| editor’s letter |

I’ve had a handful of hard jobs in

my life—including end-of-life care

for hospice patients—but nothing

compares to motherhood. It’s

easily the most demanding and

emotionally exhausting role I’ve taken

on, yet also the most rewarding and

humbling. The behind-the-scenes, roundthe-clock

work of raising kind, capable,

resilient humans is no small feat, and it

has shaped me in ways I never expected—

stretching my patience, deepening my

empathy, and reminding me daily what

truly matters.

In honor of Mother’s Day on May 10,

we’re spotlighting three rock star “Super

Moms” from our community. Beginning

on page 20, read their stories and

discover how they navigate the chaos of it all with grace, humor, and intention.

One of the featured moms, Jennifer Varanini Sanchez, shares that her favorite family

activity is “travel, travel, and more travel.” Her family even swaps traditional gifts on

holidays and birthdays in favor of experiences—a philosophy I wholeheartedly support.

After all, exploration is its own kind of education, building lifelong memories and

fostering flexibility and independence. And it doesn’t need to be a far-flung destination

to reap the rewards. In The 10 Spot (page 16), we head to nearby Santa Cruz and share 10

family-friendly but adult-approved things to see and do, including a visit to the always

nostalgic Santa Cruz Beach Boardwalk.

Speaking of nostalgia, there are many more activities—beyond the boardwalk—

that personally bring me back to the good old days: hours-long conversations on my

childhood landline (I can still recite my family’s phone number by

heart…), the anticipation of getting disposable cameras developed,

and mailing handwritten letters to pen pals near and far. Despite

has made me today’s fast-paced, screen-saturated world, the pull toward the

so tired. And tangible feels stronger than ever—and our Editor’s Picks page,

—Tina Fey making a very modern comeback.

Finally, it wouldn’t be May without flowers. Thanks to

generous April showers, our region is bursting into bloom, and

we’re fully embracing it. Our feature story “In Full Bloom” (page 69) celebrates the

season with botanical bites and beverages (lavender lattes, hibiscus popsicles, and

edible florals, oh my!), plus a guide to local flower farms, u-pick fields, and gardeninspired

dining. There’s even a little inspiration for your own backyard, from bouquet

how-tos to gardening tips.

Enjoy the issue, and remember: Life, much like motherhood, is a little messy, often

unpredictable, yet beautifully in bloom. Take a moment to soak it all in. Cheers!

What you enjoy most about your profession: Watching students,

especially the kids, build confidence. They often start off timid and

unsure, but after a few weeks of jiu jitsu, I start to notice a glint of

confidence and self-assuredness in their eyes. It's amazing!

Fun fact about your company: I started my gym two weeks before the

Covid lockdown; lots of businesses didn't make it through, but we’re still

going strong.

Customer service is: A difficult art form. The customer is always right,

but in my line of work I also must let students know where they can grow

and be better. I push people daily to find their limits and surpass them—1%

better every day, even if it hurts, is the goal.

Most memorable experience as an entrepreneur: I have professional fighters

and competitors on my team and watching them succeed or accomplish

something they once thought was impossible is the best.

First job: Working security at a bank in the Bay Area, followed closely by

coaching wrestling.

Favorite local restaurant: La Fiesta Taqueria.

Favorite food: It depends on the day and situation, but homemade mac &

cheese with high-quality cheese and breadcrumbs is high on my list.

Favorite local events: Folsom Turkey Trot and Folsom Pro Rodeo.

Last big purchase: I bought my wife a new yard—pavers, a gazebo, the works!

When not working, you can be found: Studying to be better at what I do;

also, hiking, hunting, going to Bible study, or taking my baby, wife, and our

two boxer pups to the park.

Driving down Douglas Boulevard in Roseville a few months

ago, I noticed something intriguing: a vacant restaurant

being transformed with crisp white paint and bright blue trim.

The unmistakable palette of Greece sparked a hopeful thought—

could a new Greek spot be on the way? Thankfully, the answer

was yes. Mati Modern Greek Cuisine opened its doors in

February, and it’s already making a strong impression.

As a longtime fan of Mediterranean cuisine, I was eager

to visit—and it did not disappoint. My husband and I were

greeted by a warm, friendly hostess and the inviting aromas of

garlic, lemon, and oregano…always a promising sign. Inside,

the airy dining room strikes a balance between relaxed and

refined, with whitewashed walls, sea-blue booths, and light

wood accents. Above the bar, a display of vivid mati symbols—

the traditional Greek “evil eye,” believed to ward off negative

energy—creates a bold and memorable focal point.

We settled into a cozy table and were quickly presented

with a complimentary basket of warm, pillowy homemade

bread and herbed dipping oil. As a self-proclaimed carb

connoisseur, I can say without hesitation: this was some of the

best bread I’ve had. Lightly crisp, dusted with sesame seeds,

and irresistibly fluffy, it set the tone for what followed.

Though the drink menu features a well-curated selection of

beer and wine (including Greek options), the cocktail list was

too tempting to ignore. I opted for the Fields of Greece—a

refreshing mix of vodka and ouzo (Greece’s signature anise

spirit) brightened with lemon, honey, and a whisper of

lavender. My husband chose Artemis’ Arrow, a warming

blend of rye whiskey, Romano Amaro, cinnamon-and-mace

simple syrup, lemon, and Angostura bitters, which delivered a

pleasantly spiced finish.

To start, we shared two appetizers:

Melitzanosalata and Kolokithokeftedes.

The smoky eggplant dip, layered with

peppers, tomatoes, garlic, and lemon

vinaigrette, had a rich depth balanced

by a citrusy lift. The zucchini fritters—

golden and crisp on the outside—gave

way to a creamy, herb- and feta-filled

center, complemented perfectly by a

cool mint yogurt sauce.

For our entrées, I branched out from

my usual order (chicken souvlaki), and

chose the Lavraki, a delicately prepared

Mediterranean sea bass served with a

fresh arugula, tomato, and onion salad

tossed in lemon vinaigrette. My husband

ordered the Kokinisto Me Manestra,

a slow-braised lamb shank that was

fall-off-the-bone tender, served over

comforting orzo with feta. Both dishes

showcased thoughtful preparation and

balanced flavors.

Dessert was non-negotiable. Though

same bright, genuine warmth you hope for in a great mom-and-pop spot. It’s the kind

with gouda, pesto, pine nuts, and ham, which was essentially a dressed-up

grilled ham and cheese sandwich in crêpe form. It was a standout, and

easily the best crêpe I’ve ever had. I also went for the Pizza Crêpe. I’m a

giant kid, so this was right up my alley. The cheese pull was spectacular,

and the pepperoni hit all the right spots. It wasn’t only delicious but

fun to eat, too. I can confidently say that Catherine’s Crêperie is a gem.

I walked in convinced I wasn’t a fan of crêpes and walked out completely

converted—at least when it comes to Catherine’s. What a turnaround!

RANCH

Short Stack Ranch is a peaceful sanctuary

devoted to rescuing and caring for

miniature animals—including horses,

donkeys, and goats—while fostering

healing connections between people

and animals. While rescue is at the heart

of their work, they also provide comfort

and emotional support to individuals with

disabilities, veterans, first responders,

children, and those experiencing trauma,

dementia, or other life challenges. Through

compassionate animal care and thoughtful

community engagement, Short Stack

Ranch creates meaningful experiences that

promote well-being and connection.

What inspired you to volunteer for

Short Stack Ranch?

The ranch’s mission—and especially

the miniature horses—really spoke to

me. They’re incredibly unique, gentle

creatures who are full of personality,

and they play such a meaningful role in

therapy and community outreach.

What do your volunteer duties

entail? I help care for dogs, cats, goats,

miniature horses, donkeys, and even a

full-sized horse—handling everything

from feeding and grooming to mucking

stalls, managing evening routines, and

monitoring the animals’ health. I also

assist with events and community

outreach efforts.

Is there training required?

Yes. Working with miniature horses

requires specialized care and handling.

Short Stack Ranch provides training in

both mini horse basics and behavior to

ensure safe, effective interaction.

What’s the time commitment?

I typically volunteer anywhere from

4–10 hours per week, depending on my

availability, the nonprofit’s needs, and

the time of year. Oftentimes, I’ll work

additional hours during special events

such as fundraisers, community outreach

days, or therapeutic programs. With that

said, one of the best parts of volunteering

is the flexibility to set my own schedule

and the chance to learn something new

each time I’m at the ranch.

What’s been the best day of

volunteering so far?

Some of the most rewarding days are

during special events, when we showcase

the miniature horses and other animals

and truly brighten people’s lives.
