The weather served up a<br />
scorcher for the annual<br />
New Brighton Santa Parade<br />
on Saturday. Santa arrived<br />
on the beach before<br />
taking his patrol boat to<br />
the streets, where he was<br />
joined by musicians, pirates,<br />
stilt-walkers and angels.<br />
This year’s parade was<br />
the biggest yet, with 40<br />
floats on show. Afterwards<br />
parade-goers made the<br />
most of the warm weather<br />
and headed for the beach,<br />
the market or ice-creams.<br />

ROADING UPGRADES are<br />
planned for the new year to make<br />
the intersection of Ferry, Ensors,<br />
and Aldwins Rds safer.<br />
The intersection will be closed<br />
to all traffic from the evening<br />
of Sunday, January 5, and will<br />
reopen by 5am on Monday,<br />
January 13.<br />

will make it safer for everyone to<br />
use,” said Wright.<br />
“This full closure will help us<br />
efficiently complete this work and<br />
means we can make the most<br />
of the quiet period on the road,<br />
before the school year begins.”<br />
Detours will be signposted to<br />
help people travel around the<br />
closure. Pedestrian access and<br />
some parking will be available for<br />
people to visit businesses around<br />
the intersection.<br />

Work complete on first<br />
stage of waterway fix<br />
THE FIRST stage of the<br />
Addington Brook renewal<br />
project has been completed and<br />
stage two will get under way next<br />
year.<br />
Spring-fed Addington Brook<br />
runs through industrial land<br />
before entering South Hagley<br />
Park and flowing into the<br />
Ōtākaro-Avon River beside the<br />
Botanic Gardens.<br />
The brook had one of the<br />
most polluted waterways in<br />
Christchurch and suffered<br />
from slumping banks, limited<br />
drainage capacity, poor<br />
biodiversity and trees causing<br />
blockages in the waterway.<br />
The narrow brook is also<br />
difficult to distinguish in parts<br />
with a three-metre-high drop,<br />
creating a hazard for pedestrians<br />
and cyclists using the park.<br />
In January, the council began<br />
work to flatten and stabilise<br />
banks in the first stage of the<br />
project.<br />
Once the banks were<br />
stabilised, native riparian strips<br />
have been planted on either side<br />
to protect against future erosion,<br />
filter contaminants and make it<br />
easier for park users to see the<br />
waterway.<br />
A number of trees have been<br />
removed as part of the stage<br />
one works and further removals<br />
IMPROVEMENTS: The banks of the Addington Brook have<br />
been stabilised and riparian strips planted to prevent future<br />
erosion,<br />

will be needed for stage two<br />
alongside and within the brook.<br />
While the removals are<br />
necessary, there will be<br />
approximately 500 new trees<br />
planted once work is complete,<br />
which will allow for a range of<br />
tree species of various ages and<br />
heights along Addington Brook.<br />
In addition, 25 existing healthy<br />
trees have already been retained<br />
and transplanted.<br />
The project will have multiple<br />
benefits, such as improved<br />
safety for park users, improved<br />
water quality and biodiversity,<br />
increased stormwater drainage<br />
capacity and enhanced<br />
landscaping.<br />
It is expected stage two work<br />
will take around nine months to<br />
complete.<br />
The second stage will mainly<br />
involve bank regrading and<br />
stabilisation and planting new<br />
landscaping and trees. During<br />
that time access to South Hagley<br />
Park will still be available.<br />

Alannah Kwant had an eightyear<br />
career in fashion and retail<br />
before following her heart into<br />
the world of gardening.<br />
Through the Ministry of Social<br />
Development, she completed a<br />
four-month cadetship with the<br />
city council’s parks unit and has<br />
now embarked on a three-year<br />
apprenticeship.<br />
It’s a long way from the world<br />
of high-end fashion.<br />
Kwant studied at Otago<br />
Polytechnic before landing a job<br />
managing NOM*d’s flagship<br />
store, Plume.<br />
She loved it, and still does<br />
some modelling and creative<br />
direction, but “to keep climbing<br />
in that world would’ve meant a<br />
move overseas,” said the 28-yearold.<br />
“There were things that I<br />
couldn’t get from that industry;<br />
you are catering to a small group<br />
of people, and I just thought –<br />
rather than leaving the place<br />
where I’ve grown up, how can<br />
I do the opposite and stay here,<br />
give back more and feel more involved<br />
in the place where I live?<br />
“My dad used to work for<br />
DOC and he’s currently parks<br />
and reserves manager at Waimakariri<br />
District Council, so I<br />
understood a bit about this kind<br />
of work and always saw how<br />
fulfilled he was in his job.”<br />
Kwant was working part-time<br />
‘I’m learning a whole new set of skills and plant knowledge . . . I feel it will allow me to<br />

when MSD offered the cadetship<br />
with the city council.<br />
She jumped at the opportunity<br />
to try her hand in different parts<br />
of the parks service.<br />
“I was lucky to do the programme<br />
because it gave me a<br />
trial run in a range of areas, and<br />
the chance to get to know the<br />
people who work there. This<br />
gave me the confidence to apply<br />
for the three-year apprenticeship,<br />
which I started in July this<br />
year.”<br />
Her position is funded by the<br />
Friends of the Christchurch<br />
Botanic Gardens, a voluntary<br />
organisation which hosts<br />
activities and events connecting<br />
the wider community to the<br />
gardens, raising money to<br />
support projects and initiatives.<br />
“I’m grateful every day for<br />
their support,” Kwant said.<br />
“What I like about this work<br />
is knowing what you need to do,<br />
there’s a task at hand but you<br />
also get a really satisfying beforeand-after.<br />
I’ve never had a job<br />
where your day is full, it’s busy,<br />
the time goes fast and at the<br />
end of the day you’re physically<br />
tired but mentally you’ve still got<br />
energy left to do things outside<br />
of work.”<br />
The apprenticeship is three<br />
years long and along with the<br />
practical work and hands-on<br />
learning there’s also a study<br />
component for a qualification in<br />
horticulture.<br />
“I’m learning a whole new set<br />

coming together to enjoy the<br />
warmth of family, friends, and,<br />
of course, food. With so much<br />
delicious food, leftovers are<br />
inevitable — but don’t let them<br />
go to waste!<br />
Turning holiday leftovers into<br />
fresh, exciting meals is easier<br />
than you might think.<br />
With just a few additional<br />
ingredients, you can transform<br />
leftover meats, veges and<br />
desserts into completely new<br />
dishes. Here are some ideas:<br />
Meats<br />
Leftover cooked meats and<br />
fish are incredibly versatile and<br />
can be reinvented in various<br />
ways.<br />
Try shredding roast meats<br />
and sandwiching it between two<br />
tortillas with cheese to make<br />
a quick, cheesy quesadilla. Or,<br />
dice up the ham and toss it into<br />
a frittata with extra veges for an<br />
easy breakfast or lunch.<br />
Sausages are great sliced<br />
and added to pasta or used as<br />
pizza toppings, while flaked fish<br />
works well in a creamy fish pie<br />
or mixed with mash to make<br />
fish cakes.<br />
Salads<br />
Leftover salads can be turned<br />

Decide on the New Zealand<br />
cheese you want to use and buy<br />
enough for the cheeseboard -<br />
and if you’re sneaky, a week’s<br />
supply of delicious leftovers.<br />
We’ve used a fabulous<br />
selection of cheeses on our<br />
board. Of course, you can use<br />
larger pieces and less variety,<br />
but remember to mix up the<br />
varieties to provide flavour and<br />
texture.<br />
Texturally, three kinds of<br />
cheese is a good guide - hard,<br />
medium and soft cheese will<br />
enthral every cheese lover. Three<br />
different cheese styles give great<br />
contrast.<br />
Gather<br />
Gather interesting local foods<br />
to enhance your cheese. You can<br />
accentuate the flavour in cheese<br />
or choose a contrasting flavour.<br />
For example, pair a sweet,<br />
nutty sheep milk cheese with<br />
walnuts, hazelnuts or candied<br />
nuts. A goat-milk cheese<br />
with wonderful salty notes<br />
will contrast deliciously with<br />
something sweet.<br />
The layout<br />
Begin laying out your<br />
cheeseboard by placing<br />
small dishes and bowls for<br />
accompaniments such as olives,<br />
chutney, relish, sauces (we’ve used<br />
a red onion agrodolce) or honey<br />
on the board or platter, then<br />
arrange the cheese.<br />
Consider grouping flavours<br />
to match the cheese. Bunch<br />
individual foods together – they<br />
will appear more luscious and<br />
tempting.<br />
Remember bringing cheese to<br />
room temperature is essential to<br />
give the best eating experience.<br />
Up to four hours is generally the<br />
recommended time, except fresh<br />
cheeses where 30 minutes is plenty.<br />
The board or platter<br />
Choose a board or platter that<br />
will hold a good selection of food.<br />
Think about the number of people<br />
sharing your cheeseboard to gauge<br />
board size. Give texture to the<br />
board before placing cheese and<br />
other food – a sheet of torn baking<br />
paper, scattered fig leaves or<br />
grapevine leaves, when in season.<br />
Knives and spoons<br />
Offer a different knife for each<br />
cheese. This keeps the character<br />
of each cheese as well as saving<br />
guests from continuously passing<br />
one knife around.<br />
Put a small spoon in with<br />
each chutney, relish, olives or any<br />
accompaniment that requires<br />
them. Don’t forget crackers!<br />
Finish your cheeseboard with a<br />
few sprigs or leaves of fresh herbs.<br />
Red onion agrodolce<br />
Ingredients<br />
4 medium red onions, peeled and<br />
cut into thin wedges<br />
2 Tbsp olive oil<br />
2 Tbsp sherry vinegar<br />
1 Tbsp runny honey<br />
a few thyme sprigs<br />
2 Tbsp raisins, sultanas, currants<br />
or chopped pitted prunes<br />
Method<br />
• Heat the oven to 200°C. Put<br />
the onions, olive oil, vinegar,<br />
honey, thyme and 2 tablespoons<br />
water in an ovenproof dish.<br />
Season with salt and gently toss to<br />
combine all the ingredients.<br />
• Put in the oven and bake for<br />
about an hour, until the onions are<br />
tender, adding a little more water<br />
if you think the onions are looking<br />
dry.<br />
• Soften your choice of dried<br />
fruit in enough boiling water to<br />
cover, for about 10 minutes.<br />
• Drain well and stir through the<br />
red onions.<br />
