padovani e i visitatori in un viaggio nell’ospitalità delle aziende agrituristiche
del nostro territorio. Realtà immerse nel verde e nella quiete della
natura e abbracciate da un’antica tradizione culinaria dai mille sapori.
Dall’Alta alla Bassa Padovana, passando per le Terme e la zona dei Colli
Euganei, l’ambiente offre panorami da sogno, dai molteplici colori dei
frutti e delle produzioni tipiche che nascono dalla nostra generosa terra.
Vini, olio, carni fresche e stagionate, ortaggi, tanti prodotti naturali che
custodiscono la storia, le usanze, la natura e la cultura di un luogo.
L’Amministrazione provinciale e l’Azienda Turismo Padova Terme Euganee,
il GAL Patavino e la CCIAA di Padova hanno sostenuto la realizzazione di
questa pubblicazione, che è stata co-finanziata con i fondi FEAOG Sezione
Orientamento del Programma Regionale Leader Plus.
Una guida dove sarà possibile trovare indicazioni utili per conoscere le
aziende agricole, i prodotti e i servizi offerti, rivolta a quella fascia sempre
più ampia di turisti alla ricerca di paesaggi particolari, del fascino delle
nostre campagne e di prodotti di qualità. Un patrimonio inestimabile
che coniuga la nostra tradizione enogastronomica con la vocazione ad
un’ospitalità calda e familiare. Un patrimonio che la Provincia di Padova
da anni è impegnata a valorizzare e che, attraverso questo opuscolo,
intende contribuire a promuovere.
Dieser praktische und hübsche Führer ist ideal, um die Bürger Paduas und
Besucher bei ihrer Reise in die agritouristischen Betriebe unseres Gebiets zu
begleiten. Eine Reise, die ins Grüne und in die Naturbeschaulichkeit führt,
die sich mit alter kulinarischen Tradition verbindet. Von der Alta und Bassa
Padovana bis zur Thermenregion und den Hügeln bietet diese Gegend
wunderschöne Landschaften, gefärbt durch das Obst und den traditionellen
Anbau, die in dieser fruchtbaren Erde gedeihen. Wein, Öl, Fleisch, Gemüse
und viele Erzeugnisse, welche Geschichte, Gebräuche, Natur und Kultur eines
Ortes in sich bergen.
Die Verwaltung der Provinz und die Azienda Turismo Padova Terme Euganee,
der GAL Patavino und die CCIAA Paduas haben zu dieser Veröffentlichung
beigetragen, welche mitfinanziert wurde durch die Förderungsgelder
des FEAOG, Orientierungssektion des Regionalprogramms Leader Plus.
Ein Führer mit nützlichen Hinweisen für landwirtschaftliche Betriebe,
Produkte und Leistungen, gerade an jene immer größer werdende Gruppe
von Personen gerichtet, die auf der Suche nach besonderen Landschaften,
der Faszination unseres Landes und Qualitätserzeugnissen sind. Ein nicht
einschätzbares Kulturgut, das unsere önogastronomische Tradition mit der
Berufung zur herzlichen und familiären Gastfreundschaft verbindet. Ein
Kulturgut außerdem, das die Provinz von Padua seit Jahren aufzuwerten
bemüht ist und das, nicht zuletzt über diese Broschüre, gefördert werden
soll.
Nice and useful, this guide is meant to lead the citizens of Padova and the
tourists in a journey across the farmhouses of our region. These places are
immersed in the green and quite of the nature and offer an ancient tasteful
culinary tradition. The environment that goes from the north to the south
part of the province of Padova and includes the spa area and the Euganean
hills, offers enchanting and colourful views thanks to the fruits that grow on
our rich soil.Wine, oil, meats, vegetables and a lot of natural produce bring
along history, habits, nature and culture of a region.
The local government and the Tourism assessorship “Turismo Padova Terme
Euganee”, the association GAL and the CCIAA of Padova have supported the
carrying out of this publication which has been sponsored by the funds of
the FEAOG which is a regional programme called “Leader Plus”.
The guide can offer useful advice on holiday farms with their produce and
facilities, or can help all those people and tuorists who are looking for a
contryside with its beautiful landscapes and its high quality products.

voyage dans les maisons agritouristes de notre territoire. Rèalité immergée
dans le vert et dans le calme de la nature et embrassè par une ancienne
tradition culinaire avec mille saveurs.
De la haute à la basse padouane , à travers les thermes et la region des
Monts Euganeéns, le milieu offre des panoramas de reves avec multiples
couleurs de fruit et de productions typiques de notre généreuse terre. Vins,
huile, viandes fraiche, légumes, beaucoup de produits naturels que gardent
l’histoire, les coutumes, la nature et la culture dans un lieu.
L’Administration Provincial et le Syndacat du Tourisme Padoue-Thermes
Euganéennes, le Gal Padouan et la CCIEA de Padoue ont soutenu la realization
de cette publication qui à été financée avec le fonds FEAOG section
orientation du programme Regional Leader Plus.
C’est un guide où il est possibile de trouver des indications utiles pour
connaître les exploitations agricoles, les produits et les services offert. Elle
est offerte aux touristes à la recherche de paysages particuliers, du charme

Ampi spazi lasciati “a prato” ed abbondanza
di acque: questi gli elementi che colpiscono
immediatamente l’occhio nell’attraversare l’area
nord della provincia di Padova. Assolutamente
tipico il paesaggio rurale della zona che si
esprime attraverso le cosiddette “praterie”, cioè
una successione di prati stabili, generalmente
abbastanza estesi, che, soprattutto nell’area a
cavallo delle risorgive, presentano una maggiore
presenza di siepi e alberature.

crossing the north part of the Padova province
these elements catch immediately people’s eyes.
The prairies are usually wide meadows, typical
of the country landscape of this area and when
found to be close to resurgences they show a
great number of hedgerows.

Grands espaces laissés en prairie et abondance
d’eau: ces sont les éléments qui frappent
l’œil immédiatement en traversant la zone
septentrionale de la province de Padoue. Le
paysage rural de la région est très typique et
s’exprime par une succession de prairies stables
et assez étendues, qui présentent surtout dans la
zone des sources résurgentes une présence plus
grande de haies et arbres.

Grundwasserquellen und Prärien
Weite Flächen, als Wiesen belassen und
Überfluss an Wasser: das sind die Elemente,
die sofort ins Auge springen, wenn man den
Norden der Provinz Paduas besucht. Sehr
charakteristisch ist die Landschaft des Gebiets,
die sogenannten „Prärien“, d.h. eine Abfolge
von normalerweise weiten Weiden, die, wo viele
Grundwasserquellen sind, eine hohe Anzahl an
Hecken und Bäumen aufweisen.

un territorio attivo a due passi dalla città
L’area che circonda Padova e i suoi centri
periferici rappresenta un ambito assolutamente
non omogeneo. Unico elemento comune
è l’alta concentrazione demografica che ha
portato alla scomparsa quasi generalizzata
delle caratteristiche del paesaggio agricolo
tradizionale.
L’agricoltura si presenta con un aspetto
decisamente secondario in queste zone dove
ormai sono l’industria e l’artigianato a garantire
il reddito. Tuttavia gran parte del paesaggio
è caratterizzato dalle acque del Brenta e del
Bacchiglione e dai canali da essi derivati lungo i
quali è possibile perciò trovare numerosi ambiti
interessanti dal punto di vista naturalistico e
degni di nota proprio per il loro essere così a
ridosso della città. E’ infatti lungo fiumi e canali
che le più recenti trasformazioni agricole hanno
originato un paesaggio mutevole in cui si
alternano abitazioni, piccole aziende, vigneti e
coltivazioni di cereali.
An active territory just outside
the urban area
The area that surrounds Padova and its suburbs
represents a not homogeneous one. The only
element in common is the high demographic
concentration that has made to disappear the
peculiarities typical of the rural landscape.
The agriculture is not part of these areas
anymore because superseded by industry and
crafts.
Anyway most of the landscape is characterized
by the Brenta and Bacchiglione rivers and by
their tributaries along which it is possible to
find several interesting naturalistic and very
remarkable places for the peculiarity of being
so close to the city. It is along these canals that
have been taking place the most recent rural
transformations where changeable landscapes
with their houses, small companies, wine yards
and cereal cultivation are found.

La zone qui entoure Padoue et ses centres
périphériques représente un région tout à fait
différente. Le seul élément commun est l’haute
concentration démographique qui a amené à la
disparition presque totale du paysage agricole
typique.
L’agriculture est d’une importance secondaire
dans ces zones où l’industrie et l’artisanat
désormais garantient les revenus. Cependant la
plus grande partie du paysage est caractérisé
par les fleuves Brenta et Bacchiglione et par
les canaux dérivés au long desquels on peut
trouver beaucoup de lieux très intéressants
en ce qui concerne la nature et pour la
position si adossée à la ville. Les plus récentes
transformations agricoles ont créé un paysage
changeant avec habitations, entreprises,
vignobles et cultures de céréales.
Das Gebiet, das Padua und seine Randzentren
umgibt, ist absolut heterogen. Einziges
Bindeglied ist die hohe demografische
Konzentration, die das beinahe völlige
Verschwinden der traditionellen
landwirtschaftlichen Tätigkeit zur Folge hatte.
Die Landwirtschaft nimmt sicherlich einen
zweitrangigen Platz ein, denn Industrie und
Handwerk garantieren das Einkommen.
Dennoch wird ein großer Teil der Landschaft von
den Gewässern der Brenta, des Bacchiglione und
ihrer Kanäle, die von naturwissenschaftlichen
Interesse sind und nahe an der Stadt liegen,
bestimmt. Längs der Flüsse und Kanäle haben
die unlängst verursachten landwirtschaftlichen
Veränderungen eine Landschaft geschaffen, in
der sich Wohnhäuser, kleine Firmen, Weinreben
und Getreideproduktion abwechseln.

alla ricerca di natura protetta,
enogastronomia e cultura
Rispetto al territorio prevalentemente
pianeggiante che troviamo nella maggior parte
della provincia di Padova, l’area dei Colli Euganei
si distacca nettamente. Si tratta di un ambiente
quanto mai piacevole e variegato, in cui si passa
dalla pianura alla zona precollinare fino ad un
dolce ed ondulato paesaggio di collina.
Questo particolarissimo ambiente naturale, la
presenza delle prestigiose terme, le ville e la
vicinanza con la città di Padova, oltre che le
numerose feste e sagre legate alle produzioni
agricole caratteristiche di queste terre, hanno
favorito lo sviluppo dell’attività agrituristica nei
Colli tanto che, in un’area che copre un settimo
della provincia, si concentra quasi la metà degli
agriturismi.
THE EUGAEAN HILLS
a protected nature area, food-and-wine
connoisseurship and culture
The area of the Euganean hills is completed
different compared to the rest of the province
of Padova. It is a variegated and pleasant
environment that can change from a valley into
a smooth undulating and hilly landscape.
This peculiar natural environment, the spa era,
the villas and closeness to the city of Padova, the
several festivals and village fairs related to the
characteristics of this countryside, have helped
to develop rural activities in the Euganean Hills.
Half of the farm holidays is concentrated in this
area that covers just a seventh of the whole
province.

LES MONTS EUGANÉENS
à la recherche d’une nature protégé,
oeno-gastronomie et culture
La région des collines Euganéennes se détache
nettement du territoire généralement plat que
on trouve dans la plus part de la province de
Padoue. Le milieu est très agréable et varié,
on passe de la prairie à la zone pré-de colline
jusqu’à un doux et onduleux paysage de colline.
Ce milieu naturel très particulier, la présence
des prestigieux thermes, les villas et la voisinage
avec la ville de Padoue, avec différentes fêtes et
fêtes paroissiales liées aux productions agricoles
typiques de ces terres ont favorisés l’activité
agritouristique sur les collines, si bien que dans
une zone qui couvre un septième de la Province,
dont près de la moitié est du tourisme rural.

auf der Suche nach geschützter Natur,
Önogastronomie und Kultur
Zur vorwiegend eben geprägten Landschaft der
Provinz Paduas heben sich die Euganeischen
Hügel deutlich ab. Ihre Umgebung ist lieblich
und abwechslungsreich und reicht von der
Ebene über eine vorhügelige Landschaft bis hin
zu den weichen und wellenförmigen Hügel.
Dieses landschaftlich besondere Gebiet, die
prestigereiche Thermenregion, die Villen und die
Nähe zu Padua, darüber hinaus die zahlreichen
Feste und Messen, die zur landwirtschaftlichen
Produktion gehören, begünstigten die
agritouristische Aktivität in den Hügeln, so dass
sich die Hälfte der Agritourimusbetriebe dort
befindet, auch wenn das Gebiet ein Siebtel der
Fläche der Provinz einnimmt.

Il paesaggio della Bassa Padovana
centro - orientale si presenta come
un’area assolutamente pianeggiante, con
un’organizzazione agraria che testimonia la
lotta che si è dovuta sostenere per vincere il
formarsi di paludi ed acquitrini a causa della
scarsissima pendenza del terreno. L’ordinatura
idraulica di questa zona non rappresenta
quindi semplicemente uno dei tanti elementi
paesaggistici ma costituisce una vera e propria
ossatura fatta di canali, scoli e collettori costruiti
per regolamentare le acque, prevenendo
alluvioni e rotte degli argini. Ma Adige, Brenta,
Bacchiglione e tutta la rete di canali e scoli
rappresentano anche delle preziose vie di
comunicazione.
Altro elemento dominante del paesaggio,
soprattutto nella parte più meridionale, è la
sistemazione dei “campi alla ferrarese” e la
presenza di numerose idrovore che rivelano
come il territorio abbia subito in passato vaste
bonifiche.

The landscape of the south eastern and mideastern
part of Padova is a totally flat area,
with a rural organization that testimonies the
struggle in order to reclaim this marshy land due
to the poor inclination of the terrain. The waterpeculiarity
of this area does not represent only
a landscape element but the real framework
made out of canals, catchment basins built to
control waters and to prevent floods. Beside
that, the whole network of canals and channels
represents an important line of communication.
An other important aspect of the landscape,
above all in the southern part, is the “campi
alla ferrarese” (“fields under crop that are
surrounded by drainage ditches”). There are
also draining pumps all over the territory to
testimony that once this land used to be a big
marsh.

Die Landschaft der östlichen und inneren
Bassa Padovana ist vollkommen eben und hat
eine Landwirtschaft, die den Kampf um die
Trockenlegung der Sümpfe und Moräste wegen
der fehlenden Schräglage des Landes bezeugt.
Die Wasseradern sind deshalb nicht nur eine
landschaftliche Charakteristik, sondern bilden
ein wahres Skelett, das aus Kanälen, Abzugs- und
Sammelkanälen besteht, welche die Gewässer
regulieren und vor Überschwemmungen und
Dammbrüchen schützt. Darüber hinaus stellen
Etsch, Brenta, Bacchiglione und das ganze
Kanalnetz auch wertvolle Verkehrswege dar.
Andere wichtige Landschaftsmerkmale, vor
allem im südlichen Teil, sind die Anordnung
der „ferraresischen Felder“ und die zahlreichen
Entwässerungsanlagen, die davon zeugen,
wie in der Vergangenheit das Land oftmals
trockengelegt wurde.

Le paysage de la zone méridionale de Padoue
se présent au centre-est comme une région
absolument plate, avec une organisation agraire
qui témoigne la lutte contre la formation
de marécages et mouillères à cause de la
insuffisante pente du terrain. Le rangement
hydraulique de cette zone n’est pas seulement
un élément du paysage, mais une multitude de
canaux, écoulements et collecteurs construits
pour réglementer les eaux, en prévenant
alluvions et ruptures des digues.
Mais les fleuves Adige, Brenta, Bacchiglione
et toute le réseau de canaux et écoulements
représentent aussi des précieuses voies de
communication.
Un autre élément dominant du paysage,
surtout dans la partie la plus méridionale, sont
l’aménagement des champs à la manière de
Ferrara et la présence de nombreux pompes de
drainage qui révèlent que le territoire a subi par
le passé grandes bonifications.

Analogamente alla zona orientale della
Bassa Padovana anche quella occidentale si
caratterizza per le opere di bonifica attuate fin
dall’antichità per renderla salubre e coltivabile.
Fu ancora in epoca romana che queste terre
di tipo alluvionale cominciarono ad essere
bonificate. Ma gli storici hanno addirittura
individuato, lungo l’Adige, la presenza di
paleoalvei che segnalerebbero interventi ancora
più antichi da parte dell’uomo.
La Bassa Padovana occidentale è anche un
rettangolo di territorio che conserva i segni di un
nobile passato: infatti, nonostante le frequenti
e periodiche minacce di esondazioni da parte
dell’Adige, sono sorti ed hanno saputo coesistere
importanti siti come Este e Montagnana dalla
suggestiva struttura “murata”. Tali centri, grazie
anche alla presenza di servizi ed attrezzature,
si presentano autonomi da Padova e circondati
da una campagna scarsamente urbanizzata con
nuclei di edifici rurali distanti tra loro.

Just like for the south eastern area of Padova,
the western area had been reclaimed in
ancient times in order to obtain healthy air and
cultivable fields. Some historical studies have
brought to light, along the Adige river, the
presence of palaeoriverbeds.
The south eastern area of Padova is a
rectangle of territory that preserves the signs
of a noble past: even though the threaten of
repeated overflows of the Adige river, some
important sites like Este and Montagnana have
aroused. These two towns thanks to efficient
public services and facilities are completely
independent and self-governing from the city of
Padova. They are surrounded by the countryside
which is an under urbanized area with rural
buildings in a nice and quite position.

Die WESTLICHE BASSA
auf einen Spaziergang bei ummauerten
Städten, Burgen und Villen
Analog zum östlichen Gebiet der Bassa Padovana
wird auch jenes westliche seit der Antike durch
Trockenlegungen charakterisiert, um diese Zone
gesund und kultivierbar zu machen. Noch in
römischer Zeit begann man das Schwemmland
trocken zu legen und Historiker fanden sogar
heraus, dass es längs der Etsch Paläoflussbette
gab, die noch ältere Eingriffe durch
Menschenhand bedeuten könnten.Aber die
westliche Bassa Padovana ist auch ein Gebiet, das
Spuren einer adeligen Vergangenheit aufweist:
trotz der häufigen und immer wiederkehrenden
Überschwemmungsgefahr durch die Etsch,
erstanden und existierten nebeneinander Stätten
wie Este und Montagnana mit ihrer suggestiven
„ummauerten“ Stadtstruktur. Solche Zentren
sind dank ihrer Leistungen und Ausstattungen
unabhängig von Padua und werden von
einer kaum städtischen Landschaft und weit
auseinander liegenden Dorfkernen umgeben.
LA RÉGION SUD-OUEST

D’une manière analogue à la zone orientale
de la région au sud de Padoue, aussi la zone
occidentale est caractérisée par les travaux
de bonification qu’ont étés réalisés depuis
l’antiquité pour la rendre salubre et cultivable.
La bonification de ces terres alluviales a
commencé à l époque romaine. Mais les
historiens ont découvert le long du fleuve Adige
des paléo-lits qui signalent des interventions
encore plus antiques. Mais la plaine padouane
occidentale est aussi un rectangle de territoire
qui conserve les signes d’un passé noble : en
effet, malgré les fréquentes et périodiques
menaces de débordements du fleuve Adige
sont bâties d’importantes villes comme Este
et Montagnana qui ont la suggestive structure
murée. Ces centres, aussi grâce à la présence de
services et aménagements, sont autonomes par
rapport à Padoue et entourés d’une campagne
peu urbanisée avec des noyaux d’ édifices ruraux
éloignés entre eux.

Il progetto di cooperazione “Ospitalità rurale”
L’ospitalità a Padova e provincia è ricca e diversificata
ma gli operatori pongono sempre maggiore
attenzione alla qualità ed al rispetto dell’ambiente.
Per questo, tramite un progetto di cooperazione
finanziato dal Programma Regionale di Sviluppo
Rurale Leader plus, abbiamo sperimentato su 33
Agriturismi che hanno dato adesione volontaria, tutti
appartenenti all’area della bassa padovana e dei Colli
Euganei:
• il livello qualitativo dell'offerta (qualità della
struttura e delle dotazioni, accessibilità e servizi
minimi garantiti);
• il grado di rispetto dell'ambiente e dell’impatto
ambientale (tutela del paesaggio, dell’ambiente e
delle risorse naturali);
• l'integrazione dei prodotti e dei servizi offerti
con il patrimonio ambientale, storico e culturale
locale (servizi turistici, ristorazione).
Il progetto pilota ha individuato una serie di
parametri, successivamente applicati e verificati
nelle aziende aderenti, che prevedono dei "Requisiti
Obbligatori" e dei "Requisiti Facoltativi, associati
entrambi ad un sistema di punteggio che permette
di distinguere le strutture ricettive in 3 classi
(analogamente a quanto avviene con le "stelle" degli
alberghi), contraddistinte da ciliege.
La guida, parte conclusiva del progetto, vuole
anticipare anche i risultati della sperimentazione
effettuata. Pertanto, accanto alle molte informazioni
che saranno utili per scegliere l’ospitalità più consona
alle esigenze, si troveranno anche le 3 ciliegie, che
saranno colorate in base al livello di presenza dei
requisiti di:
• qualità dell’offerta e di integrazione della stessa con
il patrimonio del territorio;
• rispetto dell’ambiente
Hanno collaborato alla realizzazione del progetto
i rappresentanti delle Associazioni Agrituristiche
provinciali (Agriturist, Terranostra e Turismo Verde),
Turismo Padova Terme Euganee, la Provincia di Padova
e l’ente di certificazione C.S.Q.A.
La guida è stata realizzata grazie anche al
cofinanziamento di: C.C.I.A.A. di Padova, Provincia di

Cooperation Project “Rural hospitality”
Vorschriften für die Unterkunftsmöglichkeiten
The hospitality in Padova and its Province is rich
and various but the tourism operators pay always
more attention to the quality and the respect of the
environment. For this reason we tested 33 farm holidays
in the south of Padova and in the Euganean Hills which
joined this proposal with a Cooperation Project financed
by the Regional Rural Development Programme Leader
Plus:
• quality standards of the offer (of the minimum
granted facilities and services);
• respect level of the environment (environment
protection and preservation of the landscape and
the natural resources);
• integration of the offered products and services
with the environmental, historical and local
cultural heritage (tourist services, restaurant).
The pilot scheme has identified some parameters which
are applied and verified in the supporting farms and
provide some compulsory and optional requisites. These
data are both associated with a score system which
divides the accommodation facilities into three different
categories (likewise the hotel stars) which are marked by
‘cherries’.
This guide completes the project and also aims to
anticipate the results of the experiment.
Therefore, besides the information which will be useful
in order to find a suitable accommodation, the guest will
also consider the three cherries whose different colours
represent the relative standard level of:
• quality of the offer and its integration with the territory;
• environment preservation
The representatives of the Provincial Agritourism
Associations (Agriturist, Terranostra, and Turismo Verde),
Turismo Padova Terme Euganee, the Province of Padova ,
the Certification C.S.Q.A.
Company cooperated to the realization of this project.
The guide has been realized also with the collaboration
of the C.C.I.A.A. of Padova, the Province of Padova
- the Agriculture Department - Turismo Padova
Terme Euganee and Banca dei Colli Euganei - Credito
Cooperativo di Lozzo Atestino.
Die Unterkunftsmöglichkeiten in Padua und Provinz
sind durchaus reich und unterschiedlich, aber es wird
immer mehr Wert auf die Qualität und den Umweltschutz
gelegt. Mittels eines Kooperationsprojekts, das durch
das Regionalprogramm Sviluppo Rurale Leader plus
finanziert wurde, haben wir anhand avon 33 in der Bassa
Padovana und den Euganeischen Hügeln gelegenen
Agritourismusbetrieben folgende Kriterien gebündelt:
• das Qualitätsniveau des Angebots (Qualität
der Struktur und Ausstattung, Zugänglichkeit und
Mindestleistungen);
• Wichtigkeit des Umweltschutzes und der
Umweltauswirkungen (Landschafts-, Umwelt- und
Ressourcenschutz);
• Integration der Produkte und Leistungen in die
Umwelt und das historische und kulturelle Erbe
(Gästeleistungen, Gastronomie).
Das Pilotprojekt hat eine Reihe an Parametern
ausgemacht, die in den Agritourismusbetrieben
angewendet und überprüft werden und die
folgendermaßen eingeteilt werden: in „Verpflichtende
Eigenschaften“ und „Fakultative Eigenschaften“. Beide
sind in einem Punktesystem eingegliedert, das die
Strukturen in drei Klassen einteilt und das durch Kirschen
gekennzeichnet wird (analog zu den Sternen der Hotels).
Der Projektabschluss ist vorliegender Führer, der die
Ergebnisse des Versuchs vorwegnimmt. Abseits der vielen
Informationen, die notwendig sind, um den geeigneten
Gastbetrieb zu finden, gibt es auch die drei Kirschen, die
je nach Vorhandensein folgender Eigenschaften gefärbt
sind:
• Qualität des Angebots und dessen Integration in das
Landschaftserbe;
• Umweltschutz
An der Verwirklichung dieses Projekts haben die Vertreter
der Associazioni Agrituristiche provinciali (Agriturist,
Terranostra und Turismo Verde), Turismo Padova Terme
Euganee, die Provinz Padova und das Beurkundungssamt
C.S.Q.A. mitgearbeitet.
Der Führer wurde dank der Mitfinanzierung durch
C.C.I.A.A. Padua, das Landwirtschaftsreferat der Provinz
Padua, Turismo Terme Euganee und der Banca die Colli-
Euganei-Credito Cooperativo di Lozzo Atestino realisiert.

Le projet de coopération “Hospitalité rurale”
L’hospitalité à Padoue et dans sa province est riche et
diversifiée mais les professionnels sont de plus en plus
attentifs à la qualité et au respect de l’environnement.
C’est pour cela que par le biais d’un projet de coopération
financé par le Programme Régional de Développement
Rural Leader plus, nous avons expérimenté sur 33 Fermes
Auberges qui ont adhéré volontairement, appartenant
toutes à la zone de la basse plaine padouane et des
Collines Euganéennes:
• le niveau qualitatif de l’offre (qualité de la
structure et des équipements, accessibilité et
services minimums garantis);
• le degré de respect de l’environnement et de
l’impact environnemental (protection du paysage,
de l’environnement et des ressources naturelles);
• l’intégration des produits et des services offerts
avec le patrimoine environnemental, historique
et culturel local (services touristiques, restauration)
Le projet-pilote a fixé une série de paramètres, qui ont
ensuite été appliqués et vérifiés dans les entreprises
adhérentes, qui prévoient des “Qualités requises
Obligatoires” et des “Qualités requises Facultatives”,
toutes deux associées à un système de score qui permet
de distinguer les structures d’accueil en 3 classes (comme
avec les “étoiles” des hôtels), caractérisées par des cerises.
Le guide, qui est la partie conclusive du projet, a
également pour but d’anticiper les résultats de
l’expérimentation effectuée. Par conséquent, les
nombreuses informations qui seront utiles pour choisir
l’hospitalité la plus adaptée aux exigences seront
accompagnées des 3 cerises, qui seront colorées en
fonction du niveau de présence des qualités requises de:
• qualité de l’offre et d’intégration de celle-ci avec le
patrimoine du territoire;
• respect de l’environnement
Ont collaboré à la réalisation du projet: les représentants
des Associations des Fermes Auberges provinciales
(Agriturist, Terranostra et Turismo verde), Turismo Padova
Terme Euganee, la Province de Padoue, l’organisme de
certification C.S.Q.A.
Le guide a également été réalisé grâce au cofinancement
de: C.C.I.A.A. de Padoue, Province de Padoue - Division

Nuova disciplina per l’esercizio dell’attività agrituristica - stabilisce i principi, le finalità ed i criteri a cui deve ispirarsi l’agriturismo nella regione Veneto.

Che cos’è
Agriturismo può essere svolto soltanto dall’imprenditore agricolo attraverso l’utilizzazione della propria azienda agricola in rapporto di connessione e
complementarità rispetto all’attività agricola.
Rientrano tra le attività agrituristiche:
• dare ospitalità in stanze o in alloggi completi;
• dare ospitalità in spazi aperti;
• somministrare pasti e bevande;
• somministrare spuntini e bevande ricavati prevalentemente da prodotti aziendali;
• organizzare attività ricreative e culturali finalizzate al trattenimento degli ospiti;
• vendere i prodotti aziendali;
• trasformare prodotti derivati dall’azienda da destinare ad uso agrituristico;
• allevare cavalli, per scopi di agriturismo equestre ed altre specie animali a fini di richiamo turistico.
Chi può attivare l’attività agrituristica
L’attività agrituristica può essere attivata dagli imprenditori agricoli definiti ai sensi dell’articolo 2135 del Codice civile singoli od associati che
esercitano, da almeno un biennio, un’impresa agricola (anche se non a titolo principale) ed in qualunque forma (proprietà, affitto).
L’imprenditore agricolo che intende attivare attività agrituristiche deve:
• Iscriversi all’Elenco provinciale degli operatori agrituristici;
• Iscriversi ad un corso formativo di almeno cento ore;
• Presentare il Piano Agrituristico Aziendale;
• Sostenere un colloquio innanzi alla Commissione agrituristica provinciale;
• Chiedere il rilascio dell’autorizzazione al Comune ove vuole intraprendere l’attività.
Obblighi dell’operatore agrituristico
Gli operatori agrituristici hanno l’obbligo di:
• esporre al pubblico l’autorizzazione comunale;
• rispettare le tariffe comunicate al Comune;
• comunicazione all’Ufficio IAT competente del movimento degli ospiti e della notifica degli stessi all’autorità di P.S., entro 24 ore dal loro arrivo;
• esporre al pubblico una tabella indicante i piatti tipici;
• apporre all’esterno dell’edificio la targa con la denominazione Azienda Agrituristica.
La qualifica di operatore agrituristico e la denominazione azienda agrituristica o agriturismo devono essere utilizzate esclusivamente dai soggetti
iscritti nell’elenco degli operatori agrituristici.

Enti, Istituzioni e Organismi interessati all’attività agrituristica
Regione
Con delega dello Stato ha compiti di legiferare, di programmare, di coordinare e di promuovere le iniziative rivolte alle attività agrituristiche.
Province
Alle Province la Regione ha delegato le funzioni amministrative e di controllo sulle attività agrituristiche.
Commissioni provinciali per l’agriturismo
È formata da rappresentanti degli Enti e degli Organismi direttamente interessati. Istruisce le domande di iscrizione all’elenco provinciale degli operatori
agrituristici; valuta il Piano Agrituristico Aziendale; valuta, tramite un colloquio, i risultati ottenuti dal futuro operatore agrituristico a seguito della partecipazione al
corso formativo; iscrive l’operatore agrituristico all’elenco provinciale degli operatori agrituristici; comunica al Comune, ove avrà luogo l’attività, gli esiti istruttori.
Comuni
Il Comune nella persona del Sindaco, viste le risultanze istruttorie della Commissione Provinciale, nonchè dei pareri rilasciati dalle Unità Sanitarie
Locali, ha il compito di rilasciare l’autorizzazione all’esercizio delle attività agrituristiche.
Associazioni Agrituristiche
Hanno il compito di assistenza, promozione e tutela dell’attività agrituristica esercitata dai loro associati. Tali Associazioni, emanazione diretta delle
Associazioni agricole, sono così denominate: Agriturist, Agrivacanze, Terranostra e Turismoverde.
Obiettivi
La Regione sostiene e disciplina nel proprio territorio l’attività agrituristica, allo scopo di:
• assicurare la permanenza dei produttori singoli ed associati nelle zone rurali;
• salvaguardare e tutelare l’ambiente ed il patrimonio edilizio rurale attraverso un equilibrato rapporto tra città e campagna;
• valorizzare i prodotti tipici e le produzioni locali;
• sviluppare il turismo sociale giovanile;
• favorire lo sviluppo ed il riequilibrio del territorio agricolo;
• favorire la conservazione e la conoscenza delle tradizioni e delle iniziative culturali del mondo agricolo;
• creare nuovi posti di lavoro nell’ambito della famiglia rurale;
• favorire la diversificazione dell’offerta turistica.
