Nella produzione delle proprie <strong>grappe</strong> la famiglia<br />
Andreoli - <strong>Peroni</strong> assicura l’utilizzo di vinacce (residuo<br />
della spremitura dell’uva) scelte e provenienti dai vigneti<br />
più rappresentativi che hanno la possibilità genetica di<br />
trasmettere un carattere organolettico alla grappa, in<br />
particolar modo per i monovitigni della Franciacorta Pinot e<br />
Chardonnay, per il Lago di Garda il Lugana e il Groppello,<br />
e per la Valpolicella l’Amarone.<br />
Queste vinacce sono sottoposte a distillazione “a cotte“<br />
con il metodo discontinuo a vapore in piccole caldaiette in<br />
rame dotate di cestelli forati; in esse viene emesso vapore<br />
prodotto da una centrale indipendente, così si procede<br />
all’evaporazione dell’alcol e delle sostanze aromatiche<br />
che contiene, facendo grande attenzione a prelevare solo<br />
il cuore, eliminando le teste e le code chiamate “flemme”.<br />
Ma gli ingredienti, sia pur ottimi e il metodo ormai brevettato,<br />
non bastano mai di per sé a creare un grande prodotto;<br />
il segreto è tutto nell’estro geniale del “mastro distillatore”<br />
che sa seguire con amore e competenza ogni momento<br />
dell’elaborazione, senza mai delegare nulla ad altri,<br />
questo è l’elemento fondamentale per determinare il profilo<br />
organolettico della grappa ed è molto più importante del<br />
vitigno o dell’ecosistema in cui matura l’uva.<br />
A symphony of aromas<br />
In the production of its own grappas, the Andreoli – <strong>Peroni</strong><br />
family guarantees the use of selected marc (the residue from<br />
the pressed grapes) from the most representative vineyards<br />
with the genetic capacity to bestow an organoleptic<br />
character to the grappa, especially the single varieties<br />
of Franciacorta Pinot and Chardonnay, the Lugana and<br />
Groppello of Lake Garda, and the Amarone of Valpolicella.<br />
These marcs are subject to heated distillation with the<br />
intermittent steam method in little copper cauldrons<br />
equipped with pierced drums; steam is released into these<br />
from an independent source, evaporating the alcohol and<br />
the aromatic substances that it contains, paying great<br />
attention to drawing off only the core, eliminating the heads<br />
and tails known as the “phlegm”.<br />
But the ingredients, although excellent and treated by<br />
a patented method, are never enough alone to create a<br />
great product; the secret is all in the outstanding skill of the<br />
“master distiller” who knows how to carry out every moment<br />
of the process with love and expertise, never delegating<br />
any aspect to others. This is the fundamental element in<br />
determining the organoleptic profile of the grappa and<br />
is much more important than the grape variety or the<br />
ecosystem where the grapes are cultivated.
