Welcome to our 2022 Gastro Guide and our fall edition. It’s our last

issue of the year, and our biggest issue ever published. This time of

year is very exciting in Puerto Vallarta as we look forward to a change

in seasons (cooler temperatures, less rain) and we welcome back the

many visitors that come each year.

Puerto Vallarta truly comes to life every fall, and so do its restaurants.

The restaurants here offer a gastronomic proposal that rivals anywhere

else in the world. The variety of places enhancing local flavors and

exploring new contemporary techniques is really amazing. We present

just a few of the restaurants that residents and tourists alike have come

to love for their quality, service and originality. We wish we had room to

showcase all restaurants, and we encourage you to explore and enjoy

Tasting the "sacred food" - as the classic Mexican grandmothers say

- is a ritual. Vallarta has excellent and different restaurants. You’ll

WHY SET UP A RESTAURANT

IN IXTAPA? CHEF CARRILLO

IS CONSTANTLY ASKED THAT

QUESTION, SINCE IT IS OFF THE

RADAR OF SOME OF PUERTO

VALLARTA’S OTHER CULINARY

HOTSPOTS.

"It would not make sense to set it up

anywhere else,” Chef Carrillo tells us

enthusiastically. “La Tienda Grande is

the building itself.”

Salvador wanted to reinterpret and

give a second life to the building

that was an icon in the Ixtapa in the

1940's. A place that was a meeting

point in those days.

He recalls that he would take

advantage of when his mom and

grandmother went to church to

experiment in the kitchen when he

was only eight-years-old.

"I would make very basic things

like omelets and meat, because my

grandmother told me that cooking

was for women," he said.

Salvador is a food lover and

occupies almost all of his time

towards food. It is his life. When he

is not cooking at La Tienda Grande,

he escapes with his partner Gabriel

to try out other restaurants.

"I like to eat well and drink better,” he

said. “I'm a food lover and it makes

me sad when I go to a place and the

food is not good.”

Gabriel, Salvador's partner, has

been a fundamental part of the

construction of La Tienda Grande.

They met nine years ago, at a

Starbucks. Carrillo remembers that

they started talking because Gabriel

doesn't drink coffee and Carrillo

made him a recommendation

without coffee.

"This led to a date, an outing, a

romantic dinner and today we've

been together for nine years."

In those years both men worked

at La Leche restaurant - Salvador

as head chef and Gabriel in the

customer service area. Gabriel had

encouraged him over the years to

get out of his bubble and encourage

him to start his own restaurant.

"Gabriel has always been there

pushing me because he knows I can

give more," he explained. "A large

part of the history and success of La

Tienda Grande is having a person who

supports me as much as he does."

In La Tienda Grande, Mexican food

is made with different fusions of

international cuisine without losing

the legacy of the women who

inspired this project.

After a year and a half of having

opened, Salvador says he feels happy

and proud and that the project

has been a 'watershed' moment in

the history of Ixtapa.

"Since our opening, many of the

commercial places in the center

have renovated their facades,

paint, furniture and improved their

businesses," he said.

It has also been the impetus for

new businesses around it, such as

taquerias, diners and coffee shops

that had not been seen in Ixtapa in

the last 20 years.

Salvador is betting that in the next

five years Ixtapa can be a culinary

destination where people not only

identify it as a place where people

live and sleep, but a nice place

where you can go for a walk and

have a nice lunch or dinner.

"I was born and raised here and I

believe in the magic that Ixtapa has

to become a point of reference".

La Tienda Grande is in its third

season, and offers a menu that

reflects the travels and experience

of Chef Carrillo. You’ll find a menu

full of more flavors and experiences,

captured thanks to the recent travel

abroad he has been able to make and

experience other cuisine in Dubaí.

And of course, the great women who

have inspired him in his culinary

work as his mother, grandmother,

sister, aunts and friends.

The latest menu presents

combinations of Asian, Middle

Eastern, Latin American and

Mexican food.

Throughout this time La Tienda

Grande has positioned itself with

the local people in Ixtapa who

are happy to see the old building

recovered and full of color.

La Tienda Grande's clientele today

is 70 percent foreign pulling in

visitors and tourists to an area they

may not have otherwise visited.

The local clientele comes from

Nuevo Vallarta, La Marina and

Punta Mita. Chef Salvador feels a

great responsibility for having been

a forerunner in Ixtapa. "Neighbors

and friends of my family ask me what

is next, if I am hiring people from

here and in general they are very

interested in how the business has

grown,” he said.

La Tienda Grande will continue to be

located in Ixtapa and has no plans

of moving anywhere else - that is

where it was thought of, conceived

and where the flavors live day-byday.

In the future Salvador tells us

that one of his projects is to open

‘La Tienda Grande Breakfasts' in

a commercial area and focus on a

more refined style.

"That will come with time," he says.

La Tienda Grande has had a good

work team since it started but one of

the big problems Salvador has faced

- like many other restaurants - is

the rotation of personnel in Vallarta.

"It is complicated when people are

not committed,” he said.

As for the dishes that have already

become house favorites and that

continue to be on the menu of La

Tienda Grande are the Chinese taco

and the bolillo snow.

"The customers were the ones who

convinced me not to take them off the

menu and leave them,” he comments.

Salvador is a born entrepreneur

and recently started a new culinary

adventure with "Masame" - a

restaurant located in the Versalles

neighborhood with no pretensions

other than serving delicious dishes.

There he is partner and culinary

director.

services and making his life in this

wonderful port.

"I love the lifestyle of PV, quiet,

with a wide gastronomic offer, with

many entrepreneurs and an active

nightlife," Luis explained.

At the beginning Dr. Luis arrived

only as a doctor and when he

consumers are the men of the

gay community in Vallarta, both

foreigners and nationals.

"Eighty percent of my patients

and that has also brought me

recommendations especially with

straight women who like aesthetic

treatments,” he said.

The treatments are non-permanent,

that is, they last a few months and

then the body naturally discards

them. Collagen Stimulation

treatments, Thread Lifts and

Stimulators can last between a year

or even up to two. On the other

hand, Botox is the treatment that

lasts a little less.

These are some of the non-invasive

aesthetic procedures:

BOTOX

Botox is the number one antiaging

treatment in the world for

eliminating facial wrinkles.

When injected, Botox (botulinum

toxin) temporarily relaxes the facial

muscles that form wrinkles such

as crow's feet, frown lines and

forehead lines. The application

usually takes about 30 minutes.

The dosage will depend on

each patient and the effect lasts

approximately 4 to 5 months.

HYALURONIC ACID FILLERS:

Hyaluronic acid fillers are noninvasive,

biocompatible, resorbable

treatments intended to correct

volume loss associated with aging,

and to harmonize and/or balance

the face.

Areas such as cheekbone, chin, nose,

jaw line and lips can be treated. The

duration of this treatment is up to

18 months.

NON SURGICAL FACELIFT WITH

TENSOR THREADS:

By means of biocompatible sutures

(PDO threads) it is possible to lift

facial tissues that have lost support

due to collagen degradation.

The PDO threads (polydioxanone)

are inserted in a subcutaneous

plane and when tightened generate

an immediate lifting effect.

Polydioxanone or PDO is a totally

compatible, resorbable and sterile

material. At the subcutaneous

level, polydioxanone generates a

reparative process around it, which

triggers the production of new

elastic collagen and elastin fibers.

This technique is used to "lift"

eyebrows, cheekbones, nasolabial

fold, jaw line and neck. It does

not require hospitalization and is

performed in 45 minutes.

BIO STIMULATORS: SCULPTRA:

As a poly-L-lactic acid (PLLA)

collagen stimulator, Sculptra helps

restore the deep, underlying

structure of the skin to diminish

facial wrinkles.

As the Sculptra PLLA microparticles

are absorbed, they help stimulate

collagen production after 45 days.

Rebuilt collagen strands begin

gradually helping to restore facial

volume and the look of fullness to

wrinkles and folds.

The duration of this treatment is up

to 2 years.

The procedure is performed over a

period of 45 minutes and recovery

is immediate

estate agent who is bilingual,” he

said. “And an AMPI member. It is very

significance - drawing from the

Spanish meaning of home and

pulling in a mention of the type of

service his clients will receive.

“Casa in Spanish, besides the

architectural definition, includes the

institutional designation of a group

of people with interests in common,”

he said. “Luxe makes reference to

the high-touch real estate system

brokerage firm we are, by applying

the highest standard of excellence

to all we do, so our clients can make

excellent investments and experience

smooth and transparent real estate

transactions.” Casa Luxe Real Estate

is a locally owned and operated

structure. Guel said he founded the

holding company after several years

of experience in the real estate

business in Puerto Vallarta.

“I'm focused on success,” he said with

a smile. “And thanks to meditation,

yoga, veganism, education and time

management, I am also able to enjoy

a work life balance.”

Guel is a true international traveler

and understands the complex nature

of purchasing a home in a foriegn

country. He worked with the Foreign

Affairs at Consulado General de

México en Denver from 2011 to

2013. In 2013 he moved to London

to attend Queen Mary University of

London, obtaining his MBA in Energy

and Sustainability Policy. He also

has a B.S. degree in Public Policy and

Economic Development from UASLP.

He speaks multiple languages and

has studied French, Italian and

German. He is fluent in Spanish

and English. Growing up in San Luis

Potosí, México, Edgardo is the third

son of four - and has many cousins

from both sides of his family. He


has been a member of the Puerto

Vallarta community for nine years,

and its proximity to the ocean is one

of the reasons he first visited.

“I love sailing and draw inspiration

from the challenges,” he explained.

“Being able to sail on the ocean

through the handling of halyards and

sheets while directing them according

to the wind, waves and weather

conditions is really rewarding. It

becomes a source of inspiration.”

He started sailing in 2007, and two

years ago he started competing in

the Regatta Capri 37’ Float with The

Dreadnought Sailing Team, Puerto

Vallarta Team.

And just like navigating the waters,

Masame PV opened its doors on

Tuesday, August 16, and is a joint

collaboration project of Chef

Salvador Carrillo, restaurant owners

Rollon Lili and Edi Fernández De Lara

and Gabriel Arvelo.

expertise to help with Masame PV,

and provide a collaboration with Lili

and Lara that is sure to please the

taste buds of anyone.

The food is inspired by a Mexican

staple - masa (a dough made from

ground corn) - and reflected in the

restaurant's name - Masame PV.

“This is a collaboration project with

great people,” Chef Carrillo explained.

“The concept was to create a small

place for breakfast with the dishes

based on Mexican corn.”

You may easily recognize the names

of Chef Carrillo and his life partner

Gabriel Arvelo. They opened La

Tienda Grande restaurant in Ixtapa

in 2020. With Carrillo providing the

inspiration behind the food, and

Arvelo running day-to-day operations

of the restaurant.

Carrillo and Arvelo are now lending

their food and management

And on the menu you’ll find all of

the traditional Mexican dishes, but

with Carrillo’s famous touch and

presentation. Huaraches, Huevos,

Gringaderas are just a few of the

categories of the food options, with

prices ranging from about $120

pesos and up.

You’ll also find the Mexican coffee,

Café de Olla, made rich with brown

sugar and cinnamon.

Carrillo said he was excited to

expand his local creations from

Ixtapa’s La Tienda Grande, and

bring them to another colonia in

Puerto Vallarta. “Lilly and Edith live

near Masame PV, and are a part

of the community here,” he said.

“The collaboration allowed us to

also expand my creations into a

different part of Puerto Vallarta so

that more people can enjoy these

traditional Mexican dishes.”

Ocean Grill is a spectacular

of Puerto Vallarta in a little gem

called Playa Colomitos. You can take

a bus from PV to Boca de Tomatlán

baked goods run from $45 to $65

pesos each. Larger cakes and other

items are priced per order since each

are custom made based on customer

wants and needs. But they do have

some cakes available at the store with

prices starting around $480 pesos.

July 15, 2022, and is open everyday

except Monday, from 3 to 10 p.m.

Álan and Ivan are engaged, a moment

that coincided with the decision to

open the bakery. Ivan said when they

first started dating he remembers

telling Álan that he would only marry

someone if they could share the fun

of building something together - be it

a house or even a new business.

“Those words have come back now,”

he said with a laugh. “After two years

of living together, the location of the

bakery came available. And then we

got engaged.”

ABOUT ÁLAN VÁZQUEZ:

Álan arrived in Puerto Vallarta in

2010 with the intention of learning

gastronomy. He graduated from the

Instituto Tecnológico de Vallarta in

gastronomy. From there he worked

with Bocados, a local catering

company. After 10 years there,

Bocados opened a restaurant

under the same name, and he

became the head chef, managing

a team of six people.

“I have been baking now for more

than 10 years,” Álan said. “My passion

for baking was developed when I

started working at Bocadoes. I knew

I had found my perfect career. I

especially love to make special cakes

come to life with fondant.”

ABOUT IVAN GARCIA:

Ivan has lived in PV from 2004 to

2010, and from 2020 to present.

He graduated from UdeG University

studying tourism management.

While he has lived in different cities

in Mexico, he has worked mostly

for the Vidanta Group, focusing on

customer service. Most recently

he managed the travel agency of

Regina Los Cabos Club. But his love

for PV brought him back, where he

managed the travel agency of Grand

Velas Nuevo Vallarta.

This place is varied and tasty at the

same time. The Vegetarian Buffet

is served for breakfast, lunch and

dinner with Vegan options from 8

a.m. to 10 .pm.

Opening in 1995, the team at Planeta

Vegetariano has been at it for more

than 28 years. During that time they

have amassed numerous awards,

including a mention in Bon Appetit

Magazine. The seasoning is a mix

between the cuisine of a Mexican

home and the delights of world

cuisines adapted to the palate and

gourmet vegetarian cuisine, with

some signature dishes.

For breakfast they have two buffet

bars, a cold one with salads, fruits

and cereals and a hot bar where

you can find Pan Cakes, Chilaquiles,

Mexican style Tofu among others.

For meals they have a different menu

for each day of the week where

you can find different options such

as soups and creams, soy skewers,

vegetable lasagna or mushroom

pozole.

Planeta Vegetariano is a place that

makes you feel comfortable where

you are made aware through your

Te Quiero Verde is a traditional

Mexican taqueria that is 100 percent

vegan. Offering flavors of Mexican

dishes like tacos, quesadillas, tortas

famous pastor, wire, milanesa

and campechano tacos with their

unique sauces, all set in a pleasant

He considers himself to be a very

with many restaurants is El Bodegón

de Pastas, a delicious discovery

and a great new spot in Vallarta. El

Bodegón offers Italian-Argentinian

food. Its Chef and owner Alejandro

Mancini makes everything: breads,

empanadas, pastas and desserts,

and his partner and co-owner, Bruno

LeeMon provides a welcoming

environment. We recommend the

Argentinian Empanadas of beef,

corn or chicken with mushrooms as

a starter. For pasta, the Sorrentinos

(pasta from Argentina) prepared with

ham, mozzarella and basil will be a

pleasant discovery and the Ravioli

with chicken and mushrooms. The

Neapolitan Milanesa with potatoes is

crazy, be sure to try it and for dessert,

try the flan de dulce de leche. It is a

very small but cozy place. It only has

a few tables but it is worth waiting (or

get it to go). Because of its growing

popularity and limited space, you may

want to try and make a reservation.

It’s truly a home based business

and a one-man-show. Richard cooks

in the kitchen in his rented home

located in the Centro Colonial.

He shares photos of his work on

Facebook, and orders are placed

through Facebook messenger. He

personally delivers the orders.

And who is Rosie in “Sweet Treats

by Rosie and Me”? Why that’s Rosie,

who is his best companion. Eightyear-old

Rosie is a Poodle shitzu mix

and loves to help out in the kitchen

when Richard is busy.

You can order almost anything sweet

- from cookies, pies, brownies, and

cakes - Richard can make it.

The majority of the treats he makes

are those that will remind Americans

of their childhood and home.

“I am making treats and sweets that

are not normally obtainable here in

Puerto Vallarta,” he said.

The holidays are a big baking time

for Richard. From just before the

American Thanksgiving to Christmas,

he’s busy making holiday orders

and, the favorite (love it or hate it)

fruit cake.

“I started making fruit cakes two

years ago. This past year I made 72

and I think I’ll make many more this

coming holiday season”.

Wright said that all of his creations

are like works of art. A true

masterpiece created from his hands.

The unique taste that sets him apart

from local Mexican bakeries is that

he uses a lot of sugar and butter.

Richard is a self taught baker,

having learned since his childhood.

He arrived in Puerto Vallarta four

years ago, and loves the people

and the simple way of life often

found here.

atmosphere. Despite being a highend

kitchen, you always feel at home.

Under the signature of Vallarta Chef

Joel Ornelas, Tintoque was awarded

as one of the 120 best restaurants in

Mexico by the Mexico Gastronomic

Guide, being the only place in the

city with this distinction.

Chef Joel Ornelas conveys his

signature cuisine by creating a

true gastronomic experience. He

has worked for the best gourmet

restaurants in PV, as well as in

Mexico, Spain and England. Ornelas

puts his personal stamp on each dish

contrasting acidic textures with spicy

elements presented beautifully.

Tintoque's mixology is based on

raicilla and other regional fermented

hustle and bustle of the area.

Di Nuovo is a classic Italian Trattoria.

Located in the heart of the Romantic

Zone of Puerto Vallarta, here the star

dishes are all varieties of pasta. Our

recommendations: Fettuccine con

Gamberi e Asparagi in Salsa Rosa

and the Spaghetti Meatball , you will

surely fall in love with them.

The place is small but that makes the

service more personalized. Roberto,

none. The Fiesta de Camarones with

wonderful coconut shrimps, wrapped

in bacon a la diabla are a must as

well as their exquisitely prepared

lobster.
