In Nonna Lina’s kitchen

tradition

leads the way

For Michelina “Lina” Panelatti, known to almost

everyone as Nonna Lina, tradition is not nostalgia.

It is a compass and way of life. “Tradition tells you

where you come from,” she says, “and it will really

tell you where you’re going.”

Born in Italy and rooted in Bloemfontein since April 1956,

Nonna Lina has lived a life shaped by family, food, faith,

and respect for doing things properly. She says living in

Bloemfontein has not diluted her Italian soul but has given it

a new home.

She came to South Africa as a young child with her parents.

Her grandfather had already arrived earlier, having been

brought to the country as a prisoner of war during the

Second World War.

Bloemfontein became home, and it has remained so ever

since.

She went to school here, met her husband – himself an Italian

immigrant – and raised her family here. A love story where

“South meets North”, she adds.

As far back as she can remember, food was everything. Not as

a luxury, but as a responsibility.

“We were a big family,” she recalls. “Five children, grandparents,

aunts, cousins. People just arrived over holidays, especially

during Christmas and Easter times.”

Everyone helped, and everyone learned. “There was no

compromising.”

She remembers how her mother would spend an entire

day making soup. “Cheese was made at home – mozzarella,

Parmesan – long before supermarkets stocked such things.

Vegetables were grown, preserves were bottled, pasta was

made by hand. Olive oil was a way of life long before it

became popular.”

There were no written measurements, no shortcuts. You

learned by watching. By listening. By being told, firmly, what

not to do. That philosophy still defines her today. Ingredients

matter. Technique matters. Respect matters.

“If it says Parmigiano, don’t put something else,” she says.

“If tomatoes are needed, they must be whole peeled

tomatoes, or better yet, fresh ones boiled and processed

at home into passata. Sauces take time. Pasta must not be

rushed.”

For her, food is alive.

“Don’t kill it,” she says. “Don’t overcook your pasta, your meat,

or your pizza.”

While tools have evolved with pasta machines replacing

rolling pins, cutters replacing knives, she says the soul has

not. Nonna Lina welcomes progress that makes life easier, but

never at the expense of feel. Electric machines, she admits,

take away too much of the connection. “I like to feel it in my

arms,” she laughs, even if they ache afterward.

Tradition, for Nonna Lina, has always been about bringing

people together.

Before Christmas and Easter, the entire family gathered at her

mother’s house. Ravioli was made in enormous quantities,

often up to 50 kilograms at a time. “That’s how you keep a

family together. You teach responsibility. You laugh and you

remember where you come from.”

Sundays were sacred. Christmas Day was non-negotiable.

Her father was strict so everyone knew that there was no

travelling and no excuses. Easter followed its own rhythm

where they enjoyed simple meals on Good Friday, celebration

after church on Sunday, always rooted in faith and food.

Today, Nonna Lina is the keeper of recipes written by hand

decades ago – grease-stained, flour-marked pages filled with

memories. She has taught her children and daughters-in-law,

including one who is a qualified chef.

“People are busy. They buy ready-made food. They don’t

know the real taste anymore.”

Still, she believes the knowledge survives when shared. Her

dream is to compile a family recipe book titled Where North

meets South – blending her southern Italian roots with those

of her northern Italian in-laws.

Having lived in Bloemfontein since 1956, Nonna Lina has seen

the city change, especially when it comes to food culture.

Convenience has replaced patience, speed has replaced craft.

Yet people still come to her for authenticity. They taste the

difference. They feel it.

Italian food, she reminds us, is simple – but only when done

correctly. The right ingredients. The right heat. The right time.

Pizza must cook from the bottom, mozzarella must melt just

enough, sauce must never overpower the pasta.

At nearly 74, Nonna Lina is still working, still creating, still

teaching. When she’s not cooking, she sews. She trained

dresses for her daughters, nieces,

and friends, and still creates ballet

costumes for her granddaughter.

Embroidery, too, runs in her blood.

She is a mother of three, a

grandmother of six, and a greatgrandmother

to one.

What keeps her young? “Being

active,” she says. “And being grateful.”

She speaks often of faith, of

gratitude, of blessings. Of choosing

to celebrate rather than dwell on

hardship.

“Don’t forget tradition. It brings back

the past. It brings stories. It makes

you cry, and it makes you laugh. And

it keeps families together.”

In her kitchen and in her life she says

tradition is not something preserved

behind glass. It is lived, shared, and

passed on, one meal at a time.

Reclaiming history

with Twin Mosia

Twin Mawela Mosia is the founder and curator of the Elandskop Museum in

Mamafubedu (Petrus Steyn), in the Free State. A cultural activist, he has emerged

as one of the country’s most compelling voices in reshaping how South African

history is presented and remembered. Rooted in a deep love for tradition, his

work challenges historical exclusion while advocating for inclusive narratives that

reflect community memory, identity, and lived experience.

Mosia’s fascination with history began long before museum halls and heritage

councils became part of his daily life. Born on a farm just outside Petrus Steyn,

he grew up listening to stories shared by his grandparents who reflected on

accounts of wars, displacement, and survival that were passed down through

generations. After relocating to Mamafubedu (Petrus Steyn), Mosia’s curiosity

found direction in the classroom. Under the guidance of his history teacher, Mr

Moloedi, he became deeply invested in understanding South Africa’s past.

I always try to

help them gain

knowledge, expand

their networks

and unlock their

creativity.

“I remember having to know the dates

of important events by heart. That

discipline shaped how I understood

history not just as facts, but as stories

that needed to be remembered

accurately.”

One of his most significant milestones

was when he became the first black

South African to participate in the reenactments

of the Anglo-Boer War

(1899–1902) and the Basotho Wars,

spaces historically reserved for a narrow

narrative of the past.

While his participation drew national attention, it was not without resistance. “At

first, I was called all sorts of funny names. What people didn’t understand was

that I was telling the story of more than 140 000 black men who were part and

parcel of the Anglo-Boer War, also known as the South African War. My aim was to

make sure their stories were remembered and that they received the honour they

deserved. It was also about educating others.”

His journey into historical re-enactments began in 2013 after an encounter with

Dr Johan van Zyl at the Anglo-Boer War Museum in Bloemfontein, a meeting

Mosia describes as a turning point. He also credits the role of mentorship in

sustaining him through challenges. “I must mention a friend and colleague, Piet

Lombard, who took me under his wing when things were tough. Mentorship is

crucial in every field.”

Today, Mosia extends that same guidance to young people who visit his museum

or engage with heritage institutions. “I always try to help them gain knowledge,

expand their networks and unlock their creativity.”

Over the years, Mosia’s work has evolved beyond re-enactments to

documentaries, digital exhibitions, and community-driven heritage initiatives.

His efforts have earned international recognition, with his work showcased in

countries such as the Netherlands, Belgium, and Kenya. Yet, despite this global

acclaim, he says recognition at home remains limited.

“I have never been acknowledged locally, not even in the Free State. I’ve never

received funding. But I’m grateful that

my work is valued overseas. Heritage is

taken seriously there – politicians and

wealthy people will travel to see the

Eiffel Tower or the Leaning Tower of Pisa,

yet they won’t visit Mapikela House or

the Oliewenhuis Art Museum.”

In 2024, Mosia was appointed to the

Free State Provincial Heritage Resources

Authority (PHRA) council, a role that

has sharpened his focus on overlooked,

community-based heritage sites. “Every

community has history and heritage.

That heritage must be monetised,

especially when you consider youth

unemployment.” He believes cultural

tourism offers powerful economic

opportunities, from guided tours and

crafts to digital storytelling, film, fashion,

and heritage-inspired products. “These

initiatives can create jobs and stimulate

local economies.”

Mosia is equally vocal about preserving

architectural and natural heritage.

“We are surrounded by abandoned

buildings that vandals destroy. The

same neglect applies to natural heritage

like mountains, rivers, dams, many of

which are polluted by sewage.”

For Mosia, heritage preservation is

deeply tied to justice and sustainability.

“Heritage is a non-renewable resource.

Once it is destroyed, neglected or

forgotten, it cannot be replaced.

Protecting it is essential not only for

history, but for identity, education,

and social justice.” As he reflects

on his journey, Mosia hopes to be

remembered as someone who

challenged distorted narratives and

pioneered community-based museum

work. “The heritage, arts, and culture

sectors need the voices of young

people, their vision, and their truth, to

remain relevant.

“I will be happy if I can leave behind a

well-established community museum

and a manual on how to start a

museum with no funding.”

At 29, Bloemfontein-based image consultant Daniella van

der Linden embodies an effortless blend of intellect and

creativity. After completing her BCom Accounting degree,

she felt drawn to her creative talent and love for people.

That calling led her to image consulting, and in November

2023 she was hand-picked by Alette Winkler to train at SA

Image. Since then, Daniella has been living her dream—

consultations and even real-life closet makeovers.

Looking ahead to 2026, Danni has no shortage of exciting

plans—both in business and in life, with a baby on the way.

“I’m looking forward to new challenges, accomplishments

and adventures this year,” she shares. “This is just the

beginning for Styled by Danni.”

No scales and timers needed. Just instinct, tradition, and heart.

Nonna’s Rule

“If you ask me for a measurement,

you are not ready to cook.”

There are recipes you follow, and then there are recipes you

inherit. This is the latter. Passed down by Michelina “Lina”

Panelatti, better known as Nonna Lina, who measures with

her eyes, kneads with her mood, and believes pasta is as

much about character as it is about flour.

Read it once, absorb the spirit, and then stop asking

questions!

Ingredients (According to Nonna Lina)

• Flour (Farina): Enough to make a pile that looks just right

on the table.

• Eggs (Uova): Fresh. Preferably from a hen named Giselda.

• Filling: Whatever you prefer, this could be from cheese,

vegetables, or meat and seafood.

Cook with your hands.

Start mixing with a fork, then abandon it and knead with your

hands. Ten to fifteen minutes of pure, loving frustration.

“Put your anger into the dough,” says Nonna Lina.

The nap

Wrap the dough and let it rest. Even dough needs time to

reflect on its life choices.

The thinness test:

Roll it out paper-thin. You should almost be able to read the

newspaper through it. Almost.

The assembly line

Dollop the filling carefully.

Too much? Exploding ravioli.

Too little? Nonna Lina asks why you are stingy.

The seal of approval

Cover with another sheet of dough, press firmly around the

filling, and cut into neat squares.

Imperfect ones are eaten immediately – standing in the corner.

The sacrifice

Drop the ravioli into boiling, well-salted water. When they float,

they are ready. Like magic. Like destiny.

The finale

Serve with simple tomato sauce or sage butter. Remember: The

pasta is the star. The sauce is only a supporting actor.

We’re planting … Dipladenia

Diamantina (Jade Scarlet) in

pots or hanging baskets for

the patio. This is the first really

compact, bushy Dipladenia that

fills its container with bright red

trumpet-shaped flowers. Plants

perform best with plenty of

morning sun and some afternoon

shade, so don’t position them

against a hot, west facing wall.

Water when the topsoil feels

slightly dry. Fertilise monthly in

summer and trim to keep neat.

Herb of the month

Did you know that Summer Savory

(Satureja Hortensis) was known as

the herb of love during Roman times?

They believed this aromatic herb was

a natural aphrodisiac and used it to

make love potions. While we don’t

have the recipe for the potions, you

can still work culinary magic by using

this herb to flavour roast chicken, slow

cooked stews, and to season grilled

meat on the braai.

The small, delicate, light green leaves

have a peppery, thyme-like flavour

with a hint of marjoram. Use it fresh or

dried, but in small quantities so that it

doesn’t overpower the dish. It can also

substitute for sage.

To grow: Sow seed directly into the

ground or in seed trays or pots.

Transplant when seedlings are big

enough to handle and space or thin

out seedlings 20cm apart. Summer

Savory thrives in full sun in fertile,

well-draining soil. The aromatic

leaves deter pests and it is a good

companion plant for garden beans.

The first leaves can be harvested

within 60 days from planting, or the

whole plant can be harvested in the

bud stage. Leave some plants to

flower for the bees and butterflies. To

dry, hang the plants in a warm, dark

Garden tasks for February

• In very hot weather, set the lawnmower on its highest

setting so that the grass is higher to shade the roots. •

Watering in the evening helps plants to start the day moist

and they will be less heat-stressed. • If it is very hot, delay

fertilising until it gets cooler. This puts less stress on the plants.

• Succession crops of bush beans, beetroot, carrots, Swiss

chard and rocket can still be sown. • If annual herbs have

gone to seed, sow a new crop of basil, rocket, and coriander. •

Keep birdbaths filled with fresh water.

Indoor plant of the month

Exotic and romantic, Curcuma, also known as Siamese

Tulips, are the perfect gift plant for Valentine’s Day. Their

unusual pink, white or purple flowers are carried on tall stems

above the spear-shaped green leaves. To keep curcuma

flowering for the rest of summer, cut down faded flowers at

soil level to encourage new flowers and feed with a liquid

fertiliser once a month. Place plants where they will receive

bright indirect light and keep the soil consistently moist but

not soggy. When they go dormant in winter, put the pot in a

cool, dry place and let the soil dry out. Start watering again in

Slow safari living

Game drives, long dinners, lazy pool days, and unforgettable wildlife

moments – a stay at Nambiti Hills Lodge is a gentle reminder of

how good it feels to slow down and let the bush set the pace.

We arrived at Nambiti Hills

Lodge in that in-between

hour of late afternoon,

when the light softens

and the bush seems to hold its breath.

As we drove into the reserve, the

skies cracked open with a proper

thunderstorm, rain drumming down

as our guide, Lebo, greeted us and

whisked us off towards the lodge.

The lodge reveals itself slowly – and

then all at once. You step inside, and

the view opens up over the reserve,

with rolling hills stretching into the

distance. Even with the rain still falling,

it was impossible not to pause and

take it all in.

Where comfort meets the wild

The décor is understated but luxurious.

Natural textures, soft neutral tones,

leather, and wood are layered with

carefully chosen African details that

feel thoughtful rather than themed.

The shared spaces invite you to linger,

while the rooms feel calm and private.

Each room has its own bathtub framed

by floor-to-ceiling windows, making

it easy to soak quietly and watch the

bush go about its business.

A reserve with a story

Nambiti Big 5 Private Game Reserve

may feel timeless, but it is one of

KwaZulu-Natal’s newer conservation

success stories. Established in the

early 2000s, the reserve was once

a patchwork of cattle farms and

agricultural land. A long-term vision

saw fences removed, alien vegetation

cleared, and indigenous wildlife

reintroduced, allowing the landscape

to return to its natural state.

Today, the reserve spans more than

23 000 acres of malaria-free bush and is

home to the Big Five, abundant plains

game and prolific birdlife. Importantly,

Nambiti is rooted in community

conservation – it is owned by a local

trust and managed in partnership with

conservationists, ensuring the land is

protected for generations to come.

Our first game drive

We visited Nambiti in early Summer

and the reserve felt alive with new life.

We spotted cheetahs and elephants,

while the birdlife alone would keep any

birder happily occupied. Everywhere we

looked there were babies, from impala

lambs and wildebeest calves to hippos

with tiny ears just visible above the

water.

Sundowners and long,

lingering dinners

As the sun dipped low, we stopped for

sundowners, sipping gin and tonics

with biltong in the bush while the sky

softened into evening. Back at the lodge,

dinner was a relaxed three-course affair

and very much part of the experience.

The menu changes daily and includes

starter options such as a creamy

butternut soup with sage and toasted

pumpkin seeds, a fresh caprese salad

with basil pesto and balsamic reduction,

or rich peri-peri chicken livers cooked

with lemongrass and coconut milk.

Mains strike a satisfying balance

between comfort and refinement.

Linguine Neapolitan comes tossed in a

homemade tomato sauce with ricotta

and Parmesan, while the grilled kingklip

is light and fresh, served with baby

Early mornings and slow days

The next morning began early, as safari mornings should. We

headed out with blankets and coffee, stopping along the

way for a proper coffee-and-rusk break as the bush woke up

around us. Breakfast back at the lodge was served on the deck,

with giraffes moving slowly in the distance. The spread was

generous and fresh, with granola, fruit, yoghurt, and a cooked

breakfast made to order.

The rest of the day unfolded at an unhurried pace. We spent

hours by the pool, listening to the quiet hum of the reserve,

before heading out for another afternoon game drive and

dinner.

A final thrill before farewell

Nambiti saved something special for our final morning. We were

lucky enough to witness lions chasing a warthog – a dramatic

burst of action that ended with the warthog narrowly escaping.

It was the perfect reminder of just how alive this place is and the

kind of sighting that stays with you long after you’ve left.
