mystery express

Adventures
of purpose

Before they became the travel
maestros we know today, Andries
Hendrik Potgieter and Wiaan Fourie
were icons in the worlds of music
and fashion. Both had successful
modelling careers, gracing runways
at prestigious events like New York
Fashion Week, Africa Fashion Week,
and SA Fashion Week.
In fact, their paths actually first
crossed during SA Fashion Week,
where Andries invited Wiaan to
perform with him during a show.
That collaboration sparked an instant
connection, and they’ve been
inseparable ever since - like brothers
from another mother. Following
their successful colab, Wiaan joined
Andries in the Afrikaans music duo
DZL, where they combined their
talents to create chart-topping hits.
Their shared experiences in
entertainment laid the foundation for
their future partnership, eventually
leading to the creation of Toerbroers.
Today they are permanently involved
in tourism and nature conservation,
and especially the preservation and
protection of endangered species.
Their passports, now brimming with
stamps from countless journeys, are
a testament to their transformation
from fashion icons to seasoned
globetrotters.
“We had been travelling ourselves
for many years and were also
involved in nature conservation,”
says Andries. “Time and again, our
fans said they would like to join us
in our adventures. So we listened,”
kicking off their group tours with a
trip to Thailand in 2018. And what a
resounding success - it sold out in
just 17 minutes!
“It was an amazing experience
to show our guests one of the
countries that we love and also why

it’s important to travel,” adds Wiaan.
“Travelling opens your mind to new
experiences and also shows you how
lucky we are to live in South Africa.”
Their dynamic partnership is a key
ingredient to their success. Andries’
wife, Sya, manages the administrative
aspects of their ventures, ensuring
everything runs smoothly behind
the scenes. On tour, Andries typically
takes the lead on day-to-day logistics,
keeping the itinerary on track.
Meanwhile, Wiaan brings the energy
and humour, engaging guests with
his infectious laughter and quick
wit. “But we’re both able to take on
whatever role is necessary given the
circumstances,” explains Andries.
When asked about destinations
that left a lasting impression, the
Toerbroers highlight Turkey as a
delightful surprise. “What an eyeopener,”
they share. “We visited for
the first time in 2022 without any
specific expectations. However,
once we experienced its rich history,
diverse landscapes, vibrant traditions,
delectable cuisine, and excellent
shopping, we’re amped to return.”
The favourable exchange rate
between the rand and the Turkish
lira further enhances its appeal.
“Currently, we organise about three
tours to Turkey each year,” they
mentioned, reflecting the country’s
special place in their hearts.
Fast forward to today, and the
Toerbroers have taken their passion
to the small screen with their reality
TV series, Toerbroers: Jou Toekoms,
airing on kykNET. The show follows
45 young students, called joggies, as
they embark on a journey exploring
careers in nature conservation and
tourism. Through challenges and
mentorship, the group is narrowed
down to a top ten, after which
someone is voted out in each
episode The final top three walk
away with fantastic prices and great
opportunities.
“It was rewarding to see how the
students handled the experiences,”
says Andries. “Many of them had
never even been close to a wild
animal. Observing their personal
growth and finding their place in the
tourism industry was truly inspiring.”
The Toerbroers hope that viewers,
especially young ones standing at
the crossroads of their future careers,
find inspiration and motivation
through the show.
“We want to instill a sense of
possibility. Of hope. There’s a future
for young people in the tourism
industry where they can achieve
their dreams through hard work and
dedication,” they emphasise.
What sets the Toerbroers apart isn’t
just their curated travel experiences
but their unwavering commitment
to conservation. They’re actively
involved in preserving endangered
species, ensuring that their tours not
only showcase the world’s beauty
but also contribute to its protection.
“To see an orphan rhino pull through
to become an energetic adult with
future aspirations is so rewarding,”
highlights Andries. “We have
also been closely involved in the
rewilding of three small cheetahs.
They were orphaned, and Toerbroers
and our guests supported their
rehabilitation to such an extent
that they are now three-years-old,
hunting for themselves and living
their best life.”
Their conservation efforts extend
beyond their tours. The Toerbroers are
partners with organisations like the
Cheetah Outreach Trust, contributing
to projects that mitigate humanwildlife
conflict and promote the
preservation of free-roaming cheetah
populations in South Africa.
With more than 100 tours annually,
being the largest Afrikaans
travel group in the world, and a
growing educational platform,
Toerbroers continues to inspire and
educate. Their blend of adventure,
conservation, and mentorship offers
a unique experience for travellers
and students alike. As they say, “the

To further their mission, Andries and Wiaan established the Toerbroers Campus,
offering accredited courses in tourism and conservation.
Located a stone’s throw away from Pretoria, the campus provides students with
both theoretical knowledge and hands-on experience.
Graduates receive NQF Level 4 certificates, recognised both locally and
internationally, preparing them for careers in the tourism industry.

Brewing boundaries
Calm at the crease and cool behind the counter. Rassie van der Dussen is as
serious about a good innings as he is about the perfect cappuccino. Between
Proteas tours and pulling shots at his coffee shops, he’s building a legacy
that’s grounded, passionate, and proudly local.

Whether he’s smashing sixes or perfecting a pour-over,
Rassie van der Dussen proves you can have your coffee -
and drink it too. While most know him as the calm, focused
Proteas batsman with a steely gaze, here in our midst, he’s
also the co-founder of Abantu Coffee. Vibey coffee shops
based all around Pretoria, with a loyal local following and a
mission rooted in more than just espresso.
“Life’s too short for bad coffee,” he quips, and we get the
sense he means it - about coffee and life.
Whether he’s facing down bowlers at 150km an hour or
rolling up his sleeves in the coffee shop, Rassie doesn’t miss
a beat. He’s passionate about people, addicted to caffeine
(in moderation, of course), and happiest in the bush with his
wife Lara, watching birds and switching off from the buzz of
cricket tours and business meetings.
We caught up with him between innings and espresso shots
to chat all things cricket, coffee, and his quieter passions.

When Rassie walks out to bat in green and gold, the nerves
still hit. “The first thing I think is, ‘Okay, here we go.’ Do
what you know you can do.’ That allows me to accept the
situation, assess the game and the match situation, and
formulate a game plan and blueprint as to how I’m going to
go about approaching my innings.
He made his debut at 29, fairly late by pro sports standards.
“I often wondered if it would ever happen. “My only goal was
to play one match for my country. I’m fiercely patriotic, so
having played more than 100 matches is a dream.”
Any on-field bloopers? “Many on the field yes, but the one
that comes to mind is actually a moment that happened
in one of our coffee shops. I was doing a TV segment for a
show on SuperSport where they were doing a profile on me
and how good my coffee making skills are. When I got to
the part where I had to insert the portafilter (the part that
pushes the water through to give you an espresso), I didn’t
fasten it tight enough. And with the pressure these machine
generate when running a shot … coffee sprayed all over the
place. On camera. So ja, that was pretty embarrassing.”
As for any rituals before a big game? “I’m not superstitious
at all. I learned early on in my career that to try and pin
performance on certain rituals or processes is a futile
exercise. I rather focus on mental processes instead, what to
think and when to reset.”

The grind behind Abantu
It all started with a morning ritual. Around 2016, Rassie and
his long-time friend and cricket manager, Chris Cardoso,
would meet for what they called a ‘capp test’ - a daily
catch-up over cappuccinos, chatting about everything
from cricket to business ideas. One of those ideas?
Opening a grab-and-go coffee container in Pretoria.
“We even came up with the name, PTA Bru Company, and
opened a bank account,” Rassie laughs. “But our first pitch
flopped, and with my cricket career picking up pace, the
plan got shelved.”
Fast-forward to 2020. Lockdown hit, cricket paused, and
the cappuccino dream came bubbling back. “For the first
time in years, we had time to plan properly. And that’s
when Abantu Coffee really started taking shape.”
Today, Abantu isn’t just a coffee shop. It’s a place with
purpose. “We loved coffee, sure, but the real motivation
was to build something meaningful. That’s why we called
it Abantu, which means ‘the people’s coffee’.
“Today, we have around 30 full-time employees across
multiple locations. But what I’m most proud of is the
culture we’ve built. We offer paid study, maternity
and family responsibility leave. We contribute to our
employees’ medical aid. Our operating hours are very
reasonable as to give employees an opportunity to have
a life outside of work, whether focusing on family or
career progression. These practices are rare in the often
unregulated hospitality industry.”
Rassie may not be the guy pouring your flat white (he
admits he’s not the best), but he’s very much hands-on.
“I’m involved in expansion, brand direction and making
sure we’re building something sustainable.”
His go-to order? A classic cappuccino. “It’s what most
people drink, so it helps me gauge the consistency
and quality.”
For the first year of business, Rassie mostly tried to stay
behind the scenes. “I wanted to see objectively if our
offering was good. People should say Abantu Coffee is
good because of our quality and experience, not because
they necessarily know me.”
And yes, his teammates are loyal fans. “Ryan Rickelton is
the toughest coffee critic. Loves his flat whites … and
loves pointing out mistakes. Luckily, he hasn’t had much to
complain about!”
If he could have coffee
with anyone? “Nelson
Mandela. His story and
resilience are inspiring.
I’ve read many books
about him and visited
Robben Island - it
would’ve been amazing
to sit down with him.”
SURPRISING FACTS
“Most people don’t know I’m a birder.
As in I like to watch and identify
birds. Growing up in the bushveld
of Limpopo, I was fortunate to be
amongst animals and nature, and
spending all my time there fostered a
love for the outdoors, and in particular,
birds. I even keep a list of all the
sightings I’ve had, and I’ve been lucky
to have some very rare sightings.”
He says people often think he’s closed
off and introverted. “I get that a lot. I
think it’s because I look so focussed
and calm when I bat. People see that
and perceive me as intimidating and
quiet. But I’m actually quite open
and chilled.”
His guilty pleasure? “At our shops we
have these traditional Pasteis de Natas
filled with Nutella. They’re dangerously
good. I try to stick to one … a few
times a week.”
Whether he’s in whites or behind the
coffee bar, Rassie van der Dussen
is a man of intention and heart.

Best beans? “Go for a medium roast—versatile, sweet, not too strong. Look for
South American blends for balance.”
Storage tip? “Don’t put them in the fridge! Keep beans sealed in a cool,
dark place.”
Barista blooper? “People often steam milk way too hot—that’s a no-no.”
Worth buying a grinder? “Absolutely. A simple hand grinder is enough to start
playing with grind sizes and bean types. Start small and elaborate as you go, and
do not to spend a lot of money on fancy machines unless you know that you’ll
use them every day.
Thinking of opening a coffee shop? “Many people see it as a fantasy or a ‘nice’
business to have, but the reality is that at the core it’s still a business. Do your
research. It takes capital, time, and a lot of hustle. But if you love it - back yourself.”

Chocolate and whisky tart
Rich and indulgent, our chocolate and whisky tart is easy

Ingredients:
• 1 sheet ready-made shortcrust pastry • 200g dark
chocolate (70% cocoa), chopped • 150ml heavy cream • 2
Tbsp whisky (Scotch or bourbon) • 1 Tbsp butter • 1 Tbsp
brown sugar (optional, for extra richness) • Pinch of sea salt
• Cocoa powder for dusting (optional), chopped nuts and

Method:
Prepare the pastry. Preheat your oven to 180°C (350°F). Roll
out the shortcrust pastry into a 23cm tart tin and press it
gently into the sides. Trim any excess pastry. Prick the base
with a fork and line with baking paper and baking beans (or
dried rice). Blind bake for 12-15 minutes, then remove the
baking paper and beans. Bake for another
5 minutes until golden. Let it cool completely.
Make the filling:
Heat the cream in a small saucepan until just simmering
(don’t boil). Remove from heat and add the chopped
chocolate, stirring until smooth. Stir in the whisky, butter,
brown sugar (if using), and sea salt until fully combined.
Assemble and chill:
Pour the chocolate mixture into the cooled tart shell and
smooth the top.
Let it set at room temperature for 1-2 hours or chill for 30
minutes for a firmer texture.
Serve:
Dust with cocoa powder and serve with a scattering of
chopped pistachios or fresh figs (any nuts and/or fruit
will work).

Coq au Vin with Leopard’s Leap Culinaria Pinot Noir
The classic French Coq au vin is a
hearty stew of chicken braised in
wine. Typically a red Burgundy wine
is used and the dish therefore works
exceptionally well with Leopard’s
Leap Burgundy-inspired Culinaria
Pinot Noir!
You’ll need: Red wine marinade - 750ml
Leopard’s Leap Culinaria Pinot Noir, 3
sprigs of thyme, 1 bay leaf, 5 parsley
stalks, 1 celery stick, chopped, 1 carrot,
peeled and chopped, 1 onion, peeled
and chopped, 3 garlic cloves, peeled
and crushed.
1,5kg free-range chicken, salt and
black pepper, olive oil, 100g thickcut
bacon, cut into lardons, 10 small
shallots, peeled or 3 red onions,
peeled and halved), butter, 250g
button mushrooms, 2 cloves of garlic,
peeled, 60ml Cognac (Brandy), 300ml
brown chicken stock, flour
Garnish: 50g crispy bacon, 100g
forest mushrooms, parsley leaves,
roughly chopped
To make: Pour the wine into a heavybased
saucepot. Add the thyme, bay
leaf, parsley, celery, carrot, onion, garlic
and cook over medium heat until it
has reduced by half. Remove from the
heat and allow to cool.
Joint the chicken into 8 portions,
place in a large bowl. Pour the
red wine marinade over and take
care to evenly coat the chicken.

Cover and place in the fridge to
marinate overnight.
Preheat the oven to 180 °C.
Strain the wine and reserve for later
use, set the chicken aside. Discard the
vegetables and herbs. Dry the chicken
on kitchen paper and season with salt
and black pepper.
Heat olive oil in a cast-iron casserole,
seal the chicken pieces on both
sides until golden brown, remove
and set aside. Sauté the bacon until
crispy and golden brown, drain on
kitchen paper.
Sauté the shallots in butter and olive
oil, add the mushrooms and garlic
and cook until golden. Drain any
excess fat and deglaze the casserole
with Cognac. Add the chicken pieces,
bacon, red wine marinade, stock and
thyme. Cover and place in the oven,
and cook for an hour or until tender.
If the sauce is not thick enough, drain
off into a saucepot. Thicken with a
paste made of a small amount of
flour and some of the red wine sauce.
Return the sauce to the casserole.
Garnish with crispy bacon, sautéed
forest mushrooms and parsley.
Serve with the 2023 Leopard’s Leap
Culinaria Pinot Noir - a delicate wine
with an interesting combination of
old world burgundy-style Pinot Noir
and new world fruit-driven Pinot Noir.

White wine (so not-trad)
Coq au Vin
Made with white wine, this is a fresh,
lighter, but no less delicious take on a
trad coq au vin. Serves four.
You’ll need: 8 chicken thighs (or
pieces of your choice), 100g thick-cut
bacon, 2 cups sliced mushrooms, 8
-12 French shallots, 2 large cloves
garlic, crushed, one-and-a-half cups
dry white wine, leaves from two
sprigs fresh thyme, olive oil, two
tablespoon butter, salt and freshly
ground black pepper, chopped
Italian parsley to serve
To make: Preheat oven to 220°C.
Place chicken pieces (skin side
up) in a roasting pan. Chop bacon
and sprinkle over chicken. Sprinkle
thyme leaves and season with salt
and pepper. Generously drizzle olive
oil over the chicken, place in oven
and roast for 20 minutes. Remove,
carefully add the wine to the roasting
pan, and roast for further 30 to 35
minutes, or until chicken is cooked.
While chicken is cooking, melt butter
in a pan and add crushed garlic.
Cook gently over medium heat for
a minute or so, and then add the
sliced mushrooms. Cook until lovely
and browned.
Once chicken is cooked, stir in
mushrooms, sprinkle with parsley and
serve with brown rice or a fresh, crusty
Ciabatta to soak up the juices.
Chicken quarters in a red wine marinade with Nederburg Baronne
When you combine chicken with the rather noble Nederburg
Baronne, you end up with a dish that’s worthy of the best
dinner party. This Cabernet Sauvignon-based blend includes a
good dollop of spicy Shiraz ... making it the hero of the sauce
that’s also spiced with tomato and chipotle. The chicken can
be cooked in the oven, or over the coals ... both ways equally
delicious. Serve with Cajun-roasted potatoes, along with a glass
of the same wine. Serves four.
Full of easy charm with rich,
dark berry fruit and spice,
the Nederberg Baronne
2023 is Cabernet Sauvignon
and Shiraz blend ... a great,
enjoyable everyday red. R95

You’ll need:
4 chicken quarters, 4 medium potatoes or sweet
potatoes, cut into 8 wedges each, 3 Tbsp olive oil,
6 whole cloves garlic, 2 tsp Cajun spice mix, salt
and pepper.
For the marinade: 2 Tbsp olive oil, 1 finely chopped
onion, 2 crushed garlic cloves, 1/2 cup tomato sauce,
1 cup Nederburg Baronne, 1 tsp chipotle chilli spice
(or smoked paprika), 2 sprigs rosemary, salt and pepper
To make:
For the marinade, cook the finely chopped onion in the
oil over a medium to low heat for about 8 minutes or
until soft. Add the crushed garlic and cook for another
minute. Then add the rest of the ingredients and leave
to simmer for 10 minutes. Blend the sauce until smooth
and leave to cool. This sauce can last in the fridge for
about a week.
You can marinade the chicken in the sauce overnight,
which will deliver the best results, as the flavour from
the marinade really permeates the chicken. Or, if you’re
really strapped for time, just baste the chicken with the
sauce as it cooks. You can also either roast the chicken
in the oven, or cook it over medium coals on an
open fire.
Preheat oven to 200°C.
Parboil the potatoes by starting them covered in cold
water. As soon as the water comes to the boil, set
a timer for 10 minutes. Check the potatoes after 10
minutes by pricking them with a knife – if you can stick
the knife through the potatoes without resistance, they
are ready to be carefully drained and set aside. If not,
cook the potatoes for another 5 minutes or so. Keep a
close eye on them, as to avoid them from falling apart.
After draining the potatoes, leave them to steam dry
in a colander for a couple of minutes. Carefully toss
the parboiled wedges in olive oil, garlic, cayenne spice
mix, and salt and pepper. Next, line a large baking
sheet with foil and spread the wedges out in a single
layer. Roast alongside the chicken for 30 minutes – or
until crispy and golden – and toss them at the 15
minute mark.
For the chicken, line a baking tray with foil, add the
chicken and the marinade and roast for 40 minutes (or
until the chicken is cooked). Baste the chicken every
10 minutes. If the marinade hasn’t charred enough you
can pop the grill on for the last 5 to 10 minutes (just
keep an eye on it).
When cooking the chicken on a fire, make sure you
have low to medium coals that will last for 40 minutes.
The marinade burns easily so keep the chicken over a
medium heat and not too close to the coals.
Serve the chicken and potato wedges with a salad and
a creamy dipping sauce for the wedges. Serve with a
glass of Nederburg Baronne.

Vegan friendly dairy-free avo smoothie
Serves one.
Ingredients:
1 avocado, chopped; 1 banana, sliced; 125ml
(half a cup) chopped pineapple; handful baby
spinach; 180ml (three-quarters of a cup) orange
juice + extra; squeeze of lemon juice, to taste
Method:
Freeze the avo, banana and pineapple overnight
in an airtight container. Blitz together all the
ingredients until creamy. Thin out with extra
orange juice, if preferred. Serve immediately.
Tip: If you don’t have time to freeze the fruit, blitz
them fresh with a handful of ice cubes.
Avocado, kiwi & mint smoothie
Serves two.
You’ll need:
1 to 2 ripe avocados, peeled, stoned and quartered; 2 to 3 kiwis, peeled and halved;
1 handful baby spinach leaves, rinsed; half a cup crushed ice; half a cup water;
quarter of a cup fresh mint
Method:
In a blender combine all ingredients and purée until smooth.
Divide into two glasses and serve with mint leaves to garnish.

INDOOR PLANT OF THE MONTH
Dracaena marginata is also known as the Dragon Tree and originates from
Madagascar. With its spiky sword like leaves and slender stems, it will stand out
on its own or among a collection of indoor plants. It grows slowly when indoors
and can be pruned to keep it to the desired height. Just cut down to the required
height and new branches will sprout underneath the cuts. It likes a warm, bright
room, with some filtered sun but no direct sun on its leaves. Water moderately so
that the soil doesn’t dry out completely or become waterlogged. Plants don’t need
fertilising in Winter but it can be given a boost of liquid fertiliser at the beginning of

Orange for its brilliant autumn
coloured flowers. This cross
between a petunia and
calibrachoa has the flower
power of a calibrachoa but
large flowers like the petunia.
Plants are also more tolerant
of wet weather. The mounded
compact growth of Sunset
Orange suits containers and
hanging baskets and it will also
perform well in the garden,
keeping its neat shape. It needs
plenty of sun and regular
watering but be careful of over
watering. Fertilise once a month
to encourage new flowers.

VEGGIE OF THE MONTH Micro Greens Oriental Mix is a tasty assortment
of spicy and peppery mustard microgreens that can be grown in a tray on a
sunny windowsill or patio table. The mix of rocket and red mustard, coriander,

thickly in a seed tray and keep moist. Enclosing the

and family moments
From charming cottage life at Three Tree Hill near Bergville, to full-on family
fun at The Cavern, we discovered the magic of the Drakensberg - one walk,
one delicious meal, and one simple pleasure at a time.
There's no denying that the Drakensberg is ideal for family
travel. Open space, fresh air and the kind of setting that
encourages you to slow down and simply be together. We
stepped away from the usual routine and found a slower
pace, where the days felt fuller and the distractions fewer.
First stop: Three Tree Hill
Perched on a ridge overlooking the historic Spioenkop
battlefield, Three Tree Hill is more than a lodge - it’s a love
letter to heritage, history and nature. The area is rich in
stories of the South African War, and battlefield tours can be
arranged for those interested in exploring this significant
chapter of our past. Our cottage - the original farmhouse -
was all charm and comfort, with wooden floors, cosy decor
and stunning bushveld views from a wide veranda. But
what truly set this place apart was the attention to detail -
bedtime storybooks and teddies waiting for the kids, freshly
baked rusks at the tea station, and little baskets to collect
eggs each morning.
We spent our days walking, exploring the beautifullycurated
library and looking for animals from our veranda.
In the evenings, we sipped wine while the children
ran around outside. It was slow living at its finest. Each
meal was lovingly prepared - think charcuterie boards
with homemade pickles and preserves, and fresh bread
baked daily.

Then, to The Cavern
Just an hour away, The Cavern welcomed us
with its signature blend of warm hospitality and
old-school holiday magic. The setting is just
beautiful - the thatched hotel (which dates back
to 1941) is surrounded by mountains, and the
atmosphere is utterly relaxed. There’s a rhythm to
life here - breakfast, walk, tea, lunch, kids’ activities,
sundowners, dinner - that makes it so easy to just
be. From the get-go, the kids were swept into a
world of pony rides, painting, scavenger hunts and
games with the fabulous childminders, giving us a
blissful break.
The rooms were spacious and bright, with views
straight onto the gardens. We fell asleep to the
sound of frogs and woke to the chatter of birds. No
alarms. No to-do lists. Just simple, beautiful days.
It must be said, the food alone makes the trip
worthwhile. And yes, we went back for seconds.
Every time. Breakfasts are relaxed and leisurely,
lunches feature a wholesome harvest table,
and dinners are a three-course affair. A personal
favourite? Creamy mushroom risotto with herb and
parmesan shavings, followed by maple and sesameroasted
duck with blueberry port sauce, and a sweet
finish of crème caramel with fresh fruit, brandy snap
and ice cream.
