Having a good, trusted primary

annual physical exam, regardless

What do you enjoy outside of
work?
I participate in many activities
with my young daughter who
was born here (tennis, music, and
dance) and I tutor math. I have
two older children: my daughter
works in California and my son
in Puerto Rico. I am very proud
of them!
I also enjoy reading, playing the
ukulele, and I practice martial arts
and swimming.

FOR COLLEGE DREAMS

On May 16th, ECCO Community Center hosted its first
Music Night for College Dreams, a vibrant Cocktail
Scholarship Fundraiser held at the iconic New
Orleans Jazz Museum. The event successfully raised over
$10,000, aiming to support deserving Hispanic students on
their journey to higher education.
From 7:00 PM to 9:00 PM, attendees enjoyed a delightful evening
of handcrafted cocktails, light bites courtesy of Curramba
La Bella, and live music performed by the Fermin Ceballos
Trio Band. The celebration not only highlighted the ambitious
dreams of young scholars but also honored the generous
sponsors who made their aspirations possible. Key supporters
included Thelma Ceballos State Farm Agent, OnPath Foundation,
LL Remodeling LLC., CRC Global Solutions, La Voz de
la Comunidad Coalition, Casey Cowley El Abogado, Flexhub,
GBC Construction, Jones Orthodontics, Aragon Accounting
& Associates, and Iglesia Monte de Sion.
“This fundraiser was about more than just raising money; it
was about opening doors for Hispanic students who dream
of going to college but need guidance and financial support
to get there,” said Ingrid Bustos, Founder & Executive Director
of ECCO Community Center. The event’s success lay in its
community spirit and cultural celebration, with sponsorship
opportunities supporting one to three scholarship recipients
at varying levels, helping ECCO uplift dozens of students.
Scholarship recipients included Nurix Alvarez from Honduras
attending Delgado Community College; Lucas Estrada
from Peru attending Loyola University New Orleans; Dulce
Ramirez-Garcia from the United States at Mississippi State
University; Andres Felipe Cristancho from Colombia, and
Wendoly E. Dominguez from Honduras, also at Delgado.

UNIVERSITARIOS
El 16 de mayo, el Centro Comunitario ECCO organizó su primera
Noche de Música para Sueños Universitarios, una vibrante
Recaudación de Fondos para Becas con Cócteles celebrada en
el icónico Museo de Jazz de Nueva Orleans. El evento recaudó
con éxito más de $10,000, con el objetivo de apoyar a estudiantes
hispanos meritorios en su camino hacia la educación superior.
De 7:00 PM a 9:00 PM, los asistentes disfrutaron de una
agradable velada de cócteles artesanales, aperitivos cortesía
de Curramba La Bella y música en vivo interpretada por la Fermín
Ceballos Trio Band.
La celebración no solo destacó los ambiciosos sueños de los
jóvenes estudiantes, sino que también honró a los generosos
patrocinadores que hicieron posibles sus aspiraciones. Los
principales patrocinadores incluyeron Thelma Ceballos State

RECETAS LATINAS
TRES LECHES CAKE

The following recipe’s were
provided by Chef Melissa Araujo.
Melissa is a proud Honduran,
and the Executive Chef/
Owner of Alma Cafe and Araujo
Restaurant Group .
Alma Café has two locations in
New Orleans. Its original Marigny
location at 800 Louisa Street
and its newer Mid-City location
at 301 N Carrollton Avenue.

Ingredients:
For the Cake:
1 cup (130g) all-purpose flour
1 ½ tsp baking powder
¼ tsp salt
5 large eggs (separate whites and yolks)
1 cup (200g) granulated sugar, divided
1/3 cup (80ml) whole milk
1 tsp vanilla extract
For the Milk Mixture:
1 can (12 oz/354ml) evaporated milk
1 can (14 oz/396ml) sweetened condensed
milk
1/3 cup (80ml) heavy cream
For the Whipped Topping:
1 cup (240ml) heavy whipping cream
3 tbsp powdered sugar
1 tsp vanilla extract
Optional Toppings:
Ground cinnamon for dusting
Fresh fruit (figs, berries, mango slices, etc.)
Instructions:
Preheat the Oven:
Preheat your oven to 350°F (175°C). Grease
and flour a 9x13-inch baking dish.
Prepare the Cake Batter:
In a medium bowl, whisk together the flour,
baking powder, and salt. Set aside.
In a large bowl, beat the egg yolks with ¾
cup of the sugar until pale and creamy. Stir
in the milk and vanilla extract.
Gently fold the dry ingredients into the yolk
mixture until combined.
In a separate bowl, beat the egg whites with
the remaining ¼ cup sugar until stiff peaks
form. Gently fold the egg whites into the
batter, ensuring it remains airy.
Bake the Cake:
Pour the batter into the prepared baking
dish and bake for 25-30 minutes or until a
toothpick inserted in the center comes out
clean. Let the cake cool completely.
Make the Milk Mixture:
In a mixing bowl, combine the evaporated
milk, sweetened condensed milk, and
heavy cream. Set aside.
Soak the Cake:
Once the cake is cool, poke holes all over
the top using a fork or skewer.
Slowly pour the milk mixture over the cake,
allowing it to absorb completely. Cover and
refrigerate for at least 2 hours or overnight.
Prepare the Whipped Topping:
In a chilled bowl, whip the heavy cream with
powdered sugar and vanilla extract until stiff
peaks form.
Assemble and Serve:
Spread the whipped cream evenly over the
cake.
Dust with ground cinnamon or garnish with
fresh fruit, if desired.
Slice and serve cold. Enjoy!

Aguachile Negro
Salsa Negra Ingredients:
1 white onion, quartered
3 garlic cloves, peeled
6 Chile morita and 6 chile negro (or
pasilla)
2 tomatoes
Cilantro
1/4 cup water
Method:
Heat a comal or griddle or cast iron
skillet over high heat. When it’s hot, char
the onion and the garlic clove, chiles,
and tomatoes well.
When both cut sides of the onion
quarters are blackened, roughly chop
and put into a blender with garlic, chiles,
tomatoes, and cilantro.
Aguachile Ingredients:
1 red onion, sliced thin
2/3 cup lime juice, divided
Salt and black pepper
3 tablespoons Maggi seasoning
3 tablespoons soy sauce
2 black garlic cloves
1 pound scallops
1 pound of shrimp
1 English cucumber, sliced
1 avocado, diced
While the onion is charring, mix in some
salt with the sliced red onion and toss
with about 1/4 cup of the lime juice.
Let this sit in a bowl until you are ready
to serve. Doing this quick pickles the
onion and removes any sulfur bite to it.
Add the rest of the lime juice, Maggi,
soy, about 1 teaspoon black pepper,
the black garlic cloves, if using, and
the water to the blender and puree
everything.
Toss the scallops, shrimp and
cucumber with the sauce and put
some on everyone’s plates.
Add the avocado, the red onions, the
cilantro and crushed chiltepin chiles.
Serve at once.

Where New Orleans Meets Colombia

It all started with a feeling—a quiet
certainty buried in the heart of a 15-yearold
boy from Cali, Colombia. David Mantilla
knew he was destined for something more.
With nothing but determination and the
warmth of childhood memories spent visiting
his grandmother in Miami, he left Colombia
behind, chasing independence and a better
life in the United States.
Today, David Mantilla is the proud owner
of Maïs Arepas, one of New Orleans’ most
beloved culinary gems.
David’s first taste of the American dream
came through hard work in retail. He opened
his own kiosk business, traveling coast to
coast, absorbing cultures, building resilience,
and learning the art of persuasion. But
even in those fast-paced, high-pressure
environments, a part of him still longed for
something more soulful—something that
connected him back to his roots.
Cooking had always been in his blood. Raised
in a family of passionate Colombian cooks,
David grew up inhaling the rich aromas of
traditional dishes like bandeja paisa and
arepas. It was a passion he never thought
he’d pursue professionally—until life, as it so
often does, steered him toward his purpose.
When Hurricane Katrina shook New Orleans
in 2005, it didn’t just reshape the city’s
physical landscape—it shifted David’s own
trajectory. Drawn to the cultural and culinary
richness of the Crescent City, he decided it

was time to do something bold: bring
the essence of Colombian cuisine to New
Orleans, his new home.
With Maïs Arepas, David set out to elevate
Colombian food—bringing his heritage to life
with a personal twist. Every dish he creates is
a canvas of culture, memory, and innovation.
“We don’t just recreate traditional plates—we
reimagine them,” he says.

“Our food is an expression of who I am, of
where I come from, and of what’s possible
when you don’t give up,” David says. At the
heart of his success is not just great food—
it’s a great team. David credits the love and
loyalty of his kitchen and front-of-house staff,
including his life partner and restaurant
co-manager, for turning Maïs Arepas into the
thriving business it is today.
Owning a restaurant in a city as competitive
as New Orleans demands more than just
talent—it takes tenacity, discipline, and an
unwavering belief in your product. “This is
shark-infested water,” David says. “You need
to bring something real to the table.”
And David has. Not only did Maïs Arepas
find success—it allowed him to buy the very
building it operates from, a rare achievement
in an industry plagued with uncertainty.
Today, David is exploring new ventures—
from real estate to the stock market—and
dreaming of opening a new breakfast
concept showcasing Latin American morning
traditions.
Still, the kitchen calls him. “Cooking is how
I express my ideas and emotions. It’s art you
can taste,” he says.
Through it all, David has stayed grounded
in community. Whether supporting local
farmers, mentoring young Latinos, or simply
offering a warm smile to first-time guests,
David has made Maïs Arepas a beacon of
what it means to build with heart.

Todo comenzó con un sentimiento,
una tranquila certeza enterrada en
el corazón de un chico de 15 años
de Cali, Colombia. David Mantilla sabía
que estaba destinado a algo más. Sin
nada más que determinación y la calidez
de los recuerdos de la infancia visitando
a su abuela en Miami, dejó Colombia
atrás, persiguiendo la independencia y
una vida mejor en los Estados Unidos.
Hoy, David Mantilla es el orgulloso
propietario de Maïs Arepas, una de las
joyas culinarias más queridas de Nueva
Orleans.
El primer contacto de David con el
sueño americano fue a través del arduo
trabajo en el comercio minorista. Abrió
su propio negocio de quiosco, viajando
de costa a costa, absorbiendo culturas,
construyendo resiliencia y aprendiendo

Delgadillo, Ph.D., to offer a free walking tour in Spanish, exploring
New Orleans’ rich and connections to the Caribbean, Spain, and
Latin America. The event brought together a vibrant group of
locals and international guests—from Spain, Venezuela, Colombia,
the Dominican Republic, Argentina, Uruguay, Puerto Rico, and
Honduras—for an engaging and educational experience through
the historic French Quarter.

Alimentando la Resiliencia
Cuando todo se detuvo en 2020, el sector de la restauración y la hostelería enfrentó tiempos
difíciles. Un cliente de Nueva Orleans nos contactó con el deseo de apoyar de verdad a su equipo y
generar confianza. Su equipo directivo acudió a nosotros con un objetivo simple pero contundente: "Ayúdennos
a cuidar de nuestra gente". Fue el tipo de llamada que impulsa el propósito de nuestra labor como consultores de

experiencia nos recordó algo profundamente arraigado en la cultura latina: la resiliencia a través de la comunidad. Al igual que los

NAHREP SELA Hosts Informative “Mi
Casa es Mi Casa” Real Estate Seminar
NAHREP South East Louisiana (SELA), the recently instituted
local chapter for the National Association of Hispanic Real Estate
Professionals, hosted its “Mi Casa es Mi Casa” seminar, an insightful
event where real estate professionals gathered to learn about key legal
issues impacting property ownership, particularly for immigrants and
foreign investors.
The seminar featured a dynamic panel of legal experts, including Maria
Stephenson, attorney at Stephenson, Chávarri & Dawson, L.L.C.; Mike
Troendle, attorney at Title Management Group; and Olivia Byers, attorney
at Title Stream. Each presenter offered valuable perspectives on evolving
regulations and best practices in the real estate field.
Attendees learned about the importance of legal documents such as
Power of Attorney for real estate transactions and provisional custody for
minor children—simple but crucial tools for families managing complex or
cross-border situations.
A major topic of discussion was recent legislative efforts in Louisiana to
restrict foreign ownership of property. For example, Senate Bill 537 targets
buyers from countries deemed foreign adversaries—including China,
Cuba, Iran, North Korea, Russia, and Venezuela—limiting their ability to
purchase property, especially on tourist or other temporary visas. Bill
91, another proposal, sought to prohibit property purchases by certain
individuals or entities from designated “foreign adversary” countries within
50 miles of sensitive military areas.
The panel also covered the Foreign Investment in Real Property Tax
Act, FIRPTA, which requires foreign sellers to pay capital gains tax on
property sales. Depending on the sale price and intended use, withholding
rates range from 0% to 15%, with specific affidavits or IRS certificates
required for exemption or reduction. Navigating these rules often requires
coordination with CPAs and proper application for ITINs.
The informative morning offered a lively networking lunch featuring Cuban
sandwiches, arepas, tostones, salads, and Jarritos—celebrating Latin
culture and fostering community and conversation among attendees
committed to serving and educating Louisiana’s diverse homebuyers.

Regardless of who’s in office these days,
it’s PRIDE Month! Per usual, the girls,
gays and they’s will celebrate!
New Orleans is famous for its local music
scene and when you think of the city, you
might think of Jazz, Bounce or Hip-Hop.
But what about EDM (electronic dance
music)? Well, one New Orleans native artist
is putting the house music scene on the New
Orleans map. Kenneth “Kynt” Bryan shows
strength and creativity through their art, all
while being part of the city’s lively and diverse
culture. As an international dance music
artist, actor, model, dancer-choreographer,
and educator, Kynt’s journey exemplifies the
transformative power of authenticity in the
face of adversity.
Growing up inspired by family roots—his
grandmother’s stories of their father’s
drumming—Kynt’s passion ignited early,
leading them into the world of music and
dance. However, their navigation of the
industry was marred by discrimination
rooted in race, sexuality, and cultural
stereotypes, challenges they met with
unwavering determination.

en Jazz, Bounce o Hip-Hop. ¿Pero qué pasa
con EDM (música electrónica de baile)?
Pues, un artista nativo de Nueva Orleans está
poniendo la escena de la música house en el
mapa de Nueva Orleans. Kenneth “Kynt” Bryan
muestra fuerza y creatividad a través de su
arte, mientras forma parte de la viva y diversa
cultura de la ciudad. Como artista internacional
de EDM, el actor, modelo, bailarín-coreógrafo y

I have translated for the Supreme Court, and I volunteer
with organizations to find missing children in Louisiana.

My grandfather said to learn both languages equally,
because, “I am not leaving you a large inheritance, but I
