Discover our dining heritage

It is the mission of our culinary team to make dining

at Biltmore a wonderful experience. Our chefs work

with the finest ingredients and source the majority of

our menu from local farms. When you dine at Biltmore,

you enjoy a regional bounty of grass-fed meats,

seasonal produce, and locally

crafted cheeses. We continue the

legacy of extraordinary dining that

began with George Vanderbilt, and

we welcome you to our table.

Estate Executive Chef

Damien Cavicchi

Continuing the Biltmore legacy:

our focus on Field to Table

Since 1895, Biltmore has been a working farm. From

famous Biltmore dairy cows—considered the finest in

the country—to fruits and vegetables produced through

innovative farming methods, to homemade honey and

butter, sustainability was the goal. Delicious food was

the delightful result; and an invitation to dine with the

Vanderbilts was a guarantee of the finest dining available.

This legacy of hospitality combined with locally

sourced food continues to be the foundation of dining

at Biltmore.

Our Field to Table Program provides the freshest

foods for our restaurants. On the estate, we grow a

variety of vegetables, herbs, and berries in our

Kitchen Garden. We also raise heirloom chickens

which provide fresh eggs for our chefs. Our herds of

Angus cattle and White Dorper sheep mean our chefs

have prime cuts of meat to serve seasonally.

Supplementing our harvest is the best from local familyowned

farms and artisan producers, such as mountain

trout, handcrafted cheese, and grass-fed beef and pork.

At the Winery, our winemakers craft award-winning

wines from grapes harvested in estate vineyards

along with the finest grapes from North Carolina and

other regions.

All this inspires our talented chefs to create fresh

menus seasoned with the rich agricultural heritage of

Western North Carolina and the legendary hospitality

of the Vanderbilts. Dine with us and enjoy the fruits

of their labors!
