Feel good eating

Meet Sindi-Marie de Beer, who’s pretty much the neighbourhood’s

dietician-next-door. There are so many reasons why she loves food. Her fave,

though, is that it brings families together. We take a seat at her table to chat

about the ins and outs of healthy living.

For Sindi-Marie de Beer, healthy means more than just a number on a scale. It’s

about feeling good in your skin and taking care of your body so you can do all the

things you love without any limitations.

From a young age, her mom instilled a love for wholesome food … and that early

start built the foundation for a lifelong passion for health. By high school, Sindi-

Marie knew her calling. With a love for biology and consumer studies, it’s safe to

say dietetics fits her like a glove. Fast forward to 2021, and she opened her own

business, Nutrition Worx SA. Today, she does it all. CEO. Receptionist. Expert. And

even the occasional janitor.

‘Food doesn’t just keep us healthy … it literally keeps us alive. People don’t always

realise that the world of healthy living is constantly evolving, and there’s always

something new to discover. And every day, I get to meet new people. Build real

connections. And watch small changes lead to big breakthroughs in the lives of my

clients. Which is why I also locum for a hospital in Bedfordview, where the journey

can be intense, but the rewards make it oh-so worth it.’

Her clients go to her with a mix of needs. Nutrition education. Lifestyle advice. Or

sometimes just a good dose of body positivity … especially for women. Sindi-Marie

is all about uncovering the root of the issue. Whether it’s emotional, physical, or

medical, then working on the lasting changes.

‘Unfortunately, our main health hurdle at the moment is obesity. Largely because

of busy lifestyles and quick-grab eating habits. Because let’s face it, we are living

in such a fast-paced environment where it’s just easier to turn to quick fixes.

Which, we all know, is not the answer. And there’s so much more to these health

conditions than what scratches the surface.’

This is why she’s the go-to if you’re facing any chronic health conditions, looking to

lose weight or want to try a lifestyle reset. And, she says it straight … Google and

TikTok are no replacement for sound nutrition advice.

She believes that you are allowed to eat a little bit of everything … as long as it’s

fresh. And to stay away from coconut oil (yep, sorry!). Her golden rules . . . small

portions. Lots of variety. And aim to fill half your plate with veggies.

She’s big on busting myths, too. Like, healthy eating doesn’t mean goodbye

to treats forever, and it doesn’t have to break the bank. Sindi-Marie’s motto

is everything in moderation. Think 80 percent nutritious choices, 20 percent

indulgence. In her case that 20 percent means doughnuts. Specifically, Krispy

Kreme’s cheesecake flavour. It’s like her ultimate weakness.

At home though, her friends and family know Sindi-Marie as anything but the food

police. She’s down-to-earth, super bubbly, a little deurmekaar (scatterbrained in

Afrikaans), and happiest at home with a braai surrounded by her favourite people.

And, when there are no people around, she loves indulging in a self-care day from

time to time. It will most probably start with avocado toast, maybe a few sets of

tennis, a long shower, and a movie night to wrap it all up.

To unwind, all she needs is time with her dachshunds (which she can never have

enough of, btw) … it’s like every worry just melts with their wagging tails. In her

free time, she’s likely on a farm walk or browsing the latest health finds at Dis-Chem.

Plus, her hidden talent … whipping up a mean baked cheesecake and making up

the catchiest songs for her dogs!

The way to her heart is easy. Some sushi and a trip to the bush. For Sindi-Marie it’s

all about the little things. For instance, getting wonderfully lost on a hiking trail

Christmas Summer salad

with citrus dressing

This salad combines vibrant colours,

sweet and tangy flavours, and a

delightful crunch, making it a festive

and nutritious addition to any Christmas

table.

You’ll need: 1 cup mixed greens (spinach,

arugula, and lettuce); 1 cup fresh

strawberries, sliced;1/2 cup pomegranate

seeds; 1/4 cup crumbled

feta cheese;1/4 cup toasted almond

flakes or pecans;1 avocado, sliced; 1/2

cucumber, thinly sliced.

For the citrus dressing: 3 Tbsp extra virgin

olive oil; 1 Tbsp fresh lemon juice;

1 Tbsp fresh orange juice;1 tsp honey

(or maple syrup for a vegan option);

1/2 tsp Dijon mustard; salt and pepper

to taste.

To make: In a large salad bowl,

combine mixed greens, strawberries,

pomegranate seeds, cucumber, and

avocado slices.

Sprinkle with crumbled feta cheese

and toasted almond flakes.

For the dressing: In a small bowl or jar,

whisk together olive oil, lemon juice,

orange juice, honey, and

Dijon mustard.

Season with salt and pepper to taste.

Assemble and Serve:

Drizzle the citrus dressing over the

salad just before serving.

chef at AKA Lead Kitchen at the Radisson RED Rosebank.

This wasn’t Chef San’s only major achievement during

his stellar career. He also reached the regionals for Unilever’s

Junior Chef of the Year and achieved executive chef

status at the age of 24.

• Pretoria campus graduate Hendrik Pretorius worked

at 5-star establishments in Dubai before being lured to

Lisbon, Portugal to head up the patisserie section for

one of the city’s leading restaurants. After five years, he

left and opened up his own eatery called Quest.


Feeding the soul

Introducing Mariska and Jaco Roux, the dynamic duo behind a charming

little gem of a coffee shop in the heart of Krugersdorp.

This isn’t just any coffee shop,

though. It’s a tribute to Mariska and

Jaco Roux’s late niece, Alexis-Rose,

who passed away from leukaemia

at only three years old. The shop’s

logo, marked with the date of little

Lexi’s passing and a delicate rose, a

constant reminder of her strength

and the beauty she brought to the

world. And it’s like you can literally

feel that warmth in the shop.

From the moment you walk into

Lexi’s Coffee Shop, you’ll be hit

by the aroma of freshly brewed

coffee. Then comes the atmosphere.

Calming, tranquil, and bursting with

a sense of community. And let’s not

even get started on their famous

layered cake … just one slice and it

will quickly become your new go-to

spot (breakfast, lunch and dinner!).

The best part? Mariska and Jaco are

always up for a heartfelt chat or a

good laugh.

‘My favourite part of running the

shop is getting to know people.

Everyone has a story, and every

person can add something to your

life if you just take the time to listen.’

In fact, many visitors go to the

shop just to chat … finding it a

safe, encouraging space to share

their highs, lows, and everything in

between. The Roux’s always ready

with a listening ear and a prayer

if needed. Mariska’s warmth and

sense of humour, paired with Jaco’s

genuine care and kindness, mean

you’ll walk out with an empty coffee

cup, but a full heart.

Speaking of a full heart … this

couple’s own story is like something

straight out of a rom-com. They met

at a wedding in Dubai as best man

and maid of honour, linking arms for

the first time as if they’d known each

other forever. A whirlwind of laughs,

late-night chats and life planning

followed, and the rest, as they say,

is history.

Their path to opening the

shop, though, was anything but

straightforward. After a few career

twists and turns, Jaco was on his way

to becoming a commercial pilot, with

plans to relocate to America. Then

came Covid. Which completely threw

their lives off course and led them

back to South Africa. They started a

real estate business to get by, but

when Lexi’s current spot opened up,

Jaco looked at his wife, asking why

not. And with that, Lexi’s Coffee was

born.

Their hearts are rooted in the

community, which is why they’ve

transformed the shop into somewhat

of an art gallery - Mariska’s idea.

They currently showcase the work

of three brilliant local artists …

Liezel Spangenberg, Lumain van

Vuuren, and Shaun Judge. All of

which are up for sale without a cent

of commission ... a gesture of pure

community support.

And that’s not all. ‘We are also

privileged to be a home base

for various community-driven

organisations. Some, we just love

hosting and others we are actively

involved in, such as Genesis Calling.’

A program designed to help men

rediscover their identity and work

through life’s hurdles. Now, they’re

excited to be expanding with a new

Young Adults division, offering even

more support to those who need it.

Now, as parents of two beautiful

daughters, ages nine and six, Mariska

and Jaco are savouring every

moment together as a family. And

though Jaco may have learned that

plans don’t always go as expected,

he’s determined to make the most

of the present, stewarding the shop

with care and keeping an eye out for

future opportunities ... maybe even

multiple branches someday.

But for now? They’re content to

drink the coffee, smell the roses,

and enjoy the here and now. So, if

you’re in the area and craving a cosy,

heartwarming escape this festive

How do you spend your free time?

Mariska: We enjoy the outdoors and adventure. And we love going away with

our girls and just soaking each other up. For me, the only way to unwind is to

be in nature. It helps you to reset. I do however love to read a good book. It’s

something that lets me escape for a bit.

Jaco: Being in the outdoors. Being in nature does it for me and it doesn’t matter

where that may be. It used to be adventures like scuba diving, skydiving or

anything that got the blood pumping but now it’s more of where it is quiet.

Who cooks and who cleans?

Mariska: Jaco is 100 percent the one who loves to cook. I don’t mind cleaning

after eating his food. The problem is that he likes to experiment which means

that EVERYTHING gets used, haha.

Jaco: I’ve always loved trying new things in the kitchen. The baking I probably

got from my mother’s side as she is an excellent baker and the cooking in a

way from my father’s side. I don’t like cooking boring things and rather opt for a

different or exotic direction. Which is why I also developing the menu. It’s like a

combination of different cuisines, with a hint of local. She might not admit it, but

Mariska is a great cook as well, although I enjoy it more. And, I beg to differ. Both

of us clean up afterwards.

How do you know it’s Christmas time at Lexi’s?

Jaco: When I start walking around, irritating my staff by whistling Christmas

carols all the time. Shame, I really should stop that. I guess the main way to know

is when the decorations go up and the staff (especially the kitchen staff ) swap

out their mop caps for Christmas hats.

Your fave holiday menu pick?

Mariska: Nothing beats the bacon, avo and feta tramezzini paired with a

cappuccino. The phyllo parcels is a delicious snack if you love halloumi. But I

would always recommend the Lexi’s layered cake.

Jaco: Our cherry, bacon and cheese tramezzini. And it’s because of the cherries.

I remember my mother always baking Christmas cakes when I was little and I

would always steal the cherries from the batter. So weirdly, for me, cherries mean

festive season. Then without any doubt, our speciality layered cake.

Jaco’s fave one-pot fajita chicken mac n cheese recipe

You’ll need: 500g chicken breast; 1 Tbsp chicken seasoning of your choice; 2 Tbsp fajita

seasoning (any store bought brand or mix your own); 1 onion (finely diced); 3 bell

peppers (finely diced); 3 tsp garlic purée (or 3 cloves); 300g pasta (uncooked weight);

400ml hot chicken stock; 600ml milk, warmed; 1 tsp mustard (any kind, optional);

120g cheese (I used a mix of extra mature cheddar, and mozzarella); salt and pepper to

taste; parsley and chilli flakes to garnish (optional)

To make: Start by seasoning the chicken. Fry the chicken until it’s cooked through and

browned, then remove from the pan and set aside. Add the onions and peppers into the

same pan and cook until soft, then add in the garlic and cook for a minute or so.

Add in the uncooked pasta and give it a good mix, then add in the stock and milk. Cook

this until the pasta has cooked and you’re left with a creamy sauce.

Add in the mustard (optional) and the cheese and mix until the cheese has melted,

then season to taste. Add the chicken back in. Garnish, Serve and enjoy.

Savoury waffles with whipped

ricotta & smoked trout

This easy yet luxurious recipe, served with Spier Cap Classique Brut,

is perfect for a breakfast or brunch treat.

Turn brunch into a celebration by pairing these waffles

with Spier Cap Classique Brut. The wine’s exuberant

bubbles and golden hue complement the crispy waffles,

while its apple and citrus notes enhance the smoked

trout. The Cap Classique’s balanced mouthfeel and good

acidity cut through the richness of the whipped ricotta.

Serves four.

You’ll need: For the waffle mixture- 2 XL eggs, 2 Tbsp

extra virgin olive oil, ½ cup sour cream, ½ cup milk, 1½

cups cake flour, 1½ tsp baking powder, ½ to ¾ cup finely

chopped spring onions (plus extra for serving, optional),

½ cup finely grated hard cheese (Parmesan / Pecorino /

Gruyère), salt and pepper, to taste

For topping - ½ cup sour cream, 230g ricotta cheese or

smooth full cream cottage cheese, 200g cold smoked

trout/salmon ribbons, a small bunch of chives, finely

sliced, for serving

For the creamy mustard vinaigrette - 3 Tbsp extra virgin

olive oil, 3 tsp fresh lemon juice, 3 tsp mayonnaise, 1 tsp

honey, salt and pepper, to taste

To make: Prepare the waffles and whipped cheese.

Whisk together the eggs, oil, sour cream, and milk in a medium

mixing bowl. Add the flour and baking powder and stir until

almost mixed, then add the spring onions and cheese until no

floury bits remain (do not overmix). You’ll have a thick mixture.

Set aside while you prepare the whipped cheese.

To prepare the whipped cheese, mix the sour cream and

cheese in a small blender until smooth and creamy. Set aside.

Prepare the vinaigrette. Put all the ingredients into a medium

jar with a lid, then shake until well blended. Set aside until

ready to serve.

Cook the waffles and assemble. Heat a waffle maker. Spoon the

mixture into the hot machine and cook until golden brown.

Serve warm, topped with a dollop of prepared whipped cheese,

ribbons of trout, and freshly chopped chives. Finish with a

drizzle of the prepared vinaigrette, then serve at once.

Tip: Leftover waffles can be stored in the fridge for up to two

days and refreshed in a toaster. If you want to serve all the

waffles warm at the same time, pre-toast them in advance,

then refresh them in an oven at 180°C for a few minutes.

Almond, chocolate & orange cantuccini

Cantuccini are the biscotti of Tuscany. Traditionally served with Vin Santo,

they’re equally delicious dipped into a chilled dessert wine or good espresso.

When you bake these, double up.

Keep a batch for yourself, and the

other wrap up with a bottle of dessert

wine ... a brilliant hostess gift

You’ll need: 2 cups cake flour, 1 cup

granulated sugar, 1 tsp baking

powder, pinch of salt, 2 eggs, 5

pumps NOMU Vanilla Paste, grated

zest of 2 oranges, 100g almonds

(skin on), roasted and coarsely

chopped, 60g NOMU Decadent Hot

Chocolate chunks

To make: Preheat the oven to 180°C.

Sift the flour, sugar, baking powder

and salt in a large bowl and set aside.

Mix the eggs, Vanilla Paste and zest

together. Pour the egg mixture into

the dry ingredients and stir gently

with a wooden spoon. Add the nuts

and NOMU Decadent Hot Chocolate

chunks and stir to combine.

Divide the dough mix in half and roll

each into a log shape, about 30cm

long and 5cm wide. Place the logs

onto a buttered and floured oven

tray, making sure there is space

between each one for spreading.

Bake for 25 minutes until firm and

light golden brown. Remove from the

oven and allow to cool slightly.

Reduce the oven temperature to

90°C. Whilst still warm, thinly slice the

logs into 1cm slices and place on a

greased oven tray. Bake further for

approximately 4 to 5 hours, turning

halfway through until completely

dried out and crisp.

We’re planting …

Coleus Volcanica Solar Flare

because it’s the perfect plant for the

festive season, with its heart-shaped red

and burgundy leaves, edged with gold. The

underside of the leaves is yellow green, making it a

colourful feature plant for containers and the garden.

It is part of the sun coleus range that does best with

morning sun but also tolerates shade. The tall plants

(90cm high and 70cm wide) bring a touch of drama

into the garden. Plant in fertile soil that retains moisture

but doesn’t get soggy. Plants in containers should be

watered daily or every second day in Summer. Feed

monthly with a liquid fertiliser. It will perform as

a perennial in frost free gardens but is frost

tender and should be treated as an

annual in areas that receive frost.

Veggie of the month

Leafy veggies generally don’t like the heat,

but one that can handle it is our indigenous

spinach, better known as Marog (Amaranthus

tricolour) or Imbuya. It is an excellent hot,

dry weather substitute for spinach. Marog

has arrow-shaped leaves that are thicker than

spinach leaves and can be picked over a long

period. The young leaves have a mild flavour

and can be eaten raw or cooked like spinach.

They are an excellent source of plant protein

as well as vitamins C and A. Marog grows best

in full sun in well composted soil. The seeds

are very small, and it is easier to sow them

evenly by mixing them with sand or dry soil.

The seeds are usually planted in rows. Seed

germinates within 7 to 14 days and the final

spacing should be 25cm apart. Plants need

regular watering and grow easily. For the best

flavour, harvest the tender tops when they

are about 25cm tall, by cutting them off with

scissors and then leaving the plant to re-grow.

Marog can be intercropped with other veggies.

Indoor plant of the month ... this dwarf

Capsicum Acapulco is irresistible with its

glossy multi-coloured fruit. Pop it into a pot

as a centrepiece for the Christmas feast table.

It is also a super gift. It bears loads of fruit,

which doesn’t have the heat of a chilli pepper,

being slightly sweet, so it is safe to be around

children. To keep on fruiting capsicums, need

at least six hours of sun a day. A good idea

is to enjoy it indoors for a few days and then

move it onto a sunny patio or into the garden.

Plant in rich, well composted soil that drains

well. Don’t let the soil dry out completely but

also avoid overwatering and soggy soil.

The final stretch

It’s been quite a show. And the countdown has begun for the finale of the

eleventh season of Tropika Island of Treasure: Zanzibar. We chat to contestants

to find out what they suggest you take on an island holiday.

Set in the dreamy paradise of Zanzibar,

this season has served up everything we

love … marvellous scenery, all kinds of

rather extreme challenges … and, what’s

any good reality show without a splash

of star power?

Seven everyday South Africans jumped

into this adventure headfirst, teaming

up with celebs who brought their

A-game to the island. Think Tiktoker

extraordinaire Chad Jones, sports

presenter Nqobile Khwezi, former Miss

SA Ndavi Nokeri, heartthrob model Karl

Kugelmann, actor Hungani Ndlovu, TV

sweetheart Roxy Burger, and the everysmooth

Bobby van Jaarsveld.

In the past 10 weeks, the teams have

faced it all. All kinds of tricky mental

and physical challenges, which often

triggered emotional outbursts which

(to be honest) has kept us glued to

the screen.
