exquisite cuisine, led by Executive Chef
Jerome N orton. A visionary in the kitchen
and a leader in the club?s commitment to
excellence, Chef Jerome works closely with
the wine team to design menus that do not

With every menu, he asks: What is the w ine
saying? How can the dish respond? The

the wines took centre stage. The brand

"Three principles shape my practice and
each emphasizes the open-ended process
of making paintings and texts:
development by transformation
(Stanley William Hayter, Atelier 17, Paris);
form is never more than an extension of
content (Robert Creeley in Charles Olson,
?Projective Verse?); the medium is the
message (M arshall M cLuhan).
A close reading of contemporary poetry
and poetics, and of Canadian, American,
European and Asian art, also informs my
practice as a painter and printmaker."

"I work in serial runs of various lengths,
clusters of work, each of which explores a
particular nexus of emotional,
conceptual, aesthetic and technical
challenges. Sometimes the clusters break
down into subsets of pairs, trios or
quartets of paintings or prints, each
subset exploring a tangent or angle
suggested by the direction of the main
group.
Sometimes I work in a diptych format or
I?ll bisect a horizontal format with a
vertical line to make a fictive diptych:
both formats rime with the pages of an
opened book. In addition, my preferred
format in scale rimes with the standard 8
½ ? x 11? letter page, which further
proposes a rime between a painting and
a manuscript. In one sense, each painting
is a page from a manuscript, a book in
progress. For me, painting and writing ??
mark making ?? are one activity, the
basic work of the hand.
In the studio the search is for discovery
through proprioception (sensibility within
the organism by movement of its own
tissue), that is, the intelligence of the
body. In my practice it isn?t reason over
passion, or passion over reason, but
reason w ith passion. Not depiction of
?the real? but reenactment of the real
through the proprioception of rimed
experience, language, landscape and
art. My interest is not in representation,
but in presentation."

Pierre Coupey, raised and educated in
M ontreal, earned his BA from M cGill
University, studied art in Paris, and
completed his MA in English and
Creative Writing at UBC. He also holds
a Certificate in Printmaking from
Capilano University.
A founding co-editor of The Georgia
Straight and founding editor of
The Capilano Review , he now serves on
The Capilano Review Contemporary Arts
Society Board.
Coupey has received numerous awards
and grants, including support from the
Canada Council, the BC Arts Council,
and the Audain Foundation.
He was honoured with the Distinguished
Artist Award from FAN S in 20 13 and was
elected to the Royal Canadian
Academy of Arts in 20 17.
His poetry, chapbooks, and catalogues
have been widely published, and his
visual art has been exhibited nationally
and internationally.
His work is held in major public
collections including the Vancouver Art
Gallery, Canada Council Art Bank,
Simon Fraser University, and the
West Vancouver M useum.

"My practice deals with exploring specific
natural and architectural spaces, and
reframing these spaces through the
embodiment of a different set of senses,
memories, and imagination. Anchored in my
own memories and perceptions, my paintings
and sculptural installations are manifestations
of this transient nature of space and its
elements? from which I hope a viewer can
extract his or her own experience unrestricted
by the barriers between the real and the
surreal.
Through my practice, the use of space and the
innerscape is reframed and expressed through
gathering objects or images of architectural
and natural spaces, and re-appropriating
them through my paintings and draw ings. By
transforming these spatial images through my
work, I attempt to explore complex
relationships between architecture,
perception, and imagination. Through this
exploration, I hope my work can open up a
contemplative and imaginative perception of
space through this relational process and that
the interplay between the paintings, drawings,
and sculptural installations evoke in the viewer
their own series of contemplative moments as
they pass through their own innerscape."

20 th w edding anniversary was a

just above the cellar, and the
intimate tastings became more

As interest in their wines grew, so too did the
need for space. In 20 16, the Fitz family made a
decisive move by acquiring the historic N UPOD
fruit and vegetable warehouses? an industrial
complex designed by celebrated architect
Emil Bellu?.
They began transforming it into a sophisticated
winery equipped with modern technology,
elegant tasting rooms, and a sleek wine shop.
The doors officially opened in 20 20 , marking a
new chapter in the Carpate Diem story? one
where innovation and tradition coexist
beautifully.
A SEN SE OF PLACE
Carpate Diem cultivates 13 hectares of
vineyards in the heart of the M alokarpatská
wine region, specifically around ?enkvíce and
the town of M odra. These vineyards are
managed through integrated protection
methods, with zero tolerance for herbicides,
insecticides, or harmful chemicals. Instead,
natural treatments from Bioka are used to
support the vines?health.
The vineyards?varied altitudes and soils lend
remarkable complexity to the wines. A highlight
came in 20 18, when the winery celebrated its
first harvest from the ?nauda locality in
Modra? 4.6 hectares of promise realized in
every glass.
ORGAN IC BY N ATURE
Although Carpate Diem formally entered the
EU?s organic certification process in January
20 21, their methods have always been rooted in
sustainable, organic principles.
For the Fitz family, organic is not a marketing
strategy? it is simply the right way to treat the
land.
Currently in the final stages of the three-year
certification process, Carpate Diem?s wines will
soon carry the official EU organic symbol. Until
then, their commitment speaks for itself through
careful vineyard management, hand-harvesting,
and minimal intervention in the cellar.
THE HISTAM IN E- FREE DIFFEREN CE
Where Carpate Diem truly stands apart is in its
natural production of wines with extremely low
histamine levels. This discovery was made not
by design, but by testing? an organic outcome
of their pure winemaking philosophy. Certified
laboratory analysis confirmed that their wines
are safe even for individuals with histamine
intolerance (HIT).
With histamine values under 0 .5 mg/ l in most
bottles, these wines open the door for
enjoyment to those who may have previously
avoided wine altogether. As winemaker and
technologist Peter Fitz explains, ?It is just
normal wine? elegant, expressive, and gentle
on the body.?
M ETICULOUS FROM VIN E TO GLASS
The process at Carpate Diem is intentional at
every stage. Grapes are hand-selected and
cooled immediately upon harvest to preserve
freshness. The must is never sulphurized;
instead, it is clarified using natural grape
tannins and temperature control.
Fermentation is carefully monitored and halted
when necessary via cross-flow filtration? never
with additives. Wines are matured in stainless
steel tanks under nitrogen, then bottled in a
sterile environment to maintain purity.
Stabilization is done on a wine-by-wine basis,
with only minimal sulphur dioxide used. For
fining, the winery uses bentonite clay,
no synthetic agents, no shortcuts.

"When London?s oldest gentlemen?s club was
founded in 1693," remarks Founder
Johannes Kattus, "the narrow building that
is Am Hof 8 had already been firmly
established in the center of Vienna for
almost 20 0 years."
