Santoku<br />
History<br />
Around 1900 it became acceptable<br />
for the average Japanese to<br />
consume meat and in fact all of<br />
a sudden it becomes stylish and<br />
chic to do so. The first chicken restaurant<br />
opened in Kyoto around<br />
1880, and by 1900 dishes like yakitori<br />
(grilled chicken on a stick),<br />
teriyaki, sukiyaki and so on are all<br />
the rage.<br />
Roughly around 1920 or so it is<br />
clear that the housewife needs a<br />
new knife, one for cutting meat.<br />
The thing is that her mother never<br />
had such a thing! And knives were<br />
very expensive items. The idea<br />
was then born of creating an allround<br />
knife that could be used to<br />
cut everything.<br />
Histoire<br />
Vers 1900, fait nouveau au Japon,<br />
tout le monde peut manger de la<br />
viande librement et ouvertement,<br />
cela devient même chic. Le premier<br />
restaurant servant du poulet<br />
ouvre à Kyoto vers 1880, et vers<br />
1900 les yakitoris (poulet grillé en<br />
brochettes) les teriyaki et les sukiyaki<br />
sont à la mode.<br />
C’est vers 1920 que la ménagère a<br />
besoin d’un nouveau couteau pour<br />
la découpe de la viande. Il faut dire<br />
que leurs mères n’ont jamais rien<br />
eu de tel. Et les couteaux sont très<br />
chers. L’idée est donc née de fabriquer<br />
un couteau occidental, qui<br />
pouvait tout couper.<br />

Historia<br />
Hacia el año 1900, novedad en<br />
Japón, la población puede comer<br />
carne abiertamente, incluso<br />
se convierte en algo muy chic. El<br />
primer restaurante que sirvió pollo<br />
abre sus puertas en Kyoto en<br />
1880, y en 1900 el yakitori (pollo a<br />
la parrilla en pinchos), el teriyakiy<br />
el sukiyaki se ponen de moda.<br />
Alrededor de 1920 las amas de<br />
casa necesitan un nuevo cuchillo<br />
para cortar la carne. El hecho es<br />
que sus madres no habían tenido<br />
nunca un cuchillo de este tipo. Y<br />
los cuchillos son muy caros. Nace<br />
entonces la idea de crear un cuchillo<br />
de tipo occidental que podría<br />
cortarlo todo.<br />

The knife that hits the market is a<br />
strange mixture of a chef’s knife<br />
(Gyuto) and a Nakiri knife. Its creators<br />
decided that this would be the<br />
ideal knife for a woman who had<br />
grown up with a Nakiri knife in that<br />
it is double-bevelled and curved<br />
but also pointed like a Western<br />
knife. It could thus be used effectively<br />
for meat as well as veggies.<br />
For fish, the Deba still reigned,<br />
even if they could buy fish already<br />
cut by the fishmonger.<br />
This new knife eventually settled<br />
down with two principal names:<br />
Santoku and Bunkabocho. “Santoku”<br />
does indeed refer to the<br />
three Buddhist virtues (of which<br />
there is more than one set), and<br />
seems to have been a marketing<br />
device proclaiming: “this knife is<br />
thrifty and Japanese as well as<br />
clever and Western!”<br />
Le couteau mis en vente est un<br />
mariage étrange d’un couteau de<br />
chef (gyuto) et d’un couteau nakiri.<br />
Ses créateurs pensaient que<br />
cette forme serait idéale pour une<br />
femme qui avait grandi avec un<br />
nakiri, tout en ajoutant un double<br />
biseau courbé et pointu comme<br />
dans les couteaux occidentaux. Il<br />
devait être efficace pour couper<br />
la viande ainsi que les légumes.<br />
Pour les poissons, le couteau deba<br />
régnait encore, même si souvent<br />
le poisson était acheté déjà coupé<br />
dans les poissonneries.<br />
Ce nouveau couteau portait deux<br />
noms principaux: Santoku et Bunkabocho.<br />
«Santoku» fait référence<br />
aux trois vertus bouddhistes, utilisées<br />
pour le marketing: «ce couteau<br />
est économique, japonais et<br />
aussi intelligent qu’un occidental !»<br />
El cuchillo que sale al mercado es<br />
una mezcla extraña de un cuchillo<br />
de chef (gyuto) y de un cuchillo<br />
nakiri. Sus creadores deciden<br />
que esta forma sería la ideal para<br />
una mujer que había crecido con<br />
un nakiri, añadiéndole un doble<br />
bisel curvo y afilado como en un<br />
cuchillo occidental. Debía ser eficaz<br />
para cortar la carne y las verduras.<br />
Para el pescado, el cuchillo<br />
tipo deba seguía prevaleciendo,<br />
aunque a menudo el pescado era<br />
comprado ya cortado en las pescaderías.<br />
Este nuevo cuchillo tenía dos<br />
nombres principales: Santoku y<br />
Bunkabocho. “Santoku” se refiere<br />
a las tres virtudes budistas que<br />

y tan inteligente como un<br />

Purchasing a Santoku<br />
Most major lines today offer a<br />
Santoku or an “Asian chef’s knife”.<br />
Its length should be between 6”<br />
and 7.5” (15-19 cm). Assuming the<br />
purchaser seeks a knife for casual<br />
cooking, a knife that will cause<br />
no trouble and demand no effort,<br />
the ideal characteristics should be<br />
light weight with a tough edge that<br />
is easy to sharpen and which can<br />
at the same time be purchased at<br />
a reasonably low price.<br />
Weight: a Santoku should not weigh<br />
as much as an equal-length<br />
Western-made chef’s knife. It should<br />
feel light and dexterous in the<br />
hand.<br />
Tough edge: a knife like this must<br />
stand up to a good deal of usage<br />
between sharpenings. On a related<br />
note, a durable stainless alloy<br />
is the best choice here. Avoid a<br />
“Damascus” coated blade.<br />
Low price: in Japan, knives fitting<br />
these characteristics can be had<br />
for under $30. In America and in<br />
Europe, 60 Euros is a good end<br />
price for the purchaser.<br />
L’achat d’un Santoku<br />
La plupart des couteliers d’aujourd’hui<br />
offrent un Santoku ou un<br />
“couteau asiatique de chef”. La longueur<br />
doit être comprise entre 15<br />
et 19 cm. En supposant que l’acheteur<br />
cherche un couteau pour un<br />
cuisinier occasionnel, un couteau<br />
qui ne causera pas de problèmes<br />
et qui demandera peu d’effort, les<br />
caractéristiques idéales seraient:<br />
léger, pointe dure, facile à aiguiser<br />
et un bon prix.<br />
Poids: un Santoku ne devrait pas<br />
peser autant qu’un couteau occidental<br />
de la même longueur. Il devra<br />
être léger et agréable dans la<br />
main.<br />
Lame: un couteau comme celuici<br />
devra rester irréprochable entre<br />
deux affûtages. Un bon alliage<br />
d’acier inoxydable est le meilleur<br />
choix. Evitez des lames avec un<br />
revêtement “Damas”.<br />
Bon Prix: au Japon, les couteaux<br />
avec les bonnes caractéristiques<br />
se trouvent à partir de 40 Euros. En<br />
Europe et aux Etats-Unis, un prix<br />
idéal serait 60 Euros.<br />
Comprar un Santoku<br />
La mayoría de fabricantes ofrecen<br />
hoy un cuchillo Santoku o “cuchillo<br />
asiático de chef.” La longitud debe<br />
estar entre 15 y 19 cm. Suponiendo<br />
que el comprador busque un<br />
cuchillo para cocina amateur, un<br />
cuchillo que no cause problemas<br />
y que requiera poco esfuerzo,<br />
las características ideales serían:<br />
peso ligero, punta dura, fácil de<br />
afilar y a buen precio.<br />
Peso: un Santoku no debe pesar<br />
tanto como un cuchillo occidental<br />
de la misma longitud. Debe ser ligero<br />
y agradable en la mano.<br />
Lámina: un cuchillo como éste<br />
debe cortar de maravilla entre<br />
cada afilado. Una buena aleación<br />
de acero inoxidable es la mejor<br />

Buen precio: en Japón, los cuchillos<br />
con las características ideales<br />
cuestan 40 Euros. En Europa y en<br />
Estados Unidos, un precio ideal<br />

Why do you love debate?<br />
I think that a round table debate is<br />
always interesting.<br />
To have a balanced debate where<br />
there also is place for the presence<br />
of critical people with ideas and<br />
opinions contrary to my own ideas<br />
it is very is important.<br />
Why is this so important for you?<br />
It is like anything in life, if you only<br />
associate with your own kind and<br />
don’t take into account or consider<br />
new ideas with its wealth of<br />
diversity, you will become a deformed<br />
monster. It is also important<br />
that you, yourself, plant ideas and<br />
opinions and see them flourish elsewhere.<br />
For that to happen you have to try<br />
to have many “ambassadors” who<br />
have the ability to change things<br />
and sometimes things will change<br />
from within.<br />
I think that the reflections of the<br />
food industry, which is always considered<br />
the “bad guy”, has perhaps<br />
a lot of positive things to add to the<br />
discussion.<br />
Is it dangerous to believe that we<br />
are always right and that there is<br />
only one right way to do things?<br />
Absolutely yes. Too often we talk<br />
about local, local, local ... constantly,<br />
local. At the bottom of what<br />
should be talked about are the attributes<br />
of what local really means<br />
and what it can do for us rather<br />
than it just being local! It is a different<br />
matter.<br />
Pourquoi aimez-vous le débat ?<br />
Je crois qu’une table ronde est toujours<br />
intéressante.<br />
Avoir un débat où il y a aussi la présence<br />
gênante des gens qui nous<br />
critiquent et qui ont des idées opposées<br />
aux nôtres est très important.<br />
Très important ?<br />
C’est comme tout dans la vie, si<br />
vous êtes tout le temps avec les<br />
vôtres, vous devenez un monstre,<br />
vous serez déformé, car il n’aura<br />
pas eu de diversité. De plus, un<br />
autre phénomène n’aura pas lieu,<br />
celui de semer vos idées ou opinions<br />
afin qu’elles puissent «fleurir»<br />
dans d’autres lieux.<br />
Pour cela, vous devez avoir de<br />
nombreux «ambassadeurs» qui ont<br />
la capacité de changer les choses.<br />
Parfois les choses changent aussi<br />
de l’intérieur.<br />
Les réflexions du monde industriel,<br />
qui est toujours très critiqué, doivent<br />
également être entendues….<br />
Est-il dangereux de croire que<br />
nous avons raison ?<br />
Oui. On parle très souvent du local,<br />
du local, du local... constamment,<br />
on parle «local». Au fond, nous devrions<br />
parler des valeurs du local.<br />
C’est une autre affaire.<br />

un monstruo, te acabas<br />
deformando, porque no hay riqueza<br />
ni diversidad.<br />
Además, tampoco se consigue<br />
otra cosa, que es importante: sembrar<br />
ideas u opiniones que florezcan<br />
en otros lugares.<br />
Para que eso ocurra tienes que<br />
intentar tener muchos “embajadores”<br />
que tengan la posibilidad de<br />
cambiar las cosas y a veces las<br />
cosas cambian desde dentro.<br />
La reflexión del mundo industrial,<br />
que siempre se critica, quizás tenga<br />
mucho que contar…<br />
¿Es peligroso creer que se tiene<br />
la razón?<br />
Sí. Muchas veces se habla de lo<br />
local, lo local, lo local... constantemente,<br />
lo local. En el fondo de<br />
lo que se debería de hablar es de<br />
los valores de lo local. Es un tema<br />
distinto.<br />

What do you mean by “attributes”<br />
of “local”?<br />
That somebody teaches people<br />
that they should buy only “local”<br />
products and that local is supposedly<br />
the best. For me it is sometimes<br />
yes, sometimes no! For me<br />
what is important are the attributes<br />
of what local is.<br />
It is an abstract and ambiguous<br />
concept. It is the same action with<br />
different basic intent. It is changing<br />
the ethics of action, the action<br />
being, fundamentally, the same.<br />
Could you illustrate with an<br />
example?<br />
OK, for example, when we purchase<br />
mushrooms at Mugaritz there<br />
might be a risk of poisoning a customer.<br />
The risk is of course there!<br />
However I only want to serve the<br />
best quality mushrooms that exist.<br />
That is my only intention. On the<br />
opposite end of the scale someone<br />
could poison a customer because<br />
he is selling poor quality food<br />
merely because there is a profit to<br />
be made. The outcome would of<br />
course be the same (a sick customer)<br />
but the intent is completely<br />
different.<br />
Les valeurs du local ?<br />
Quand on parle du local, on explique<br />
aux gens qu’il faut qu’ils<br />
consomment des produits locaux,<br />
parce que manger local c’est<br />
mieux. Parfois oui, parfois non.<br />
Pour moi, ce qui est important ce<br />
sont les attributs du local.<br />
C’est comme avec tout, la même<br />
action avec des intentions différentes<br />
à la base, change l’éthique<br />
de l’action, alors qu’il s’agit de<br />
même action.<br />
Pourriez-vous me donner un<br />
exemple ?<br />
Souvent des ramasseurs de cèpes<br />
nous apportent leur cueillette au<br />
restaurant. Leurs champignons<br />
sont extraordinaires et les j’achète<br />
souvent. Qu’est-ce qui peut arriver?<br />
Sans le vouloir, je pourrais<br />
empoisonner un client, cela serait<br />
très grave. Mais le fait est que je<br />
prends des risques parce que je<br />
veux donner la meilleure qualité<br />
qui existe à mes clientes. En revanche,<br />
une autre personne peut<br />
empoisonner un client parce qu’il<br />
est en train de vendre des produits<br />
de mauvaise qualité juste pour<br />
faire de l’argent. Il spécule avec<br />
le produit. Le résultat est le même<br />
(le client sera empoisonné) mais le<br />
motif est totalement différent.<br />
¿Valores de lo local?<br />
Cuando se habla de lo local, se explica<br />
a la gente que tiene que consumir<br />
productos locales, porque<br />
supuestamente lo local es lo mejor.<br />
A veces sí, a veces no. Para mí, lo<br />
que es importante, son los atributos<br />
de lo local.<br />
Pasa como todo, la misma acción<br />
con diferente intencionalidad de<br />
base, que es un concepto abstracto<br />
y ambiguo, cambia la ética de<br />
la acción, siendo la misma acción.<br />
¿Podría ilustrármelo con un<br />
ejemplo?<br />
A Mugaritz vienen vendedores de<br />
setas, realmente extraordinarias,<br />
y yo se las compro. ¿Qué puede<br />
llega a ocurrir? Sin querer, podría<br />
intoxicar a un cliente, sería muy<br />
grave. Pero el punto de partida es<br />
que yo tomo unos riesgos porque<br />
quiero dar la mejor calidad que<br />
existe. Por contra, otra persona<br />
puede intoxicar a un cliente porque<br />
está intentando vender cosas<br />
de mala calidad para ganar dinero.<br />
Especula con el producto. El resultado<br />
es el mismo, pero el punto<br />
de partida es totalmente distinto.<br />

Do you think that the “local”<br />
message is poorly constructed?<br />
Yes, I think so, and this is why I<br />
talk so much about ethics in relation<br />
too the attributes of what is<br />
considered “local”.<br />
Another example. In the past two<br />
hundred years, we have all but<br />
crushed the continent called Africa.<br />
We have depleted many of<br />
their resources, we have divided<br />
and drawn, as if with a ruler, the<br />
countries of the continent thereby<br />
making big trouble and leaving<br />
millions of people in absolute poverty.<br />
Some communities in Africa<br />
are starting to improve their living<br />
conditions by planting and exporting<br />
their products. If we then decide<br />
that we should not consume<br />
any products found farther than<br />
20 km away from our own homes,<br />
and if we stop consuming products<br />
made and grown by these people,<br />
we will be plunging them back into<br />
abject poverty thereby denying<br />
them the possibility of creating a<br />
better future for themselves.<br />
Est-ce que le message sur «le<br />
local» est mal construit ?<br />
Je pense qu’oui. Moi j’aime bien<br />
parler de l’éthique et les attributs<br />
du local.<br />
Un autre exemple. Dans deux cents<br />
ans d’histoire, nous avons pillé un<br />
continent qui est l’Afrique. Nous<br />
avons épuisé leurs ressources,<br />
nous avons tracé des pays avec<br />
des règles, nous avons crée beaucoup<br />
de problèmes et nous avons<br />
plongé des millions de personnes<br />
dans la pauvreté absolue.<br />
Certaines communautés ont commencé<br />
à améliorer leurs conditions<br />
de vie parce qu’ils peuvent exporter<br />
les produits qu’ils cultivent.<br />
Si nous décidons que nous ne<br />
devons pas consommer les produits<br />
qui sont produits à plus de<br />
20 km. autour de nous, nous ne<br />
consommerons pas les produits de<br />
ces personnes. Nous sommes en<br />
train de les replonger dans la pauvreté<br />
et nous ouvrons pour qu’ils<br />
ne puissent pas avoir un meilleur<br />
avenir …<br />
¿El mensaje sobre lo local está<br />
mal construido?<br />
Creo que sí, por eso yo hablo de la<br />
ética y de los atributos de lo local.<br />
Otro ejemplo. En doscientos años<br />
de historia, hemos machacado un<br />
continente, que es Africa. Les hemos<br />
esquimado los recursos, hemos<br />
hecho países trazados con<br />
reglas, hemos dejado grandes<br />
problemas y hundido millones de<br />
personas en la absoluta miseria.<br />
Ciertas comunidades empiezan a<br />
mejorar sus condiciones de vida<br />
porque están plantando productos<br />
que exportan. Si decidimos que no<br />
debemos consumir productos que<br />
se produzcan más lejos de 20 km.<br />
a la redonda, no consumiremos<br />
los productos de estas gentes. Los<br />
estaremos sumiendo de nuevo en<br />
la más absoluta pobreza y no les<br />
estaremos dando la posibilidad de<br />
que puedan tener un futuro mejor.<br />
Add to this the fact that world essentially<br />
has no borders as such. Then<br />
we start to see that the problems<br />
of these people end up being, in<br />
the end, our own problems. Then<br />
things get more complicated.<br />
We can not live in a bubble, thinking:<br />
“I will stay local, focus only<br />
on my own, defend only what is<br />
mine and not be concerned that on<br />
the other side of the world there is<br />
a problem.”<br />
If we, for example, do not purchase<br />
coffee from Central America,<br />
and at a fair price, they might<br />
eventually plant coca.<br />
Ajoutez à cela que le monde n’a pas<br />
de frontières et que les problèmes<br />
de ces gens finissent par être nos<br />
problèmes, les choses deviennent<br />
donc encore plus compliquées.<br />
Nous ne pouvons pas vivre dans<br />
une bulle: «Je reste local, je me<br />
concentre sur mon propre terroir,<br />
je défends ce qui est mien et je<br />
ne suis pas concerné par ce qui<br />
se passe de l’autre côté de la planète.»<br />
Si nous ne payons pas que le<br />
café à un prix juste, et si nous ne<br />
consommons pas le café d’Amérique<br />
Centrale, éventuellement ils<br />
planteront à la place de la cocaïne.<br />

Si a ésto añadimos que en el<br />
mundo no hay fronteras y que los<br />
problemas de esta gente acabarán<br />
siendo nuestros problemas, la<br />
cosa se complica aún más.<br />
No podemos vivir en una burbuja:<br />
“yo me quedo en lo local, me centro<br />
en lo mío, defiendo lo mío y no<br />
me ocupo de que en el otro lado<br />
del mundo hay problemas”.<br />
Si no conseguimos que el café<br />
tenga un precio justo, y si no consumimos<br />
café de Centroamérica,<br />
acabarán plantando coca.<br />

Are you speaking of the geopolitics<br />
of food?<br />
Yes, because basically, we are<br />
making policy with food and our<br />
choices of food. We should be<br />
very careful in this regard.<br />
As a cook, if we only buy products<br />
from our local environment then<br />
we should only have clients from<br />
our local environment.<br />
The paradox is that at Mugaritz<br />
94% of our customers are from<br />
outside the country. Mugaritz, as a<br />
company, works well because it is<br />
global. The world is interested in<br />
Mugaritz because of their interest<br />
in a global world.<br />
I do not stop being Basque simply<br />
because I am global minded. I will<br />
keep defending my identity and<br />
my surroundings. But I reaffirm my<br />
identity in sharing – not by separating.<br />
In an increasingly homogeneous<br />
world, what I have to offer<br />
and share of myself is being myself,<br />
still me, but also different. Not<br />
to raise barriers, but to generate<br />

Oui, parce que fondamentalement,<br />
nous faisons de la politique avec<br />
de la nourriture. Il faut être très prudent.<br />
J’aimerais ajouter une simple<br />
réflexion, les cuisiniers, nous sommes<br />
comme des petites PME. Si<br />
nous achetons exclusivement des<br />
produits locaux, nous devions donc<br />
recevoir exclusivement des clients<br />
de notre région.<br />
Le paradoxe est qu’à Mugaritz,<br />
94% des clients viennent de l’extérieur<br />
du Pays Basque. Mugaritz, en<br />
tant que société, fonctionne parce<br />
qu’elle est globale. Mugaritz attire<br />
l’attention d’un monde global.<br />
Je ne cesse pas pour autant d’être<br />
basque, je continue à défendre<br />
mon identité et mon entourage.<br />
Mais je réaffirme mon identité pour<br />
la partager, pas pour diviser. Dans<br />
un monde de plus en plus homogène,<br />
la voie du partage, c’est<br />
d’être moi-même, d’être différente.<br />
Mais pas dans le but de créer des<br />
barrières, au contraire, l’objectif est<br />
de créer des rencontres et de la<br />
diversité.<br />
Je ne comprends pas les restaurants<br />
qui font l’apologie du local en<br />
oubliant qu’ils sont locaux. C’est<br />
incohérent.<br />
¿Está Vd. Hablando de la geopolítica<br />
de la alimentación?<br />
Sí, porque en el fondo, hacemos<br />
política con la alimentación. Hay<br />
que tener mucho cuidado. A la vez,<br />
a esto hay que añadir una cosa<br />
más sofisticada: los cocineros, somos<br />
como pequeños productores.<br />
Si sólo compramos productos de<br />
nuestro entorno, solo deberíamos<br />
tener clientes de nuestro entorno.<br />
La paradoja, es que en Mugaritz,<br />
el 94% de los clientes, son de fuera<br />
del País Vasco. Mugaritz, como<br />
empresa, funciona porque es global.<br />
Porque interesa a un mundo<br />
global.<br />
Yo no dejo de ser vasco, no dejo<br />
de defender mi identidad y mi<br />
entorno. Pero me reafirmo en mi<br />
identidad para compartir, no para<br />
separar. En un mundo cada vez<br />
más homogéneo, la manera que<br />
tengo de ofrecerme y compartirme<br />
es siendo yo, y siendo distinto.<br />
Pero no para generar barreras,<br />
sino para generar encuentros, diversidad.<br />
No entiendo los restaurantes que<br />
hacen la apología de lo local olvidándose<br />
de que son globales. Es<br />
incoherente.<br />

What about the carbon footprint?<br />
When speaking locally we are<br />
always talking about “carbon footprinting”<br />
because the commonly<br />
held view is that locally produced<br />
products don’t pollute and those<br />
products that come from far away<br />
do! In Spain you can buy ecological<br />
asparagus from Peru but which, by<br />
this standard are not ethical because<br />
they have travelled.<br />
We are in a world in which you<br />
have to choose. It’s that simple.<br />
Transport consumes fossil fuels.<br />
It is however temporary. Thanks to<br />
advances in science, in fifty years<br />
it will not.<br />
Qu’en est-il de l’empreinte carbone?<br />
Quand on parle de produits locaux<br />
on parle toujours de «l’empreinte<br />
carbone», car tout ce qui vient de<br />
loin pollue. Les asperges du Pérou<br />
seraient donc bio, mais pas<br />
éthiques, dans la mesure où ils<br />
voyagent.<br />
Nous sommes dans un monde où il<br />
faut choisir. C’est ainsi.<br />
Le transport consomme des combustibles<br />
fossiles. Mais c’est temporaire.<br />
Avec les avances de la<br />
science dans cinquante il est probable<br />
que cela ne soit plus ainsi.<br />
¿Y la huella carbono?<br />
Cuando se habla de lo local se habla<br />
siempre de la “huella carbono”,<br />
porque lo local no contamina y lo<br />
que viene de lejos sí. Los espárragos<br />
de Perú que se encuentran en<br />
España son ecológicos, pero no<br />
éticos, porque viajan.<br />
Estamos en un mundo en el que<br />
hay que elegir. Es así de frío.<br />
El transporte consume carburante<br />
fósil. Es temporal. Gracias a los<br />
avances de la ciencia, dentro de<br />
cincuenta años se espera que ya<br />
no será así.<br />
If you think ahead fifty years, however,<br />
when carbon footprint from<br />
transport is a thing off the past and<br />
therefore no longer an excuse, or<br />
the justification to only use local<br />
products, we will also have lost<br />
90% culture. Along with that you<br />

la responsabilité sociale, l’environnement,<br />
la durabilité et surtout les<br />

Si realmente dentro de cincuenta<br />
años esto ya no es así, la excusa,<br />
o la justificación, de que mover<br />
productos deja huella carbono,<br />
será algo del pasado, pero por el<br />
camino habremos perdido el 90%<br />
de la cultura, y habremos generado<br />
problemas tan grandes como<br />
haber perdido cincuenta años<br />
para que otras comunidades se<br />
puedan desarrollar.<br />
Todo esto, para explicar que en<br />
el fondo, yo hablo de los atributos<br />
de lo local. Tengo que exigir a los<br />
productos que vengan de otros lugares<br />
del mundo, los mismos atributos<br />
que exijo a mis productores<br />
locales. Es decir, que respeten la<br />
responsabilidad social, el medio<br />
ambiente, la sostenibilidad y sobre<br />
todo los rasgos culturales.<br />

What do you mean by cultural<br />
traits?<br />
For me this is one of the important<br />
points.<br />
If I buy a local product, for example<br />
cod which is part of Basque culinary<br />
culture, but which is caught<br />
elsewhere in the world, (this fish is<br />
not found in the Cantabrian Sea)<br />
then I’m also buying a product that<br />
has “travelled” from North to South<br />
for a 1000 years!<br />
Cod has been a part of Basque<br />
culture and cooking for that long<br />
- if we suddenly decided that we<br />
would not be purchasing cod because<br />
it is not “local” and because<br />
it leaves a carbon foot print, a part<br />
of the Basque culture would be<br />
lost. At the same time much of the<br />
export of cod from North to South<br />
would dry up and many Northern<br />
fishermen would suffer or be out of<br />
a job!<br />
If we speak of production, we might<br />
say, “instead of buying coffee from<br />
Costa Rica, I’m going to plant coffee<br />
which can be cultivated in Europe,<br />
thereby being self-sufficient<br />
with coffee”! It would, for all intents<br />
and purposes, be a locally produced<br />
product, but, without having<br />
the attributes of being truly local!<br />
We would, at the same time, be<br />
destroying something else in the<br />
world by building a virtual reality.<br />
However, I do not want to produce<br />
soybeans, I want to buy them from<br />
Japanese farmers.<br />
Qu’entend-on par des traits<br />
culturels ?<br />
Pour moi, c’est l’une des clefs.<br />
Si j’achète un produit local d’ailleurs<br />
dans le monde, comme une<br />
morue, qui fait partie de la culture<br />
basque, bien que dans la mer Cantabrique<br />
il ne se pêche pas, je vais<br />
acheter un produit qui se déplace<br />
.... mais ... cela fait plus de mille<br />
ans qu’il voyage ce produit !<br />
Dans le Pays Basque nous avons<br />
une grande culture du cabillaud,<br />
alors que nous n’avons pas de<br />
cabillaud … Qu’est-ce que je fais ?<br />
Je m’enferme dans le «local» et je<br />
n’achète plus plus de morue et je<br />
laisse sans avenir les pêcheurs du<br />
nord de l’Europe ?<br />
Si nous parlons de produire, je<br />
pourrais me dire: -»au lieu d’acheter<br />
du café du Costa Rica, je vais<br />
planter du café, pouvant être cultivé<br />
en Europe, et comme cela nous<br />
aurons notre propre café.»<br />
Cela sera un produit local, mais<br />
sans les attributs du local. Nous<br />
serions en train de détruire quelque<br />
chose dans un autre lieu du monde<br />
et en train de construire une réalité<br />
virtuelle tout en perdant de la<br />
richesse.<br />
Je ne veux pas de produire du soja,<br />
je veux l’acheter aux japonais.<br />
¿Qué entiende por rasgos culturales?<br />
Para mí, es una de las claves.<br />
Si compro un producto local de<br />
otra parte del mundo, por ejemplo<br />
un bacalao, que forma parte de la<br />
cultura vasca, a pesar de que en<br />
el mar Cantábrico no se pesque,<br />
estoy comprando un producto que<br />
viaja.... pero... ¡es que lleva viajando<br />
mil años!<br />
En el País Vasco tenemos una<br />
gran cultura del bacalao y nosotros<br />
no tenemos bacalao… ¿qué<br />
hago? ¿me encierro en lo local y<br />
no compro más bacalao y dejo sin<br />
futuro a los pescadores del norte<br />
de Europa?<br />
Si hablamos de producir, podría<br />
decir: “en lugar de comprar café<br />
a Costa Rica, voy a plantar café,<br />
que se pueda cultivar en Europa, y<br />
hacemos el café nosotros”.<br />
Será un producto local, pero sin<br />
los atributos de lo local. Estaremos<br />
destruyendo algo en otro lugar<br />
del mundo, construyendo una<br />
realidad virtual y perdiendo riqueza.<br />
No quiero producir soja, la quiero<br />
comprar a los japoneses.<br />

Is this a part of what is considered<br />
the trade balance?<br />
I am saying: let’s buy salmon from<br />
the Norwegians where the salmon<br />
is caught. But we also want to be<br />
able to sell our Idiazabal cheese to<br />
the Nordics!<br />
The notion of “I’m not going to<br />
cook with olive oil because it is<br />
not locally produced” might seem<br />
perfect. Except that, instead of<br />
moving forward, we will be moving<br />
backwards and creating problems.<br />
I want people to reflect upon this,<br />
to really think about it.<br />
We are not alone in an enclosure<br />
with walls all around, not knowing<br />
or caring about what happens outside.<br />
Do you feel the same way about<br />
all of the products in the world?<br />
Yes. I find it intolerable that a product<br />
disappears, be it a product<br />
ten kilometres from Errentería or<br />
a product from the Philippines,<br />
although I have never been to the<br />
Philippines. The fact that a product<br />
is lost seems to me immoral. We<br />
live in an inter-connected world.<br />
The hype of using only local product<br />
is, in my view, the wrong perspective<br />
which will destroy many<br />
local products, including yours, in<br />
the long run.<br />
The reality is very complex.<br />
We can not impose upon the public<br />
to use exclusively local products.<br />

monde ?<br />
Eh bien, oui. Je trouve insupportable<br />
qu’un produit disparaisse.<br />
Que ce soit à dix kilomètres de<br />
Errenteria ou les Philippines.<br />
Même si je ne suis jamais allée aux<br />
Philippines. Mais le fait qu’un produit<br />
disparaisse me semble immoral.<br />
Nous vivons dans un monde<br />
interconnecté. Le discours «du<br />
local» mal utilisé, détruit beaucoup<br />
de produits locaux, y compris les<br />
nôtres, à long terme.<br />
La réalité est très complexe.<br />
Nous ne pouvons pas imposer au<br />
consommateur des produits locaux<br />
exclusivement.<br />

En España tenemos poco salmón,<br />
comprémoslo a Noruega. Pero<br />
también deseo que nuestro queso<br />
de Idiazábal se pueda vender<br />

Eso de: “no voy a cocinar con<br />
aceite de oliva porque no es local”,<br />
me parece perfecto. Salvo que en<br />
lugar de avanzar, estamos retrocediendo.<br />
Esto va a crear problemas.<br />
Quisiera que la gente reflexione.<br />
No nos encerremos con un muro<br />
alrededor ignorando lo que ocurre<br />
fuera.<br />
¿“Siente” de igual manera todos<br />
los productos del mundo?<br />
Pues sí. Me es insoportable que<br />
un producto desaparezca. Que<br />
sea a diez kilómetros de Errentería<br />
o en Filipinas. Aunque nunca<br />
vaya a Filipinas. Pero el hecho de<br />
que un producto se pierda me parece<br />
inmoral. Vivimos en un mundo<br />
interconectado. El discurso de<br />
lo local utilizado con una perspectiva<br />
equivocada, acaba con muchos<br />
productos locales, incluidos<br />
los propios, a la larga.<br />
La realidad es muy compleja.<br />
No podemos imponer al público<br />
productos locales exclusivamente.<br />

Does the local term not work?<br />
Why can’t a strawberry travel because<br />
it generates a carbon footprint,<br />
but the man who travels the<br />
world preaching to people that<br />
they should eat only local foods -<br />
can travel?<br />
Does the carbon footprint of the<br />
gastropredicator not count in this<br />
equation?<br />
In this “local only” scenario the<br />
gastropredicator should, to stay<br />
true to this teaching and not to be<br />
considered hypocritical, swim from<br />
California to Paris and then to Africa<br />
in order not to make a carbon<br />
footprint! (laughing).<br />
In addition, the carbon footprint of<br />
a strawberry gives life to a community.<br />
Local yes, but this should be<br />
tempered because the framework<br />
of culture welcomes all. Anything<br />
else is a fallacy. The “local only”<br />
term is useless. Kiwi’s are now<br />
grown here, but the Kiwi is relatively<br />
“new” to Europe.<br />
What then is the role of cooks?<br />
René Redzepi has said that we<br />
must take our own culture and generate<br />
knowledge thereof. Each<br />
consumer chooses, but they must<br />
also know that what they choose<br />
has consequences. Through<br />
a consistent mechanism and<br />
through conferences, the chefs<br />
must do this work. That’s all I, for<br />
example, can do. Again, consumers<br />
ultimately do what they want,<br />
but we must explain to them what<br />
the real life consequences are of<br />
those choices.<br />

Du local, oui, mais avec des attributs.<br />
Autrement, c’est de la bêtise.<br />
La culture ce n’est pas uniquement<br />
des produits locaux. Le cadre de<br />
la culture peut tout accueillir. Le<br />
terme local est inutile. Les kiwis<br />
sont maintenant «locaux», mais<br />
les kiwis sont «relativement nouveaux»<br />
en Europe…<br />
Quel est alors le rôle de cuisiniers?<br />
René Redzpi l’a très bien dit,<br />
nous avons besoin de générer de<br />
la culture et de la connaissance.<br />
Chaque consommateur choisit,<br />
mais il doit aussi savoir que son<br />
choix a des conséquences. Grâce<br />
à un mécanisme de cohérence et<br />
à travers des congrès, les chefs<br />
doivent faire ce travail. C’est tout<br />
ce que nous pouvons faire. Encore<br />
une fois, les consommateurs font<br />
ce qu’ils veulent, mais nous devons<br />
leur expliquer quelles sont les<br />
conséquences.<br />

Lo local, sí, pero con atributos.<br />
Sino, es una falacia. La cultura no<br />
sólo son los productos locales. El<br />
marco de cultura acoge todo. El<br />
término local no sirve. Ahora se<br />
cultivan kiwis, pero los kiwis son<br />
“relativamente nuevos” en Europa.<br />
¿Cuál es entonces el papel de<br />
los cocineros?<br />
René Redzepi lo ha dicho muy<br />
bien, tenemos que generar cultura,<br />
generar conocimiento. Cada<br />
consumidor elije, pero tiene también<br />
que saber que lo que elija,<br />
tiene consecuencias. A través de<br />
un mecanismo de coherencia y a<br />
través de congresos, los cocineros<br />
debemos realizar esta labor.<br />
Es lo único que podemos hacer.<br />
Insisto, los consumidores hacen<br />
lo que quieren, pero nosotros debemos<br />

The carrot is a vegetable with<br />
great healing properties as<br />
it contains some of the highest<br />
quality nutrients, especially its<br />
juice. It is an excellent source of<br />
pro-vitamin A, vitamins C, D, E, K,<br />
B1 and B6.<br />
It is rich in biotin, potassium, calcium,<br />
magnesium, phosphorus,<br />
organic sodium and some trace<br />
minerals.<br />
Carrot greens/tops CAN be eaten.<br />

Carrots soup with<br />
pistachios<br />
Ingredients:<br />
• 2 TBS olive oil<br />
• 1 onion<br />
• 4 cups carrots (chopped)<br />
• 4 garlic cloves (chopped)<br />
• 1 TBS sugar<br />
• ¾ ts salt<br />
• 1/2 ts curry<br />
• 1/8 ts cayenne pepper<br />
• 1 TBS lemon juice<br />
• 1 ts white wine vinegar<br />
• 12 cups cucumber (diced, seeds<br />
removed)<br />
• 12 cup pistachios (chopped)<br />
• 2 TBS crystallized ginger (diced)<br />
• 2 TBS chopped cilantro<br />
• 2 TBS mint (chopped)<br />
Directions:<br />
Heat the oil over medium high<br />
heat. Add the onions, carrots, and<br />
garlic, and cook for 5 minutes. Add<br />
the sugar, 1/2 teaspoon salt, curry,<br />
and cayenne and cook for 1 more<br />
minute. Add 5 cups of water, bring<br />
to a boil, reduce to a simmer, cover,<br />
and cook until carrots are tender,<br />
about 5 minutes. Puree soup<br />
in batches in a blender or a food<br />
processor until smooth. Stir in the<br />
lemon juice and vinegar and set<br />
aside. Make the relish: Combine<br />
the cucumber, pistachios, ginger,<br />
cilantro, mint, and the remaining<br />
salt in a small bowl. Ladle the soup<br />
into bowls and top with the relish.<br />

Ingrédients:<br />
• 2 CS d’huile d’olive<br />
• 1 oignon<br />
• 4 tasses de carottes hachées<br />
• 4 gousses d’ail hachées<br />
• 1 CS de sucre<br />
• ¾ cc sel<br />
• 1/2 cc curry<br />
• 1/8 cc poivre de Cayenne<br />
• 1 CS à soupe de jus de citron<br />
• 1 tasse de vinaigre blanc<br />
• 12 tasses de concombre (en dés,<br />
épépiné)<br />
• 12 tasses de pistaches (hachés)<br />
• 2 CS de gingembre cristallisé<br />
• 2 CS de coriandre hachée<br />
• 2 CS de menthe (haché)<br />
Méthode:<br />
Faire chauffer l’huile à feu moyenvif.<br />
Ajouter les oignons, les carottes<br />
et l’ail, et cuire pendant 5 minutes.<br />
Ajouter le sucre, ½ cc de sel, le curry,<br />
le poivre de Cayenne et faites<br />
cuire pendant 1 minute. Ajouter 5<br />
tasses d’eau, porter à ébullition,<br />
réduire à feu doux, couvrir et cuire<br />
jusqu’à ce que les carottes soient<br />
tendres, environ 5 minutes. Mixez<br />
dans un robot jusqu’à obtenir une<br />
consistance lisse. Incorporer le jus<br />
de citron et le vinaigre et réservez.<br />
Faire la sauce de pistaches: Mélanger<br />
le concombre, les pistaches, le<br />

Método:<br />
Caliente el aceite a fuego medioalto.<br />

Ingredients:<br />
• 2 cups carrots<br />
• 3 cups flour<br />
• 1 ts salt<br />
• 1 ts baking powder<br />
• 1/4 ts baking soda<br />
• 2 ts cinnamon<br />
• 3 large eggs<br />
• 2 cups granulated sugar<br />
• 1 cup vegetable oil<br />
• 1 ts vanilla extract<br />
• 1/2 cup milk<br />
• 3/4 cup chopped walnuts<br />
Directions:<br />
Preheat the oven to 350 degrees.<br />
1. Grate and measure the carrots<br />
and set aside.<br />
2. Mix the dry ingredients together<br />
in a large bowl.<br />
3. Whip the eggs together in a medium<br />
bowl. Stir in the sugar and<br />
then add the oil, vanilla extract,<br />
and milk.<br />
4. Make a depression in the dry ingredients<br />
and add the wet mixture<br />
along with the carrots and<br />
nuts. Mix with a spatula until<br />
combined.<br />
5. Divide the batter between the<br />
two loaf pans. Bake on the top<br />
shelf of the oven for 45 to 50<br />
minutes. Remove the loaves<br />
from the pans and cool on wire<br />
racks.<br />

moyen. Incorporer le sucre à<br />
l’intérieur et puis ajouter l’huile,<br />
l’extrait de vanille, et le lait.<br />
4. Faire une puits dans les ingrédients<br />
secs et ajouter le mélange<br />
humide avec les carottes<br />
et les noix. Mélanger avec une<br />
spatule jusqu’à consistance homogène.<br />
5. Diviser la pâte entre les deux<br />
moules à pain. Cuire au four sur<br />
la tablette du haute pendant 45<br />
à 50 minutes. Retirer les pains<br />
des moules et laisser refroidir<br />
sur une grille.<br />

3. Batir los huevos en un tazón mediano.<br />
Añada el azúcar, el aceite,<br />
la vainilla y la leche.<br />
4. Haga un hueco en los ingredientes<br />
secos y añada la mezcla<br />
húmeda con las zanahorias<br />
y las nueces. Mezclar con una<br />
espátula hasta que esté liso.<br />
5. Divida la mezcla entre los dos<br />

What the promoters of the journal<br />
are setting out to do is to ensure<br />
that not only the historical, gastronomic<br />
legacy, but also everything<br />
currently emerging in the various<br />
cuisines gets accurately recorded<br />
from the theoretical and technical<br />
perspective, and will thus provide<br />
a rigorous record of the ownership<br />
or authorship of a new dish or new<br />
proposal. The first issue includes<br />
an article on the introduction into<br />

Sous vide is a method of cooking in vacuumized plastic pouches at precisely controlled temperatures. Precise temperature control<br />
gives more choice over doneness and texture than traditional cooking methods. Cooking in heat-stable, vacuumized pouches improves<br />
shelf-life and can enhance taste and nutrition. This article reviews the basic techniques, food safety, and science of sous vide cooking.<br />

Introduction<br />
Sous vide is French for ‘‘under vacuum’’ and sous vide<br />
cooking is defined as ‘‘raw materials or raw materials with<br />
intermediate foods that are cooked under controlled<br />
conditions of temperature and time inside heat-stable<br />
vacuumized pouches’’ (Schellekens, 1996).<br />
Food scientists have been actively studying sous vide<br />
processing since the 1990s (cf. Mossel and Struijk, 1991;<br />
Ohlsson, 1994; Schellekens, 1996) and have mainly been<br />
interested in using sous vide cooking to extend the shelflife<br />
of minimally processed foods—these efforts seem to<br />
have been successful since there have been no reports of<br />
sous vide food causing an outbreak in either the academic<br />
literature or outbreak databases (Peck et al., 2006). Chefs<br />
in some of the world’s top restaurants have been using<br />
sous vide cooking since the 1970s but it was not until the<br />
mid-2000s that sous vide cooking became widely known<br />
(cf. Hesser, 2005; Roca and Brugue´s, 2005); the late-2000s<br />
and early-2010s have seen a huge increase in the use of<br />
sous vide cooking in restaurants and homes (cf. Baldwin,<br />
2008; Keller et al., 2008; Blumenthal, 2008; Achatz, 2008;<br />

Sous vide cooking differs from traditional cooking<br />
methods in two fundamental ways: the raw food is<br />
vacuum-sealed in heat-stable, food-grade plastic pouches<br />
and the food is cooked using precisely controlled heating.<br />
Vacuum-sealing has several benefits: it allows heat to be<br />
efficiently transferred from the water (or steam) to the food;<br />
it increases the food’s shelf-life by eliminating the risk of<br />
recontamination during storage; it inhibits off-flavors from<br />
oxidation and prevents evaporative losses of flavor volatiles<br />
and moisture during cooking (Church and Parsons, 2000);<br />
and reduces aerobic bacterial growth—this results in especially<br />
flavorful and nutritious food (Church, 1998; Creed,<br />
1998; Garcıá-Linares et al., 2004; Ghazala et al., 1996; Lassen<br />
et al., 2002; Schellekens, 1996; Stea et al., 2006).<br />
Precise temperature control has more benefits for chefs<br />
than vacuumized packaging does: it allows almost-perfect<br />
reproducibility (Keller et al., 2008; Blumenthal, 2008;<br />
Achatz, 2008); it allows greater control over doneness<br />
than traditional cooking methods (Baldwin, 2008; Nore´n<br />
and Arnold, 2009; Baldwin, 2010; Myhrvold et al., 2011);<br />
food can be pasteurized and made safe at lower temperatures,<br />
so that it does not have to be cooked well-done<br />
to be safe (Baldwin, 2008, 2010); and tough cuts of meat<br />

The working team of the experimental kitchen from<br />
Mugaritz Restaurant was responsible for defining and designing<br />
the dishes. The selection of the final recipes and menus was<br />
made attending to guest demands and sensory preferences.<br />
Recipes are described in Supplementary material. Final presentation<br />
of a dish is shown in the figures, for example,<br />

Nutritional composition analysis of dishes and menus<br />
A total of 21 dishes conforming to two different menus<br />
(Sustraiak and Naturan) were analyzed. All dishes were<br />
prepared in duplicate and weighed. Each dish was then<br />
completely homogenized and a representative sample was<br />
used for nutritional composition analysis. Macro and<br />
micronutrients as well as certain bioactive compounds were<br />
determined. Samples were analyzed according to the Association<br />
of Official Analytical Chemists methods (AOAC,<br />
2002): moisture (AOAC 950.46), ash (AOAC 923.03) and<br />
protein content (AOAC 954.01). The measurement of<br />
reducing sugars was expressed as invert sugar or dextrose<br />
equivalent by the Luff–Schoorl method (Lees, 1968).<br />
Total lipids were evaluated by extraction with chloroform/<br />
methanol/water following the Bligh & Dyer method with<br />
minor modifications (Bligh and Dyer, 1959). The quantitative<br />
cholesterol content of the samples was determined according<br />
to the Annex V of the European Official Analysis Methods<br />
(European Commission, 1991a). Quantification of the silanised<br />
sterol fraction was carried out by capillary gas chromatography,<br />
on a Hewlett Packard 6890 chromatograph with flame<br />
ionization detector (FID) using a SE-54 capillary column<br />
(30 m 0.25 mm i.d. and 0.25 mm thickness, Supelco). Lipid<br />
extractions from each sample were esterified as described in<br />
Annex X of the European Official Analysis Methods<br />
(European Commission, 1991b). Fatty acid methyl esters<br />

(FAMEs) were analyzed using a gas chromatograph Hewlett<br />
Packard 5860 equipped with a flame ionization detector 6890<br />
(FID) and a DB-23 fused silica capillary column (60 m 0.25<br />
mm i.d. and 0.25 mm thickness; Agilent Technologies, USA).<br />
Fatty acids were identified by comparison of retention times to<br />
standards and relative quantities were expressed as weight<br />
percent of total fatty acids.<br />
Total dietary fiber (TDF) was analyzed following the official<br />
enzymatic–gravimetric method (AOAC 991.43), total sodium<br />
(Na) and potassium (K) by a flame photometric method<br />
(AOAC 969.23), calcium (Ca) by atomic absorption spectrophotometry<br />
(AOAC 975.03) in a fast sequential atomic<br />
absorption spectrophotometer (model AA240 FS, Varian<br />
Inc., The Netherlands), following the official methods<br />
(AOAC, 2002). The analytical curve was plotted for each<br />
element. All the nutritional composition analyses were done in<br />
duplicate and the results shown in the tables are the means.<br />
Nutrition and health assessment tools<br />
For the nutrition and health assessment of Mugaritz food<br />
designs, the current legislation on nutrition and health claims<br />
of foodstuffs was utilized. As a consequence, the nutrients of<br />
compulsory declaration for nutritional claims were analyzed.<br />
Total energy was also calculated as indicated by law: energy<br />
(kcal)¼4 (g proteinþg carbohydrate)þ9 (g lipid)þ2 <br />
(g of TDF) (European Commission, 2011).<br />
In order to assess the real contribution of each dish and<br />
menu to the diet, results were expressed considering the<br />
servings given to the customers in the restaurant. This<br />
information allowed the comparison between nutritional<br />
values of all the dishes (per serving) and evaluation of their<br />
contribution to the menu.<br />
In order to convey the relative significance of the<br />
contribution of each dish and menu to a daily diet, the<br />
results were also expressed as a percentage of a Daily<br />
Reference Value (DRV) or Reference Intake (RI). DRVs<br />
or RIs for energy and selected nutrients were those<br />
proposed by the Panel on Dietetic Products, Nutrition<br />
and Allergies of the European Food Safety Authority<br />
(EFSA) for a woman (EFSA, 2009a, 2010a).<br />
In order to highlight their nutritional properties or<br />
potential effects on health, it was also necessary to evaluate<br />
the overall nutritional status of the dish and menu designs.<br />
To that end, dishes were categorized on the basis of their<br />
composition according to a legal proposal of the European<br />
Commission (2009). For each food category, thresholds of<br />
sodium, saturated fat and sugars have been suggested.<br />
Dishes complying with these nutritional criteria would be<br />
justified in making nutrition and health claims according to<br />
food regulations (European Commission, 2006, 2010, 2011).<br />
Thus only those dishes, which did not exceed EFSA<br />
thresholds, were evaluated for nutritional and health claims.<br />
Additionally, the presence of some nutrients (sodium<br />
and cholesterol) and also certain bioactive components<br />
(long chain omega-3, linolenic acid and potassium)<br />
involved in the etiology (formation or prevention) of
