The Craft

We’re looking forward to Sussex Craft Week from 14th to 22nd June, ‘A

New Festival of Making’. Sussex’s geographical location, with its chalky

coastline, rolling Downs and fertile lands has for centuries provided

both the natural resources and inspiration for a thriving craft scene. In

the medieval period, crafts like pottery flourished, particularly in Lewes

and Hastings, where local clay was used to produce both decorative

ceramics and practical items. The region was also home to skilled weavers

and glassmakers. The 18th and 19th centuries saw the rise of more

industrialised craft production, including the iron industry of The Weald.

Making thrived throughout Sussex in the 20th century, as it became home

to the Ditchling Artists, Graffham Weavers and the Bloomsbury Group, as

well as an important place for the Modernist and Surrealist movements.

This rich legacy inspires innovation today. Sussex is the location

of national craft centres West Dean College and Ditchling

Museum of Art + Craft, it’s a hotbed of contemporary craft,

and the hub of the current craft revival. To showcase this

extraordinary talent to wider audiences, Sussex Arts and

Culture Magazine, ROSA, has launched Sussex Craft Week

It seems rather appropriate, on entering

The Captain’s House, that one should

feel educated, enlightened and inspired.

Classic and symmetrical on the outside,

the moment you walk through the door of

this grand family home you are met with

an array of artworks and artifacts, curated

by someone who clearly knows their stuff.

The person, or persons, in question were

Nick and Deanna Levinson who, over

nearly 20 years, restored the house and

filled it with their ever-growing collection

of art, furniture and objets trouvés. Nick

Levinson was an acclaimed producer of

the Open University who worked for the

BBC for nearly 30 years. During his time

there he met his wife Deanna, who was his

production assistant, and together they

shared a life devoted to the arts as

well as restoring houses and gardens.

“My parents were supposed to

be downsizing,” says their daughter

Selina. “They wanted to be by the

sea and found this house and just

fell in love with it. Although we all

loved the house, everyone tried to

persuade them not to buy it.” As well

as being a substantial and historic

building – the rear of the house has

16 th century origins – it also needed

a huge amount of work. “All of

the houses my parents bought over

the years were labours of love.”

“Mum and dad were

very interested in historic

paint colours and colour

combinations, especially

paints by Farrow & Ball,”

she says. “They spent quite

a lot of time looking at

historic houses such as Knole

and Sissinghurst, and I

guess they picked up ideas

from there,” says Selina

Until this, their last restoration

project, Selina’s parents tended to move

about every 10 years. “Each house we

lived in was very different – when we

were children we lived in a fairytale

cottage in the middle of a wood,

with a menagerie of pets plus ducks,

peacocks, geese, chickens, rabbits…

Later we lived in a Dower House

with turrets and a spiral staircase.”

But it’s the gardens Selina can’t

imagine leaving behind: “Both my

parents were skilled horticulturists

and at every house they moved to

My mum, in particular, was mad

about old English rose gardens and

she created one here. I don’t know

how they managed to say goodbye to

them – I would become too attached!”

Huge sash windows are a feature of

nearly every room, with many looking

out over the large walled garden.

Inside the house, every room is a

feast for the eyes: “Dad liked to mix

it up… He collected a lot of art, but

was very eclectic in his collecting, as

you can see! He really appreciated

art from all over the world.”

It’s hard to know where to start…

To the right of the entrance hall is

a huge front room with a Vermont

stove that sits in a much older

fireplace. Over the fireplace, and on

the panels to either side of it, are

sitting room, to stormy seascapes in

the hallway, and fantastical fairytale

scenes in the ‘lady’s bedchamber’.

As well as painted images, that look

almost like a framed picture, perhaps

the most unusual – and remarkable

– is the trompe l’oeil effect in the

hallway, where antique pine panels

are painted to appear scalloped, 3D

and of a more expensive timber.

Although the house is not right on

the seafront, it’s impossible to ignore

its coastal location and the crisp light

from the generous sash windows. The

main house was built by Captain John

Skinner, captain of the militia and

bailiff of the town, and is Grade II

listed. The back of the house, which

dates from the 1500s, gives a flavour

of a classic timber-framed hall house,

while the grander, 18 th century part of

the house reflects Captain Skinner’s

wealth and importance – as do the

painted panels. “Smuggling was rife in

this area,” says Selina. “As with several

houses in the village, it’s said that

there’s a secret tunnel that goes from

the house, underground to the church

– though we have never found it!”

To the left of the hallway, as you

enter the house, is a grand dining

room well-lit by huge sash windows

and with a view to the back of the

house, across the rose garden. The most

striking feature of this room has to be

the huge open fireplace. Kentish

brick in the inglenook is topped by

Christmas meal in here, or ate in here

if people came to stay,” says Selina.

As with all of the rooms, the paint

scheme is both bold but also inkeeping:

“Mum and dad were very

paints by Farrow & Ball,” she says.

“They spent quite a lot of time looking

at historic houses such as Knole and

As for the walls, they are covered

such broad interests and tastes”. That

said, this room feels a touch more

formal and restrained than elsewhere,

with a collection of Piranesi prints

and portraits on the walls. A huge

oriental rug sets off the parquet

floor to perfection — as they do

in the other downstairs rooms.

The rooms to the back of the house

feel more informal and intimate than

the reception rooms to the front, as

one might expect. “Mum and dad

were often in here, reading by the fire,”

says Selina. We take a look through

into the attached sun room. “My

dad was really into Derek Jarman,

so collected various things on the

beach, like metal and glass, to create

a sort of Jarman-esqe conservatory

and garden. The conservatory looked

really bland and boring – but my

dad’s made it look really fun.”

It’s easy to imagine the couple

sitting by the wood-burner, in this

low-ceilinged part of the house.

Windows all round keep it from being

too dark and decorative touches such

as Murano glass light sconces and

chandeliers add to the mix of eras.

A corner cabinet is home to brightly

Deanna. “Mum was really interested

in different types of majolica, ceramics

and glass – and loved going to the

V&A.” A brightly coloured ceramic

cat nestles on the top of a bookcase,

a nod both to their love of ceramics

as well as their love of animals.

A small kitchen to the back of

the house is equally relaxed and

informal and painted in a joyous

yellow – setting off a collection of

blue and white crockery to perfection.

Dressers abound, along with vintage

tins, colanders and jelly moulds. A

Rayburn is the cherry on the cake,

adding a level of cosiness that’s hard

to escape. “My dad put this handle

on the fridge,” says Selina, laughing.

It’s a timber addition that gives the

fairly standard refrigerator a touch

of class. “That was very dad!”

Upstairs, there are more signs

of Nick Levinson’s sense of fun;

his bedroom is filled with brightly

good eye for arranging and displaying

items – which is something I think I

have inherited,” says Selina, who at

one time worked in fashion styling.

“These are signs from Africa – my

mum didn’t really like these. She

was a bit spooked out by them!” she

continues. “Dad was a real character,

very driven and very passionate about

things. He was interested in everything.

When we were children he used to go

away filming a lot – but when he was

around we’d always do really fun things.

And he’d bring back amazing presents!”

Across the upstairs landing, with

oriental rugs acting like stepping stones

– leading the eye from one room to

the other – is Deanna’s room. “This is

probably my favourite room – it just

has a nice feeling about it,” says

Selina. “This wall was all covered

A carved wooden fire surround frames

a more modern fireplace. “They

found the fire surround in one of the

outbuildings – so mum restored it

and put it there.” It works perfectly,

marrying two entirely different eras.

A magnificent wide staircase links all

of the rooms in this three-storey home,

with generous landings on each floor.

As you can imagine, artworks line the

walls, with a Japanese theme between

the ground and first floors. “Dad liked

Japanese prints, as do I,” says Selina, “and

collected quite a lot.” At the top of the

first flight of stairs, is a glittering picture,

reminiscent of Degas’ ballet dancers:

“This was created by a neighbour of ours,

using bottle tops! Dad appreciated naïve

art and works by untrained artists.”

As we walk down the last flight of

stairs, en route to grab a cup of tea

in the back kitchen, my eye catches

something disconcerting in the transom

window over the front door – the

outline of a rat. “Dad put that there,”

laughs Selina. “It’s made of plastic.” My

heart rate lowers and I can’t help but

smile. This house, as well as reflecting

the curious minds, originality and

aesthetic tastes of its former owners

also reveals their warmth and humour.

It’s a very special house indeed.

Digging into my family tree

last year, I discovered that my

great-grandfather was a cart and

coachmaker by trade (from Westerham),

so perhaps it is something in my blood

that finds me utterly charmed by Tara’s

conversion of a cartwheel workshop in

the grounds of her Peasmarsh home.

More likely, it is the wonderfully quirky

and original use of space, as well as the

perfectly appointed whimsical décor

which draws both me and a solid

stream of paying overnight visitors

to the one-bedroomed hideaway.

Despite being in a state of disrepair

when they bought it, Tara instantly

saw potential in the space. “As soon

as we looked at the property, we had

a vision of what we could do with

it,” Tara says. “We loved the heritage

of it and we could see that it was a

great space, so we wanted to keep it

as rustic as we could and not make it

too claustrophobic, with stereotypical

walls losing the open plan feeling.”

As the owner of the lifestyle emporium

Rising Star in Tenterden, Tara is no

stranger to recognising promise in

unusual places. The shop specialises in

antique furniture, eclectic homeware

(alongside fashion and jewellery) and

reclaimed finds, and Tara had ample

opportunity to apply her experience

to the workshop (available to rent on

Airbnb) and spent many months sourcing

characterful pieces to furnish what was

a completely run-down outbuilding

only a few years ago. “We had to do

everything,” says Tara. “It didn’t have

electricity, it didn’t have facilities, it was

just an open workshop carcass! The roof

was good, but all the windows and doors

needed to be changed. My other half is

a builder so he did a lot of the building

work himself, while I went on the

Converting the workshop into

a living space was not without its

challenges, lying as it was within the

curtilage of a Grade II listed building.

“With any project, there are always

difficulties,” says Tara. “Sourcing things

at the right price and budgeting is one

major factor. Obviously when you are

doing something for a Grade II listed

property it has to be done to a certain

standard, and you have to go through

the proper planning – from the paint

guttering.” However, finding a way to pass building control

while maintaining the open-plan, industrial heritage was at the

heart of Tara’s vision. The stairs proved to be a particular issue,

as she felt strongly about keeping the field of vision clear and

not breaking up the space, but the regulations clearly stated

the requirement for balustrading, and that the spacing between

the spindles had to be a certain width so that children couldn’t

get their heads stuck between them. Tara’s solution was to use

traditional balustrading on one side, and floor-to-ceiling-beam

copper pipes on the other. This ensured that the line of sight

across the room was maintained and allowed her to incorporate

the metal reminiscent of the building’s workshop days.

Looking around, there are little nods to the workspace’s

original use all over the place, but they are subtle enough

to be enjoyed as curios in their own right. From the old

saws on the mantelpiece to the tricycle-style horse toy

next to the sofa to the giant horseshoe-esque wreath

above the kitchen sink, Tara manages to remember

the past without the references being too overt.

Every area of usable space within the small (perfectly-formed)

workshop has been carefully thought out, but never to the

sacrifice of charm. In the kitchen, constructed out of bricks by

Tara’s partner, the work surface makes use of an enchanting and

original find. “We put old, reclaimed pottery boards – as in

the boards that are used to dry pottery on – into the kitchen,”

says Tara. “They were brought over from France and we put

them on the top as the kitchen surfaces.” They also added an

old, salvaged sink (from Symonds Salvage in Bethersden)

and some little curtains underneath to disguise the washing

machine and some storage space. “We made it from the basics

really, and just added from there,” says Tara, noting that

there is something very appealing about maintaining a level

of simplicity, but that certain touches can really elevate the

experience. One such element is an old, folk art, utilitarian

larder cupboard sitting alongside the kitchen surface that still

has its original paintwork. “I was a bit reluctant to put it in

there,” says Tara, “it’s one of my favourite finds. It’s a really

beautiful, rustic, original piece that fits in the space perfectly.”

The bathroom adds another layer of innovation, as Tara

has disguised the partition between the living room and the

bathroom as a ‘building within a building’. She found an

old, reclaimed ‘bar’ window which she added to the internal

wall – this is opaque, but ‘looks’ into the bathroom from the

kitchen. She has also used a piece of corrugated roofing to cover

the internal pitch of the bathroom ceiling, and added a piece

of fabric trim to soften the edging and make it marry with

the indoor space. “I wanted to make it look like an outdoor

building within the building,” explains Tara. “When you’re

in the kitchen you can see the window that goes into the

bathroom, and I’ve used old, reclaimed lights so it looks like

the outside of a building. We also made the sliding barn door

leading into the bathroom out of scaffolding boards, which

fits with the space and also has the quirkiness.” The creative

décor extends into the bathroom itself, where a statue and a

stained-glass window sit alongside a new shower and sink, and

above the bath hangs an old cart-end, imported from France.

Tara has used a piece of corrugated roofing to cover the internal pitch of the bathroom ceiling,

and added a piece of fabric trim to soften the edging and make it marry with the indoor

space. “I wanted to make it look like an outdoor building within the building,” she explains

intimate bedroom space. Tara decided to keep some of the

exposed brick at the back of the room, not just for aesthetics,

but also in a nod to the past. “The brick in the bedroom actually

goes down to the log fire below which is where they used to

forge the metal for the cart wheels. This is another example of

maintaining the heritage of the building. I would have loved

more exposed brick, but obviously we have to consider trying

to keep the heat in as well.” The bed, from French Depot

in Hastings, successfully juxtaposes comfort with industrial

aesthetics, using high quality linens for the bed alongside an old

oil bottle lamp. The rest of the room is decorated simply with a

few pictures, but Tara was keen to keep the space free of clutter.

While Tara was passionate about being true to the building’s

heritage, she was equally clear that she did not want to forego

luxury, and the copper bath in the bathroom adds a splash of

decadence. Similarly, in the sitting room, the large, comfy sofa,

the chaise longue and the draped curtain fabrics soften the

workshop vibe, and the crossover between rustic and luxury

makes for a uniquely romantic space. Tara elaborates, “On the

underside of the stairs, I put in a silk screen that we found

from the nearest shop. Often those who

stay overnight also visit Rising Star,

which Tara opened when she was just

19. “It’s like a whole experience,” says

Tara. “It’s a shopping lifestyle experience

that I’m trying to offer that’s different

from what other people are doing. I love

meeting people and the whole buzz of

them enjoying what I’m doing.” Tara’s

enthusiasm for her work is as evident as

her hideaway is romantic. Are there any

other projects in the pipeline? “I’m so

passionate about what I do,” Tara says,

“I’m always looking for new projects,

so who knows what could be next.”

have been used as floorboards as well as skirting

boards providing a bucolic warmth downstairs,

while upstairs Tara has used carpet to create a more

indulgent feel and to help differentiate the two

spaces. The result is a cosy, toasty warm hideaway

in the winter and a beautiful, airy space in the

summer. There is also a big garden and parking

and the property is both dog friendly and private,

making it an ideal spot to escape the stresses of

everyday life. “It’s that mix of rustic and luxury

that we wanted,” says Tara. “We want it to be a

really special place for our guests, for a special

occasion, or for a recharging, romantic hideaway.”

The whole renovation took about a year to

complete, with Covid hitting just as they finished

work. “It was really frustrating,” remembers Tara,

“but when we were able to reopen, we got so many

bookings, we were full up for months.” Many

people who come and stay are repeat customers,

and often they are so comfortable soaking in the

copper bath or cosying by the fire that they don’t

even leave the property. For those who do, the

cart barn is just eight minutes down the road

what led you to create the company?

I always knew I wanted to be a

part of the building trade. I left

school and started a carpentry apprenticeship,

after I graduated I started working for various

building companies as a carpenter and quickly

progressed to site supervisor. Once in a more

senior role I realised I was interested in the

design and build process and in 2023 I enrolled

in university to study architectural technology;

it was in my placement year that I started the

company I have today.

There are many advantages in choosing a design

and build (D&B) company. Firstly the client will

have one point of contact and the relationship

will have already been formed. Our architectural

team and our build team are in constant

communication which helps to streamline things.

Choosing a D&B company also removes the

responsibility of acting as the go between to link

the architect and builder. The communication in

place ensures a speedier and smoother process.

Can you tell us about any projects that

you are particularly proud of?

There is one in Thames Ditton which springs

to mind; we carried out a triple dormer loft

conversion, extended at the rear and added a

double storey to the property. The whole house

was renovated from top to bottom – new kitchen,

bathrooms, windows etc – and the end result was

spectacular. Another very similar property had a

very exciting brief – we had to ensure the flat roof

of the extension could be transformed into a living

green roof system. It looked amazing! But we are

extremely proud of all of our projects and what

makes us feel that way is knowing our clients are

proud of their new builds.

What advice would you give to someone

considering a home extension?

I would say research the team you pick, get

references and speak to previous clients; choose

a company you feel comfortable with and build

a good working relationship. Remember this

relationship will be ongoing for a few months.

Ensure you receive a detailed scope of works

which clearly defines what is included to avoid

any unexpected cost increases and allow you to

make the decision that the extension is going to be

worthwhile and within budget. Also, ensure you

have included a contingency in your budget.

Home renovations can often be tainted by how

stressful they can be – how can we limit that stress?

Making decisions as early as possible is a huge

factor in limiting stress, you don’t want to feel

under pressure to make decisions once the project

is in full flow. Our site managers hold weekly

site meetings with each client to keep them up to

date with progress, advise what is happening in

the coming weeks and what will be expected of

the client. A project timeline with anticipated

dates is a must; these dates should include any

client responsibilities, times where work will be

disruptive (if planning to stay in the property)

etc. Finally trust the builder you have chosen

and if in doubt ask questions.

Stage 1

SANDWICH BREAD DOUGH

Makes 1 loaf, 12 slices

Time: 3-3½ hours, depending on proofing times

• 80ml whole or semi-skimmed milk, plus extra for brushing

• 30g salted butter, cut into small cubes,

plus extra for greasing the tin

• 225ml warm water (40-43°C)

• 12g (1 tbsp) instant yeast

• 15g (1 tbsp) honey, granulated sugar or agave syrup

• 500g white bread flour

• 8g fine sea salt

• neutral-tasting oil or softened butter, for oiling the bowl

Mix & Kneading

1. To ensure the liquid

components of the recipe are at

the perfect temperature, place

the milk and butter into a small

bowl and microwave for about

45 seconds. If you don’t have a

microwave, you can combine

the milk and butter in a small

saucepan and gently warm until

the butter has just melted. Stir

until the butter has completely

melted into the milk, then

pour into a large mixing bowl

or the bowl of a stand mixer.

2. Pour in the warm water and

stir to combine. The mixture

should be around 38–43°C

(100–110°F). You can check this

with a digital thermometer if

you wish, or just go by touch – it

should feel warm but not hot.

3. Add the instant yeast and

honey, and whisk until no

lumps of yeast remain.

4. Tip the bread flour into the

bowl, then scatter the fine sea

salt over the top of the flour.

Mix all the ingredients together

with a spoon, or mix using the

dough hook attachment of a

stand mixer until all the flour

is incorporated into the dough

and no dry patches remain. The

dough will look quite shaggy.

5. You have a few options for

kneading, depending on the

equipment available to you. No

matter the method you use, the

dough should feel smooth, elastic

and slightly tacky (but not sticky)

after the kneading is complete.

Kneading with stand mixer:

Continue mixing on a medium

speed with a dough hook

for about 7–8 minutes.

Kneading with handheld mixer:

mixer. Place the dough hook(s)

into the premixed dough,

then turn the mixer on to a

medium speed. Knead the

dough for 7–8 minutes.

Kneading by hand:

Place the dough on a clean work

surface (no flour) and work it

into a large ball. Knead it using

your favourite method. If you

don’t have a favourite method,

you can use my preferred method:

use the heels of your palms to

firmly push the dough away

from you, then pull the dough

back towards you again. Repeat

this motion until the dough

lengthens into a log-like shape;

when this happens, form it back

into a ball and repeat the process

for 8–10 minutes. It may feel

sticky at first, but avoid adding

flour, as it can negatively impact

the consistency of the bread.

Stage 2

First Proof & Shape

6. Remove the dough from the

mixing bowl and lightly grease

the bowl with a neutral-tasting

oil or softened butter. Tuck the

edges of the dough beneath

itself to form a large dough ball

with a smooth top, then return

it to the bowl and cover with

a clean tea towel. Leave it to

proof at room temperature for

about an hour. After this time,

the dough should have risen to

about double its original size,

though it’s worth noting that the

exact time this will take can be

dependent on the temperature

of your environment.

7. When the dough has

finished rising, prepare a nonstick

900 g (2 lb) loaf tin

by generously greasing the

interior with softened butter.

8. Tip the dough onto a clean

work surface and remove the

air by patting it down into a

rectangle. It should be about 25 ×

35 cm (10 × 14 in). Fold in both

shorter ends of the rectangle so

they meet in the middle of the

dough. Starting from the shorter

end, roll the dough as tightly

as possible into a cylindrical

shape. For a more tidy looking

loaf, you can pinch together the

edges of the dough (where the

swirl from rolling is). Place the

dough, seam-side down, into the

prepared loaf tin. If the cylinder

of dough is slightly longer than

the length of the tin, simply tuck

the ends under the rest of the

dough as you place it in the tin.

Stage 3

Second Proof & Shape

9. Cover the tin with a clean

tea towel or some cling film

(plastic wrap) and leave to

proof at room temperature

for 1–1½ hours, or until the

dough has risen about 2.5 cm

(1 in) above the top of the tin.

10. Preheat the oven to 200°C

(400°F). For the best rise, place

a baking tray half-filled with

hot water in the bottom of the

oven as it preheats. This will

create a steamy environment

so the bread can rise to its full

potential, but it’s not compulsory.

11. Brush the top of the loaf

with a little milk or water, then

bake for 30–35 minutes, or

until the top of the bread is

a deep golden brown. If you

added a steam tray to the oven,

remove it after 15 minutes

and finish baking without it.

12. Once baked, remove the

bread from the oven. Leave it

to cool in the tin for 5 minutes,

then run a knife around the

edges of the tin and flip the

bread out onto a cooling

rack. The bread should sound

hollow when tapped on the

bottom. Let it cool completely

before slicing and enjoying.

Optional: When the bread is

still piping hot, you can run

a little pat of butter over the

top of the crust. This will

help to keep the crust of the

bread nice and soft, and will

give it an attractive sheen.

Make it Ahead –

Overnight Sandwich Bread

Making these four adjustments

to the recipe will allow you

to make the dough a day

before you plan to bake it.

• Use less yeast: Reduce the yeast

quantity to 8g (2 teaspoons).

The yeast is reduced because

the dough will be fermenting

for a longer period.

• Reduce proofing time in

the bowl to 45 minutes.

• Refrigerate overnight: After

the loaf has been shaped and

placed into the tin, cover it

with cling film and leave it in

the refrigerator overnight.

• Allow more time for proofing

before baking: The next day,

remove the tin from the

fridge and proof at room

temperature for about 2 hours

before baking as normal. The

dough needs a little extra time

to rise at this stage, since it

will be starting from cold.

Spicy, Jammy Eggs on Toast with

Spring Onion Cream Cheese

Serves 1-2, depending on appetite!

These eggs on toast pack a serious flavour punch and can be made

within 10 minutes for a quick go-to breakfast, lunch or dinner.

• 2 large eggs

• 2 thick slices sandwich bread (see previous recipe)

• crispy chilli oil, for drizzling

• finely diced chives, to garnish

For the spring onion cream cheese:

• 5 tbsp cream cheese

• 1 tbsp finely diced spring onions (scallions)

• 1½ tsp finely diced chives

• ⅛ tsp garlic granules

• pinch of flaky sea salt

1. Bring a small pot of water to a rolling boil and gently lower

the eggs into the water with a large spoon. Set a timer for 7½

minutes and maintain the water at a rolling boil. Note that

the size of your eggs will impact how long it takes to cook a

‘jammy’ egg. The sweet spot is typically 7-8 minutes, so if you

like them on the runnier side, reduce the timer by 30 seconds.

2. Meanwhile, in a small bowl, stir together the

ingredients for the spring onion cream cheese.

3. While the eggs are boiling, fill a medium-sized bowl

with cold water and add some ice cubes. When the timer

goes off, remove the eggs from the boiling water and

plunge them into the ice bath to stop them cooking.

4. Toast the bread slices until they’re a deep golden brown. Spread

each slice with half of the spring onion cream cheese. Peel the eggs

and cut them into quarters, then smash them slightly onto the toast.

Sprinkle with flaky sea salt, drizzle with crispy chilli oil (as much as

you can handle!), and scatter over some chives to finish before serving.

Cinnamon caramel

monkey bread

Serves 8-10

You know the super-soft middle bit of a

sticky cinnamon roll? Imagine a ton of those

prime bites stuck together. When I tested

this recipe, I walked up and down our road

presenting unsuspecting neighbours with

warm, sticky monkey bread. After politely

plucking one dough ball and tasting it,

everyone quickly took as many as they

could – even our postman couldn’t resist!

You’ll need a 24cm (9½ in) bundt

tin or two 900g (2lb) loaf tins.

• 1 batch Sandwich Bread dough

• 115g salted butter, plus extra for greasing

• 215g soft light brown sugar

• 1 tbsp ground cinnamon

• 120ml double cream

• ½ tsp vanilla extract

Tip: If you’d like to enjoy this at brunch,

you can assemble it the day beforehand.

After all the dough balls have been coated

and placed in the tin, cover tightly with

cling film and refrigerate overnight. Remove

from the refrigerator the next morning

and let it rest at room temperature for

about 1½ hours before drizzling with

cream and baking as instructed below.

1. Prepare the Sandwich Bread dough

up to the end of step 6 on previous

pages. While it is proofing in the bowl,

prepare the bundt tin (or loaf tins) by

greasing with softened salted butter.

2. Mix together the brown sugar and

cinnamon in a medium-sized bowl.

Melt the butter in a small bowl in the

microwave, or in a small saucepan

over a low heat. Set aside to cool.

3. When the dough has finished proofing,

tip it out onto a clean work surface and pat

it down into a 20cm square. Using a sharp

knife or pizza cutter, cut the dough into a

grid of 64 pieces, by cutting 8 evenly sized

strips in one direction and then 8 strips

crossing over in the opposite direction.

4. Roll each piece of dough into a ball

using the palms of your hands.

5. Dip one dough ball into the melted butter

and let the excess drip away, then roll it in the

cinnamon sugar until fully coated. Place the

coated dough ball in the prepared Bundt tin

and repeat with the remaining dough balls,

arranging them close together in the tin in two

layers. It takes a little while, but I promise it is

worth it! If you don’t use all of the butter and

sugar, sprinkle the leftovers over the top of the

assembled monkey bread before its final proof.

6. Cover with a clean tea towel or a piece

of cling film and leave to proof for about

1 hour, or until the dough balls have risen

almost to the top of the bundt tin.

7. Preheat the oven to 180°C and

set the rack in the middle.

8. In a bowl, mix the cream and vanilla

extract together, then drizzle it evenly

over the top of the monkey bread.

9. Place the bundt tin on a large baking tray

(in case any sugar spills over the sides as it

cooks), then bake for 32-36 minutes. The

tops of the dough balls should be golden

brown and you should notice caramel

bubbling around the edges of the tin.

10. Remove from the oven and leave to rest

for 5 minutes, before placing a large dinner

plate or tray over the rim of the tin and

inverting it to release the monkey bread. If

you wait too long to do this, the caramel may

solidify and make it too sticky to release.

11. Some of the caramel may have

accumulated at the top, so use a spoon to

spread it evenly over the top and sides of the

monkey bread. Allow to cool for a few minutes

before devouring warm with those you love!

If you find yourself with leftovers, wrap

tightly in cling film (plastic wrap) and

store in the refrigerator for up to

two days. Microwave for 15-

20 seconds before enjoying.

for getting skin prepped for exposure!

The tights-off season came early in 2025, catching many of us by surprise. I

actually first cast aside my opaques for several days in March – the earliest

bare-leg days that I can remember, in any year. Yes, they went back on

again for quite a few days when the wind appeared to be blasting straight from

the Tundra – but this episode reminded me that as we emerge from beneath our

Heattech thermals, skin is in definite need of some TLC, in order to be bareable.

Not only has central heating stripped skin of moisture, by creating an

arid indoor atmosphere – but did you know that your clothes actually

worsen the problem? They literally wick hydration from the surface of

your body – which explains why, odds-on, your body’s almost certainly

looking parched and papery, right now. So, let us thank our lucky stars

for great bodycare, which can perform an almost instant makeover.

Now, you probably have your favourite body products. (I certainly do;

I’ve lost count of how many tubs of Weleda Skin Food Body Butter

I’ve got through, over the years.) But over recent months, I’ve discovered

some delectable bodycare launches that I thought I’d share with you here,

to take you from dry and dusty to gleaming and velvety in no time at all.

My one tip? Do exfoliate gently before using any of these

us of the importance of the skin’s barrier function to keep moisture in

and everything else out. Definitely worth checking out are their new

body-nurturing products, of which I’m especially enjoying the BYOMA

Brightening Body Lotion, a silky-textured formula that makes skin instantly

appear brighter and more radiant via ingredients that include niacinamide

and ceramides. This one assuredly doesn’t irritate my notoriously touchy skin,

but you might like to know that there’s also a BYOMA Sensitive Skin Body

Lotion, as well as a Hydrating Body Lotion option (all just £12.99 for 400ml).

Fenty Skin Butta Drop Hydrating Body Milk, £28 for 185ml. Couldn’t sing you

a single Rihanna tune – but I can sing the praises of her beauty range. In a finger-click,

this sinks right in swiftly delivering ingredients like coconut, watermelon and rice bran

oils, along with shea, cocoa and mango seed butters, glycerine and a hit of acerola fruit

extract, with a scent that’s lightly juicy-fruity (and really lovely). A fast fix for flakiness.

Space NK Paros Tides, £5-22, is a properly summery collection for

hands and bodies which just drifted ashore at the beauty retailer.

Everything from Body Scrub to Body Oil via Hand Cream is

infused with a gorgeous new fragrance, designed to capture ‘the

essence of the Aegean coast’ with a breezy fusion of aquatic

notes, fig and elderflower, warmed by amber. You really can pick

and mix from the range, as many of the products are available

in travel/discovery sizes; that hand cream, for instance, is just

a fiver for 30ml, which is an absolute steal. Your holiday may

be a way off, but it’ll feel closer, anointing yourself with this.

The Imperial Leather Ultimate Moisture range was just unveiled from a

brand which makes many a woman come over all nostalgic (remember those

TV ads for the iconic soap?) Fast forward to 2025, and they have, as it were,

‘raised the bar’: you can now bathe your senses in sophisticated body cleansing

products in a choice of two surprisingly appealing scents, created by leading

perfumers: Cherry Blossom & Almond Oil and (my favourite) Vanilla & White

Orchid. Of the four products, which are available in both aromas, I like the gentle

Ultimate Moisture Foaming Body Scrub, £6.99 for 250ml, and the Ultimate Moisture

Foamburst, £4.50 for 200ml, both of which leave skin feeling nourished, not tight.

Jo Malone London Care Collection is a departure for the much-loved fragrance

brand, with a more ‘aromatherapeutic’ approach that is also inspired by Roman,

Greek and Ottoman bathing rituals. There are seven treats – and I do mean

treats – to indulge in, of which my faves are the Restore Body Oil, £64 for

150ml, aromatic with neroli, jasmine and rosehip essential oils, in a base of

evening primrose and sweet almond; skin instantly glistens and smells sublime.

This is actually a late-lamented body oil from a skincare brand called Rodin,

which was bought by Jo Malone London’s parent Estée Lauder Companies, and

I couldn’t be happier that it’s now reincarnated. I wholeheartedly recommend

that you take yourself to a Jo Malone London counter for a sniffing session of

these – also prepare to swoon over the refreshing, citrusy Revitalise Body Gel-

Cream, £35 for 200ml, and rosy-posy Enrich Body Balm, £64 for 200ml.

This Works Deep Sleep Beauty Oil, £45 for 150ml, is now the body indulgence

I reach for when sleep happens to be proving elusive. The essential oil combo of

lavender, vetiver and patchouli is the equivalent of knockout drops, for me, while

the blend of sweet almond, pomegranate and argan oil, enriched by bakuchiol (a

natural alternative to vitamin A) works overnight to restore elasticity. Heaven.

Margaret Dabbs Concealing & Firming Leg Serum, £52 for 200ml, can be your

go-to when pastry legs need an instant makeover. Pigments have been chosen to offer

an ‘airbrushed’ effect, which is buildable if you’d rather look more South of France

than South of England, tan-wise. Meanwhile, it’s not new, but the product I habitually

recommend as a gradual self-tanner (to the delight of many a grateful friend who’s been

turned onto this) is Gatineau Golden Glow Gradual Tan Cream, £55 for 400ml – it

comes in an absolutely WHACKING bottle, for good reason, because you’re going to want

Did you know that your

triceps (triceps brachii)

are the largest muscle in

your arm? The triceps comprise of

three powerful heads and are the key

to unlocking strength, definition

and injury prevention. They are

instrumental in everyday activities,

such as picking up from the floor or

reaching overhead, holding a pencil

and maintaining good posture.

So whether you’re an athlete,

fitness enthusiast, or simply want to

tone up, it’s time to give the unsung

heroes of upper body magnificence

the attention they deserve.

Before starting this workout,

thoroughly warm up, check your

posture, engage your core and slow

down to enable you to go through

the whole range of movement

steadily; fully extend your arms,

but don’t lock/snap your joints

into a straight position (this

could result in joint damage).

Let’s get started!

1. Kickbacks

Holding a dumbbell in each hand,

extend your arms straight back,

squeezing the triceps and keeping

elbows close to your body. Slowly

bend your arms back to the starting

position and repeat 10-15 times.

2. Extensions

Holding a dumbbell, extend your

arm overhead, lower the weight

behind your head, and lift back

up. Repeat 10-15 times (for an

extra core kick, stand on one leg).

3. Tricep Dips

Place your hands on a sturdy

bench or chair with your legs

extended in front of you. Lower

your body by bending your

elbows until your upper arms are

parallel with the floor, then push

back up. Repeat 10-15 times.

4. Lying Extensions

(also called Skull Crushers!)

Lying on a bench or the floor,

keeping your arms straight and

bending from your elbows, lower

the weights towards your forehead

and extend back up to the starting

position. Repeat 10-15 times.

AND FINALLY (not for

the faint-hearted)

Diamond Press Ups

1.) Get into a high plank

position with your hands

under your shoulders.

2.) Bring each hand directly

under your chest with thumbs

and forefingers touching to

create a diamond shape.

3.) Hold this plank position

(keeping your body straight) and

bend your arms (you are aiming

to get as low as possible). Return

to your starting position.

This exercise can be brutal, so

please be careful. If attempting

for the first time, try a few

repetitions with your

knees on the floor (as in

a half press-up position,

and go from there).

Tricep Extras

1.) Gradually increase the weight,

reps, or sets, over time to continue

challenging your triceps.

2.) Consider pairing your tricep

concentration with chest or shoulder

workouts to save time and increase

your upper body strength.

3.) For optimum tone and repair,

allow at least 48 hours of

rest between workouts.

World Digestion Day falls at the end of the

month and it is the perfect opportunity

to take a look at foods that support our

• 400g giant couscous

• 1 red onion, finely diced

• 100g almonds, toasted

and chopped

• 25g parsley, chopped

• 200g sun dried

tomatoes, chopped

Fibre rich couscous salad

Serves 6

• 10 medjool dates, chopped

• salt and pepper

For the dressing:

• 4 tbsp olive oil

• 3 tbsp tahini

• 2 tbsp apple cider vinegar

Cook the couscous according to the instructions on the

packet. Put the red onions, almonds, parsley, tomatoes and

dates into a large bowl and mix together with the couscous.

Whisk the dressing ingredients together and pour over the

couscous salad, add a pinch of salt and pepper and mix well.

Veg Out

Jo Arnell unearths all you need to know about planting veg this May

May is a fantastic month for growing vegetables.

The frosts should have passed (but do watch the

weather forecast just in case!), the soil is warm, the

days are longer and conditions are ideal for direct sowing – no

greenhouse or windowsills needed. Whatever the size of your

plot – a giant veg patch, a small raised bed or just a few pots,

there are some easy vegetables to plant now. Just think, in a few

weeks you could be harvesting your own home grown food.

Before you rush out there though, have a think – about

what you like to eat, how easy it is to grow and then

adjust what and how much to grow. Think about the

size of your growing space, and pace yourself. It’s easy

to get carried away, sow masses and then be on holiday

when your glut of produce needs to be harvested.

Check your soil

Vegetables tend to be quite hungry for nutrients and will need

to be grown in good, rich soil. They grow fast – many are

annual and we expect a lot from them in a short amount of

time. Add some organic matter – manure or garden compost

– to boost the beds before you start growing. The exception

are carrots and parsnips, which do best in free-draining

conditions that have not been recently manured. The greediest

crops are the leafy ones – brassicas like cabbage and kale.

Watering

Water is an issue, especially as the soil warms and begins to

dry out in the summer months. I have very free-draining

dry soil and try to save my water for the plants that need it

most. Clay soil, although hard to dig and slow to warm in the

spring, will hold on to nutrients and moisture for longer.

Water to establish, but then focus any extra watering on

crops that are swelling fruits (sweetcorn, pumpkins, squash and

courgettes) and those that make pods (peas and beans). It is

better to water deeply and less often, than to sprinkle a little

on the surface every day, as this doesn’t get down to the roots.

Hot weather

Some like it hot – tomatoes, aubergines and peppers will thrive

in the heat of the summer, but there are cooler customers that

are best sown earlier in the spring, and again in late summer

when the temperatures are not as fierce. The cool weather

crops – spinach, pak choi, rocket and beetroot – will show their

displeasure and bolt (rush into flower and set seed) to escape

from the conditions and put their faith in the next generation.

Grow lettuces in light shade during the hottest

months and they should crop for longer before

running to seed and tasting bitter.

Some Good Crops to Sow Now

Cut and Come Again Salads – this is the perfect time to sow cut-andcome-again

salad crops. These varieties let you harvest leaves repeatedly over weeks. You

can buy mixes of leaves, or to make your own, try a mix of ‘Salad Bowl’ lettuce, ‘Lollo

Rosso’, Mizuna, Rocket, Mustard Greens and Red Oakleaf. Sow seeds thinly in rows

or broadcast in a bed. Cover lightly, keep moist, and they’ll germinate quickly in warm

soil. Once leaves reach about 10cm tall, cut them with scissors, leaving the base and

inner leaves intact. The plant will regrow from the centre. Sow every 2-3 weeks for a

continuous supply. Harvest in the cooler part of the day for the best texture and flavour.

Courgettes – even if you really love courgettes you’ll only need one plant to

keep you (and the rest of the neighbourhood) supplied for the summer. Sow three

seeds just to make sure that at least one will germinate and then throw at least one

away (or donate to someone unsuspecting). The seeds of pumpkins, squash and

courgettes are large and flat. Sow them on edge (thin side first) – just push them

down into the soil and keep them warm and moist. There are quite a few varieties

to try – there’s even a climbing type called Tromboncino, which can be grown up

an obelisk. The most reliable is probably one called ‘Defender’, which will happily

pump out courgettes for weeks on end. Make sure you check them every few

days, as they have a habit of turning into monsters when you back is turned.

Sweetcorn – once you have tasted your own home grown super-sweet sweetcorn

(picked as the cooking water comes to the boil), you may never be able to eat

‘fresh’ supermarket corn cobs again. There are some good varieties around,

usually with the word ‘sweet’ in their name. The reason you should cook and

eat sweetcorn as soon as you have picked it is because the sugars turn to starch

very quickly and it loses its wonderful sweet flavour and starts to taste woody (the

same thing happens with peas). Sow or plant out sweetcorn in a grid formation,

not in a long row, as they are wind pollinated and stand more chance of successful

pollination grouped together in a square. They’re a hungry crop and need a rich,

well composted soil. The corn is ready to pick when the tassels have turned brown.

You can also do the fingernail test – peel back a little of the husk on the cob and

push your nail into a kernel. If the fluid inside is milky, it’s ready to pick.

French Beans – I sow them twice, because I use lots of these, but you can

get to the end of the season with one lot (just ask yourself; how much do I like

beans?). I often sow dwarf beans as the second crop as they tend to be a little quicker

than climbing varieties. The last sowing should be no later than July (June for

runners) to ensure the beans ripen before the first autumn frosts. Good climbing

varieties to try: Cobra, Blue lake. Dwarf varieties: Purple Teepee, Delinel.

Pumpkins and Squash – some will turn into enormous sprawling

plants that will swamp your entire veg patch in an alarming triffid-like way, so be

careful where you plant them and make sure they have enough space to grow. The

smaller squashes can be grown up sturdy obelisks or arches, but the larger ones

just need space to ramble along the ground, as their fruits can be too heavy for

the stem. You may see pumpkins and squash being grown on large compost heaps,

which suits them very well, as they need rich deep soil – and the warmth of the

heap will also help with growth and ripening. Butternut and Winter squash are easy

to grow and will keep for weeks after harvesting – make sure you allow the skin

to ‘cure’, or harden in the sun to prolong their storage life. The smaller pumpkins

are the tastiest, but it’s hard not to try and grow a huge Halloween monster…

Germination rates should be good at this time of the year, growth will be speedy – and

the same goes for weeds. Pests will be proliferating too, so check your burgeoning

crops regularly and try to deter them (organically and with biological controls to

protect the ecosystem). With any luck, some gentle rains, sunshine and a little TLC,

you will be harvesting your own home grown produce in a matter of weeks.

bottom of an all-male

embryo conundrum

Ne’er cast a clout till May is out. An old

English proverb which I casually threw into

the conversation while riding along some

especially beautiful country lanes with my friend Jilly.

She was however surprised to learn that the saying does

not refer to the month of May but to May the other

name for clouds of white hawthorn

blossom that is everywhere at this time

of year. And if you’re interested in all

that oldie Englande stuffe, then you

might also want to know that way back

then clout had many meanings, most

commonly used when giving someone

a great thump on their head, but also

a piece of cloth or clothing. Hence

'Ne’er cast a clout till May is out' does

in fact mean don’t take off your winter

woollies till the hawthorn is out!

This year however we have all had to

make an exception. The last few weeks

of April have been glorious, T-shirt

weather, so I definitely cast my clout

too early and enjoyed every minute

of it. And I haven’t minded one bit

getting up in the middle of the night

when I’ve been on the late lambing

and calving shift, to enjoy the dawn chorus, watch the

sun come up and, one morning, Mother Nature even

threw in a 4am eclipse of the moon. All very special.

But we’ve finished lambing now and only have a few

more calves to go. But here’s a strange thing, we’ve

had fourteen so far, out of sixteen, and all but one

have been bull calves. What on earth is going on?

As we all know, at conception there’s a fifty per cent

chance of it being a male embryo and a fifty per cent

balance out. But thirteen out of fourteen does seem a

bit extreme and must, I feel, warrant

further investigation as to the reasons.

And I found it (what did we do before

the Internet!) According to the Trevis-

Willard Hypothesis, at conception there

will indeed always be an equal number,

but something can then happen to make

the male embryos more successful than

the female ones. The things that influence

this are whether she had a male calf the

last time around, though no one seems

quite sure why that might be, what her

BC score was at mating (BC is a body

condition score that goes from 1, very

thin to 5 very fat) and the plumper the

cow the more likely she is to carry a bull.

And then there’s the weather. If the

sun shines, the rain falls softly and the

grass is lush and plentiful then more bulls

will be born nine months later – but

this is probably because the cows will then be fatter and

BC will have an impact. As you can imagine, Messrs

Trevis and Willard studied a herd of 500 dairy cows

over several years to create their hypothesis, so sixteen

cows at Coopers Farm for one year is hardly statistically

sound but whatever, let’s hope the spring grass is lush

keeping them plump for when the bull goes back later

this month and next year may be a pinker one than

this. And it would be nice if the last two were heifers.
