Mates swim-a-thon<br />

to fight breast cancer<br />

BREAST CANCER scares to<br />

people they know have inspired<br />

two friends to swim to raise<br />

money to fight the disease.<br />

Simpson, both 24, have been<br />

swimming an increasing number<br />

of lengths of breaststroke<br />

in the pool at <strong>News</strong>ome’s Casebrook<br />

home, where Simpson is<br />

a flatmate.<br />

They started with one length<br />

on February 13 and are adding<br />

an extra length each day.<br />

Today, day 292, they will<br />

swim 292 lengths, and will<br />

tackle 293 tomorrow – with<br />

the challenge to be completed<br />

on day 365, a year after they<br />

started.<br />

So far they have chalked up<br />

more than 42,000 lengths - and<br />

will have swum nearly 67,000<br />

by the time they are finished.<br />

<strong>News</strong>ome said the physical<br />

struggles pale in comparison to<br />

those diagnosed with cancer.<br />

“Every stroke we take is a<br />

reminder of the challenges<br />

faced by those battling breast<br />

cancer,” he said.<br />

A best mate’s mum and a<br />

cousin were both diagnosed<br />

with breast cancer and while<br />

they responded to treatment<br />

and survived, seeing the impact<br />

it had on them and their loved<br />

ones motivated <strong>News</strong>ome and<br />

Simpson to do their part.<br />

Cycleway<br />

and pipe<br />

work to<br />

start in<br />

new year<br />

WASTEWATER pipe upgrades,<br />

a street renewal and construction<br />

on the next section of the<br />

Nor’West Arc cycleway will start<br />

next year.<br />

The projects are being carried<br />

out at the same time on Aorangi<br />

Rd and will involve replacing<br />

old wastewater pipes before constructing<br />

the cycleway, which will<br />

also extend down Condell and<br />

Matsons avenues.<br />

Work will start in January and<br />

is expected to be completed in<br />

mid-2026.<br />

“This project will have significant<br />

traffic impacts, which we’re<br />

working hard to manage,” said<br />

city council general manager city<br />

infrastructure Brent Smith.<br />

Stage one includes safety<br />

improvements at the intersection<br />

of Wairakei and Aorangi roads,<br />

which will close for three weeks<br />

from January 13. Work has been<br />

timed during the holiday period<br />

when roads are quieter.<br />

Following work at the intersection,<br />

Aorangi Rd will reopen with<br />

traffic management in place, and a<br />

short section of Wairakei Rd will<br />

operate one-way city-bound for<br />

three to four months.<br />

Detours will be in place during<br />

the intersection and lane closures,<br />

and people are advised to allow<br />

for extra travel time.<br />

it easier and safer for people to<br />

bike around the city. Cyclist<br />

numbers are continuing to grow<br />

as more routes link up different<br />

parts of Christchurch,” Smith<br />

“It’s also much more efficient<br />

when we can time different<br />

projects – whether for roading<br />

or water – to happen together.<br />

It means we only dig up the<br />

road once and minimise traffic<br />

flowing,” Smith said.<br />

traffic impacts of the work will<br />

Swimmers<br />

don’t take<br />

a day off<br />

The pair have two months to go.<br />

They have swum every day, even<br />

in winter, when they were forced<br />

to relocate to a friend’s indoor<br />

pool due to the cold.<br />

Whenever they’re asked if<br />

they’ve ever thought about skipping<br />

a day due to weather or illness,<br />

they respond: “People living<br />

with breast cancer don’t get a day<br />

off, neither should we.”<br />

Posting daily updates to their<br />

Facebook page, breaststroke-<br />

4breastcancer, the pair encourage<br />

others to join them or contribute<br />

to breast cancer charities.<br />

“It’s not just about the physical<br />

act,” Simpson said.<br />

“It’s about commitment<br />

everyday, a choice breast cancer<br />

patients don’t have”.<br />

As of Tuesday, the pair had<br />

raised more than $4000 of their<br />

$10,000 goal.<br />

Tough kids battle it out as end<br />

IT’S AN annual two-day event<br />

eagerly anticipated by thousands of<br />

Canterbury primary school pupils.<br />

Sport Canterbury’s ‘Tough<br />

Kid’, held at South New Brighton<br />

Domain last week, attracted about<br />

4000 pupils from Hanmer to<br />

Ashburton.<br />

The hardy participants ran,<br />

walked and crawled their way<br />

through 19 obstacles along a<br />

3.5km course, vying to see who<br />

was the toughest of the tough.<br />

Sport Canterbury event coordinator<br />

Isaac Sutherland said it<br />

was all about having a good time<br />

with your mates.<br />

“It’s not about being first, second<br />

or third. It’s just about having<br />

a good day, dressing up, lots of<br />

water, mud and obstacles they<br />

can run through. It’s all about<br />

teamwork.”<br />

Parents and teachers were<br />

encouraged to try their luck on<br />

the course as well, with the New<br />

Brighton Volunteer Fire Brigade<br />

on hand to cool down participants<br />

with the fire hose.<br />

Sutherland said Tough Kid,<br />

now in its 13th year, has become<br />

one of the largest primary school<br />

participation events in the<br />

country.<br />

Started after the earthquakes,<br />

Sutherland said it aimed to<br />

challenge kids to stay active, build<br />

resilience, reduce screen time and<br />

improve mental health.<br />

Duo make a splash<br />

with Aquabots win<br />

MATTHEW DRURY and Mitchell Venz<br />

have shown off their scientific skills on a<br />

national level.<br />

Matthew, <strong>12</strong>, and Mitchell, 11, won the<br />

intermediate age category at the Aquabots<br />

nationals in Auckland with their team the<br />

Jack O Lanterns.<br />

They were tasked with building an<br />

underwater remotely-operated vehicle to<br />

compete in practical and theoretical challenges.<br />

A second place at the regional competition<br />

earned the Kirkwood Intermediate<br />

pupils a place in the nationals, but their win<br />

almost didn’t happen.<br />

On the day of the final their propeller<br />

fell off, then the bot was deemed too big to<br />

compete. But, after a bit of glue, a borrowed<br />

hacksaw and some modifications they were<br />

ready to enter.<br />

pushing stop banks, and collecting balls<br />

from a pen. For the theory section, the<br />

team had to do a presentation, create a fact<br />

sheet, a technical report, and a quiz.<br />

The pair won in four categories, as well a<br />

second and third, securing enough points<br />

for the overall win.<br />

A CANTERBURY children’s charity is<br />

turning to the public for extra financial<br />

support this Christmas.<br />

Over the past 99 years, Cholmondeley<br />

Children’s Centre has provided respite<br />

care for more than 33,000 Canterbury<br />

children - that’s over 300 children and<br />

their families a year.<br />

“Cholmondeley would<br />

not be eyeing up its<br />

100th year without the<br />

ongoing support from<br />

the Canterbury community.<br />

However, it has been<br />

a difficult couple of years<br />

for the charity sector,”<br />

Centre general manager<br />

Darel Hall said.<br />

“Many charities are doing it tough and<br />

we are no exception.<br />

“Government agencies only provide 20<br />

per cent of our funding and any reductions<br />

impact the viability of our service,”<br />

he said. Hall joined the centre as general<br />

manager in November following five years<br />

on its board, but his connection to Cholmondeley<br />

goes back nearly 50 years.<br />

“Almost half a century ago I became a<br />

Cholmondeley child.<br />

“The experience at such an important<br />

time as a child created impressions that<br />

have shaped my whole life,” he said.<br />

From experiencing Cholmondeley’s care<br />

first-hand to being part of the team that<br />

delivers it, Hall wants to see the centre<br />

succeed for Canterbury children.<br />

“As Cholmondeley moves towards<br />

its centenary in March I want to thank<br />

the people, volunteers, businesses, and<br />

donors of Canterbury for their support for<br />

Cholmondeley both this year and in the<br />

years to come,” he said.<br />

THE FESTIVE season is about<br />

coming together to enjoy the<br />

warmth of family, friends, and,<br />

of course, food. With so much<br />

delicious food, leftovers are<br />

inevitable — but don’t let them<br />

go to waste!<br />

Turning holiday leftovers into<br />

fresh, exciting meals is easier<br />

than you might think.<br />

With just a few additional<br />

ingredients, you can transform<br />

leftover meats, veges and<br />

desserts into completely new<br />

dishes. Here are some ideas:<br />

Meats<br />

Leftover cooked meats and<br />

fish are incredibly versatile and<br />

can be reinvented in various<br />

ways.<br />

Try shredding roast meats<br />

and sandwiching it between two<br />

tortillas with cheese to make<br />

a quick, cheesy quesadilla. Or,<br />

dice up the ham and toss it into<br />

a frittata with extra veges for an<br />

easy breakfast or lunch.<br />

Sausages are great sliced<br />

and added to pasta or used as<br />

pizza toppings, while flaked fish<br />

works well in a creamy fish pie<br />

or mixed with mash to make<br />

fish cakes.<br />

Salads<br />

Leftover salads can be turned<br />

into fresh dishes with a little<br />

creativity.<br />

For a quick lunch, use salad as<br />

a filling for wraps or pita pockets<br />

– use up extra dips and sauces<br />

like hummus, tzatziki, or cranberry<br />

sauce for extra flavour.<br />

For a unique twist, transform<br />

leftover potato salad into savoury<br />

crispy potato waffles – they’re<br />

easy to make, tasty and perfect<br />

for breakfast, brunch or a light<br />

lunch.<br />

Leafy or vege-based salads also<br />

make great pizza toppings: bake<br />

your pizza then pile the salad on<br />

top for a fresh finish.<br />

Desserts<br />

Even sweet treats can have a<br />

second life. Crumble and fold<br />

through Christmas cake or pudding<br />

into softened vanilla ice<br />

cream, then refreeze for a festive<br />

twist on ice cream that’s bound to<br />

be a hit.<br />

Leftover fruit salad can be frozen<br />

into popsicle moulds with fruit<br />

juice for a refreshing treat. And<br />

for a quick dessert, layer broken<br />

pieces of pavlova, meringues,<br />

or cookies with whipped cream<br />

or custard and fresh berries in a<br />

glass for a delightful Eton mess<br />

or parfait.<br />

Bonus storage tips<br />

Proper storage is the first step<br />

to ensuring leftovers stay fresh<br />

and safe to eat. The key is to pack<br />

away the food and get it into the<br />

fridge or freezer within two hours<br />

of serving. Freeze meats, sauces,<br />

or baked goods in meal-sized<br />

portions, so you only defrost what<br />

you need.<br />

Always label and date your frozen<br />

leftovers, so you know exactly<br />

what’s ready to use up first and<br />

avoid UFOs (unidentifiable frozen<br />

objects).<br />

To save time and reduce waste,<br />

store leftovers in clear containers<br />

whenever possible. That way, you<br />

can easily see what’s inside, making<br />

it more likely you’ll use it up.<br />

With a little creativity, holiday<br />

leftovers can become the starting<br />

point for a whole new menu of<br />

meals.<br />

By storing food properly and<br />

repurposing dishes into something<br />

new, you can celebrate the season<br />

while cutting down on food waste.<br />

Crispy potato waffles<br />

Ingredients<br />

1 cup mashed potato salad or<br />

leftover mashed potatoes<br />

1 large egg<br />

¼ cup plain flour<br />

¼ cup grated cheese, optional<br />

Salt and pepper, to taste<br />

Cooking spray or oil for the<br />

waffle iron<br />

Method<br />

• Preheat your waffle maker to<br />

medium-high heat and lightly<br />

grease it with cooking spray or<br />

oil.<br />

• In a large bowl, combine<br />

mashed potatoes, egg, flour,<br />

cheese (if using) and salt and<br />

pepper. Add extra flour if<br />

needed to form a thick batter.<br />

• Spoon a portion of the batter<br />

on to the waffle iron. Close and<br />

cook for about 5-7 minutes, or<br />

until the waffle is golden brown<br />

and crispy.<br />

• Carefully remove the waffle<br />

and let it cool slightly on a wire<br />

rack. Serve warm with toppings<br />

such as sour cream, chives, or<br />

even a poached egg or sliced<br />

ham on top.<br />

Pickles essential for a summer sandwich<br />

Whether in a cheddar<br />

toastie or a bagel<br />

with avocado and<br />

mozzarella, sandwich<br />

season calls for bright,<br />

sharp pickles, writes<br />

Summer pickled<br />

vegetables<br />

The jars should be sterilised if<br />

you want to keep the pickle for<br />

any length of time. Pour boiling<br />

water into them after washing, or<br />

warm them in the oven. Pack the<br />

jars full, with the liquor coming<br />

to the top.<br />

Ingredients<br />

Makes 2 medium Kilner jars<br />

1 small cucumber<br />

1 large shallot<br />

1 medium carrot<br />

4 radishes<br />

6 heaped Tbsp sauerkraut<br />

For the pickle<br />

6 Tbsp white wine vinegar<br />

6 Tbsp cider vinegar<br />

5 Tbsp malt vinegar<br />

2 tsp fennel seeds<br />

15 black peppercorns<br />

8 juniper berries<br />

1 tsp caster sugar<br />

1 tsp salt<br />

Method<br />

• Peel the cucumber, then slice<br />

it in half lengthways. Scoop out<br />

the core and its seeds with a<br />

teaspoon and discard.<br />

• Cut the cucumber into 1cm<br />

thick slices and put them in a<br />

large bowl.<br />

• Peel the shallot, slice into thin<br />

rounds and add to the cucumber.<br />

Scrub the carrot then, using a<br />

potato peeler, shave into long<br />

ribbons. Add these to the bowl,<br />

then thinly slice and add the<br />

radishes and sauerkraut.<br />

• In a small, stainlesssteel<br />

saucepan mix together<br />

the vinegars, fennel seeds,<br />

peppercorns and juniper berries.<br />

• Add the sugar and salt and<br />

place over a moderate heat. Bring<br />

to the boil, stirring until the<br />

sugar and salt have dissolved.<br />

• Pour the hot pickling liquor<br />

over the vegetables and toss<br />

gently together.<br />

• Transfer to clean, sterilised<br />

storage jars, seal and refrigerate<br />

overnight.<br />

Cheese and pickle<br />

mustard-butter<br />

sandwiches<br />

Brushing with mustard butter<br />

before grilling gives a crispness<br />

and delicious piquancy to the<br />

bread. It also makes the surface<br />

brown more quickly, so it is<br />

worth keeping a sharp eye on the<br />

bread’s progress as it cooks. A<br />

small ridged griddle pan is ideal,<br />

but a frying pan is fine, too. Press<br />

it firmly down against the hot<br />

metal to get a crisper finish.<br />

Ingredients<br />

Makes 2 sandwiches<br />

150g fontina (gruyere can be<br />

used as an alternative)<br />

40g butter<br />

4 Tbsp summer vegetable pickle<br />

(see separate recipe)<br />

4 slices sourdough bread<br />

1 tsp dijon mustard<br />

Method<br />

• Coarsely grate the cheese.<br />

Melt the butter in a pan and stir<br />

in the mustard – don’t worry if<br />

it doesn’t mix perfectly. Brush<br />

both sides of the bread with the<br />

mustard butter.<br />

• Heat a griddle pan or frying<br />

pan. Divide the cheese between<br />

two of the slices of bread. Drain<br />

the pickle, then spoon it on top<br />

of the cheese, place the reserved<br />

pieces of bread on top and press<br />

down firmly.<br />

• Put the sandwiches on the<br />

griddle or in the pan and press<br />

down firmly with a palette knife<br />

or a weight.<br />

• When the underside of the<br />

sandwich is golden, turn and<br />

cook the other side. When the<br />

cheese softens and the bread is<br />

golden brown, eat immediately.<br />

Guacamole, pickle and<br />

mozzarella bagel<br />

I prefer to use an avocado that<br />

is not too ripe. The pickle juice<br />

slices through the oily flesh and<br />

also keeps its colour bright.<br />

Ingredients<br />

Makes 4<br />

2 avocados<br />

1 small red chilli<br />

2 tsp grain mustard<br />

a small handful of coriander<br />

leaves<br />

juice of ½ lime<br />

1 Tbsp olive oil<br />

4 bagels<br />

1 × 200g ball mozzarella<br />

8 Tbsp summer vegetable pickle<br />

(see separate recipe)<br />

Method<br />

• Halve, stone and peel the<br />

avocados. Put the flesh into a<br />

bowl, then crush it with a fork.<br />

Finely chop the chilli and add<br />

to the bowl. Stir in the mustard,<br />

coriander leaves, lime juice and<br />

olive oil to give a thick, mustardseed-freckled<br />

cream.<br />

• Split the bagels in half and<br />

toast the cut side under a hot<br />

grill, or in a toaster until lightly<br />

crisp.<br />

• Tear the mozzarella into large,<br />

irregular pieces and place on the<br />

bottom half of the toasted bagels.<br />

• Spread generously with the<br />

avocado cream. Spoon the pickle<br />

on top and place the other half of<br />

the bagel on top and serve.<br />
