freshness of the Pacific, a story told through every glass and every bite.
The trade buzz around Chilean coastal wines has never been stronger. As
Forbes recently highlighted in one of its latest articles, “Chile’s coastal wines
are making waves in the global market, standing out for their freshness,
elegance, and exceptional value.” This surge in attention reflects what
we have long known Chile’s unique position between the Andes and the
Pacific Ocean, shaped by the Humboldt Current, creates one of the most
dynamic winemaking regions in the world.

Chile is often described as a "wider country" in terms of winemaking, as
the true diversity comes from its east-west spread rather than its long and
narrow north-south shape. In just a short distance, vineyards stretch from
the towering Andes Mountains to the cool breezes of the Pacific Ocean,
offering a wide range of climates and terroirs. This east-west variation allows
Chile to produce an impressive variety of wines, from crisp coastal whites
to bold mountain reds, making it a truly versatile wine-producing country.

Andes
The Andes, the longest mountain range in the world, is undoubtedly one of
the defining factors of Chile’s geography, creating a natural border to the
country’s east that stretches from the dry northern desert to the southern
reaches of Patagonia. With sedimentary soil and cool mountain breezes
carried from high altitude down into the valleys, the Andes Mountains
provide freshness, temperature control and solar regulation. These climatic
effects help the vines to ripen slowly, preserving the acidity in the fruit,
achieving wines with very good natural acidity, excellent color and balance.

Entre Cordilleras
Chile’s vibrant viticulture has historically been concentrated in the
Central Valley, a long strip of land framed by the Andes to the east and
the mountains of the coastal range to the west that makes up this “space
between mountain ranges,” offering a multitude of terroirs, marked by
a Mediterranean climate, high solar radiation, sedimentary soils and the
presence of cold nights, which foster a very healthy viticulture and the
development of deep red wines with character.

Coastal
The cool breeze from the Pacific Ocean colliding with the powerful wind
from the Andes Mountains generates a particularly beneficial cool climate
in the coastal area, where Chile’s white wine varieties and reds from cool
climates find their optimal ripening point. Thanks to the influence of the
Humboldt Current, a fresh natural environment is produced for viticulture,
which, together with the minerality of the soils and the almost constant
presence of morning fog, allows a slow maturation of the grapes, resulting
in extremely complex and elegant wines, with mineral notes and high
natural acidity.

The Humboldt Current
Flowing along Chile’s Pacific coast, the Humboldt Current is one of
the most influential forces shaping the country’s ecosystems—and its
wines. This cold-water marine current is part of a larger atmospheric and
oceanographic system that generates coastal upwelling, a process that
brings cold, nutrient-rich waters from deep below the ocean’s surface—
approximately 100 meters—up to the coastal zones. Driven by the South
Pacific Anticyclone and the Coriolis effect, equatorward surface winds
push warmer surface water offshore, allowing deep, cold water to rise in
its place.
This upwelling phenomenon is vital for marine biodiversity making Chile’s
coastal waters some of the most biologically productive on the planet. In
addition, giant kelp forests thrive in these nutrient-rich waters, serving as
critical carbon sinks that capture CO₂ and contribute to climate change
mitigation.
But the influence of the Humboldt Current doesn’t end in the ocean—it
extends inland to the vineyards of coastal Chile. The same upwelling that
cools the seas creates a cyclical air current that refreshes vineyards during
the evening and nighttime hours. This cooling effect is essential, as it
helps preserve natural acidity in the grapes while allowing for slow, even
ripening. The result is wines of greater elegance, freshness, and aromatic
complexity.
From the thriving marine life of the Pacific to the high-quality wines
produced in valleys like Casablanca, San Antonio, and Limarí, the Humboldt
Current is a silent force that underpins Chile’s natural richness. It not only
sustains biodiversity but also enhances the distinctive character of Chilean

From the cold waters of Patagonia, Kenoz Caviar delivers the southernmost
caviar in the world, cultivated with care at the intersection of ancestral
roots and innovation. Kenoz currently breeds three species of sturgeon—
Beluga, Oscietra, and Sevruga—producing the three most valuable varieties
of caviar in the world. While Beluga caviar is a part of Kenoz’s long-term
vision, with production expected by 2030, today’s tasting features the
exceptional Oscietra and Sevruga varieties, nurtured in Chile’s Patagonian
waters, where purity and remoteness ensure exceptional quality. The
cool, oxygen-rich waters of the region create a unique environment for
sturgeon, resulting in caviar of remarkable texture, flavor, and elegance.
Kenoz is dedicated to sustainable aquaculture and preserving the legacy

Sourced from glacier-fed springs near Colico Lake in southern Chile,
Andes Mountain Water is naturally filtered through volcanic rock over 25
years, resulting in one of the purest waters in the world. With low mineral
content, a neutral pH, and a soft, clean taste, it offers ideal refreshment to

Bottled using 100% renewable hydroelectric energy and drawing less than
0.6% of the spring’s flow, Andes Water is committed to sustainability and
community. As a certified B Corp, it supports local employment—90% of
