Pesce di lago Il pesce di lago arricchisce la nostra offerta gastronomica: il raro carpione vive solo in queste profonde e purissime acque, la trota, detta anche la "regina del Garda", dalle carni molto saporite, il coregone o lavarello, il cavedano gustato in deliziose polpettine, l'alborella, piccolo pesce adatto alla frittura oppure ad essere gustata nel “sizam”, antica ricetta di marinatura con aceto e cipolle, le sarde che si muovono in gruppi numerosi e sono facilmente pescabili, il luccio, la tinca, il persico dalle carni raffinate e l'anguilla cucinata soprattutto ai ferri. A tavola nel Garda Trentino: alle radici del gusto Fisch aus dem See Der Fisch aus dem See bereichert unser gastronomisches Angebot: Die Gardaseeforelle lebt, wie schon ihr Name besagt, nur in diesem tiefen und reinen Wasser. Sie wird auch als „Königin des Garda” bezeichnet. Ein weiterer, wohlschmeckender Fisch ist das Felchen bzw. die Renke. Der Döbel wird in Form von schmackhaften Fischklößchen serviert. Die Ukelei, ein kleiner Karpfenfisch, eignet sich als Frittüre oder im „sizam”, d. h. nach einem alten Rezept in Essig und Zwiebeln mariniert. Des Weiteren gibt es Sardinen, die sich in großen Schwärmen fortbewegen und mühelos ins „Netz” gehen, den Hecht, die Schleie, den feinen Flussbarsch und den Aal, der hauptsächlich gegrillt angeboten wird. Le troticolture presenti sul territorio vantano una tradizione secolare e allevano trote secondo le tecniche più moderne. Uno specifico disciplinare prevede l'allevamento in acque correnti, fresche e ossigenate che qui non scarseggiano, a garanzia di un prodotto di qualità. Die Forellenzuchten, in diesem Gebiet, haben eine 100-jährige Tradition und arbeiten heute mit den modernsten Zuchtmethoden. Ausdrückliche Bestimmungen legen fest, dass die Fische nur in fließenden, frischen und sauerstoffreichen Gewässern gezüchtet werden dürfen, um damit die Sicherheit eines Qualitätserzeugnisses zu garantieren.
