Socially and developmentally,
my six-year-old is on par
with her peers—but when
it comes to cravings, her
palate is more mature than
many adults. Forget bland, beige fare;
my daughter's idea of a decadent
dinner is chicken Caesar salad, tinned
sardines on toasted sourdough, or
grilled salmon with steamed rice and
asparagus. I’ve yet to meet another
kiddo with such an adventurous
palate. To be clear, she’ll never say “no”
to cheese pizza, chicken nuggets, or
ice cream—but she genuinely delights
in bold flavors, varied textures, and
entrées that venture well outside the
mac-and-cheese box.
So when I showed her the photos
from this month’s feature “Eat (&
Drink!) Your Greens” by Sharon Penny (page 58), I wasn’t surprised when her
response was an enthusiastic “yum,” not “yuck.” The brussels sprouts with bacon,
avocado green curry, lemon pesto chicken pizza, and sweet green treats (naturally)
topped her must-try list.
Whether or not you share my daughter’s devotion to leafy greens, buttery
avocado, broccoli, and matcha-flavored everything, I’m
confident you’ll find something in the story that’ll make

relocated their practice to 2230 East

The Bark Park Pet Resort & Daycare

way many successful restaurateurs do:

From dishwasher and ice cream scooper
to host, cashier, bartender, manager, and
beyond, each role shaped his work ethic
and business instincts. Those early lessons
still guide him today. When asked about
the secret to Dos Coyotes’ longevity—
which celebrated its 35th anniversary this
January—Coyote keeps it simple: “Hard
work and long hours, along with delicious,
fresh, and healthy food, plus generous
portions at a great value.”
What’s been your most memorable
experience? During our final building
inspection on January 3, 1991, the pipes
burst on the roof during a freeze; I thought
we weren’t going to pass the inspection;
luckily, we did! Another was when we
received our first food review in the
Sacramento Bee in January 1992.
What's the most rewarding part of
owning Dos Coyotes? Without a doubt,
all the meals we have served for the last
35 years, as well as the eight million and
counting Border Burritos that have been
devoured; also, the many first-time, frontof-house
jobs we have created for high
school and college students.
What's the biggest challenge/hardest
part? Keeping prices fair with value when
combating inflation.
What's something about Dos Coyotes
that many people may not know?
We’re locally owned and committed to
providing our guests with fresh, chefdriven,
Santa Fe-inspired dishes.
Three things you can't live without:
Family (including my dog!), music, and

California Culinary
Academy in San
Francisco. She went
on to hold a variety of
food and beverage roles
throughout the Bay Area, but
it was her time at Michelin-starred The
Village Pub in Woodside where Hawks says
she truly learned how to cook—and how
to run a kitchen. In 2007, she opened the
doors to her namesake restaurant. Beyond
hard work, Hawks believes “excellence at
this level requires constant attention. I also
try to do everything I can to support my
team and keep us organized. And we try to
say yes as much as possible.”
What’s been your most memorable
experience? We recently catered an event
and had a table collapse. Luckily, we hadn’t
served any food just yet and made a swift
recovery.
What's the most rewarding part of
owning Hawks? The people. Interacting
with our guests always brings me joy and
invigorates my spirit. And the same goes
for my team. I'm grateful for a team of true
professionals and have deep respect for the
jobs they do.
What's the biggest challenge/hardest
part? We do a fair bit of catering, and it's
always a challenge to take the restaurant
offsite, especially when catering for over
350 guests!
What's something about Hawks that
many people may not know? Hawks is
my maiden name. My dad and five brothers
are all in construction, and they each had
a hand in building out the restaurant. My
husband, and I are currently building
out a new restaurant that will be named
Fagnoni's, our married name. Fagnoni's will
open later this year, in the Quarry Ponds
Town Center, so we'll soon have ‘his and
her’ restaurants.
Three things you can't live without:
A little notebook and pen (to keep me
organized), a sharp knife, and a clean
workstation.
Five years from now, you see yourself
and your business: Earning a Michelin
star and maybe taking a trip to Italy.
Favorite ingredient to work with: Fish.
I respect the delicate touch required to

For as long as Frank Visconti—of
Folsom’s iconic Visconti’s Ristorante
(viscontisristorante.com)—can remember,
he loved helping his mother in the kitchen.
Those early moments of preparing
homemade meals together sparked not
only his passion for great food, but also
an appreciation for the memories created
around the table. After working at a
pizzeria in San Jose and gaining invaluable
insight from his Uncle Sam, a restaurant
owner in Chicago, Visconti knew it was
time to open a place of his own. In 1992,
Visconti’s Ristorante was born. Asked
what has made the Italian eatery such a
success, he points to values that go
beyond the plate: “It begins with love,
respect, and truly getting to know the
people who support us—I believe life is
better with friends, not enemies. I also
believe in never cutting corners, using
the freshest ingredients possible, and
staying closely connected to the team
to ensure integrity, excellence, and the
best value for our community.”
What’s been your most memorable
experience? Seeing the community
come together in both support and
curiosity of our establishment—who
we are and what we’re about—on
opening day. Over 30 years later, and
the community is still as loving and
supportive as the first day we opened
the doors.
What’s the most rewarding part of
owning Visconti’s? The community.
It’s magical and humbling to be loved
by so many people and watch families
grow together.
What's the biggest challenge/
hardest part? The business portion.
Dealing with rising costs on supplies and
not wanting to raise our prices to the rate
of inflation. The restaurant industry is
always throwing owners curveballs. Just
when you think you know the busy and
slow days, nights, or seasons—it can catch
you off guard.
What's something
about Visconti’s
that many
people may
not know?
We offer

Carbonara and

Spotlight on
Annie O’Connell

A lifelong art lover, Annie O’Connell
spent decades collecting and
surrounding herself with pieces that
brought her joy. When she retired, she
wondered if perhaps she could also
find joy in making art.
Initially, she says, workshop after
workshop led to frustration and
disappointment. A successful attorney
for almost 40 years, O’Connell recalls
struggling to become a student again.
Then artist Bryan Mark Taylor said
something that resonated with her.
“He spoke of the importance of
humility to learning, noting that it’s
often difficult for people who view
themselves as accomplished (in any
arena) to become a true student again;
instead of being open to learning,
they spend their time trying to prove
what they already know,” she recalls. “I
think that was the key to finding the
necessary patience to begin to learn.”
With this realization, and lessons
from painter Kirk Miller, O’Connell
blossomed. “[Miller’s] combination of
skills, patience, versatility, support,
and humor was just what I needed to
gain the confidence to finally consider
myself an ‘artist,’ and to find as much—
if not more—joy in making art as in
collecting it,” says the El Dorado Hillsbased
oil painter.
O’Connell’s works can be viewed in

to participate in the Placerville Arts
Association Studio Tour and the El
Dorado Hills Fine Art Festival.

a $10 etching by a local artist, which
still hangs in my home. Over 50 years
ago, my then boyfriend/now husband
and I started giving each other art
as gifts. Also, the law firm where I
practiced for most of my career was
a huge supporter of the arts, and had
a large collection of art adorning its
walls, which helped cement my love of
being surrounded by art.
When my husband and I first started
collecting art, we were advised to focus
on what we love, not what just seemed
like a good investment or matched our
home décor. We’ve accumulated an
eclectic and diverse collection that not
only brings us joy every day, but also
adds warmth to our home. We never
tire of the old pieces or feel any need to
update for the sake of ‘remodeling.’ If we
love it, that’s enough.
Like so many artists, it wasn’t until I
retired that I decided to see if I might
be able to help create, rather than just
acquire, that joy.
Where do you find your inspiration?
My subjects and inspiration are
intricately connected. I mainly paint
the ‘delicacies of nature’ and, among
them, animals. I’m not particularly
drawn to landscapes or traditional
still lifes but am fascinated by the
graceful complexities of seemingly
simple subjects: the intricacies of a
single flower, the layers of a clove of
garlic or head of cabbage, the light
refractions in a piece of glass, the
interplay of shapes and shadows. With
animals, the inspiration is almost
always in the eyes.
Tell me more about your animal portraits.
With animals, I always put the ‘lipstick
on a pig’ as early as possible; by that,
I mean I go for the eyes. After I block
in the general shape of the head and
placement of key features, I go for full
detail in the eyes. Once I do that, the
eyes inspire and ‘speak to me’ about
what to do with the rest of the painting.
Most of the time, my animal
paintings are commissioned portraits
of pets and are among the most special
and joy-filled works I’m privileged to
paint. These portraits are often given as
gifts, such as for a birthday or wedding,
but more often as remembrances of a
cherished pet that has passed. These
are especially meaningful to both me
and my clients, as they almost always
evoke poignant tears of joy when
delivered. I frequently receive notes of
gratitude—even years later—about how
special it’s been to have a rendering of
their precious pet to remind them of
loving memories.
Has your style evolved over the years?
It’s been a rather subtle evolution. For
example, when it comes to flowers,
I now tend to gravitate to the macro
version of a flower—cropping and
magnifying to hone in on even more
nuanced features. Also, I’m now more
willing to select seemingly monotone
subjects, like an all-white flower, rather
than just the vibrant ones. It’s amazing
how many shades of white one can find
among the shadows and reflections.
With animals, I’ve added more variety
to the styles I might use or the
features I might choose to emphasize,
sometimes using unusual colors in
the underpainting and allowing those
to peek through here and there, or
cropping and honing in on just a
portion of a face. I’ve also learned a
lot about capturing the essence of the
animal, especially through the eyes,
where one can see their trust, spunk,
playfulness, eagerness to please, or
sometimes even sadness.
What’s the best compliment you could
receive about your art?
The very best compliment of sorts
is the immediate reaction when
someone sees their commissioned
piece of art for the first time,
especially when it’s of a beloved pet.
I know I’ve touched their heart when
tears of joy (or melancholy) are the
immediate reaction.

This scenic loop truly has it
all—windswept beaches, serene
lakes, coastal forests, vibrant
wildflowers, and sweeping ocean
views. Add in the Bay Area’s
refreshingly cool temperatures
and optional detours to fascinating
historic sites, and you’ve got a hike
that checks every box.
KNOW BEFORE YOU GO:
Expect approximately 1,000 feet of
elevation gain, with long stretches
exposed to the sun. Temperatures
and wind conditions can shift
quickly along the coast, so bring
plenty of water and dress in layers.
Sturdy shoes with good traction are
recommended, as some sections
are paved while others are not. Dogs
are welcome, and ample parking
is available at the Rodeo Beach lot.

A WALL THAT DOES IT ALL
Updating your home can be overwhelming, but when you take it one
space at a time and invest in the expertise of a designer, it can be
an approachable task with a big payoff. Such was the case with this
Roseville home that underwent a modern facelift in the living area.
“The existing layout featured a traditional fireplace, a dated media cabinet
with built-in bookshelves, and an underutilized nook—elements that together
created a clunky, asymmetrical look. With symmetry and balance being top
priorities for the client, the challenge was to reimagine the wall with a modern,
cohesive design,” explains Cathy Tonks, interior designer and founder of
Designs With You In Mind (designswithyouinmind.net).
The biggest project hurdle was working within the asymmetry due to the
off-center soffit, which also held an immovable HVAC. “The challenge was
creating a design that was very balanced symmetry-wise but done in a way
that was soft to the eye and would make [the homeowners] feel as though
it was balanced, even though it wasn't exactly in the center of the space,”
shares Tonks. To successfully achieve this, the wall was split almost down the
middle with one side showcasing the television and the other open shelving.

Additionally, the use of differing
materials on the wall delineated the
space: wood panels around the TV
for texture and acoustics and large
porcelain tiles holding the shelves.
“The tile achieved a slab-like look
at roughly one-third the cost of a
stone slab,” explains Tonks. The space
extends further into the new wet bar
and strategic use of complementary
materials combines the entire living
area seamlessly.
The space is now the perfect
place for hosting guests, thanks to
the addition of a bar. Before, it felt
awkward and undone, something the
homeowners especially wanted to
address. “The underused nook was
reinvented as a sophisticated walk-up
bar, complete with custom cabinetry,
a wine fridge, trash pullout, sink, and
metal-and-glass shelving to elegantly
display bottles and glassware,” says
Tonks. The bar features include
high-quality and durable white oak
cabinets, a stone sink, touch faucet,
gold and glass shelving, and black
marble with gold veining. “Layered
materials were used to add depth and
a ‘wow’ factor,” Tonks explains. Wow
factor is putting it lightly, though; the
elegant finishes create a sophisticated
and modern space that remains livable
and welcoming.
To further unify the wall, a floating
quartz hearth was installed above
the new electric fireplace. This
addition is quite the showstopper,
adding length to the room and
a (literal) warm ambience. Tonks
explains the reasoning behind an
electric fireplace as opposed to a
gas one, saying, “California trends
and codes are moving away from
gas in many contexts. Electric units
provide adjustable, lower heat with
a continuous flame effect for mood.”
Something that misses the mark with
gas fireplaces is that they can overheat
quickly and cycle off, killing the
vibe, especially in small spaces. The
fireplace is still a main focal point, as
it was before the update, but better
blends into the space. “The result is a
contemporary, balanced, and highly
functional entertainment wall that
perfectly reflects the client’s style
and enhances the way they live and
entertain,” says Tonks.
The final piece of the puzzle was
lighting, which Tonks believes can make
a huge impact. “When you light a space
correctly, it feels good and is stunning
all the time, so we routed linear lighting
into the shelves and even put it above
the TV area. I didn't want it to look like
a [small] space, so we uplifted it to give a
nice glow of light.” Look closely and you
won’t even see lighting fixtures—just a
subtle glow that perfectly highlights the
features of this room.
Once the project was completed,
the homeowners admitted they never
could have conceived this design
themselves and were really amazed
with what Tonks and her team
were able to accomplish. They were
completely satisfied and hope to carry
this design through the rest of their
house over time. As for homeowners
seeking a similar transformation, Tonks
recommends hiring a professional
designer first. That way, they can create
a detailed plan that enables apples-toapples
bids and the chance to build
the right team for the design and
implementation, which can minimize
change orders. This renovation took
a total of about eight months and was
well worth the wait. From rendering
to final reveal, the design remained
consistent and was executed perfectly,
much to the delight of the homeowners
and Tonks herself.

The Tabbouleh Salad at Zest Mediterranean Cuisine

After living most of my adult life abroad,
I’ve come to deeply miss many things
about my home state of New Mexico. Its rich,
layered history, shaped by Indigenous roots and
generations of Mexican influence, has created
a cultural identity unlike anywhere else. I miss
the architecture, the history, the mountains,
the sunsets, the art. But more than anything, I
miss the food.
Until now.
When I sat down at Tres Rosas Mexican
Restaurant and spotted New Mexico
Enchiladas on the menu, I braced myself for
one of two outcomes: deep elation or profound
disappointment. As I waited, my eyes were
drawn to a striking mural of a flower-adorned
woman. Rembrandt-like lighting softened her
…it will be hard to
choose another
Mexican restaurant
anytime soon—and
impossible not to
dream about those
enchiladas every
single day.
New Mexico Enchiladas

while a cascade of blossoms framed her figure.
The beautiful artwork felt achingly familiar.
Though the vibe was unmistakably Mexican,
there was an authenticity that instantly made
me feel at home.
The restaurant was inspired by owner
Lilliana and her three daughters. The menu,
shaped by her life in northern Mexico, New
Mexico, and now Folsom, reflects a heartfelt
devotion to her heritage.

When the plate arrived, I exhaled in
relief. There was no trendy minimalism,
no deconstructed flourish—just an
honest, generous serving plated exactly as
I remember from childhood.
The first bite transported me.
New Mexico enchiladas defy most
expectations. Rather than rolled tortillas
stuffed with fillings, they’re stacked—more
like lasagna than what many envision.
Each tortilla is lightly fried, dipped in chile
sauce, layered with cheese, chicken, and
more chile sauce, then repeated. The final
touch? A fried egg crowning the top. Tres
Rosas honors that tradition perfectly. In
short, it’s the real deal.
Fittingly, just before visiting Tres
Rosas, my family had been taking our
niece, who was visiting from Chile,
to Mexican restaurants around the
Sacramento area so she could experience
authentic flavors. After her first bite of
Tres Rosas’ carne asada with fresh flour
tortillas, she looked up and said, “You can
tell this food is made with love.” My wife,
savoring the prawn fajitas, declared it the
best Mexican restaurant she’s tried.
Lilliana, unaware that I was there to
write about her restaurant, personally
welcomed us. She even charmed our
Carne Asada Plate and Midori Margarita
toddler, who proudly ordered his own
water in Spanish. There’s a palpable
passion in what she does that’s present
in the flavors, in the service, and in the
warmth of the space itself.
Maybe it’s nostalgia. Maybe it’s the
love infused into the food.
Whatever it is, it will be
hard to choose another
Mexican restaurant
anytime soon—and
impossible not to dream
about those enchiladas
every single day.

Packing up a toddler and a baby on a Sunday morning is
only worth it for one thing: good coffee. Luckily, Camino
Coffee Mill provides just that—and more. I stopped in
with my family and was welcomed by staff into a modern yet warm environment. While
my toddler perused the pastries—including the can’t-miss Coffee Cake—I weighed my
coffee options (they offer loads of syrup choices) and settled on an Irish Crème Latte.
It wasn’t overly sweet—just enough to still enjoy the flavor of freshly pulled espresso. My
husband kept it classic with an Iced Coffee, while my toddler grabbed an Orange Juice
out of the fridge from Barsotti Family Juice Co., a Camino staple. I also ordered the

cheddar on a soft, fluffy biscuit. My husband went with the Breakfast
Burrito, stuffed with steak, eggs, tater tots, cheese, and green salsa—
satisfying and satiating! As for my toddler, he picked a Crème Brûlée
Donut. While I was lucky enough to snag a tiny bite, his review was two
(sugary) thumbs up! As we enjoyed breakfast together, I watched locals
come and go—some settling in with a laptop or book, others fueling up
for the drive to Tahoe with a warm cup to go. It truly felt like a hometown
coffee shop where everyone is welcome and encouraged to stay awhile.

SPOTLIGHT:
Nancy Porter
What inspired you to volunteer for
ReCreate?
I’ve been a ‘use what you already have’
kind of person for as long as I can
remember—and I’ve always loved a good
thrift find. When I donated my very large
collection of glass beads to the store, it
hit me that ReCreate is basically a home
for everything I love. Once I realized that,
I couldn’t help but ask if they needed
volunteers!
What do your volunteer duties entail?
My volunteer work centers around
paper crafting, which is my creative
passion. I spend most of my time
sorting, packaging, and pricing donated
papers and tools for scrapbookers, card
makers, and party throwers. I also enjoy
collaborating with the team to brainstorm
ways to improve how the store looks and
feels for shoppers.
Is there training required?
Most of the training is hands-on, with
general guidelines covered in about an
hour of initial training.
What’s the time commitment?
It depends. I’m usually there four or five
hours a week, but some volunteers do
more and some less. Truthfully, I have a
hard time leaving when my shift is over.
What’s been the best day of
volunteering so far?
I’m excited about something every
day I volunteer. It might be helping a
customer come up with a creative, even
‘unconventional,’ way to use an item to
meet a need, or seeing someone light up
when they find exactly what they need
(or didn’t even know they needed) at a
bargain price. I also love meeting so many
creative people and having fun with the
staff and fellow volunteers.
What’s one of the biggest challenges?
Keeping up with the generous flow of
donations. And if I’m being honest, I also
have trouble walking out of the store
without buying too much.
