FOR TEN YEARS, XAVIER CALIZI HAS BEEN<br />
CULTIVATING CITRONS IN CAP CORSE,<br />
ON HIS FAMILY LANDS IN BARRETTALI.<br />
Neglected since the 19th century at which time agriculture was at its<br />
heights, the family lands have now sprung back to life thanks to Xavier,<br />
who has planted over 1,300 citrus trees at 300 metres in altitude. This<br />
large-sized bumpy lemon, principally grown for its skin rather than pulp,<br />
originates from the south-east Himalayas, and was introduced into the<br />
Middle East by Alexander the Great. Ancestor of the lemon, the citron is<br />
the oldest citrus fruit of the Mediterranean. Named “Aliméa” in Corsican,<br />
the island citrus cultivated by Xavier Calizi is the only variety to have a<br />
white flower. It produces a sweet pulp of delicate aroma and unique<br />
taste. After several washing stages and soaking in numerous syrup<br />
baths, Xavier makes his candied citrons, jams and liqueurs, much<br />
appreciated by connoisseurs and by the chef of <strong>Misincu</strong>, Clément Collet,<br />
who exalts them in his desserts or as an accompaniment to his recipes<br />
based on spider crab. The virtues of citron are numerous: antioxidant,<br />
antiseptic, full of vitamins… Xavier Calizi also incorporates them in his<br />
new range of natural cosmetics “Cedratis”: dry oils, anti-age serums and<br />
moisturising creams.<br />
