Preneur World Magazine spoke to leading skincare expert Emma

Coleman to her top tips for looking after your skin in your 40s, 50s, 60s

and beyond including what to prioritise at every stage of life.

As skin ages through our 40s,

50s, and 60s, natural declines in

collagen and elastin production are

shown in the form of fine lines,

increased dryness, and sensitivity.

As we move through each decade,

our skin’s needs shift in tandem

with our hormones, lifestyle, and

environment.

With a targeted skincare routine

and some lifestyle adjustments, it’s

entirely possible to keep your skin

healthy and luminous at every

stage of your life.

As a dermatology nurse with a

special interest in holistic skin

health, I’ve found that the most

impactful and lasting results

come when we look beyond

skincare products and take

a truly integrated approach.

Diet, lifestyle, and supplements

play just as important a role in

how our skin looks and how it

functions just as much as the

skincare products we apply,

which is supported by research.

Throughout my 20-year career,

I’ve used this approach with my

clients to help with many skin

concerns and conditions. Whether

it’s recommending omega-6

oils for dry skin, or probiotics

for hormonally sensitive skin, I

always tailor advice to each and

every individual’s needs; often

this includes personalised diet and

recipe suggestions.

IN YOUR FORTIES

The 40s bring hormonal shifts

and for women this is often when

we approach the perimenopausal

stage of life. Due to the hormonal

fluctuations, skin can become

more sensitive and irritated.

To help counteract this, we as

women should begin focusing on

nourishment and protection of the

skin barrier.

My first recommendation is

to make sure you’re using

antioxidants within your daily

skincare routine. One of my

favourite skincare ingredient

combinations is antioxidants

such as Vitamins A, C, and E

with Niacinamide or Flavonoids.

Together this combination will

work synergistically to prevent

oxidative stress on the skin help

defend against free radicals and

improve skin tone and texture.

Vitamin E within skincare is often

an overlooked ingredient and

doesn’t carry the kudos of some of

the more active ingredients around

today, yet there is a lot of evidence

supporting this antioxidant’s

powerful benefits in protecting the

skin’s barrier and improving skin

texture. If you are experiencing

sensitive skin, this would be a

good ingredient to assist healing.

In your 40s it’s also good to start

thinking about your diet and what

you are fuelling and nourishing

your body with. In the first

instance, I would look at a low

glycaemic index diet with whole,

unprocessed foods. Refined sugar

and high salt content can leave

your skin dull and dehydrated.

Think leafy greens, omega-rich

fish, and hydration from within.

IN YOUR FIFTIES

At this time, we are starting to hit

the Menopause years which will

see the oestrogen receptors in the

skin decrease significantly. As

a result, the skin can experience

more dryness, sensitivity, and

even the reappearance of acne,

rosacea, or eczema. If you are

experiencing a dramatic skin

change or a new condition,

you must speak with a trusted

Dermatology Specialist or your

GP to get the correct treatment.

So often I see patients seeking

advice on Social Media platforms

or ‘Do-It-Yourself’ remedies

that can irritate symptoms and

the skin appearance. A targeted,

personalised treatment will give

far more effective results and

improvements.

I always recommend to my

clients in their 50s to ensure

they’re cleansing their skin twice

a day. You don’t need to have a

complicated routine, a cleanser,

followed by a hyaluronic serum

and moisturiser will help hydrate

the skin. Building a great routine

that works for you is important

before adding any topical

treatments or devices. Common

skincare rules we’ve followed in

previous years of our life such as

‘remove all makeup’ still apply!

Instead of traditional makeup

wipes, try biodegradable waterbased

wipes for gentle removal.

It’s a good time as well to

introduce an at-home device

like a weekly LED mask, used

on a freshly cleansed face

before applying any serums or

moisturises to help boost collagen

and calm inflammation.

Retinol is one of my favourite

multi-tasking ingredients and is

a great addition to the evening

routine. This vitamin A derivative

will clear out pores and increase

skin cell turnover, reducing signs

of ageing, preventing acne, and

maintaining skin’s elasticity and

firmness over time.

IN YOUR SIXTIES & BEYOND

As we move through and beyond

menopause, the impact on the skin

is visible with fine lines turning

into deeper wrinkles, creping,

and a loss of volume in the midand

lower face. Now the estrogen

levels will be at their lowest which

affects the elasticity of the skin so

we will see some lots of elasticity

around the lower face and the neck

as well.

If you can visit your local skin

clinic a treatment like Morpheus8

or radiofrequency can help tighten

and firm the skin. At-home

alternatives like microcurrent or

radiofrequency devices (such as

Magnetone) offer a budget-friendly

boost between professional

sessions.

A Vitamin C serum will be a great

introduction to your morning

skincare routine and can help

prevent and fade age spots. While

in the evening, use a hyaluronic

acid serum nightly, and consider a

honey mask a few times per week.

Honey is a natural humectant and

anti-inflammatory - an underrated

but powerful tool for soft, calm

skin.

AT EVERY AGE

Whether it’s chemical or natural

sunscreen is one of the best gifts

you can give your skin because

even short-term exposure to UVA

and UVB light creates long-term

changes in skin including reduced

DNA production and accelerated

ageing. No matter the decade, you

must apply this product in your

routine daily.

It was supposed to be a picture-perfect escape - azure

Mediterranean waters, warm August skies, and the

easy companionship of old friends. Yet, in the early

hours of 25 August 2022, aboard a boat far from

the nearest shore, Millie Mackintosh found herself

You’ve been selected to play on

P the International Day at this year’s

Chestertons Polo in the Park – what are

you most looking forward to about playing

at Hurlingham Park, and what are your

thoughts on the event’s role in promoting

polo to wider audiences and raising the

sport’s profile?

I am and will always be honoured to

M be selected to play for my country

wherever the venue, and being selected

to play in this year’s International Day at

Chestertons Polo in the Park is no different.

I’m excited for the opportunity to play

with arena greats in Max Charlton and

Jack Hyde. The energy and enthusiasm of

the crowd who gather for this event in the

middle of London is unique. I love that this

event brings polo to many who may not

have previously experienced the excitement

or adrenaline of our wonderful sport.

Winning the Ferguson Trophy for Best

P Young Player of the Year in 2024 is

a significant accolade – how did that

recognition impact you, and what does it

mean at this stage in your career?

Being awarded the Ferguson Trophy

M was an enormous honour and one I’d

never thought I’d be considered for, so

receiving it is all the more special to me.

The award for me is also recognition to all

those behind the scenes who share in the

hard work, commitment, dedication and

passion it takes – my parents and siblings,

grooms, support team and everyone who

has been there throughout my journey. At

this stage in my career I continue to strive

and focus on how to get the very best out of

my team and myself. I’d love to reach ten

goals here at home but I’m well aware how

difficult that will be.

Polo is clearly in your blood – what

P is it like growing up in a polo family

with your father Andrew Hine and

your brothers Louis and Ned? Do you feel a

sense of legacy when you ride out onto the

pitch?

Growing up in a polo family has meant

polo has always been a huge part of my

life. Polo is something we all share a

deep passion for – thankfully! Having my

dad as a mentor and role model has given

me invaluable insights into the sport. It has

been interesting to see how my brothers

and I have each developed our own playing

styles while still drawing from that shared

foundation. There’s definitely a sense

of pride when I ride out onto the pitch,

especially at a major event. For me it’s not

just about continuing a tradition, but also

about what I can contribute and give back

to the sport – in both women’s and mixed.

I am conscious of and extremely grateful

for the impact and influence my family

have had on my development and career so

far, and hope I can continue to make them

proud.

You’ve competed at some of the finest

P polo grounds in the world – which

venue holds the most special memories

for you, and why?

I’ve been fortunate enough to compete

M at some incredible polo grounds

around the world, each with its own

unique atmosphere. But if I had to choose

one venue that holds the most special

memories for me, it would have to be

Palermo, Buenos Aires. There’s something

about the history, the energy, and the

challenge of playing there that really stands

out. Whether it’s the unique location in

the middle of Buenos Aires, the level of

competition, or the people involved, it’s

always felt like a place where one hopes to

rise to their very best to match the occasion.

One specific memory that stands out was

my first year playing in the Argentine Open

at just 4 goals, which made Palermo even

more meaningful to me. An experience I

will always cherish.

Can you take us back to a game

P that truly tested you – physically or

emotionally – and how you rose to the

occasion?

One game that really tested me was

M the Ladies Silver Jubilee against

Argentina at Cirencester Polo Club.

The match was both physically demanding

and emotionally challenging due to the

huge pressure of such a close score line, a

super competitive opposition, along with

the outcome only being decided in the last

5 seconds of the game. I knew it would take

enormous efforts from each of our team members to

achieve the win so I stayed super focused, composed

and positive about every play and knew that my

preparation and the quality of my horses along with

sticking with our strategy would hold me in good

stead. In the end, we managed to turn things around,

and that victory, by only half a goal, remains one of

the most rewarding moments of my career.

What does your pre-tournament routine look

P like, both physically and mentally, and how do

you maintain peak performance throughout the

season?

My pre-tournament routine starts with solid

M physical preparation, then on match day a good

warm-up, including stretches, agility drills, and

practice chukkas to get my body in sync. Mentally, I

focus on strategies and tactics specific to each match,

visualising the game, and trying to stay calm under

pressure. Throughout the season, I maintain peak

performance by prioritising fitness, recovery, and

maintaining good communication with my team.

Which female polo player has inspired you the

most, and what lessons have you taken from

their career?

Two female players who have truly inspired

M me are Nina Clarkin and Hazel Jackson. Their

dedication to the sport, resilience, and ability to

compete at the highest levels have been incredibly

motivating. From each of their careers, I’ve learned

the importance of perseverance, dedication, getting

the best from their teammates, and constantly

pushing oneself to improve, regardless of the

challenges. They have both shown that with passion

and hard work, anything is possible in polo and they

have been richly rewarded with successes in both the

women’s and mixed polo.

As a role model yourself for women and girls

in polo, what message would you share with

aspiring female polo players hoping to break into the

sport at a high level?

To aspiring female polo players, my message

M is simple: believe in yourself and never

underestimate your potential. Polo is a

challenging sport, but with dedication, hard work,

and resilience, and some lucky breaks along the way,

you can achieve your dreams. Stay focused, keep

pushing your limits, seek advice and help from those

you admire and respect (and don’t be afraid to ask

questions or for help). Women belong in every level

of polo – just look at this year’s high goal!

With the demands of elite sport including intense

training, travel, and matches, how do you stay

grounded and maintain balance off the field?

Staying grounded and maintaining balance off

M the field for me is about creating time for the

things I enjoy and that recharge me. I make

sure to spend quality time with family and friends

(and my family certainly keep me grounded!), focus

on my hobbies, and try to take the time to rest and

recover. Managing my schedule well can sometimes

be challenging but finding a happy medium in all

I do helps me stay focused and maintain a healthy

balance between my personal life and the demands of

elite sport.

Finally, if you could play alongside any polo

players in the world, past or present, which three

would it be and why?

If I could play alongside any polo players, I’d

M choose Adolfo Cambiaso for his incredible

strategic mind as one of the all-time greats in

history, Nina Clarkin for her skill and leadership

on the field, and Lukin Monteverde for his passion

and ability to inspire teammates. Playing with such

legendary players would be an amazing opportunity

to learn and push my own game to new heights.

is an annual three-day polo

tournament that takes place from

Friday 6th to Sunday 8th June

at Hurlingham Park, Fulham.

The round-robin style tournament is

the ‘Twenty20’ of polo. The event

I’m planning another trip to Egypt. This time the

kids are coming. I can’t wait to see the look on my

youngest son’s face when he sees the pyramids,

and the Egyptian Museum in Cairo opens this year,

displaying the treasure Howard Carter discovered in

Tutankhamun’s tomb.

Here are some tips if your family fancies an Egyptian

holiday for the history books.

USE A TRUSTED TRAVEL AGENT

Use a trusted travel agent to book

your trip. There are companies that

specialise in looking after families (for example

Families Worldwide). Your flight, visa, transport,

accommodation, excursions, activities and especially

insurance should all be planned before you leave.

The tour operator will take care of your entry tickets

to museums, temples and anything relating to your

activities. The hot weather means most excursions

will take place in the morning or the evening, which

leaves you the afternoon to swim in the pool and

relax.

SAFETY & DRESS CODE

Safety was one of my concerns, but I felt

safe in Egypt. They have an impressively

efficient and visible police force. The people are

welcoming and friendly. Although, it is important

to understand that Egypt is a predominantly Muslim

country. On excursions it is respectful for adults to

cover shoulders, knees, and in religious places, the

head. I wore a long-sleeved maxi dress and head

scarf and wasn’t troubled. Members of our group who

wore less were occasionally harassed, however our

guide made sure they were safe. In the hotel, or on

the cruise boat, you may where whatever you want.

MONEY & TIPPING

Money and tipping can be confusing. The

wages in Egypt are low and tipping is

essential. I tried to tip with Egyptian pounds, but

dollars and euros are what people want. They will

refuse their own currency. Take a roll of dollar bills

or a bag of euros purely for tipping. The toilets

cost money and you will find that there’s always an

attendant that needs a tip.

SOUVENIR SHOPPING

Opportunities for souvenir shopping

will be included by your tour operator. I

was taken to a perfume merchants, glass blower,

stone mason, and hieroglyphic artisans where I

had the opportunity to make purchases without

dealing with street traders. I wouldn’t recommend

browsing market stalls with children. Traders can be

passionately insistent you buy something you don’t

want, which may frighten little ones. Your guide will

step in if this happens. A firm ‘no’ usually works.

WHEN TO VISIT EGYPT

The best time to visit Egypt is in between

December and April when it’s not too hot.

The Egyptian sun is intense. You’ll need plenty of

bottled water (do not drink the tap water), sun hats,

and sunscreen.

WHAT TO PACK

Wifi is rare and expensive. Download

movies or tv shows onto devices before you

leave. Pack an activity book (National Geographic

Kids do great ones) to get the kids excited about the

places they’re going to visit. I’d also pack a first aid

kit and snacks.

Educating Mathematically

Exceptional Children

At Preneur World, we recognise the unique

challenges faced by parents of children who display

exceptional talent in mathematics. Nurturing these

gifted minds requires more than traditional teaching;

it demands a nuanced approach that balances

cognitive development with emotional wellbeing.

To explore how best to support mathematically able

children, we turned to esteemed educational expert

Dr Colin Foster, Reader in Mathematics Education at

Loughborough University. In this exclusive interview,

Dr Foster offers ten insightful answers to the most

pressing questions about acceleration, enrichment,

homeschooling, and the social development of

mathematically exceptional young learners.

1. Should exceptionally able children in maths be

accelerated to a higher year group, or is it better to

keep them with their peers and offer enrichment

within their current year?

Both strategies can be effective and both can be

problematic. To some extent this depends on how

‘exceptional’ the child seems to be. Understandably,

parents will often put forward a particularly positive,

perhaps inflated, view of their child’s abilities. They

may be projecting onto them features of their past

selves, their other children or simply their dreams. It

is very important to try to be as objective as possible

in assessing your child’s exceptionality and to listen

to what others are telling you. If everyone around you

is saying ‘above average but not exceptional’, then

try to resist the temptation to assume that they are all

wrong!

A skilful teacher should be able to provide sufficient

challenge and stimulation for almost all of the

children within that particular age cohort. Frequently

this can be done within the confines of the same

curriculum, by offering stretching problems for the

child to solve. However, this may be impractical for

the extremely exceptional child, who may struggle

to thrive without some acceleration. In these cases

the potential benefits of this do need to be seen in

the context of challenges around socialisation, which

may often be complicated by the neurodiverse profile

that many mathematically exceptional children bring.

2. Some schools argue that mathematically advanced

children should remain in their current year group

and receive ‘deepening’ or ‘enhancement’ rather

than acceleration. From a cognitive development

perspective, does this approach effectively meet their

needs?

There are pros and cons and it really depends on

what you want for your child. There are multiple

‘best’ options. For the vast majority of above average

children, high-quality in-class enrichment will

probably be best. The UK Maths Trust (https://

ukmt.org.uk/) and the Mathematical Association

(https://www.m-a.org.uk/First-Maths-Challenge,

https://www.m-a.org.uk/primary-maths-challenge)

run ‘mathematical challenges’, full of challenging

mathematical problems that can be accessed by

children without needing to teach them additional

content. The problems draw on the mathematics

within the curriculum for those ages, but to solve the

problems requires using that knowledge creatively.

Mathematical puzzles, such as the books by Martin

Gardner and the problems on NRICH (https://nrich.

maths.org/), can challenge mathematically advanced

children to deepen and broaden their mathematics

without acceleration.

3. How can parents respond when schools say that

acceleration isn’t beneficial because children should

be ‘well-rounded’ rather than focused on excelling

in one subject? Does research support the idea that

acceleration harms holistic development?

There is an age-old debate in education over

specialisation versus generalisation, which is

ideological rather than something we can decide on

empirically. Traditionally, children are allowed to

specialise increasingly through the teenage years,

but until then are expected to be ‘rounded’. This

works better for some children than for others, but

really there is no ‘right’ answer. If development in

mathematics appears to be coming at the cost of

development in other important areas (e.g. reading),

then for me that would be a concern. If a child

refuses to do anything besides mathematics, that

needs addressing. But in many cases the exceptional

child is doing better than average across the board,

and in that case ‘spiking’ in mathematics would seem

to be unequivocally positive.

4. Many parents report feeling dismissed or

‘gaslighted’ when they raise concerns about

their child’s academic stagnation. How can they

present their case effectively, using research-based

arguments, to ensure their child receives appropriate

educational opportunities?

I think the first stage is always to listen to and

understand the school’s argument. Even if you are

certain that the school is mistaken about your child’s

needs, try to find common ground in supporting

your child’s learning. Recognise that the school has

to balance the needs of hundreds of children, and

may be much more concerned about underachievers

than overachievers. If the provision that you are

demanding is highly resource intensive, then you

are unlikely to be successful. Try to engineer a

compromise that is workable from the school’s point

of view while addressing your vision for your child’s

mathematical development.

5. What impact does a lack of academic challenge

have on exceptionally able children, particularly

in maths? Do they risk disengagement or

underachievement if their needs aren’t met?

I have seen exceptional children become withdrawn

and frustrated because their needs are not being met,

and that is desperately sad. If your brain thrives on

high levels of challenge, and you are fed a constant

diet of trivial, straightforward tasks, you are likely to

rebel against this by turning your talents and energies

elsewhere, such as towards seeking to disrupt school

lessons. This is obviously in no one’s interests.

6. For parents considering homeschooling their

mathematically exceptional child, what are the key

do’s and don’ts they should be aware of? How can

they ensure their child receives a rigorous yet wellrounded

mathematical education while also fostering

problem-solving and independent thinking skills?

Homeschooling is obviously a huge step and

commitment for any family. Parents will need

to think through how they will provide this, and

for what time period (with what exit strategy),

and consider their own needs and those of any

other children in the family, as well the financial

implications. When parents homeschool reluctantly,

because things have fallen apart at school, this can

put a lot of pressure on families. But when everyone

is positive about doing it, homeschooled children can

really thrive, and receive an education that’s at least

as broad as any school child – if not much broader. I

know homeschooled children who have wonderfully

broad experiences of the world and rich connections

with other families, both homeschooling and not.

Preparation

Neapolitan Pizza

For the topping

• 400g tomato passata

• 400g mozzarella cheese (torn

into chunks)

• 1 bunch fresh basil

• 40g dried oregano

• Sea salt and black pepper, to

taste

1. Make the dough: In a bowl, mix the yeast with lukewarm water until

creamy. Stir in sugar, olive oil, and salt. Gradually mix in flour and

knead for about 10 minutes until smooth. Cover and leave in a warm

place for one hour, or until it has doubled in size.

2. Shape the pizzas: Divide the dough into 4–5 equal balls. On a floured

surface, roll each into a circular pizza base.

3. Top the pizzas: Spread tomato passata evenly across each base.

Sprinkle over oregano, top with torn mozzarella, and season with salt

and pepper. Use a floured pizza paddle to transfer pizzas easily.

1. Prepare the grill: Set up your barbecue for indirect cooking at 260°C.

fine dining, his journey to become a Michelin-starred

restaurateur and launching his own drinks brand

Your journey to becoming a Michelinstarred

chef has been remarkable.

P

What was the defining moment when

you knew you wanted to pursue a career in

fine dining?

I haven’t got one of those romantic

T stories where I was baking scones

with my nan at nine years old. I

actually started my career in hospitality

with my first job as a pot washer at

The George Hotel in Litchfield. Right

from the start I just loved the fast paced

environment.

The general manager saw something in

me and suggested my personality might

be suited for the hospitality industry. I had

no clue at the time, but there was a trainee

manager’s position available at another

hotel in Sutton Coldfield. As part of my

training I was asked to spend the first three

months in the kitchen.

It was the most surreal experience. I found

this completely natural ability to cook, to

understand cooking, and to understand

flavour and seasoning. I just understood

everything and I think the most important

thing about any industry is that you

understand it.

Then Wayne Thompson - the head chef I

worked with at New Hall Hotel in Walmley

- was meticulous. So I learned how to make

a proper sauce, how to season, and how to

make things properly. It was just amazing. I

caught on to it quite quickly and just didn’t

want to stop. I always had this huge desire

and hunger to succeed. I just didn’t have

a clue what I was going to practice in and

fortunately, I found that platform in the

kitchen, and I just didn’t look back. My

next move after three years of essentially

my apprenticeship at New Hall saw me

go straight to a Michelin star kitchen, and

fortunately, I haven’t stepped out of them

since.

Earning a Michelin star for Upstairs

P by Tom Shepherd just four months

after opening is an incredible

achievement. What do you believe set your

restaurant apart?

T

Working in this industry, I’ve always

had this mentality of whatever I put in,

I felt I was going to get out. I turned every

opportunity I had to learn and do my best,

and just present myself in the best possible

way.

I’ve worked at three one-Michelin-star

restaurants and two with two stars. I think

you put in that groundwork and hard work,

and success is going to follow you.

When I opened Upstairs, I didn’t think

about Michelin once. I was ecstatic at the

fact that this was my own business and my

own restaurant. The focus was purely on

pleasing customers, producing delicious

challenging food, following the seasons

and sourcing the best ingredients available

to us. That was it really.

Then the Michelin call came in. They must

have inspected us a number of times in the

first four months of us being open. They

must have felt that the execution of what we

were delivering was at a level that met the

Michelin star status. Getting that validates

all that hard work and sacrifice that I put

in my career. When they said that I got a

Michelin Star, it was the most incredible

experience in my professional career. I

broke down in tears. I dreamed of earning

my own Michelin Star restaurant one day,

and that became a reality in that one phone

call. It was the most special moment of my

career.

Your restaurant is uniquely located

P above your father’s jewellery shop

in Lichfield. How does that personal

connection influence the atmosphere and

experience at Upstairs?

Yeah it’s really special. My daughter

T Grace came last night and she’s only

six. My dad sees her downstairs and

then she comes upstairs to me. I think

that’s special from that perspective, but I

also think my dad’s story is so much longer

than mine and he has so much more history

that makes our location so special too.

It was his grandfather that started the

jewellery business in Birmingham’s

Jewellery Quarter. The business had three

generations of hard graft and then I was

the offspring that completely didn’t fancy

going into jewellery, which my dad did

support. It’s gone full circle now. I’m

operating my own business above the family business

downstairs. It makes it feel like it’s almost become

the new family business. It’s really special. I often

pop down for a cup of tea in between services, and

likewise, he’ll pop up and have a chat with us.

P

If you could describe the philosophy behind

Upstairs by Tom Shepherd in just three words,

what would they be?

I think looking at the whole business, one word

T would be family. Another would be flavourful,

because we very much promote flavourful food,

and obviously seasonality. For the third word I’ll say

culture, more from our delivery.

P

Many diners look for a ‘wow factor’ in their

culinary experiences. What dish on your menu

do you feel truly captures that magic?

A dish that has the origin of just purely Upstairs

T is our transition course, which is called a Thai

Green Curry. Ironically, that’s obviously one of

Twofold Gins, and that’s where it comes from. The

transition course comes in after your main course, but

also before your dessert. Essentially it transitions you

into dessert and sets it up. We do a really traditional

English-style rich rice pudding at the bottom and then

a fresh mango sorbet. Then we do this sweetened

coconut foam, which is infused with Thai aromas of

lime leaf, lemongrass, ginger, and a hint of chilli and

coriander.

Everyone’s reactions are the same. People will taste

one spoon and say ‘What is this?’. Then they keep

eating and their minds are blown from a dish. It’s just

mad. We get people saying, ‘You can’t take this off.’

Or they tell us they come back just for that dish. It’s

the smallest dish on the menu, but it’s clearly the most

impactful. I think that is a really fair representation of

who we are and what we’re about.

Encouraging children to be more adventurous

P with food can be a challenge for many parents.

As a chef, what are your top tips for making

mealtimes more exciting and helping kids develop a

love for new flavours?

One thing that we do is we look at it quite

T openly. It’s quite strange in one respect, where

they don’t know the difference between a crab

and a piece of haddock or a fish finger. Then one day

we just say ‘Listen, it’s fish, and that’s the end of it.’

There’s a bit of a myth in society that has enabled us

to think that we can only serve fish fingers to a kid,

and they won’t eat fresh crab because they won’t like

it. But that’s rubbish because they don’t know the

difference at all.

One of my top tips is don’t overthink and to just

include them in everything that you do. This morning

me and Grace both had pancakes and I got Grace

involved the whole way through. I’ve found that if it’s

a meal that she’s had no involvement in, it’ll take her

about an hour to eat because she’s not interested. But

this morning she’s whacked down three pancakes in

about seven minutes because she’s been part of it. So

I’d say being part of the cooking process without a

doubt and doing family meals together.

You and your wife Charlotte recently launched

P Twofold Spirits, combining your culinary

expertise with premium drinks. What inspired

you to step into the world of spirits?

It started with Charlie’s background. Her

T family’s been in catering and hospitality for

years. She actually left school to go straight to

catering college and I met her as a chef when I was 24

and she was 21. Charlie knew at 21 that this industry,

from a chef’s perspective, wasn’t really for her. So

she got involved with drinks brands which included

working with Fever Tree for four years and then three

years at Britvic before we had our daughter Grace.

It was a fantastic job and she absolutely loved it. But

when Grace started school, we faced childcare issues.

Charlie was gutted. She’d worked so hard to get so far

in her career, but we just couldn’t make it work.

So I just thought there was no better opportunity

than to bring Charlie into Upstairs. It started with

a customer relations role, which is the best decision

we ever made. With Charlie on board, suddenly

there was this personality. Their experience was

created or began before they even stepped foot into

the restaurant, which was amazing. And with that,

we could then manage our personal life with Grace.

It works well for us, but Charlie felt like she was

missing the drinks industry. So I said, ‘Well, I’ve

always wanted to get into the drinks brand as well,

can we start?’

She basically took that opportunity and ran with it.

I really wanted Charlotte to have that toe back into

what she loves, and from my point of view, with the

ingredients, and the flavour profile, it’s worked so

well.

P

The Banana Rum and Thai Green Gin are both

bold choices. How did you develop these unique

flavour profiles?

From my point of view with the ingredients and

T the flavour profile, I’ve learned from Upstairs

that you really need to add personality to your

product. We have customers who come to Upstairs

that just invest solely in who we are and what we are

and what we do. That’s the personality in the ethos

and the culture that we represent. I wanted that to be

true for Twofold Spirits too.

I didn’t want to just do a London Dry Gin and just

fall in an already overpopulated market. Same with

the Banana Rum, I didn’t just want to do a plain,

white or dark rum and have no flavour profile, have

no personality, and just again, fall into an already

overpopulated market. I brought Charlie and her

background, and I wanted to bring Upstairs into it

too. So the Banana Rum is purely from the banana

dessert that was on The Great British Menu, which

was the highest scoring dish of the whole entire

series, and it was a memorable moment as I was

dressed up as Banana Man. So a lot of people

obviously remember that.

Then the Thai Green Gin was just an epiphany. We

went to the gin distillery, and we looked at all the

ingredients that can go into a gin. I just looked and

picked out ingredients like coconut, vanilla, mango,

ginger, and chilli. I asked, ‘Have you ever done like

a Thai gin or a Thai Green Gin’ They said no and I

was like, I’m gonna do it.

I made it there, and it was insane. It had this

incredible floral profile, with the fatty texture from

the coconut, and the sweetness from the mango, but

it had a heat from the chillies. It married in with our

dish at Upstairs, and I just knew it had to happen.

We went through 18 months worth of tasting

for both. The Banana Rum was a lot easier to

profile. It was more of a case of just balancing the

sweetness. But the gin was very difficult, because

the aftertaste really had this floral smell on the

nose, yet it had a lot of heat, and we had to work on

taking some of the heat out but still have it so you

could taste it. It’s a real balancing act, but we got

there, and I’m very happy with the outcome.

What are the five things you couldn’t

live without in your kitchen?

1. A good non-stick pan is essential and

you can use it for a whole variety of

things.

2. A chef’s knife that you keep on top of

so it’s sharp, and I mean proper sharp. A

chef’s knife almost becomes a part of you,

and it’s got to be a knife that can be used

for prepping anything and everything in the

kitchen.

3. A Maryse spatula is a central piece of

equipment that I just couldn’t live without.

I’ve constantly got about four at home and

about 20 at work, because they’re just so

good for everything from getting stuff out

of nooks and crannies to making mashed

potatoes, scrambled eggs, omelettes or

whatever. They’re just essential.

4. Another is a spoon pot. We have Le

Creuset ones on each section, and each part

of the kitchen has one with a little bit of

fresh, clean water in there all the time.

5. Lastly it’s got to be a microfibre cloth.

Nothing fancy, just a little damp microfibre,

and again just on the side of each section.

Perfect for wiping down or cleaning up a

spill to leave the kitchen looking brand new.
