and floral spice. Such a

gorgeous combination

makes it perfect with

richer foods that have an element of sweetness

– beef massaman would be ideal, with the hoppy

bitterness cutting through the sauce.

It would also be delicious with Moroccan tagines,

acting almost as an extension to the aromatic stew.

If you’re looking for something a little less far-flung,

Sussex best is also great friends with soft, mild

cheeses (Yarlington would be my pick) and harder

mature ones (maybe Sparkenhoe Red Leicester),

especially if you serve them with a bit of sweet

chutney.

Old Ale was Harvey’s Brewery’s first beer to

win a National Award in 1952. The beer is

celebrated by the Brewery’s annual ‘Dancing

in the Old’ event with local Morris Men and

Women joining us in our brewery yard the

first weekend of October.

Roast Beef Sandwich

and Old Ale

Mahogany-red in colour,

this veteran beer style

has dried fruit, currants,

sultanas and suggestions of

milk chocolate on the nose.

There is dried fruit, a hint of

chocolate and caramel on the palate, as

well as a vinous hint in the background. It has a

medium-bodied mouth feel allied to a smooth

creaminess and an appealing (but not cloying)

sweetness. Instead of a mid afternoon cup of tea,

try a glass with Madeira cake, where the beer’s

character acts as an extra ingredient.

Also try with a roast beef sandwich but with

piccalilli instead of mustard; or put half a pint in a

beef stew and drink the rest alongside.

fan favourite, Old Ale. Rich and dark, it’s soft and full

Malt, water, yeast and hops are the fundamental

ingredients for brewing today, but how Harvey’s operates,

where we source our ingredients, and where our

by-products go, are what make our beers distinct.

OLYMPIA

A sun-soaked celebration of hops, Olympia is

an absolute must-have for the summer season.

An effortlessly drinkable golden ale, boasting

a delicate balance between its smooth malt

profile and a gentle hint of bitterness.

Olympia with Chicken and Leek Pie

The brewery building was designed in such a way as to

aid the brewing process, this seemed logical at the time of

construction, and even now being gravity fed allows us to

save energy from not using pumps to assist in production.

At Harvey’s we start a brewing day by pouring sacks of malt

into our mill, crushing it to a fine grist and exposing the starch

in the grain; this is needed to be broken down into the sugars

that our yeast will feast on during fermentation.

MALT: Our malt is sourced from Maltsters in

East Anglia, UK. Our contracts are set years

in advance so we can guarantee a continued

supply of the finest malt for our beers.

The malt grist and water (liquor) are released into our

Mash Tuns where the exposed starches from the grist are

isothermally mashed, kept at a single temperature. This

process enables enzymes in the malt to convert from starch

into sugar, creating a sugar solution known as ‘wort’.

The yeast; a living single celled microorganism, is added

to the wort and it will feed on the fermentable sugars,

converting them to alcohol. Over the course of the following

week the yeast continues to ferment and replaces the

sugars with alcohol and Carbon dioxide, creating beer!

OUR YEAST: For over half a century we have

fermented our beers using a yeast strain

which is now unique to us. The crop from each

week’s brewing is re-pitched into the following

weeks. We believe our yeast contributes to

approximately 50% of our final beer flavour.

The resulting brew is sent off for preparation and then

racked, kegged, canned or bottled by the Harvey’s Brewing

team to present a traditional, handmade, lovingly crafted

beer to our customers.

First produced in 2005 to celebrate our major

summer award at Kensington Olympia for

Best Bitter. It became an instant hit. Olympia

Golden Ale is a very refreshing summer ale

with a balanced complexity.

STRAW

CRISP, FLORAL, MALT, HOP

FLORAL, HOP, STRAW

A fresh British golden ale, reminiscent of pub

gardens, country lane hedgerows, and local

honey. This beer combines the soft, digestive

biscuit of English malts with classic, nettle-y hop

varieties all grown in Kent.

Such a quintessentially British beer is

perfect with the foods it’s spent a lifetime

accompanying – fish and chips, chicken and

leek pies, honey-roast ham and doorstep

sandwiches stuffed with Cheddar. But it’s

also brilliant with East Asian

stir-fries such as Phad Thai,

where the honeyed sweetness

matches the sweet, tart sauce.

WATER: Rainfall which has filtered over the

Sussex chalk downs is drawn from our artesian

well up into the liquor reservoir in the Harvey’s

Tower. Our own water supply is important as

it gives our beers a unique flavour, and our

own source will preserve Harvey’s brewing for

generations to come.

The converted ‘wort’ gets transferred into one of two

Coppers in our Copper House. A Copper is a very large

kettle like vessel. This is when our locally sourced whole

hops are added to the brew to contribute flavour,

bitterness, and aroma. The mixture is then boiled and

cooled before heading to our fermenting tuns.

LOCAL WHOLE HOPS: We use local whole

hops from Sussex, Kent and Surrey, placing

contracts with local farms years in advance to

ensure an ongoing supply. Our partnerships

with our hop growers span many years, and we

believe it is important to commit and invest in

our local suppliers.

At this point in the process leftover ‘spent’ hops from the

Coppers are filtered into a hop back. They are shoveled

out and collected for distribution to local allotments

and nurseries; the same as our spent grains which go to

Plumpton Agricultural College to feed their cows.

The fermenting tuns are where the beer evolves and

alcohol is created. This begins after we pitch our unique

yeast strain, skimmed from a previous brew, in with the

now cooled wort.

Armada Ale has a pronounced yet balanced hop

character, derived from Fuggle and Golding hops.

The beer has floral, herbal and biscuit

flavours. Both quiche and pasta have a

herbal character and are also wheat based

which complements the malty biscuit character

of the beer. The beer’s biscuit character can

also be mirrored in the sponge of the cake.

ORIGIN

Dark Mild accounted for 75% of beer produced during

the decade following the Second World War and was

the mainstay of a generation in the public bar.

This is a low alcohol beer with a light body but

plenty of nutty and chocolate flavour. With the

Nut Roast there are complementary flavours.

In the Shepherd’s Pie the meat has caramelised

as it cooked which matches the caramel malt

flavours of the beer. Tiramisu with its rich

chocolate and coffee flavours find a friend with

the roasted character of this dark mild.

Brewed to Henry Harvey’s Porter recipe of 1859.

The name ‘Porter’ is thought to derive from the

beers’ popularity with street and river porters of

the 18th Century.

This beer has big savoury flavours of coffee,

soya sauce and licorice. The food choice needs

to have big flavours too. With each of the food

choices the dense texture is important and

they each need a beer that has oomph. Porter

certainly has that!

Georgian Dragon and

Harvey’s Brewery is the oldest independent brewery in

Sussex. We are a family business, and the brewery has

been in the custodianship of John Harvey’s descendants

since 1790, with five family members from the seventh

and eighth generations working here today.

A Ruby ale with a fruity aroma and

sustained, lingering bitterness with a subtle

hit of lip-smacking fruitcake.

1790 The name of Harvey has long

been associated with the supply of

beers, wines and spirits in Sussex.

Records of the 1790’s recall the delivery

of Old Red Port, Sherry and Claret in

Lewes and its surrounding villages.

1820 John Harvey started brewing

as a seasonal sideline activity in Bear

Yard, opposite the current brewery.

With his sons, Henry, Edwin and

William, he acquired the current Bridge

Wharf Site in 1838 for the price of

£3,100 and developed “Harvey & Son”.

1859 Henry Harvey brewed Porters,

Stouts and strong Mild Ales for

distribution among 17 family owned

public houses in Sussex.

1928 Alice Mary (May) Harvey Smith

(fourth generation), becomes Harvey’s

first Chairperson. She appoints her

nephew, Eric Carlyon Rundle, and

in 1938, Anthony Jenner from R & H

Jenner’s Brewery in South London.

1952 Harvey’s wins first award for

XXXX on Draught (Old Ale)

1957 Harvey’s receive yeast from

Tadcaster Brewery after the breakdown

of the Pure Yeast Company. This same

yeast strain, 3000 generations later, is

still used today.

1960 Catastrophic Floods leave

Cliffe High Street under water for

nearly a week, the brewery carries

on despite severe disruption to

production.

2002 Audrey Elder becomes

Edinburgh make their first and only

brewery visit to Harvey’s Brewery. The

first member of the ninth generation

of John Harvey’s descendants is born.

A beer celebrating England’s Father of

Palaeontology. In 1821, Lewes doctor and fossil

collector Gideon Mantell’s understanding of

fossilised Iguanodon teeth, discovered in a Sussex

quarry, heralded the start of the classification of

prehistoric reptiles.

LINGERING BITTERNESS

This attractive ruby ale has so much going on in

the nose, with beguiling notes of caramel and

fruitcake coming to the fore. On the palate it’s

deliciously sweet, full and rounded, which could

become overpowering were it not for the foil of

crisp hop bitterness finishing it off.

It’s an elegant, outrageously seductive match

with mature cheddar, dancing with it in a way a

good chutney does. It also pairs wonderfully with

Viennese pastries.

1980 Eric Rundle passes away,

leaving the company in the hands

of his daughters Audrey, Joan, and

Eileen, (sixth generation) and Chairman

Anthony Jenner. Miles Jenner becomes

Head Brewer, and in 1981 Eric’s

Grandson, Hamish Elder, son of Audrey,

joins the company.

2020 The Covid-19 Pandemic causes

brewing activities at Harvey’s to come

close to a halt. The yeast that had

been faithfully used batch after batch

for 66 years was at risk, but managed

to survive due to the demand for

online sales and local draught beer, as

permitted by regulations.

1862 John Harvey dies, and Henry

and Edwin die within days of each other.

William runs the business alone with

Henry Titlow-Barrett from Wethereds

Brewery, Marlow. William dies in 1868.

1881 The present Gothic Victorian

brewery was built under the

supervision of Titlow-Barrett, having

been designed by famed brewery

architect, William Bradford.

1899 Harvey’s face business setbacks

compared to contemporaries like

Watneys, Charrington, and Whitbread.

1996 A fire devastates the brewery.

Offices were temporarily moved to

what is now the John Harvey Tavern.

The brewery was restored in 1998 but,

many important and historical files

were lost to the fire.

2000 Another flood in Lewes deluges

the brewery. Harvey’s were told that

the brewery wouldn’t be up and

2021 Low Alcohol Old Ale wins

Supreme Champion at the International

Beer Challenge. Audrey Elder and Ken

Saunders former Chairperson and

Managing Director, pass away.

2022 Longest serving British

monarch, Queen Elizabeth II, passes

away and Harvey’s cease brewing

of Elizabethan Ale. One last batch,

produced in 750ml bottles is released

in commemoration.

2023 Zoë and Pete, and Edmund

Jenner move into Senior roles at

the brewery. Harvey’s wins Gold in

CAMRA’S Champion Beer of Britain

– Mild category.

Rainfall

Rainfall which has filtered over 30 years through the

Sussex chalk downs is drawn from our artesian well some

sixty feet below the brewery, and stored in the liquor

reservoir at the top of the Harvey’s Tower.

Having our own supply preserves a regional flavour to

our beers, and should preserve Harvey’s brewing for

generations to come. Water is replenished by the South

Downs, and drawn up from Harvey’s wells.

Malt

We brew with Maris Otter malted barley, the product of

a long programme of cross selection dating back to the

early 1900s, and much prized by cask ale brewers.

Local Whole Hops

Harvey’s use whole hops from Sussex, Kent and

Surrey and we have worked closely with our hop

farmers for many years.

Yeast

At over 65 years old the Harvey’s yeast strain is

unique to our brewery. Countless generations of yeast

cells from our 1957 consignment have passed through

our fermenting room, as the crop from each week’s

brewing is re-pitched into the next.

Our yeast contributes to 50% of the final flavour of

Harvey’s beers.

ORIGIN

A play on the name of another very famous brown

ale, Lewes Castle is named after Lewes’ own Norman

fortress, built after William’s conquest of 1066.

Brown ale and mushroom risotto is a classic

food and beer pairing, and Lewes Castle Brown

– an award-winning exemplar of its style – is

robust enough to work fantastically well. Wild

mushrooms have a meaty texture and a rich,

earthy character that’s perfectly complemented

by the roasted malt notes in the beer.

At Harvey’s, we’re dedicated to sustainable practices,

deeply rooted in our traditional methods and longstanding

local partnerships—fundamental to the brewing industry

for years. Join us on our journey toward a greener future as

Brewing

• Being a gravity fed brewery saves energy naturally.

• Heat exchanging paraflows minimise the boiling of

water saving energy.

• Equipment is only replaced with materials that will

provide long term gains.

Brewing By-Products

• Spent hops are distributed to local nurseries to be

used as mulch and fertilizer.

• Spent grains are taken away to Plumpton College,

who estimate 2.5 million litres of milk can be attributed

to our grains per annum.

• Approximately 500 barrels of surplus Yeast leave the

brewery each year to be used as a natural, high energy

liquid protein feed for pigs.

Packaging

• Only UK Brewer to still be using returnable

bottles. Our bottles will journey 4 or 5 trips in

and out of the Brewery in a lifespan.

• All packaging utilised for retail in-store and online

is either recyclable or designed for reuse.

Buildings

We have 544 Solar Panels on our Depot roof.

The panels have generated over 1 million kWhs of

electricity since installation. Any surplus energy is

fed back into the local grid.

Transport

• We use an emission reducing fleet, including

fully electric vehicles.

• Our own vehicle distribution is within a 75 mile

radius of the Brewery.

Staff

We are proud to employ a local skilled workforce

to conduct maintenance our Grade II Listed Brewery

site and Pub Estate, consisting of many trades

including Plumbers, Carpenters, and Electricians.

ORIGIN

Brewed to commemorate the bicentenary of

Thomas Paine’s “The Rights of Man”. It is thought

that Paine helped to draft the American Declaration

Of Independence. An eponymous political radical, he

was an Excise Officer in Lewes between 1768–1774.

Tom Paine is a rich and complex beer with some

big flavours. It has the hops to cut through the

texture of the Sunday Roast and distinct toffee

flavours that harmonise with

the caramelisation of the roast as it cooks.

Vegetarian lasagne also caramelises so

Tom Paine’s flavours are complementary.

Salted Caramel pudding is a study in contrasts

with the bitterness of the beer.

of the age old interaction between brewing

DEEP GOLD

The light malt sweetness of the Southdown

Harvest makes a perfect match for the

slightly caramelised skin of the vegetables.

The green hop grassiness provides brightness

to lift the dish, and just enough hop bitterness

to cut through each spoonful of that

creamy dip.

ORIGIN

First brewed to mark the Eastbourne Beer Festival

in October 2004. A strong, old style India Pale Ale

reminiscent of the beers exported across the globe by

British breweries during the early nineteenth century.

PALE GOLD

BITTER FINISH, CRISP, DRY-HOP

CITRUS, HOP, MARMALADE

Light amber in colour, this emboldened IPA has

potent hop notes on the nose, suggestive of ripe

orange marmalade alongside the sweetness of

tinned mandarins. The bold English hop character

continues on the palate, with more citrus, plus a

grassiness and a restrained sweetness redolent

of a Bakewell tart. The finish has a dryness that

suggests a witty aside in the pub, a putdown said

with affection and compassion.

How about trying it with roast chicken,

roast potatoes and peas — the beer adds a

succulence to the chicken, with its bitterness

cutting through the fat.

ORIGIN

Originally brewed to commemorate the gallant work

of the Fire Brigade during the fire at the brewery

in July 1996 and was originally called ‘Firecracker’.

We now brew this for the bonfire boys and belles of

Lewes for the November 5th celebrations each year.

Brewed for bonfire night, this chestnut-coloured

ale has bags of toffee and caramel on the nose,

and develops on the palate with rich, fruity

sweetness and a pleasing toastiness, happily

evoking bonfire toffee rather than the bonfire

itself.

It complements the caramelisation of grilled

or barbecued meats quite wonderfully,

and harmonises really well with ginger and

cinnamon, making it a perfect match for any

kind of tagine.

Harvey’s has an international reputation,

particularly within Northern Europe. Best Bitter

has been available in Copenhagen for many years

and our prize Stout was originally adopted from a

Latvian Brewery. Pilsner is brewed with Lubelski

hops grown in Poland.

As a style invented in Czechia and beloved

of Germans, Pilsner is perfect with things like

rotisserie chicken, pork sausage and super-salty

pretzels. But with its floral, spicy Polish hops

and bready body, Harvey’s Pilsner is at its best

with Mediterranean foods.

Try it with a doughy, Neapolitan-style

margherita pizza where its soft malt body

blends with the base; or bring out the depth of

the hops by having it with a highly spiced lamb

kebab; it’s also perfect for all kinds of tapas,

whether it’s with a few slices of aged Jamón

ibérico or something cooling with some spicy

patatas bravas.

ORIGIN

Wharf IPA is brewed using hop varieties grown in

Sussex and Kent. The imagery on the can is of the

Wharf opposite the brewery site which sits on the river

Ouse where the brewery was established in 1790.

English hops are considered by some to be less

exciting than their American counterparts, but

this beer showcases them in all their grassy,

herby, spicy glory, providing a wonderfully

complex and pleasing aroma. On the palate it

evokes the English hedgerow, with hints of mint,

grass, pepper, rosemary and figs.

These hints pair perfectly with a rich meaty

dish such as roast lamb, and also have the

power to cut through and enhance a quiche

or frittata.

BOTTLES

Harvey’s produce a range of award-winning specialty beers

that are available in bottle year-round and very rarely in cask.

Some of these premium beers mature in tank over long periods;

our Imperial Extra Double Stout is in tank for 18 months, and

Prince of Denmark for nine months.

PRINCE OF DENMARK

A strong dark, beer; with complex aromas of

leather chocolate and liquorice. Delve into tastes

of treacle, toffee, mocha, coffee and smokiness.

Brown amber and black malts are mixed with

pale ale malt to give this beer complexity and

depth.

ALC 7.5% VOL

Available Bottle: All Year | Cask: Occasionally

It is based on traditional recipes from the

18th Century but has also been described as

an ‘Imperial Stout Nouveau’. As complex as

Shakespeare’s eponymous hero of which the

label is derived.

IMPERIAL STOUT

The roast, alcoholic and spicy notes combine

in this unusually sweet and sour beer.

Steeped in the depths of chocolate and

coffee, this brew will improve and develop

complexity up to one year.

ALC 9.0% VOL

Available Bottle: All Year

Our most awarded beer with over 35

accolades, we only brew Imperial Stout

once every nine months and then age it

for 18 months. The recipe contains a dense

concentration of varied malts and hops to

produce a bottle conditioned stout of

9.0% ABV.

Sweet Sussex Stout is a lush, sweet stout

and a fine example of a style now rarely

produced but extremely popular during the

mid-twentieth century.

It boasts an inviting aroma of caramelized

elegantly contrasted by a subtly charred finish.

consistently delivers top-quality

wines that command a premium

in the market.

ALBOURNE

Nestled in the heart of the

Sussex countryside, Albourne

Estate is a family-owned

vineyard and winery offering

breathtaking views of the

South Downs. They specialize

in crafting limited quantities

of award-winning still and

sparkling English wine,

exclusively from their own

sustainably grown grapes.

BOURGOGNE DE VIGNE EN VERRE

Established by a group of wine producers in

1981, BVV seek to optimise the commercial and

logistical management of their wine domains.

Representing 20 producers, each showcasing

unique styles and terroirs.

ITALY

Discover the diversity of Italian

wines with Harvey’s. Italy leads

global wine production and offers

a vast range of options, including

competitively priced Pinot Grigio

and unique varieties like Fiano,

Falanghina, and Gavi.

SPAIN

The world’s second largest wineproducing

country, Spain produces

some of the most sought-after

varietals. Renowned for Rioja, in

recent years other regions such as

Priorat, Rueda and Ribera del Duero

have come to prominence.

FABIANO

Founded in 1912, Fabiano Winery started with

Francesco and Sergio Fabiano selling their wines

in Venice, later expanding to Verona. In the 1960s,

they built a new winery in Sona, becoming one

of Italy’s largest wine producers in the 1970s.

The following decades saw their wines exported

worldwide, establishing Fabiano as a prominent

winery in Verona and Italian winemaking.

CLOS MONT BLANC

Welcome to the world of Port wine,

named after the beautiful city of Porto

in Portugal, where the renowned Douro

River flows. Our selection of Port wines,

including White Port, Rosé, Ruby, LBV,

Tawny, and Colheita, is sourced from

Poças. Experience the resurgence of Port

wines in the trade, with an increasing

number of on-trade establishments

offering these versatile wines by the glass

and perfect food pairings.

CHILE

Chilean wines offer great value by the

glass, with the Central Valley known

for Sauvignon Blanc, Chardonnay,

Merlot, and Cabernet Sauvignon.

Smaller regions like Limari and

Colchagua Valleys provide diverse

styles with Semillon, Pinot Noir, and

Carmenere. By directly importing,

Harvey’s offer both exclusive on-trade

POÇAS

Poças, with over a century of history and now

in its fourth generation, stands as a rare,

Portuguese-born Port Wine company that has

been family-owned since its inception. Their three

Quintas in the Upper Douro region, comprising 100

hectares with 76 hectares of vineyards, are nestled

within the UNESCO World Heritage-designated

Douro Demarcated Region, the world’s oldest

documented viticultural area.

Cigars

We are a Silver Habanos Specialist

and keep over 40 hand rolled

Havana cigars in our humidor, along

with a range of Mini’s, Purito’s and

Club sized cigars in packs.

Harvey’s Gin

Harvey’s Hop and Malt Gins are produced

from English malted barley mashed at the

brewery in Lewes, using exactly the same

system that initiates production of our award

winning beers. The resultant sugars are then

transported to be fermented and distilled.

A special blend of botanicals is added to the

Malt Gin and a separate distillation of freshly

picked Sussex hops gives the Hop Gin its

defining character.
