NEW SHIP’S CHAMPAGNE A&J DEMIÈRE BLANC DE NOIRS BRUT Fresh and round with elegant complexity, fruity flavours, and a balanced aftertaste – a white Champagne made entirely from red grapes! ORIGIN: France REGION: Champagne GRAPE: Pinot Meunier 70%, Pinot Noir 30% STORY The history of this winery began in 1936 with Fernand Demière, who purchased the first vines on the terroir of Fleury la Rivière. Audrey & Jérôme, third generation of the estate, took over the domain in the early 2000s. They wish to renew the house by developing new means of production, while continuing certain traditional methods that hold great importance to them. Today, Audrey & Jérôme offer you – with a smile and simplicity in signature – cuvées elaborated with an enlightened spirit, connected to nature and pleasure. WINE MAKING The vines grow in chalky sand soil in Fleury la Rivière in Vallée de la Marne region. The wine for this champagne is fermented in stainless steel vats. The base of this cuvée is from 2018. Reserve wines from Pinot Meunier are added to the final blend. The Champagne stays on lees for a minimum of 36 months in a bottle before being disgorged. Freshness and maturity in perfect harmony make this champagne complete. FOOD PAIRING Thanks to the balance of fruitiness and acidity, this beautiful Champagne is perfect as an aperitif. Fresh and round, the Blanc de Noirs Brut harmonizes with expressive flavours. It can accompany cheeses, fish, seafood, poultry, pork or even beef with tasty sauces. NEW SHIP’S SPARKLING WINES PALAU BRUT ORGANIC CAVA & PALAU ROSADO ORGANIC CAVA Fine and elegant, these are fresh cavas with toasted notes and aromas of peach and grapefruit. ORIGIN: Spain REGION: Penedes BRUT ORGANIC GRAPES: Parellada, Xarel-lo, Macabeu ROSADO ORGANIC GRAPES: Garnacha, Pinot Noir STORY Mont Marcal has been producing wines and cavas for almost 50 years. Situated in a beautiful location on the slopes of Penedès, this historical vineyard has been making elegant cavas since its beginning. The original farmhouse on the estate dates from the 14th century. Once the home of Carmelite monks, it has now been turned into a beautiful winery. The Palau Brut Organic cava from Catalonia got its name from the Catalan word Palau, meaning the building used as the residence of the head of state. The etymology comes from Palatium, and the Palatine Hill – the sacred hill of Rome and the residence of the Roman emperors. WINE MAKING After the harvest, the grapes are quickly taken to the press house. Here they are sorted and carefully broken up. Subsequently, bottle fermentation takes place at controlled temperatures. FOOD PAIRING These fresh, fruity, and creamy cavas have a fine texture and go perfectly with strong, spicy flavours. They can also be accompanied by cheeses, rice, Iberian ham, fish, and seafood.
