restore radiance after summer

After months of sunshine, outdoor living, and often

a more relaxed skincare routine, the signs of summer

can start to show on our skin, and not always in the

most flattering way.

Increased pigmentation, dryness, and dullness are

common post-summer concerns, and autumn is the

perfect time to reset your skincare routine to help

restore radiance, repair sun damage, and prepare your

skin for the colder months ahead.

TACKLE SUN DAMAGE WITH

VITAMIN C

Prolonged sun exposure is one of the leading

causes of premature skin ageing. Even with good SPF

habits, many people notice new pigmentation, uneven

skin tone, and a rougher texture after summer.

One of the most effective ways to tackle this is by

incorporating ingredients like vitamin C, which

helps brighten the skin and reduce the appearance

of sunspots, and niacinamide, which supports skin

barrier repair and reduces inflammation.

TIPS FOR GENTLE AT-HOME

EXFOLIATION

At-home exfoliation can also be really

effective. When purchasing skincare, look for gentle

chemical exfoliants, such as lactic acid or mandelic

acid, to remove dead skin cells and encourage cell

turnover.

Make sure to avoid anything too abrasive,

particularly if your skin is feeling dry or sensitive.

REBUILD HYDRATION

Summer often depletes the skin’s moisture

levels due to sun exposure, travel, and heat.

As the temperature drops, skin can start to feel tight

or irritated if it’s not properly hydrated.

To counter this, you can introduce a hydrating serum

containing hyaluronic acid or polyglutamic acid to

help attract moisture back into the skin. Follow this

with a ceramide-rich moisturiser to lock hydration in

and reinforce the skin barrier.

I always remind my clients that hydration is not just

about drinking water, it’s about maintaining moisture

levels within the skin with the right ingredients.

TRY LIGHT-BASED THERAPIES

In-clinic treatments can accelerate your

skin’s recovery after summer. Light-based

therapies like IPL (intense pulsed light) or broadband

light therapy can effectively target pigmentation and

broken capillaries caused by UV damage.

EXPLORE DEEPER REJUVENATION

For deeper rejuvenation, medical-grade

chemical peels or microneedling with

radiofrequency can help stimulate collagen

production and improve overall tone and texture.

These treatments work particularly well in autumn,

as UV levels are lower and there’s less risk of postprocedure

sun exposure which makes it an ideal time

for more intensive skin work.

ROUTINE

Autumn is the moment to return to

consistency. This means cleansing gently but

Even if it feels impossible, protect

how short, for rest and activities,

hobbies or mindfulness practices

that recharge you. The health of

both mind and body is essential

not only for running a successful

business, but also for sustaining

overall wellbeing.

4. BE RESOURCEFUL YET

GENTLE

It’s normal to feel stretched,

overwhelmed, and at times

completely alone when running

a business, but that doesn’t mean

you have to feel lonely. Loneliness

rarely arises from a lack of

people around us, but from the

absence of feeling seen, heard, and

understood so build sustainable

strategies to balance the demands

of your business, and the part

of you that needs nurturing,

connection, and rest. If necessary,

seek out structured emotional

support from a professional who

understands the unique stresses of

business leadership.

5. AVOID DEFINING SUCCESS -

FOCUS ON THE JOURNEY

Think of your entrepreneurial

restaurant industry calls the Godfather of Hospitality

Your journey from a teenage

P kitchen prodigy to the “Godfather

of Hospitality” is truly inspirational.

What mindset carried you from running

your first kitchen at 19 to founding global

platforms for rising stars?

Great question. I have always been

R driven. I got married very young

and had my daughter when I was

21, so I had to act way older than my

age with responsibility. I was never an

academic, in fact i’m extremely dyslexic

(easy for you to spell!). In school, on my

report card, I was that boy who would

do better if he paid attention - little did

anyone know I was secretly struggling to

read and write, with no help or support

to keep up with my peers. This meant

that I was a dreamer - but this was later

to be my superhero talent as I only saw

opportunities and wanted to seek that out

in others. I love the way that hospitality

gave me this career and its exactly the

same now with these opportunities for

anyone from whatever background to

flourish in this sector.

When you look back at opening Petit

P Village at just 24, what life lesson

did that experience teach you that

still guides you today?

Petit Village taught me so much.

R Firstly how to handle people, work

with the public and how to be a

businessman. I also learnt the valuable

lesson to be organised and how to

plan the day, week and month ahead -

scheduling is key. I also learnt how to

manage staff while encouraging and

incentivising them.

The hospitality industry thrives

P on mentorship. Who were the key

mentors in your life, and what

qualities do you look for when mentoring

the next generation?

The greatest man in my life was one

R of the owners of Langan’s Brasserie -

Richard Shepherd CBE. He took me

under his wing and helped me so much.

I owe him a lot - I loved that man. The

reason I am known as the ‘Godfather of

Hospitality’ today is because he crafted

me and guided me into a new world

with the best chefs, restaurateurs and

celebrities. He literally put me on a global

stage starting in London and was the rock

in supporting my first hotel in Berkshire.

When mentoring the next generation,

I look for raw talent, passion and drive

while providing the support network

and career path that can make even the

wildest dreams come true. Hard work

and determination are also key to that -

it won’t come to you if you sit on your

backside.

As the longest-serving President of

P the Restaurant Association of Great

Britain, you’ve been instrumental in

elevating British gastronomy on the world

stage. What makes British hospitality

uniquely world-class?

I am currently writing a book on that

R question! We in the UK are unique

in the world of hospitality. London

is recognised as the hospitality capital

of the world - a melting pot of incredible

cultures all within approximately a 10-

mile radius of the centre. The last 30

years has seen the meteoric rise in the

UK of the world of gastronomy, service

and creativity with new brands and

chefs inspiring young professionals and

entrepreneurs into this sector. Hospitality

is now the third largest employer in

the UK and one of the top five largest

employers globally.

You’ve revived and expanded the

P now prestigious World Young Chef

Young Waiter and Young Mixologist

competition. What excites you most about

the 2025 edition?

I love the Y competition as much

R as I did 25 years ago. I love seeing

young people come into this

incredible business. The job is tough,

yes, but the rewards and satisfaction are

huge. Learning life skills with a well-paid

job with good working hours is not like

it used to be. That is not to say it’s easy

- what job is! It’s a passion-led job with

timelines for service but I love it. The Y

brand promotes hospitality as a career, a

vocation and profession. It promotes the

use of local seasonal produce in a sustainable world

- a world that is forever changing. Hospitality, food

and great service is at the heart of it all!

What advice would you give to young

entrepreneurs hoping to build something

enduring in the UK’s hospitality industry?

Look carefully, explore the options, do lots of

R forecasting and do your maths! Make sure your

brand stands out, choose a great name, and keep

it simple. This is a consumers’ world - give them a

plate they can’t refuse!

You’ve spoken passionately about inspiring

P the public - and the industry - to appreciate

hospitality as a noble profession. What is your

vision for attracting new talent?

Hospitality is a profession. Attracting new

R talent is simple - show what can be achieved and

has been. Teach, show & tell how to represent

their brand, showcase your venue, be the face and

name of your establishment. In that way, being

super professional, offering education and training,

and providing great career opportunities to the next

generation with all its talents can and will be the

mould for success.

You and your wife Donna Ida have beautifully

P restored Langdon Court. What do you love most

about transforming heritage spaces into living,

breathing venues?

My wife is an incredible designer and has

R created the most extraordinary location and

venue. Although vast - it truly feels like a home.

I concentrated on the gardens - albeit I am not a

gardener but like any good husband I didn’t want to

get under my wife’s creative feet. I loved the whole

experience. The gardens are truly stunning. We have

an entire David Austin rose garden - it smells out of

this world. We took on a broken, run-down historic

house and gave it back its former listed glory. The

Listed Building and Heritage Department thanked

us for saving one of the oldest and most special

properties in the southwest. That meant more than

anything. We have left our mark for the next 100

years or so... a Walton legacy.

Surviving head and neck cancer in 2018 and

P using your platform to support the Oracle Cancer

Trust was both brave and generous. How has

that experience reshaped your approach to life and

leadership?

It makes me look at the small things in life and

R realise that a rainy day and traffic jams are not

really a problem. Life will throw hurdles. How

you jump those is the way to approach life - never

give up. That is a life & leadership skill. I believe

the saying goes, “What doesn’t kill you makes you

stronger” and that’s spot on!

As someone deeply embedded in the industry’s

P evolution, where do you see the future of luxury

hospitality in the UK and globally over the next

decade?

I love and embrace the future especially in the

R luxury hospitality sector because, you know

what, AI cannot take the place of chefs, waiters

and mixologists interacting with customers... YET.

I love the route to local and seasonal produce. There

is an evolution that will continue with the evermore

creative process of brands looking at how to be

different and, foremost, in being kind to our world.

Sustainability is key for our next generation and for

them owning and developing that space globally.

If you could host a dinner party with your wife

for any four guests - from the past or the present

- who would you invite and why?

1. The late Queen Elizabeth - I am such a

R royalist.

2. Grace Kelly (Princess Grace of Monaco) - her

story is just so fascinating, how long do we have!

3. Dean Martin - he could sing That’s Amore whilst

we are eating pizza and pasta.

4. August Escoffier - he basically created the art of

gastronomy we still use today.

the show that hasn’t been seen before?

My vast experience and knowledge of

R both gastronomy and hospitality; a pinch

of calm, friendly, relaxed character

in a stressful space; a spoonful of upbeat

presenting skills; throw in a ladle of charm

and serve up with a Cary Grant nod to old

school style, tailoring and fashion. It’s high

time Masterchef had a Godfather overseeing

things!

baby to enjoy the experience

without getting overtired. As they

become more used to the water,

you can gradually increase the

length of time you spend in the

water.

SCHOOL CHILDREN

Many young children have a fear

of water. Acknowledging and

validating your child’s feelings is

the first step towards helping them

overcome these fears. Discussing

their worries openly will also

foster greater trust and encourage

a more positive attitude around

the prospect of learning to swim.

Here is some advice to help you

get started.

START SLOWLY

For toddlers it is important to

start slowly and always in shallow

water where your child can

comfortably stand. For younger

children, allow them to play with

toys and splash water to create a

sense of fun. You can gradually

water, it is important to educate

you child around basic water

safety. Here are five top tips to

remember:

1. Learn to float - floating can

be a lifesaver in an emergency,

allowing children to conserve their

energy while waiting for help.

2. Swim together - always

encourage your child to swim with

friends or family rather than alone.

3. Stay within designated areas -

make sure your child understands

the importance of staying within

marked swimming zones and

never jump or dive into unfamiliar

4. Assess water conditions – make

between calm and rough waters.

Teach them to respect currents,

tides, and waves and if swimming

in the sea, try to swim where there

From Milk Teeth to Molars: How to

Support Your Child’s Changing Smile

Dr. Hanna Kinsella is a familiar face from ITVBe’s The Real

Housewives of Cheshire. She is also the Principal Dentist & founder

of Kiln Lane Dental Clinic and founder of Icy Bear Dental Care

A child’s smile goes through many changes from

infancy to adolescence, and each phase of dental

development plays a vital role in their long-term

health. As a parent, knowing what to expect and how

to support each stage helps build the foundations for

a healthy, confident future.

INFANT TO TODDLER: THE FIRST TEETH

Teething usually begins around six months of age,

though some children start earlier or later. By the

age of three, most children will have a full set of 20

baby teeth, also known as milk teeth. These early

teeth are more than just a temporary feature. They

are essential for chewing, speech development, facial

growth, and they also guide the placement of adult

teeth.

Even before the first tooth erupts, it’s beneficial to

clean your baby’s gums with a soft, damp cloth after

feeding. As soon as teeth begin to appear, introduce

brushing twice a day using a small toothbrush and

a smear of fluoride toothpaste. These early habits

help your child get used to oral care and establish a

routine that will carry into later childhood.

THE MIXED DENTITION STAGE: AGES 5 TO 12

Around age five or six, children begin losing their

baby teeth and gaining permanent ones. This phase,

known as the mixed dentition stage, often lasts until

age 12 or so. The process can bring excitement or

anxiety, depending on your child’s temperament.

Loose teeth and mild discomfort are common, and it

helps to reassure your child that this is a normal part

of growing up.

During this stage, permanent teeth are especially

vulnerable to decay because their enamel is not yet

fully hardened. Continued brushing twice a day with

fluoride toothpaste is essential, along with regular

flossing and dental check-ups. Parental supervision

during brushing should continue until you’re

confident your child can clean all areas effectively on

their own.

IDENTIFYING ORTHODONTIC CONCERNS

As permanent teeth begin to settle into place,

orthodontic issues may become more noticeable.

Crowding, spacing, or bite problems can develop

gradually and may not always be obvious. This

is why many dental professionals recommend an

orthodontic assessment around the age of seven.

Early evaluation allows monitoring and timely

intervention if needed, even if no immediate

treatment is required.

TEEN YEARS: REINFORCING RESPONSIBILITY

By the early teenage years, most children have their

full set of adult teeth. At this point, reinforcing

personal responsibility for oral hygiene is key.

Brushing for two minutes, twice daily, and flossing

every day should be part of the daily routine. A diet

low in sugary snacks and acidic drinks also helps

protect enamel and prevents long-term damage.

Encouraging regular dental check-ups during these

years keeps your child’s oral health on track and

helps catch any emerging issues early. Teenagers

involved in contact sports should also be fitted for

custom mouthguards to protect their teeth from

injury.

What first drew you to the role of

P Blippi, and how has stepping into such

an influential character shaped your

own views on early years education?

As a kid, I would’ve traded my right

C arm to drive excavators or talk to

astronauts - so stepping into the

world of Blippi feels like a dream. I first

joined as the stage show actor and never

imagined I’d be Blippi on camera doing

all these incredible things. What drew me

in was Blippi’s boundless curiosity and

joy for learning. It also felt like the perfect

fusion of my two passions: performing and

working with kids. Before Blippi, I was a

New York City stage actor, teaching chess

and music in after-school programs and

mentoring with The 52nd Street Project.

Playing Blippi allows me to learn alongside

children and perform at the same time. I

truly believe early childhood education

builds the foundation for how kids

experience the world, and I hope Blippi

helps inspire a lifelong love of learning.

What’s been the most surprising

or emotionally memorable moment

during your time filming Blippi?

Meeting Jacob and his sister Ava

C at a children’s hospital in LA was

unforgettable. Jacob had decorated

his hospital door like a post office because

he loved mail so much. That visit inspired

our episode “Blippi’s Special Delivery!”

and reminded me how meaningful these

moments are for the kids we reach.

Children see Blippi as a best friend in

P their world of play. How do you stay

grounded and keep such a positive,

inspiring presence, even with the pressures

of filming and being in the public eye?

Therapy - lots of it! But honestly, when

C you’re surrounded by great people and

doing work that brings joy, it’s easy

to stay positive. I get to travel the world

with my incredible wife, Bella, and meet

families who love what we create. The best

way to stay grounded is to love what you do

and be surrounded by people who know the

real you.

You inspire children to be curious

P about the world around them. What’s

one thing you’ve recently become

curious about or learned that has touched,

moved or inspired you?

We recently visited a farm sanctuary

C and filmed with a cow who escaped a

slaughterhouse and ran for miles before

being rescued. Learning how intelligent

cows and pigs are inspired me to reduce

my meat consumption. It was a moving

reminder of the connection between

empathy and awareness.

Which children’s book, TV show

or character from your own childhood

continues to influence or inspire your work

today?

Sesame Street and Mr. Rogers’

C Neighborhood were huge influences.

They helped me become a more

empathetic and curious person. Later, I

fell in love with goofy, physical comedy

from shows like Drake & Josh, Conan,

and animated PBS classics. Discovery

Channel’s Dirty Jobs and Mythbusters also

fuelled my curiosity and love for trying

new things.

Behind every joyful scene is a team of creatives

P and a lot of precision. What’s one moment

in Blippi that looks simple but actually took

immense effort to bring to life?

There’s an incredible team working behind the

C scenes to bring Blippi to life - every episode is

carefully written, planned, and executed with a

level of precision that often goes unseen. One of the

most challenging (and rewarding) parts is working

with animals. We usually only get one take, so

everything from camera work to sound to timing

has to be spot-on. It’s a delicate dance between

improvising in character, guiding the conversation,

and hitting all the educational points, often with

unpredictable animal co-stars. What may look

like a simple, fun moment often requires a ton of

preparation, coordination, and quick thinking on set.

If you could develop your very own Blippi

episode, what would that episode be, where, and

with who?

I would love to develop a Blippi episode

C going to The Australia Zoo and teaming up

with Robert Irwin to teach kids about animal

conservation and the importance of taking care of

our planet.

What advice would you give your younger self

just starting out in this industry?

Get TSA PreCheck! But seriously: I would

C also tell my younger self, “Be patient and take

a breath and trust that God has a plan for you.

Don’t stop doing anything you’re doing, because

success requires preparation, diligence, hard work,

and a bit of luck. But don’t force it and don’t be

tense. Enjoy every moment because time flies.”

Being in the spotlight comes with its own

P unique pressures. How do you stay grounded

and maintain a sense of authenticity in such a

fast-moving world?

I am only as good as the people around me

C and as strong as my circle. My wife, Bella, our

Blippi crew and team, and my family help keep

me grounded and remind me of who I am outside

the costume.

Playing Blippi demands high energy and

P emotional presence. What daily habits, wellness

rituals or mindset tools do you rely on to stay

balanced and creative?

Sleep and hydration are key. I aim for 8 hours

C every night so I can keep up with Blippi’s

energy and do the voice without strain. I work

out regularly (CrossFit or hotel gyms), eat clean

when possible, and keep my voice healthy with

steamers and lozenges. All of this helps me stay in

physical shape to dance across screens and navigate

the labyrinth of children’s playground tunnels. I’ve

also got a naturally high energy level, but broccoli

and coffee definitely help.

Our readers love to hear the lighter side - what’s

the last thing that made you laugh out loud, and

would it have tickled Blippi too?

A kid once stared me down in costume and

C whispered, “I know who you really are.” Pretty

sure his mum follows me on TikTok! Also,

TikTok creators like Zachariah Porter or Leo Skeppi

always crack me up. I think Blippi would also have

been tickled. He’s an easy laugh.

Finally, with the amazing work you do bringing

P Blippi’s love of learning to countless children

across the world, what do you hope your legacy

will be?

I hope people remember me as someone who

C was genuine, kind, and inclusive. Someone who

worked hard, brought joy, and looked out for

others, especially those who needed it most.

These myths can often cloud

perceptions, causing scepticism

amongst students, parents, and

educators alike. From the belief

that online education is inherently

easier than attending a traditional

bricks and mortar school, to the

assumption that it lacks personal

and social interaction - these

misunderstandings hinder the

growth and acceptance of virtual

learning environments as a

powerful addition in our evolving

world.

MYTH 1: CHILDREN WHO

ATTEND AN ONLINE SCHOOL

SPEND ALL DAY ON A

SCREENS

This is probably one of the most

common misconceptions of

online schooling and one that

couldn’t be farther from the

truth. Students typically spend

three hours per day having direct

contact time with their class and

teacher on-screen. Apart from

some optional afternoon sessions,

which are no more than an hour,

the remainder of the day is spent

focusing on personal interests and

independently learning offline.

The point of online schooling

is to provide a balance between

the digital and real world. As

such, students have structure to

their days and clear guidelines

around the usage of devices.

Many students will be working

on projects and depending on

the nature of these, they could

be outside filming a podcast,

designing a new product for a

STEM showcase, engaging in

outdoor activities for physical

education or attending clubs.

MYTH 2: YOUR CHILD

WILL BE ISOLATED AND

DISCONNECTED FROM OTHER

CHILDREN

Many parents worry about the

impact attending an online school

will have on their child’s social

life. The reality is students are

most certainly not alone. In the

case of our school, they will be

part of a tight-knit group of no

more than eight children who

meet together daily with their

teacher, and they will naturally

build rapport in that environment.

All good online schools will

actively encourage their students

to collaborate and socialise

outside of school and will provide

ample opportunities for meetups,

whether that is through a wellstructured

buddy programme

or through weekly one to one

mentoring support.

MYTH 3: EVEN IF YOUR CHILD

MAKES FRIENDS ONLINE,

THEY AREN’T LIKELY TO SEE

THEM IN PERSON

Another common misperception.

Students at online schools will

often socialise in person where

location allows, or virtually on

FaceTime or video call (just as

they would do in a traditional

school setting) if they live

further away from each other.

For example, we have a group

of senior students who meet

virtually once a week to cook

and eat together. The positive of

these social interactions is that

they also interact with children

from all over the world, expanding

their skills as global citizens

and their knowledge of different

cultures. If anything, the onus is

on online schools even more so, to

ensure that students are building

friendships and are happy. The

point of an online school is to

provide greater balance between

school and hobbies or passions.

We often find that children with

similar interests will naturally

gravitate towards each other,

whether that is through attending

a music or sports club together

or even teaming up through class

projects and group challenges.

MYTH 4: AS A PARENT YOU

WILL BE EXPECTED TO GIVE

UP LOTS OF TIME TO SUPPORT

YOUR CHILD’S LEARNING

Most parents would say that they

support their child’s learning and

development at home whether they

attend a bricks and mortar school

or not. But the emphasis on this

support is no different to your

child being in a traditional school

(aside from the fact that if your

child is primary age, you’ll need

to physically be around during

the school day from a safety

perspective). Other than that,

there is structure to the day and

all teaching and learning is done

through the school and with the

support of the class teachers and

mentors. Online schools also focus

heavily on building independent,

resilient and self-reliant students

who are accountable for

completing their studies from a

young age. This provides a robust

foundation for their future lives.

Parent involvement on occasion is

good practice from the perspective

of gaining feedback on the

child’s school day, demonstrating

encouragement and delivering

praise where deserved, but

attending an online school is very

different to home schooling your

own child – where the expectation

on parents is vastly different.

As a parent of an online school

student, you will be expected to

ensure they have access to the

right technology to dial into their

lessons and to establish daily

routines of learning beyond the

three-hour sessions. You will also

need to ensure your child has an

appropriate space set up to learn

in (which will vary according to

age), but once that is all in place,

your child will begin to embark on

a daily routine that will keep them

busy and engaged.

MYTH 5: YOUR CHILD WON’T

GO ON SCHOOL TRIPS

This is definitely a myth. All

good online schools will build

in regular in-person educational

adventures to ensure students

develop both academically and

emotionally. At our school for

example, we run at least three

week-long residential school

trips per year. We visit different

European overseas destinations

where our students can engage

in various workshops, excursions

and social entertainment. We use

the experience as an opportunity

to develop our students further

and we find that these in-person

events are invaluable in solidifying

strong, lasting friendships.

As well as residentials, there are

a whole host of other activities

on offer, such as trips to the

theatre for children interested

in the performing arts, sports

tournaments and events which get

children outside and off-screen.

We have also recently opened a

boarding house in Italy, which our

students are encouraged to visit

should they want to reconnect with

peers or take some time to study in

a new, inspiring environment.

MYTH 6: IT COULD LOOK BAD

ON YOUR CHILD’S FUTURE CV

IF THEY WENT TO AN ONLINE

SCHOOL

Definitely not the case. The

world of education is changing,

and the future is likely to see

an increase in the number of

children attending online schools

for many reasons - including the

rising accessibility of technology

and the numbers of children who

are being let down by the system

and are struggling to learn in a

traditional school setting. In time,

online education will become

more normalised because of the

flexibility it offers children as

well as a personalised learning

experience tailored to individual

needs which accommodates

various learning paces and styles.

In short, attending an online

school will not be considered a

negative factor in a child’s future.

If anything, having been an online

student will demonstrate the high

level of resilience and self-reliance

that individual has achieved

during their school years.

The Sophistication of

Sparkling Rosé

Sparkling rosé has been underestimated for far

too long. It’s pink, it’s bubbly, and for years it

was sweet, simple, and a little bit throwaway.

The wine equivalent of an easy-listening playlist.

The stuff of brunches, rooftop bars and glossy

postcards from Saint-Tropez.

That image stuck. And sure,

there were plenty of cheap bottles

doing it no favours. But the idea

that sparkling rosé is somehow

less serious than its white

counterparts? That it’s seasonal,

sugary, and only good for daytime

drinking? It doesn’t hold up.

Because when you strip away the

clichés, what you’ll find is one of

the most versatile, well-crafted,

and quietly confident wine styles

around.

THE REALITY CHECK

Most quality sparkling rosé is dry.

Crisp, layered, and made with

purpose. It’s not just white fizz

with a dash of red. These wines

are built from the vineyard up,

with producers treating them as

serious expressions in their own

right. Not an afterthought, nor a

novelty.

And it’s not a new idea.

Champagne houses like Bollinger

and Ruinart have been crafting

serious rosé wines for decades,

with as much attention and

precision as their vintage cuvées.

What’s changed is how the

wider wine world is responding.

Sommeliers, collectors and

everyday drinkers are finally

giving these wines the attention

they deserve.

Swel, sommelier and owner of Mi

Casita Bar à Vin in Madrid, puts it

like this: “In recent years, thanks

to a new generation of vignerons

– many of whom trained in the

world’s leading wine regions –

there has been a real appetite for

experimentation, innovation, and

the exploration of new concepts,

all while preserving the soul of

Champagne. This has led, at last,

to more rosé Champagnes with

genuine identity and character.

Today, rosés are being conceived

independently from the outset:

from the selection of specific

vineyard plots and grape varieties,

to the ageing process and dosage,

each step is designed to ensure

harmony in the final wine.”

It’s not just Champagne, either.

Here in Spain, producers in the

Penedès Cava region are giving

their rosé a moment. Using native

red grapes, they’re creating

traditional-method sparkling rosés

that are gastronomic, mineral, and

often surprisingly age-worthy.

These wines don’t care about the

pink stereotype. They’re too busy

expressing where they come from.

MORE THAN JUST SUMMER

BUBBLES

Sparkling rosé works in summer.

No one’s denying that. A cold

glass in the heat is a beautiful

thing. But reducing it to a seasonal

pleasure misses the point.

In spring, it’s a fresh start: crisp,

bright, with just enough fruit

to flirt. In autumn, it matches

the mood: earthy, copper-toned,

quietly serious. And in winter?

That’s when it sharpens. It becomes precise. Electric.

A bolt of acid and elegance that cuts through the

weight of stews, roasts and end-of-year rituals.

It doesn’t just suit the seasons. It moves with them.

WHY IT WORKS SO WELL AT THE TABLE

As a food wine, sparkling rosé punches far above

its reputation. The bubbles cleanse the palate. The

acidity keeps things sharp. The delicate fruit notes

add just enough richness to make it feel complete.

It handles salt, spice, fat and freshness, and rarely

steps on the toes of the food.

It also happens to be one of the few wines that

plays well with umami. The deep, savoury taste

that makes soy sauce, mushrooms and aged cheese

so compelling but so difficult to match. Many

wines either clash or collapse. Sparkling rosé holds

steady. Its lift and structure bring energy without

overwhelming the dish.

Pair it with jamón ibérico, sushi, miso-glazed

salmon, roast chicken, or even a wedge of brie. It

adapts. And it rarely feels like the wrong choice.

THE CRAFT BEHIND THE COLOUR

One of the biggest misconceptions about sparkling

rosé is that it’s somehow easier or less “serious” to

make. The opposite is often true.

Most top-tier sparkling rosés are made using the

traditional method (sometimes called Champenoise).

It’s a labour-intensive process and means the second

fermentation happens inside the bottle, producing

finer bubbles and more integrated flavours. The

wine then rests on its lees – the dead yeast cells

– for months or even years to develop texture and

complexity. Those subtle notes of brioche and

almond? That’s the lees talking.

In Spain, producers like Recaredo, Gramona, and

Raventós i Blanc treat their rosado wines with the

same seriousness as their whites. Long ageing,

organic or biodynamic farming, and meticulous

vineyard selection.

The result is a wine with finesse and plenty of cellar

potential.

WHERE IT’S ALL GOING

The shift is already underway. More sommeliers

are putting sparkling rosé on lists all year round.

Not just in summer or for celebrations. Producers

are giving these wines more time, more terroir

focus, and more freedom to evolve. Consumers are

beginning to expect more from the pink stuff, and

they’re finding it.

This isn’t a trend. It’s a course correction. Sparkling

rosé was never supposed to be frivolous. We just

didn’t give it the time to show us what it could be.

Drink it cold.

Drink it dry.

But don’t just drink it in July.

Champagne Taittinger

Henley Festival 2025

A heady mix of music royalty, orchestral grandeur and riverside revelry made Henley

Festival 2025 a dazzling summer highlight. Diana Ross opened the black-tie affair with

her sumptuous Symphonic Celebration setting the tone for a glittering week. McFly

electrified Thursday’s crowd with Britpop nostalgia, while Rick Astley’s velvet vocals

and Haçienda Classical’s euphoric dance reimagining brought energy to the weekend.

Sunday closed with elegance as Matteo Bocelli’s soulful serenade met Jamie Cullum’s

genre-defying performance in a pitch-perfect finale.

On the Sunday, families descended on Henley’s Playdate, a joyous escape packed with

RISE shone again, platforming future stars like Hetta Falzon and Leila McKenzie on a dedicated stage that

celebrated raw talent and creativity. From jazz in the Paradiso to bohemian beats in the Bedouin Tent, Henley

Festival once again proved itself more than an event - it’s a cultural celebration wrapped in fireworks, fine

dining and philanthropic spirit.

A festival for all generations, Henley 2025 was a masterclass in elegance, entertainment and emerging

excellence. We already can’t wait for next year when Henley Festival returns on 8th - 12th July 2026.
