We've been a fan of Mark Wahlberg since
we first saw his music video for Good Vibrations
and as a model for Calvin Klein
underwear. We knew then that he would
transcend his popstar status as a multihyphenated
brand that we would continue to
see. As he began to make the jump to the
big screen in The Basketball Diaries and
Boogie Nights, we knew that we would
continue to see him taking on additional
cool projects.
Since those early days, we have enjoyed
Mark's range of characters in our favorite
films from Martin Scorsese's The Departed,
Patriot Day, Ted/2, 2 Guns, Transformer
franchise and All the Money in the World.
With the ability to oscilate between dramatic
and comedic roles, Mark has proven
to be a powerhouse and received A Best
Supporting Actor Oscar for his role in The
Departed. He has been equally as dominant
behind the screen as an Executive
Producer of HBO's Entourage, Ballers, Mc-
Millions, Boardwalk Empire, How to Make
it in America, A&E's Wahlburgers, USA's
Shooter (which he was the main character
in the movie version) just to name a few.
We know him to be a man who has a work
ethic and commitment to all of his projects
whether it's an upcoming role, as an entrepreneur,
his passion for his family and his
ability to get up early to get his workout
in so that he is in shape for whatever life
throws at him.
We're excited to have Mark as the cover
for this month's issue where he shares his
words of wisdom that he has learned as he
navigates life and the business. He shares
how he continues to optimize his efforts,
how he approached his roles, his upcoming
film Arthur the King, his apparel brand,
MUNICIPAL, and Wahl Street on HBO Max.
ATHLEISURE MAG: When we look at your
career as an actor, producer, entrepreneur
and investor what has been your mantra
as you navigate these areas?
MARK WAHLBERG: Just get going. So
many people get stuck over thinking
whatever it is. But the key is just to get
going. Any momentum is better than
no momentum.
AM: You are known as a man with a
number of optimized habits. What’s
the best way that one can approach
that?
MW: Get into a routine that allows you
to be the best version of yourself.
AM: What’s the first 3 things that you
do in the morning when you wake up?
MW: Pray. Then eat and workout.
AM: Obviously, you’re in great shape
and we know that you get up pretty
early to get your work in. What is the
simplest, but most effective piece of
workout equipment that you own?
MW: That’s got to be my PowerPlate
Pulse. I feel like I have one in every
room in my house. Soreness goes away
in just a few mins.
AM: You have been in a number of our
favorite movies, from Boogie Nights,
The Departed and Transformers franchise.
What has been the most physically
taxing role that you’ve played on
screen?
MW: There are so many because I love
the physical aspect of some roles. People
pushing themselves to the limit.
The Fighter, Lone Survivor were like
that. And my new movie I just finished
shooting, Arthur the King, does the
same.
AM: Which role that you’ve played —
Tommy Saunders (Patriots Day), Marcus
Luttrell (Lone Survivor), Mike Williams
(Deepwater Horizon) — inspired
you most personally?
MW: They’re all so different but the
one thing that they have in common
was they are all real people committed
to something bigger than themselves.
That’s as inspiring as it gets.
AM: When you began as an entrepreneur,
what was the best piece of advice that you
received?
MW: Things never go exactly as you
planned. But if you’ve put a great team
together, and are persistent, you’ll find
creative solutions together.
AM: Since last Oct, we became aware of
your fashion brand MUNICIPAL and included
it in our cover shoot with EDM DJ/producer
duo SOFI TUKKER as well as in our
cover shoot with Twilight's Peter Facinelli.
We love that the line takes you from day to
night. What’s your go-to pieces of MUNIC-
IPAL gear?
MW: SuperBlend tees, Sport Utility Jogger,

AM: So what’s your favorite new discovery?
MW: MUNICIPAL SuperBlend tees. I live in
these things.
AM: When you’re not on set, brokering
your deals or thinking of your next project,
what is your ideal day?
MW: Spending time with my family.
AM: We love your commitment to your
health and fitness, but when it comes to a
splurge are you drinking wine, beer or liquor?
MW: Wine
AM: When it comes to athletes, who influenced
you the most?
MW: I grew up in the 80’s so it was Larry,
Michael, and Magic.
AM: So what music are you listening to
right now?
MW: Lately I’ve been watching a bunch
of old school hip hop videos with my kids.
The stuff holds up!
AM: We’re all streaming a number of
shows on various streaming platforms.
Any suggestions on what we need to be
bingeing?
MW: How about HBO Max? Netflix is
Spenser Confidential. And on HBO Max,

TV Personality and journalist Catt Sadler
has been noted by the LA Times as one of
the Top 10 Next Broadcasters of Our Generation.
Her work in front of the camera
has included talking with a wide range of
celebs, personalities and athletes to give
us the inside scoop. She launched and hosted
E!'s The Daily 10 as well as appearing in
a number of the networks' shows from E!
News, Daily Pop, E! News Weekend to E!
Live from the Red Carpet for a number of
years.
Since her days at E!, Catt has also focused
on the importance of empowering women
and encouraging them. She navigates
these areas via her site, The CattWalk. She
dug deeper through her succcesful podcast
NAKED with Catt Sadler. We caught
up with Catt to talk about her career, the
importance of wellness and self-care in
her life, why she encourages others to embrace
this as well. and her latest podcast
show, It Sure is a Beautiful Day
ATHLEISURE MAG: We have always been
a fan of yours. When did you know that
you wanted to work in the entertainment
industry as you have worn so many hats
from being on TV, being a podcast host
and producer!?
CATT SADDLER: My fascination with the
entertainment industry was two-fold. I
grew up in the Midwest watching a lot of
tv and going to the movies dreaming of
La La Land. I almost studied theatre in college,
but was also always driven by people’s
stories. I ended up studying broadcast
journalism and then realized, with
the help of my first agent, that I could engineer
a life in entertainment television. It
would be very competitive and was certainly
a longshot (back then no one had
iPhones), but as fate would have it I landed
my first fulltime tv reporting job in San
Francisco at the WB network when I was
22 years old. With more than two decades
of hosting and reporting under my belt,
producing was a very natural extension
of that. The podcast space is a very freeing
medium with less structure and rules
– not to time, anything goes – I love the
rawness of it. I have complete creative
control of the content, my guests, the format.
I’ve never had more fun.
AM: What does self-care mean to you?
CS: Self-care means so many things to me.
Of course it’s about treating myself to
fresh flowers and a massage every now
and then. But it’s really about the balance
of mind, body, and spirit. It’s doing my
best to not neglect any of these areas in
my life. Understanding that, and tending
to each of them is crucial to my overall
wellness!
AM: How important is it to commit to selfcare?
CS: The actual commitment to self-care is
the most important piece. It’s a discipline
that creates the best balance and peace
for me. Consistently incorporating movement
or exercise into my days, making
time to write in my gratitude journal, and
continuing my ongoing therapy. Fueling
my body with food that makes me feel
better, not worse, is also super important.
Too much of a good thing is never actually
good. Even spicy margaritas.
AM: What are your wellness goals for 2021?
CS: I’ve returned to hot yoga which is so
good for us! Sweating is such a necessary
release of toxins and stress. This practice
has really become my church in many
ways. I want to continue to get stronger
and more flexible, while also increasing
my supplements and vitamins. As we age
we need all of the help we can get! I load
up on superfoods and elixirs, collagen
powders, probiotics, and more most days!
AM: By engaging in self-care, what have
you learned about yourself?
CS: When we are kinder and more compassionate
towards ourselves, we are
better able to contribute more fully and
generously to others. I’m a better mother
and friend when I’m taking good care of
myself.
AM: Many people try to peg their self-care
moments to a particular day like on Sunday.
How do you make sure that you do
this more often than one day a week?
CS: I love a ritual and while I understand it
might be good to put self-care on the calendar,
I actually think it’s the little choices
each day that matter the most. Even if it’s
waking up and drinking a full glass of water
or committing to five minutes of meditation.
The small acts of self-care accumulate
and have lasting effects.
AM: You have partnered with Hims and
Hers. How did this partnership come about
and what is the synergy between you?
CS: Well firstly, who doesn’t love JLo? I
saw she was an ambassador for the brand
and it wasn’t long after I started teaming
up with them. I was using an assortment
of their products. I appreciate that they
cover the scope of beauty and wellness
with effective products all in one easy to
use and understand online destination!
AM: What are your quick tips to having
glowing skin?
CS: It all starts with fresh clean skin. I like
using a gentle cleanser and moisturizer
to keep my skin balanced. Hers Deep Sea
Cleanser and Tidal Wave Moisturizer have
been working wonders. Especially hydrated
skin is critical so beyond drinking a ton
of water every day I also use Hyaluronic
Serum from Dr. Barbara Sturm. Another
serum that makes my skin feel radiant is
111Skin’s Rose Gold Radiance Booster. As I
get older, it’s also important to make sure
my foundation isn’t too matte or drying. I
sprinkle in MARA Universal Face Oil into
my foundation to make sure I create a
dewy youthful look.

with Perry + Etty Lau Farrell
We had the pleasure to connect with rock
powerhouse couple, Perry Farrell and his
wife, Etty Lau Farrell. Perry is known as
the Godfather of Alternative Rock and is
noted as one of the people to push the
genre forward. From Psi Com, Jane's Addiction,
Porno for Pyros and his solo projects,
this frontman can do it all from lead
vocals, writing and more. Etty is a classically
trained dancer who toured with Ricky
Martin, Madonna, Bon Jovi and joined the
Jane's Addiction tour in 1997. She would
go on to being a bandmate and being in
a number of projects with Perry including
being a vocalist in their band, Satellite Party
and Kind Heaven Orchestra and being
on the board of Lollapalooza.
We caught up with rock's glam power
couple to find out about their love for
performing, how they work together, Lollapalooza,
and Perry Farrell: The Glitz; The
Glamour box set.
ATHLEISURE MAG: Perry when did you
first fall in love with music and when did
you realize that you wanted to perform?
PERRY FARRELL: I was so fortunate to be
able to be introduced to so many artists
by my big brother and sister. He turned
me onto The Rolling Stones, The Beatles,
Jimi Hendrix and The Who which was my
starting point. My sister loved fun and
soul so I got to know about James Brown,
Sly and the Family Stone and George Clinton
as well as the Funkadleic - loved that.
I didn't really think about performing until
much later in life in my early 20s! I felt that
I had the frame for it as a skinny guy and
that I could be a frontman. I knew that I
could dance, but I had to have that voice.
So, I taught myself to be a lead singer! I
would look into the mirror and imitate
Mick Jagger and David Bowie. I wanted
to create music that people could feel so
I had my mixer, headphones, microphone
and I would write songs.
AM: Etty, what was your journey to coming
into music and being a vocalist, dancer
and songwriter?
ETTY LAU: I had been dancing my entire
life as I am a classically trained dancer as
a ballerina! I was born in Hong Kong and I
went to the Royal Academy of Dance and
when I moved to Seattle while being in
a dance studio there, I also attended the
Pacific Northwest Ballet and the Cornish
College of the Arts. I came down to LA on
a scholarship at 19.
We met in 1997 when Jane's Addiction
was going back out on tour and I was on
tour with them ever since.
ATHLEISURE MAG: Athleisure Mag is cofounded
by a couple so we always like
talking to couples who work together. You
guys have worked together for decades
from Jane’s Addiction, Satellite Party and
your latest project, what is that like and
how do you navigate the dynamics of work
along with your coupleship?
ELF: We have a bit of an odd codependency
with one another. So we share everything
- a car, a stage, a hotel room.
PF: Even a toothbrush!
AM: Oh my!
ELF: No not a toothbrush, that's gross ha!
AM: Definitely have to have your own on
that one haha!
ELF: When it comes to working together, I
think of Perry like my boss in many ways.
I know that when I'm on tour dancing for
Jane's Addiction, he is the boss. I'm on the
board of Lolla and I do a lot of the logistical
things and make recommendations -
but he is the boss.
PF: Absolutely not. I am not your boss, it's
a partnership. When we work together,
there is a give and take and it's all about immersing
yourself and bringing all of these
experiences together to make something
meaningful and heartfelt.
ELF: We know our strong suits and we're
able to play off of one another. What he
has, I may not have and what I have he
may not have - but together, it works as a
true partnership! I know that he respects
my opinion, but the final word is with him
- I can only advise.
AM: The first music festival that we remember
going to was Lollapalooza in 2007 and
again in 2008. We saw Satellite Party, Daft
Punk, Kanye, Lady Gaga - so many great
acts and series of days. It literally started
our path to attending festivals.
Like many this past year, it has been insane
and between lockdowns, quarantines and
pauses, plans were in the air and there
were pivots. You guys had Lollapalooza virtually,
but with vaccines being available,
are there plans to resume this festival this
year in Chicago and or global cities?
PF: Lollapalooza is a microcosm of music
that has a massive amount of people that
enjoy music over a period of days in various
cities.
Because of COVID, we did a digital platform
in 2020. We did 4 days online and reunited
Porno, Janes and had people play
live. It was fun because we went into archives
and it was a great way to give everyone
hope and something to enjoy.
If we can all stay on course, getting vaccinated,
socially distant and mask up – maybe
please God, we’ll get to go to Chicago
in early August with an audience in one
capacity or another for Lollapalooza – not
a large one but maybe a half capacity. We
can only respond to the people and what
the city/government professionals say
that we can do.
I listen to Joe Biden when he says that July
4th could be when we have our first small
celebrations, then I’m going to say, that
mine will be in August and I want to have
it in Chicago. So I’m planning for a party
in some kind of capacity for Kind Heaven
Orchestra to come out there.
AM: Defintiely hoping that we can go back
to in person events! The fact that you guys
use your platform to continue to drive the
point home that wearing masks is a must
and that they need to get vaccinated! It's a
shame that it's become so politicized!
PF: Why do you think it's politicized?
AM: I'm not sure why! I think that wearing a
mask is just being a good citizen and keeps
yourself as well as those around you safe.
It's such a small effort with a great impact
to show that you're doing your part. The
more we're able to do it, engaging in social
distancing and safe behaviours, then we
can begin to embrace the things that we
have done before. It may be in a different
way, but baby steps!
ELF: Without a doubt. I mean we have ideas
of things; however, it's based on a number
of things and ultimately, it's based on
what the city will allow. But we're hopeful
so keep checking our site and our socials
for the latest information on that!
AM: One of the things that I have loved
about your music Perry is that it has such
a jazzy element to it. My great uncle was
tenor saxophonist Joe Henderson who
was with Blue Note Records and was part
of the Hard Bop era.
As a power duo, you guys formed The Kind
Heaven Orchestra. Can you tell me more
about this and this 9 piece ensemble?
PF: Thank you yes and that's phenomenal!
I love jazz, I love Duke Ellington, Miles Davis
- their sound as well as their sense of
style is just really something that I vibe
with - that was great music.
The Kind Heaven Orchestra is an art col
lective and a music collective - an installation.
We install for more than one day
and I want to keep that going with that
intimate scenario to see where it goes. Of
course it can be blown up too!
Before COVID, we were performing and I
look forward to getting back to it when
we're able to do in person events again!
AM: Your box set, Perry Farrell - The Glitz;
The Glamour is a 35 year retrospective of
your solo and artistic explorations outside
of Jane’s Addiction and Porno for Pyros.
With 68 tracks, vinyl, blue ray discs and
remixes with Maceo Plex, Groove Armada,
UNKLE and Hyper to name a few, photos
and art - it's an epic and stunning box
set to have. Why did you want to embark
upon this project and how long did it take
to put together?
ELF: We put it together during quarantine.
It became our project!
AM: Wait, you just decided to put out this
massive retrospective? Some people were
making sourdough and you guys decided
to showcase history!
PF: I tend to look forward and don’t look
back. I like to keep it fresh. I had music all
over the universe from Porno for Pyros
stuff to Psi Com stuff and solo stuff. I had
tracks floating around like they were comets
and stars. I wanted everything in one
place and to have my body of work. With
the Internet, I love that you have a place
where you can have all of your history and
I had boxes of photographs which every
picture tells a story!
ELF: It was going to a 50 page autobiography
with photos . It's all vinyl and all
solo work - so not Jane's Addiction. So it
starts with Psi Com, Satellite Party and
Kind Heaven. We have a few new songs
in there too. It ended up being 100 pages
with photos and about his childhood.
PF: There are 2 songs in the boxed set with
Jim Morrison. I received an unearthed recording
of The Doors’ Jim Morrison, written
and recorded with Starcrawler. I had
one of the tracks mixed by a Palenstinian
woman as well as an Israeli man who created
mixes that are in the box set.
AM: When you look at 2020 and as we
continue into 2021, there was a lot going
on from COVID-19, the election, social justice,
facing the need to talk about equality

Asian Hate – how are you guys utilizing
your platform to lend your voices to this?
ELF: A lot of people don't know that I was
born in Hong Kong and I know growing up
when I came to the states, I had instances
of prejiduce and scary situations, but it is
nothing like the trauma that is going on
right now. We have to educate and bring
awareness to what is happening and to
speak out!
There are so many things that I want to
do to continue to let people know about
this. I'm even educating myself as well.
When I open my mouth to speak, I'll know
what I'm talking about. I think the more
we learn about this topic, the more we
learn about what we don't know.
AM: Couldn't agree more. It's so important
to realize that this is going on and then
to be an ally! As a Black Co-Founder whose
boyfriend is Italian American/Jewish, he
finds it important to not only be aware of
what's going on but steps in to be an ally. I
think this is so important when it comes to
underrepresented groups whether we're
talking about Asian, Blacks, LGBTQIA+.
This is one of those issues that we need get
people to realize that we will not continue
to allow these horrific activities to take
place!
PF: Absolutely. We need to stand in solidarity,
love each other and to unite.

TASTE OF DERBY
with Chef David Danielson
Known as the greatest sport in 2 minutes,
The Kentucky Derby takes place the first
Saturday in May. Although last year's Derby
was postponed until the fall of 2020, all
eyes are on Louisville this year. The Kentucky
Derby consists of a number of events
that lead up the big race. Derby Week and
Derby Day is filled with races, fun events,
cocktails and food.
We caught up with Executive Chef David
Danielson who has consulted on numerous
large scale special events throughout the
world including Super Bowl XLV, U.S. Open
Tennis tournament, Summer Olympics in
Beijing 2008, Winter Olympics in Vancouver
2010, Winter Olympics in Sochi in 2014,
Summer Olympics in Rio de Janeiro in 2016,
Lollapalooza, was the personal chef to The
British Consulate General and has lended
his expertise to PGA Tour events and
the Grammy Awards. He is the co-author
of The Bourbon Country Cook Book: New
Southern Entertaining: 95 Recipes and
More from a Modern Kentucky Kitchen. In
addition to a number of appearances on
air nationally and locally, he was a celebrity
judge on BRAVO Season 16's Top Chef.
Chef Danielson has been at Churchill Downs
for 10 years. We caught up with him right
before Derby Day to find out about his culinary
background, why the Derby is so important,
what the official menu is and how
you can make it at home during your viewing
parties if you won't be on site this year
for the races on May 1st.
ATHLEISURE MAG: Can you tell me a little
about your culinary background and how
you came to Churchill Downs?
EXECUTIVE CHEF DAVID DANIELSON: I've
been here for about 10 years and am classically
trained in fine dining as my career
began at Dumas Pere L’Ecole de la Cuisine
Francaise in Chicago and continued at the
Ecole Hotelier Tain l'Hermitage in France.
I continued working along with the industry's
most renowned chefs in North
America, Europe, the Caribbean, Asia and
South America.
Before joining the team here at Churchill
Downs, I was an Executive Chef at Rockefeller
Center New York with Restaurant
Associates and was Executive Chef of the
United Nations Plaza Hotel in New York
City, the Chicago Ritz Carlton, the Palmer
House Hilton Chicago just to name a few.
When I was in NY, I started doing some
large events and I spent the next few
years doing the Olympics, the PGA, US
Open Tennis and that's when it brought
me here to Kentucky to be the chef at
Churchill Downs. This is my 11th Derby and
it's the most amazing sporting event that
I have ever worked.
AM: Our Co-Founder grew up in Indiana
and went to college at Indiana University
so visiting Louisville regularly in the
months, weeks and days leading up to the
Kentucky Oaks and the Derby was filled
with excitement! As the Executive Chef at
Churchill Downs, what is Derby week like
for you leading up to the big race typically?
EC DD: You know, like everybody else, it
builds up and there is a ton of excitement.
For us, it's lots of work. We have thousands
and thousands of people coming
through our doors. So we work, not only
for months in planning and preparing for
this, but then we get to Derby week and
it's really about production. It's about getting
everything organized and getting everything
together. It's about getting with
the fans and really creating an amazing experience
for the whole week but certainly
leading up to Derby day on Saturday!
AM: It's been quite a year, but with more
people getting vacccines, we're seeing
things opening up again like the upcoming
Derby. What is it about the Derby that is
such a great an event?
EC DD: The thing here is that it's a beautiful
day out here. It's a combination of
one amazing racing, it's the most exciting
2 minute sport plus amazing food, great
drinks, fashion and you know you can feel
the energy when people come in here. Everyone
is watching the races and then you
get a break. You get to make new friends,
see old friends. It's really a day long party
and a day long celebration. That's what
really makes it unique for us.
AM: For those who will watch from home,
what is the official meal for this year's derby
and how can we recreate it at home?
EC DD: Every year we write a new menu
and change it up. We try to give a new
experience every year. One of the things
that's so exciting this year is our partnership
with Vidalia Onions. They are official
partners of The Kentucky Derby and they
are on our menu. We're featuring several
of their onions in our recipes both here
on our official menu as well as recipes that
we have created for people to be making
at home when they are watching the Derby.
So that's a lot of fun for us.
AM: What is it about Vidalia onions that
we should know about as it seems that
much like Champagne is designated by its
region, the same is true of this varietal.
EC DD: Absolutely, Vidalia Onions only
come from 20 counties in Georgia and it's
really a combination of the weather and
the soil that makes these onions so unique
and so special. They have a really great
sweetness and crispness. They are really
unique and different from any kind of
onion. We love to showcase these amazing
products. We also like the seasonality
of it. They really come into season in the
middle of April and then you see them in
the grocery stores and they really available
until about August.
AM: What are some tips that you can provide
in order for those that are holding
viewing festivities at home?
EC DD: One of the things that we're doing
here is that we have several different
dishes. We have chicken, a sauteéd chicken
dish with Vidalia Onions and mushroom
sauce which is really easy to make at
home. But I love the versatility. We've got
a black eyed pea salad with some pickled
Vidalia Onions. Then we've turned it into a
chutney with some roasted down peaches
putting that down over some barbecue
pork sliders. There are just so many things
that you can do with it that that is one of
the things that we do when you're putting
recipes together and looking at these
menus, you're trying to find those ingredients
that really stand out and make a
difference when people bite into that
and taste it. They say, "wow that's really
something different and something that
we don't see everyday." For us, that's the
fun of being able to really showcase this
type of product.
AM: These dishes sound great and whether
it's making the official meal served at-
The Kentucky Derby or the one for those
that are viewing at home, where can we
get those recipes?

all of these dishes as well as some other

or those that are meant for viewers at

AM: What is your beverage of choice after
completing a successful Derby week of
events?
EC DD: The first one that I can get my
hands on haha! It's a long week. I'm usually
pretty careful as we work about 20
hours a day all week. So, when it's finally
over Sat. night, I get home and I usually
pour myself a couple fingers of bourbon
haha.

What New Yorkers Need to Know
About COVID-19 Vaccines
New York City is committed to keeping everyone safe and healthy by ensuring that access to
COVID-19 vaccines is fair and equitable. COVID-19 vaccines will likely be available for most
New Yorkers by mid-2021. Some people, such as health care workers, essential workers who
cannot separate from others, and older adults and other people at increased risk of severe
illness from COVID-19 can currently get vaccinated.
When you get vaccinated, you are helping to protect yourself and your family and friends.
You are also helping to make your community safer. We know New Yorkers care about their
communities, including health care workers and small business owners.
Do the vaccines work?
• Two COVID-19 vaccines (Pfizer-BioNTech and Moderna) have been approved for emergency
use by the Food and Drug Administration (FDA). In clinical studies, both vaccines were more
than 94% effective at protecting participants from COVID-19.
Are the vaccines safe?
• Yes. You cannot get COVID-19 from the vaccine.
The vaccine does not contain the virus. It teaches your body’s
immune system how to fight the virus, so it can fight the virus
if you are exposed to it.
• The COVID-19 vaccines have gone through large clinical
studies involving tens of thousands of people of various ages,
races and ethnicities. The evidence from those studies was
closely reviewed by the FDA and independent organizations.
• Researchers have been working on vaccines for coronaviruses
for years, so they did not start from scratch.
Are there side effects?
• It is normal to experience side effects after the first or second
dose of the vaccine. Common side effects include soreness
in the arm where you got the shot, headache, body aches,
tiredness and fever.
• If you have any questions or concerns, call 311 or talk to
your health care provider.
• Side effects can be unpleasant, but getting vaccinated
helps protect you may help protect and other New Yorkers.

Soogil
This month, we're enjoying French-Korean
Soogil located in the East Village. Owner/
Chef Soogil Lim talks with us about his
restaurant, signature dishes, cocktails that
we must try and how he has found additional
skills as he has navigated the pandemic.
ATHLEISURE MAG: Chef Soogil Lim, tell us
about your culinary background.
CHEF SOOGIL LIM: I was born and raised
in South Korea and was originally going
to major in Biology. I became interested
in the culinary world when I went into a
restaurant and saw a sign that said “Make
People Happy.”
It prompted me to research culinary education
and enter the Culinary Institute
of America in Hyde Park, NY. Upon graduation,
I began my training in French cuisine
at Restaurant Daniel, one of New
York’s most acclaimed fine dining restaurants.
Through my hard work and dedication,
I was able to move up the ranks
and become the first Korean Sous Chef in
the restaurant’s history, which I am very
proud of. After working for 7 years under
Chef Daniel Boulud (three as Sous Chef)
and honing my French technique, I became
Executive Chef at the modern Korean
restaurant Hanjan, where I ran the
kitchen for 4 years. For my own restaurant,
which opened in 2018, I decided to
blend the two culinary backgrounds I
love: French and Korean.
AM: What led you to creating your
French-Korean restaurant, Soogil that is
located in the East Village?
CHEF SL: For my restaurant Soogil, I wanted
to combine my Korean background
with my French culinary training to create
a harmony of the food cultures of France
and Korea. The East Village is home to
restaurants serving cuisines from various
countries. Korean, Japanese and Chinese
restaurants are concentrated on
and around St. Mark’s Place, and Indian
restaurants lined up along 6th Street. The
Momofuku em pire began as a small noo-
dle bar in the East Village, too, and there
are also several Michelin-starred restaurants
- with such diverse cuisines and culinary
styles, it’s a great area for dining
out and for Soogil to be part of.
AM: What culinary synergy is there between
French and Korean food that really
plays well together?
CHEF SL: I grew up in Korea and came
to America to learn French cuisine. The
keyword of Korean food is fermentation
- soy sauce, gochujang (red hot pepper
paste), soybean paste, and kimchi are all
fermented. And the keyword for French
cuisine is technique. Classic techniques
that have been developed after the
French Revolution form the basis of today's
French cuisine. Since Korean cooking
is based on fermented food, which
is closely related to healthy eating, it has
been rediscovered and popularized by
chefs but not as refined technique-wise.
French cooking techniques help me elevate
the food and take it to another level.
AM: When did you launch and what can
guests expect when they come to dine at
Soogil?
CHEF SL: We opened Soogil in January
2018. At first, we started with small
plates and more casual food and then
added a tasting menu showcasing my
own creative style of cooking. During
the pandemic, there have been many
restrictions on operating restaurants,
so right now we are focusing only on
our 5-course tasting menu (some of the
tasting menu dishes are also available
a la carte). The menu is seasonal, and
we also offer special tasting menus for
holidays like Thanksgiving, Christmas,
Mother’s Day, etc. that have been very
popular.
AM: Can you talk about the aesthetics
of your restaurant for those that will be
dining inside?
CHEF SL: When you open the large or-
ange French door and enter Soogil you
will first notice how cozy, stylish and lovely
the space is. There is a striking light fixture
with round glass spheres. The tables
and chairs are all made of oak with a light
finish, as is our bar. On the wall, there
are three original works by artist Suzy
Taekyung Kim. The title of this group of
paintings is “Dream Incubator” and the
artist says of them: “With our busy, hectic
lives, we tend to miss the moments
of pure happiness and hope. This series
is a gentle reminder for us to pause, look
up, keep your silver lining moments and
dream on!” I’d like to offer such moments
of pure happiness to guests who visit our
restaurant in their busy daily life as well.
AM: When creating this menu, can you tell
us about where inspiration for your dishes
came from?
CHEF SL: The basis of my inspiration is
memories. I remember the flavors, taste
of specific dishes that created good memories
with my family or friends when I
was a child. The food that’s part of those
memories is the most inspiring element
for creating my own dishes.
Inspiration is everywhere in my daily life.
I love traveling, eating, dining and tasting
local fruits and vegetables. When I travel
anywhere, I love to go to the local supermarket.
Also, in restaurant kitchens
in New York, chefs of various ethnicities
work together. They look at the same ingredients
but look at them differently
- and often times, the inspiration comes
from working together and combining
different ideas.
AM: What are 3 appetizers and/or desserts
that we should try at Soogil?
CHEF SL: Sunchoke Velouté highlights the
natural sweetness of sunchoke, set off by
tangy goat cheese, crispy brioche and bacon.
The Scallop is a complex dish featuring sea
scallops crusted with a blend of gochujang
(traditional Korean red chili paste), bacon,
garlic bread crumbs and butter on a skewer
alternating with roasted salsify over a
salad of frisee, blood orange and Korean
pear for a touch of crunch.
Jenga Tower is our signature dessert and
a lot of fun. It’s composed of “churros”
stacked on top of one another like a Jenga
Tower and topped with black sesame gelato
and sweet Korean seven grain powder
sprinkled on top. The slightly chewy
interior and crunchy, crisp exterior work
well with the gelato and you can pull out
the sticks as if playing Jenga and dip them
into the gelato – it’s a playful way to finish
your meal.
AM: What are 3 signature dishes that you
suggest that we should enjoy?
CHEF SL: Nurungji Gras is my signature dish
that combines foie gras, one of France’s
finest delicacies, with one of Korea’s beloved
traditional dishes, nurungji, the
thin crust of scorched rice at the bottom
of the cooking pot after rice is cooked.
The golden-brown nurungji is served in a
mini skillet, layered with shaved brussels
sprouts, caramelized onions, poached
peach and pickled beech mushroom and
topped with sauteed foie gras. We pour a
soy mushroom sauce tableside for a special
finishing touch, which guests love.
The dish offers a wonderful interplay of
flavors and textures with the crispy, sticky
and nutty nurungji and the rich buttery
foie gras.
Uni Bowl combines sea urchin and smoked
salmon roe over rice flecked with Korean
seaweed. In each bite you get the rice,
uni, roe and wild seaweed (gamtae), getting
all the textures and flavors together.
The Short Rib is my take on the traditional
Galbi, Korean grilled beef short ribs. With
its tender meat, well-seasoned marinade
and touch of sweetness, it is a widely
loved Korean BBQ dish. It’s my favorite as
well, I marinate the short ribs in a blend of
soy sauce, Korean pear, onions, and garlic.
They are then grilled and served with
sweet potato puree and pickled chante-
relles.
AM: What are 3 cocktails that you suggest
we should have when visiting?
CHEF SL: Yuzu Spice made with sake infused
with 7 spices, yuzu and lime is
Soogil's signature cocktail. It has a kick to
it thanks to the spices and pairs well with
the food.
French 108E is a blend of the Korean
spirit soju, elderflower, lemon, sparkling
wine, homemade omija syrup. Also called
schisandra or magnolia berry, omija is
used in traditional Korean medicine because
of its antioxidant properties.
Rosso Negroni - licorice meets Campari
for a bittersweet drink made with licorice
infused soju, Campari and sweet vermouth.
AM: What vegan, vegetarian and gluten-free
friendly items do you have?
CHEF SL: Due to pandemic limitations and
the size of our kitchen, we are only able
to accommodate vegan and vegetarian
requests with some advance notice - we
are serving the tasting menu right now
but are happy to adjust it for any requests
with one day notice.
AM: During COVID-19, many restaurants
have had to pivot on how they serve the
guests and neighborhoods with pickups,
delivery, reduce indoor dining, outdoor
dining etc – what have you been doing
during this time?
CHEF SL: The pandemic opened doors to
various roles I hadn’t known before as my
life as a chef had only consisted of cooking.
This year I also became a carpenter
building our outdoor dining structure, a
dishwasher (keeping six feet apart was
impossible in our small kitchen) and a delivery
man. With fear over COVID-19, many
people stayed home. I knew that many
needed meals and I would have to get
past my own fears. When we had to shut
down the restaurant in March, my wife
and I launched a new concept, the virtual
Chan by Soogil, offering traditional
Korean home-style meals and kits in
a pivot from our original French-Korean
cuisine and tasting menus to more
comforting home-cooking.
As outdoor dining reopened, we were
able to bring back my signature tasting
menu. However, some people still
preferred delivery, even for the tasting
menu. While initially skeptical, I
realized how meaningful it would be
for our customers to have these tastings
delivered. I had never imagined
delivering tasting menus, but I’m happy
I can bring our customers some joy
during this time.
I am forever grateful to those who
have stuck with us through this - they
are the reason I can stay in the kitchen
and continue to be a chef.

LITTLE CHEF LITTLE CAFÉ
Little Chef Little Café opened Nov
2019 and is known for an extensive
menu that rotates frequently. Customers
can enjoy a mix of healthy comfort
food and baked goods with salads,
soups, smoothies, bowls, rice bowls,
waffle sandwiches, toasts, pastries
and Filipino inpired tacos.
In addition to coffee and tea, they have
special herbal teas too, like a house
brewed ginger tea made with fresh
ginger that is pressure cooked, blended,
and strained. Lemon juice and
honey are added and this is a version
of a Filipino Salabat. It's served hot or
iced and is great since ginger is great
for cleansing, healing, and has many
health benefits.
For those that are vegetarian or vegan,
there are options on the menu for
this as well. One of the favorites is the
Anti-ox Salad with kale, mixed greens,
red cabbage slaw, seasonal roasted
vegetables, hemp seeds, and raw pepitas.
The dressing is house made from
basil, cilantro, scallions, garlic, dates,
lime juice, and oil. Customers really enjoy
these dressings! All dressings are
made in house and packed with flavor.
There is always a vegan soup like
the Hearty Lentil or Sinigang, a Filipino
tamarind-based soup with tomatoes,
potatoes, tofu, green beans and
bok choy. And for their Filipino tacos,
which are offered individually at the
café or in DIY kits to go (simple and
fun to make at home: 3-20 tacos with
fried wonton shells or classic gluten
free corn tortillas and spicy pickled
pineapple), they offer a vegan filling:
Veggie Ginataang, vegetables sautéed
in coconut milk, along fillings like Pork
Adobo or Chicken Adobo.
