Superb seasonal seafood

LICHFIELD CHEF JACK DUBBERLEY, CHEF-PATRON OF FINE DINING EXPERIENCE DUBBERLEY

DELICIOUS, TAKES US THROUGH WHAT’S GOOD TO COOK WITH, EAT AND FORAGE RIGHT NOW.

THIS MONTH, IT’S THE SEASON FOR SEAFOOD AS LANGOUSTINES TAKE CENTRE STAGE.

Dublin Bay prawns, Norway lobster or scampi

- however you know them, langoustines are one

of the most important, yet underrated seafood

available on these shores. And right now, these

glorious crustaceans are at their very best, says

Lichfield chef Jack Dubberley.

“Scottish langoustines are some of the best you

can get in the world, in my opinion, and they’re

bang in season right now, ” says Jack. “We use

Keltic Seafare as our supplier. They supply the

finest live shellfish to top restaurants around

the UK, and the great thing about them is that

anyone can go and buy from them, so you can get

the same produce used by Michelin-starred chefs.”

Keltic Seafare sustainably source their high quality

shellfish from the crystal clear waters of the northwest

Highland coast of Scotland.

“Everyone wants scallop and lobster, both of

which are very expensive and difficult to get, but

at the moment the Scottish langoustine in season

is superior to both,” says Jack. “People think that

lobster is the best of the seafood, but langoustines

LICHFIELD CHEF JACK DUBBERLEY

SCOTTISH LANGOUSTINES ARE SOME OF

THE BEST IN THE WORLD, SAYS JACK

offer far better value for money. Lobsters may

look bigger but there are often massive air pockets

under the shell which means you don’t get as

much meat from the body as you might think.

“The only benefit of lobster is that you do get

some meat from the claws, whereas there’s

nothing in langoustine claws, they’re only good for

using to make stock. Langoustines are also easier

to cook; it’s hard to mess them up!”

If you want to give langoustines a try, Jack

recommends plumping for the best available

produce - and that means as fresh as it comes.

“Fresh is best, and the reason you pay more

according to weight from our supplier is because

the langoustines are still alive,” says Jack. “If you

buy from the supermarket you’ll see them in the

freezer, and how many months ago were they

frozen?

“There is, of course, an element of squeamishness

for many people when dealing with live seafood

like langoustines or lobster. I feel the most humane

way isn’t to boil them, but to twist the tail end and

pull it off - it’s quick and effective. You also need

to de-vein the langoustines by removing the black

intestinal tract. Keep the head and claws aside

to use for stock but be careful with your fingers

6

www.jaimemagazine.com

FOOD & DRINK

because the claws can still nip!”

For a show-off dinner party dish, langoustines are

a simple but effective option which are easy to

prepare but will certainly offer the ‘wow’ factor to

your menu.

“Keltic Seafare offers a range of sizes from small to

extra-large, and I’d recommend going for the larger

options and having one per portion rather than

needing several smaller ones,” says Jack.

“Once you’ve removed the head and claws, blanch

the tails in boiling salted water for 10 to 20 seconds,

depending on size - you’re looking for the shells to

darken. Remove them into ice water to refresh then

gently crush the shell to remove the meat.

“Because the tails aren’t cooked at this point they

may curl up so a little trick chefs use is to pop a

cocktail stick along its back to keep it straight.”

The shells, head and claws then go into a 200C

for around 30 to 45 minutes until fragrant and

darkened, ready to use for your bisque.

“When you’re ready to cook your tails, heat a nonstick

frying pan on a high heat - you want it hot but

not smoking so they instantly start cooking but not

burning,” says Jack.

“Add some vegetable oil then put the tail back

side down because that’s the side you want to get

nice and caramelised for presentation. You do 90

percent of the cooking on this side - they won’t take

long, a minute to two minutes depending on size,

until the flesh turns opaque. Just before you turn

them add a knob of butter to the pan until it foams,

then baste your langoustines. Turn over and cook

for 10 to 20 seconds and that’s it. If they’re cooked

properly, the cocktail stick should slide right out.”

Jack suggests serving in a nice bowl of langoustine

bisque, and top with caviar if you’re looking for a

fancy finishing touch.

“You can also finish with some seasonal wild garlic,

perhaps some oil or even some leaves which you

can just throw into your pan with the langoustines

to wilt.

“It’s a great show-off dinner party dish and a

great way to showcase incredible, seasonal British

produce.”

Langoustine

bisque

Serve your langoustines with a rich and

delicious langoustine bisque, which is

simple to make but full of flavour.

“Use a nice deep pan and start with a good

glug of brandy to cover the bottom, then

flambé to burn off the alcohol, making sure

not to evaporate too much of the brandy!”

says Jack.

a spoon. The cream will turn pink with the

tomato puree and the colour from the shells.

If you need to loosen it off, use a bit of extra

cream or milk.

“When you reach the right consistency, strain

it off through a sieve, decant into a container

and cover with a clingfilm cartouche so a

skin doesn’t form.

“Store your bisque in the fridge until you’re

ready to use, then gently reheat before

serving.”

“Add a couple of tablespoons of tomato

puree and cook it out with the brandy -

tomato puree can be a little bitter if you

don’t cook it out, but don’t let it burn.

“Then it’s time to add in your cooked shells,

breaking up the bigger bits of shell to

release the flavour then cover the shells with

around a litre of double cream. I sometimes

add a drop of water too, then give it a good

mix and cook over a gentle heat for 30

minutes to an hour until it coats the back of

A culinary gem

A FANTASTIC FEAST FROM LICHFIELD’S OWN INCREDIBLY TALENTED TWO

MICHELIN-STARRED PAUL PROFFITT WAS ON THE CARDS AT SAUCE SUPPER

CLUB’S LATEST OUTING, AS AMY NORBURY DISCOVERED

The name may not be as familiar as some, but

with two Michelin stars under his belt, Paul

Proffitt is one of Lichfield’s leading culinary

luminaries.

And after a decade away from the city, Lichfield

diners got to experience Paul’s elegant cooking

firsthand at a recent Sauce Supper Club event

at Thyme Kitchen. For two nights only, Paul

delivered an exemplary menu of exquisite

dishes delivered with technical prowess to wow

the discerning dining crowd.

Paul is certainly a chef ’s chef; we spotted

Lichfield’s other Michelin-starred son Tom

Shepherd - whose Twofold Spirits banana

rum featured on the evening’s dessert course

- enjoying a night off the cooking to sample

Paul’s fayre.

Paul started cooking as a child with his nan,

whipping up classics like shepherd’s pie and

apple crumble in her kitchen after school.

By the age of 12 he was making cakes for his

neighbour’s cafe before taking a job there. And

once he set foot inside a professional kitchen, he

never looked back.

Learning his trade at Birmingham College of

THE TRIO OF APPETISERS.

PAUL PROFFITT AT SAUCE SUPPER CLUB.

Food, Paul’s early career took him to Michelinstarred

kitchens all over Europe before

returning home for his first head chef role at

the now-defunct Swinfen Hall. But ten years

ago, in search of a better work-life balance,

Paul and his young family uprooted their lives

to move to Denmark, and the kitchen of Henne

Kirkeby Kro, where during his tenure as head

chef the restaurant gained first one, and then

two Michelin stars.

Paul’s brief sojourn back to Lichfield coincided

with his latest venture; new restaurant, Pearl by

Paul Proffitt - named for his nan, Shirley, and

the string of pearls she always wore - which

opens its doors this month in the Danish town

of Kruså, on the German border.

With seven mouth-watering courses on offer

featuring, according to Sauce Supper Club

founders Beth and Jon Toovey, some of the best

cooking ever to grace their fine dining events, it

promised to be a meal to write home about.

PACKINGTON PORK WAS THE STAR OF THE SHOW.

The evening started with a trio of appetisers to

get proceedings underway; a smoked salmon

choux bun topped with roe, a sliver of six-month

aged neck ham and chicken liver parfait with

rhubarb atop a hunk of gingerbread. The choux

bun was light and airy, with richness from the

salmon and a welcome tang from the sour cream

and chive filling, the neck ham was creamy and

intense and the parfait was silky smooth and

perfectly complemented by the sweet-sharp

rhubarb. Each morsel was unapologetically

devoured in a single bite of immense enjoyment.

A generously-sized milk loaf made up the

delightful bread course; slathered with a savoury

dripping, the pillowy soft bread was light and a

little sweet - and incredibly moreish.

It was hard to pinpoint a favourite dish of the

night, but the squid noodles “Xaoxing Peng

Ting” were definitely a personal highlight.

The light, buttery squid, the umami depth of

the chicken broth with a hint of spring onion

sweetness and nutty, toasty sesame combined

to create a symphony of flavour. A perfectly

harmonious assault on the taste buds, it was an

accomplished and exciting dish.

And the journey through Paul’s culinary heritage

continued, moving on from Birmingham’s

Chinatown to the city’s infamous Balti Triangle

for an elevated take on the Birmingham balti.

A glorious hunk of cod steamed to flakey

perfection, a decadent balti sauce, taste budtingling

lime pickle and a generous scattering

of Bombay mix made for a dish made in curry

heaven. The cod simply melted in the mouth,

its delicate flavour enhanced rather than

overpowered by the bold spices on display. Again,

it was top notch cooking.

The main event featured locally produced

Packington pork in a showcase of Bavarian style,

with buttery loin, succulent honey-glazed cheeks

and a herby sausage vying for porky perfection.

Perfectly crisp crackling added texture, mustard

and sauerkraut offered tang to cut through the

richness and a glossy cider-infused sauce tied

everything together nicely.

A pre-dessert of cheddar custard topped with

sweet onions and a flavourful onion broth made

for a delightful segue to the final course of the

menu.

The evening finished with a taste of the

Caribbean, with a rum-laced banana savarin

topped with a silky peanut ice cream and laced

with a rich caramel. The banana rum, from Tom

Shepherd’s Twofold Spirits venture, was a potent

tipple indeed, but the balanced flavours meant

it didn’t overwhelm. I’m not normally a fan of

banana desserts but, dear reader, I polished off

the lot.

Paul’s menu, paying homage to both his

Midlands roots and gastronomic journey, offered

surprise and delight in spades. Stellar ingredients

treated with no small measure of culinary

creativity combined for an evening to remember.

And remember Paul’s name you must; if Sauce

supper Club manage to entice him back to

these parts, grab yourselves a seat at the table.

Otherwise, a trip to Denmark might just have to

be on the cards.

THE BANANA-INSPIRED DESSERT.

Property news

JAMES GREAVES, DIRECTOR AT JAYMAN, ANSWERS THE MOST COMMON QUESTIONS

REGARDING THE PROPOSED CHANGES TO THE RENTERS’ RIGHTS BILL

The Renters’ Rights Bill (RRB) is expected to

become law by the summer. Intended to give tenants

greater protection, it has fundamental changes to

the way tenancies are regulated. We have been

inundated with questions regarding this new law.

Will I still be able to grant fixed term

tenancies?

All tenancies will become periodic. The new

legislation will mean that landlords and tenants will

no longer agree fixed tenancy periods.

Instead, tenancies will run from month to month

until either the tenant serves notice (two months) or

the landlord meets one of the grounds for regaining

possession of the property.

What about no fault evictions and notice

periods?

During the first 12 months of any new tenancy,

landlords will not be allowed to move back into

their property or attempt to sell it unless they

sell to another landlord who will take over the

tenancy. This means tenants will have a 12-month

protected period; however a tenant can serve notice

to terminate during this period. Tenants will be

required to give two months’ notice to leave and this

must be in line with the rent payment date.

Under the new legislation, how will I regain

possession of my property?

Landlords must use a section 8 notice, citing one of

the specific grounds for possession. These include if

the landlord (or their family) wants to move into the

property, or they want to sell it, among other reasons

such as rental arrears and antisocial behaviour.

Landlords must serve four months’ notice if they are

looking to sell the property (subject to the minimum

12 months of the tenancy length).

BAXTERS COURT, POLESWORTH

You will still be able to serve notice if you wish to

sell the property or the tenant is in breach of rent

arrears or other fundamental terms of the tenancy

agreement.

Can I still refuse for a tenant to have a pet?

Under the proposed new law you will not be able

to refuse a tenant permission to have a pet at the

property unless there is a justifiable reason why (ie

large dog in a small apartment or multiple dogs in a

small garden).

As a landlord, will I be able to increase

rents?

Yes, an annual rent increase can be proposed by

landlords. Any proposed increase must be in line

with local market rents and evidence provided if

required. If a tenant believes the rent increase is

above the market rate they can dispute it by applying

to the First Tier Tribunal. However, they must do

this before the start date of the proposed new rent.

Will the new legislation come into force for

new and existing tenancies at the same time?

It is understood that there will be an adjustment

period before the legislation is enforced to allow

landlords and agents time to prepare for the new

tenancy rules.

What happens if landlords or their agents

breach the new legislation?

Non-compliance will be met with fines. These fines

are being increased and local authority enforcement

powers will be strengthened. Fines can be up to

£7,000 for minor or initial non-compliance and up

to £40,000 for repeat offences.

Multi-Award

Winning Agency

Covering: Four Oaks, Lichfield and surrounding areas

Looking to rent for the first time?

The demand for rental property has never been stronger and with more and more people

competing for properties, first time renters often miss out as they are unable to provide a

reference from an existing landlord to support their application. If you are finding yourself

in this position, below are some useful tips to help you to secure your chosen property.

1. Understand your budget

Before you start viewing properties work out your finances. Many agencies look for 30 times the monthly rent as a

minimum salary requirement. If the rent is £1000 per month, this would mean as a minimum you would need to show

an income of £30,000. This can be split between two parties so if you and a partner are looking to rent together, you

would need to prove that the combined income is at least this figure.

Take into account that you are going to be paying not only the rent, but council tax, gas and electricity, water on top of

your food and social expenses. Make sure you can afford your monthly costs and don’t commit to a larger property

that may put you under financial pressure in the future.

2. Get a guarantor

Without a current landlord to provide a reference, lettings agents and landlords will usually want a solid guarantor in

place who will form part of the contract for letting a property. The Guarantor then becomes responsible for paying

the rent , any damages, and any other costs relating to the property in the event that you are unable to meet the rent

payments. Ask a parent or family member if they are willing to be your guarantor for you before you start viewing.

3. Be prepared to move in on the earliest date the property is available

Landlords don’t want their property sitting empty for long so the date on the property listing is the earliest date that

you can move in – and also the preferred date the landlord wants a tenant in there. If you can’t move in for a week or

two after this date, the landlord will miss out on the rent for this period and is more likely to chose another tenant who

will commit and move in sooner. You don’t have to actually move in on this date, but you would need to start paying the

rent from that date to commit to the property.

4. Go in and see the agent

With competition for properties being so strong, your application will likely be one

of several that the landlord receives. To increase your chances, you need to make

yourself stand out from the others. A personal approach by visiting the agent and

discussing your application can help build a rapport with the agent who in turn can

relay this to the landlord , increasing the chance of the landlord choosing to go with

you over other candidates.

If you have a question we haven’t covered here or would like more advice,

please contact us on 01543 417 559 or email lettings@jayman.co.uk

and we will be happy to help.

Butter up!

SMOOTH, golden, and irresistibly comforting,

Honey Butter is the shade of the season to bring

warmth and softness to interiors. This delicate yet

radiant hue blends the creamy richness of butter with

the golden glow of honey, creating a palette that feels

both nostalgic and refreshingly modern.

With KitchenAid’s Colour of the Year ‘Butter’

embracing velvety pastels and Pantone celebrating

Hollywood luminary Drew Barrymore’s birthday

with her own luminous soft yellow shade, it’s clear

that these sun-kissed tones are on the rise. Whether

through plush textiles, glazed ceramics, or muted

accents, Honey Butter is the perfect way to introduce

a gentle, sunlit warmth into your home.

Guaranteed to lift your mood, this energising yellow

to add a playful pop of colour throughout the home.

And this versatility is key to Honey Butter’s appeal;

look, add darker wood shades for a more rustic vibe

or go bold by teaming with unexpected brights.

Whichever way you go, this optimistic shade is sure to

INTERIORS

On the

tiles

STATEMENT tiles are stealing the spotlight, with

bold patterns, vibrant colours, and geometric shapes

helping homeowners make a lasting impression.

Riding the wave of dopamine decor - where joy

and bold design take centre stage - these tiles are

transforming everyday spaces like kitchens and

bathrooms into something extraordinary.

The best part? This trend is as versatile as it gets;

from eye-catching mosaic backsplashes to striking

graphic floors, there are endless ways to incorporate

a statement tile or two into your decor.

There has been a resurgence of late in handcrafted

tiles with intricate patterns which celebrate artisanal

craftsmanship. From tiles with a hand-painted

appearance to those that embrace a hand-cut or

crafted look like Moroccan Zellige-inspired tiles,

these will add a touch of individuality to your homes,

telling a story through your design scheme.

Texture, too, is a trending tile look, with flat gloss

giving way to more tactile surfaces and finishes to

create depth and interest.

New luxury cruising

OLIVER FROM LICHFIELD’S RB COLLECTION EXPLAINS WHY EXPLORA JOURNEYS IS

REDEFINING THE 6* CRUISE MARKET FOR THE NEXT GENERATION OF LUXURY TRAVELLERS

Explora Journeys is the new kid on the

block in the world of 6* luxury cruise

lines. More ocean holidays than traditional

cruises, you won’t find the word ‘cruise’ in

their marketing as they endeavour to focus

more on the experience and destinations,

and break the mould of cruising preconceptions.

While the rest of the cruise market was

expanding rapidly, and despite the 6*

brands continuing to launch new ships, it

was surprising there hadn’t been a new 6*

brand launch for many years.

In fact, it had been nearly 30 years since

the last 6* cruise line was launched with

Silversea back in 1994. Before then, Regent Seven

Seas was born in 1992, Crystal Cruises in 1988 and

Seabourn in 1986.

It was very exciting therefore when we heard in the

office of the plans to launch Explora Journeys, by the

family who own the largest shipping company and

port operators in the world.

Skip forward a few years and it’s time for us to step

onboard Explora I for a short taster sailing, from

Venice down the Adriatic Coast to Croatia and

Montenegro, ending in Athens.

Before embarkation we were able to spend a

couple of nights in Venice, visiting the Biennale

(annually from May – November) as well as the

Gallerie dell’Accademia di Venezia and Palazzo

Ducale (Doges Palace). We stayed at the traditional

Metropole Hotel right on the lagoon front, a perfect

location to showcase the city to my other half who

LUXURIOUS ROOMS OFFER ALL MODERN COMFORTS

THE MAGNIFICENT EXPLORA I

had not previously visited.

We arrived in style with a private water taxi from the

airport right to the hotel’s door. Our visit coincided

with the Venice Marathon, so the atmosphere was

electric and, while busy, there were still quiet spots

to explore. It perfectly set the scene for our luxury

ocean holiday ahead.

While many of the larger ships are now forced to

dock at Trieste, around an hour from Venice, due

to its smaller size it was only a 15-minute journey

to board Explora I. The view from the ship back to

Venice was stunning and another picture postcard

moment.

When you step onboard you realise very quickly

Explora Journeys ships are reminiscent of luxury

yachts and beach clubs with a more relaxed feel for

the modern traveller.

Carrying only 900 passengers when full, you really

do get a sense of modern luxury. There is a laidback

atmosphere with no formal nights as such, yet

a definite elegant grace everywhere you look, from

the opulent decor and suites to the variety of dining

and bars. You won’t find any buffets here, and the

three onboard pools and multiple jacuzzis add a real

beach club, floating spa element. There are cabanas

aplenty, and with all your food and drink included

there’s no need to worry about pretty much anything

while onboard.

All suites have their own terraces and are around 10

square metres larger than some of the other 6* liners

THE SPA-LIKE VIBE OF THE CONSERVATORY POOL AREA

at sea. Decor is stylish and modern yet comfortable with

books on the shelves and cosy sofas which create a sense

of home away from home.

The only European 6* cruise line, there is a certain

level of quality and attention to detail, and slightly

understated luxury you sometimes don’t find on the

more Americanised lines. Balancing opulence with ‘quiet

luxury’ is something that appeals to the next generation

of luxury travellers as they seek a more authentic travel

experience.

Our favourite part of the ship was the Conservatory with

its large, heated pool and jacuzzis. The retractable roof

came in very handy when embarking from Venice in

October with the cooler air. This gave the environment

an indoor spa feeling and this ended up being our go-to

spot onboard to relax.

There are no wide, open spaces as the design really

focussed on creating smaller, intimate areas; something

not normally associated with cruise holidays. While some

of the restaurants may be large, there are no large dining

halls and instead patricians create the feeling of smaller

intimate city restaurants.

Four infinity jacuzzis line the side of the ship, two

indoors and two outdoors. A unique feature at sea, these,

along with the three other pools, create more beach club

style spaces and provide more opportunities for guests to

explore different areas and have different experiences on

the same ship.

What I was really impressed with was the food. There

was no strict booking system, and most restaurants were

big enough to not expect everyone to have a reservation.

A variety of a la carte restaurants are on offer from Asian

(Sakura) to Mediterranean (Med Yacht Club), French (Fil

Rouge) and the popular European Steakhouse (Marble

and Co.).

The Marketplace Emporium features a wide variety of

more casual food stations all

made to order and was our go-to

for breakfast and a couple of

lunches as there was a beautiful

(and quiet) outdoor seating area

at the back of the ship.

The wine list was impressive

and was adapted by the onboard

sommelier to each restaurant.

Our favourite restaurant was

Sakura and our favourite place

to meet was the Lobby Bar

where fellow passengers would

congregate before dinner and

catch up on the day’s adventures.

There is also a Chef ’s Kitchen

experience onboard which we

didn’t have time to experience

ourselves, but I did hear it was

a lot of fun. Having taken part in cooking classes on

other lines I can definitely recommend it, even for those

lacking kitchen skills such as myself!

Our first port of call was Split in Croatia. It was just

a short walk to the edge of the city harbourfront, so

no coach transfer was needed. We spent a few hours

wandering the old back streets and walking around the

harbour to the Hotel Ambassador.

I was on strict instructions from the team back at RB

HQ to go and check this hotel out as we were planning

an important trip for one of our clients there this

summer. Needless to say, it is in a great spot and the

THE LOBBY BAR WAS A FAVOURITE SPOT TO

MINGLE WITH FELLOW PASSENGERS.

THE LAND EXPERIENCES WERE JUST AS

IMPORTANT AS THE CRUISE ITSELF

hotel was really lovely with a rooftop pool and plenty of

restaurants and the town right on the doorstep.

The ship was in port all day, giving plenty of time for

those booking on an excursion to explore more of

Croatia. Explora put a lot of emphasis on their land

programmes, focussing on the rich history and culture of

the ports of call and surrounding areas.

From Split you had options to visit the ancient town of

Trogir with its Renaissance, baroque and Romanesque

buildings. In Split itself you can visit the Diocletian’s

Palace and the Meštrović Gallery. Trips were also on

offer to the Blue Cave and Vis Island by speedboat,

Šibenik and olive oil tasting in Vodice and to Krka

National Park.

Our next stop was Montenegro and the small town of

Kotor. The ship was able to dock right opposite the old

town gates and from here we explored the old city walls

which gave a great view of the bay and back to the ship.

This was my first time in Montenegro, and I wanted

to explore further afield independently so I arranged a

private boat trip with one of the local companies for the

two of us. The water’s mirror-like reflection was simply

beautiful as we zoomed along through the bay with our

captain giving us a little commentary.

We didn’t have to worry about timings as the ship

arrived early and left at sunset, so we had all day to

explore on our own. Any visit to Kotor Bay must

include a trip on a small boat like this. It is the best way

to appreciate the grandeur of the bay and its small

villages that line the water.

From Kotor we went past the Island of Saint

George and learnt the shipping and battle history

of this important gateway bay. We continued to Port

Montenegro as I wanted to check out the Regent

Hotel, a popular 5* property we use at RB.

The Regent Hotel is on a purpose-built luxury marina

development and popular with clients who like a flat

area for their holiday. After taking a look around we

jumped in a short taxi ride back to Kotor to get back

onboard.

The ship’s excursions from Kotor included Boka Bay

by kayak, trips to Budva and Perast, and a trip on the

Kotor Cable Car and E-biking in Lovćen National

Park.

We sailed away at sunset which, with Champagne in

hand, was the perfect way to say goodbye to our quick

visit to Montenegro, both agreeing we simply must

come back.

After a day at sea with some beautiful scenic views of

the Greek Adriatic coast and some of her islands, we

arrived in Athens, our final stop. Our waiting driver

took us to the airport and on we went.

As we drove along the Athens coast, we chatted about

our favourite moments on our first Explora Journey

sailing. We agreed we had been spoilt beyond belief

and, unlike some other cruises, it was just as much about

our land experiences that aligned with the onboard

memories we made. It was a magical few days which we

will never forget.

I am excited to see what the future holds for Explora

Journeys. Six ships in total should be in service by 2028,

the third in 2026 will be entirely LNG-powered. We

have already started to send more of our RB family

away with them on their luxury ocean holidays as our

clients seek to try out something new. Feedback from

clients has also been excellent so don’t just take my word

for it. And if you are not sure if a cruise is right for you,

remember this is not a cruise, it’s an Ocean Holiday.

Sailings onboard Explora Journeys start from around

£3,199 per person for one week, based on two people

sharing. Shorter four-night cruises start from around

£1,799 per person.

WHAT: THE YEAR WAS 1945

WHERE: NATIONAL MEMORIAL ARBORETUM, ALREWAS

WHEN: VARIOUS DATES

To commemorate the 80th anniversary of the end of the Second World War,

the National Memorial Arboretum is launching ‘The Year Was 1945...’, a

special programme of events and activities themed around 1945. The events,

running at key points throughout the year, will include a VE Day celebration

weekend on May 3 to 5, taking inspiration from the iconic street parties of 1945, alongside

Acts of Remembrance, themed exhibitions, and guided talks and tours.

The programme will focus on two major anniversaries: Victory in Europe (VE) Day on May 8 and Victory

over Japan (VJ) Day on August 15. VE Day marks 80 years since the unconditional surrender of Nazi

Germany, a moment of relief and celebration across Britain and Allied nations. But while Europe rejoiced,

the war in the Pacific continued, with Japan still resisting Allied advances. It was not until August 15,

following the dropping of atomic bombs on Hiroshima and Nagasaki, that Japan surrendered, officially

bringing the global conflict to an end. Find out more about the Arboretum’s programme at

“Murder, greed, corruption, exploitation, adultery and treachery…all those things we hold near and

dear to our hearts.” So begins the international multi-award-winning musical.

Set amidst the razzle-dazzle decadence of the 1920s, Chicago is the story of Roxie Hart, a housewife and

nightclub dancer who murders her on-the-side lover after he threatens to walk out on her. Desperate to

avoid conviction, she dupes the public, the media and her rival cellmate, Velma Kelly, by hiring Chicago’s

slickest criminal lawyer to transform her malicious crime into a barrage of sensational headlines, the likes

of which might just as easily be ripped from today’s tabloids. Don’t miss out, book now! It would be

criminal to miss it… For more details visit www.atgtickets.com/birmingham

FINANCE

Wealth Matters

A BI-MONTHLY LOOK AT THE WORLD OF FINANCE FROM LICHFIELD

FINANCIAL ADVISER KEVIN JENKINS APFS, CERT CII(MP)

THINKING ABOUT HOW TO PROTECT YOU AND

YOUR FAMILY

In this article we focus on financial protection.

The risk of losing a family member who provides financially

for family members or dependents in the sense of death or

illness can be highly catastrophic. This isn’t just an emotional

consideration but a financial one too.

The same can be said for businesses who lose key people,

directors or shareholders in the same way. This, too, can be

financially damaging and hugely problematic, legally causing

huge stress and cost at the most difficult of times.

I explore some key aspects to consider on these topics and

how to attempt to establish a plan/plans to ensure that you

are protected from these risks.

WHAT ARE THE MAIN RISKS OF LOSING A KEY

FINANCIAL CONTRIBUTOR?

I think it is safe to say that we all insure our car, our home and

our holidays against various risks. What we probably don’t

fully consider is protecting the breadwinners who provide a

source of income to cover living costs and ensure any debts

can be repaid.

If you have dependents and liabilities such as mortgages or

other debts, the question is how would these costs be covered

in the absence of a key financial contributor to the household,

either through illness or death.

Start by working out what cover you have in savings or

insurance policies and how long these would last. Is it enough?

One other thing to consider is the suitability for your needs.

Do they cover what is required for as long as is required?

You may wish to explore Income Protection. This provides

income for a time and to a certain extent where someone is

unable to work due to illness/injury.

Life and Serious Illness insurance can provide a cost-effective

way of protecting the family and cover any liabilities, medical

expenses and living costs. It is important to ensure that the

level of cover and term are suitable and also to consider using

trusts to protect your estate from inheritance tax (more on this

later).

Private medical insurance and health care plans can provide

cover for medical, dental, optician and other expenses for all

of the family. All of which can allow the consistent financial

functioning of the family unit to be maintained when needed.

It makes sense to review this regularly and ensure that you

have the financial protection that meets your needs - and

seeking advice to review the market for the best solutions is

key.

BUSINESSES – THERE ARE SIGNIFICANT RISKS

TO CONSIDER

Losing key people who contribute to the business financially

should NOT be underestimated. How do you go about

replacing profitability to protect the business and its

obligations – debts, employees etc?

Furthermore, shareholders should establish an appropriate

agreement on what happens to their shares in the event of

death or suffering a serious illness. That would involve a

suitable agreement, though care should be taken on the tax

consequences of any agreement as there are a number of

options.

Both may involve establishing appropriate insurance to

facilitate the best outcome and advice here is ESSENTIAL.

TO SUMMARISE

Assessing what your needs are both individually and as a

business are key. Taking professional advice is very important

too.

The net effect of having assets, including life/health

insurance, can substantially add to the value of your

estate and the way that is treated for inheritance tax varies

accordingly. Having understanding of this and appropriate

arrangements will affect what passes to your next of kin.

Inheritance tax is chargeable at 40% above the band

thresholds that you qualify for at the time of assessment.

The value of an investment with St. James’s Place will be

directly linked to the performance of the funds you select and

the value can therefore go down as well as up. You may get

back less than you invested.

The levels and bases of taxation, and reliefs from taxation,

can change at any time and are generally dependent on

individual circumstances.

Trusts are not regulated by the Financial Conduct Authority.

Please note that St. James’s Place does not offer Cash

ISAs.

FASHION

Tickled pink!

SOFT, LIGHT AND ROMANTIC - WHILE STAYING JUST ON THE RIGHT SIDE OF SACCHARINE -

PALE PINK HUES ARE THE SEASON’S STANDOUT, SAYS AMY NORBURY

IT feels like we’ve finally turned a corner. After a,

quite frankly, miserable winter, there appears to

be a chink of brightness on the horizon. And the

fashion world is leading the charge. So step away

from your dark, dreary shades and embrace an

altogether sweeter choice for spring.

Soft, sugary tones are easily the biggest colour

trend of the season, offering a palate cleanser

to the deep hues that have dominated previous

months. And you don’t have to be a Barbie girl to

pull off the pretty-in-pink look - in fact, it’s simple

to incorporate into your everyday looks.

This season’s pinks offer a much more subtle

vibe than the hot pink and fuschia iterations

which were making fashion headlines a few short

seasons ago. Think shades of tea rose, dusty and

powder pinks, which were hugely popular with

designers including Khaite, Simone Rocha and

Ferragamo across the SS25 catwalks. This is a

lighter touch, which feels fresh and sophisticated

when pitted against 2023’s vibrant Barbiecore.

And where high fashion leads, the high streets

will follow, so expect to see your favourite brands

offering a liberal dose of pink from head to toe.

So how to wear it? Well, it’s easier than you

think. Start simple with a boxy tee teamed with

your favourite denim, add a splash of pink with

your footwear or opt for pink accessories - a scarf

here, a bag there.

Team your pink separates with whites and

creams for casual cool, or pair with bold red for

a clash made in fashion heaven. Feeling brave?

Go matchy-matchy with a pink co-ord set, or mix

and match your pink hues for a tonal ensemble.

Lean into the romantic vibes with a powder pink

dress; Carrie Bradshaw’s iconic pink-and-white

tutu ensemble may be nearly 30 years old but the

style endures (and, in fact, that particular piece

of fashion history sold last year for more than

10,000 times its original price.) Go full-on girly with

a floaty silken number, or combat the sugar by opting

for something with plenty of structure - a tailored

pink midi dress is this season’s answer to corporate

chic.

For a subtle nod to the trend, opt for those blush

tones where the pigment is dialled right down to, and

wear in place of your usual neutrals.

PREMIUM BEDS TO LICHFIELD CUSTOMERS

Gem Carpets and Beds

are proud to announce the

will bring all the best of the

bedding manufacturers to

Lichfield customers, including

Reylon, Sealy, Silentnight,

Shirebeds, Giltedge, Espoir

and Rest Assured.

Gem Carpets and Beds is a

family run business celebrating

more than four decades of

trading. Having spent his

young working life in the

carpet business Barry Sayer

decided to start his own business in 1984 and

opened Gem Carpets 41 years ago. Established

in Heath Hayes, the business quickly expanded to

Rugeley and now also has sites in Walsall Wood,

Lichfield and Tamworth.

At the tender age of 16, Barry’s son Ronnie joined

him straight from school to learn his father’s trade.

The business has grown steadily over the years, as

has the family, and the father-and-son duo have

been joined by Barry’s wife Jackie in 2016 and,

more recently, Ronnie’s wife Laura. Together,

they now are proud to run a very successful family

THERE IS A LARGE RANGE OF PREMIUM BEDS IN STORE

business.

Although Gem has always sold beds, they felt their

Lichfield shop in particular would benefit from a

larger display and wider range of more upmarket

options. With space being limited they decided

to invest in a separate shop for beds only. When

a unit became available just around the corner

from their existing Lichfield premises, it was an

opportunity too good to turn down. The new

store is the perfect complement to Gem’s Lichfield

site, enabling the company to offer a much larger

range.

To celebrate the new store there will be offers on

Sealy products until March 31 – a massive 20% off

beds, mattresses and selected headboards.

In addition to the extensive range of premium

beds and mattresses for sale, the company also

offers a collect and disposal service of old beds and

required.

The Highclare difference

AN INNOVATIVE OUTLOOK MEETS TRADITIONAL VALUES AT HIGHCLARE

In an age where balancing academic pressures with

mental health concerns is a growing challenge,

Highclare School is carving out a path that ensures

pupil wellbeing is just as important as academic

success. With a focus on combining innovative

approaches and upholding traditional values, the

school is setting an exemplary standard for how

modern education can nurture both the mind and the

heart.

One of the most significant steps Highclare School

has taken to improve pupil wellbeing is subscribing

to The Wellbeing Hub, a comprehensive platform

dedicated to supporting mental health and emotional

resilience. The platform offers resources for students,

parents and staff, including expert advice on

managing stress, building self-esteem, and fostering

positive relationships. The site also offers parent

webinars on a variety of topics, including how to

tackle difficult conversations with your child and

how to support them with friendship issues. This

initiative has not only helped create a more supportive

environment for students but also provided the staff

with valuable tools to better understand and address

the mental health challenges faced by young people

today.

Building on this, the school has also introduced an

especially unique and heartwarming initiative to

enhance the emotional wellbeing

of its students: two school dogs.

These furry companions play

an integral role in helping to

reduce anxiety and stress, offering

comfort during busy school days.

Whether it’s a cuddle during a

break or a quiet walk around the

grounds, the dogs have proven

to be invaluable in fostering a

calming atmosphere that allows

students to feel safe, supported,

and at ease. For many children,

the presence of animals has

been shown to have a significant

positive effect on mental health,

and Highclare’s thoughtful

inclusion of this practice has

already made a noticeable

difference in the school community.

Highclare School also understands the importance of

setting boundaries when it comes to technology. For

over 10 years Highclare’s policy has required students

to hand in their mobile phones at the start of each

school day. This move ensures that pupils remain

engaged in their studies and learning without the

distraction of digital devices. Not only does this policy

encourage students to be present in the moment, but

it also promotes social interaction and connection

among peers, an essential aspect of childhood

development that technology can sometimes hinder.

Highclare’s ability to blend modern solutions with a

commitment to traditional values such as discipline,

respect, and community sets it apart as a leader in

pupil wellbeing. In a world where the demands on

children are ever-increasing, this progressive yet

grounded approach helps to ensure that students

leave the school not only academically prepared,

but emotionally resilient and well-rounded. For

parents seeking a school that truly understands the

complexities of raising children in the digital age,

Highclare stands as a shining example of what is

possible when innovation meets tradition.
