Surf’s up, Santa’s here Woolston
roading
upgrade
planned for
new year
The weather served up a
scorcher for the annual
New Brighton Santa Parade
on Saturday. Santa arrived
on the beach before
taking his patrol boat to
the streets, where he was
joined by musicians, pirates,
stilt-walkers and angels.
This year’s parade was
the biggest yet, with 40
floats on show. Afterwards
parade-goers made the
most of the warm weather
and headed for the beach,
the market or ice-creams.
ROADING UPGRADES are
planned for the new year to make
the intersection of Ferry, Ensors,
and Aldwins Rds safer.
The intersection will be closed
to all traffic from the evening
of Sunday, January 5, and will
reopen by 5am on Monday,
January 13.
“We’re
strengthening the
road, replacing
traffic lights that
are at the end of
their service life,
and installing safe
speed platforms
Stephen
on all approaches,”
Wright
said city council
transport operations manager
Stephen Wright.
“This intersection ranks in
the top 1 per cent for crash risk
across the 5700 intersections
Christchurch City Council
controls citywide. These upgrades
will make it safer for everyone to
use,” said Wright.
“This full closure will help us
efficiently complete this work and
means we can make the most
of the quiet period on the road,
before the school year begins.”
Detours will be signposted to
help people travel around the
closure. Pedestrian access and
some parking will be available for
people to visit businesses around
the intersection.
Work complete on first
stage of waterway fix
THE FIRST stage of the
Addington Brook renewal
project has been completed and
stage two will get under way next
year.
Spring-fed Addington Brook
runs through industrial land
before entering South Hagley
Park and flowing into the
Ōtākaro-Avon River beside the
Botanic Gardens.
The brook had one of the
most polluted waterways in
Christchurch and suffered
from slumping banks, limited
drainage capacity, poor
biodiversity and trees causing
blockages in the waterway.
The narrow brook is also
difficult to distinguish in parts
with a three-metre-high drop,
creating a hazard for pedestrians
and cyclists using the park.
In January, the council began
work to flatten and stabilise
banks in the first stage of the
project.
Once the banks were
stabilised, native riparian strips
have been planted on either side
to protect against future erosion,
filter contaminants and make it
easier for park users to see the
waterway.
A number of trees have been
removed as part of the stage
one works and further removals
IMPROVEMENTS: The banks of the Addington Brook have
been stabilised and riparian strips planted to prevent future
erosion,
PHOTO: NEWSLINE
will be needed for stage two
alongside and within the brook.
While the removals are
necessary, there will be
approximately 500 new trees
planted once work is complete,
which will allow for a range of
tree species of various ages and
heights along Addington Brook.
In addition, 25 existing healthy
trees have already been retained
and transplanted.
The project will have multiple
benefits, such as improved
safety for park users, improved
water quality and biodiversity,
increased stormwater drainage
capacity and enhanced
landscaping.
It is expected stage two work
will take around nine months to
complete.
The second stage will mainly
involve bank regrading and
stabilisation and planting new
landscaping and trees. During
that time access to South Hagley
Park will still be available.
CLOSURE: The intersection of Ferry, Ensors, and Aldwins Rds
will be closed to all traffic from the evening of Sunday, January
5 and will reopen by 5am on Monday, January 13 to allow for
safety upgrade work.
Safety improvements at
dangerous intersection
• From page 1
A short period of night work
has been under way at the
intersection to prepare for the
full closure, but all work will
pause over the holiday period.
Wright said the patience of
people travelling on the road
during the January closure
period will be appreciated.
“We understand that closing
this busy intersection will be
disruptive for people, but the
upgrade needs to happen, and
the wider community will
benefit from a stronger and
safer intersection in the longer
term.”
Apprentice
gardener
gives career
in fashion
the snip
PHOTO: CCC
BOTANIC Gardens apprentice
Alannah Kwant had an eightyear
career in fashion and retail
before following her heart into
the world of gardening.
Through the Ministry of Social
Development, she completed a
four-month cadetship with the
city council’s parks unit and has
now embarked on a three-year
apprenticeship.
It’s a long way from the world
of high-end fashion.
Kwant studied at Otago
Polytechnic before landing a job
managing NOM*d’s flagship
store, Plume.
She loved it, and still does
some modelling and creative
direction, but “to keep climbing
in that world would’ve meant a
move overseas,” said the 28-yearold.
“There were things that I
couldn’t get from that industry;
you are catering to a small group
of people, and I just thought –
rather than leaving the place
where I’ve grown up, how can
I do the opposite and stay here,
give back more and feel more involved
in the place where I live?
“My dad used to work for
DOC and he’s currently parks
and reserves manager at Waimakariri
District Council, so I
understood a bit about this kind
of work and always saw how
fulfilled he was in his job.”
Kwant was working part-time
‘I’m learning a whole new set of skills and plant knowledge . . . I feel it will allow me to
eventually branch out into a whole variety of roles.’ – Alannah Kwant
and on the job seeker benefit
when MSD offered the cadetship
with the city council.
She jumped at the opportunity
to try her hand in different parts
of the parks service.
“I was lucky to do the programme
because it gave me a
trial run in a range of areas, and
the chance to get to know the
people who work there. This
gave me the confidence to apply
for the three-year apprenticeship,
which I started in July this
year.”
Her position is funded by the
Friends of the Christchurch
Botanic Gardens, a voluntary
organisation which hosts
activities and events connecting
the wider community to the
gardens, raising money to
support projects and initiatives.
“I’m grateful every day for
their support,” Kwant said.
“What I like about this work
is knowing what you need to do,
there’s a task at hand but you
also get a really satisfying beforeand-after.
I’ve never had a job
where your day is full, it’s busy,
the time goes fast and at the
end of the day you’re physically
tired but mentally you’ve still got
energy left to do things outside
of work.”
The apprenticeship is three
years long and along with the
practical work and hands-on
learning there’s also a study
component for a qualification in
horticulture.
“I’m learning a whole new set
of skills and plant knowledge
and I’m excited to see the
progression. I feel it will allow
me to eventually branch out into
a whole variety of roles.”
The art of enjoying the best seconds
By making the most of
your festive feast you
can savour every bite,
write the folks at Love
Food Hate Waste.
THE FESTIVE season is about
coming together to enjoy the
warmth of family, friends, and,
of course, food. With so much
delicious food, leftovers are
inevitable — but don’t let them
go to waste!
Turning holiday leftovers into
fresh, exciting meals is easier
than you might think.
With just a few additional
ingredients, you can transform
leftover meats, veges and
desserts into completely new
dishes. Here are some ideas:
Meats
Leftover cooked meats and
fish are incredibly versatile and
can be reinvented in various
ways.
Try shredding roast meats
and sandwiching it between two
tortillas with cheese to make
a quick, cheesy quesadilla. Or,
dice up the ham and toss it into
a frittata with extra veges for an
easy breakfast or lunch.
Sausages are great sliced
and added to pasta or used as
pizza toppings, while flaked fish
works well in a creamy fish pie
or mixed with mash to make
fish cakes.
Salads
Leftover salads can be turned
into fresh dishes with a little
creativity.
For a quick lunch, use salad as
a filling for wraps or pita pockets
– use up extra dips and sauces
like hummus, tzatziki, or cranberry
sauce for extra flavour.
For a unique twist, transform
leftover potato salad into savoury
crispy potato waffles – they’re
easy to make, tasty and perfect
for breakfast, brunch or a light
lunch.
Leafy or vege-based salads also
make great pizza toppings: bake
your pizza then pile the salad on
top for a fresh finish.
Desserts
Even sweet treats can have a
second life. Crumble and fold
through Christmas cake or pudding
into softened vanilla ice
cream, then refreeze for a festive
twist on ice cream that’s bound to
be a hit.
Leftover fruit salad can be frozen
into popsicle moulds with fruit
juice for a refreshing treat. And
for a quick dessert, layer broken
pieces of pavlova, meringues,
or cookies with whipped cream
or custard and fresh berries in a
glass for a delightful Eton mess
or parfait.
Bonus storage tips
Proper storage is the first step
to ensuring leftovers stay fresh
and safe to eat. The key is to pack
away the food and get it into the
fridge or freezer within two hours
of serving. Freeze meats, sauces,
or baked goods in meal-sized
portions, so you only defrost what
you need.
Always label and date your frozen
leftovers, so you know exactly
what’s ready to use up first and
avoid UFOs (unidentifiable frozen
objects).
To save time and reduce waste,
store leftovers in clear containers
whenever possible. That way, you
can easily see what’s inside, making
it more likely you’ll use it up.
With a little creativity, holiday
leftovers can become the starting
point for a whole new menu of
meals.
By storing food properly and
repurposing dishes into something
new, you can celebrate the season
while cutting down on food waste.
Crispy potato waffles
Ingredients
1 cup mashed potato salad or
leftover mashed potatoes
1 large egg
¼ cup plain flour
¼ cup grated cheese, optional
Salt and pepper, to taste
Cooking spray or oil for the
waffle iron
Method
• Preheat your waffle maker to
medium-high heat and lightly
grease it with cooking spray or
oil.
• In a large bowl, combine
mashed potatoes, egg, flour,
cheese (if using) and salt and
pepper. Add extra flour if
needed to form a thick batter.
• Spoon a portion of the batter
on to the waffle iron. Close and
cook for about 5-7 minutes, or
until the waffle is golden brown
and crispy.
• Carefully remove the waffle
and let it cool slightly on a wire
rack. Serve warm with toppings
such as sour cream, chives, or
even a poached egg or sliced
ham on top.
Say cheese – don’t leave guests bored
The New Zealand
Specialty Cheesemakers
Association has tips
to create the perfect
cheese board
Shop
Shopping at a specialty
retailer with a dedicated cheese
deli provides an opportunity to
speak with a cheesemonger who
is responsible for caring for the
cheese and can share valuable
knowledge including seasonal
cheese guidance.
The best part – they will offer
tastes to help your decisionmaking!
Decide on the New Zealand
cheese you want to use and buy
enough for the cheeseboard -
and if you’re sneaky, a week’s
supply of delicious leftovers.
We’ve used a fabulous
selection of cheeses on our
board. Of course, you can use
larger pieces and less variety,
but remember to mix up the
varieties to provide flavour and
texture.
Texturally, three kinds of
cheese is a good guide - hard,
medium and soft cheese will
enthral every cheese lover. Three
different cheese styles give great
contrast.
Gather
Gather interesting local foods
to enhance your cheese. You can
accentuate the flavour in cheese
or choose a contrasting flavour.
For example, pair a sweet,
nutty sheep milk cheese with
walnuts, hazelnuts or candied
nuts. A goat-milk cheese
with wonderful salty notes
will contrast deliciously with
something sweet.
The layout
Begin laying out your
cheeseboard by placing
small dishes and bowls for
accompaniments such as olives,
chutney, relish, sauces (we’ve used
a red onion agrodolce) or honey
on the board or platter, then
arrange the cheese.
Consider grouping flavours
to match the cheese. Bunch
individual foods together – they
will appear more luscious and
tempting.
Remember bringing cheese to
room temperature is essential to
give the best eating experience.
Up to four hours is generally the
recommended time, except fresh
cheeses where 30 minutes is plenty.
The board or platter
Choose a board or platter that
will hold a good selection of food.
Think about the number of people
sharing your cheeseboard to gauge
board size. Give texture to the
board before placing cheese and
other food – a sheet of torn baking
paper, scattered fig leaves or
grapevine leaves, when in season.
Knives and spoons
Offer a different knife for each
cheese. This keeps the character
of each cheese as well as saving
guests from continuously passing
one knife around.
Put a small spoon in with
each chutney, relish, olives or any
accompaniment that requires
them. Don’t forget crackers!
Finish your cheeseboard with a
few sprigs or leaves of fresh herbs.
Red onion agrodolce
Ingredients
4 medium red onions, peeled and
cut into thin wedges
2 Tbsp olive oil
2 Tbsp sherry vinegar
1 Tbsp runny honey
a few thyme sprigs
2 Tbsp raisins, sultanas, currants
or chopped pitted prunes
Method
• Heat the oven to 200°C. Put
the onions, olive oil, vinegar,
honey, thyme and 2 tablespoons
water in an ovenproof dish.
Season with salt and gently toss to
combine all the ingredients.
• Put in the oven and bake for
about an hour, until the onions are
tender, adding a little more water
if you think the onions are looking
dry.
• Soften your choice of dried
fruit in enough boiling water to
cover, for about 10 minutes.
• Drain well and stir through the
red onions.
