and a bargain of their prices. Meanwhile, at the top of the<br />
bill (both literally and figuratively), the statuesque Mt. Ada<br />
(visitcatalinaisland.com)—a boutique bolthole on a commanding<br />
clifftop above Avalon—is due for a much heralded multimilliondollar<br />
facelift of its own in 2025.<br />
Chosen by chewing gum magnate William Wrigley Jr. as the<br />
spot to build his dream home after purchasing the island in<br />
1919, Mt. Ada captures the first rays of sunlight in the morning<br />
and the last at night, with sensational views in every direction.<br />
The sumptuous mansion became an eight-bedroom hotel in<br />
1985 but maintained much of its original charm—including<br />
a magnificent wraparound terrace and sun-drenched living<br />
room, with big bay windows looking out across Avalon.<br />
Down in the town itself—where 3,600 of the island’s 4,000<br />
-plus permanent residents live—you’ll find an embarrassment<br />
of restaurant riches, from hillside hotspot The Lobster Trap<br />
(catalinalobstertrap.com) to beloved beachfront burger hangout<br />
Harbor Reef (visitcatalinaisland.com) and upscale dining room<br />
Avalon Grille (visitcatalinaisland.com), with its juicy seafood<br />
platters and deep list of Californian wines.<br />

If cocktails are more your speed, Avalon has a thriving bar<br />
scene, too, with sundowners at the stylish Descanso Beach<br />
Club (visitcatalinaisland.com) an early evening must. The best<br />
drinks in town, however, are arguably served at The Naughty<br />
Fox (bellancahotel.com)—a lively French-style bar with open<br />
frontage. (Don’t miss the Buffalo Milk here: a wonderfully<br />
succoring blend of vodka, crème de cacao, crème de banana,<br />
Kahlua, and fresh nutmeg, which fits warm Catalina evenings<br />
like a soft sweatshirt after a swim in the ocean.)<br />
The name “Naughty Fox” is a doff of the cap to one of the<br />
island’s endemic species, the Catalina fox. This mischievous<br />
little customer is about 25 per cent smaller than its mainland<br />
cousins, and roams Catalina’s backcountry alongside<br />
populations of squirrels, deer and—strangely enough—bison.<br />
Considering this is a small, mountainous island (covering<br />
a total of only 75 square miles) that’s been separated<br />
from the mainland for millennia, the lumbering, tank-like<br />
American bison have zero business being here. But there are<br />
more than 100 of the great beasts grazing on Catalina—the<br />
descendants of a small herd of 14 brought over to film shoot<br />
in the 1920s. The movie’s budget disappeared but the buffalo<br />
didn’t, because the studio couldn’t afford to ship them home.<br />
So they huffed and snorted off together to start a new herd<br />
in the island’s interior.<br />

Today, the shaggy descendants of those bovine actors are<br />
protected, and have become one of Catalina’s biggest tourist<br />
attractions—with the daily Bison Expedition (catalinatours.<br />
com) in biofuel Hummers setting out to spy them in the<br />
wild. In addition, the Catalina Museum for Art & History<br />
(catalinamuseum.org) does a superb job of explaining this and<br />
the rest of the island’s surprisingly quirky history via engaging,<br />
interactive exhibits.<br />
In an odd geological twist, Catalina is precisely 22 miles<br />
from north to south: the same distance as it is west from<br />
mainland California. If you could somehow spin the island<br />
through 90 degrees, you could simply walk across from Avalon<br />
to Los Angeles. But as that’s not currently an option, most<br />
people take the 70-minute Catalina Express ferry across<br />
(catalinaexpress.com) from Long Beach, or better still the<br />
15-minute Maverick Helicopter ride from the same spot<br />
(maverickhelicopter.com).<br />
With its colorful Mediterranean-style homes tumbling<br />
down lush hillside toward its perfect crescent-shaped<br />
harbor, Avalon looks and feels vastly different to the rest<br />
of California—and indeed the United States of America.<br />
Like its Arthurian namesake, this is a place of uncommon<br />
beauty, powered by its own unique kind of magic.<br />

If there’s one thing they know how to do on Catalina, it’s party. This unassuming Californian island is home to a remarkable<br />

Catalina Casino every December 31, affording the public a little taster of the island’s interwar Hollywood glamour.<br />
In the fall, despite being thousands of miles from Bavaria, Catalina goes crazy for Oktoberfest, with revelers taking advantage<br />
of the warm weather to drink outdoors in beachfront venues like the newly opened Flx Biergarten in METROPOLE MARKET<br />

Reflecting a growing demand for artisanally produced drinks,<br />
the new breed of rums hail from parts less-known and offer up<br />
both idiosyncratic tastes and a sense of place. By Jillian Dara<br />
TERROIR IS A TERM most associated with the wine world:<br />
The complete natural environment that influences a particular<br />
wine and presents a sense of place in a glass. Yet, as consumers<br />
have demanded more connection to luxury goods in general,<br />
terroir-driven spirits have gained popularity. For rum, that<br />
means a rise in consumer interest towards fresh cane rums,<br />
rather than molasses-based ones, as the process upholds the<br />
purity of the sugarcane’s flavors—a nuanced expression of the<br />
cane’s particular growing region.<br />
“Consumers are increasingly drawn to products that offer a<br />
sense of place and authenticity, valuing the story and heritage<br />
behind their beverages,” says Gary McLoughlin, co-founder of<br />
Star & Key, a single-estate rum from Mauritius. “People are<br />
more curious about the origin of their spirits and are looking<br />
for products that are crafted with care and respect for their<br />
environment,” adds Lorena Vásquez, master blender for Zacapa<br />
Rum in Guatemala.<br />
Just as the limestone-rich soils of Burgundy’s famed Puligny-<br />
Montrachet vineyards impart a distinct, sleek minerality to the<br />
appellation’s chardonnays, terroir-driven rums reflect the soil<br />
composition and climate of the singular destination where<br />
their sugarcanes—used to craft rum—are grown. Rum terroir,<br />
however, “encompasses more than just the cane fields,”<br />
explains Vásquez.<br />
Rum terroir also includes the distillation and aging<br />
environments, where each step is influenced by its<br />
surroundings. For example, Zacapa’s aging process occurs<br />
in the country’s highlands at 7,545 feet above sea level; the<br />
cool, stable environment permits a slower aging process that<br />
contributes to Zacapa’s complexity and elegance. “The terroir<br />
of Guatemala is not just a backdrop for our rum; it’s an active<br />
participant in shaping its flavor and quality,” says Vásquez.<br />
McLoughlin agrees, noting how their aging is also impacted by<br />
the local terroir. “The rum is tropically aged in a very warm and<br />
humid environment which deepens flavor quite quickly.” Since<br />
the humidity causes alcohol to evaporate faster than water—<br />
McLoughlin says Star & Key loses eight percent to angel’s<br />
share each year—this affects the final ABV.<br />
Terroir in rum is also influenced by “culture and the heritage<br />
of know-how”, says Alexandre Gabriel, owner and master<br />
blender at West Indies Rum Distillery, producer of Planteray<br />
Rum, which offers a diverse range of terroir-focused rums.<br />
He offers Barbados, the host island of the West Indies Rum<br />
Distillery, as an example, describing the terroir as comprising<br />
“hundreds of years of know-how: how to ferment molasses,<br />
how to distill, how to blend, how to age.” In this sense, “rum<br />
terroir is where nature meets culture,” emphasizes Gabriel.<br />

ZACAPA, GUATEMALA<br />
The mineral-rich soil of Zacapa’s sugarcane fields “is unique,” says master blender Lorena<br />
Vásquez. High in clay content and plant nutrients, it’s called vertisol and only found on two<br />
percent of the planet. Furthermore, Zacapa uses three different variants of sugarcane to<br />
influence the aromas and flavors of the rum (pictured, facing page); using the first press of<br />
virgin sugarcane results in a sweeter and smoother rum. The fermentation process employs a<br />
pineapple-derived yeast strain which emphasizes the natural flavor profile and adds complexity<br />
to the body. “In a market full of choices, terroir-driven rums like Zacapa stand out because they<br />
offer a sense of place,” adds Vásquez. “When you taste Ron Zacapa, you are not only enjoying a<br />

STAR & KEY, MAURITI<strong>US</strong><br />
Coming from the far side of the world, Star & Key’s single-estate Mauritius rum is immediately<br />
distinguishable from Caribbean-style ones, says brand co-founder Gary McLoughlin. “Mauritius<br />
was one of the first places in the world to cultivate sugarcane, and hundreds of years later it is<br />
still the island’s main crop,” he says. Star & Key rums utilize both red and yellow cane varietals<br />
grown on one of the oldest sugarcane estates on the island, the eighth-generation Wiehe familyowned<br />
Labourdonnais. “To capture the terroir of Mauritius, everything is grown, harvested,<br />
distilled, and aged on the estate,” explains McLoughlin. The rich, volcanic soil influences the<br />
sugarcane that’s pressed immediately after it’s picked, while the subtropical, maritime climate<br />
of year-round warmth combined with the salt air of the Indian Ocean is pivotal in the aging<br />
process. “In a fresh cane rum like Star & Key, terroir impacts the flavor through the sugarcane<br />
varieties we use, the cane’s growing conditions, climate, and weather conditions, not only for<br />

RHUM J.M, MARTINIQUE<br />
The rums of Rhum J.M are distilled from sugarcane<br />
that’s grown and cultivated on the brand’s estate in the<br />
foothills of Mount Pelée, Martinique’s famous volcano.<br />
“The sugarcane matures well in our little microclimate<br />
due to the balance of temperature between hot, humid<br />
days and cool, breezy nights,” says Ben Jones, managing<br />
director of Spiribam <strong>US</strong>A, which manages Rhum J.M<br />
The dark, rich volcanic soils impart crisp grassy and<br />
fruity flavors in the rum, which “is concentrated by<br />
the excellent drainage and frequent trade winds that<br />
blow through the sugarcane fields, drying out the<br />
sugarcane and stressing the crop to produce brighter<br />
sugarcane flavors.” Since Rhum J.M focuses on Rhum<br />
Agricole—using freshly pressed sugarcane juice<br />
instead of molasses—the purity of this technique<br />
permits a more prominent expression of terroir. “Rhum<br />
Agricole specifically has been called the most ‘terroir<br />
driven spirit’ for good reason,” emphasizes Jones. “It<br />
is remarkable to capture each brand’s ‘thumbprint’ in<br />
their liquid and style, which is greatly contributed to<br />
by the brand’s location and choices taken by the hand<br />

Gabriel’s sentiments about terroir delivering a real<br />
sense of place, character, and the culture that is<br />
associated with the rum, he adds: “Terroir, for me, is<br />

COPALLI RUM, BELIZE<br />
Surrounded by 13,000 acres of virgin rainforest in southern Belize, Copalli is an organic rum<br />
that’s crafted at the Copal Tree Distillery. The distillery shares the same land where both the red<br />
sugarcane and heirloom black varietal are grown to create the three-ingredient rum (the others<br />
being proprietary yeast and rainwater that’s collected onsite). The highly fertile soils of what<br />
are now sugarcane fields were previously host to a swathe of citrus farms that were ultimately<br />
decimated by citrus greening disease. Copal Tree Lodge worked to transform the region’s centuriesold<br />
orchards into an organic sugarcane farm. “You can practically taste the pristine terroir of the<br />
rainforest in every bottle,” says David Bart, CEO of Copalli Rum. “Low-end, mass-produced rum<br />
made from commoditized sugar can be made most anywhere. But, like any top-shelf spirit, terroir<br />

PLANTERAY RUM, BARBADOS<br />
Planteray Rum is a culmination of three decades of searching for “the great terroirs of rum” by<br />
Alexandre Gabriel. The collection includes permanent and limited-edition rums sourced from the<br />
likes of Barbados, Jamaica, Guatemala, and Fiji. The rums are all finished in ex-Ferrand cognac<br />
barrels in France, yet the islands’ terroir is predominantly responsible for these evocative spirits.<br />
Gabriel believes that terroir extends beyond nature, which includes destination-specific distilling<br />
techniques that affect the profile of a rum. In Barbados, up to 1.5 percent of seawater is added<br />
during fermentation to create a slight stress on the locally grown yeast. “The salt doesn’t distill<br />
through, but it creates an environment for fermentation to add a special touch,” says Gabriel. “This<br />
is one of the very rich elements of the history and heritage of Barbados that gives an incredible tool<br />
for the master blender and master distiller who are willing to plunge back into the heritage that<br />
took centuries to build.” In Trinidad, the use of a column still creates a more floral and airy flavor<br />
profile, whereas in Jamaica, the rum offers rich notes “that are fruit forward,” as a direct result of<br />

On January 29, 1962, Yves Saint Laurent freed the female form. Presenting his<br />
first eponymous collection aged just 26, the world’s youngest couturier was a<br />
breath of fresh air. Out went cinched waists and sharp, unforgiving silhouettes.<br />
In came roomy trench and pea coats, and fluid evening gowns embellished with<br />
floral motifs. As Life magazine reported: “Paris crowns Dior’s dauphin, and a<br />
sprig of lily of the valley brought him luck.” In fact, flowers were a constant<br />
in Saint Laurent’s life, from the bougainvillea-draped home he shared with<br />
his long-time partner, Pierre Bergé, in Morocco, to the unforgettable moment<br />
in 1999 when French model, and his final muse, Laetitia Casta took to the<br />
runway clad in little but silk gazar roses for YSL’s spring/summer collection.<br />
The designer’s evergreen passion is currently being examined at “The Flowers<br />
of Yves Saint Laurent,” an exhibition showing at both the Musée Yves Saint<br />
Laurent Marrakech (until January 5) and Paris (until May 4). Co-curated by<br />
Olivier Saillard, a fashion historian and author, and Gaël Mamine, former<br />
head of collections at the Fondation Pierre Bergé, the exhibition offers a<br />
closer examination of the symbiosis between nature, literature, and Saint<br />
Laurent’s work. Famously inspired by artists such as Mondrian, Van Gogh, and<br />
Matisse, Saint Laurent also strongly connected to the written word, and in<br />
particular those of Marcel Proust, one of his favorite authors, who used floral<br />
imagery to compare society and nature. Hence, fittingly, each section of the<br />
exhibition is treated like the chapter of a book, with more than 30 floralinspired<br />
YSL garments and original drawings organized around four themes,<br />
and given context by the inclusion of quotes from Proust and a selection of<br />
works by contemporary American artist Sam <strong>Fall</strong>s, whose art is informed by<br />
the natural world. “Flowers–in seedlings or bouquets, or just stitched on the<br />
back of fabric–crop up throughout Saint Laurent’s collections,” say Saillard<br />
and Marmine. “Whether printed in contrast on silk, cut and applied to the<br />
fabric itself or blended onto two-tone taffeta, flowers, realistic or fanciful,<br />
would transform the couturier’s runway shows and collections into fertile and<br />

Home comforts or thrill-seeker?<br />
Generally speaking, I like to just go and relax—take in the sun.<br />
I’m not a big “Let’s go see the sights” type of guy. I think the<br />
older I get, the more I like to go to a resort rather than face<br />
the hustle-bustle type of city. However, I’ve noticed since I<br />
have kids (now five and seven), they have brought me out of<br />
the “Let’s just hang out by the pool” attitude, and I am glad.<br />
For example, we just went to Mexico and we went tubing, wave<br />
running, horseback riding, and snorkeling. I don’t want to be a<br />
thrill-seeker, but I am definitely more adventurous than I ever<br />
was in my single and/or married life before kids.<br />
FOOD<br />
Big names or hidden gems?<br />
I like the best of both worlds when it comes to dining. I’m<br />
really, really into food. I like to cook. Right now, I’m into<br />
anything tomato. I love making a tomato salad with a little<br />
onion, avocado, oil, pepper, salt. We’ve got figs growing and<br />
I try to feed my kids healthier fare, giving them some idea<br />
where the food comes from. Of course, we have also tried the<br />
tasting menu thing.<br />
ARTS AND ENTERTAINMENT<br />
Still life or live performance?<br />
On our honeymoon, we got to see Andrea Bocelli at his Teatro<br />
del Silenzio in Tuscany. He left the stage riding through<br />
the crowd on a white stallion. I ended doing a bit on that in<br />
my act, which he subsequently saw and I got to meet him<br />
backstage in Madison Square Gardens.<br />
Good book or big screen?<br />
I’m into sports documentaries like “30 for 30” on ESPN.<br />
Netflix has its own version with “Untold.” Any sort of crime<br />
documentary—right now I am watching the Laci Peterson one.<br />
My absolute favorite sports doc is “The Last Dance.” I’m from<br />
Chicago so I had that run [of success] in the Nineties!<br />
FUTURE PLANS<br />
Stage or kitchen?<br />
I did a show called “Well Done,” which kind of married my<br />
passion for comedy and food, where the 13 episodes each<br />
centered on a particular food that I really enjoyed. So I<br />
definitely want to continue my passion for food in some way,<br />
shape or form.<br />
