His book, Before They Pass Away, from which the portfolio for The Eagles Have Landed (p78) is drawn, is a window onto a rapidly changing world. “I hope,” Nelson says, “that in future generations, we’ll all be able to gather around the digital fireplace of humanity and continue telling these stories.” JIM CLARKE A former sommelier, Clarke was prepared for Normandy’s culinary delights – Pont l’Evêque and camembert cheeses, crêpes paired with cider – when he went to research Uncorking Calvados (p72). “But the elegant, tempting horse track at Deauville,” he says, “was an unexpected (and costly) surprise.” Clarke’s writings on wine, beer and spirits have appeared in World of Fine Wine, Details and Beverage Media.
